Take a tris of Ravioli
with Smart Supermarket’s freshly made ravioli by the Smart Bakery and sauces using a selection of Tesco Products
Ricotta Ravioli with Spicy Tomato Ras el Hanout Sauce Ingredients Serves 3-4: 1 medium red onion, finely diced 1 fresh red chilli, finely diced 3 tbsps Tesco olive oil 2 heaped tsps Tesco Ras el Hanout Paste ¼ tsp Tesco crushed chillies (optional) 1 x 400g tin Tesco peeled Italian plum tomatoes 1 tbsp Tesco tomato purée Smart Ricotta-filled ravioli Grated parmesan to serve
Method: 1. Heat the olive oil in deep-sided, thickbase frying pan. Add the diced onion and the fresh chilli and sweat down over a low to medium heat until softened but not browned.

Choose from three varieties of Smart’s ready-made, frozen ravioli, whip up your choice from this tasty trio of pasta sauces and you’ve quick ‘n’ easy weekday suppers to please the family. With pesto, tomato and cream options, we’ve a sauce to suit each flavour of ravioli. If you like things hot and spicy, opt for the Ras el Hanout, eastern Mediterranean experience. The milder fennel and caper complement our richer salmon-filled ravioli while the tangy parsley and lemon gremolata topping gives you a double whammy of herbs in our spinach ravioli recipe. 2. Add the Tesco Ras el Hanout paste along with the crushed dried chillis (if using), stir and continue to cook over a medium heat for another minute or two. 3. Add the tinned plum tomatoes and tomato purée. Bring the sauce to the boil, then simmer gently for around 10-15 minutes to reduce and thicken. Break up the whole tomatoes with the side of a spoon once the sauce is simmering. 4. Meanwhile, bring a large pan of water to the boil ready for the ravioli. Cook the ravioli for around 7 minutes from frozen. 5. The sauce should now be thickened; loosen with a ladle of pasta water if it’s too dry. 6. Once the ravioli are cooked, drain and quickly tip them into the pan of sauce (still over a low heat). Toss gently to coat them and serve immediately in warmed pasta bowls. To serve, grate over some hard cheese like Parmesan.
Spinach & Ricotta Ravioli with Pesto & Gremolata Ingredients Serves 3-4: 3 heaped tbsps of Tesco classic green pesto Handful of dried pumpkin seeds, toasted A good handful of fresh, flat-leaved parsley Zest and juice of a small to medium lemon 3 tbsps Tesco extra virgin olive oil 500g bag Smart Spinach & Ricotta Ravioli Fresh-ground black pepper Fresh-grated Pecorino
Method: 1. Toast the pumpkin seeds by tossing and shaking them in a dry frying pan over a medium heat being careful not to burn them. It takes a minute only. Set aside to cool. 2. To make the gremolata, place the parsley leaves, most of the lemon zest and
Salmon Ravioli with Fennel, Capers & Cream Cheese Ingredients Serves 3-4: 2 tbsps Tesco extra virgin olive oil 1 medium fennel bulb ½ tbsp fennel seeds, crushed 2 tbsps Tesco nonpareille capers 200g Tesco soft cream cheese 300ml Tesco longlife cream alternative 500g bag Smart Salmon-filled Ravioli Fennel fronds, chopped, & whole fennel seeds to serve
Method: 1. Crush the fennel seeds in a pestle and mortar, leaving some whole to garnish on serving. 2. Top & tail, then quarter and finely slice the fennel bulb, keeping any fronds.

