For years we’ve heard about how ‘we are all witnesses’ to Lebron’s greatness – it’s basically been his marketing tag line since Nike announced it about seven years ago. This season, and particularly this May and June, we were all witnesses to the value of team work and discipline over dribble-drive-slam dunks with the Spurs dominating championship run over the Miami Heat in the NBA Finals. It was poetic justice on so many levels starting with the redemption story-line, to the passing of the torch within the Spurs team and to the value of team basketball over the individual superstar. Anytime you have legends of the game like Magic Johnson marveling at your teamwork, passing and great coaching, you know you’re doing something right. Watching guys like Diaw, Mills, Tiago and Kawhi torch the Heat’s supposedly “Big 3” just reinforced the concept that well-executed team play will almost always outmatch individual play. Their consistent discipline to not only pass as a team but act off the court as a team was a sharp contrast to their opponent’s style of “me, me, me.” It was interesting to notice how even the Miami players were in awe of the Spurs’ flawless execution of team passing, and it made you wonder that if the Heat had so much talent why couldn’t they flip the switch and just start moving the ball around like the Spurs? Surely they’re capable of rifling crisp passes around the arena? The answer is simple: operating as a team and playing unselfishly is not something you suddenly decide to do 80+ games into the season – it’s either ingrained in how you play throughout the season or it’s not. Seeing Lebron score 19 of his team’s 21 points in a quarter while losing ground to the opponent tells you everything you need to know. It was simply a 1-on-5 matchup most of the series. Adding yet another layer to the contrast between the Spurs and Heat was the fact that the guy that lead the Spurs to victory was Kawhi Leonard, named Finals MVP for his critical contributions in the last three blowout wins of the series. Kawhi is notorious for being the quietest, most soft-spoken guy in the NBA; he’s somebody that doesn’t enjoy being interviewed or talking about himself; he hardly could manage a smile even after the final win and being named MVP; and he sure doesn’t run up and down the court show-boating and celebrating after a big dunk. He’s the epitome of everything the Spurs are and the Heat are not. Further illustrating the unselfish balance the Spurs displayed was the fact that there wasn’t really a clear-cut series MVP until Kawhi exploded in game five. Going into that game, even guys like Boris Diaw were mentioned as possible candidates along with the obvious Tim Duncan choice. It’s remarkable that setting the all-time NBA Finals record for point differential over an opponent (70 points for the series) doesn’t reveal an obvious MVP. As Tim Duncan mentioned after the game 5 win, this Championship definitely made up for last year’s loss and was worth the wait. Whether or not Timmy and Pop retire after this defining win remains to be seen, but there’s no doubt that this 15-year run of dominance by playing disciplined, team basketball will be remembered forever. I’m just glad that Lebron got to be a witness to it. Go Spurs Go,

For each of the first six years of the annual Dallas Morning News golf course rankings, Cordillera Ranch has been ranked one of the top five golf courses in the state. With the recent release of the 2014 golf rankings, Cordillera Ranch moved up to the #4 course overall in Texas. The rankings also put Cordillera as the top-ranked course in the San Antonio / Austin / Hill

Country region and the top-rated course in Texas in a residential community. This recognition is accentuated by its par-3 16th being named the state’s top hole in the “Best” and “Most Beautiful” categories. Playing 172 yards from the back tees (131 from the middle), it requires golfers to carry a limestone ravine and natural waterfalls to reach a small

putting surface guarded by bunkers front and back. Nearly 100 panelists from across Texas – high-ranking amateurs, golf-design experts, golf journalists and other industry heavyweights – use criteria like design uniqueness, playability, challenge and aesthetics to select the best of its 800plus courses.

As a Master in the Academy of General Dentistry, Dr. Chet Hawkins posses the highest level of education recognized for a dentist. As a graduate of the Pankey Institute, he’s had the finest post-doctoral training in the world. “I want to establish a master plan and then develop a blueprint for my patients’ long-term care,” he explains. “We want to solve the causes of the problems before we do anything else to their teeth. Then we can rebuild or repair with confidence that the fix will last as long as possible. We also educate our patients about other health issues related to oral disease. There is a connection between periodontal disease and heart disease that people need to know about.” Dr. Hawkins and his wife, Deby, have been residents of Boerne for 7 years and are excited to be joining the practice in Boerne.

