French Fold Restaurateurs Tony Esnault and Yassmin Sarmadi, best known for their French bistro Church & State in downtown Los Angeles, launch chic Knife Pleat on the Penthouse level of South Coast Plaza.

Esnault was executive chef at Michelin-spangled chef Alain Ducasse's Essex House in New York and at Joachim Splichal's Patina in L.A. His new spot in Costa Mesa is in the space formerly occupied

by MarchĂŠ Moderne. The facade mixes onyx, brass and translucent glass; inside are an alabaster chandelier, soaring soffits and an expansive skylight above sculptural settees, and a white Calacatta marble bar. Elevated French fare fits right in with boutique neighbors such as Christian Louboutin and Louis Vuitton; pasta and risotto, and a wood-burning stove, expand the menu's horizons. p. 36

GOIN’ COASTAL California’s Highway 1, aka Pacific Coast Highway, is the address for a number of new dining destinations; these are the best.

Restaurateurs Piero Selvaggio (of recently closed landmark Valentino in Santa Monica) and Ron Salisbury (the Cannery in Newport Beach and El Cholo chain) partner at waterfront Italian steakhouse Louie’s by the Bay (p. 41). Picks: wild mushroom tortino with saffron fonduta, and osso buco with risotto Grana Padano. The team behind acclaimed A Restaurant, also on Coast Highway—Hollywood producer McG, restaurateur Jordan Otterbein and chef Jonathan Blackford—unveil CdM in Corona del Mar (p. 35). Consider Parker House rolls with whipped A5 tallow; morels and peas with Anson Mills polenta; and Hatch chile bucatini. Chef Kenny Seliger, who has impressed with his Trap Door Dining pop-ups, continues his innovative ways at Henry’s, fine-dining room at the dramatically expanded Waterfront Beach Resort in Huntington Beach (p. 38). Highlights of the opening menu include Mussels on the Rocks with bok choy puree and Mangalitsa pork chop with fresh wasabi root and black sea salt.

Elevated Vegan Enthusiasm for vegan cuisine has skyrocketed. Plant-based burgers, for instance, are taking their place on fast-food menus everywhere. More intriguing: exquisite new offerings at sophisticated venues such as bluff-top ocean-view Studio at the Montage Laguna Beach and gorgeous Sushi Roku at Fashion Island in Newport Beach. Studio chef de cuisine Benjamin Martinek takes diners through a plant's

life cycles in six courses— five vegan and one vegetarian using Garrotxa cheese that can be easily substituted— inspired in turn by seeds, sprouts, roots and shoots, flowers, fruits and back to seeds. “Sprouts,” for instance, presents tiny crudité with hen-of-the-woods mushroom espuma in Kalamata olive “top soil” with puffed grains.

Each dish uses flowers, vegetables and herbs from

the restaurant's adjacent garden (p. 40). Sushi Roku unveils a vegan omakase, a four-course meal inspired by the more usual raw-seafood chef's-choice feast. Highlights include an organic kale salad with king oyster mushrooms and crispy shiitakes; santen mori appetizer trio; four pieces of vegan nigiri and a vegan roll; and avocado vegan-chocolate mousse in a vegan phyllo cup (p. 42).

COUTURE BEYOND Guo Pei is China’s most renowned couturiere. For more than 20 years, she has dressed celebrities, royalty and political elite, breathing new life into ancient Chinese embroidery and painting traditions. Guo Pei: Couture Beyond, through July 14 at the Bowers Museum in Santa Ana, showcases more than 30 of her designs, masterpieces of fabric, shape and texture inspired by fairy tales, legends and even military history. Her stunning creations can take thousands of hours and up to two years to complete. 2015 marked a turning point for Guo Pei: Pop singer Rihanna wore one of her designs to the Met Gala in New York to inaugurate the museum’s China: Through the Looking Glass exhibition, which included Guo’s designs, and she had her first solo exhibition at the Musée des Arts Décoratifs in Paris. The following year, Guo made her Paris Haute Couture debut and was named one of Time magazine’s 100 Most Influential People. p. 52

The Orange County Museum of Art presents six exhibitions of works by Pacific Rim artists at OCMAExpand-Santa Ana, the museum's temporary space while its spectacular new home— designed by Pritzker Prize-winning architect Thom Mayne of Morphosis—is being built at nearby Segerstrom Center for the Arts.

