Vedat Basaran Represents Turkey at International Culinary Event

Vedat Basaran, Director of the TCF Culinary Arts Center - YESAM was invited to join the world’s greatest chefs at an international culinary event organized by renowned chef and restaurateur Alain Ducasse and SBM (La Societe des Bains de Mer) to celebrate the 25th anniversary of Le Louis XV/Alan Ducasse. The event took place in Monte-Carlo on November 16-18 and brought together 240 chefs representing 25 countries, 5 continents, and 300 Michelin stars. The event also

featured an open market with 100 of the best local producers. To make the event even more memorable, Alain Ducasse invited 10 chefs to prepare dishes in their own style with the products offered. During this event, local producers and guest chefs had a chance to interact, watch demonstrations and sample the dishes prepared by the chefs. The highlight of the event was a gala dinner, which was attended by Prince Albert of Monaco and his wife, Princess Charlene. Commenting on the event, Mr. Basaran said that it highlighted Ducasse’s vision that the future of gastronomy rested in preserving Mediterranean cuisine and keeping local culinary culture as the base of our cuisines. He added: “The event drew attention to the importance of bonds and continuity between different generations by bringing them together to identify the gastronomic dynamics for the future.”

Turkish food on Lufthansa flights Starting this week Europe’s leading carrier is upgrading its onboard product on flights between Turkey and Germany with a uniquely created Turkish food selection. The menus are specially prepared for Lufthansa by YESAM-Culinary Arts Center of the Turkish Cultural Foundation. The preparation of the dishes is handled by the world’s largest airline catering company LSG SkyChefs e.g. at their facility at Atatürk airport. “With more than 75 flights per week between Turkey and Germany we are connecting the two largest countries in Europe which are not only economically but also ethnically in very close and stronger growing ties. For us at Lufthansa it’s the first time to adapt our mediumhaul flight catering to a local selection of exclusive dining opportunities” said Carsten Schaeffer, Lufthansa Vice President Sales & Services South Eastern Europe, Middle East and Africa, during a media presentation at Nar Lokantasi Restaurant in Istanbul’s Sultanahmet area. “Clearly, Lufthansa will strengthen its position as leading foreign carrier in Turkey in 2013 – our growing fleet of brand-new Airbus A320 airplanes, new seats, smoother transfer opportunities for our passengers in Frankfurt and Munich and now an even better onboard service will differentiate us from others.” “Each community has its own unique food culture. But only a few of them developed rich culinary cultures, just like the Turkish Cuisine, that continued its existence on three continents throughout the ages. Beyond the bare necessity of food, Turkish Cuisine reflects a unique harmony of art and taste”, said Bea Berke, Lufthansa General Manager for Turkey. “I am convinced that not only our Turkish customers will immediately feel at home, also our international passengers will have the chance to experience Turkey again when flying away”. Working together with Lufthansa and LSG SkyChefs is Chef Vedat Başaran who is also President of YESAM Culinary Arts Center. Over a period of three months him, Lufthansa, LSG SkyChefs and have created something unique. Before these top menus can “take to the skies”, the Chef puts his head together at several meetings with the chefs employed by LSG Sky Chefs. These get-togethers further strengthen the mutual understanding of the catering philosophy; they are fruitful for both sides and an interesting experience. It is a challenging process for both the culinary maestros and

