The entry of a mass of cold air from the north will bring real winter temperatures. The cold air will arrive with sunshine but wind so it will feel colder than the thermometers show. From Wednesday more cold air is expected to arrive which will make it even colder.

The predictions indicated the temperatures would drop to about zero or even below in places inland such as Vega Baja during the second half of the week. But we have to ask will it snow near here? During the first half of this episode of cold we are talking about practically

clear skies so no snow. But the prediction models point to the second cold front, in the middle of next week, being damper and there could be precipitation at very low altitudes. Some of these models even predict snow at sea level.

San Javier airport workers take their grievances over possible redundancy to Congress The employees at San Javier maintain that the new airport in Corvera is unviable Employees at San Javier airport currently live in constant fear of losing their

jobs, a threat which was underlined this week when Pedro Antonio Sรกnchez, the president of the regional government, said that he wished to close the facility to civilian traffic as part of the ongoing plans to open the new airport in Corvera.

A spate of attempted burglaries have hit the Dreamhills area of Orihuela Costa. The incidents have been occurring during the daytime and also early evening. Two men aged approximately 35 years have been identified by numerous witnesses. One is tall and thin with short cropped hair, whilst the other is of a shorter and stockier build. Security around the area, has warned people to stay vigilant and inform the police of anything suspicious.

Cambiemos Orihuela spokesman Carlos Bernabé has revealed that the private company that provides the water service in the municipality, Hidraqua is getting free use of two public buildings to carry out its business.

“There is no trace of an agreement or any financial compensation for the Town Hall,” he said. One of these premises is an office in the Orihuela Costa Town Hall and the other is the Palacete

de Mejías which is Hidraqua’s main headquarters in Orihuela. This building has 250 square metres on the ground and upper floors and is worth half a million euros, “but apparently costs the company nothing”, explained the

councillor. Bernabé reminded that the company moved to the Palacio de Mejías in 2005 when the Town Hall let it use the building after Hidraqua carried out work on it for over one million euros.

The tender of the service for the management of the Centre for Animal Protection of Orihuela has put animal warriors on the warpath after learning that the municipal shelter could be left in the hands of a private company instead of being linked to a protector, as before. The award process is in the hands of the technical table and its opinion depends on who will assume the facilities during the next four years, with a budget of up

Wine NEWS banned as it’s the wrong colour When five young Spaniards came up with the idea of marketing a blue wine, it was dismissed by Spain’s traditional vintners as a gimmick that would never take off. Since launching on the market last summer, Gik has shaken up the industry and sold close to 100,000 bottles to clients in some 25 countries, but now, the producers have been told they cannot market their produce as ‘wine’ because it is the wrong colour. “It is absurd because its composition is 100 percent grape,” explain the entrepreneurs.

Ex Governor hopes to lead Patxi Lopez, a former governor for the Basque region of Spain, says he will run in the Socialists’ leadership primary and hopes to lead the party to a national resurgence. Lopez made his announcement on Sunday in Madrid and is the first candidate to formally enter the race. The primary will be held in May to determine the Socialist leadership that was left vacant last fall, when Pedro Sanchez was forced out after losing consecutive presidential elections to Mariano Rajoy’s conservative party. Spain has been in a state of political instability since two elections in a sixmonth span left Rajoy as prime minister but short of a majority and in need of alliances. The Socialists, one of the country’s major political groups, are also in disarray after two disappointing election defeats.

Police seize 10million€ cache of black market weapons

Spanish police have seized 12,000 firearms worth more than a staggering 10million Euros including heavy machine guns capable of shooting down a passenger jet. The terrifying cache featured military assault rifles, heavy machine guns and an assortment of handguns. It is understood members of the gang legally purchased decommissioned firearms and then returned them to full operation in an illegal gun shop. It is understood the killers in the Charlie Hebdo attack used a similar method to secure firearms. Under-cover agents from Bilbao, Girona, Barcelona, Santander and Valencia were involved in the investigation. Once the decommissioned weapons were legally

sourced, they were taken to a ‘sophisticated workshop’ in Guecho and reactivated. A spokesman for the Spanish Government said: “This modus operandi used to purchase weapons is the same as the one used for the attacks carried out in Paris on January 7th, 2015, against employees of the satirical weekly “Charlie Hebdo”, in which 12 people were killed and another 11 injured, all with recommissioned weapons acquired at the time from a Slovak gunsmith.’ The Spanish Government says police are continuing to crackdown on the illegal sale of weapons to organised crime gangs and terrorists. The police operation is being supported by EUROPOL, which has provided specialists to the team working in this area.

