R | WELCOME LETTER

E KOMO MAI – WELCOME BACK! Ke aloha ‘āina iā kākou and welcome to Royal Hawaiian Center! The Hawaiian New Year occurs during autumn of the Gregorian calendar. With the customary seasonal greeting, “Lonoikamakahiki,” I wish you all a very happy New Year and bid you further welcome to Helumoa, the historic land upon which Royal Hawaiian Center proudly stands. From award-winning, international cuisine to tasty fare on the quick, from haute couture to island casual, from hula to lei-making, Royal Hawaiian Center is the proverbial A to Z of food, fashion and culture in Waikīkī. Like businesses the world over, we’ve reopened with a new understanding and a new appreciation. Our tenants, too, are excited to flip the store sign to open, a simple action that has taken on new meaning. Many of our stores are locally owned and operated. Our ‘ohana (family) has grown with the addition of Saint Laurent, Tiffany & Co., Hermès and Harbors Vintage. Kith also recently opened a Hawai‘i flagship. Raising Cane’s is cookin’ up all things chicken fingers in the Pā‘ina Lānai Food Court. And Junbi is serving up serious matcha power in delightful drinks. With the last year in our rearview mirror, exciting things are ahead: new stores, new eateries and new events! My heart soars to welcome you back to the gathering place of Waikīkī. He mai!

E KANIKAPILA KAKOU!

3 4 | R OYA L H AWA I I A N C EN T ER

LET’S MAKE MUSIC TOGETHER! WORDS | AARON J. SALĀ PHOTOS | ALANA YATES

KANIKAPILA: A HAWAIIAN “JAM SESSION” The word alone evokes mental snapshots of extended local families gathered in a backyard, in a living room or in a garage facing the street, to share the camaraderie of making music together — and with anyone who passes by. Some will have an instrument — an ‘ukulele, a guitar, an upright bass. Maybe, if you’re lucky, a piano will be in the mix too. Some will make an instrument — spoons and washboards (separately or together) add great percussion accents to the musical extravaganza. But it’s not only music. We can’t forget the importance of hula. At kanikapila, children dance their debuts to the favorite songs “Puamana” and “Ka Uluwehi o ke Kai,” before proud parents and grandparents. Aunty shares her “Kimo Hula” for all to see. And, sometimes, Uncle gets a little kolohe (mischievous) and impromptus a “Mauna Loa” for us too. He wasn’t trained to dance hula, as Aunty was, but he knows what the words mean — and the meaning behind the words — and gestures knowingly with a little twinkle in his eye. A buffet of too-much food is set up on folding tables just off to the side, each dish a culinary delight celebrating our local diversity. You’ll find homemade laulau, Aunty’s famous chicken long rice (she makes it with extra ginger), chicken katsu from the plate-lunch place up the street, all manner of poke from the fish market complemented by a couple platters of sushi (both Japanese and Korean styles), Uncle’s WORDS | famous PUAKE‘ALA MANNsalad (everyone knows his secret is a hint of garlic pressed in with the mayonnaise, but mac(aroni) PHOTOS | CENTER ARCHIVES he thinks no one does — shh!). The list goes on, and so does the buffet. Opposite Page. The family of the late Genoa Keawe carries on her musical legacy. IF YOU DON’T SING, DON’T WORRY! SIT NEXT TO GRANDPA! HE DOESN’T SING EITHER, BUT NO ONE KNOWS THE STORIES OF THE MELE LIKE HE DOES.

Scan this QR code to watch a ho‘okani pila session from Helumoa Hale. Record and post your own ho‘okani pila session. Use #RHChookanipila to share it. Let’s Make Music Together!

PHOTO: Mea pila (instruments): ‘ukulele, ipu heke, kīkā, waiolina kū nui, kīkā kila

After a blessing offered by someone in the family, and after the children have eaten — that’s the Hawaiian way, after all — anyone can partake as they wish. Come one, come all! The imperative, and more grammatically correct, “e ho‘okani pila,” directs us to sound our stringed instruments. The engagement is simple: Join in. Take a seat, listen to the songs, sing one yourself maybe, bask in the joy of the moment. There is one rule, however: come as you are, but “e waiho ‘oe i ka hilahila ma ka hale” (leave your own shyness at home). Even if you don’t hula, get up when Aunty wants to teach you something in the moment. If you don’t sing, don’t worry! Sit next to Grandpa! He doesn’t sing either, but no one knows the stories of the mele the way he does. If you don’t play the guitar, go get one of the extra ones in the living room, and sit next to Uncle. If you pay attention to where he puts his fingers, you’ll find your fingers going to the same places soon enough. During kanikapila, we are at once audience member and performer, participating in the moment for the sheer purpose of being together with family and friends. Impromptu. Extemporaneous. We love this. We are, after all, a musical people. Before Calvinist missionaries first arrived on Hawaiian shores in 1820, Native Hawaiian music-making was guided by the sounds of our natural world. We chanted in emulation of the winds and the rains, of the waves crashing against the shore, of the birds singing in the forests. Our introduction to singing occurred when we first heard the crews of whaling ships performing their sea shanties. Traversing Pacific waters, these ships frequented the islands after the 1778 arrival of Captain Cook to Hawai‘i. It was Hiram Bingham, however, head of that first delegation of Calvinist missionaries, who ensured that Hawaiians not only learned Christian hymns for church services, but also gained a robust

