August in the Hamptons is the best part of the summer. It’s the time of year when most people are on vacation, and the weather is ideal — the perfect time to spend with family and friends. But it’s also the perfect time to spend by yourself for some “me” time. I will be doing just that by putting a lot of exercise on my schedule, especially bike riding. There is something about bike riding through the Hamptons that I love. It really gives me the time to appreciate nature up close over a long distance, and of course it’s a great workout. August in the Hamptons is also a great time to attend charity events and dinner parties. This is the best time of the year to have an active social life. During your social adventures, keep in mind the many great charities and causes in the Hamptons. If you can’t attend an event, you can still help by giving via the charity’s website. Important to me is the Southampton Hospital. Its yearly gala took place earlier this month to raise much-needed funds. If you would like to donate, please visit southamptonhospital.org As the charity and event season winds-down, I will look to spend more time out here in the Hamptons in August and September. For me, it’s the time of year I can really vacation and rest. And while the Hamptons offers a completely different social life in the off-season months. There is something a bit devilish about August. It’s a tricky month because it somehow promises an endless summer. Perhaps it’s because we’ve all grown familiar with our sun-kissed hair, brisk morning walks along the beach, and daily astounding sunsets. Perhaps we’ve become too accustomed to biking to a nearby town for a scone at a favorite bakery or we don’t intend to order anything but iced drinks because . . . well, don’t all yummy elixirs taste so much better cold? This is the point in the summer when we are all too used to the little things that make life wonderful. And there is nothing about the month of August that even attempts to wake us from the reverie that is a pitch-perfect season. Since summer is a wonderfully fleeting thing, I hope together we can all agree to savor it to its very pit. Don’t save the perfect plums for breakfast but instead infuse your life with action. Don’t wait for the right moment, create the right moment. The summer is here. The summer is now. Enjoy it!

avid Tufts has a passion for collecting watches, and it began the day be purchased his first Filitz, an obscure brand. After graduating from the Naval Officer Candidate School in Newport, RI, David flew to Germany to join the USS Wasp, an aircraft carrier, to assume duties as a communications officer. One wouldn’t expect a young Navy ensign to purchase a piece of jewelry on one of his assignments, but David offered 50 bucks to a jeweler for that simple statement piece with an ultrathin black crocodile strap before he departed on his first ship. His life-long hobby began that very moment. Before becoming a Navy ensign, David grew up in Old Greenwich, Connecticut, after his family made a move from Medford, Massachusetts when he was two years old. A former Tufts home in Medford is the oldest brick house in America, built by Peter Tufts in the 1670s, and was later sold. In 1848 Tufts College was founded because Charles Tufts gave Medford land to The Universalist Church with the stipulation that the church found a college, although no one in the Tufts family actually attended Tufts University. History runs in David’s blood, you could say, and on his wrist. Shortly after returning home from the Navy, David began working as the head of sales for the opening of the Kennedy Center for the Performing Arts. Then, he moved to Merrill Lynch in Washington and later Oppenheimer in 1981 in New York, where he recently ended his career running the largest wealth management office for 30 years. Now, his time is primarily focused on expanding his “wearable

art” collection. Most of his pieces were acquired from auctions at Christie’s and Sotheby’s and from private dealers as well as from foreign catalogues. It was actually on one of his travels to London that David was introduced to his favorite antique watch boutique, which is located in New York’s Grand Central Terminal. A fellow watch collector working at a watch store on London’s Portobello Road recommended that David pay a visit to Central Watch when he returned home. Sure enough, the London watch collector was right. David still visits Central Watch and always makes sure to “ask for the good stuff ” that they keep hidden in the safes. “I don’t necessarily think men should be wearing a lot of jewelry, except for a watch and a ring,’ says David. “A watch is the most important piece of jewelry for a man. Simple is elegant.” As David’s collection continues to grow, now consisting of 50 to 60 luxury timepieces, including vintage watches made by Rolex, Piaget, Patek Phillipe, Tiffany, Cartier, Movado, and many more, he finds joy in gifting his personal pieces to his two daughters and close family members. David currently lives in a beautiful penthouse loft in NoHo as well as in the Hamptons and Santa Barbara, where he enjoys spending his time donating to charity, sailing on his 40-foot German sloop, skiing with his two daughters and their families, and attending Burning Man with his partner Cris Dovich, who is a voice-over actor. “I think I live a very simple life. I’m not very ostentatious, but I do like beautiful things and don’t take life too seriously.” Social Life

Although, when styled correctly, the color is a bold and welcomed seasonal hue that adds a neutral and unique edge to your sartorial look. For a celebration on the East End, she recommends the Leto or the Audrey dress. Victoria describes the Leto as possessing, “a refined fresh couture aesthetic” and the Audrey as “ethereal for the exquisite beach occasion.” Her career as a designer of bridal and evening wear began in the early 2000s. The VKK brand quickly attracted the attention of fashion-savvy brides internationally. Brides from around the world began to fly to her atelier in Athens for couture meetings. “I launched my Manhattan studio a few years ago due to demand to be accessible to brides closer to here. It was always a dream of mine. I was honored when Saks Fifth Avenue loved and picked up my bridal collection for both its New York City and Beverly Hills boutiques,” she says. Design and fashion have been an essential part of Victoria’s life since she was a young girl. “My mother had a real appreciation for tailored clothing, and had all of her clothing custom-made from the latest fabrics she and my father used to bring back from their travels to fashionable cities like Paris, Tokyo, and London. I’ve loved beautiful fabrics since I was young, and used to design and create original looks for my dolls. Learning about and appreciating true couture apparel at that young age played a pivotal part in my becoming an haute couture designer,” she says. Awe Inspiring Jewelry Evokes the Fantastical Thai Spirit By Colin Thompson

adies, you know that when we dress up for a fabulous night out on the town, we want to feel special, empowered, enchanted. Social Life searched high and low to find accessories that would add a little magic to the way we feel when we step out the door. Our favorite find was a jewelry line called Shotiros, which draws its design inspiration from the Thai way of life. Power Through Life Without Foot Pain, Thanks to Dr . Blitz By Madison Cole

W

omen expect a challenge. They’ve dealt with wage gaps and corporate ladders. They know the pain of giving birth and getting a Brazilian wax. But, sometimes, there’s no need to tough it out. Case in point? Suffering the consequences of sky-high heels. For women who believe life looks better with a three-inch lift, bunions and related foot injuries are an all-too-common complaint. But too many women try to smile through the painful foot conditions when they could nix the aches and keep their shoe collections — all without surrendering their alpha-female cred. Dr. Neal Blitz, a New York–based reconstructive foot-and-ankle surgeon, helps powerful women leave bunions behind before complications set in. And, unlike most doctors, he doesn’t see heelabstention as a necessary part of the equation. You’re hardly the only person hiding crooked, bumpy feet inside sleek stilettos. More than half of American women deal with bunions, according to the American Academy of Orthopaedic Surgeons. And many of them are opting to overlook their sole woes, which Dr. Blitz thinks stems from surgery horror stories. “I think people ignore bunions because they’ve heard about someone having a bad experience involving a long recovery with crutches, or maybe an ugly scar,” said Dr. Blitz. “This is just not the case anymore, at least not with the right techniques.” He’s on a quest to set the bunion story straight. For one thing, don’t trust the misled masses: a bunion isn’t a growth of bone or tissue. “It’s really the misalignment of the big-toe joint pushing out on the skin from underneath that causes the bony prominence,” explained Dr. Blitz. In other words? It’s a bone that’s shifted out of place. Another misconception concerns the role that genetics play in the development of bunions. While some people do have a biological predisposition to shifting toe bones, heel lovers should assume their footwear preferences are part of the equation. A high heel, even one that’s designed for support, simply doesn’t jibe with the anatomy of the human foot. There’s nothing natural about walking at a steep pitch. By placing undue pressure on the ball of the foot, the big-toe joint can move outwards and leave you with a protrusion.

Dr. Blitz is fully aware of the link between high heels and bunions, but he’s also not interested in shaming shoe-lovers. Instead, he fixes feet to fit shoes. After all, why battle the force of a beautiful shoe when you can work with it? There’s also a widespread notion that bunion removal means a lengthy period of post-op immobilization. To be fair, this rumor is rooted in truth — but not for patients of Dr. Blitz. Bunion removal is traditionally considered a tricky procedure. For years, there was no single way to get it done. But one thing remained constant across surgeons and surgical approaches: patients had to spend six weeks recovering, off their feet. Dr. Blitz, however, created a signature procedure, called Bunionplasty ®, that lets him break the six-week rule, without compromising healing efforts or aesthetic integrity. “I developed a patented bunion surgery implant that properly stabilizes the bone during the recovery process,” he explained, “allowing patients the ability to walk afterwards.” By afterwards, he means that patients can walk away from surgery on their feet, wearing only a small surgical boot. And underneath the boot lies a foot bearing only subtle signs of surgery, said Dr. Blitz. “My background as an artist allowed me to look at bunion surgery from an aesthetics point of view rather than the orthopedic view.” Rather than make an incision on the top of the foot, as most surgeons do, Dr. Blitz places it on the side of the foot, and uses plastic surgery techniques to leave feet prettier and pain-free. The anticipation always made me uneasy, the actual shot was more than a little uncomfortable, and I usually experienced slight bumping or bruising on my face that lasted several days. Worse than that, some of the facilities had employees whose faces were frozen or far too smooth to appear natural, so I kept my injectables limited to 20 units of Botox. My experience at Trifecta Med Spa was quite different. Located in an elegant building at 115 Broadway in downtown New York, the suite is beautifully designed with a very clean and modern look. The attractive staff was warm and inviting upon my arrival. After little wait time, I was introduced to Yulia, a registered nurse with years of experience. Her soft voice and attentiveness immediately put me at ease. We chatted about my desire to keep my appearance natural, what I had had done in the past, how my sensitive skin had reacted, and what I deemed were my problem areas. My nasolabial folds had deepened over time, and I was quite aware of them each time I looked into the mirror. I had volume loss in my cheeks, and my tear troughs added to a weathered and tired look. In addition to Botox, Yulia recommended Juvéderm to smooth out the tear troughs and nasolabial folds. She also suggested a very small amount to restore the volume loss on my cheeks, and of course the trusted Botox would keep my forehead lines from becoming too noticeable while giving my eyes a tiny and brightening lift. She explained the Botox could take up to two weeks to take full effect, but the Juvéderm would work right away. Her own very natural appearance and gentle demeanor gave me confidence. I felt comfortable upping my game. To combat my nerves and sensitivity, Yulia applied numbing cream and gave me a pair of foam lips to squeeze. She started with the Botox, and much to my surprise, I barely felt a thing. Right before the injection, she would whisper “pinch,” and I would wait, but she would be finished before I realized she had started. Next we