Artists Diego Berruecos, York Chang, Victoria Fu and Matt Rich, Fritzia Irízar, UuDam Tran Nguyen and Hiromi Takizawa work in a wide range of media, including interactive installations, photography and

site-specific “interventions.” All touch on notions such as value, control, power, truth and reality in response to some of today’s most pressing global sociopolitical concerns. A seventh show at the venue features objects from the museum’s permanent collection, small-scale sculptures by artists central to the art history of Southern California, including Chris Burden, Vija Celmins, Judy Chicago and Ken Price. British lifestyle brand Ted Baker London has relaunched its South Coast Plaza presence in a new space whose updated design references the sunny Pacific coast as well as the classic British seaside. Brushed-brass accents mimic ocean waves. Faux ice cream cones are reminiscent of beach trip delights. The fitting rooms, each with its own color scheme, suggest cabanas. Finishing touches include oversized oyster shells and coral props. The boutique offers menswear, womenswear and accessories. Women's collections feature florals—imagine handpicked flowers with a dark side—and geometric prints. All three Laguna Beach art festivals are on a single stretch of Laguna Canyon Road; all offer activities and live-music events. The Festival of Arts is California's longest-running outdoor fine-art exhibition.

Laguna Art-A-Fair is also a juried show featuring a wide array of media. The quirkier Sawdust Art Festival is more craft-inspired.

The renowned Pageant of the Masters, outdoors at the Festival of Arts, features tableaux vivants (“living pictures”), re-creations by live models of works of art with live narration and orchestra. Next door to the festival is the Laguna Playhouse, which presents comedic and profound theatrical fare but is fairly quiet in the summer.

The finest dining near the festivals is adjacent to the Sawdust at the Hive. New Oliver's Osteria has distinguished itself as one of the county’s finest Italian restaurants.

Another Kind Cafe, also new, offers creative Vietnamese and “crossed-culture cuisine.” Kitchen in the Canyon is a favorite gathering spot for breakfast and brunch.

The finest drinking near the festivals is also at the Hive. The new tasting room of Santa Ynez Valley-based McClain Cellars offers excellent wines as well as olive oil, artisan popcorn and live guitar. Find nearly two dozen taps and styles of brew—plus sandwiches, salads and snacks—at Laguna Beach Beer Co.

ULINARY INTERNSHIPS OFTEN TAKE PLACE ABROAD, and for a chef to revisit the country that ultimately inspires his or her cuisine makes sense. But what happens when, in the course of their travels, an American chef is smitten by Tasmania, a wine-country chef by New Mexico or a pasta-centric chef by the American South? They change the menu, of course! Everybody benefits when a chef is excited.

Dishes such as country-fried Texas quail and a behemoth cowboy ribeye might be the backbone of the American menu at the Ranch Restaurant in Anaheim, one of the county’s finest dining destinations. And the country-western Ranch Saloon is adjacent.

But chef Michael Rossi isn’t constrained by the American label: Right up top with that Texas quail starter are French escargots and Peruvian ceviches.

That said, few outdo the Ranch when it comes to the eat-local mantra: Most produce comes daily from its own nearby farm, and the rest is local, too. But Rossi seeks the finest ingredients near and far, and his love affair with Tasmanian beef—born of recent travels to Tasmania, an island state south of Australia known for its rugged wilderness and pristine beauty—is a game-changer.