Lufthansa. The aim is to ensure that exquisite menus produced in larger batches still bear the exclusivity of the chef. “Turkish Cuisine owes its fame mainly to its diversity. Casseroles prepared with grains, vegetables and meat; soups, dishes in olive oil, pastries; unique flavors of herbs special to Anatolia and an innumerable variety of desserts and many more. The variety of crops grew in the Asian and Anatolian lands, the interactivity within many different cultures throughout history, the new tastes formed in the imperial Seljuk and Ottoman palaces and the sovereignty over the Spice Route played essential roles in the development of Turkish Cuisine culture. We are very proud to bring this tradition and colourful culinary life up in the air and to cooperate with a strong global brand like Lufthansa”, said Vedat Başaran. As Europe’s leading airline Lufthansa has always paid strong attention to its onboard product especially in First and Business Class. For over ten years Michelin Star awarded Chefs from all over the world are creating dishes for intercontinental flights leaving from Frankfurt, Munich and Düsseldorf. For European and domestic flights Lufthansa is working together with local celebrity Chefs, some of them very popular with their on TV shows. In addition Lufthansa has been continuously applauded for its wine and champagne selection over the last years which has been created by an aviation specialized sommelier. To enhance the dining experience in the air Lufthansa is also cooperating with Germany’s Fraunhofer Institute. Since the air pressure in the cabin of an aircraft flying at a cruising altitude of around 10,000 metres is equivalent to being at a height of 3,000 metres taste nerves become less sensitive and perceive less. Low humidity and vibrations are additional factors to be taken into account when creating food which cannot be just taken from ground to the sky. Interestingly Lufthansa’s flagship the Airbus A380 exclusively offers a Cabin Humidification and Zonal Drying System which increases the cabin humidity and therefore also supports an even better dining experience.

Pegasus Airlines Places the Largest-ever Aircraft Order in the History of Turkish Civil Aviation Pegasus Airlines has placed an order of record number of Airbus aircraft worth US$12 billion*. A signing ceremony and press conference was held today at Pegasus Airlines’ new headquarters at Aeropark, Istanbul, Turkey, at which the airline’s order of 100 Airbus aircraft was unveiled to the public within the context of the airline’s newly revealed strategy for growth to 2023. Within this framework for expansion, Pegasus Airlines, who launched scheduled flights on 1 November 2005, announced their vision to create a “Fleet of the Future”. The signing ceremony, jointly hosted by Pegasus Airlines’ Chairman Ali Sabanci and CEO, Sertac Haybat, was attended by The Republic of Turkey’s Minister for Transport, Maritime Affairs and Communications, Binali Yildirim, together with Airbus Executive Vice President, responsible for Europe and Asia Pacific, Christopher Buckley, and senior representatives from aviation, transport and business industries. The opening speeches at the ceremony were made by Pegasus Airlines’ Chairman, Ali Sabanci, and CEO Sertac Haybat. Sabanci and Haybat noted that they were proud to be signing another pioneering and milestone project for the airline which is set to enhance the Pegasus mission even further as the easiest way to fly: “When we launched Pegasus Airlines on 1 November 2005 we knew we had a long journey ahead of us. From the very first day, we introduced innovation into our country’s civil aviation sector; we grew, we evolved, we innovated and we generated change. Now we are going further, and once again we have said ‘this is not enough,’ continuing steadfastly on our journey of advancement and progress.” Pegasus Airlines CEO Haybat stated that Pegasus Airlines has flown 49 million guests since launching, thus also introducing Turkey to the easiest way to fly. He continued: “We introduced low-cost air travel to our

