Protecting Resources Haywood Waterways Association

Celebrating its 26th anniversary in 2024, the Haywood Waterways Association has grown into a leading advocate for not only public information and awareness about protecting local water resources, it’s also become a respected voice of reason in the region.

“We believe in investing inside of the community to create these environmental stewards,” said Preston Jacobsen, executive director of HWA. “So, this is more than just a generational attempt — this is something that’s sustainable through time.”

For some context, Haywood County and the Pigeon River Watershed are the highest headwaters watersheds in the Eastern United States. o surface water enters aywood County. Everything flowing exits. Cue HWA to ensure its keen focus on gathering water information, obtaining grants, and putting a bright spotlight on urgent issues.

“And we’ve been able to do this with partnerships and working alongside the community to do both restoration and monitoring, but, perhaps more importantly, education,” Jacobsen said.

It was 1998. A group of concerned citizens from the small mountain towns around Haywood County came together to combine information and knowledge. It was all in an effort to keep tabs on its precious water resources and provide assistance to whatever was needed regarding local government and federal levels of accountability.

“The nexus of [HWA] was just citizens who had the experience and understanding to assist,” acobsen said. “But, think to also leverage the already good work that was happening inside of Haywood County.”

With a humble, grassroots beginning, the HWA began to slowly acquire much-needed funding from the local and state government levels to be able to properly do their work and fund projects. After about a decade or so since its inception, the HWA carefully rose up and was able to ideally hit the ground running with its intent.

HWA has been the recipient of a large number of grants from the Pigeon River Fund, created in 1996 when Duke Power’s predecessor had to relicense its hydropower facility at Waterville Lake in the Pigeon River Gorge. The relicensing agreement led to the creation of the fund whose mission is to direct grants to agencies — like HWA — that do environmental work in the greater French Broad Watershed.

“If you’re coming to visit Haywood County or coming to stay, you have an investment in the water quality here,” Jacobsen said. “If we didn’t have what we have here for water, you’d go somewhere else, right? So, if you love where you are, you tend to be a steward of that location, an asset to protecting our surroundings for generations.”

s a nonprofit organi ation, acobsen noted that the continued

flexibility of and its own resources allows the outfit to pivot seamlessly to meet the needs of the community, whether that be longterm needs or in-the-moment needs.

“ hereas larger agencies can continue their focused work, we fit well because as long as it’s water quality focused or adjacent, we can hop on that work,” Jacobsen said. “And that, in some ways, led us to a new path, more of a side avenue in flood mitigating and resistance.”

Reflecting on the past and present of , and ga ing ahead to the unknown future, Jacobsen can’t help but keep this one thought front and center of his mind that of the organi ation’s ethos.

“There’s no one else to blame but us, right?” Jacobsen said. “We can’t blame upstream or say ‘good luck’ downstream because we are those folks — we are the first line of defense.”

Having his works exhibited in over 200 museums around the world, Chihuly is a name synonymous with innovative, groundbreaking artwork. What started as pure curiosity when introduced to the glass medium while studying interior design at the University of Washington in the mid-1960s has evolved into one of the most storied careers of the modern art era.

Presenting a slew of notable works from the Chihuly Studio, installations within the seven-room exhibition space include “Chandeliers,” “Baskets,” “Neon,” “Drawings,” “Ikebana,” “Cylinders,” and “ owers” — each offering as uni ue and breathtaking as the next.

Arguably the most awe-striking installation of the Chihuly exhibition comes with the presentation of “Mille Fiori,” a large-scale platform of glass flowers and plants, which “demonstrate the artist’s penchant for organic, free flowing forms that evoke the natural world.”

“Now we leave the artwork in the hands of the Biltmore team,” Cornett said. “ e hope that people will come and en oy it, and find inspiration in whatever way they may.”

This Chihuly current showcase is the second partnership between the artist and the Biltmore Estate. The initial run of featured works occurred in 2018, with pieces installed around the gardens and lawns

of the Biltmore Estate to wide-ranging acclaim.

“ here’s a trust that was developed through that experience and that relationship,” Cornett noted of the Chihuly/Biltmore partnership. “So, for us to come back to present something very different than we did in , it made sense to us, and we’re happy to have the opportunity to do so.”