moved on to the Juvéderm. She let me know this injection might be a bit more painful than the Botox. She would do a drop on my cheeks and three injections on each side of the nasolabial folds, and I would likely feel the first the most. I braced myself for the discomfort, but again, I barely felt it. I figured the numbing cream must really be working, but surely my sensitive skin would tell a different story. I assumed I would have bumping at least and some slight bruising at most. Once we finished, Yulia handed me a mirror so I could examine my face. Again, I was pleasantly surprised to find there was no bumping, no bruising, just some very slight bleeding at the injection site that went away by the time I left the office. Immediately, I looked well rested and fresh faced. I went to dinner with friends that night, and my friends commented on how great I looked, but no one could put their finger on exactly why or what made the difference. This was the exact outcome I had hoped for. It’s me, just slightly improved. Trifecta Med Spa gave me a leg up on Mother Nature. Within days, the staff followed up to make sure I was happy with my results and to book my two-week follow up. It’s now been a week since my treatment, and I will be back in another week . . . and assuredly every six to nine months thereafter. ry this delicious side dish at your next lunch or dinner party. Except for a few seasoning agents, all of the ingredients are available at your local farmers market and allow you to showcase the best of the season’s produce. EQuIpMENT: Grill Knife Cutting board Airtight container Blender Ingredients: 4 shucked ears of corn, cut in half Topping: Crumbled goat cheese Torn basil leaves

SAuCE: 4 red peppers 1 medium zucchini, sliced in half lenghthwise olive oil Sea salt Freshly grated pepper ½ cup washed basil leaves 1 garlic clove 1 shallot ¼ cup heavy cream ½ cup grated parmesan cheese or any hard grating cheese 1 tbsp lemon juice

METHod: 1. Preheat your grill to medium heat. 2. Lightly coat peppers with olive oil, salt, and pepper. Roast on all sides until skins are blackened and blistering. 3. Remove peppers from grill and place them in an airtight container to steam for at least 20 minutes, or up to one hour. While the peppers are steaming, prepare the other vegetables. 4. Lightly coat corn and zucchini with olive oil, salt, and pepper. 5. Grill corn until kernels begin to blacken, and zucchini until soft. 6. Blend together basil, garlic, shallot, heavy cream, cheese, lemon juice, ¼ tsp salt, and ¼ tsp pepper. 7. Remove skins and seeds from steamed peppers. Reserve as much flavorful liquid from the peppers as possible. Add peppers and 1 cup of steamed liquid to blender. 8. Add zucchini to blender. Process until smooth. If the sauce requires more liquid, add the reserved pepper liquid, 1 tbsp at a time. 9. To set up your final dish, spoon roasted vegetable sauce over the corn, and top with crumbled goat cheese and basil.

As a Hamptons local, Beth Ostrosky Stern is the quintessential girl next door. With a strong sense of community and social responsibility, the down-to-earth blonde beauty’s extensive work advocating for animals goes beyond her countless charities and into her home. She’s opened her door to numerous canine and feline fosters that she personally cares for, and has worked for the adoptions of hundreds of cats and dogs over the last several years. Beth credits her work with the North Shore Animal League America (NSALA) for segueing her into becoming an animal foster parent, a mission she describes as her “purpose in life.” She has housed up to 20 cats and kittens at a time, and takes full responsibility for their needs. She cleans up after them, administers medications, and tends to all their feedings, which can be an extensive undertaking as kittens under 12 weeks feed up to four times a day.

Once the fosters are ready to be adopted, Beth also aids in finding their forever homes. From spreading the word about pet rescue via her hosting gigs on the Hallmark Channel to showcasing available dogs and cats on her social media to choosing candidates for pet parents to placing the actual pets with their new owners, Beth is involved in the adoption process from start to finish. Beth’s passion for wildlife doesn’t end there. As a lover of all animals, she became a wildlife transporter working with The Evelyn Alexander Wildlife Rescue Center in Hampton Bays, helping a range of animals from deer, foxes, and bunnies to waterfowl and songbirds to turtles and snakes. She’s also become a best selling children’s book author who seeks to raise awareness and funds through her writing. In the Q&A, Beth gives us more detail about herself and her love of animals, the impact animal rescue has had on her, and how she’s giving back to her community.






features What do the Hamptons mean to you? The Hamptons is home to me. It’s a magical place filled with natural beauty and wildlife. I feel so blessed to live here! Describe your ideal Hamptons day. We wake up at 5 a.m. every day whether Howard has to get up for his radio show or not. I head straight to the foster room to feed my foster kittens. We currently have fourteen kittens and two adult fosters. They usually need medications administered as well. It’s a long morning routine! Howard and I exercise together (either a walk on the beach or a morning run). We both practice Transcendental Meditation, so that takes up 20 minutes in the morning and 20 minutes in the afternoon. After lunch, it’s back to the foster room for more feedings. Sometimes the kittens are so young that as soon as I finish feeding everyone, it’s time to start all over. Howard and I usually eat dinner in our home and then go to bed pretty early. Because of his early morning radio schedule, we are usually in bed by 9 p.m. — even on weekend nights. We laugh at ourselves! How do you see yourself giving back to the Hamptons community? Each time we take a beach walk, we take a large garbage bag and fill it with balloons on the beach that have fallen from the sky. We are so concerned about the wildlife that we try to pick up anything that would potentially harm them. I hate those balloons. People don’t realize what harm they cause when wildlife ingests the balloons and strings. We also love supporting The Evelyn Alexander Wildlife Rescue Center out here, and I am on call as one of the trained wildlife transporters. People think I love only cats and dogs. I love all animals. How did you become so passionate about animal welfare? Can you describe a specific moment or share a story that exemplifies your aha moment? I was born passionate about animals. It’s in my blood! My parents treated our pets as family members. We rescued all of our dogs and cats growing up. And whenever there was a hurt animal in our neighborhood, we took it to the local rehabilitator

to treat and then we would release back where we had found it. There was never a moment in my life that I remember not being a crazy animal lover! What was your first experience advocating? I remember my booker from my modeling agency called and asked if I would lend my time to walk the runway for an animal organization’s annual fundraising luncheon. The organization happened to be North Shore Animal League America [NSALA]. I not only walked the runway with adoptable puppies, but I stayed on the runway until every last one was adopted. They soon recognized my passion and asked me to be their national spokesperson. That was close to 12 years ago! I am not only a volunteer and spokesperson, but also one of their foster parents. I am currently expanding their existing shelter with a seven million dollar renovation to create a cage-free “home away from home” habitat for felines. This expansion, called Bianca’s Furry Friends, also will free up the entire downstairs for more adult dog and puppy-mill rescues. How do you find the cats that you foster? What’s the most you’ve had at one time? When I first started fostering three years ago, I would go with my friends from NSALA directly to municipal shelters that had to sadly euthanize cats and kittens every day due to being overcrowded. Once an animal arrives at NSALA, it is safe (we are the largest no-kill shelter in the world). Sadly a lot of municipal shelters cannot accommodate all that come in. I have grabbed entire litters and mama cats moments before being euthanized. Now my Instagram has become the way I have been saving cats and kittens that I end up fostering. I remember having nineteen at one time. But, right now, I currently have fourteen fosters, including three blind kittens, in addition to our six resident cats. Does anyone help you to care for the kittens you foster? I do have people who help, but the main caretaker is me. I wake up every morning and feed and administer meds. I clean litterboxes all day, and I make sure they are vaccinated and take care of their medical needs. Dr. Kheun and Dr. Browning at Sag Harbor Vets are my best friends! They help me with kitten vaccinations and the spay and neutering of all my fosters. What’s the most gratifying experience you’ve had as an animal activist? Fostering and saving the lives of almost 300 cats and kittens over the past few years. It’s truly my purpose in life. Also, giving the proceeds of my children’s books to North Shore Animal League America. (Yoda: The Story of A Cat and His Kittens was a New York Times bestselling childrens book.) As a champion of animal rights, what advice would you give the average person? It’s simple. If you are ever thinking about adding a furry family member, please go to your local shelter first. And if you want to take it to another level, consider fostering. Fostering frees up space at shelters and therefore saves lives. Being a foster parent is so rewarding. Saving lives is the best feeling in the world. My advice would be to enjoy every second of it because once you hand them off when they are ‘ready to fly,’ it can be so emotional! You’ve prepared them for their forever situations. And then you can free your home for more. It’s very tempting to keep them because you get so attached. I have a few foster fails myself, but if I kept them all, I would have over 300 cats. Grey Gardens in Southampton! Not happening. What do you look for in someone interested in adopting one of the cats you foster? I work with NSALA and they have a very thorough screening process. Once I post the picture of one of my foster kittens on my Instagram (@bethostern), emails start to pour into my foster account (bethsternfosters@gmail.com). I read each one and the ones that I feel are good, I forward to my contact at NSALA and she calls them and interviews them. By the end of their “pre-approval” interview, we know almost everything about their homes, pet history, etc. And then we call their references. Once that is completed and we feel that they are good, they are approved for one

