Jackson’s communities Though their personalities vary, Jackson County’s unique locales embrace an easygoing quality of life

CASHIERS Located at 3,486 feet above sea level, Cashiers is said to be named for a lost horse — an acknowledgement of the area’s dense forests, replete with laurel and rhododendron thickets. The town was hailed as a cool respite from the hot, humid shipping towns further south for mid-nineteenth century aristocrats. One such aristocratic family was the Hamptons. Wade Hampton III was the bestknown member of the family due to his service as a general in the Confederate Army and active political career. In 1890, Dr. William S. Halstead, who married into the Hampton family, bought the Hampton home, renaming it High Hampton after his ancestral home High Halstead in England. The High Hampton Country Club was later constructed on the same property. Now, Cashiers is home to several similar resorts and golf courses but also boasts great opportunities for outdoor recreation such as hiking and mountain climbing. 4

Also of note are some of the smaller communities one passes traveling south on N.C. 107 from the county seat of Sylva to Cashiers such as East LaPorte. Located alongside the Tuckasegee River past Cullowhee, East LaPorte was once the site of an Indian trading post established by the French Huguenots as the eastern entrance to Indian territory. In French, East LaPorte means “eastern door.”

CULLOWHEE Cullowhee, which means “white lily” in Cherokee, is an unincorporated township comprised mostly of Western Carolina University and the surrounding businesses and residences designed to service faculty and student needs. Professor Robert Lee Madison founded Western Carolina University — originally chartered as Cullowhee High School — in August of 1889. Beginning about 1912, the status of the school was gradually raised. The uni-

versity went through several name changes as its course offerings increased and it wasn’t until 1967, when the school was designated a regional university by the North Carolina General Assembly, that the name Western Carolina University was finally settled upon. Near Cullowhee is the Forest Hills township, named for the 1878-1880 postmaster’s home, Forest Hill. Today, the township is home to a number of university faculty members.

DILLSBORO Today a village of shops, crafters and family restaurants, Dillsboro has always been a center of railway activity. During the 1880s when the Western North Carolina Railroad was built, the village bore a variety of names — Depot, New Webster, or Webster Station. In 1882, the Tunnel Post Office (named for the railroad’s Cowee Tunnel) was established with William Allen Dills as postmaster. It was the railroad’s developer, A.B. Andrews — for whom the town of Andrews in Cherokee County is named — who suggested the town adopt the name of its postmaster, becoming Dillsboro. Dills was responsible for building the Riverwood Shops, which overlook the Tuckasegee River, and what later became known as the C.J. Harris House. Harris is the namesake of Harris Regional Hospital in Sylva.


Dills’ own home stood next to the Mt. Beulah Hotel — constructed in 1884 and today known as the Jarrett House. By 1888, Dillsboro had become the most important town along the railroad in terms of industry, with two sawmills, two clay mines, two livery stables, six general stores, a shoemaker and several wood yards.

GLENVILLE

The Glenville community is centered on a large man-made lake with 26 miles of shoreline at 3,500 feet above sea level. The lake is the highest of its size east of the Mississippi River and is a favorite place for aquatic recreation. The area originally was known as the Hamburg Township, settled in 1827. In the late 1880s the area was thriving with industries including forestry, tanning and mining. It was in 1891 that the area was renamed Glenville. The lake itself was not created until 1940-41, when Nantahala Power and Light Company — owned by ALCOA — constructed a dam on the Tuckasegee River. The hydroelectric dam provided more electricity to help make aluminum for the war effort. The creation of the lake flooded Glenville’s schools, homes, businesses and farmlands. Today, the

community is settled along the shores with several second and vacation homes, boating businesses and small shops.

SYLVA Sylva is Jackson County’s retail and professional center where day-to-day services meet unique history. The town’s development rose with the construction of the Western North Carolina Railroad in the 1880s. Its name came about at the suggestion of Mae Hampton, daughter of E.R. Hampton, who is credited as being the founder of Sylva. E.R. Hampton had married into the Cannon family, which owned a sawmill where William D. Sylva, an itinerant Dane, had helped saw the logs that built the Hampton’s home. The railroad’s route through Sylva made it a prime location for the county seat — originally located in Webster — but the issue of relocation resulted in years of bitter dispute between the two town’s representatives. The state legislature settled the dispute, giving Sylva permission to construct a courthouse so long as the town paid the moving costs to relocate. On Feb. 28, 1914, the new Sylva courthouse, located on a hill overlooking Main

process and plied with liquor by an individual desiring a more direct route from Sylva to Dillsboro. The location of the railroad later was a primary factor in the movement to relocate the county seat from Webster to Sylva.