36 | R OYA L H AWA I I A N C EN T ER

knowledge of Western music literacy. We even had our own version of solfege — the Western “do, re, mi,” was our “pā, kō, lī.” Learning the Western scale opened a whole new world of music-making for Hawaiians, and we were soon composing songs on all manner of subjects. As sugar and then pineapple plantations sought to build the labor force, immigrants from all over the world — including China, Japan, Portugal, Korea and the Philippines — made their sojourns to Hawai‘i. At the end of long work days, plantation laborers shared company with each other and with the Hawaiians upon whose land they now founded their own legacies. They enjoined their languages to create Hawai‘i’s Creole English — our current-day “pidgin.” They brought together their unique foods, and

Hawai‘i is now home to extraordinary cuisine. They brought together their families, and those individual legacies have contributed to the unified soul of contemporary Hawai‘i. Kanikapila are about sharing music, food and joy, in the hope of building community with family, friends and strangers. They represent the epitome of the Hawaiian heart. We bring our individual selves to the experience and then, more importantly, we find ourselves in each other.

E kanikapila kākou! Let us make wonderful music together!

R | STYLE We sat down with mega influencer, isle resident, BRETMAN “DA BADDEST” ROCK, to talk all things fashion, style and where you’ll find him at Royal Hawaiian Center.

IS 1Q:WHO YOUR

STYLE ICON? A: In terms of my current style, I guess the answer for me is more of an iconic style era: I’m obsessed with the ’80s and ’90s style era. But style-icon wise, I love everything that Freddie Mercury wore and I love everything he stands for. Also, Jackie Chan in the ’90s was such a vibe. So, honestly, my style is really just anything that piques my interests — with an emphasis on the ’80s and ’90s.

Q: When you're on a visit to the Royal Hawaiian Center (RHC) what are some of your go-to stops? A: Well, I always make sure I visit Fendi and Hermes all the time, because I just love them and I love the workers there — and, of course, the food court. I feel like it’s so underrated. … I’m not saying go there and make it busy, because I don’t want to wait in line … but I just love the food court, because it’s kind of hidden, and it’s my usual stomping ground. And Stüssy — I really like Stüssy.

Q: HOW WOULD YOU DESCRIBE YOUR STYLE?

6

3

A: I don’t know how to describe my style, to be honest with you. My style just depends on my mood; my style depends on what I’m wearing that day. I would say my style is very much "screw gender roles." I wear whatever I want, whether it’s from the men’s or women’s section. But other than that, I don’t think I have a specific style, because I feel like I can Bretman Rock anything.

4

5

Q: What are your impressions of the fashion scene here in Hawai‘i, when you compare it to other places that you’ve been to, both nationally and internationally? A: I really think the fashion sense in Hawai‘i focuses on comfort coming before style — obviously we live in a tropical area, so I would say like it’s spring/summer clothing all through the entire year here at home. We love very laid-back, loose-fitting clothes, not too fashion trend-focused or layered, but rather just overall chill vibes. Q: Who is your favorite local artist, store/brand, celebrity? A: I’m not just saying this because he just finished my mural, but Jack Soren inspires me a lot. I’m someone who is really inspired by colors, and I love his artistry and I love his color choices. As an artist myself, I appreciate other’s color stories, for some reason, and I love Jack Soren. I love seeing his art all around the island, whether I’m at Foodland, Bloomingdale’s or anywhere.

Q: What do you want to be remembered for? A: I want to be remembered for a lot of things, but especially as someone who embodies what it’s like to love yourself. I just want to be remembered as someone who encourages people to be themselves and someone who is not afraid of anything or anybody.

7Q:WHY DID

YOU DECIDE TO WORK WITH ROYAL HAWAIIAN CENTER? A: First of all it, was a no-brainer. While my work normally is not local, when Royal Hawaiian Center asked me to be a part of their campaign, I didn’t even have to think about it. Like, yes, obviously I’ll do it. Later, when I sat down with the team, they were so eager to share the cultural history of Helumoa, the land on which Royal Hawaiian Center was built, and how the center is connected to Kamehameha Schools. So it’s very cool that local faces are being used for ads in magazines and on their walls and their posters; it’s so cool because representation is important and I think it’s important for local kids to note that and to see another local kid in those posters. I really think there is importance in having local faces represent such a local treasure on our island. The reason I love going to the Royal Hawaiian Center is because it’s just the ultimate vibe in there, and I feel like using local faces for your posters is so important, and I’m honored I got to be a part of it.