Randy Frazee, executive pastor at Oak Hills Church, has devoted his career to building strong relationships. Now one of the largest churches in the area, his success is evident not only in his career but in his home as well.

It was around a dinner table and a family in prayer that a young Randy Frazee chose to live his life a certain way. It was an ambition ignited by a moment he remembers well; a spark of divine intervention that would end up a glowing lantern leading his path to where he is today. And where he is today is living with his lovely wife Rozanne in a beautiful, garden-style home in harmony with nature and the outdoors at Cordillera Ranch. Far from the Hill Country’s rolling landscape, his journey started in his native Cleveland, Ohio. Now, Randy is an accomplished author or co-author of dozens of theological and inspirational works that have inspired perhaps millions of people. He is also the Senior Minister of Oak Hills Church, a non-denominational church in San Antonio that boasts almost 10,000 weekly congregants. With such an accomplished career, it is almost hard to believe that he didn’t spend his entire life in the church, but as a child, Randy didn’t attend church regularly. His family wasn’t religious, but Randy did find out as a teenager that the fellowship of church was important to him. He would go to great lengths to attend church on Sundays. Back in Ohio, the church he frequented was about 20 miles away from his neighborhood, which is a big trip for a 14-year-old boy. Randy was determined, however. He says, “I would even hitchhike just to go to church. Eventually, I discovered that the best way to work this out was to make the trip during the day, and hang out while waiting to attend the night service. Luckily for me, a big Italian family started letting me join them [for dinner]. “ “In this family was a dad who owned an independent grocery store. He had four kids and he worked hard to put food on the table. It was similar to my own family, where my dad worked hard. We were taught to be appreciative, and to never put any food on your plate if you weren’t intending to eat it. To waste it was to dishonor the sacrifice my dad made by working so hard to give us that food.” “So here I was at this table with this man, the father of a large family, who worked hard for everything he had, and one specific time I remember he said grace before eating. We all joined hands, and I had never said grace at

home, so I was a bit apprehensive. And this man, he thanked God for the food as though God provided the food.” Feeling confused, Randy “looked up with one eye to see what was going on. It was strange to me at the time. I thought, ‘he owns the food, yet he’s thanking God for the food.’ The gratitude he experienced was real, and to me it was enlightening. On that day I said, I want to be that guy. I may never have this experience myself, but perhaps, if God is good to me, then I will be in that chair one day.” Randy adds, “It wasn’t until later that I figured out that the best way to pull that off is to marry the guy’s oldest daughter.” Randy did indeed marry the oldest daughter, and he and Rozanne have been together for over 30 years. Together, they have learned the power of uniting a family and creating a community with friends. But when they were just starting out, they still had a lot to learn, and it wasn’t a journey without obstacles. Randy was ambitious, and knew that God had called him to be a pastor. He worked endlessly to fulfill that dream. Meanwhile, he was also working on the family thing, and the two didn’t always go together. He started to experience severe insomnia. “I got married when I was 20, and by the time I was in my mid-thirties I had gone from undergraduate to graduate school in the seminary. At the same time I had kids who were all small. One night I went to bed and couldn’t sleep. I was exhausted, but I still couldn’t sleep the next night. I couldn’t turn my thoughts off. This lasted for 45 days.” “I’d go to bed, maybe drift off for a bit, but didn’t actually fall asleep at all. Finally I went to the doctor and the doctor gave me medications, but also suggested one alternative. He told me that I could try living a balanced life. That meant putting down my work at dusk, gathering around the table with friends and family, and not thinking about school and work until the next day.” “I checked it out, and what he suggested was in line with the teachings of the Bible. According to the Hebrew ‘day planner,’ 6pm to 10pm is the season for relationships, 10pm to 6am is the time for an 8-hour sleep, and from 6am to 6pm is the season for work.”