Now on the menu: Robbins Island Tasmanian wagyu beef carpaccio, of an otherworldy texture, served with white Alba Clamshell mushrooms, wild arugula, black truffle and Pecorino Romano, and 24-hourbraised Cape Grim grass-fed-and-finished

beef short rib alongside parsnip mash, tender roots and portobello mushrooms—this writer’s single finest short-rib experience.

A surf-and-turf of Cape Grim grass-fed petite filet and South African lobster tail, with smoked tomato risotto, king trumpet mushrooms and broccolini, has been a special. Cape Grim, in Tasmania’s northwest corner, and nearby Robbins Island have the cleanest air in the world, but that’s just one of the pluses of using Tasmanian beef.

The most important among them, says Rossi, is one diners might not think about.

“When you go to a restaurant,” he says, “you expect the food to be good—you don’t hope it’s going to be good—and if it’s better, we’ve exceeded your expectations.

“But service is the No. 1 thing, and service is about telling a story. If the servers can tell you this story, if you feel transported to Tasmania, that you’re on this island, you’re going to remember—‘I’ve had carpaccio, but let me tell you about this carpaccio that I had.’

MARK MCDONALD / OLD VINE Chef Mark McDonald of Old Vine Kitchen + Bar in Costa Mesa was trained in southern Italy, leads culinary tours to southern Italy and teaches at the Italian Culinary Institute in Italy. Fresh pasta has always been on the menu. Yet his restaurant is not Italian.

More like ... Euro eclectic? How, for instance, do a rabbit mole and torta de lengua—a beef-tongue sandwich with tomatillo salsa and pickled serrano chiles—fit in?

“Maybe ‘global cuisine with strong regional Italian?’ ” McDonald suggests.

“Travel has always been really important to my personal development—honestly, more than anything,” he says. “You learn far more traveling in other countries than in any classroom setting. My travels in Mexico, South America, Central America and even in the Middle East have influenced my flavor combinations.”

Not to mention traveling in this country.

McDonald has spent a great deal of time traversing the American South, and many of the dishes on his brunch menu—fried green tomatoes, biscuits-and-gravy—are the result.

One dish in particular caught his fancy: scrapple, in which stewed pork scraps and cornmeal are shaped, sliced and fried.

“I tasted at least a dozen versions of scrapple in Virginia,” he recalls. “I loved the concept. I’ve always been a firm believer in regionalism. I’ve been leading tours in Italy for nine years. People will say, ‘I wish we had this regionalism at home.’ The reality is we do; the U.S. is home to amazing regionalism.

“What I love about regional Italian, regional Mexican and even regional American is that the vast majority of traditions, some lasting 500 years, are not based on the wealthy, on

an affluent dining experience. They’re based on peasant food prepared for generations that was kind of survival food. You worked on a farm in Italy, you probably ate polenta twice a day. In the United States, you ate grits—an American version of polenta.”

Scrapple is another example of that, McDonald says. “To this day, it is made from the less desired parts of the animal mixed with cornmeal, because that’s what the people of the region had. They just fried it and turned it into a means of feeding the family.

“I tasted scrapple in Virginia that was beyond gamey, really intense, and others that weren’t as intense,” he adds. “What’s really cool is that I can use high-quality Duroc pork at Old Vine and recreate the tradition so it appeals to a more refined palate.”

McDonald recently moved his restaurant into a larger and more beautiful adjacent space, adding a bar and an expanded patio.

CATHY PAVLOS / PROVENANCE Cathy Pavlos, chef-owner at Provenance in Newport Beach, and her husband are also inveterate travelers.

“We recently spent time in the Loire Valley and Paris and the Cotswolds outside London,” Pavlos says. “I go back to Italy all the time—my family is from Italy—and to New York. We go once or twice every year to the Napa Valley—we rent a farmhouse between Napa and Yountville. Napa Valley has the best food in the world right now.”

That assessment explains the Napacentric wine-country concept that Pavlos presented at Provenance for five years.

