MASTER THE REVERSE SEAR

SEASON

Set the prime rib on a rack in a rimmed baking pan, and cook for 20-25 minutes per pound. Remember: Time is only a guideline! For accuracy, use a fast-read thermometer to determine doneness.

Pre-heat the oven to 275°F. Generously season prime rib with SRF Rosemary Roast Seasoning, your favorite rub, or kosher salt and fresh ground pepper.

ROAST Remove the prime rib from the oven when it reaches your preferred degree of doneness (use the temperature chart above as a guide).

Place the roast back in the oven, and rotate it every 90 seconds until all sides have been exposed to the high heat and your prime rib is a beautiful golden brown.

REST Loosely tent the prime rib with foil, and allow the roast to rest for at least 30 minutes. The roast will continue to cook, and the internal temp will rise about 10 degrees. With 10 minutes remaining, turn your oven to broil.

Bennie Kendrick found an unexpected passion after tragedy. Bennie Kendrick grew up barbecuing over hardwood coals in his backyard with his family. But when his brother passed away seven years ago, the California native found himself mired in a severe depression. He was just going through the motions until friends invited him over for a life-changing dinner. They cooked the entire meal on a Traeger Grill, and as Bennie watched, “the light bulb went on.” He bought his first Traeger, began barbecuing as therapy, and posted his results on Instagram — building to over 200,000 followers, including big-name barbecuers and celebrities. He’s now a full-time brand ambassador for Traeger, Messermeister knives, and (of course) Snake River Farms.

“I’m just being me!” he says. “I’m still doing this as medication for depression. The companies I represent are companies I spend money on myself because I want to support the people I believe in.” Bennie is especially partial to our Black Grade Beef Short Ribs. “They’re easily the best bite of barbecue I’ve ever had in my life,” he says. During the holidays, though, you can often find one of our Kurobuta hams on his table. “I do an apricot glaze, but I get apricot preserves so it stays a little bit chunky,” he says. When he’s not on the road, you can still find Bennie grilling in his backyard in California’s Central Valley. “Some of the companies I work with, some of the people I meet … it’s crazy the sponsors I have from cooking in my backyard,” he says.

The Fall Feast took place in a naturally beautiful spot next to the Boise River. Clear skies, temps in the mid 70s, and lots of delicious food catered by local restaurant Petite 4 set the mood perfectly.

YOU CAN’T RUSH PERFECTION Our dry-aged steaks are a blend of art and science. Dry-aged steaks are the pinnacle of beef eating, a rarity sought after by chefs and craved by connoisseurs. So what goes into crafting these prized steaks? The answer is a complex blend of temperature, ventilation, light, and time — lots and lots of time.

We work exclusively with Prime Food Distributor in Port Washington, New York, to create each one of our select steaks. Prime starts with large slabs of beef from our Northwest ranches and then stores them in a climate-controlled room that allows just the right amount of airflow as the steaks age. As time marches on and the beef gently mellows, our partners make tiny adjustments that add up to the rich, deep flavor dry-aged steak lovers hunger for. Once the Prime team deems the beef ready, they cut each steak and ship it directly from New York to your table. It’s the ultimate gift for the true aficionado on your list.

We ski during the holidays, so we throw a prime rib in the oven and let it do its thing. I don’t think there’s anything better than coming home to the smell of prime rib in the oven. We typically order the SRF Black Grade Boneless Prime Rib Roast.

New Year’s Eve last year I ordered a SRF Gold Grade Whole Tenderloin Roast. We cut the tenderloin into individual steaks, sealed four inside a gallon Ziploc bag, and sous vide them. Then we seared them on cast iron and seasoned them with salt and pepper. It was the best Snake River Farms steak I’ve had so far!