WEBSTER The town of Webster is a quiet residential community situated on top of a hill overlooking the Tuckasegee River. The town was created in the mid-1800s with the purchase of an 18acre tract specifically designated to become the county seat. Within a few years of its settle6

ment, a courthouse was erected. The town was incorporated in 1859, but over the next 20 years the town government became inactive — the first of several rises and falls in the town’s municipal development, and perhaps an early indicator of the town’s future. The story goes that during the construction of the Western North Carolina Railroad, county residents fully expected the railroad to run through Webster. However, the county’s state government representative — said to be fond of his drink — was taken aside at a crucial moment in the voting

Whittier, Jackson County’s closest community to Cherokee, was another railroad town. Upon calling the area’s residents together, Clark Whittier proposed the formal establishment of a town: “It is my wish and I so move that we start operations here upon the principals and Word of God, including all morality, especially temperance and prohibition of the strongest form.” The town was incorporated in 1907 and by 1913 boasted a dry store, hotel, physician and surgeon, plus sawmills, lumber yards, three churches and a school. However, with the Great Depression the town lost much of its industry as the demand for lumber declined. By 1993 Whittier’s charter was repealed and today the community is mostly residential. Sapphire knows how to throw a ‘potty’ Sitting on a toilet, Kyle Iezzi is ready for victory. “The main thing is that I hope we go straight,” the 15-year-old said. Within his homemade outhouse, Iezzi was a competitor at the 8th annual “Great Sapphire Outhouse Race” on Feb. 15 at the Sapphire Valley Ski Area, just outside of Cashiers. Amid several other outhouses bolted to skis and pushed down the snowy hill, Iezzi felt he had the advantage with his design, dubbed “White Lightning.” “We have our skis angled a little bit towards the center to give it a straighter performance, little more of a ‘pizza’ angle,” he said. “The design does knock off our speed, but it’s better to go straighter than faster.” Coming into its eighth year, the race has become something of a tradition as it as evolved. “This race is similar to NASCAR — it’s about speed and everyone comes to see the crashes,” chuckled Chris Grimshawe, marketing director at Sapphire Valley. “It’s a great family atmosphere. Nobody takes it too seriously, and it’s not intended to be. It’s a nice community event that grows with interest.” The outhouses line up two at a time as the

signal is quickly given to push. Spinning their “tires” in the snowy slush, the pushers get any traction they can as they shove the contraptions down the hill. The structures pick up speed, barreling down the mountain — some straight forward, others veering left and right, with some almost right into the raucous crowd. The snow and ice fury soon clears, with Iezzi and his crew the victors. The teenager is ecstatic over the surefire design he felt all along

would work when put to the test. Standing next to his outhouse, he’s all smiles as the newly crowned “King of the Mountain,” a title that’ll be his for the next year. “The ride was a lot smoother than I expected, and I couldn’t have done it without the horsepower behind me,” he said.

Tapping into the Smokies Dieter Kuhn was 4,500 miles from his hometown in Germany when he came across Jackson County. “The Great Smoky Mountains are pretty unique, with a lot of similarities of terrain and temperature to the Black Forest (Germany),” he said. “It’s very comfortable here and being part of this town reminds me of home.” In 2004, Kuhn bridged that international gap by opening Heinzelmannchen Brewery in downtown Sylva. The focus is finely crafted German beers, while the motto is “Purity, Freshness, Tradition.” When he started his establishment from the ground up, the craft beer scene in Asheville was just started to bud into an industry to be reckoned with amid the regional economy. As more and more breweries popped up, Kuhn found himself a member of a brotherhood, one that was competitive, but friendly and filled with support and camaraderie. “It’s a challenge to many to do this, but it’s a labor of love and I enjoy it,” Kuhn said. “I love sending beer to people, talking about beer and collaborating. We’re already planning our next steps and are aiming to get beyond that point.” Down the road from Heinzelmannchen is Innovation Brewing. Pouring its first pints in October 2013, Innovation was created by Nicole Dexter and Chip Owen. The couple has a deep love for craft beer, one that through the years has resulted in various jobs within the industry. Eventually, their dream of running their own operation molded itself into a special place within Jackson County where locals and visitors alike congregate. “Sylva is really this hidden gem. It has wonderful people and a really strong community feel, and you have that in bigger cities, but it’s more centralized here,” Dexter said. “Here, everybody just really pulls together and supports each other — it’s incredible. Everybody feels really genuine and are themselves.” And as their business grows and flourishes, Dexter and Owen always bring their philosophy back to the foundation of Innovation — making quality brews for beer lovers. “We’re trying to make the best beer we can, trying to always improve our processes and play with our ingredients,” Owen said. “Being here hasn’t sunk in yet, and it kind of doesn’t feel like it’s our place sometimes. We created it, but also the community created it, too. We’re happy it’s a place people want to hangout in.”