But when an Italian restaurant in the same

center recently closed, Pavlos jumped on the chance to retool the menu to reflect her own Italian roots and family recipes such as Nonna’s Meatballs. She updated dishes with premium ingredients, e.g., seared whole wild branzino and Kobe beef Bolognese, and replanted her spectacular on-site garden with Italian produce. The transition was easier than it sounds, according to Pavlos.

“We are an Italian concept translated through the clean and fresh prism of California wine country—we’re Cal-Italian,” Pavlos says. “It makes sense: Napa Valley has its roots in France and Italy.”

None of which explains the New Mexican touches on her menu.

Case in point: the spicy chicken pasta with pomegranate molasses and chipotle chile that tops the menu’s pasta list.

“We’ve been several times to Santa Fe,” she says. “We found the best red chile sauce I ever had at this restaurant where this one young woman was basically doing everything.... She explained that it was their mother sauce. I practically interrogated her, and I started making my own spin on it.

“Napa cuisine, Italian, it doesn’t matter— it’s the one sauce I didn’t want to give up when I changed concepts. In fact, the sauce is part Italian, part New Mexican: It’s my family’s Italian ragu over fresh spinach fettucine with zucchini and corn, plus pomegranate molasses and New Mexico chipotles.

“It was inspired by Santa Fe but tastes like things coming out of Sicily right now,” Pavlos says. “Italians don’t like the spice of fresh japaleño. Metro Cities Costa Mesa On one side of Bristol Street is South Coast Plaza, whose $2 billion in annual sales is highest among U.S. shopping destinations. On the other is O.C.’s center of culture—two concert halls and its largest repertory theater—and business high-rises.

The late Henry Segerstrom and his family founded South Coast Plaza in 1967 on a lima bean field where as a youth he’d driven a tractor. The Coast Newport Beach Newport Beach and its environs have been called California’s Riviera. Beaches and bougainvillea are a backdrop to yachts and dream homes, from cottages to some of the nation’s most expensive real estate.

Its retail center is Newport Center, near Jamboree Road, Coast Highway and MacArthur Boulevard. Neiman Marcus and Bloomingdale’s anchor elegant outdoor shopping destination Fashion Island, which recently passed the half-century mark. Recent additions have included the Gorjana jewelry, ViX Paula Hermanny swimwear and the Lot luxury cinema and restaurant. Top dining options include Sushi Roku and Red O. Upper Newport Bay Nature Preserve, aka the Back Bay, boasts some 160 species of birds. Hike, bike or jog along 10 miles of trails. Newport Beach has the world’s largest small-boat harbor. Mariner’s Mile, on Coast Highway, is lined with luxury-car showrooms and restaurants such as Louie's by the Bay, The Winery and Pizzeria Mozza.

Private charters, narrated harbor cruises and dining cruises depart from Mariner’s Mile as well as from Balboa Pavilion (see Balboa, below) and pass huge luxury abodes. All manner of watercraft rentals are possible, from canoes and kayaks to sailboats, motorboats and surrey-fringed electric boats.

The “beach” in Newport Beach includes Balboa and Newport piers, great sandy expanses and one of the cleanest and most colorful bike paths and boardwalks anywhere.

The Wedge, where the peninsula meets the harbor jetty, is one of the world’s most famous bodysurfing and bodyboarding spots. Currents and riptides can be dangerous; don’t go in unless you know what you’re doing.

ExplorOcean is a nautical museum. On the harbor side of Balboa Peninsula is the Balboa Pavilion, a 1905 cupola-topped structure that is the de­pot for boat excursions: harbor tours, whale-watching trips and Santa Catalina cruises. As classic popsong lyrics attest, Catalina, known for its beaches, buffalo and glass-bottom boats, is “26 miles across the sea.” The city of Avalon is 75 minutes away via the catamaran Catalina Flyer.