of my fosters. I then match one of my foster kittens or adult cats to homes (considering if they have children, other pets, etc). It’s a very thorough process and we take it very seriously. You have a laundry list of titles on your resume: animal lover, model, best selling author, TV host. What are you working on now? I have been working with the Hallmark Channel and hosting The Hero Dog Awards each year as well as Kitten Summer Games and the annual Kitten Bowl on Super Bowl Sunday. We are in our fourth year. It’s pretty great because I’ve introduced them to NSALA which rescues the cats and dogs for the specials. All are adopted into loving families immediately after the tapings. I always advocate for people to visit the adult cats and dogs in shelters before they meet the kittens and puppies. Most of the adult animals are perfect. Their owners passed away or the owners had to move and leave behind their perfect pets . . . it breaks my heart. They are sitting in their cages waiting for their person to come back. ne of the benefits of privilege or success in a capitalistic society is the means to seek out those who are the very best, the most skillfully and creatively adept at their chosen craft to perform services, create experiences, or build things of unrivaled quality and character for us. Whether we are flush with superfluous currency or operate on a much tighter budget, it is no doubt one of the finer pleasures in life to have the opportunity to treat oneself to the very best there is in life. The work of artisans can seemingly flow so easily from their fingertips; yet, they can often leave one baffled, mesmerized, and beyond appreciative of the sheer human talent that exists in this universe. It’s often been said that average men or women simply want to be understood and appreciated for who they are. The artisan goes beyond giving us what we ordered; he or she routinely eclipses our expectations by creating a memory, an experience, or a look that in essence gives their patrons a piece of that artistan to take with them, and thereby, in effect, showing the greatest level of understanding for us, giving us more than what we simply need. When we take our work up to artisan level, regardless of what the going rate is for said service or piece of work, it is up to the recipient to reward the character and quality of what has been delivered or being received above the price being charged. Tipping is one way to illustrate that sometimes we simply just ought to pay more for what we get. Consider playing it forward and being an angel investor in supporting the flourishing of artisanry. And maybe that level of quality and character will grow and expand. Yes, we ought all to take greater pride in our work but sometimes, too, folks who take greater pride in the work and execute consistently are undercompensated. There is nothing like getting a great haircut or having an imperfect smile fixed. You know the kind: that makes you feel like a rock star when you are sitting in that chair imagining you are even finer than you truly are. And, yes, the kind which week after week seems to grow in artfully and strategically. Vidal Sassoon famously stated, “If you don’t look good, we don’t look good.” While attending Boston University on scholarship, financial aid, and work study, the last place I ever expected to be getting haircuts was at Vidal Sassoon from anyone associated with that guy on television. But there I was one summer vacation on Fifth

Avenue in the GM Building Plaza courtesy of the mother of my then girlfriend Lisa Weinstein. She in effect treated me for all the time I spent treating her daughter on my work study budget. Or maybe they just knew I could look better than I actually did. Anyway, I did not resist and in my early 20s I experienced the magic. Years later another girlfriend took me away from my local barbershop to Frederic Fekkai, perhaps for the very same reasons. There are worse things than doting girlfriends who wanted me to look better than I did. The confidence of a great haircut is transformative. You damn well know you look good when you leave that chair and walk out of the salon. VALERY JOSEPH: THE ARCHITECTURE OF STYLE A few years ago, in the midst of taking photos of some female socialites who happened to have rather spectacular looking hairstyles, I rather conveniently met Revi Joseph, the wife of Valery Joseph, the stylist who created all their styles. At the time, I was in the midst of my own mid-life crisis, having had some disturbing news on the health front. Yet, I still had this head of hair that would grow. I wanted to have that youthful feel of longer hair, the way I did in the 1970s and early ’80s. Society had become more flexible and it was increasingly less required to have short hair in the professional world. Valery Joseph has become Manhattan society’s stylist to the bold and the beautiful, the uber-elite, and those aspiring to be. While Valery has been in New York for more than 20 years, with a significant presence that started in the heart of the Upper East Side on Madison Avenue, his business has expanded organically by the sheer force of his salon’s reputation for consistently providing a high level of quality, hospitality, customer care, and a unique beautifying style that incorporates Valery Joseph’s never ending learning curve from traversing the world of fashion and media throughout the globe. It is exceedingly well run, meticulously clean, and the customer service is beyond impeccable. It never shocks me whose hair might be getting cut before or after mine, including women from the most prominent New York families to newsmakers, business moguls, and the fashionable elite. Valery Joseph’s success would seem to emanate from several factors. The tall, athletic, model-like Russian-born hairstylist got his start after he emigrated with his family to Israel. Valery grew up in a loving home that taught him the value of education and the importance of listening, respect, caring for others, and friendship. It was in Israel where he first got a degree in architecture. When he was a soldier in the tank division of the Israeli Army, an injury forced him to attend hairdressing school. He started cutting hair for male and female soldiers at an army base salon. Valery learned a valuable lesson at that salon: “The army taught me the value of building relationships based on trust, responsibility and loyalty.” It is this type of relationship that Val forged with his clients early in his career.

Many of his clients have become his friends. Valery’s sources of inspiration are Vidal Sassoon, Frank Gehry, and Tom Ford: I believe in free-style haircuts and looks. I cut very softly. My inspiration drives from street fashion of the ’70s and ’80s bohemian chic, in part which I still incorporate in my haircuts today. Tom Ford with Gucci late ’80s to mid ’90s created this beautiful sexy elegant bohemian chic with his fashion. He inspired the whole industry and me personally. Given my background in architecture, when I was learning my trade and establishing my professional reputation, Vidal Sassoon inspired me when he created geometric angles for the structured bob haircut. From that I began to think differently and creatively, drawing upon my architectural background, it really drew my attention to create the right foundation for my clients regardless of their hair length — the rest is soft layers with soft finishes and touches. When I think of movements, I think of the architect Frank Gehry and the 76-story skyscraper known as 8 Spruce Street, originally known as the Beekman Tower that gives a look of movement even at rest. Valery Joseph’s artisanry not only emanates from his family, the Israeli military, the highest levels of international fashion and style but also from creating in his work environment a loving, family atmosphere where the learning curve and passion for learning how to serve his clientele never ends.

The woman I consider a comfortable perfectionist, with a knack for creating a Zen-like atmosphere in all that she does, gives a rather straightforward and earnest rationale for entertaining: “I entertain to spend time with people I care about and find interesting; I want my guests to enjoy a memorable, enriching visit so that they’ll return when I invite them again.”

Being mindful of dietary preferences, offer a wrap on a cold evening, or a foot bath and fresh towels after a beach party. These extra efforts will put your guests at ease and assure them you have given thoughtful consideration to their comfort and value their presence. Annie believes that “having balance in life, no matter what you do, will most certainly carry over to all you do. I meditate often, practice yoga a couple of times per week, and recently returned to SoulCycle, among other things.” Very few people can teach you a whole lot in the character and integrity of how they carry themselves and how they choose to love and be a source of inspiration for their family, friends, community, and country. JULIANNA MELAMED-FREID: CREATING MAGIC and FACILITATING DREAMS Julianna Melamed-Fried — a Fort Lee, New Jersey–born, English literature major at Montclair State University — had initially been considering a legal career after graduating from college when a chance meeting resulted in her starting as the P.A. to Hank Fried, the CEO of Impulsive Group and one of the more intuitive and creative entrepreneurs in the New York hospitality industry. The boutique luxury hotelier had his famed Sanctuary Hotel in the heart of Times Square named International Hotel of the Year at the European Hospitality Awards in 2011, only six months after it opened. Once Julianna recognized her passion and that her future was in the hospitality industry, she left Sanctuary and went to work at Luxury Attaché, a high-end concierge service. After a great learning experience honing a passion for providing an elite global clientele world class service, Hank, her then boyfriend and now husband, offered her what she calls, “the opportunity of a lifetime” to create the events and marketing department at the Sanctuary Hotel. Julianna thrived in that role, fully capitalizing on the hotel’s elegant and urbane atmosphere and the burgeoning renaissance of Times Square. As the director of events and marketing at the Sanctuary Hotel, Julianna’s passion for creating and organizing successful events flourished. Likewise cornerstone values of ethicality, morality, and honesty, which formed the foundation of his youth, have helped in the evolution of his personal and professional life in the United States. Robert Chaloner the president and CEO of Southampton Hospital By Jean Shafiroff

ean Shafiroff, a longtime supporter of Southampton Hospital who has chaired several of its highly successful fundraisers, recently interviewed Robert Chaloner about changes at the medical institution and its future plans. How long have you been working as the president of Southampton Hospital? I was hired to take on the position of president in December of 2006. Previously, I was the chief executive officer of Cabrini Medical Center, which was located in Manhattan. When I first started at Southampton Hospital, we were struggling financially. It was an extremely difficult period for hospitals throughout New York State. The state had changed the way hospitals were reimbursed, and we had to find a new way to augment that repayment. We were successful in accomplishing this. I am proud to say that for the past several years we have ranked in the top 10 percent of hospitals in New York State. What have been some of your biggest challenges? One of our biggest challenges has been to stabilize and increase the staff, including the number of nurses per floor. Another challenge has been to develop a full-time hospitalist program [in-house physicians who manage patients’ care during the hospital stay] and to improve our access to all hospital personnel and services. We now have 1,100 hospital employees. We also have a Meeting House Lane medical practice with an additional 100 staff members. There are 280 doctors on staff. Approximately 60 of these are full time. As a result of a program we started five years ago, we now have 75 medical residents. Young doctors often have difficulty living here because of the high costs. We provide initial subsidies in order to attract and keep good young doctors.