Scotland’s First Minister, Nicola Sturgeon, has indicated that she may call a second independence referendum if the UK government pursues a ‘hard’ Brexit. Paul Anderson writes on the options for Scotland, and the role Spain could play as it seeks to deal with its own secession issue in Catalonia. He states that it is unlikely a special deal for Scotland will be possible during

the Brexit negotiations, but that Theresa May would be wise to avoid making the same mistakes in dealing with Scotland that the Spanish government has made in Catalonia. The threat of secession looms large in the United Kingdom and Spain. In Scotland, despite the vote to reject independence in September 2014, the constitutional issue is far from

World leaders

Spain has been the world leader in organ donation for the last 25 years and in 2016 it broke its own record for the number of transplants carried out. But how has Spain done it? A total of 4,818 organ transplants were carried out in Spain during 2016, beating the record of 4,769 from the year before, according to new data published by the National Transplant Organization (ONT) this week. Of these, 2,994 were kidney, 1,159 were liver, 281 were hearts,

307 were lungs, 73 were pancreas and four were intestines. It means that Spain saw 43.4 individual donors per million people (pmp) in 2016, an increase from 39.7 pmp in 2015 and 36 pmp in 2014, “much higher” than the EU average (19.6) and the US average (26.6) according to stats published by Spain’s Health Ministry.Spain has maintained its gold standard in organ donation despite deep austerity cuts which saw public spending on health slashed during the economic crisis years.

Barcelona may cater more to younger expats moving to Spain, due to its popularity among European exchange students, its international flair, and largely touristic ambience — tourism makes up roughly 14% of Barcelona’s economy (2015). It’s also a bilingual and bicultural city, which may make moving to Barcelona easier for some expats. Before worrying about paperwork and taxation, you need to apply for an NIE (Número de Identificación de Estranjeros), the identification number for foreigners, regardless of whether or not you require a work visa. The application for a NIE is not very complicated. It simply requires you to bring a completed applications form (EX-15) and a copy, your passport and a copy, a passport-sized photograph, and a proof of your current address in Spain to the nearest

Oficina de Extranjeros. It should take up to three weeks for your NIE to arrive. Taxation in Spain Non-residents get taxed on any income arising in Spain. If you are a resident, you will be taxed on your worldwide income, but you may deduct any income tax paid back home. If you are a non-resident the Impuesto sobre la Renta de no Residentes (IRNR) applies to you. Residents need to look into the Impuesto sobre la Renta de las Personas Físicas (IRPF). The IRPF regulations were changed in 2015 and the easiest way to get an overview of your financial situation in this respect is by using an online

calculator. Foreign nationals who are neither EU-citizens, nor nationals of a country with a special agreement with Spain, are required to pay taxes in Spain. Due to the fact that these tax regulations again differ based on country of origin, please see the relevant brochure of the Spanish tax office for detailed information.

The requirements differ by country of origin and type of employment. For example, if you come from the United States to work in Spain, you must contact the Internal Revenue Service in the States for more information, or, if the legalese doesn’t scare you, take a look at the Income Tax Convention with Spain. That’s 7.2 million more than in 2015, for a rise of 9.9%, according to early figures from Spain’s Energy and Tourism Ministry. Visitors to Spain in 2016 shelled out a total

of €77 billion, up 8.3% from 2015 figures, while average per capita spending was €1,023 for a more modest rise of 3.75%. The average daily amount spent by visitors was €138, some 6.5% higher than a year earlier. The lion’s share of foreign visitors to Spain came from the UK, France, and Germany. A total of 16.9 million Brits made

their way to Spain last year, 12.3% more than a year earlier, evidencing that Brexit is not denting visitor numbers at all. The tourism industry has been an important driver of Spain’s economy over the course of the crisis. It contributes more than 10% to GDP and provides 11% of jobs.

The government has doled out €6,342,854.96 to Utility giant Gas Natural Fenosa, which was granted permission to store underground gas at fragile Donana National Park. What is belly fat and how can you easily shift it?