Especially significant to Randy was learning that, according to this way of thinking, “whatever is first in the day is the most important part of the day. The Hebrew day starts at 6pm. So the season for relationships is in fact the most important part of the day. I had always thought that the morning was the most important part, the season for work. Of course, work is still a very important part of the day, but when it comes down to it, nothing is more important than the people you love. Taking the time to work on those relationships is something we often take for granted.” Randy decided that to get the sleep he needed and to get his life back he needed to get “in balance.” The season for relationships had to become the most important part of the day, and it stood to reason that around the dinner table was the best way to start to work on

that. Rozanne was all for this new plan. She says, “Before, I didn’t really have Randy around except for Sundays because he was always working. And I love to cook, so I decided to take this opportunity to really make dinner something special.” Randy and Rozanne wanted to figure out how to linger at the table with their family. Randy explained that “There’s the classic, ‘How was your day?’ that parents often ask their kids. And the response is usually something like ‘fine.’ I wanted to go beyond that, to go deeper. I literally wanted to hear every aspect of my family’s day. I asked them to just give me a chronological recount of what happened that very day. Then, I asked them to rate their day.” “The rating wasn’t to make it like a competition. But we wanted everyone to understand that the family is there for the days that are a

‘2’ as well as the days that are a ‘10.’ We discovered something very important, that family is the key to finding balance in life.” As part of the experience of focusing on relationships in the evenings, Randy even learned to play the banjo to provide entertainment for the family. Rozanne wasn’t quite as excited about this plan at first. As it turns out, the banjo is a very loud instrument. “I was always finishing up the dishes while he was practicing on the banjo, and eventually I just said ‘Can you go outside with that?’” Rozanne’s request ended up leading to another bit of divine intervention. “I would go outside to play the banjo, and the neighbors would come out to see what was going on. We started setting up chairs so they could join us. Eventually, our front yard became a micropark. And we started living our life in the


neighborhood. Most Americans in suburbia experience what’s called ‘crowded loneliness.’ They live their lives in a series of circles. There’s the work circle, the church circle, the family circle…while each circle includes people, they don’t often come together. So people you meet at church might just stay at church, never giving you the chance to really experience a relationship with them. That’s when we decided we wanted to consolidate the circles. So in addition to life around the table we began life around the neighborhood.” Randy and Rozanne realized that they were on to something good. They formed relationships with their neighbors that went beyond friendship. They were a support system for each other—a basic human need that is increasingly lacking in today’s fractured society. People focus on themselves, but what happens to the community when everyone is retreating

took a position as the Teaching Pastor for Willow Creek Community Church. The neighborhood and relationship-based philosophy was really put to the test at Willow Creek, which is a church that had over 20,000 members. In such a large church, people may form relationships within the church, but they might be miles and miles away from each other and unable to continue those relationships in a meaningful way. Randy asked himself, “What if we invited church leaders to create a small group within the church family around their own neighborhoods?” Randy says, “The first book I wrote was around this idea. It’s called The Connecting Church. The book is to help a church understand how they can move their influence and their social support back into the neighborhoods. People were exiting the neighborhoods to attend church, and they created subcultures

of The Connecting Church is that you come together at church on Sunday, but you essentially had a ministry in your neighborhood the other 6 days of the week. This is a type of fellowship based on helping one another and spending time with one another. It easily crosses denominational lines.” With these successes, Randy again picked up a pen. He says, “I ended up writing a book called Making Room for Life. While The Connecting Church was a book for churches, Making Room for Life was for any person who wanted to escape the fragmentation of suburbia. The easiest way to do that is to simply start hosting people in your own home. Making Room for Life was an opportunity to give people practical ideas that would actually make people want to have people over. Entertaining in your own home is really an extension of the ministry and it became part of our life.”