Tell us about your centers of excellence? First, we have The Ellen Hermanson Breast Center. This center offers a wide spectrum of breast health services, including education, early detection screening, and breast cancer treatment and support. We also have The Jenny and John Paulson Emergency Department. In the summer months, we see a huge increase in the number of visitors to the hospital who require emergency services. We can now handle major trauma cases. We have a number of radiological diagnostic centers. We are physically remote out here. Sometimes the traffic is extremely heavy. People do not want to drive from Montauk to Southampton Hospital. Therefore, we have opened labs and radiology centers in East Hampton, Southampton, Hampton Bays, and Westhampton. All of these centers are digitally linked. Next we have the Ed and Phyllis Davis Wellness Institute. This center offers integrative and behavioral medical services, including yoga, acupuncture, and nutritional counseling. Its main location is in Southampton, with a satellite center in Hampton Bays. We also bring these services into the community. Social Life

We have the Center for Advanced Wound Healing as there are many diabetics in the community who need the services provided by this center. We also have the Audrey and Martin Gruss Heart and Stroke Center that focuses on a variety of clinical health issues, including vascular diseases. Finally, we have the Kathleen D. Allen Maternity Center, providing important services to new and growing families. When will Southampton Hospital become a part of Stony Brook University Hospital? We have an agreement in place, and this should occur in the next several months. We are very excited about this. When will The Phillips Family Cancer Center open? We plan to break ground in the fall of 2016 on a site along County Road 39 in Southampton. Our goal is to open in late 2017. This center will provide radiation and chemotherapy as well as support services that will be conveniently located in our community. What will Southampton Hospital look like in ten years? My dream is that there will be a brand new hospital on the grounds of the old Southampton College. We hope to have a number of buildings on the site. We expect to have a number of laboratory and testing facilities as well as a variety of community-based health facilities operated by our hospital throughout the South Fork. How important is philanthropy? The hospital could not have started without philanthropy and it would not survive as well. As the president and CEO of Southampton Hospital, Mr. Chaloner has been actively engaged in stabilizing and rebuilding the hospital’s financial and operating performance. Currently he is leading the hospital’s integration with Stony Brook Medicine. During the last ten years, he has overseen a hospital-wide renovation with state-of-the-art technology throughout and has guided and launched the development of centers of excellence, including breast health, stroke care, emergency trauma services, vascular services, wellness, and women’s health programs. He has also led the creation of a large physicianenterprise and development of an integrated regional healthcare delivery system across the South Fork. A fellow in the American College of Healthcare Executives, Mr. Chaloner has served on the board of many health care and community service organizations. About Jean Shafiroff Jean Shafiroff, a philanthropist, a humanitarian, and an author, is a volunteer leader and fundraiser of several charitable causes. She serves on the boards for seven philanthropic organizations, including New York Women’s Foundation, NYC Mission Society, French Heritage Society, JBFCS, The Couture Council of the Fashion Institute of Technology, and the honorary board of the Southampton Animal Shelter. She has chaired the Southampton Hospital gala three times, helping the hospital raise $5.4 million from those events. The Watermill Center Avant-garde director Robert Wilson’s annual Watermill Center benefit raised $2 million to support the year-round artist residency programs. This year’s happening was dubbed FADA House of Madness and was once again the summer’s most intriguing evening. Over 130 emerging artists from 28 countries created performances on the grounds. Performances included being greeted along a bamboo entrance path by Jacques Reynaud’s Angels of Apocalypse, who wielded enormous swords and 6-foot pink feathered wings; John Margarita’s One Ton Tank, which consisted of a man in a box filled with water doing slow-motion moves underwater while wearing a weight belt and a speedo; an enormous replica of a black plane doing a nosedive into the stone patio; an anti-Donald Trump installation featuring an electric chair by Pussy Riot’s Nadezhda Tolokonnikova; and other outrageous wonders, including the artist collective Bruce High Quality Foundation, which presented As We Lay Dying, a variety of works and performances — interspersed throughout the center’s grounds — that were a reflection on the contemporary world. ADAM HOCHFELDER The Life of a Real Estate Mogul By Lori Perry

nown as the “Wharton Whiz Kid” for his fast rise to fame, Adam Hochfelder has the ability to leverage and close exclusive multimillion dollar deals with endless ambition, earning him an impressive portfolio. As the managing director of Real Estate Acquisitions & Development at Merchants Hospitality, Hochfelder is an investor, owner, and developer of real estate and hospitality properties, including luxury residential and hotel properties, commercial buildings, and some of NYC’s top-rated restaurants. We were fortunate to catch up with Hochfelder to discuss his career, philanthropic endeavors, and his recent nuptials to Lisa Damiani. What attracted you to take on a career in real estate? I got my first job at an internship at Newmark & Company before graduating from Wharton’s real estate program at the University of Pennsylvania. I was fully entrenched in all areas of business which combined finance, brick and mortar, and human capital. This fueled my love for real estate. Can you tell us about some of the properties and things you are working on today? We are currently developing a 200,000-square-foot luxury senior-living building on the Upper East Side in Manhattan. It will be NYC’s first super luxury building designed for seniors, complete with onsite doctors and nurses as well as healthy farm-to-table restaurants exclusively for the building residents. We are also developing a 100-room boutique hotel in the Hudson Yards area. It is an honor to work with Abraham Merchant and Richard Cohn, who are two of the smartest and most creative guys in the business. What inspires you to give back and help those in need? I’ve learned that our community is bigger than our business. Being successful isn’t measured necessarily by how much you’re worth, but by how much you give to those who really need it. I’ve funded the development of the NYC Parenting Center, which aids first-time mothers in need. I work with Home Depot and Habitat for Humanity, an initiative supporting low-income housing in New York and Philadelphia. I’m involved with The THRIVE Network, which supports individuals and families with disabilities. I also work with various youth sports organizations, empowering children on the importance of exercise and health.

Recently, you married Lisa Damiani, who is an accomplished singer. Can you tell me more about your relationship as well as your two sons, Henry and Preston, from your previous marriage? I truly married the woman of my dreams! Lisa is such a beautiful and talented woman who inspires me each and every day. We have such a deep love and bond and I truly look forward to our journey as husband and wife. orinthia Hotel London is a luxury hotel with a unique location near the River Thames, the iconic structures of British government and 10 Downing Street, Trafalgar Square, the National Gallery, and a brisk stroll from the chic boutiques and dining of St. James’s and Mayfair. Room 474 was the first headquarters for SOE, what today is part of the Secret Intelligence Service of James Bond fame.

Cartagena, Colombia Colonial charm collides with urbane chic By Anthony Giampetruzzi

E

ver since Michael Douglas’s character in Romancing the Stone uttered the word “Cartagena,” the Colombian port city (and, of course, the mythic Joan Wilder) has fascinated me. Sadly, it took me 30 some odd years to visit. What a waste of three decades. Cartagena (notoriously mispronounced by Douglas: the “n” in Cartagena is hard) is one of a small handful of Caribbean cities with the perfect mix of chic urbanity and well-preserved colonial charm. Upscale shops, restaurants, museums, and other points of interest are seamlessly integrated into the ancient hollows that line the narrow streets of the old city, where cascading bougainvillea, ubiquitous fruit vendors, and pastel walls conflate in a sensation of color. Large plazas provide navigation through this verdant oasis, all of which is surrounded by the largest and most well-preserved fortification in the Caribbean, perfect for an early morning jog or a romantic sunset stroll. Beyond? The Caribbean itself, with plenty of local and remote getaways. Well known as one of the safest and least off-putting cities in South America, Cartagena is a best-kept secret among the luxe set who enjoy authenticity and proximity. There is no shortage of lovely hotels and small inns to choose from, but if it’s extreme comfort and ultimate luxury you seek, the Sofitel Legend Santa Clara should be at the top of your very short list. Once you’ve settled in, ask for a tour, especially if you’re in town looking for a location for a special event. Known for its historic charm, romantic sunsets, and tropical environments, Cartagena is the perfect setting for weddings, and Santa Clara’s seven function rooms that range from intimate to banquet size are complemented by a collection of open air courtyards and exquisite restaurants and bars. If it happens to be on the menu, go with the Provençal sea bass with braised fennel and beure blanc sauce.