The Balboa Island Ferry is a three-car shuttle between docks on the Balboa Peninsula and Balboa Island, a community featuring charming cottages, shops, galleries, boutiques and restaurants, notably Mr. G’s Bistro and Royal Hen gastropub. Marine

Corona del Mar Corona del Mar, whose streets are named for flowers, has expansive beaches and some of the country’s most expensive real estate. Upscale destinations at Corona del Mar Plaza, near Fashion Island, include Diane’s Beachwear, Tommy Bahama and VICI boutiques and gourmet pantry Baker & Olive.

On East Coast Highway south of MacArthur Boulevard, is Sherman Library & Gardens, offering 2,000 plant species on two acres. Consider a repast at Café Jardin or the Tea Garden Crêperie. Coast Highway is lined with design showrooms, rug dealers and boutiques.

You’ll find bodysurfing, volleyball, fire pits, all amenities

and Tackle Box gourmet “grub shack” at Corona del Mar State Beach. Picturesque Little Corona Beach, setting for countless family photos, is just south.

South of Corona del Mar is Newport Coast. Crystal Cove Shopping Center offers boutiques such as Atelier 7918 and restaurants Bluefin for sushi, Mastro’s Ocean Club for seafood and French bistro Marché Moderne.

Nearby are Crystal Cove State Park, with its miles of sandy coves and miles of trails, and gorgeous Pelican Hill Golf Club.

Huntington Beach Though Surf City USA retains some of its sand-in-the-cracks identity, luxury hotels and finedining options have made for a dramatic transformation.

shops, a Surfing Walk of Fame and Huntington Beach International Surfing Museum.

South Coast LAGUNA BEACH Admire the sculptures at Laguna College of Art + Design as you enter the county’s original art colony along Laguna Canyon Road. In fact, it is easy to spend a day along the thoroughfare before ever entering the city proper, especially during the three summer art festivals— Festival of Arts, Laguna Art-AFair and Sawdust Art Festival— and renowned “living tableaux” presentation Pageant of the Masters. Acclaimed Laguna Playhouse offers comedic and profound fare year-round.

Nestled among them at the Hive are Oliver's Osteria and McClain Cellars. Laguna Canyon Road becomes Broadway, then ends at Coast Highway. Turn either way and you’ll find galleries, boutiques and restaurants.

Laguna Art Museum offers modern and contemporary art, mostly by California painters, explores pop culture and displays art from Laguna’s past.

Steps away are coastal vistas at Heisler Park and a stretch of

Broadway ends at Main Beach. Ocean at Main restaurant is new. South along Coast Highway are other top dining options, including hockey great Teemu Selänne’s Selanne Steak Tavern, globally inspired Sapphire and posh Studio at the Montage.

DANA POINT Richard Henry Dana, the seaman who wrote 1840’s Two Years Before the Mast, described the area now named for him as the California coast’s “only romantic spot,” noting its “grandeur” and “solemnity.” You’ll find grandeur

but little solemnity along Harbor Drive, bustling with boaters, diners, shoppers and those headed to see the tall ships in port.

In addition to its sand and shore, Doheny State Beach offers five acres of lawn. Families picnic, couples rent bicycles. An interpretive center focuses on the underwater Doheny State Marine Life Refuge. The beach hosts a blues festival in May and, during the summer, Lobsterfest, a surf competition and outrigger racing. Fourth of July, the busiest day of the year, features fireworks launched from a barge.

Dana Point Harbor has 2,500 slips for vessels of all sizes, three yacht clubs, a fishing pier and Dana Wharf Sportfishing, which offers whale-watching trips. The Ocean Institute displays the Pilgrim, a full-sized replica of the brig on which Dana sailed.

Serra in 1776, the same year America was born. It took nine years to build its Great Stone Church, completed in 1806; it took one minute for an earthquake to destroy it six years later, killing 40 people. The priests left the ruins, a dramatic benchmark of the struggle to build California. The dome atop the nearby rail station was made with stones from the ruins.