Order the Green Curry Beef at Noi Thai Cuisine and expect a show. Slices of rare flat-iron steak arrive sizzling in a hot stone pot on a carved wooden platter. Alongside is a pitcher of curry sauce studded with vegetables. It's poured over the beef, which continues to cook — a bit more, or until well-done, to the diner's choice.

Koi Ford, general manager, says the dish presents “Thai old-style taste,” with a boost. “We add more ingredients to make it more powerful.” The dish incorporates kaffir lime zest, palm sugar, beef from the Big Island of Hawai‘i, a special Thai green eggplant and lots of locally grown basil. Order it in a heat level from 2 (medium) to 5 ("Thai hot"). The combination of spicy, sweet, salty and savory components, Ford says, are distinctive to Noi Thai. Signature dishes like these speak to a restaurant’s personality, defining not just the menu but an entire point of view.

Island Tempura Sampler | Restaurant Suntory

“OUR MENU’S INGREDIENTS COME FROM ALL OVER THE WORLD.”—ASAMI SAKA , RESTAURANT SUNTORY 「私たちのメニューの食材は世界中から来ています」

— と語るレストラン燦鳥の坂 亜沙美さん

At Restaurant Suntory, the Island Tempura Sampler stands out for its merger of local ingredients with Japanese cooking techniques. The dish comprises ahi from island waters, marinated in Suntory’s soy sauce base before it is deep-fried. The process keeps the fish juicy and flavorful, Assistant Manager Asami Saka says. The sampler also includes locally farmed Kahuku shrimp, sweet potato and hearts of palm. Because so much of Suntory’s menu is more traditionally Japanese, the restaurant can’t always showcase local ingredients to this extent, Saka said. “Our menu’s ingredients come from all over the world.”

“Our wagyu burger really represents what Island Vintage Wine Bar is all about,” Wine Director Mark Cartland says. “We offer a casual, yet elegant, dining experience, without the usual winebar pretense. Our signature burger is really the same.” Each burger is topped with sauces inspired by local flavors, such as a wasabi aioli. It may be ordered with mushrooms or a slice of apple. It is, quite frankly, “craveable,” Cartland says.

A signature item may be as striking as the Hamachi Garlic Roll from Doraku Waikīkī — a bestseller with fresh hamachi on top, shrimp tempura and avocado in the middle, with garlic chips over all. It could be as small as the BBQ pork buns at Tim Ho Wan or as gigantic as the dry-aged 32-ounce Porterhouse for two, centerpiece of a classic USDA Prime meal with creamed spinach and mashed potatoes at Wolfgang’s Steakhouse. Or, in between, the oversized meatball of veal, pork and beef from Il Lupino Trattoria & Wine Bar, served with a zesty pomodoro sauce. Have it as an appetizer, entrée or side dish. And never discount the little guy. Those BBQ pork buns are consumed at the rate of up to 200 per day, says Michael Sohn, general manager at Tim Ho Wan, a Michelin-star restaurant based in Hong Kong. “Its exterior is crumbly and fluffy, while the inside is filled with barbecued pork and Tim Ho Wan’s special sauce, imparting a sweet-salty contrasting taste.”

PINEAPPLE SYMBOL OF HOSPITALITY Despite its prickly exterior, the pineapple has long denoted hospitality, probably because the exotic fruit was once so rare that only the most enterprising hosts could secure them. This aura of welcome befits a time when Hawai‘i is inviting old friends and new back to the islands. For a fruit-in-a-fruit dining experience, try the Pineapple Boat from Five Star Shrimp in the Waikīkī Food Hall Co. (above). Choose garlic, lemonbutter or spicy shrimp piled into a pineapple shell. It's easy to find a cocktail garnished with pineapple (above right) or really dive in with a drink infused with pineapple and jalapeño from TsuruTonTan. There's also the ultimate slushy, a Dole Whip Float at Kokoro Café. Bring the flavor home with Honolulu Cookie Co.'s pineapple-shaped treats, or in locally made hot sauce, butter or tea, found at House of Mana Up. 52 | R OYA L H AWA I I A N C EN T ER