After completing his studies at the Dallas Theological Seminary, Randy went on to work as senior pastor at Pantego Bible Church in Fort Worth, Texas: a position he would hold for 15 years. As Randy started his work as a pastor, he realized that his philosophies of bringing people together around a table and a neighborhood to the church. Randy and Rozanne eventually moved their family to Chicago where Randy

We weren’t impacting their culture.” Randy was concerned that people were becoming disconnected in church the same way that they were becoming disconnected in their work and home lives, bringing to mind again the idea of “crowded loneliness.” He explains, “In the church world, the large church emerged at the same time or shortly after the mall. Churches soon became so big that no one knew each other. So the idea

Rozanne noticed others who wanted to embrace the concept of hosting people for dinners, but didn’t necessarily have confidence in their cooking skills or their ability to entertain. Rozanne decided to write her own book, called Real Simplicity. “Making Room for Life is the concept, but people were coming and asking how they could possibly undertake hosting people in their own homes. When people begin entertaining the idea of entertaining, they end up making it hard. But it can be so easy! By finding a simple recipe and making

the gathering a potluck, you can easily bust those myths that entertaining has to be hard.” Today, the Frazees could easily be described as the modern day Mr. and Mrs. Rogers. Randy says that they live the idea of “It’s a wonderful day in the neighborhood,” but he manages to stay just shy of the cardigan sweater. Their current neighborhood, Cordillera Ranch, is the perfect place to live such a lifestyle. Randy explains how they ended up in Boerne: “Max Lucado had been the pastor of Oak Hills Church for 20 years and is the number one inspirational author on the planet. He told me that his doctor was telling him that he couldn’t continue to do everything at his current pace. He decided it was time to step aside as Senior Minister. So he brought me on and we came to San Antonio in June of 2008, but lived in a little neighborhood right in Boerne. My goal was to become the Senior Minister and introduce the congregation of Oak Hills to the idea of ‘neighborhoods’ in the ministry. So far, we have identified over 2,000 neighborhoods thriving within our congregation.” With Max, Randy has continued to author books and even came up with some innovative ways to help people bring their neighborhoods together. They created a packet with a DVD and a study guide called Making Room for Neighbors that people can use as a roadmap to hosting their own neighborhood ministries. Randy’s first sermon at Oak Hills introduced the idea of one of Randy’s most influential books to the San Antonio audience. This innovative idea centered around making the sometimes difficult-to-understand ancient stories of the Bible into a more digestible, chronological, novel-like format. Entitled The Story Church-wide Experience, the excitement around this new way of experiencing the Bible resulted in an over 20% increase in congregation attendance. From early on, it was pretty clear to see that the same divine inspiration that brought the Frazees back to Texas was also going to keep them around for a while. Randy and Rozanne became acquainted with their current Cordillera neighborhood through Max Lucado. “Max had brought property out here, and at first I started joining him up here for the golf,” Randy explained. Rozanne started visiting too because she enjoyed the fitness center. “We found that Cordillera helped to simplify our lives,” says Rozanne. They moved into a Villa and found they were content having their “circles” brought together. Eventually, they decided to build their own house. Max is now their neighbor, as he moved into the Villa that the Frazees used to occupy. Cordillera was the perfect fit for these community-minded folks, since the community is already operating under the principle of neighborhoods. Randy says, “Practical sociology states that the more sprawl there is, the less community there is. From a sociological perspective, the best communities are European villages. Everyone goes to the same places; everything is pedestrian- friendly. Cordillera is similar partly because people can become involved in any of the seven different clubs in operation here. Or when people meet on the golf course or the fitness center. Community is built over spontaneity and frequency. You need to see the same people several times in order to start the foundations of that community.” Randy continues, “Deep enduring friendships is what makes Cordillera work. There’s this intentionality in the shared public spaces. Whether you meet people through golfing, doing dinners at your home, or working out together, when you live here, people will know your name.” An example of the type of community present at Cordillera is evident right in the Frazee household. “Rozanne recently had surgery, and one of our community leaders put it on our e-news prayer list here. The next day, dinners started showing up at our house. They didn’t do it because they thought we couldn’t just go get takeout food, but because food is a way in which to say ‘I care about you.’” Randy’s journey towards being the man he always wanted to be did eventually come full-circle. “One day, we were sitting down to dinner with our four kids around the table and our son Austin brought home a friend. This was a boy who lived in our neighborhood and was being raised by a single mom. When it came time to tell us about his day, he started sharing, and he just kept sharing and sharing! He went on and on, and you could tell he was really enjoying having our attention.” “Later, that boy was baptized in our church. For me, that is true success. I said from the beginning, ‘if God is good to me, I will be the man in the chair at the head of the dinner table. I will be like Rozeanne’s father who was my hero.’ And it did actually come true.” Was it divine intervention that led the Frazee’s on the path that led to Cordillera? Randy thinks so. He says that God decided to use him to make a difference in the lives of others. Despite all his success and all the inspiration he’s been to others, Randy has this to say, “Moses couldn’t speak. Abraham was too old. I’m just another flawed character of the bible that God decided to use. So I wanted to do what God wanted me to do.” “Besides,” he adds, “The Bible says that Nebuchadnezzar didn’t listen to God, and God turned him into a cow. I don’t want to be a cow, because then I’d have to eat grass, and here at Cordillera, we need all the grass for the deer.”