Priests still celebrate Mass in the Serra Chapel; the original adobe walls shelter a magnificent Baroque altarpiece decorated with 52 carved goldleaf angels. The 10-acre site is filled with walkways, gardens, fountains and exhibits. Mission events include the renowned Swallows Day Parade in March.

Just across the train tracks is Los Rios Historic District. A stroll along Los Rios Street is a most pleasant experience; 31 homes,

the earliest dating to 1794, look as they did in centuries past.

Near the train station is the O’Neill Museum (31831 Los Rios St., 949.493.8444), home to the San Juan Capistrano Historical Society. The train goes right by Ramos House Café, which offers a memorable breakfast in an 1881 board-and-batten house.

Camino Capistrano is lined with shops and restaurants. One of South County’s most popular taverns is the colorful Swallow’s Inn (31786 Camino Capistrano, 949.493.3188). For a different kind of nightlife, consider the nearby Camino Real Playhouse (31776 El Camino Real, 949.489.8082). San Juan Capistrano Regional Library (31495 El Camino Real, 949.493.1752) is a postmodern masterpiece by architect Michael Graves.

San Juan Capistrano is the county’s equestrian center; luxu-

La Casa Pacifica, site of President Richard Nixon’s Western White House, has long since been broken up into million-dollar homes. But you can still see Casa Romantica (415 Avenida Granada, 949.498.2139), once the residence of the city’s founder, oil entrepreneur Ole Hanson. On a hillside overlooking San Clemente Pier, it’s the site of the city’s Cultural Center and Gardens, offering galleries and a popular veranda.

From the pier, the sun sets between Catalina Island and the Dana Point bluffs—just behind the surfers. Metrolink and Amtrak trains run alongside the beach and stop at the pier.

Find antique stores, galleries and dining on El Camino Real and Avenida del Mar. The Outlets at San Clemente is a shopping destination that marries luxury and discount. Tenants include MadaLuxe Vault, Guess and Hurley; Rockwell Bakery is new.

Orange Old Towne Orange often appears in movies, thanks to its

preserved pre-1940 homes and buildings. Anchored by a picturesque traffic circle—oval, actually—at Chapman Avenue and Glassell Street, the district is on the National Register of Historic Places. It includes eateries such as Haven and antique shops. The Orange Chamber of Commerce (439 E. Chapman Ave.) offers a map of historic sights.

Chapman University is one of the state’s oldest private universities. Its Musco Center for the Arts and nearby Hilbert Museum of California Art opened in 2016. To the east are Irvine Park’s Orange County Zoo and narrow-gauge train.

Big kids go for The Outlets at Orange, where draws include high-end discount retailers such as Saks Fifth Avenue OFF 5th and new Nordstrom Rack.

Families head for Lucky Strike Lanes and Vans Skatepark.

Visitors to Fullerton, home of California State University, Fullerton, gravitate to the bars and boutiques in the historic core along Harbor Boulevard.

Near Commonwealth Avenue, a short stroll from the train station, are night spots and restaurants including new Pickled Monk.

Significant sights include the Fullerton Museum Center, offering dynamic exhibits such as a gallery devoted to Leo Fender, native son and pioneer of the electric guitar. The museum offers maps pinpointing fine examples of architectural styles within walking distance. The stately Muckenthaler Cultural Center hosts varied design and art events and exhibits. The Fullerton Arboretum at CSUF offers streams, trails and a restored Victorian cottage.

In Yorba Linda is Richard M. Nixon’s birthplace. The tiny home and impressive rose garden are at the Richard Nixon Presidential Library and Museum. Among exhibits is a replica of President Nixon’s Oval Office.

Birch Street Promenade in Brea offers shops, restaurants such as Brunos Italian Kitchen and stand-up comedy. Brea Mall is huge; its dining options include HaiDiLao Fusion Shabu.

The OC Fair, July 12-Aug. 11, this year celebrates Orange County’s agricultural roots, its land and environment.

What began as a horse race and a few exhibits in 1890 has evolved into a multi-week festival featuring live music and countless booths.