KULU KULU CAKE / LEVEL 2 The honu, or sea turtle, is an endangered species — no standing too close, no touching and certainly no biting. The Honu Puff, however, you can pick up and look right in the eye, just before you, well, eat it. Kulu Kulu is known for light, elegant cakes decorated with a sense of beauty and whimsy combined. The Honu Puff (above) is a portable pastry for one, a cream-puff shell filled with matcha custard. Its cute cousin, the Bear Puff, is filled with chocolate custard. Look for other critter-themed pastries at Kulu Kulu, such the Honey Lemon Bee Cake, Lady Bug Cheesecake and a Green Tea Caterpillar Cake. KOKORO CAFÉ / LEVEL 2 Cool down with a waffle cone in the shape of a shaka, Hawai‘i's way of waving hello. The Shaka Boom is fillled with soft-serve ice cream, chocolate cream, red beans and haupia (coconut gelatin). Also at Kokoro: the Mochi-Pop, a chewy waffle customizable with various glazes and toppings. It's like an ice cream pop with chew.

DEAN & DELUCA / LEVEL 1 Bite-sized chimney-shaped tarts from Uber Factory are filled with either a Kona coffee-mocha mix or ube, a purple yam. Also pretty: a mango custard bowl garnished with a delicate flower.

EAT LIKE A LOCAL LOCO MOCO CRAZINESS

WHITE RICE, TOPPED WITH A BURGER, TOPPED WITH AN EGG, TOPPED WITH BROWN GRAVY. THAT'S A LOCO MOCO. When it comes to audacity, the Loco Moco is hard to beat. The born-in-Hawai‘i gut-buster originated as a casual breakfast dish that could well provide the protein and carb quotient for a full day. It has graduated to a dressed-up meal, served three unique ways at Royal Hawaiian Center restaurants:

The classic ground beef patty is replaced by braised beef slices in the Island Vintage Wine Bar version (above). The approach maintains the Local Moco's roots in fun and flavor, giving it a personalized twist that maintains the original intent of the dish. It's a perfect example of the wine bar's casual yet elegant approach.

At Il Lupino Trattoria & Wine Bar, the meaty base of the dish is the restaurant's signature meatball, made with beef, veal and pork, with a mushroom marsala gravy. WAIKIKI’S PREMIERE

Wolfgang's Steakhouse uses a half-pound of USDA Prime dry-aged beef made into a burger for its classy Loco Moco. On top are two sunny-side eggs and a rich mushroom gravy. A miniversion is available at happy hour.

‘OHANA (oh-hah-nah) Family – pg. 4 Often referring to the larger community, not just the immediate family, ‘ohana is an important value in Hawaiian culture, which emphasizes these close ties. MELE (meh-leh) A chant or song – pg. 12 The word also means “merry,” and you may know it from the Christmas song, “Mele Kalikimaka.” LEI (lay) A garland – pg. 30 It can be made of flowers, shells, leaves or countless other objects, although the best-known is a string of sweetly scented blossoms. Lei are often presented on special occasions, to offer congratulations or just as an expression of love. A flower lei may not last long, but that’s part of its magic — to commemorate a special moment in time.

KANIKAPILA (kah-nee-kah-pee-lah) A musical celebration – pg. 35 The root words are kani (sound or pitch) and pila (any stringed instrument). HILAHILA (hee-lah-hee-lah) Bashful – pg. 36 No one’s allowed to be shy at a kanikapila; all are encouraged to offer a song or a tune. PĀ, KŌ, LĪ (pah-koh-lee) Do, re, mi – pg. 36 When you sing you begin with these three syllables, as we learned in “The Sound of Music.” HONU (ho-nu) Sea turtle – pg. 54 The protected creatures are beloved in Hawaii. If you’re lucky enough to see one sunning or swimming, look, but don’t touch! ‘AHI (ah-hee) Tuna – pg. 56 ‘Ahi applies to the yellowfin and bigeye species of tuna, which can be enjoyed at many restaurants, in many preparations. NIU + LĀ‘Ī (nee-ooh; lah-ee) Coconut tree + ti plant – pg. 66 Both plants are essential in Hawaiian culture, serving multiple uses such as food, containers, medicine and even musical instruments. LAUNA (lah-oo-nah) To meet – pg. 80 As in, we hope to meet you again in this beautiful place.

One image stands out as Hawai‘i’s most iconic — the silhouette of Diamond Head crater, which is visible from many points in Waikīkī. It was named by 19thcentury mariners who mistook calcite crystals found in the crater for diamonds. Its traditional name is Lae‘ahi, or the more commonly known conjunction Lē‘ahi, which refers to the dorsal fin of an ‘ahi (tuna). A much more aptly descriptive name, don’t you think? As you explore Hawai‘i, we invite you to learn and use traditional place names. Royal Hawaiian Center’s moniker is Helumoa, or chicken scratch. The area is named for the supernatural rooster Ka‘auhelemoa, who appeared before O‘ahu’s ruling chief, Kākuhihewa, and furiously scratched the earth. Visit our website to learn more about our traditional name.