MAKING YOUR PROPERTY SELECTION EASY By Charlie Hill

Have you ever been to a restaurant and couldn’t understand the menu enough to place the order? You can probably recall an experience of trying to buy a new car but the overwhelming number of options for each model made your head spin? We’ve all been there at some point and you just want someone to simplify the decision and help you find what you want. Buying real estate can be similar if you’re not thoroughly informed and assisted by the experts in your product. Because of the massive size of Cordillera Ranch (8,700 acres) and varied neighborhoods within the community, it’s important to have a clear understanding of what your options are and help prioritize them for your real estate agent. This Developer’s Corner article will provide you an over-


view of some of the different options and areas in Cordillera Ranch and you can use this check list to help make your selection process as smooth as possible. The first question to ask is do you want to build your own custom home or buy an existing home? With over 650 homes built over the past 17 years and many more under construction, there’s a wide variety of homes generally ranging from $500k up to $3MM+. There is also a wide variety of lots with different attributes. We often tell people coming to Cordillera Ranch for the first time to not think of this place as one subdivision or one community. It’s a master planned community with many different, unique neighborhoods – some of which are gated and distinctly defined, while other neighborhoods may

be defined by the general area of the community or the looped street (such as Greystone Circle, Riverwood or Park Ridge). Whether you’re considering a lot or existing home, the following list of questions to consider may help you narrow down your priorities in selecting the property that fits you best: 3 Let’s start with the obvious: What size property do you want to purchase? (lots range from ¼ acre to 10+ acres and everything in between). It’s also important to consider how much usable land individual lots have when comparing multiple lots. In some cases a 1-acre lot may feel larger than a 2-acre lot if the 1-acre lot has more flat, usable land. 3 Decide whether you want to be on central water and central wastewa-

ter systems (as opposed to well and septic systems). • Central water system source is Canyon Lake water provided by GBRA; this is the same as city water and, generally, is a more reliable long-term source than individual groundwater wells; • Central wastewater system allows for less maintenance hassle because you don’t have to maintain your own septic system; • It’s also worth noting when comparing a lot that would require a well and septic to a lot that’s on central water and wastewater systems that there will be an incremental cost of approximately $20k-$25k (on top of the lot price) for the well and septic installation costs when you build (this is over and above the installation cost for water/wastewater meter and grinder pump fees for the house on central systems). So a $150k lot on well and septic would ultimately cost the same to purchase as a $170-$175k lot on central water and wastewater. 3 How important is proximity to the Clubhouse and Nicklaus Signature Golf Course? 3 lock-and-leave convenience a Is priority? If you’re interested in smaller lots where the sub-association takes care of all of the exterior landscaping and maintenance then consider the Di Lusso Villas. 3 Rank the importance of certain property attributes such as large mature oaks, long views, orientation of the lot (i.e. do you prefer facing north, south, east or west), privacy and topography (flat versus gentle slope). 3 What location within the community is most important to you? There are 3 main entries / exits to the community, one on Highway 46 (the main gate), one on FM 3351 (the east gate) and one on Kreutzberg Road (the west gate). Depending on where you work or your kids go to school, you may prefer to be closer to one of these gates than the others. 3 Provide a budget range to your agent. With the wide array of options to choose from it’s important to give your agent some budget range to help make your buying process efficient and save you time. These are just a few of the factors to consider to get your process started. Hopefully, this checklist of questions will help you categorize your thoughts and make the process of choosing your real estate in Cordillera Ranch easy and

