BUSTER GRANT The Chairman’s introduction Welcome to BeerX and our fabulous new home at Liverpool Docks. Twelve months ago I took up the role of SIBA’s Chairman, and it’s been an extraordinary year - far more has happened than I ever imagined and the balance between running my brewery and leading SIBA has definitely been tested at times! However, looking back, I’ve definitely enjoyed the year - I’ve certainly learnt a lot; I’ve met a huge number of people; I’ve had the great pleasure of attending a number of the Regional Competitions (something I thoroughly recommend to all members), and I’ve faced a number of challenges. I thought I’d use this page to highlight some of those that have stood for me this year. The Budget - I genuinely thought we were in trouble this year. The Chancellor’s previous statement seemed to indicate the return of the much-hated Duty Escalator. I feared the worst and was frankly amazed to hear that concerted lobbying by SIBA and the One Voice coalition had borne fruit - a no-change budget. I’d like to take this opportunity to extoll the virtues of James Calder, SIBA’s Head of Public Affairs. His impact on SIBA’s political standing has been extraordinary and I wonder how we managed without someone in this role beforehand. The acquisition of Flying Firkin - I know this is a contentious issue for some but I genuinely believe this represents a real opportunity for both SIBA and its membership. I was reminded

at the last Board meeting that in 2014 the members survey (completed by well over 50% of the Membership) suggested that 48% of members wanted SIBA to act as a Wholesaler. In fact, I had forgotten entirely about this part of the survey which asked members to suggest what they wanted SIBA to deliver - it’s very interesting to see how our Strategic Plan and the Four Pillars are delivering those suggestions. The challenge to Progressive Beer Duty - at last year’s AGM, Rupert Thompson eloquently put his case for a Treasury Review of Small Breweries’ Relief (SBR). That motion was defeated but SIBA has been in talks with the Small Brewers Duty Reform Coalition (led by Rupert), the BBPA and CAMRA to see if we can collectively find a solution to the problems that the current SBR scheme inflicts on us. The political reality is Ministers and the Treasury are positively keen for the Industry to propose the way forward - an extraordinarily rare occurrence in industry and politics. The talks are challenging, but a huge amount of progress has been made and a number of agreed proposals identified. Much of this is included in the new SBR model and proposal agreed by the Board in October. The talks continue and I firmly believe that SIBA will be able to achieve meaningful and agreed changes to SBR to improve the scope for our members and invest in jobs and growth. The Industry appears to be a much tougher place than it was twelve months ago. Is this

because we have more breweries than ever? Is it because there is such a high tax burden on breweries and pubs? Is it because there is significant downward pressure on the price of beer in the trade, and if so, who is causing this - small brewers or global giants? Many questions, with I suspect, many conflicting answers. How can SIBA help its members at this time? My belief is that SIBA, as a Trade Association, should encourage its members to be as professional, aspirational and successful as possible. Amongst other things, SIBA should provide commercial opportunities. These might not suit all members, because we all have different business models, but these opportunities wouldn’t exist without SIBA. SIBA should provide tools to enable businesses to better themselves, whether these be systems for understanding and improving Quality Assurance; for understanding costs and maximising commercial benefit; or improving technical knowledge and training. There’s a lot going on, but I believe the future is good for SIBA members. Enjoy BeerX - I know I will. Cheers, Buster

I am very happy to welcome you to BeerX 2018, the first at this wonderful new venue, after five great years in Sheffield. We are very pleased to be here in Liverpool. SIBA’s flagship event is dedicated to independent brewing as the key component in the future of British beer. It provides a unique opportunity to submerse yourself in a feast of activities, debates, seminars, speeches and networking; all designed to inform, inspire and generally help you develop your business and gear up to sell even more beer in the coming months! Britain’s independent brewers are claiming back the British beer market and SIBA - and BeerX - exists to help you be a part of the ongoing beer revolution. Our market presents many challenges, but the

consumer demand for great craftbrewed beer continues to build momentum creating a world of opportunities for all our member businesses. BeerX is also where SIBA celebrates the best in British beer with our National Independent Beer Awards and the SIBA Business Awards. I hope the winners will inspire you. We are very grateful for the support of all our exhibitors. Our exhibition is bigger and better than ever before. Make sure you take the time to get the most out of it for your business. This new product is a blend of active dry yeast and enzymes. It is part of our yeast portfolio designs for beer production. SafAle™ HA-18 is recommended for the fermentation of particularly high gravity worts and the production of attenuated beers with high ABV degrees, such as « Barley Wines ». The yeast strain in this product is able to reach 18% alc. (v/v), with a very good resistance to the osmotic pressure and high fermentation temperatures. Enjoy!

