S

pring season is generally noted in nature as a time for renewal. Many animals birth their young, and fauna springs forth from the warmed earth. Spring is a time of growth and a start for something new.

It was eight years and nine months ago when I created, founded and published Healthy Beginnings Magazine and www.HBmag.com to serve northern Nevada and the Lake Tahoe Region communities. I am very grateful that Healthy Beginnings Magazine’s content was well received by both readers and advertisers alike. It played an incredible roll in educating the public on a variety of alternative, integrative and natural health care providers and their services. It was truly a conduit for the alternative, integrative and natural health care providers to reach this curious health conscious audience. It has been a wonderful journey for me. I have met many gifted and talented healers and HB readers who have attributed personal life changing events to HB’s educational articles and the advertisers who provide the services. Sometimes, good things must come to a close — or to a new beginning. It gives me great pleasure to announce that Sierra Nevada Media Group will now take over the reins at Healthy Beginnings Magazine. I chose this group because they care about the content of the magazine and website and because they are extremely community focused. It is also important to note that the new publisher Lynn Virgilio has the experience and professionalism to carry on the Healthy Beginnings tradition.

EVENTS AT NORTHSTAR ripperoo's rail jam March 1 - March 28, 2015 Time: 4 p.m. - 6 p.m. Northstar’s Ski and Ride School will host Ripperoo’s Rail Jam Fridays and Saturdays throughout the season from 4 - 6 p.m. on the Overlook. The introductory park clinic is free to kids on skis or snowboards and includes instruction from Northstar’s Ski and Ride School Coaches. Kids 12 and under will learn the fundamentals of how to tackle their first rail slide and receive tips on how to ride other terrain park features. Kid’s will also learn general terrain park etiquette and safety. Guests must bring their own equipment. All participants must have parents sign a waiver and also be accompanied by a parent at all times. The rail jam is subject to weather and conditions. While kid’s participate in the rail jam parents can enjoy specials at our Overlook Bar from 4 – 6 p.m. $1 off signature cocktails, $1 off S’mores Kits and $3 off when you purchase both together.

twilight snowshoe tours March 7, 2015 Time: Varies Take an evening to slow down and enjoy the peaceful setting of the Sierra Nevada on our guided evening snowshoe tours. The 2 to 2.5 hour guided tour will begin at the Cross Country, Telemark and Snowshoe Center at 5pm. The group will depart on a meandering journey through the pine tree lined forest working your way to the Village at Northstar. During the adventure, you’ll enjoy time around a fire pit and indulge in s’mores and hot chocolate. Dogs on leashes are welcome to join in the fun! Rates are $52 per adult and $36 per child ages 10 through 12. We have limited the ages of children to 10 and above to keep the group moving at a steady pace. If you have little ones, please look into our Family Afternoon Snowshoe Tours which are geared to the younger ages. Reservations can be made through 1-800-GO-NORTH, the Northstar Cross Country Center, visiting the Northstar Season Pass & Tickets Office, or online. Reservations are highly recommended since this event sells out on a regular basis. Tours will take place snow or shine and all participants must wear warm, waterproof boots. You are welcome to bring your own snowshoes, or they are available to rent for $20 per pair.

CANCER-ASSOCIATEDfatigue WHAT CAN BE DONE?

C

ancer-associated fatigue is one of the most common symptoms in all forms and stages of cancer, yet scant attention is usually given to patients who have symptomatic complaints of fatigue. Cancerassociated fatigue is also associated with cellular oxidative stress and during cancer therapy; excess drug-induced oxidative stress can limit therapeutic effectiveness and cause a number of “side effects”, including fatigue, nausea, vomiting, diarrhea and even more adverse effects. Most patients get told by their oncologist “stop taking all your supplements”. Recent research indicates that supplementation with some specific nutrients, lipids (fats), and enzymatic cofactors can not only help the therapies work better but significantly cut down on these “side effects”. Cancer-associated fatigue is not well understood, but it is thought to be a combination of the effects of the cancer itself plus the effects of the cancer treatments. Up until recently, cancer-associated fatigue was rarely treated and thought to be an unavoidable symptom. This is no longer true. Fatigue can vary in degree from mild to severe during cancer therapy, and it is often a significant reason why patients discontinue therapy.