“ he installations really highlight something different from what we offered last time,” atham added. “But, also showcasing ale’s work over the last 60 years creating various types of art.”

Exploring the exhibition is something absolutely extraordinary to behold. Beyond the effort put forth in creating each piece and the vibrant colors used, what the observer walks away with is a kick in their step — having immersed themselves in the essence of art, which is to inspire and invigorate the heart and soul through Chihuly’s kaleidoscope perspective of our universe.

“So many experiences happened throughout his development, throughout his interest in pursuing art as a career,” Cornett said of Chihuly. “You kind of had to have all of that together with this individual, who truly was embarking on something different, for all that to happen to him.”

Handcrafted Banner Elk Winery

What was originally a 17-acre blueberry farm back in the 1980s amid the mountain peaks and valleys of Banner Elk is now a beloved winery in the High Country of Western North Carolina.

“Wine in this region is a growing industry,” said David Craig. “And I think it’ll continue to grow, so long as people keep their eyes open and they’re trying new ways to make wine.”

For the last 10 years, Craig has been the winemaker at Banner Elk. Before that, he had a robust 25-year career as a plastic surgeon.

“Growing grapes and making wine is basically farming — it’s a lot of work,” Craig said. “But, I’ve always liked growing things. I had a lot of chemistry knowledge from my medical training, [with that skill set] used all the time — putting together and making different kinds of wine.”

A seemingly unlikely career transition, Craig sees the similarities, especially when it comes to what it takes to see obstacles as opportunities — in the surgery room or in the vineyard.

“Just like a typical surgeon, when someone says, ‘There’s no way you can do that,’ well, you’re going to find out or figure out a way, one way or another,” Craig chuckled.

Within the winery, three grapes grow exceptionally well on the property: Marechal Foch, Seyval blanc, and Steuben.

“Marechal Foch is a French-American hybrid, which has a lot of tannins and acidity to it,” Craig said. “While Seyval blanc is very similar to Sauvignon blanc, but it’s much more cold-tolerant and has a very dry, light, lemon-lime taste to it.”

Banner Elk also imports the finest of California grapes to create lines of Chardonnay, Cabernet Sauvignon, and Merlot products.

“Everybody’s tastes are different, but you’ve got to expand what you may like or don’t like,” Craig noted. “And as long as you’re honest with yourself, you should want to try a lot of things in life — try new things, and you’ll surprise yourself.”

Beyond the winery itself, there’s also the renowned Villa, an onsite private six-bedroom retreat with luxury amenities, all of which are encompassed by the bucolic surroundings.

“Like any other business, you can’t rest on your laurels,” Craig said of the winery’s continual evolution. “You’ve got to keep a little bit ahead of the game. You need to be looking forward, and that’s kind of what we’ve done.”

Reflecting on the last decade of his life spent contemplating, cultivating, and creating fine wines, Craig can’t help but be grateful to spend his days in the mountains doing what he loves to do most.

“It’s been very humbling and very enjoyable for me,” Craig said. “It’s not unlike a lot of things you do in life — there’s hurdles, but you just have to figure out a way to either go over or around them.”

Although Ristorante Paoletti opened its doors atop The Plateau in 1984, the family’s history in the culinary realm extends back even further, to 1953. To preface, in 1930, Arturo and Rita Paoletti and their children, Maria and Luigi, came to the United States via Ellis Island in New York City from the Marche region of Italy.

“They came [to America] as poor Italian immigrants. When they got here, they had relatively nothing,” Alexandra Paoletti noted. “So, when you uxtapose that with fine dining, there’s an immense sense of pride because we were able to make a living for our family off of this restaurant.”

After a stint in New Jersey, the family then relocated to Miami, Florida, in the early 1950s, only to open the original Paoletti’s there in 1953. The family business grew and shifted, literally and figuratively. he iami location moved to Coral Gables in 1960, then to Delray Beach in 1976, with Luigi Paoletti and his wife, Regina, now at the helm of the storied restaurant.