Shortly after she found the brewing industry and hasn’t looked back! Fran has now worked for Murphy & Son Ltd in Nottingham for the last 14 years. She started in the Quality Control Department as a Laboratory Technician, analysing brewing liquor and providing countless brewers with their liquor treatment recommendations over the years. From here she gained the role of Technical Administrator and is now a Technical Sales Representative and first point of contact for many brewers coming to Murphys for technical advice.

the cellar Will Rogers was born in Herefordshire to Hop Farming parents. His family stopped growing hops when he was five years old but as the old saying goes “once you have been scratched by the hop it is always in your blood!” Will studied Computer Systems Engineering at University and embarked on a career in the field soon afterwards, working for a local Computer Services company and working his way up from technician to Engineering Manager. After 10 years, hops came back to bite him after a discussion with Paul Corbett, in a pub, over a few pints about the hop industry and opportunities within it. Keen to get involved with the hop industry once more, Will joined Charles Faram in September 2008. In 2009 he became Sales Manager and in April 2015 became a Director of the Company. Will also coordinates the breeding program for Charles Faram, looking for new hop varieties to expand the range of flavours available from British hop farms.

The Code ensures that large supermarkets treat their direct suppliers lawfully and fairly. Ms Tacon has a portfolio career combining commercial expertise with an understanding of the public sector. How do you know if your beer is contaminated or not? What kind of control and procedure suits your production scale to assure the quality? But not all the brewers have a clear picture of what is happening on a micro scale and how the beer spoiling bacteria is influencing the quality of their products. Some bacteria are able to offer a high risk to the sensory quality of your beer and must be monitored and controlled, in order to avoid the damage to the image of your brewery and the escape of your consumers. During this quick presentation, we will show you some monitoring practices adequate to the craft brewery reality and how to see the microbiology in a more practical and objective way.

He is the author of eight books and wrote the annual Cask Report for its first nine years. Led by Brewhouse & Kitchen, members of a 25 strong brewer/producer partnership supported by BBPA, SIBA and IBD has developed the framework for a new apprenticeship programme that will serve as the platform for a level 4 occupational apprenticeship for brewers. The new Apprenticeship has been developed to recalibrate a professional infrastructure that currently does not progress beyond level 2, ensuring it meets the needs of a growing industry. The Trailblazer is a step towards creating a better career pathways for people who have a passion for learning about beer, ensuring future brewers can be educated to the highest industry standard and bolstering success for the industry as a whole. This presentation will summarise the steps taken by the employer group to developing the new Apprenticeship as well as some details about the framework itself and what potential apprentices can expect. Members of the employer group will be present to answer questions and talk further about this exciting new educational route for the sector.

Established in June 2013, the GCA encourages, monitors and enforces compliance with the Groceries Supply Code of Practice (the Code). The Code ensures that large supermarkets treat their direct suppliers lawfully and fairly. Since the GCA was established in 2013, there has been a transformation in both the culture of the sector and the behaviour of the retailers in the UK. There is more work to do be done and supermarket suppliers could benefit from a better understanding of what is covered by the Code; the GCA’s last annual survey in 2017 showed that awareness of the GCA in the alcoholic drinks sector was was particularly low compared to other product sectors. This seminar provides an exciting opportunity for you to learn more about the GCA’s role, how she is making an impact in the sector and key updates on regulatory activity.

For us as a brewery standards and systems are a top priority and we work on the mantra of “your only as good as your last pint”. The FSQ has helped reinforced that our systems are appropriate for the task, and give us a clear plan to work with. Beyond that we have used the FSQ to gain new retail clients and also when audited by retail clients a simple inspection of the audit usually ticks all of their boxes. We have definitely gained and retained business by being part of this scheme.

A quarter of the brewers in our survey have a tap bar and almost 40% have a shop so local sales to the community are clearly a key part of their businesses, and a further 11% had a visitor centre. A quite surprising 27% say they had none of these on-site sales facilities though, although many brewers use an existing local pub as their unofficial tap bar until the business can afford these kinds of investments so even these brewers are still likely to be making substantial local sales. For those that have taken the leap and invested in a tap, shop or visitor centre, it looks to be good for their business, with over 30% of respondents reporting this local facility now accounted for over a quarter of their trade.

Picture this scenario. The crowd is five deep at the bar. Everyone is rushing to buy a drink in time for the National Cheers To Beer we hold on the day at 7pm. But it is impossible to read the pump clips properly through the crowd because the typeface is too small. With no time to ask the publican to describe the beers or request a sample, people’s eyes scan the hand-pumps. They ignore the cartoon image of a large breasted woman (is this a beer pump clip or a top shelf magazine?) and the one with the cheap office laser-printer label, figuring that the beer will be poor quality. Under pressure their eyes rest on one with greencoloured branding. They buy a pint, take a sip and are disappointed – they wanted English not New World hops. At around 6000 genes the Saccharomyces genome is small compared to other organisms but knowledge of their function is increasing rapidly. Genetics will undoubtedly become more prevalent in brewing but it isn’t necessary to install a full molecular biology laboratory in your brewery. Isolating local yeasts is increasingly common with prospects of finding a novel microbe in your nearby vegetation.

