Bye bye heavy cooking, hello light foods! It is the season to start switching from wintery dishes to lighter options. These light recipes are ideal for lunch, a picnic, light snack or a packed lunch. Let’s Get Ready for Summer!
Light Lunches Spinach & Feta Hummus 1 can Chickpeas – rinsed and drained 3 tbsp Lemon juice 2 tbsp Tahini Ground Cumin – a sprinkle Fresh Baby Spinach Leaves – 1 handful roughly chopped Extra Virgin Olive oil – as needed 1 big chunk of feta cheese Plain yoghurt – 3 tbsp 1 clove garlic 2 tbsp finely chopped Parsley Chilli flakes optional Salt Place all the ingredients in a large bowl and add about 6 tbsp of olive oil. Using a stick blender, process until smooth. You might need to add more olive oil if the mix is too dense. Serve with Galletti, Water Biscuits or Toasted Pitta Bread and raw vegetables like Carrots, Red Peppers and Cherry tomatoes.

Strawberry & Black Quinoa Salad Mixed Salad Greens Black Quinoa – cooked Strawberries – hulled and cut Flaked Almonds Feta Cheese – or similar cheese Chick Peas – rinsed and drained 3 tbsp Extra Virgin Olive Oil 1 tbsp Apple Cider Vinegar ½ tbsp Maple Syrup ½ tbsp Dijon Mustard In a bowl, whisk the oil, vinegar, maple syrup and mustard to make the vinaigrette. Toss the salad greens in dressing and place on a plate. Garnish the salad with the remaining ingredients. If not eating immediately, serve dressing on the side.
Easy Coronation Chicken Mayonnaise - 4 tbsp Cinnamon – just a sprinkle Sultanas – 3 tbsp Curry Powder- to taste Mango Chutney – 1 tbsp Pepper Cooked Chicken – shredded or cut in strips Mix all the ingredients and then add the chicken. Serve in a toasted pitta with green salad, flaked almonds and any other ingredients of your choice.

This simple traybake is a medley of my Polish sister-in-law’s favourite summer bake and my mum’s British version; hence the custard! Usually made with plums or apples in Poland, this raspberry Szarlotka sings summer.
Raspberry Custard Szarlotka Makes approx. 18 squares. Ingredients 180g caster sugar
250g self raising flour
80g ground almonds
250g unsalted butter, softened
3 large eggs
1 tsp vanilla essence
5 tbsps Tesco Ready to Serve Custard (400g can)
Tesco Country Store Raspberries (400g packet, defrosted)
1 tbsp Demerara sugar
Method 1. Line a baking tin approx. 20 x 30 x 3 cm with baking parchment and pre-heat the oven to 180C. 2. Place all ingredients except the last two in a large bowl and beat until smooth and well combined. Add more custard if the mix is too stiff. 3. Pour the mix into the baking tray and smooth the top. Sprinkle over around half the packet of the defrosted raspberries (retain the rest to serve if desired). 4. Bake for 35-40 minutes until risen and golden brown. Leave in tin on a wire cooling rack and sprinkle with the Demerara sugar while it’s still hot. 5. Cut into cubes and serve warm with some more of the Tesco custard and raspberries (both cake and custard are also nice served cold!).

This tropic’s inspired sorbet is a perfect zesty finish to an early summer supper or to indulge in on a hot afternoon.
Coconut Lime Sorbet Serves 6-8 Ingredients 200ml fresh lime juice (approx. 5 limes)
Zest of one lime, grated finely
50ml water
200g granulated sugar
pinch of salt
Tesco Coconut Milk (400ml can)*
1 tbsp dessicated coconut
Method 1. Heat gently the lime juice, water, sugar and salt until the sugar has dissolved. 2. Remove from the heat and whisk in the coconut milk and finely-grated lime zest. 3. Allow to cool and then chill completely in the fridge. 4. When ready to churn, whisk the mix up again. If using an ice cream or sorbet maker, churn to a thick dropping consistency according to the maker’s instructions. Alternatively, place the sorbet in a freezer-proof container and freeze for 1-2 hours until softly frozen. Remove the container and whisk up the sorbet and then return to the freezer.