WCU marks 125th year in 2014 2014 will mark the beginning of Western Carolina University’s 125th year of existence. The yearlong celebration kicked off on Jan. 23 at the campus in Cullowhee. The school and surrounding community paused to reflect on the institution’s growth from a one-room schoolhouse with 18 students to a comprehensive regional university with an enrollment of more than 10,100. WCU Chancellor David O. Belcher began the celebration with a touch of formality, reminding the crowd of the many changes that have occurred at the institution over the years – including names ranging from the Cullowhee Academy through Western Carolina Teachers College to its current moniker as part of the University of North Carolina system. “The year 2014 will be a year of events, exhibits, reflections and anticipation of the next 125 years of educating eager minds in the heart of a mountain paradise — a region rich in culture, art, music and innovation,” he said. “It’s going to be a great year. It will be a year for the history books, and certainly one in which you will want to be involved.” The official 125th anniversary bash will be on Aug. 26, with an array of activities on the University Center lawn. Two more quasquicentennials No one knows exactly what was going on 125 years ago, but apparently 1889 was a big year for Jackson County. In addition to WCU celebrating its 125th — or quasquicentenntial — in 2014, both Sylva and Dillsboro are marking the same anniversary. Sylva plans to hold a two-day festival Oct. 10-11 to mark the milestone. “Residents and visitors alike are invited to gather and celebrate Sylva’s history and rich heritage,” said Sylva Town Manager Paige Roberson. “There will be activities to highlight the past and a free concert, festival, and events to commemorate the future of Sylva.” Dillsboro, known for its rich railroad history and acclaimed crafters, will mark its 125th with a festival on Sept. 6.

SCC celebrates 50 years Southwestern Community College will celebrate its 50th year of serving the community in 2014-15. Originally known as the Jackson Industrial Education Center, the college opened on Dec. 1, 1964, as a unit of Asheville-Buncombe Technical Institute. Enrollment in that first year was 493 students, including curriculum and continuing education programs. SCC now serves more than 9,000 students annually at locations throughout its service area of Jackson, Macon, Swain Counties and the Qualla Boundary. Ninety percent of SCC’s graduates remain in the college’s service area after earning their degrees, diplomas and certificates. To commemorate Southwestern’s first 50 years and look ahead to the next half-century, SCC has scheduled an open house and celebration for Oct. 4 (with a rain date of Oct. 18) at the Jackson Campus in Sylva. Bridging faith, music and Appalachia Summer McMahan remembers the exact moment her life changed. “Mountain Heritage Day [at Western Carolina University], 14 years ago,” she said. “I watched the Fiddlin’ Dill Sisters and decided that’s what I wanted to do.” Singer and fiddler in the Sylva-based gospel /bluegrass group Mountain Faith, the 20-year-old was just a kid that day at WCU, but the dream had been set in stone. Soon after, she went to a pawn shop and purchased her first banjo. But, it was a chance encounter with fiddler J.W. Stockman that sealed McMahan’s fate as to her instrument of choice. From then on, it was all about bridging her passions for life with the melodic sounds echoing from her soul. “I just know it’s what we were born to do. I wouldn’t have been given such a huge love for it if it were not what I’m supposed to be doing,” she said. “I enjoy every second of it.” Alongside McMahan onstage is her father Sam (bass), brother Brayden (banjo), Dustin Norris (mandolin) and Luke Dotson (lead guitar). Soaked in multiple vocal harmonies and an angelic Appalachian tone, the sextet has rapidly gained notoriety in Western North Carolina and beyond. Amid regional accolades and acclaim, the band was recently nominated for eight awards by the Society for the Preservation of Bluegrass Music in America. Plans are already in the works for Mountain Faith to hit the studio this summer to record its debut album. And when they’re onstage, the members of Mountain Faith find themselves immersed in the melodic beauty of the universal language. It is in that moment where the ensemble feels not only at home, but also channeling the power that connects the heavens above to the joyous faces below. “I love nothing more than singing and playing, and seeing a smile on people’s faces,” Summer said. “Ultimately, I’m thinking about the people in the audience. I don’t know what they may be going through at the time, and what I say and sing is to let them know that everything will be OK. And amid these lush forests and deep rivers, its residents can take full advantage of their endless backyard. “On the weekend, I love to wake up early, throw on some sneakers and go for a run while the fog is lifting above the mountains and the sun hasn’t come up yet,” said Nick Breedlove, a Jackson County native and mayor of Webster. “It’s absolutely beautiful to see wildlife on your run. Squirrels, foxes, rabbits, you name it. There’s nothing that compares.” At Western Carolina University in Cullowhee, students of all backgrounds are surrounded by thousands of acres to explore and immerse themselves in. “As a graduate student, I don’t have much spare time or money, and the mountains are a