Scrape down from the sides and continue to whiz drizzling in the olive oil until you have a thick paste (the parsley leaves should retain some shape). 3. Place a large pan of water to boil and cook the ravioli til tender. 4. While the ravioli are cooking, take a large frying pan and warm the readymade pesto over a low heat. Loosen the pesto with a ladle or two of the hot pasta water. Stir and keep the pesto warming while the ravioli cook. 5. When tender, drain the ravioli and toss into the pesto pan, stirring gently to coat. 6. Serve the ravioli spooning over some of the parsley-lemon gremolata on each portion. Finish with a sprinkle of lemon zest, toasted pumpkin seeds and grated Pecorino.
3. Heat the olive oil in a large frying pan and saute’ the sliced fennel until softened but not browned. Add the crushed fennel seeds and saute’ for a minute longer. 4. While the fennel is softening, bring a large pan of water to the boil ready for the ravioli. 5. Add the cream cheese to the fennel; stir it in allowing it to melt down and mix with the fennel before adding the cream and 1tbsp of the capers. Stir to incorporate, and reduce the heat under the sauce to a bare simmer while you cook the ravioli. 6. Once tender, drain the ravioli and toss into the cream sauce. Stir gently to coat and serve immediately garnishing with chopped fennel fronds, a few whole fennel seeds and the remaining capers.

Dishes
Preparing food during Lent should be no headache. Just use fresh local ingredients, good quality Tesco products and it all should be sorted. The first two recipes are not only very traditional, but suitable for this time of year and vegetarians. Simple yet delicious soup, crunchy tasty ftira and a ‘sinless’ healthy dessert to round it all up! Happy Easter to you all!
Soppa ta L-Armla (Widow Soup) Ingredients: 1 large cauliflower 2 medium onions - finely chopped 2 carrots - finely diced 7 medium Potatoes - peeled 1 cup of fresh shelled peas (or frozen) 6 gbejniet ‘ Local Fresh Sheep Cheeslets’ 3.5lt of boiling water 3 tbsp Tesco tomato puree Oil for cooking Sea Salt / Black Pepper 175 gr of ditali corti (short pasta tubes)
Method: 1. Cook the onion gently in oil until its soft. Add the carrots and 1 of the potatoes, all diced small. Cook together on a gentle flame for about 5 min. 2. Split the cauliflower in half. Chop one of the halves finely and add to the cooking vegetables. Cook for another 5 min, then add the tomato puree, season and continue cooking for another 5 min. 3. Add the boiling water to the vegetables and simmer partially covered for about 30 min. Cut in halves the 6 remaining potatoes, and the cauliflower into florets and add to the soup. Check the cauliflower and when done, remove from soup, placing in a large serving plate on the side. When the potatoes are done, also remove them from the soup. 4. Add the pasta, stir well, and then add the ‘Gbejniet’ and cook according to pasta pack instructions 8/10 min. 5. Serve the soup, followed by a selection of the cooked vegetables. The gbejniet can be served with the soup or with the vegetables, as one prefers. As a must, the vegetables should be drizzled with olive oil and seasoned with freshly ground pepper and flakes of sea salt. Salted tuna or canned tuna, olives and fresh crusty bread spread with ‘Kunserva’ (tomato paste) are often served accompanying this second plate.

Gozitan Style Ftira with Spinach, Tuna and Black Olives Ingredients: For each ftira you will need…. 200 grams cooked Spinach (fresh or frozen) well drained 1 small onion 2 pieces fresh garlic 4-6 fillets Tesco anchovies in oil 8-12 Tesco black olives Fresh mint and marjoram 1 tbsp Tesco capers
Some white wine Tesco olive oil Tesco Black pepper 375 gr Tesco ready rolled Puff Pastry Tesco Sesame seeds 185g can Tesco drained Tuna 1 large potato - boiled with skin on
Method: 1. In some olive oil, cook the finely chopped onion, together with the garlic, and the fresh herbs. Add a few splashes of white wine and cook until soft. 2. Add the anchovies and crumble into the onion mix. Add the spinach, some white wine, and cook until all the juices evaporate. Leave to cool. 3. Roll out the pastry on a lightly oiled surface. Transfer onto baking paper and on your baking tray. 4. Place the spinach mix and drained tuna on the pastry, then sprinkle with capers and olives. 5. Place the sliced cooked potato on top (on edges or as desired). Drizzle with some olive oil and fold the pastry edges over. Sprinkle the pastry with sesame seeds and bake in a hot oven set on 200°C for about 25 minutes or until golden.
Fruit Parfaits Ingredients: Tesco Fruit and Nut Granola

Method: In cups or small bowls, layer with granola, then yoghurt and sliced fresh fruit of your choice. Optional – Drizzle with some honey. Serve immediately.