Oral supplements containing phospholipids, phosphoglycolipids, cardiolipids, and other membrane lipids along with anti-oxidants, vitamins, minerals and other supplements have been used successfully to improve and even restore mitochondrial function and significantly decrease fatigue in both cancer and chronic fatigue/fibromyalgia syndrome patients. In the past, major fatigue has been an accepted part of dealing with cancer, other chronic diseases and their treatment. Patients no longer have to accept this as a given. They should seek out physicians who are knowledgeable enough to prevent it from happening.

blindness The leading cause of blindness in the world is xerophthalmia, vitamin A deficiency that causes dry eyes with subsequent ulceration, infection and blindness. I was on the Board of Directors of the Threshold Foundation in the 1970s, which helicoptered in vitamin A to remote villages of Nepal. One dose of 600,000 iu of vitamin A was administered to the vitamin A deficient children, preserving their eyesight for life5.

ear infections in children Studies from Asia have confirmed that otitis media, common ear infections, can be prevented and treated with vitamin A. Lack of vitamin A causes squamous metaplasia, a condition where tall, columnar cells with cilia (hairs on them) that line our ears, lungs and sinuses are converted to flat cells that grow on our skin primarily and don’t give the same immune protection. If a child is getting ear infections, it is a good idea to avoid cow milk whose protein (casein) is about five times longer than human breast milk protein. It causes inflammation in the bowel, which can inflame the Eustachian tubes causing glue ear. This phenomenon has been recognized in ear, nose and throat journals since the 1930s.

measles There are scores of diseases and syndromes that can be treated with vitamin A (over 70)1. None have such a depth of research supporting its use than does measles2. This virus, rubeola, is most frequently seen in third world countries where there are major nutritional deficiencies. Numerous studies have demonstrated that treatment with large doses of vitamin A significantly reduced the morbidity (serious complications) and mortality (death) up to 83 percent in patients with measles3. Measles lowers vitamin A levels by increasing utilization for the vitamin and by interfering with its transport from the liver1.

Ellison first documented the protective effect of vitamin A on measles mortality in 19324. The effect of vitamin A supplementation was most pronounced in children under two years old. The World Health Organization’s suggested dose for children with measles was 200,000 iu two days in a row, and 100,000 iu two days in a row for infants under two years5. Early research was done with cod liver oil sources of vitamin A, but more recent research suggests water soluble vitamin A achieves higher tissue levels. Vitamin A reduced hospitalization an average of 4.7 days in one study at a cost of two cents in 1998 making it highly cost effective. Until 1993, there were no reports of acute vitamin A toxicity in children who took the WHO recommended dose, as reported by the Committee on Infectious Diseases of the American Academy of Pediatrics6. Headaches, loss of appetite, vomiting and bulging fontanelles (in infants) are some of the known adverse effects occasionally occurring with the administration of high doses of vitamin A. However, these symptoms are minor and transitory, with no known long-term effects and requiring no special treatment7. Most infectious diseases, such as bronchitis, pneumonia, sinus infections, sore throat, acne and chronic skin diseases, bowel diseases and many more, can be helped by our friend vitamin A.