And with plenty of those activities being on water, Jackson County has no shortage of rivers, streams and lakes for enthusiasts to dive right into. “We’re home to an abundance of scenic rivers. You have the Tuckaseegee, Horsepasture, Whitewater and Chatuga,” said Brad Waldrop, a Sylva native and acclaimed musician. “There is no shortage of waterfalls and fisheries, with nearly countless small tributary streams.” Waldrop noted how alongside these natural wonders are communities filled with embracing locals, ready to point you in the direct of prime outdoors spots or provide you with some helpful tips to truly enjoy all of the recreational pleasures of Western North Carolina. “I’ve had the opportunity to see almost all of the United States, and I have yet to encounter more friendly, hospitable and genuine people elsewhere like here in Jackson County,” he said. For those looking to hit high altitudes, the innumerable hiking trails around the county offer backpackers and day trekkers a wide selection of places to wander, from steady climbs to strategic routes. “In the summertime, it doesn’t get dark until almost 9 p.m., and I like to head up

The mountains ranges almost don’t end, with orange and purple hues cascading across the sky as the moon rises and the sun sets.” And after a long, bountiful day out in the open, folks around here wash up and head for town, all in search of a hot meal, hearty conversation or live entertainment — the perfect cap to an already great day. “The evening is the perfect time to stroll through downtown, check out an art gallery, then visit a restaurant for a great meal,” Breedlove said. “We also have some great breweries, and a wine shop, which are perfect to meet up with people and share a laugh. Jackson County is my home, and even I sometimes take for granted all the things you can do here because there is so much.”

No Name remains a cultural beacon for music, art, food and drink within Western North Carolina. Besides her duties behind the counter, Harper also books musical groups. Everything from jazz to rock, bluegrass to hip-hop finds its way through the doors of the venue. Up the street at City Lights Café, musician Eric Hendrix is also aware of how diverse and embracing the Jackson County music and nightlife scene is. The café has played a vital role to innumerable ensembles looking to entertain the community for the evening. “There’s an openness and genuine support for local musicians,” he said. “It’s a healthy combination of styles and genres, more progressive than one would expect. College, alternative bands, mixed with acoustic, jazz, blues and Americana.”

And it’s that rich music scene which seamlessly brings together the community, where residents, students and the curious alike all converge for an evening of performance and celebration. Bands from around the corner and around the country touch down in Jackson County, all ready to share their sounds and talents with a more than receptive audience. “This is the only area I know of that you can spend your days reveling in the natural beauty and your nights enjoying the people, both native and from afar,” Harper said. “Especially if you’re part of the rich music scene here, which is a great place to meet people and share stories.” Harper emphatically seeks out new and different music to book into the venue. A popular local country singer and WCU student, Dylan Riddle plays No Name regularly. For him, it’s not about taking a town at face value, but looking a little bit closer, a little bit deeper into what exactly makes this special small mountain area tick. “The music is blowing up around here,” Riddle said. “Sylva may be a tiny dot on the map, and people might not think there’s much going on, — ERIC HENDRIX, MUSICIAN but the music is — it really is.”