‘Sugu tat-Tadam’ uses sun-repined Maltese grown tomatoes which are handpicked. Within hours their natural juice is concentrated in a delicious thick base sauce. ‘Polpa tat- Tadam’ uses Maltese grown tomatoes. On the same day of harvesting these are washed, blanched in hot water to facilitate the removal of the skin and diced while eliminating most of the seeds. ‘Kunserva tat-Tadam’ is locally produced in season from fresh Maltese tomatoes. Bathtime
New parents are often nervous about bathing their baby. They worry about the temperature of the bath, holding a wet baby safely and getting the baby dry and dressed before he gets sad and uncomfortable. Bathtime can be a lovely, relaxed time to bond with your baby. How do I bath my baby? Here are a couple of tips to bear in mind: Be prepared! When you bath your baby have everything ready in advance, and close the windows so there’ll be no drafts in the room. Make sure that you’ve got absolutely everything nearby so you don’t have to go away to get them – nappies, towels, clean clothes etc. Look after your back. Try to bath your baby on the floor, so you don’t have to bend over and hurt your back. It doesn’t matter whether you use a special baby

bath or a plastic bowl, or even the kitchen sink! That said, if you do decide to bath a baby in the sink make sure that you protect the baby from the taps.
Prevent scalding When you are bathing your baby, it’s absolutely vital to put the cold water in first and then add the hot water until you get the right temperature. That way there will never be a bath full of very hot water, which is a huge safety risk. Use your elbow or the inside of your wrist to test the bath temperature. Body temperature, or 37 °C, is about the right temperature for

the bath water. It can be lower than that, but no warmer. It will feel probably a bit cool compared to the baths you are used to, but babies are less able to regulate their own body temperature.
Is there a special way to bath my baby? Bathtime can be great for bonding, so remember to maintain lots of eye contact and to chat to your baby. Start off by stripping your baby gently down to his nappy. Wrap him up in a nice warm towel. Gently wipe your baby’s eyes, mouth, nose, ears and face with cotton balls or
a soft cloth. Then gently take him over to the bath. Keep your baby wrapped up at this point, wash his hair gently – just with water is fine – and dry it with the towel; and then you can lie him down. Unwrap the baby, take his nappy off and then gently pick him up, making sure he is nice and secure. If the room is nice and warm there’s less chance of him crying a lot at this point! With a very small baby it’s a good idea to rest his head on your wrist and grasp him gently under the arm. With your other arm you can rest his bottom on your wrist and grasp him around the thigh. It doesn’t really matter how you hold them, as long as it is firmly and securely. Gently lower your baby into the water. It shouldn’t be deep enough for him to go under! When he’s lying in the bathwater, with your free hand just gently wash him, making sure that you remember the creases of his hands – which tend to pick up all sorts of bits of fluff – around the his neck, under his arms and around the creases of his legs as well as the bottom area. Be warned that the time babies dislike the most is when you take them out of the bath water. That’s because they suddenly feel cold, and sometimes they start crying or get irritable. To avoid this (as much as you can anyway!) get him dry as quickly

as possible. Again, don’t forget to dry in all the cracks and creases, behind the knees, around the wrists, under the arms and under the neck. As soon as your baby’s dry, take him off the damp towel, and get him dressed as quickly as you can.

Should I give my newborn baby a bath? When a baby’s first born it’s usual not to bath in the first 24 hours. Babies generally spend that time learning to regulate their own temperature, so experienced midwives avoid bathing them during that time. After that, you might choose to bath your baby every day but you certainly don’t need to. There is no need to remove the white ‘vernix’ that might still be present on their skin.

How often should I bath my baby? Again, there is no right or wrong answer with the frequency of bathing, whether you choose to do it every day or every few days. When your baby begins to distinguish between daytime and night time, a bath before bedtime can become part of his routine. The bath will become a trigger associated with bedtime for your baby. In addition, the temperature drop he experiences as he comes out of a short five-minute bath will stimulate melatonin production, which helps to regulate sleep.