guests, made possible by our airline’s operations. When we began our journey, we promised our guests three main benefits: they would fly at affordable prices, arrive at their destinations on-time and fly in new aircraft. We have kept our promises for the past seven years and have regularly introduced innovative features for our guests. At the end of seven years, we are now providing 1,700 scheduled flights a week. As of December 2012, the average age of the fleet is 3.86 years and since the first day of operation, we have welcomed 49 million guests on a fleet of 42 aircraft. We are now Europe’s Fastest Growing Airline, offering 62 destinations in 26 different countries**. Although we did not launch civil aviation in Turkey, our Pegasus model has transformed it.” Pegasus Airlines Chairman, Mr Ali Sabanci, said: “When our first Pegasus flight took off, we had broken new ground by placing the biggest order in the history of Turkish private civil aviation at the time. Now, as we look ahead to the next decade, we know that, apart from human resources, an airline’s most important asset is its fleet; thus, once again, we have said to ourselves, ‘this is not enough;’ and so we continue to expand our fleet with this historic order of aircraft. This time it’s not just the largest order in the private civil aviation sector, but also the largest in the history of Turkish civil aviation. We are delighted to be signing this agreement with the world’s leading aircraft manufacturer, Airbus, for 100 new A320neo and A321neo aircraft worth a total of US $12 billion. With this pioneering investment in 100 new aircraft, we at Pegasus are breaking new ground in the development of Turkish civil aviation.” Christopher Buckley, Airbus’s Executive Vice President, responsible for Europe and Asia Pacific, said: “Turkey is rapidly developing into Europe’s most dynamic commercial aviation market and Pegasus is one of the major players within this transformation. We are very proud that Pegasus Airlines has become Airbus’ newest customer with such a significant order of new aircraft. We wish Pegasus the greatest success with its new A320neo fleet and look forward to a long-term partnership together.” After the speeches, the Republic of Turkey’s Minister for Transport, Maritime Affairs and Communications, Binali Yildirim, witnessed the signing ceremony for the order of 100 new Airbus A320neo and A321neo aircraft to the value of US$12 billion. The first aircraft in this largest order in the history of Turkish civil aviation is expected to be delivered in 2015-2016. The delivery of this order is expected to be completed in 2022.

The FC Barcelona forward joins the ranks of Los Angeles Lakers star Kobe Bryant and professional tennis player Caroline Wozniacki who have been brand ambassadors since 2011 and 2010 respectively. “I would like to thank to Turkish Airlines because it’s a great honor for me to be the brand ambassador of such a fast growing among the world’s biggest and Europe’s Best Airline company” said Messi. “I believe that by joining with a global network company such as Turkish Airlines, we will set to sign many more successful projects. destination Buenos Aires from Istanbul.” “We have held the title of Europe’s Best Airline now for two consecutive years and it makes perfect sense that we align ourselves with the best and most recognizable sports figures in the word,” said Turkish Airlines Member of the Board, İsmail Gercek. “Signing a global sports star like Messi only solidifies our leading position as one of the world’s fastest growing airlines flying to a record number of countries across the globe.” In September 2012, Messi shot a commercial for the airline with Kobe Bryant. FiturGreen 2013 Analyzes the key to Finance Sustainability and Energy Efficiency

With the slogan “The Power of Tourism”, Instituto Tecnológico Hotelero (ITH) and FITUR, in collaboration with the World Tourism Organization (UNWTO) and Grupo Habitat Futura, organize the fourth edition of FiturGreen 2013. FiturGreen 2013 will be held in hall 10B05 of the exhibition fair, that will focused on the funding models for energy efficiency through Energy Service Companies (ESCOs), energy and sustainable building certifications, and management of sustainability in tourism industry. The program this year will include workshops and case studies on advanced technologies for monitoring and controlling energy efficiency, efficient heating, ventilation and air-conditioning (HVAC), efficient lighting, water management and thermal insulation. During the morning of the opening day, entitled “Reducing costs without investment”, which will take place on Wednesday 30th January, experts from Gas Natural-Fenosa and Prosolia will explain agreement options and the implications of Energy Services Companies (ESCOs) for the hospitality industry, including the types of contracts and success stories of hotels that have implanted formulas, adapted to the particularities of the hotel industry. The benefits, advantages and challenges ESCOs and hotels must resolve to grant access to energy efficient technology, will be debated in a panel discussion with the participation of representatives of Bosch, Buderus, Balantia, Prosolia and Gas Natural Fenosa. In the afternoon, two workshops will be held. The first will be devoted to studying the conditions, characteristics and steps to be taken in order to implement advanced energy monitoring and controlling systems, with the help of Grupo Euroconsult and Schneider Electric. The second workshop will be present case studies and the results of two pilot projects, carried out under ITH Sustainable Hotel: Efficient HVAC for Hotels, carried out in collaboration with Grupo CIAT; and Efficient Lighting for Hotels and Tourist Accommodations, with Light & Energy. The second session, on Thursday, January 31st, will be devoted to defining the keys of “360 Sustainable Hotel”, that is to say, to clarify the differences between certifications, standards and models of energy management and responsible tourism that can be implemented in tourism and travel industry. In addition, Asociación de Hoteles de Turismo de la República Argentina (Hotel Association of Argentina), ITH partner, will present its “Programa de Hotelería Sustentable y Hoteles Verdes en Argentina” (Sustainable Hospitality Program and Green Hotels in Argentina), recently awarded with the UNWTO Ulysses Award in the category “NGOs and public institutions and their innovative contributions”. Demands of institutional entities and customers on sustainability and energy efficiency are increasing, and that is the reason tourism industry is bound to know the ways to reduce the environmental impact of its activities. To this end, representatives of Spain Green Building Council - LEED, PEP Passivhaus and BREEAM Spain, along with Thomas Azcárate Bang, president of the Institute for Responsible Tourism Global Sustainable Tourism Council, and Gonzalo de Castro, vicepresident of TÜV Rheinland Ibérica, will explain the main