The campaign was not about me, it was about the student body and the University. Our message was if we held student’s vision and values then our campaign was a way for them to promote good at A&M. My goal as Student Body President is to fulfill the SGA mission… “to enrich the quality of student life.” Or to better the already great Aggie Experience by keeping the Spirit, guarding Tradition and improving our campus. Government Association, and impact individuals on a personal basis. The part of A&Ms purpose is to develop leaders of character, and this is also my personal mission. I want to preserve and promote the Spirit, Tradition, and Core Values that make A&M great. I ran on a way of working together by representing students, having a good relationship in SGA, and having rapport with the administration. We want work on big and small issues. An example of a big issue would be working to improve the admissions process. A small change would be getting more TV channels other than only MTV in the Memorial Student Center. Texas A&M has a great history and future from being the first public institution of higher education in Texas to now being one of the biggest in the country. This is an important time in the history of A&M marked by change

and growth. Having served as Vice President last year I hope to bring experience and consistency through the change. HOW DO YOU FEEL BISD PREPARED YOU FOR A&M? I love this country, state and am proud to be from Boerne, TX. Similar to the United States, and Texas, Boerne is exceptionally blessed by God. There are few places with the quality of people, living, and landscape as Boerne. My family and I were some of the first to live in Cordillera Ranch. It is a fantastic community and I can’t imagine a better place to grow up. “Everyone to whom much was given, of him much will be required…” I have been given the greatest of family, friends, community, school, and church. I am tremendously thankful to many who have had a great effect on my life. I went to Bracken


Christian School until my junior year when I moved to Champion H.S. My family has attended First Baptist Church Boerne for nearly my entire life. Without these institutions and the individuals a part of them I would be an entirely different man. I hope to even give partial justice to the greatness of our community. I am humbled by the thought of those who have invested in me and am challenged to live to serve others. TELL US ABOUT YOUR GOALS AFTER COLLEGE. When asked about what I want to do after graduation I always respond, “I don’t know, I’m trying to create options and not make decisions.” This is a convenient canned answer and will only work so long. I plan on being an entrepreneur, going into Christian ministry, or serving in the military. The past two summers I have worked for Southwestern Advantage, a Nashville based company founded in 1855. It is one of the oldest internships in America that started after the Civil War and put men to work selling Bibles door to door. Today we share a learning system with families. I am in Oxford, MS knocking on doors working 80+ hours a week. It’s a great and challenging opportunity to grow personally and impact a county. Right now I’m focused on doing everything with excellence and passion then relying on my faith in God for the future.

The Clubs of Cordillera Ranch recently partnered with Clubessential to create the new ClubsofCordilleraRanch.com, which invites web visitors and members to experience the wide array of amenities The Clubs of Cordillera Ranch has to offer. Clubessential worked closely with the Cordillera Ranch team to discuss the brand image the new website should convey, map out the desired outcomes, and lay out a game plan for bringing all of the ideas to life. The result was a complete overhaul of the previous website and an elevated web presence which improves member and guest engagement.

A few of the primary reasons the Club decided to design a new website was to better engage our members in a mobile platform, give our members access to real time statements and to use best management practices when communicating to our membership on programs and events at the Club. Engaged members are the key to success in the private club industry. Members that actively participate in life at their club generate greater use of the club and they become a club’s most effective source of new members when they encourage their friends to join. Clubessential also offers many levels of interactive technology and services which will give our staff and members room to grow in the future. “We struggle with reservations. But now that we have an online reservations system in place, members are no longer forced to call to join an event — they can do so right from the palm of their hands using their mobile devices. We’ve seen an increase in the number of reservations,” said Manny Ortiz, Food & Beverage Director. Additionally, the new online tools are helping the Accounting Department at The Clubs of Cordillera Ranch. The communication feature allows our Accounting Department to schedule emails which are automatically sent to members with their statements and allows online payments, which saves our Accounting Department time and enables them to work more efficiently. As with any change in technology, there have been a few bumps in the road. Overall, our members have responded well and are utilizing the new website. One feature that requires action from the member is the Directory. Members must login to the website to update their profile and choose whether they are listed on the Club Membership Directory. We encourage all members and prospective members to login to the new ClubsofCordilleraRanch.com to experience all that The Clubs of Cordillera Ranch has to offer.