But, by the late 1970s, Luigi unexpectedly passed away, leaving his wife widowed and a single mother of six kids. In this moment of unknowns, Regina decided to push ahead with a stoic focus and steadfast vision to keep Paoletti’s alive, ultimately bringing the restaurant and its legacy to Highlands.

“Our family fell in love with the mountains,” Alexandra Paoletti said. “The South and Southern culture are so similar to Italy and Italian American culture. It’s a very warm, family-centered culture where you often gather around food. So, we felt very at home here in Highlands.”

With its 40th anniversary front and center, the Ristorante Paoletti is under the meticulous, loving care of owner Arthur Paoletti (Regina’s son) and Alexandra Paoletti (Regina’s grand-niece). Distinct Distilling: Chemist Spirits

Like any good thing worthwhile in this wondrous world of ours, it all starts with a simple idea that sparks inspiration from within — cue Chemist Spirits in the South Slope district of Asheville.

“My mother-in-law, Debbie Word, has always been kind of a serial hobbyist — raises her own bees, has a passion for architecture, renovates historic buildings,” said James Donaldson. “So, she wanted to get into distilling and we got her a small stovetop moonshine still for Christmas [in 2014].”

By the following Valentine’s Day in February 2015, Word, alongside her daughter, Danielle Donaldson, and Danielle’s husband, James, distilled and tested out their first batch.

“It was a mountain rum with a bunch of sugar,” James chuckled. “And from there, we ust kept playing around with different gin and whiskey recipes. Over the next few years, we took it about as far as we could before the still size got kind of conspicuous.”

Eventually, Word and the Donaldsons came to a crossroads. The trio could either keep things small — a scenario of handmade products that would be shared with family, friends and local entities — or they could ramp things up and go into business together.

BARREL RESTED GIMLET

Essentially a Gin Sour made with lime juice, legend has it that the Gimlet was created in the mid-19th century to encourage Royal Navy sailors to consume their rations of scurvy-preventing lime juice.

INGREDIENTS

2 oz Chemist Barrel Rested Gin

1 oz Lime Juice

¾ oz Simple Syrup (1:1, sugar:water)

Garnish: Lime Wheel

INSTRUCTIONS

Add all ingredients to a cocktail shaker.

Add ice and shake until chilled.

Strain into a chilled coupe or cocktail glass.

“At that point, we decided to actually start working on industrial-sized distilling systems,” James said.

It was also around this time when the trio took a trip “across the pond” to Scotland, just north of Edinburgh, to visit the Strathearn Distillery. During this revelatory excursion, they met with legendary Scotch and gin distiller and Strathern founder Tony Reeman-Clark.

“In learning from [Tony], we developed our own style [of gin] based on this Scottish gin method, which is this vaporinfused, soft kind of modern gin style,” James said. “We focus a lot on a broader botanical range, where we end up softening the uniper profile.”

To note, Danielle was (and remains) a pharmacist (currently for the Asheville VA Medical Center), one with a deep knowledge and appreciation for chemistry and science. James comes from an extensive background in marketing, with numerous high-level projects to his credit, including work with Google, Warner Brothers and hit TV shows (“The Walking Dead,” “South Park”).

“We really had a lot of in-house capabilities, so we just bootstrapped it for the first few years,” ames said. “ nd we pulled in a few other people that ust took us to the next level.”

“ t’s called the Chemist because of my wife, who brought to our attention the role pharmacists played in the history of merican spirits,” ames noted. “ hey really kept spirits alive through rohibition in many ways, where you could get your prescription for your allotment of spirits for whatever ailment you had.”

Staging the Story Flat Rock Playhouse

Founded in 1952, the Flat Rock Playhouse emerged from humble beginnings and has, season-by-season, built itself into a production facility that’s home to one of the most renowned stage troupes in Western North Carolina and the greater Southeast.

“The theater originated under a retired Barnum & Bailey Circus tent and has grown to be a state-of-the-art professional regional theater putting on Broadway-quality shows,” said Playhouse Marking Director Christy Souther.

Upwards of 100,000 patrons wander into the playhouse each year to partake in a unique experience of art, storytelling, dance, and music in a legendary institution where imagination and creativity come to fruition in front of an audience eager to immerse themselves in the singular magic that is live theater.

