OUR JOURNEY Growing up in a small town in Fife, William discovered a passion for gastronomy. He trained at Gleneagles Hotel in Perthshire and then worked at many Michelin-starred establishments with the most respected chefs in the business, including Marc Meneau at L’Esperance in France, Pierre Koffmann at La Tante Claire, Raymond Blanc at Le Manoir aux Quat’ Saisons and Marco Pierre White at The Oak Room. At just 27 years old, William then became the youngest Chef Patissier at The Savoy where he met his wife Suzue. William has won numerous awards, including Pastry Chef of The year and Dessert of The Year and The William Heptinstall Scholarship. Suzue is also a highly respected pâtissier. Originally from Osaka, Japan, Suzue moved to London in 1996 where she trained at Le Cordon Bleu. She has worked at Claridge’s and The Savoy where she was in charge of the world famous Afternoon Teas. Both William and Suzue have represented Scotland at International culinary events, winning Gold medals in Chicago and Basle. Both William and Suzue have won Gold at the Culinary Olympics in Germany in 2004 prior to opening their First boutique.

William Curley has been awarded ‘Britain’s Best Chocolatier’ by the Academy of Chocolate four times.


OUR CREATIONS They are innovative with flavours and are total perfectionists when it comes to their art. The ranges have a hearty British feel to them, with products such as our Bakewell Tarts, and award-winning Rosemary and Olive Oil chocolates, Scottish Heather Honey or Juniper and Blackcurrant couture chocolates. Suzue has inspired a wonderful injection of Japanese culture throughout the ranges, including the Green Tea Cakes, White Chocolate with Miso ice cream and Apricot and Wasabi Chocolates for the more adventurous customer. Patisserie is prepared on a daily basis and William’s years of working in French Michelin-starred Restaurants account for the exquisite French-styled Patisserie including our ever-popular ‘Mont Blanc’ Chocolate Cadeaux and Sea Salt Caramel Tart. In addition to the chocolate and Patisserie ranges and wide selection of ice cream, we also offer an exciting year-round dessert bar menu at our Belgravia Boutique.


OUR TEAM When William Curley opened in 2004 he had 2 ambitions firstly to create the best patisserie chocolate business this side of the channel. Secondly, it was about training and developing young people. We are thrilled that there are numerous young people who have passed through our business and developed themselves, strengthening our industry and ensuring our craft lives on. We are a very passionate team here at William Curley, right from the centre of our Tropical entremets, to the sourcing of our ingredients; we ensure that quality is evident throughout our products, courses, events and atmosphere of our boutiques.


RELAIS DESSERTS INTERNATIONAL William Curley joined the renowned pastry association Relais Desserts International, an association that recognises the best of our profession and encourages the training of young pastry chefs and chocolatiers in the industry.


AMEDEI

William and Suzue ensure they source ethically sound couverture chocolate for their products by working exclusively with Tuscan-based Company Amedei, for whom they are proud ambassadors. Amedei are particularly attentive to improving the conditions in which the people who grow its cacao live and work. Agronomists of the company visit the plantations at least twice a year to ensure these conditions are met, thus creating a very unique bond with the local campesinos. Currently operating in some plantations in Venezuela, Amedei has replanted many trees and several varieties of Criollo, the rarest and aromatic bean, only using Criollo and the hybrid Trinitario bean for their flavour and aroma. The entire production is meticulously followed with dedication and artisanal skills right from the selection of the cacao beans, personally done by Amedei in the countries of origin, through to the manufacturing of the chocolate conducted in the laboratory of Pontedera, before being sent to our kitchens where the meticulous perfection of the ultimate chocolate creation continues.


COUTURE CHOCOLATE Our very special hand made, fresh and natural Couture Collection comes packaged in a series of beautiful presentation boxes. A variety of sizes are available. Each individual chocolate is hand crafted using the finest Amedei couverture and the freshest ingredients. Our Couture chocolates contain no preservatives or additives and have a shelf life of fourteen days. This collection provides the perfect introduction to our brand and showcases William and Suzue’s innovative and subtle use of flavours. You will find classic favourites such as our Sea Salt Caramels, delicate herbal infusions of Mint or Thyme, more daring combinations like our Rosemary and Olive Oil and of course our signature use of Japanese flavours; from Black Vinegar, Sesame and Cherry Blossom to Apricot and Wasabi and Smoked Tea. Our Couture chocolates are made fresh without additives or preservatives and have a shelf life of 14 days.


OUR COUTURE BOXES

A variety of sizes are available from the single couture beautifully presented in its own box to a showcase selection of 100 pieces of the finest couture chocolate from William Curley. Our Couture boxes and Truffle boxes are made fresh without additives or preservatives.