The Cordillera Ranch home of Richard & Kristin Martin started with a dream of

This home would be an escape from their busy Houston lives, a place for family and kids to gather and recreate…and in Richard’s case, yet another opportunity to play golf at one of the premier courses in the country. The immediate challenge for the project was that the long vistas lie to the north, on a north facing lot - thereby mandating that the pool be in the front yard. There are many things that can inspire a chef’s creativity, but for me, none can compare to the view from the Cordillera Clubhouse. Rolling hills, stunning sun sets, and celestial star-filled skies are just some of the ingredients that impact what gets served at the Cordillera Clubhouse. Texas quail, venison, beef, and fish all get prepared with the desire to be delicious, creative, and “simple”. Along with the desire to always create tantalizing meals for members to enjoy, I also love to “eat” inspiration. There are some personal jewels that I like to visit to enjoy great company, surroundings, and food. A great place to have some fun and food is Tejas Rodeo. When I say rodeo, I’m not joking. It’s a rodeo. On Saturday nights you can enjoy bull riding, live music, and some tasty bites. In their saloon,

Chef Tyler Horstman grills up a wide selection of steaks that are accompanied with savory homestyle sides. The menu at Tejas Rodeo can satisfy a true “cowboy’s” appetite with a grilled Akaushi Ribeye and some green chili mac & cheese. If you are planning a trip to Austin, you have to stop by Franklin BBQ. Be warned, get there early and take some folding chairs. This is not your typical BBQ spot. A line forms before the doors open and it closes as soon as they sell out, and they always sell out. It is very casual and you can count on meeting someone from out of state while you wait in line. Beverages are sold during the wait to keep you cool and hydrated. But when you get your brisket and ribs... Wow! It truly is worth the laid back wait, and surely backs up the reputation of being one of the nation’s best.

Sunday, my day. I love to enjoy food on that day; it just tastes better for some reason. When writing menus, I always think about what I like to enjoy on Sundays. A nice drive through the small shops in Gruene, Texas always leads to Cooper’s. It is another BBQ shop, but there is no wait involved. Delicious sausage, spiced beans, and crisp tea really get me going. The berry cobbler warms me up for a good nap. The casual setting makes you want to eat in waves. Talk, smile, eat. Talk, smile, eat. That is how it goes with the family. As you can tell, I really love food. It is my passion. I dream of food, not just eating is, but creating it. There is a lot that goes into writing and executing a menu, but what a way to start… Just looking out at the view of the Cordillera Ranch Clubhouse.

The key to great chicken is the right ingredients and a little planning...and a little marinating! Basic 2 guidelines: 1: Marinate in fridge at least 1 hour but do not marinate for over 24 hours, if you go over that just freeze in Freezer safe baggies. 2: Thaw to just above room temperature, discard marinade (never reuse), and pat with paper towel just before grilling- the flavor is already inside!

Basic 2-2 Marinade Base: Equal parts oil and acid + flavor, then stash in fridge before you head out the door, and your chicken will be filling with flavor and juiciness while you work! 2 Tbsp Olive Oil-an oil 2 Tbsp white wine vinegar- an acid 2 flavors: minced garlic from the jar salt and pepper and then just add any other flavor you want or not...this is where you can create unlimited marinades.

For example: Italian: Rosemary Lemon - 2Tbsp fresh Rosemary and lemon juice, or Italian Spice blend Mexican: Cilantro Lime-fresh chopped cilantro and lime juice, or fresh jalepeno and green chiles, or Chipotle or Taco Seasoning Buffalo: add Buffalo Chicken sauce BBQ: add your favorite BBQ sauce You get the idea! Now that you have the basic base, you can go creative crazy with the flavor.

Tip: Marinate and cook the whole bag of chicken breasts in baggies at once. Then you can freeze some or chop leftovers and put in pasta salads or on pizza for lunches or another dinner or do BOTH!