H

ormones are the most powerful molecules in biology. They carry messages from their organ of origin to specific cells, impacting every aspect of our being, from cell proliferation, to protein synthesis to metabolic rate. They are designed to keep the body’s internal milieu in check and while carrying out the instructions encoded in their DNA. Hormones are what cause a young lady's shape to develop, mood to lighten, voice to soften, hair to shine, react positively or negatively to stress and engage in courtship, marital relations and childbirth. As she matures, she loses her ability to produce hormones resulting in major and minor disruptions in body and mind. Thinking clouds, breasts droop, and depending on the hormones involved, anxiety, irritability and night sweats are common. A minor example is thinning of the outer third of the eyebrow as a sign of thyroid deficiency. Thinning of the mid eyebrow reflects a drop in growth hormone and thinning of the inner third of the eyebrow reveals a lack of testosterone in females as well as males. 1

Fatigue, low energy, loss of motivation, weight gain, decreased sex drive, depressed mood, anxiety or irritability, loss of memory or loss of concentration are symptoms of hormonal decline. Fortunately, these symptoms can be reversed and restored to a reasonable degree of vitality by replacing the diminished hormones with identical ones mother nature provides. The benefits of bio-identical hormone replacement therapy include improvements in energy, fat loss, sex drive, memory and concentration, sleep, diminished night sweats, hot flashes, vaginal dryness, itching, and painful intercourse. Wrinkles smooth, bones are protected and the risk of heart disease is reduced. What are, and why the emphasis on "bio-identical hormones?" All hormone replacements, by definition, are "synthetic." The term "bio-identical" hormone refers to those substances that are created from wild Mexican yams and soy and are chemical duplicates of the hormones we produce naturally. that created blood clots, increased (rather than decrease cholesterol levels as seen with bio-identicals), doubling the risk of strokes and heart disease.2 The elephant in the room, breast cancer increased by 20% in those taking synthetic estrogens.3 Adding Provera, synthetic progesterone, as is done to balance the hormonal symphony, proved even more of a disaster. In a study of 55,000 women over fourteen years, the Women's Health Initiative revealed a forty percent increase in breast cancer when using synthetic estrogen and progesterone.4 In contrast, taking bio-identical estrogen and bio identical progesterone resulted in a ten percent decrease in breast cancer from those taking no hormones, a thirty percent reduction in those using synthetic estrogen only and a whopping fifty percent reduction in those using combination synthetic therapy. 5 Although estrogen and progesterone rightfully draw the lion's share of attention, balancing all of the major hormones is the key to good health. In addition to the latter, we measure and replace, if indicated, testosterone to maintain muscle and bone strength, restore libido, provide a sense of well being and reduce “bad” cholesterol. Thyroid hormones maintain temperature, energy and appropriate levels of blood sugar. Low levels result in high cholesterol and heart disease. Cortisol, the stress hormone, is frequently abnormal in chronic fatigue states.

In this article we will present new data regarding RLS, its causes, and new non-drug treatment options. First lets — in a very simplistic manners — describe the mechanism within the brain. That’s right — the brain — that when interfered with — causes RLS. When your brain wants you to move a body part, your leg for example, it issues the command to move that body part. This command from the brain cortex to create movement in the leg traverses through a deep structure in the brain on its way to activate the muscles in the leg. This structure is called the basal ganglion. The command circuits are well mapped out circuits. In RLS this circuit breaks down in the basal ganglion, a structure which regulates movement and whose breakdown is involved in other movement syndromes such as Parkinson’s and Huntington’s disease. The basal ganglion is regulated by sensory (touch, temperature, pressure, joint motions, muscle stretch, pain) feedback impulses from all joints and muscles in the body. These feedback impulses must be present to stimulate the basal ganglion to work properly and prevent us, as human beings, from experiencing uncontrolled and non-self directed movement. he American Heart Association instructs that “typical” heart attack symptoms come on slowly, with only mild pain or discomfort. Often, because we are unsure as to what is taking place, we wait too long before seeking medical help.