Deborah Szekely wellness warrior, founder of rancho la puerta By Joe Alexander

Mother of the Modern Spa Movement Madonna, Kate Winslet, Governor Jerry Brown, and Arianna Huffington are all fans of Deborah Szekely, who co-founded Rancho La Puerta, the fitness resort and spa located an hour from San Diego in Tecate, Mexico, with her late husband, Edmond Szekely, over 75 years ago. This spritely 94-year-old is one of the country’s leading wellness crusaders. “Thinking out of the box, seeing, being aware, enjoying little things, and then enjoying what they do. These are the things that are so important.” Szekely launched Wellness Warrior, a nonprofit advocacy organization in 2012. “Connecting people is my specialty,” says Szekely about Wellness Warrior (wellnesswarrior.org), which aims to “educate, advocate, and organize” people to better the country’s health by eliminating toxins from food, the environment, and consumer products; promote wellness education; and make healthy food both affordable and accessible. “All the different nonprofits I created have to do with connecting people because then you get strength. It’s very nice to be powerful individually, but if you can bring people together it’s lasting,” said Szekely, known as the “mother of the modern spa movement.”

Hollywood’s Secret Spa Szekely’s pioneering fitness and health resort, Rancho la Puerta, was discovered in the 1940s by Hollywood luminaries such as Burt Lancaster, Kim Novak, and Bill Holden. Today, Rancho la Puerta attracts Oprah, Robert Redford, Barbra Streisand, and the new Hollywood beauties with week-long programs, including Pilates and yoga, art classes, meditation, and cooking instruction. Szekely’s hoping to encourage a next generation of “health nuts” — a favorite descriptor for people like herself who “read labels, go to farmers’ markets, participate in a community garden, or have their own garden, and are active in taking responsibility

for their own health.” Born in Far Rockaway Beach, Brooklyn, Szekely’s fascination with healthy living was developed at an early age when her family moved to Tahiti during the early 1930s to escape the Depression. “We were the only Americans on the island,” she remembers.

Edmond Szekely Szekely met her husband, Edmond, just after finishing high school and the couple married when she was 17. “He had never bought a train ticket, never learned to type, never learned to drive because he said that it interfered with the life of the mind. He was totally impractical but marvelous and charismatic and phenomenal,” she says of their first meeting in Guadalajara, Mexico, when Edmond, the head of the British International Health and Education Center in Surrey, England, was on leave to write a book. “Everybody thought he was wonderful so I thought he was too. The minute he walked into a room, some way or another the energy of the room changed.”

Sacred Mountain Together the couple opened Rancho La Puerta, which today can run upwards of $6,500 a week; however, their first summer health camp in Tecate, Mexico, was decidedly more humble at $17.50 a week and bring your own tent. “It was years before we could buy property and it was little by little by little that we assembled the land,” she says of Rancho’s property that now spans 3,000 acres — 2,000 of which can never be developed and includes the famed Mount Kuchumaa, where Szekely’s deceased husband and son, Alex, are now buried. “When we got here, we heard some weird stories that it’s a sacred mountain and my husband said, ‘Oh, it’s just folklore,’ but after we’d been here a few years, they had a very major

pow-wow on the mountain and tribes came from all over the United States. I know that we’re here because we were meant to be here. I really believe that and the reason Rancho la Puerta and the Golden Door are so successful is because we’re on the path that we’re supposed to be on.” The lessons taught at the resorts on how to lead a healthful, mindful life, Szekely has spent the last several decades trying to teach beyond the San Diego valley. She conceived of and funded Setting Course, a Congressional management manual, now in its 14th edition, which is used by all new members of Congress on how to transition into their new role and veteran members on how to manage an established office. At 94, Szekely is today setting up programs to ensure her mindful message lives on. “I’m building for the future,” she said. Yet with all her ambition and vigor, Szekely is realistic, if not decidedly determined, about that future. “I’m not going to say I’m going to do this for the next five or 10 years because I’m 94 and I’d be an idiot,” she laughs. “I’m trying to build something for the wellness people. The property’s farm and extensive gardens were greatly expanded by Sarah, who grew up on the resort, but studied landscape architecture and ecology at the University of Oregon. While in college, Sarah became active in Oregon’s pioneering “back to the land” movement, and helped to implement a soil conservation program in Nicaragua and a permaculture course in southern Mexico, all the while honing her understanding of green technologies. But Sarah really got her feel for the land while growing up amid her parents’ natural-living ethos on the ranch in the Baja Peninsula, surrounded by nature in the foothills of Mt. Kuchumaa. “I was a nature child at heart and spent hours quietly observing tadpoles, lizards, and clouds,” she says. “We had a beautiful cottage garden, a strawberry patch, mulberry and apricot trees, chickens, goats, and horses. I learned about herbal medicine and absorbed a lot of folk wisdom,” she adds. “This love of place continues to guide me in everything I do as president of Rancho La Puerta.”

Rancho Tres Estrellas Rancho La Puerta has undergone an extensive expansion and upgrade of its infrastructure, and Sarah started the organic farm at Tres Estrellas in 1984. “Many guests at Rancho La Puerta over the years have found the farm to be a highlight of their stay, whether they visit it via a breakfast hike and garden tour, a hands-on cooking class, or simply by spending a quiet morning weeding and harvesting in the garden,” she says. “Many guests return home with the desire and commitment to plant a garden of their own.” Social Life

The Organic Farm & Cooking School The resort’s organic farm, Rancho Tres Estrellas, produces a variety of herbs, vegetables, fruits and seasonal greens used in up to 95 percent of the meals served to guests. Crops include figs, pomegranates, heirloom tomatoes, heirloom melons, several varieties of eggplant, sweet potatoes, at least five types of basil, and the “three sisters” of Mexican cuisine: corn, squash, and beans. “We have strawberries almost all year round, blackberries, all the edible flowers we can think of, and a lot more,” says the executive chef, Denise Roa. The fact that organic produce tastes better fits with the Ranch’s philosophy because you don’t need to mask it with spices and sauces. “If you’re eating seasonal you always have the best quality, the right nutrients that you need for that time of year,” says Denise. “But also, when you eat well, exercise, and practice deep breathing, then read, listen to music or do things that you love, it’ll help you have an emotional balance.” She says that emotional balance will allow you to make better decisions.

The Kitchen That Sings The fresh produce is also used in the spa’s cooking school, La Cocina Que Canta — “The Kitchen that Sings”— which is located right on the premises of the organic farm. The school offers regular classes, and also invites internationally renowned guest chefs to teach, combining their own techniques with Rancho la Puerta’s healthy, light-style cuisine. In August, the chefs David Cohen and Dan Richer and the teacher and cookbook author Barbara Pool Fenzl are all slated to hold classes. Other guest instructors have included the famed cookbook author Patricia Wells, the École de Cuisine La Varenne founder Anne Willan, and the chefs John Ash and Deborah Madison. The classes are fun as well as informative, and make for a complete culinary experience in which the students create a meal, with all of the accompanying scents and sounds and colors and steam and laughter of cooking, and then dine together. And even though it’s important to eat sensibly and healthily, chef Denise emphasizes to spa guests that preparing and eating food should be pleasurable and gratifying. “Food should not be a punishment; food should be something that you really enjoy, a reward,” she says.




In the 1980s, Sarah redesigned much of the landscaping on the ranch, and today it’s a lush paradise. Now, nine gardeners tend 32 acres of gardens, and spa guests hike along trails bordered by wildflowers like baby blue eyes, desert hollyhock, silver puffs, wild peonies, and California goldfields. You’ll take in a seemingly endless variety of plants on a stroll through the grounds. There’s even a wildflower book available in the lounge, so you can familiarize yourself with the local flora. Yet again Rancho la Puerta was ahead of its time: it was probably the world’s first eco-resort, practicing sustainable gardening and conservation techniques since its beginning.

“Everything has always been organic, dating back to the earliest gardens at the ranch from 1940 on,” says Rancho la Puerta’s head gardener, Salvador Tinajero.“The most important thing we do is keep nutrients in the soil,” he explains. “We maintain the soil by making great compost, and also by using cover crops to put nitrogen back in the soil.” The cover crops Salavdor uses are greens and legumes.The garden is separated into six sections, and the team allows each section to rest at different times of the year. They preserve as much rainwater as possible, and canals guide it to areas where it is needed the most. “In order for the Social Life

garden — and people — to thrive, we have to be in harmony with plants, the environment, and the weather,” says Salvador. That, he explains, is respect for nature. “With respect and balance we can achieve having the best and healthiest plants to give us the best produce, and the best health.”

Bird Watching Also on the grounds is the Kuchumaa Passage, a sculptural sitespecific artwork at the edge of an oak grove. The piece was created to honor Mt. Kuchumaa, which the Kumeyaay, the indigenous tribespeople of the region, consider a sacred place from which all creation sprung. Made of local brick and rock, the piece was designed to reflect the textures of the mountain. The terrain varies on the ranch, from green gardens and cactus patches to the boulder-strewn mountain trails and grassy meadows. As a lush, green oasis with flowers, trees, and water, Rancho la Puerta is an attractive stop for an enormous variety of migrating birds, including herons, egrets, thrush, doves, and mockingbirds. Seasonal bird watching is a popular activity at the resort.