models for legitimizing and endorsing environmental and energy policies on the hotels. In addition, speakers will analyze success stories, such as Hotel NH Eurobuilding (Madrid), first hotel in Europe to be certified with ISO 50.001 energy management certification, and leader in the implementation sustainability and energy efficiency measures at the hotel. Water will be the central issue to be discussed at a workshop, conducted by Grundfos Spain and Aqualogy, which will be focused in studying the steps to implement technologies and systems to manage this valuable and much needed resource for hotels. Finally, on Friday, February 1st, the presentations will address on “Sustainability in the Tourism Industry”. Attendees will learn tools and systems to design sustainable management plans for hotels, regardless of their size and turnover, including Intelitur platform, an initiative led by the Spanish Chambers of Commerce, and developed by ITH; and WTO Hotel Energy Solutions (HES), whose Spanish version was launched in late 2012. The next challenges and trends related to sustainable tourism that hotel industry must face in the near future will be raised in a panel discussion, with Thomas Meller, director of Mesoamerican Reef Tourism Initiative (MARTI), Arantxa Garcia, responsible for Sustainable Development for Accommodation & Destinations Sector of TUI Travel PLC and representative of Tour Operators’ Initiative for Sustainable Tourism Development, and Daniel Frey, Preferred Partner & Auditor for the Iberian peninsula of Green Globe, among other experts.

Green Hotel & Tourism Solutions This year, for the first time, FiturGreen program will include a parallel session, Hotel & Tourism Green Solutions, which will take place on Thursday January 31st, from 14:30 to 20:00 hours, and organized by Grupo Habitat Futura. The meeting will analyze operational and management issue, architectural design, facilities and the latest market innovations. The conference will bring together some of the most outstanding professionals, both engineers and architects as well as national hotel groups, such as NH Hotels, TMA Arquitectura, Jaime Beriestain, José Riu de Martín, Oriol Tintoré, Cuende y Gutiérrez Arquitectos, Francesc Valls, founder of ESADE Centre for Tourism Management, the CAMP platform, among other experts, to show, through case studies, how sustainability benefits and contributes to profitability in tourism industry. Rehabilitation and sustainable building -key to the hospitality industry, are getting an ever more global, multidisciplinary scope; and this is also related with the need to use more sustainable, healthier, attractive and profitable materials and resources, able to provide solutions to sustainable hotel management. When compared to other competitive Mediterranean destinations, these factors add value to Spain tourism companies; so to updated facilities, to renovate with distinctive design and sustainability criteria, will also help to reactivate the construction market and to reinforce the local hotel industry. Green Hotel & Tourism Solutions is supported by Colegio de Arquitectos de Madrid, is sponsored by Geberit, Hansgrohe, Mitsubishi Heavy Industries, Lutron, and counts on the collaboration of Bosch, Euronit, Cosentino, Lamp and Pladur.

NewFocus