“We came back to school from a tournament and they said our program had been cut,” he said. Owner/founder of AB’s Fly Fishing Guide Services, Bell was a basketball player at a college on the Florida panhandle in the mid-1970s. Once he found out the team has been eliminated by the school, he started looking around for another institution to not only play, but also acquire an education. He soon came upon Western Carolina University in Cullowhee and was hooked, line and sinker. “When I came up here for a Alex Bell visit, it was the first time I’d ever been to this part of the country,” he said. “I fell in love with mountain vistas first, then with the local people, then with the fishing.” Following graduation, Bell officially relocated to Jackson County and never looked back. An educator in the local school districts for the better part of three decades, he was a teacher in the classroom, principal in the administration and coach in the heat of competition. Upon his retirement, he knew he couldn’t just sit on the sidelines of life. “I spent 30 years in education and I never dreaded going to work a day in my life,” he said. “I’m not somebody who can just go sit on the porch rot. If you do what you love, you’ll never really work a day in your life.” An avid fisherman all of his life, Bell has spent a lifetime in search of the perfect river, perfect cast and catch to turn any day into a great one. As a child, he was either on the ocean or inland lakes with his relatives. That love of nature and family is something he’s carried with him into his Jackson County endeavors.

“I don’t even remember not fishing,” he chuckled. “It was a great way to spend time with my father. It was all about that time with him, that time on the water — it’s very therapeutic. I just enjoy the whole aspect of casting, trying to improve, trying to fool a fish.” In 2008, Bell started the fly fishing guide service. Based out of his home, the company specializes in family, group and individual trips into some the most pristine and prized waters

in the country. Each jaunt into the Southern Appalachian wilderness is tailored to the client’s skill level, expectations, requests and where the fish are most likely to cooperate. “This is a way I can share my passion for fishing and love for nature with other people,” he said. “I love teaching and coaching, so this is a combination of those two things. I’m tell people, ‘I’m still teaching and coaching, just that my classroom got a little more scenic.’” Throughout the week, Bell will guide numerous groups around the county, with clinics on Saturdays at the High Hampton Inn & Country Club in Cashiers. For him, it’s about the priceless look on a client when it all clicks, when the cast, the rhythm and the catch all fall into place for an unforgettable experience on the rivers of Western North Carolina. “Watching them get the cast right for the first time, catching their first fish, that look — it’s a gift,” he said. “I love teaching a parent/child combination, where you’re seeing something they can share, and share for a lifetime.” At the center of Bell’s love of fly fishing is his crowing achievement, which is establishing the WNC Fly Fishing Trail. Encompassing big rivers, small streams, easy access and backcountry hike-ins, the 15-spot trail was the first of its kind in the United States. As a co-creator of the trail, Bell made sure the map was a thorough and accommodating for fishing enthusiasts and the curious alike. “It’s really been a neat experience. We had no idea how popular this trail would become. Its been beyond our imaginations,” he said. “And we’ll keep tweaking, keep modifying it, so that it will always be new and fresh.” Reflecting on his journey from Florida to Western North Carolina, Bell is thankful for all of the unique and incredible experiences he and his family have crossed paths with in Jackson County. With world-class fishing, majestic mountain peaks and welcoming communities, he couldn’t imagine living anywhere else. “Those who weren’t blessed enough to be born here, we came here on our own,” he smiled.

From mountain waters to your dinner table — WNC trout recipes Jackson County is renowned for its Western North Carolina Fly Fishing Trail. And with that trail comes the bountiful harvest of fresh trout from the crisp, clear waters of the many creeks and streams that snake through the county. Here are a handful of delicious recipes from chefs at the Balsam Mountain Inn, High Hampton Inn & County Club, Creekside Oyster House & Grill and the Jarrett House — each as unique as the ingredients themselves.