Conservation: Fundación La Puerta While Sarah Livia Szekely Brightwood says that the beauty of Rancho la Puerta is her most tangible achievement to date, she is most proud of what she has accomplished as the president of Fundación La Puerta, a nonprofit organization working with local people in Tecate. One of the foundation’s most successful projects is the Las Piedras Environmental Education Center, which works with teachers and students to learn about the environment. “Over 25,000 elementary school children have attended workshops at Las Piedras. These children are now beginning to create their own wildflower and vegetable gardens in their schools,” Sarah says. During the past few years, volunteers have collected over 100 tons of trash, held river clean-up sessions, and now the City of Tecate also allocates labor and resources to keep the river clean. ag Harbor is a charming paradox. It is as low key and quaint as it is exciting and glamorous, neither undermining the other. Its history includes its role as a player in the Revolutionary War, a bustling seaport, and a thriving whaling town. It was also known as a writers’ colony, attracting the 19th-centry writer James Fennimore Cooper and the 20th-century writers John Steinbeck and E.L. Doctorow. Many of the historical 18th- and 19th-century homes of this village remain, sitting on perfectly manicured landscapes and backdropped by its impressive harbor dotted with sailboats and private yachts. It fast becomes our favorite part of the Hamptons. An incorporated village within both the towns of East Hampton and Southampton, and just a short drive to Montauk, it’s only a 10-minute ferry-ride to Shelter Island. Take a nice stroll around Trout Pond or maybe visit the Windmill on Long Wharf. Baron’s Cove

With the weather a bit overcast today, we save our beach plans for tomorrow and head over to the Monika Olko Gallery, an unpretentious neighborhood art space located in the heart of Sag. This venue features recognized artists as well as up-and-coming local, national, and international painters, sculptors, and photographers. When we return to Baron’s Cove, we enjoy sitting by the pool for a while. In the early evening, we head out to the Bell & Anchor, a waterside restaurant where the executive chef, Sam McCleland, and the chef de cuisine, Michael Swann, offer a collection of sublime and inventive American dishes. Lobster steamed or baked can be paired with turf favorites like prime steaks and chops. We sample the guava-glazed baby back ribs with baby spinach and pignoli nuts and the seafood salad of diced yellow fin tuna, cucumber, spinach, and orange with sesame seeds and ponzu sauce. Next we share the fish and chips: beer battered and crisply fried to golden perfection. We also share the butter-poached lobster tail alongside a generous portion of grilled filet mignon with green beans and fingerling

potatoes and finish with the popular root beer float with an anchor cookie playfully plopped atop, and served with straws for two. The next day promises bright sunny weather so we head over to Havens Beach on Sag Harbor Bay with its famously secluded soft sandy terrain and its calm bay waters, perfect for some leisurely swimming and wading. We stroll along the beach and catch a luxurious cat nap. Refreshed and renewed, we prepare for an evening out. The Beacon is the perfect spot to grab a drink and a bite. Perched above the Sag Harbor marina and helmed by its co-owners, Sam McCleland and David Loewenberg, this dining spot is delightfully compatible with the Sag vibe. For starters we choose delicious pork belly buns with potato bread, hoisin sauce, and pineapple cole slaw. For a main course, the signature halibut baked in parchment with sun dried tomatoes and toasted couscous is flavorful and unique. The extensive wine list allow for perfect pairing. The next day, we ferry over to Shelter Island. All summer the South Ferry runs every 10 to 12 minutes from 5:40 a.m. to 1:45 a.m.,




with a different schedule after Labor Day. This island has roughly 20 miles of coastline, ranging from sandy beaches with lifeguards to secluded spots. Each of its three town beaches has its own character. Opting for seclusion, we choose Shell Beach, a narrow stretch of land just under a mile long, protruding into the Shelter Island Sound. Accessible only by an unpaved road, Shell has no amenities. It is just right for us. Bare bones and intimate. Tonight we will stay on this tiny island and lodge at The Chequit. Recently added to the Condé Nast Traveler 2016 Hot List, this historic 37-room inn was completely renovated in 2015 by Salt Hotels, refreshing its Gilded Era vibe with a contemporary spin. The grand lobby serves as both the inn’s front desk and the venue for its complimentary breakfast served daily. Later in the day, this space morphs into a guest-only wine and Champagne lounge, ideal for a toast to good times. The Red Maple, the inn’s rustic American bar and restaurant, now includes weekend brunch and lunch service, featuring seasonally inspired menus. Some favorites here are the grilled fish tacos with red cabbage, jalapeño, avocado sauce, pico de gallo, and field greens. For a heartier choice, the pulled pork marinated in Korean BBQ sauce and topped with pickled vegetables, cilantro, and sesame seeds is tops. Not to be missed is the raw bar, including locally sourced littleneck clams from Peconic Bay. We settle in and sample it all. So much left to explore; we will be back soon. Social Life

s the days (thankfully) drag on this summer, so does the ongoing search for new, clean, healthy eats to fill you up but not fill you out. For many of us, the sound of cole slaw conjures a heap of watery white something or other with equally unidentifiable flecks of orange. This is usually the mandatory complement to a lobster roll, crabmeat roll, or bucket of something fried. And, it’s most commonly right next to a bag of not-so-good chips. All that said, the mayonaissey (yes, I made up that word) mess is often ignored and tossed in the trash. No longer. Slaw has evolved. A really good cole slaw is now a thing of rainbow beauty, a delight for vegetarians who are often satisfied enough with its density to make it their main, and a flavorful veggie side for the rest of us eager to get in our necessary nutrients. While there are literally hundreds of slaw varieties, among the most favorite are Asian inspired. With that, this month’s delight will make you wonder: what was that white stuff, anyway? Brad Stewart Surf Lodge’s Super Chef By Inna DeSilva

I

f you ever wondered how the uber-trendy Surf Lodge manages to feed a thousand people a day — and out of a tiny kitchen to boot — the answer is its chef de cuisine, Brad Stewart. The tall and handsome Australian chef is helming the busy kitchen for a third year. When we sit down on a gray Monday afternoon, he has just finished a very busy lunch and is looking forward to his day off. We speak about his love of Southeast Asian cooking and the fact that he has been in and out of kitchens all over the world since the tender age of fifteen. His first gig in the restaurant business began in his native New South Wales, Australia, at the Cypress Lakes Golf Resort. Since Brad comes from a big blue-collar family, his passion for cooking made him a bit of the family’s black sheep. With his mother’s encouragement he spent three years apprenticing in various kitchens and attending a culinary school part time. By 18, he was already working at the Four Seasons Hotel in Sydney. By 2009, he was in the United States working for the Ritz Carlton in Washington, D.C. His next couple of years took him from working at NoHo’s Public restaurant to Saxon + Parole.

In 2014, he took a break from the Hamptons and moved to Phucket, Thailand, to work at Cape Panwa Regent. He fell in love with the spices and flavors of Thai cooking. He returned last summer to work again at Surf Lodge and made sure the menu reflected Montauk’s easy access to the best seafood on the East Coast and his passion for Asian flavors. Surf Lodge goes through so much seafood, it’s is the largest client of Gosman’s Wholesale Fish Market. The restaurant’s seafood dishes are legendary, but its grilled lobster is the best I have ever had anywhere, and that includes Maine and the Caribbean. uild Hall Museum of East Hampton will present Aspects of Minimalism: Selections from East End Collections from August 13 through October 10. The exhibition features paintings and sculptures by preëminent artists associated with the movement such as Dan Flavin, Donald Judd, and Agnes Martin, along with work by artists influenced by the Minimalist aesthetic, including Joseph Beuys, Gerhard Richter, and Rachel Whiteread. Many of the works, which are on loan from major private collections on the East End of Long Island, are on public view for the first time.

Spanning six decades, the exhibition begins with work from the late 1950s just as Minimalism began to take shape in New York, and concludes with work relevant to the Minimalist aesthetic from the 1990s and 2000s. The 14 artists presented in the exhibition are Josef Albers, Joseph Beuys, Dan Flavin, Donald Judd, Robert Irwin, On Kawara, Yves Klein, Agnes Martin, Blinky Palermo, Gerhard Richter, Bridget Riley, Edward Ruscha, Andy Warhol, and Rachel Whiteread. By presenting a simplicity of form and content, art-

ists working in painting, sculpture, and installation sought to remove any sign of personal expressivity, and allow the viewer to experience the work more intensely without the distractions of overt symbolism, narrative, and emotional content. There are examples of Minimalist theory as early as the 1920s in Europe, but the movement at the time of its birth was defined by new young artists who were often reacting against the gestural excesses of Abstract Expressionism, challenging the conventional boundaries between various mediums, subordinating authorship, and calling attention to the materiality of their works.

ush Philanthropic Arts Foundation (RPAF) raised $1.25 million at its annual Art for Life benefit on July 16 at Fairview Farms in Bridgehampton. Proceeds benefited the foundation’s signature arts education and gallery programs, which have directly served tens of thousands of inner-city youth over the past 20 years. This year’s theme was “Back to the Future.”




Russell Simmons introduced the unique live auction, which consisted of selling balloons for $1,000 each to support RUSH programs. Russell started off by buying 20 balloons as he introduced the evening’s auctioneer, Star Jones. Jones kept the momentum going, raising $150,000 in just seven minutes. Guests dined on an all-vegan menu, dubbed the “compassionate menu,” created by Great Performances’ executive sous chef, Mark Russell. After dinner, Tyrese Gibson, a sixtime Grammy-nominated recording artist, producer, and author, got the crowd on their feet with his charttopping hits. He then passed the mic to Doug E. Fresh for his performances of a medley of 1980s hip hop hits, followed by a performance by Whodini. DJ M.O.S. kept the dance floor alive long into the night.