Women suffer much more work stress than men

Women suffer considerably higher levels of work-related stress, anxiety and depression than men, with workplace sexism and familial responsibilities providing additional career pressures, a leading psychiatrist has said. It comes as official figures show that women aged 25-54 are more stressed than their male colleagues, with this pressure peaking for those aged 35-44, when many women are juggling family responsibilities, such as caring for children and elderly parents. Dr Judith Mohring, lead consultant psychiatrist at Priory’s Wellbeing Centre in the City of London, said women were

under constant, intense pressure, with company restructuring, lack of managerial support and balancing work and family life leaving them feeling drained. Women faced additional workplace pressures, such as having to prove they were as good as men, not being valued or promoted, unequal pay, and being expected to “look the part”, added Mohring, who treats many female professionals. Female managers in male-dominated fields sometimes found the strain intolerable, and their stress levels were also rising because families were more reliant on their income, she added.

Did you know that some body fat is worse than others? When I was a trainee surgeon, the fat that was on the inside, snuggled around the organs, was a glistening yellow, with a healthy blood supply. But these internal fat deposits are now accused of being health hazards. Like all sinister things, they go under various names – visceral, intraperitoneal, active or belly fat. And we’re not talking about “love handles” of subcutaneous fat beneath our skin. Visceral fat is linked to a higher risk of insulin resistance and diabetes. These, in turn, increase the risk of strokes, heart disease and some cancers. It is not completely understood how visceral fat makes the body resistant to insulin (and hence allows blood glucose levels to rise). One theory is that the liver and muscles become less sensitive to insulin when there are higher circulating levels of fatty acids, which occurs when you have a deposit of fat inside. Fredrik Karpe, professor of metabolic medicine at the Oxford Centre for Diabetes, Endocrinology and Metabolism, explains: “The turnover of visceral fat is more dynamic; if you don’t eat, then it reduces much more quickly than other fat depots. But visceral fat does something nasty.” Hip and leg fat accumulates slowly and is released slowly. But Karpe points

out that, in terms of its evolutionary role, visceral fat generates a massive supply of energy from fatty acids when it is desperately needed. But, with our more sedentary lives and increased food intake, it now leaks fatty acids, whether we need them for energy or not. If we are apple- or pearshaped may depend on how our genes are expressed rather than any one gene defect. Karpe warns that, as well as diabetes, belly fat can cause sleep disorders, as it’s the equivalent of sleeping with a football inside your abdomen. This pushes your lungs up and can disrupt sleep. The good news is visceral fat is so dynamic that you can shift it. You just have to eat less and exercise more – about half an hour a day of quite vigorous exercise should do it. If you can’t exercise without eating more, then just eat less: you need to have a negative energy balance for your belly to melt away. But there is a handy way to see if you have a problem: measure your waist and then your hips (around the largest point) and divide the waist by the hip. If the resulting number is more than one for men or 0.85 for women, then you may have too much. You are excused from sit-ups – all they will do is help your abdominal muscles keep the fat in – but you should strive to shed it in other ways. Karpe is very clear: “It’s unwanted and you can’t have too little of it.”

Don’t lose your snooze: the technology that’s promising a better night’s sleep

A “waterbased, app-controlled mattress topper”, which will encourage deep slumber. Sleep technology is one of the biggest trends at CES, the world’s premier electronics show, which opened to the public on Thursday. The range of products on show reflects the growing interest in solutions to insomnia and other sleep problems – as well as the predictions that the global sleep market will be worth 55€bn by 2020. The mattress can detect a change of body position during the night and uses air chambers in the mattress to contour to the sleeper’s frame. Sampling the bed, a reporter was promised “the most comfortable, effortless sleep” of his life. A video explained

that the Sleep Number 360 bed is “even smart enough to sense snoring before you do”. Should it detect a snorer, the bed will raise the top of the mattress by 7%, which Sleep Number claims will stop the snoring. “It’s the only bed that goes to work when you go to sleep,” said Kelley Parker, senior product brand manager at Sleep Number. The bed is able to detect the sleeper’s heart rate, breath rate and motion, to provide an excellent premium sleep experience, Parker said. It can adapt to two different sleepers’ positions. But this kind of sleep, it seems, does not come cheap. Parker said that “pricing is not finalized” but that it would be similar to existing Sleep Number pricing. (The manufacturer’s top-ofthe-range bed retails at 5,000€.)