BROILED RAINBOW TROUT WITH ROASTED CORN RELISH From Chef Sean Ruddy, High Hampton Inn & County Club • 4 rainbow trout filets • 1 shallot (finely diced) • 1 lime • 1 cup white corn kernels • 1 cup yellow corn kernels • 1/4 cup red bell pepper (diced) • 2 tablespoons brown sugar • 1/2 teaspoon coriander (ground) • 1/4 teaspoon kosher salt • 1/4 teaspoon black pepper (peppermilled) • 1/4 cup cilantro (fresh chopped finely) • 2 tablespoon vegetable oil • 2 tablespoon butter (melted) In a 300-degree oven, place the corn on a cookie sheet that has been brushed with the melted butter. Make sure the corn is dried off. Roast in the oven for about five minutes or until begins to brown. Place corn in a mixing bowl and add shallots, lime juice, brown sugar, coriander, cilantro and salt and pepper. Let stand for about 10 minutes, make sure sugar is dissolved. Season the trout filets with half of the salt and pepper. Heat a medium sized skillet or frying pan with the vegetable oil until almost to a smoke point, and place the trout fillets skin side up. Cook for about two minutes and flip the filets gently away from your body (so as not to splash the hot oil on yourself). Cook for about two minutes more until the skin is crispy, and remove from the pan with a slotted spatula and place on a paper towel. Arrange the trout filets on a plate and spoon the roasted corn relish over the filets with a little bit of the juice.

APPALACHIAN GRILLED TROUT From Chef Arthur McElrath, Creekside Oyster House & Grill • Two 8 oz. trout filets (butterflied, deboned, headless) • Spice mix (salt, pepper, garlic salt and paprika) Take filets and dust the meat with spice mix. Put grill at 350 degrees. Place trout on grill for three minutes on each side, or until golden brown. Best if served with hushpuppies and cole slaw.

PECAN ENCRUSTED TROUT From Chef Phillip Page, Balsam Mountain Inn • Two 6 to 7 oz. trout filets • Half-cup of panko bread crumbs • Tablespoon of finely chopped pecans • Teaspoon of dried parsley • Kosher salt • Black pepper • Zest from 1/4 of a lemon • Teaspoon of melted butter Preheat oven to 350 degrees. Remove fins, remaining pin bones and white flesh on flesh side of both filets. Mix bread crumbs, pecan, pinch of salt, pinch of pepper, parsley and lemon zest in a mixing bowl. On sprayed baking pan place cleaned trout filets skin side down and drizzle with a teaspoon of butter. Bake for six to seven minutes, or until flesh is white, then sprinkle breadcrumb mixture on trout and bake for another two minutes.

FRIED TROUT From Mary Hartbarger, The Jarrett House • 4 trout filets • 3 cups of cornmeal to 1 cup of flour • Tablespoon of parsley • Teaspoon of salt and pepper • 9x13 pan to put the breading in Shake up breading, put filet in it. Use cast iron frying pan. Both sides fry in 100% canola oil. 350 degrees for five minutes. Trout will floats when it’s done. Do one filet at a time. Breading will rise. Take what’s left for fried filet (if any), chop it up, put it in a soft tortilla shell, put cole slaw over the top of it, add cocktail sauce or tartar sauce, and you have yourself a fish taco.


Stirring up passion Phillip Paige just wants to get to know his neighbors. “When you get to meet the people in your community that yield these products, naturally it’s going to taste better immediately because you get a face with the taste, you have a name with that dish,” he said. “You can’t replace that value and freshness in the product.” Executive head chef at the Balsam Mountain Inn, Paige is a Western North Carolina native who grew up in the food industry. He worked his way from a line cook to a chef with an enthusiasm and devotion to his work that permeates through every meal he serves. “The uniqueness, the culture of the dish, that’s Phillip Paige what we do around here — it’s all about the passion and the heart,” he smiled. “To be a chef is to be different from another chef. You have to take a recipe and make it your own, and any chef that’s ever cooked has cooked on behalf of learning from other chefs.” At the center of Paige’s intent is to make sure he’s using as many local ingredients as possible. Whether it’s local honey, vegetables or meat, it’s about knowing where your food comes from and knowing the effort and appreciation it took to get from the farm to your table. “Anything we can grow here or pull from our streams, there’s so much we can do and utilize, which also brings culture and heritage to our dishes, and really gives people a full taste of the mountains,” he said. One Paige’s favorite ingredients to use is local Western North Carolina trout, a prized fish that’s not only plentiful in Southern Appalachia, but also well taken care of and cherished by the folks of this

region. For his filets, he uses the robust and succulent trout from the nearby Sunburst Trout Farm, which lend themselves to an array of culinary possibilities. “Trout is almost like chicken, it can go with so many things,” he said. “It can grilled, broiled, blackened, breaded, fried, covered and smothered — you name it. You can do anything with it.” And when he’s in the midst of a busy night in the kitchen at the inn, Paige couldn’t imagine being anywhere else. “It’s one of the best feelings to make a plate not only aesthetically pleasing, but also make one where every bite is important,” he said. “If you’re up here, you’re not in a rush, so we want to give you a dish to appreciate and savor.”