“It’s incredible, all of the moving parts it takes to get onstage and entertain the patrons,” Souther said. “We’re producing theater, which means that each element of our production has been crafted and rehearsed right here on our property.”

Peeling back the numerous layers of the 14-acre campus, there’s staff and artist housing, production facilities, administrative o ces, educational classrooms, rehearsal spaces, and more. To note, the playhouse employs around 70 people to keep the ship sailing smoothly throughout the year.

Cataloochee Ranch Rides into Next Chapter

Meandering up Fie Top Road in Maggie Valley, just as your vehicle’s engine is pushed to the limit and it seems you may e entually dri e o the edge of the earth, you emerge atop a mountain ridge. A large rustic lodge appears in the distance: the Cataloochee Ranch.

“The ranch has an amazing history, and it’s always had this unique identity,” said Annie Colquitt. “It’s this special place in Haywood County and has been a draw [for almost a century].”

Alongside her husband, David, the Colquitts recently reopened the beloved Cataloochee Ranch. Purchased by the couple in 2020, the extensive and expensive renovation project has taken the better part of the last two years to complete. he o cial grand reopening ribbon cutting celebration was held this past spring.

“A hospitality property without guests feels like an empty shell,” Annie

said of the renovation process. “It feels so good to be sharing this place again.”

Originally from Knoxville, Tennessee, the Colquitts initially put down deep roots in Haywood County when they acquired The Swag, a highly-lauded mountain getaway abutting the Great Smoky Mountains National Park, in 2018. On the heels of that purchase and rejuvenation of the 250-acre Swag property, word spread from just across the ridge that the Cataloochee Ranch might also be for sale.

“And there were concerned neighbors who wanted the ranch to be the

ranch forever — something had to change or it wouldn’t stay,” Annie said. “We started paying attention and thinking about how we might get involved in the ranch, because we really wanted to protect the land and keep it a place for guests to enjoy.”

At the time the ranch hit the real estate market, the Colquitts were still in the midst of a renovation and operating The Swag. But, that didn’t deter them from seeing a great opportunity to not only preserve the ranch property and its history, but also perpetuate its legend and legacy into the 21st century and beyond.

“You want to preserve that sense of place because it’s really an important part of so many people’s stories,” Annie said. “I get messages all the time from folks that [the ranch] is where their family’s dearest memories are for vacations, marriages, or best childhood memories — it’s that special.”

Coming to fruition in 1933, the Cataloochee Ranch was created by the Alexander family as a place of divine respite and outdoor adventure in the heart of Western North Carolina.

“The Alexander family worked so hard and poured so much of themselves into [the ranch],” Annie said. “It was this incredible vision and hard work, this labor of love that’s an asset to the community.”

Whether it was horseback riding up to Hemphill Bald, hiking around the vast 700-acre property, evenings eating a hearty home-cooked meal with gusto or storytelling and music around a campfire under a canopy of stars, the Cataloochee Ranch remains an escape hatch from the organized chaos of daily life way down below.

“We want the ranch to be a place that locals love, but also a place that attracts folks from all over,” Annie said. “And we’ve built this adventure programming that includes horseback riding, the ropes course, or even taking a watercolor class — adventure is not knowing how the story is going to end.”

Besides the cozy cabins, there’s also the horse barn, which has now been transformed into The Hayloft event space with The Horseshoe outdoor amphitheater behind it. Numerous ranch horses graze along the ridge just beyond that.

“Just like with The Swag, I see people come here and rest,” Annie said. “They leave their stress and their to-do list when they get to the top of these mountains — this is a different world.”

As well, the Colquitts preserved the original stone walls of the notable ranch house when they constructed the new lodge. The awe-inspiring building now houses Switchback, a Southern Appalachian and European Alpine-themed restaurant. It’s also home to The Hideout wine cellar, Tack Room bar, and The Forge al fresco dining space.

“When I think about our guests, I believe we’re giving them something that their souls really need,” Annie said. “We’re providing something to people that humans need, something that makes us feel alive. It’s happening; it’s working.”