The importance of understanding what signs could indicate the onset of a heart attack cannot be overemphasized:

Chest discomfort Most heart attacks begin with discomfort in the center of the chest and last more than a few minutes. The feeling of discomfort can leave and then return. One might experience the sensation of uncomfortable pressure, squeezing, fullness or pain. Discomfort in other areas of the upper body Symptoms can include pain or discomfort in one or both arms, the back, neck, jaw or stomach. Shortness of breath May occur with or without chest discomfort. Other signs May include breaking out in a cold sweat, nausea or light-headedness. Similar to men, the most common heart attack symptoms in women are chest pain or discomfort. But in women, symptoms are more likely to be atypical. Although most women experience chest pain or discomfort, there are many who do not. In a 2003 Circulation study of female heart attack patients, scientists found that during an attack, 43 percent of the 515 women studied had no “acute chest pain,” a “hallmark symptom in men.” The study noted some common female heart attack symptoms as: shortness of breath (57.9 percent), weakness (54.8 percent) and unusual fatigue (42.9

Even if you aren’t a vegetarian or vegan, your age could mean that your body isn’t absorbing enough B12. “People who are hitting age 50 should ask about their B12 status,” says Netty Levine, a registered dietitian and certified diabetes educator with Nutrition Counseling Services at CedarsSinai Medical Center in Los Angeles.

Being deficient in vitamin B12 could leave you fatigued and weak. You could develop cognitive changes, such as confusion or memory loss. The small, red and pink flowers bloom up from the famous round leaves, which grow in clusters of three and have long been prized as a symbol of good luck. This perennial plant is native to Europe, Western Asia and northwest Africa. Today, it grows all over the world. In our modern western times, clover is sometimes considered a common weed that needs to be sprayed with poison pesticides in order to maintain a lawn of green. It is truly a shame and a waste when this occurs, for not only is the plant attractive, it serves many useful purposes in both garden and medicine chest, and is delicious besides.

This recipe is a healthier way to eat something we all love...noodles! It combines soba noodles, kale, and mushrooms with an Asian-inspired dressing. It has nutrients galore, it’s gluten free, and it’s outrageously delicious and simple to make. Note: Soba noodles are made from buckwheat, which is not related to wheat at all. So they’re gluten free! Buckwheat is high in protein, fiber and contains all of the essential amino acids your body needs. Watch your labels, though. Some brands are made with a combination of buckwheat AND wheat flour. Look for 100% Buckwheat on the label to get the most nutrients and to keep the recipe gluten free. Eat them cold, warm, in a salad or in a broth. Versatile, yummy and guilt-free!

Cauliflower, kale, broccoli or beets somehow lose their attraction at the thought of eating them uncooked. But actually, when you know how to soften them and use them in a creative way, they will turn into your favorites. It’s all in the mind… and the technique.

TOOLS Mandolin or wide potato peeler Sharp chef’s knife 2 tablespoons INGREDIENTS For Carpaccio

• 1 large red beet • ¼ c apple cider vinegar • 1 to 2 TBSP agave (start with 1 and add

• Small dash of sea salt or Himalayan salt For guacamole

• 1 avocado • Dash of cayenne or 1 red jalapeño • 2 TBSP finely diced red onion • ¼ tsp sea salt or Himalayan salt

INSTRUCTIONS

(PREPARE AHEAD THE EVENING BEFORE)

• Whisk the apple cider vinegar, agave and salt together in a small bowl • Cut the beet in half • Slice the beet up into even, very thin and large slices (take the best ones) • Place them on a plate • Pour the marinade on top. See to it that all slices are being drenched • Cover up with plastic wrap • Marinade for at least one hour (the longer, the better: overnight works well) • Before serving, mash the avocado with a fork (or blend) • Stir in the other guacamole ingredients

• Place 3 nice slices (or as many as you wish) on a large plate • Take 2 spoons, make a “quenelle” of avocado and place in the middle of a beet slice • Pour a little bit of olive oil on top • Top with some sprouts or fresh herbs TIPS • This Carpaccio makes a wonderful starter • The slices stay well in the fridge for 4 days • Leftovers can be used in salads or as a snack, filled with chopped almonds