THE MIDSUMMER PARTY The Parrish Art Museum’s annual midsummer party in Water Mill is a festive social gathering of artists, art collectors, curators, philanthropists, and business leaders from the Hamptons, New York City, and beyond. In addition to guests’ dining and dancing on July 9, guests had the opportunity to preview the inauguration of Platform: Jonah Bokaer and experience the museum’s current exhibitions, including the Permanent Collection: Connections and Context. This year, the Parrish honored Barbara J. Slifka, a trustee as well as an art collector and philanthropist, for her dedication, enthusiasm, and generous commitment to visual and performing arts as well as to environmental and social causes. The exhibition features significant recent acquisitions, some of which mark the introduction of artists new to the museum’s collection as well as works that have not been shown in the current building.

ART “Big Sky Ranch is the equine component of Nova’s Ark Project, the 95-acre sculpture park and art complex in the Hamptons. The founder, Nova Mihai Popa, called this a ‘territory of spirit,’ a natural refuge for both humans and animals. Horsemen and their mounts are welcome as visitors and boarders!” – Tundra Wolf, the executive director of Nova’s Ark Project. Ailene Fields A Profile of an Artist By Inna DeSilva

Sacred Spaces represents the safe places people can escape to. The second series is Baba Yaga Eats, a cutting critique on the absurd prices manipulated by the moguls in the art world. Baba Yaga is a witch in Slavic mythology, and I certainly remember being scared by tales of her in my childhood. In this 19-piece series, Baba Yaga eats culpable artists’ works, including those by Damien Hirst, Jeff Koons, and Mark Rothko, among others. I imagined Larry Gagosian collapsing at the thought. This series is close to Ailene’s heart. She told me that “Art has become about making money. We have lost our way to impress on people an emotional response.” That’s why teaching is so important to her. “Teaching art is like a flower opening.” The third series is Fantastic Creatures, 70 pieces touching on the mythological, representing works across the spectrum of wild, fun, and fantastical. Her work can be seen at 236 West 27th Street, 9th floor, Tuesday through Thursday, from 11:00 a.m. to 4:30 p.m., and by appointment. Baba Yaga Eats Damien Hirst

ilene Fields is a professional sculptor, who has been working in New York for more than 30 years. I first learned of her work when I saw her sculptures at a friend’s house in Tarrytown. I was intrigued and asked to meet her in her classroom at The Compleat Sculptor, a supply facility at 90 Vandam Street — an institution for Gotham sculptors that is co-owned with her son Marc Fields. When I arrived, I admired Ailene’s fantastic life-size mermaid sculpture, A Parable, in front of the store and thought that it would complement any home in the Hamptons. When I descended to the basement, where Ailene teaches once a week, I was surrounded by sculptures in various forms of readiness, and I felt as if I were in a wonderland. I caught her with her afternoon students who were exploring their creativity under Ailene’s watchful eye. The quality and quantity of sculptures in the facility were breathtaking. We decided to grab a coffee around the corner, where we talked about her work, family, and upcoming shows in September. Born in Williamsburg, Brooklyn, to a Jewish family from Eastern Europe, Ailene has been interested in writing since the sixth grade. Later she studied at Lehman College, where she majored in English and minored in mythology. She met her future husband, David Fields, at the age of 10, in grade school. When she told her mother she was going to marry David one day, her mother rolled her eyes. Ailene and David will be married fifty years next March. Dr. David Fields is a prominent OB/GYN physician in a private practice on Park Avenue. They share two sons and four grandchildren. Ailene’s current and upcoming work on view includes 139 sculptures within three series. The first series is Sacred Spaces. One of the sculptures, Sanctum Fantastique, made me think of Games of Thrones’ kingdoms. Ailene explained to me that the idea for the 50-piece series came to her after 9/11.

Daniel Boulud & Herb Karlitz Tribute Dinner To Honor Roger Vergé By Bennett Marcus Emeril Lagasse The legendary celebrity Chef Roger Vergé, who passed away last year, will be honored in a tribute dinner on September 12 at The Lighthouse at Chelsea Piers. The dinner, organized by veteran event producer Herb Karlitz, of Karlitz and Company, will bring together more than a dozen of the world’s great chefs, including Emeril Lagasse and Francis Mallmann, who both considered Vergé their mentor, inspiration, and the reason for their success in the culinary world. Karlitz said that his friend and Vergé protégé Daniel Boulud has been appointed chef chair for the evening. The five-course dinner will seat only 250 guests and will begin with a cocktail hour that includes 12 walk-around chef stations, followed by a sit-down dinner. Tickets for the evening are $995 and are available at resy.com. All proceeds from the dinner will go towards a Roger Vergé scholarship at the Culinary Institute of America at Hyde Park. Celebrity Chef Events Herb Karlitz has been producing A-list events for over twenty years. Recently he produced a John Legend concert for a client, exclusively for its best customers. He is the president of Kartliz & Company, a full-service lifestyle and entertainment marketing firm, which creates unique experiences to build customer loyalty for clients. “We do ski clinics with Lindsey Vonn, or golf clinics with Hank Haney, who is Tiger Woods’s former coach,” Kartliz says. “In marketing-speak it’s retention,” he explains. He’s also an entertainment lawyer, and after finishing law school, rose through the ranks of worldwide public relations firm Burson-Marsteller to create and lead its entertainment and event marketing division, where he worked with everyone from Frank Sinatra and The Beach Boys to Bon Jovi and Stevie Wonder, and created many concert events. Karlitz has a love of food and wine, and talk about making your avocation your occupation: about 75 percent of his company’s business today is producing culinary events with celebrity chefs, many of whom he counts among his friends. “I’m very lucky in that I have found a way to basically make my career from two personal passions and interests, which are food and wine as well as cooking.”

His parents owned a restaurant, and he thinks that’s where he developed a love for all things gastronomic. Marcus Samuelsson This passion also led him to regard chefs as professionals whose job is to entertain and make people happy, similar to musicians and actors. Karlitz likes to say that he was working with celebrity chefs back when they were just called cooks. “We sort of developed this niche of working with and creating celebrity chefs before they were celebrity chefs,” he says. Karlitz was involved in one of the first-ever food and wine festivals, where, he says, nobody knew who Emeril Lagasse was. “He was just starting on Food Network. And we had about 35 major chefs who were favorites of ours, but nobody really knew chefs like Charlie Trotter from Chicago, and other now-famous chefs.” Karlitz feels that chefs, like Marcus Samuelsson, for example, becoming known, appearing on television, signing autographs, and commanding huge appearance fees is good for the culinary world. “They’re able to get people interested in cooking and not see it as going back to school, which is what I think Emeril helped pave the way for.” In the past, there was Julia Child, but today there are many personalities thanks to places like the Food Network.

Iron Chef Masaharu Morimoto In 2015, Karlitz and his close friend Marcus Samuelsson launched the first Harlem EatUp!, a three-day food festival. This year’s festival included chefs from local restaurants who teamed up with big names like Bobby Flay, Emeril Lagasse, and Daniel Boulud, who cooked alongside the chef at the famous soul food spot Sylvia’s. Bill Clinton remained an ambassador for Harlem EatUp!, and national sponsors included USA Today, Aetna, and the Bordeaux Wine Council. A portion of proceeds went to local charities. And yes, Karlitz says he is not too intimidated to cook for his celebrity chef pals at his home. When Iron Chef Masaharu Morimoto visited, he decided to whip up short ribs. here is simple magic in the ability to capture life with the click of a camera, and knowing that moment is documented forever. Just as we love looking at old photographs from other centuries, people in the future will be enamored by our photography today. Sir Ivan Celebrates His 60th Birthday By Cecilia Morales

Water mill Castle The recording star and philanthropist Sir Ivan will turn his Water Mill castle into a giant birthday cake with 60 six-foot candles erected on the ramparts and turrets of his palatial Hamptons estate. The top-of-the-chart singer has planned a sexy Hamptons party to celebrate his 60th birthday at the end of August. “I’ve made three invitations. Mainstream press gets an invitation that says it’s an Adam & Eve party. Gay press gets an invitation that says it’s an Adam & Steve party. And lesbian press is getting an Eva & Eve invitation because I want everyone to feel welcome.” The party’s dress code is ‘undress to impress,’ which means ‘fig leaves or less,’ says Sir Ivan.

“Garden of Eden” Sir Ivan has planned a musical surprise for the party’s peak. “I’m performing on top of one of the castle balconies. The entire tennis court is going to be a dance floor, not to mention the elaborate decorations. I don’t want to give it away, but you’re really going to feel like you’re in the Garden of Eden.” Sir Ivan’s smash-hit single, an uptempo dance remake of John Lennon’s Imagine, has topped charts nationwide and attracted millions of followers.