TRUFFLES Our decadent selection of truffles are hand made using the finest Amedei chocolate. They come packaged in one of three different sized boxes and make the perfect gift. Our truffle collection ranges from the classic House Milk and House Dark through to the more unusual flavours of Cassis and Hibiscus and Matcha and Pistachio. We use fresh cream to make our truffles and include no additives or preservatives; these chocolates therefore have a shelf life of fourteen days.


BARS Our delicious collection of house bars come beautifully wrapped in our signature black packaging. These bars range from white chocolate to 70% dark chocolate and are the perfect introduction to the depths of flavour to be found in fine chocolate. Our best selling range of Caramel and Feuillantine bars include the addictively good Sea Salt Caramel bar: intense caramel flavour offset by sea salt and enrobed in dark chocolate.


NIBBLES This selection of chocolate nibbles are perfect for sharing. Varieties include the nostalgic chocolate coated Cinder toffee, Suisse Rocher and a delicious range of chocolate dusted hazelnuts and almonds that make an excellent after dinner treat.


HOT CHOCOLATE Each of our four signature hot chocolate blends are made from pure flakes of Amedei chocolate; just melt into hot milk to create a deliciously indulgent drink. Packaged in one of our beautiful tins, our four different blends are: House - 70% dark chocolate flakes for classic indulgence. Aztec - Dark chocolate with a hint of chilli. Gianduja - A robust combination of chocolate and hazelnut. Mayan - Chocolate flakes spiced with a delicate blend of cinnamon, ginger and nutmeg.


NOSTALGIA RANGE Our Nostalgia range draws inspiration from William’s roots and the classic confectionary that he grew up eating. Here he has recreated his childhood classics using the highest quality Amedei chocolate and the finest ingredients to create a collection of truly grown up treats.


BISCUITS

Our selection of handmade biscuits range from the traditional Scottish favourite, Shortbread to the more unusual combination of Miso and Walnut.


BAKED CAKES

For a fantastic afternoon pick-me-up try our moist and succulent Baked cakes, rich and deep in flavour with combinations that will give you an indulgent break from reality.


MACARONS Although considered a French delicacy these have now become a true British favourite. William and his team have hand crafted a range of chocolate ganache-filled macarons, try the Raspberry and Pistachio or create your own with help using our award winning cookery book ‘Couture Chocolate’.

In this lavishly illustrated book you will be guided through a raft of recipes, from truffles to patisserie. PATISSERIE

Each beautifully crafted portion of patisserie demonstrates our dedication to precision, presentation and quality. William’s experience working in Michelin starred restaurants in France has inspired him to create this exquisite selection that ranges from the rich Venezuelan Cadeaux to delicate Petits Fours.

Our superb collection of Entremets are now available to order online and collect from our Richmond and Belgravia boutiques.


ICE CREAM Our popular range of ice cream and sorbets are available in both our Richmond and Belgravia boutiques. Freshly churned daily, demonstrating our characteristic passion for perfectly balanced flavour combinations, you can enjoy Chocolate with Rosemary and Olive Oil, Caramelised White Chocolate and Miso or Sea Salt Caramel ice cream amongst others.


THE DESSERT BAR The Dessert Bar is an amazing concept for the William Curley Belgravia boutique. Available on Saturdays and Sundays, this is not your normal bar - this bar offers a sweet and refreshing alternative to the traditional Afternoon Tea. The only things on offer here are desserts, desserts, oh, and more desserts! Running throughout the year with seasonal dishes to tantalize those taste buds! A dining experience with a difference. Available Saturdays 12pm-7pm / Sunday 12pm -5pm. The Dessert Bar is great for mid-afternoon indulgence. WILLIAM CURLEY CHOCOLATE CLASSES TRUFFLE COURSE VOUCHER The William Curley Truffle making course takes two and a half hours. The class starts with a short talk on the complete chocolate making process from cocoa bean to chocolate bar and a tasting of delicious chocolate from different regions around the world. One of our highly experienced chocolatiers will teach you the secrets behind making the perfect Truffle. You will learn to infuse, blend and prepare the ganache for two of our award winning truffles, as well as discover the theory and technique behind tempering chocolate. One of our highly experienced chocolatiers will talk you through the theory and then demonstrate how to perfectly temper chocolate. They will reveal the secrets behind creating a flawlessly smooth, slightly salted soft caramel centre. You will make your very own Sea Salt Caramels under our chocolatiers expert guidance. Your chocolates will be beautifully boxed and wrapped, ready for you to take home and enjoy.