Mustang football The ties that bind a community

Like a cavalry charging through the hills, innumerable headlights and taillights stream through every Jackson County community on the way to Smoky Mountain High School. Car horns honk in anticipation of an impending victory as fast friends shake hands and ready themselves for battle. It’s Friday night and, after Labor Day, that means all eyes are on SMHS Mustang football. “This is a small town,” said Sylva resident Mickey Cabe. “You get out in the community to socialize with friends, and enjoy the ballgame.” Hundreds, if not thousands, of people close up shop or find a babysitter when Friday evening rolls around, all in an effort to cheer on and witness their beloved ‘Stangs. The quiet field soon fills with cheerleaders, officials and players, while the stands spill over into a standing room only crowd. Seats get hard to find, but the view is always unobstructed and crystal clear towards the gridiron.

“These boys get to come out here and play for their school, and really enjoy what they’re doing,” Cabe said. And with the kickoff comes a roar of hopeful howls from the depths of the outdoor stadium. Up in the stands sits Jessica Buchanan. A SMHS alumnus, she has always been 100 percent behind her team. “I’m a former student here and I just like watching them play,” she said. So, what about her own kids? “They don’t play, yet, but soon they will,” she smiled. A few bleachers away, Mike Dillard has similar sentiments. “My son likes to come out and watch the game,” he said, eyes intently focused on the field play. “He plays football and hopes to play for this team someday.” Leaning against the field fence is SMHS senior Colton Greer. Surrounded by a group of his teenage peers, Greer bleeds ‘Stangs grey and blue. “I’m here to watch Smoky Mountain whip some butt,” he howled. “It’s amazing to be at these games. It’s all about the mountains, the small town. Our student section is pretty insane, and I love it.” Several feet away, the student section is at full throttle. The school’s band is going into a manic frenzy — all the while the action on the field heats up. “It’s fun to be part of this mountain community,” said Whittier resident Randy Miller, standing right outside the student section. “It’s great friends, great weather, and just enjoying football in general.” The ‘Stangs score another touchdown. The crowd erupts into a frenzy. With the home team now on defense, troves of folks head for a quick bite at the snack bar atop the 50-yard line. “Watching the Mustangs — it’s the thing to do in Jackson County,” said Valerie Schwievert from behind the food counter. “This is what I love about living here. It’s the atmosphere, it’s the friendly people, it’s the true Southern hospitality of a small town with lots of fun things to do.”

When the sun goes down Downtown Sylva is infused with the flavor of Appalachia

As the late summer sun falls behind the mountains to the west, Jackson County comes alive. With a slight tinge of the impending fall wafting in the air, there’s still plenty of adventure to get into. It’s Friday evening, and with work duties now in the rearview mirror, residents and visitors alike descend into downtown Sylva for fun, family and frolicking. “What I love about weekends in Jackson County are the recreation opportunities, local businesses and restaurants,” said Paige Roberson, Sylva town manager. “I love to go to downtown Sylva and see all the people walking and eating in the restaurants. In the summer I enjoy Concerts on the Creek, hiking and jogging, and shopping on Saturday afternoons.” Curiosity is contagious in these parts. Folks wander into downtown Dillsboro, Sylva and Cashiers each weekend, filling up local art galleries, shops, restaurants, cafés, restaurants and music venues, searching for a memorable night on the town or at perhaps some end-of-the-work-week relaxation. “It’s a friendly place to be. People aren’t afraid to talk to each other, and strangers always become friends,” smiled Tuckasegee resident Bill Weinert. “If you become semifamiliar in this town, people will treat you like family.” Wrapping up a productive week at Heinzelmannchen Brewery (Sylva), coowner/brewmaster Dieter Kuhn is ready to take his wife out on the town. “I like going around downtown, we really enjoy the scene of everyone walking and exploring Sylva,” he said. “We’ll probably go over to Lulu’s tonight for a good meal. If the weather is gorgeous this weekend, we like to go hiking and enjoy the natural beauty of this area.” Sitting on the outdoor patio at Lulu’s On Main, local resident Wally Coward is soaking in a relaxing Friday evening.