The Railway Man by Eric Lomax

“Sometimes the hating has to stop.” Engraved on Eric Lomax’s tombstone. The film was premiered at the Toronto International Film Festival in September 2013 and released in the UK in January 2014. Directed by Jonathan Teplitzky and starring Colin Firth, Nicole Kidman, Jeremy Irvine ( War Horse) and Stellan Skarsgard. The book was published in 1995 and it was a lifelong ambition of Lomax’s to retell some extremely harrowing stories of POW beatings and torture during the second world war. The film captures some of his enthusiasm for the railway and his childhood fascination with locomotives but fails to show his passion although the book is far more successful. In other ways too. Eric was an officer in Singapore until its fall and then he became one of many POWs to be sent by the Japanese to work on the Thai-Burma railway, known as death railway because of the high number of fatalities. I was fortunate to visit the area a few years ago and travel on the same line up to the bridge over the River Kwai. Perhaps fortunate is rather misplaced here? Eric and his mates have to repair the machinery used to construct the railway. Initially

they have a lot of freedom and life is not particularly difficult. They find parts easily and make a rudimentary radio which allows them to follow the allies’ victories. It doesn’t take the Japanese long to realise what is happening and they discover the radio. The mechanics are treated brutally, including Lomax. Two of them die from their beatings and Lomax is left physically broken as well as mentally traumatised. The men are taken to Outram prison where disease is rife. In the film it is Irvine who is subjected to the waterboarding torture and his screams for mother are disturbing. Takashi Nagase was the Japanese interpreter responsible for Lomax’s nightmares. After the war it was always Lomax’s intention to track him down and kill him for subjecting him to so much abuse. He meets Patti and falls in love. Without her tenderness it is unlikely he would have pulled through. Post Traumatic Stress was not recognised and therefore not treated. Just like Laura Hilenbrand’s Unbroken we learn about the power of forgiveness and how it can heal. The film only touches on these issues. This morning, after starting the workhorse, I created a folder called “2017” on my hard drive for all the articles that will be written this year. It wasn’t until I went to create this folder that I realised that I have been writing for the SolTimes for 5 years (and this was after I had been writing a while and decided to catalogue what I had written). I had a look at some of the subject that we have covered over the past year and it was diverse! We started the year with Encryption and realised that it was essential to have and why; we looked at Scams, how to spot them and then avoid them; we examined Printer Problems and simple solutions; and ended the year with “Phishing”, “Spy blockers” and the SatNav from a Tablet. Today’s article is going to be an update of the article on “Tablet GPS SatNav”. These are just a few observations of the project and real, everyday (almost every day) use. Today is simply a clearing the ground for this year’s articles. The 7 inch tablet that I converted into a working GPS SatNav. First and foremost, it works like a dream! Since its creation people have asked me if the sunlight prevents seeing the screen.

Well I can tell you that the picture is as clear in bright daylight as was my old SatNav. I choose to wear polarised sunglasses while driving in the daylight, personal choice! The effect on the old SatNav was to make the screen look black (conflicting angles of polarisation). There is no similar effect on my little Lenovo tablet. The greatest problem was finding a way of mounting the tablet. So many of the devices used to cradle are just a little too big or a little too small, or worse, cover the power or audio out sockets. My next project will be to find / create a secure fixing for the tablet that gives clean access to all the sockets and buttons. I have been using it to find locations, such as a bar in CampoSol, that sometimes have good 50’s Rock and Roll artists / bands. The bar wasn’t named in the savnav program but was found easily on google maps which gave the GPS co-ordinates. These I put into the program under the main menu ‘Search’ and submenu ‘Coordinates’, gave it the name “Marianos Restaurant – CampoSol”. How easy is that. I’m considering running a short course that will assist you from taking your Tablet from its box through to the SatNav complete. After which I will help you use the options to find just about anywhere you would like to go – any takers? Come the 20th January, Presidentelect Donald Trump will be officially sworn into office, taking the title President of the United States. Hell is expected to consume America soon after. The day before the vows are taken, as is tradition, a celebratory concert will take place featuring a whole host of celebrity performers. For Obama’s first inauguration concert - “We Are One” - the likes of Bruce Springsteen, Stevie Wonder, and Beyoncé played: Trump’s line-up is a little lacklustre by comparison. First, rather than delving straight into celebrity performances, there will be the “Voices of the People” parade. Participants include the DC Fire Department Emerald Society Pipes and Drums, King’s Academy Honor Choir, and the Republican Hindu Coalition. Following the introduction, “The Make America Great Again! Welcome Celebration” will kickstart, with Trump and his VP Mike Pence making speeches throughout. What’s perhaps more notable about Trump’s inauguration is the number of artists who have publicly refused to play the concert. Most recently, R Kelly revealed he definitely won’t be performing, despite the rumours. Other singers who have turned down the opportunity to perform include Charlotte Church and The X Factor UK contestant Rebecca Ferguson who wrote an open letter stating she’d only attend should she be able to perform the historically important song “Strange Fruit.”