But even then, the beer that had been a favourite of everyb from dockers to dukes for more than a hundred years was decline. In 1823, porter output in London hit 1.8 million b after a continual rise that had lasted 50 years. But this wa peak: by 1830 porter production would be down 20 per c on its 1823 level. What was replacing it was mild ale, ma quick consumption, slightly stronger than porter, pale in co unaged and therefore sweeter, less acid than porter. In the early 19th century, ale brewers and beer (that is to porter and stout) brewers were still different concerns in Lo with the ale brewers much smaller than their rivals. Only the oldest pub-goers today can remember a time when the British beer market was not dominated by lager. Today almost three pints in four of all beer drunk in Britain are of the bottomfermented variety. But that dominance was achieved from very tiny beginnings: in 1960 lager sales in the UK were less than two per cent of the total. Instead, the dominant beer style was one that has almost vanished today: mild. In 1959 draught mild was 42 per cent of all UK beer sales, six pints out of every 10 served on draught, and turning over 10.3 million barrels a year.

What of more advanced and developed products? There is plenty of interest today in nutraceuticals – beverages with enhanced nutritional benefit either for health or fitness with increasing studies showing their impact on sports performance. Many producers are small companies with products focused on addressing health concerns of cardiovascular, obesity, cognitive abilities or on enhancing sport performance.

Benjamin Franklin once wrote to a friend that there were two certainties in this world: death and taxes. He missed at least two more certainties, however: that language changes – or we would all still be speaking the English of Alfred the Great – and that tastes change, too, or we would all still be drinking the same unhopped ales Alfred the Great drank.

Perhaps someone from UNESCO would care to join us. Roger Protz is one of the world's leading beer writers, historians, lecturers and tasters. He is the author of more than 20 books on the subject, including 300 Beers to Try Before You Die, one of the biggest-selling books of its kind. He has edited more than 20 editions of the annual CAMRA Good Beer Guide, was named Glenfiddich Drink Writer of the Year in 1997 and 2004 and in 2003 was presented with the first-ever Lifetime Achievement Award from the British Guild of Beer Writers. He has won two Gold and six Silver Tankard awards from the Guild and 13 awards from the North American Guild of Beer Writers.

He has a reputation for straight talking, and is loved and loathed in equal measure by suppliers for the huge volumes of product he shifts, and the low prices that are a key mechanic of his business. But he has achieved this enormous commercial success whilst retaining the immediately engaging, softly spoken, laid back character of the keen surfer dude he once was - and evidently still is at heart. AndF SPECIAL having left his desk firmly behind in his role as Chairman, Martin now travels the UK visiting at least a dozen of his own sites each week to keep an eye on trading and see what is going on at the coal face of his estate – not many of his peers can say the same. The outspoken pubco boss, who has most recently been grabbing headlines with his views on both Brexit and the fight for tax equality for pubs, spar SIBA Journal’s Editor Caroline Nodder half an hour of his time to talk craft beer….

Fresh from a visit to Liverpool, Tim Martin strolls casually through the doors of the Shakespeare’s Head in Holborn, central London, as if he owns the place. Which of course he does. Brand protection is more important now than it has ever been. The difficulty of finding a new catchy name in such a crowded market is causing brewers a huge headache – and likewise keeping the lawyers busy. Only last month Californian craft brewer Stone Brewing took on Canadian giant MillerCoors, arguing that the rebrand of its Keystone Light beer infringed its own rights in the name STONE. Meanwhile, last year in Belgium InBev failed in its attempt to stop Aldi's Buval Beer which it alleged copied and infringed its Jupiler beer. It wasn’t all quiet in the UK either, as BrewDog overturned the UKIPO’s earlier decision and were finally allowed to register BREWDOG ELVIS JUICE, despite serious opposition from the estate of Elvis Presley. And that’s only looking at the beer v beer battles – there are plenty of other disputes going on involving beer v soft or other alcoholic drinks, where there can also be scope for confusion and argument. So how do you protect yourself? How do you stop someone else copying your brand? And how do you even know who or what is out there?

But why are many breweries not engaging with this activity, which is generally free! 84% of consumers want to discover new beers and they use their mobile phones to find them. 45% of consumers would try more new beers if they knew more about them. Beer applications are super targeted and efficient engagement channels for breweries to talk with beer drinkers. They should be part of every breweries marketing mix.