John Lennon’s Imagine Sir Ivan worked with a Grammy Award–winning producer in order to create a song that invoked peace during a wave of terrorism. In addition to the album version of Imagine, there are many additional remixes done by a variety of DJs from all over the world. The most popular one on the radio and the one receiving thousands of downloads and streams on iTunes is called the 7th Heaven Radio Mix. However, Sir Ivan’s sole goal wasn’t to create a Top 40 favorite. For him, the iconic ballad is a call for harmony and amity, something that is personal to the musician’s past. “I picked that song because my late father [Siggi Wilzig] was an Auschwitz survivor and 59 of my relatives were murdered by the Nazis during the Holocaust,” he said. “That’s the reason I chose to remake all the iconic anti-war songs from the Woodstock days. On my new album, ‘Peaceman Shines,’ I went back to the ’60s and early ’70s, because it was an important time in history when people woke up and were especially concerned about human rights and social issues.”

The Peaceman The Peaceman’s revolutionary activism is being carried out today through Sir Ivan’s dedication to the LGBT community and others that suffer from PTSD. “I did an anti-bullying song when I found

out that the attempted suicide rate in the teenage LGBT community is three to five times higher than the straight teen group,” Sir Ivan continues, “It was to bring awareness to the bullying problem to begin with and how severe it was for LGBT people.” However, Sir Ivan feels that the future looks promising for today’s young people. “The younger generation is much more tolerant than the older generation when it comes to sexual preferences and ‘what’s normal,’ ” he said. “It’s sort of like they’ve learned by themselves, fortunately.” The Peaceman Foundation and Sir Ivan have contributed over $500,000 to many different nonprofits since the charity’s founding in 2005. In addition to the LGBT community, he also gives to other organizations. “I support the Wounded Warriors and the soldiers fighting for us to be free,” said Sir Ivan.

Erotic Art Museum In addition to his music, Sir Ivan owns a vast collection of erotic art, in all mediums and across all time periods and cultures. “My mom [Naomi Wilzig] passed away last year so my brother, sister, and I inherited the World Erotic Art Museum in South Beach,” he said. “It’s the largest privately owned collection of erotic art on display in the world. UndERSTAndInG THE EConomIC CRISIS In vEnEZUELA By david Byrne

Venezuela is running out of everything. Meat, milk, vegetables, medicine, and even toilet paper are in short supply. Markets that do have food are looted. Even the military has been subduing riots. The most obvious culprit is declining oil prices. Venezuela sits upon a large oil reserve and oil exports have historically fueled the nation’s economy. In boom times, the government has gone on spending sprees. Much of Hugo Chavez’s socialist programs were funded by surging oil prices. These programs expanded lowincome housing, improved education for the poor, and funded pay raises for government workers. But history teaches us that oil prices are never stagnant. The inevitable decline led to lost revenue for the government, so investment in the public sector decreased. Sagging oil prices can’t be solely blamed, however. Other countries such as Saudi Arabia rely on oil exports to fund their nations, and they aren’t rioting. Government mismanagement has exacerbated the crisis. In 2010, Chavez promised to advance revolutionary socialism and end the “bourgeoisie state.” True to his word, Chavez’s government seized control of credit firms and over one-million acres of land in his effort to promote communes, which he hoped would be the fundamental unit in the new socialist state. He took control of thousands of private corporations, such as the American bottle maker Owens Illinois, in the name of the “public interest.” But the new government-run economy hasn’t produced goods as efficiently as the private sector. Supply of basic goods declined, leading to higher prices and inflation. Attempting to help, Chavez established price-controls. This was good for the Venezuelan consumer, but producers suffered because they could no longer afford to make basic goods due to such low prices. Normally, this would lead to more imports, but reduced oil prices had already diminished buying power. The situation grew more dire. The death of Chavez in 2013 changed nothing because he was

replaced by his protégé, Nicolás Maduro. He continued Chavez’s socialist policies, so the government controls most of the economy at the macro-level. Maduro has resisted cutting government spending, despite declining revenue. Instead, he has tried unorthodox ideas such as changing time zones to increase daylight working hours, thereby reducing electricity use, and cutting the government work week from five days to two, again to save electricity. Yet the fiscal impact has been minimal because he hasn’t cut salaries for workers, despite reducing their workload. The main result was an even less productive workforce, further reducing the supply of basic goods. Maduro has begun using the military to combat food shortages. Across the nation, soldiers have helped distribute goods in a more orderly fashion, giving them a more prominent role in society. This increased military presence may be a last-ditch effort for Maduro to stay in power. His popularity has plunged and his current position is tenuous; a recall effort has garnered two million signatures. Possibly in response, Maduro created new a political position that can be described as a co-president. He filled it with Defense Minister Padrino Lopez. Maduro may be preparing for a violent struggle. The Maduro government insists that right-wing agitators have created the crisis in an effort to undermine the left-wing government. The United States government — seeking oil access — has fomented revolts, Maduro contends. Most analysts agree that the future looks bleak for Venezuela and things will probably get worse before they get better. The unlikely best case scenario is one that ends peacefully. Saving the Orangutan By Tom Fischer

Orangutans are a species of primate native only to the islands of Borneo and Sumatra, the former divided among the countries of Indonesia, Malaysia, and Brunei, while the latter belongs to Indonesia exclusively. These islands are home to dense rainforest teeming with life, many species being unique to the area. However, these rainforests are being cleared en masse in order to access ore deposits, to create pastureland, and to produce palm oil plantations. While the tapping of these rainforest resources has led to an economic boom in Indonesia and Malaysia, the largest and third-largest economies in Southeast Asia, respectively, this growth has come at the cost of heavy environmental degradation, regional pollution, and habitat destruction. Tin mining involves complete deforestation of the mine’s vicinity and involves burying

fertile topsoil under excavated, acidic soil; moreover, the mining pits collect water and become breeding grounds for mosquito-borne illnesses like dengue fever and malaria. However, tin mining is hardly the only destructive industry that has increased the prosperity of these nations. Indeed, tin mining is a relatively small portion of the Indonesian economy and an even smaller portion of the Malaysian economy, particularly when compared to oil exploration, coal mining, and palm oil production. The latter of these three is particularly injurious to the environment, and particularly damaging to the orangutan. Palm oil is the world’s most widely used cooking oil, and is used in everything from foodstuffs, cosmetics, biofuel, pharmaceuticals, and industrial products. The oil palm bears fruit called kernels, which are processed to produce the oil. Social Life

A new tree bears fruit after three years, and the point is often raised that oil palms are highly space-efficient in comparison to competitors like soybeans and rapeseed, producing almost forty percent of the world’s vegetable oil on about five percent of the world’s land. However, while palm oil is a lucrative product for Indonesia and Malaysia — the substance accounted for over six percent of Malaysian exports in 2014 and over seven percent of Indonesian exports in 2012 — vast swaths of land have been cleared of carbon-filtering jungle, jungle that encompasses the habitats of many unique species that are found only on Borneo and Sumatra. It is apparent that the growing palm oil industry is a boon to both Indonesia and Malaysia, the countries that occupy the largest portion of Borneo. Brunei has chosen to preserve its forests. The reckless abandon with which forests have been cleared to create space for oil palm plantations threatens to irreversibly harm one of Earth’s most unique ecosystems. Among species directly threatened by this loss of habitat are pygmy rhinoceros, pygmy elephants, orangutans, tigers, and countless other species less likely to appear on tote bags. Plainly, the further loss of fauna is troubling, but the potential further dwindling of orangutan populations is particularly worrisome considering the great intelligence these primates display. Orangutans are known social creatures, with an intensive mother-child relationship unlike any other species aside from humans in its depth and length; moreover, orangutans are capable of great learning and adaptation, with one orangutan photographed seemingly attempting to spear fish. Their use of tools extends to making shelter of leafy branches in rainstorms, using eating utensils, with some orangutans even being taught to make stone hand-axes in captivity. At certain zoos throughout the world, orangutans are allowed to play on iPads, which the group Apps for Apes says is an excellent way for these intelligent creatures to stimulate their minds. According to the founder of Orangutan Outreach, Richard Zimmerman, as interviewed by Dave Lee of the BBC, orangutans love to watch videos and paint on iPads held for them by zookeepers — the tablets are too fragile for the orangutans to handle themselves.

Given that the forests of Borneo and Sumatra are the only habitat of orangutans, a highly intelligent primate species closely related to humans, it seems that the current attitude towards the expanding palm oil industry and crucial mining industry by both the governments of Malaysia and Indonesia is short-sighted and fails to take into account neither the critical need to protect a corner of Earth rich in biodiversity nor the moral duty we have to an intelligent species threatened by economic imperative. If you would like to help preserve the rainforest habitats of Borneo and Sumatra and the unique array of life therein, avoiding palm oil altogether would be impractical due to its current ubiquity. Instead, avoid unnecessary palm oil consumption and consider donating to a worthy charity, whether that charity is focused on workers’ rights in Indonesia, habitat preservation in Malaysia, or simply donating an iPad for a bored orangutan to draw on. An iPad allows for orangutans living in captivity to exercise their brains in ways previously not possible, and therefore create a more enriching environment for orangutans to live in. The jungles of Borneo and Sumatra are dangerous places where orangutans must use all their wits and knowledge to survive, which is why orangutan young spend up to eight years dependent on their mothers and continue to visit them regularly up until sixteen years of age; however, the relative safety and boredom of life in a zoo result in behavioral problems such as irritable and violent attitudes or depression, which is why animal enrichment toys are so crucial for any zoo. However, orangutans being as intelligent as they are, makes them less easily entertained than other creatures like bears or lizards, which generally just require special snacks to pique curiosity and foraging behavior. Therefore, iPads make a wonderful donation to zoos with orangutans; the zookeepers play videos for them and have them play games through the bars of their enclosure.