Strawberries one of easiest fruiting plants to grow

Do not plant strawberries where tomatoes, potatoes, peppers, or eggplant have been grown in the past four years, because these crops carry the root rot fungus Verticillium which also attacks strawberries. Position your plants about 30cm apart, in full sun. Strawberries do best in well-drained soil, so plant them into soil that has been mounded up

slightly. The crown of the plant, which is the swollen stem base, must be left at the surface of the soil and not buried too deep. Place a mulch of straw around the base of the strawberry plants to help keep the moisture in the ground, control the weeds and keep the fruit from laying directly on the soil. Strawberries are very desirable to creatures other than humans.

Surely one of the highlights for any gardener is eating berries you have grown and nurtured yourself. Not only do they taste sweeter when they are home-grown, but berries like strawberries are one of the easiest fruiting plants to grow and enjoy. Let your children have a few plants of their own too, I guarantee they will love it. Getting started: Buy some virus-free plants (strawberries are prone to disease) or get some healthy runners from friends or family. About 2030 plants provide enough fruit for a family, but even a couple of plants can be a delight to grow.

Birds, slugs, snails and other garden creatures compete for the luscious fruit. Bird netting or wire mesh stretched over the plants may help. Repel snails and slugs by sprinkling pet-safe snail bait around the perimeter of plants. If you only have a small space like a courtyard or balcony you can still grow strawberries because they do quite well in a

large pot. Use your vertical space by planting your strawberry plants in one of the large ceramic pots with planting holes at different levels, or try “flying strawberries” in hanging pots. As long as they are planted in a rich welldraining soil and you keep them well-watered you will get plenty of cropping.

A strawberry growing-table is also quite easy to construct. It is just a frame of wood on legs with wire as a base. Then just lay a bag of rich potting mix onto the top. The pistachio is a broad, bushy, tree which grows slowly to a height and spread of 25 to 30 feet (7 to 9 m), with one or several trunks. It is deciduous (drops its leaves each year) and dioecious (comes in separate sexes with the male trees bearing pollen and the female trees bearing the nuts). Both male and female trees must be present for fruit to set, or a branch from a male tree may be grafted on a female tree. The trees are wind-pollinated rather than bee-pollinated. The trees are inclined to spread and droop, and may initially need staking. Their open habit and attractive foliage make them valuable ornamentals. Peak production is reached at about 20 years. The spiritual well-being of Alqueria is in the hands of the Sacerdote del Semblante Lánguido which is rather unfortunate as the good Priest is an atheist and an ardent follower of Sartre. He was once conscientious, full of vitality and pious but after hearing a Manuela confession he is now religiously bankrupt, lethargic and a drunkard. Preaching Existentialism from the pulpit brought him to the attention of a rather fierce bishop who in turn notified the Vatican. To complicate matters further Lánguido rather liked the life of a priest and even more so now as he has dispensed with the formality of chastity. In order to maintain his lifestyle the good Father decided to form his own religion, that of ‘Cuthbertism’. He felt it necessary to include the rudiments of Christianity, especially the festivals which are much liked by the people of Alqueria as they mean a day off work and an excuse to consume vast amounts of Remitroot alcohol. By skilfully altering the Christian protocols and customs he was able to produce a religion which well matched the Alquerian temperament and indeed

anyone who was slightly hedonistic in nature. Christmas Eve was replaced with Barmynoches, which is when the prophet Cuthbert left the Golondrina Verde and staggered to the Bar La Casa Devante and received enlightenment. This ‘enlightenment’ came as a brilliant flash travelling laterally through the upper reaches of his cerebral passageways. However many have experienced this phenomenon especially after drinking alarming quantities of Remitroot Grapa, indeed it is a documented side effect. But Lánguido was no longer happy! Cuthbertism became a victim of its own success. Followers from far and wide invaded Alqueria, causing a logistical nightmare and what is worse involving our worthy Priest in extra work which is against all the teachings of Cuthbertism. In order to solve this paradox Lánguido decreed that all followers not born and permanently resident in Alqueria should pay an enlightenment penance which included a very uncomfortable robe made from dried and woven goat droppings and a litre of Remitroot Grapa. This ploy wasn’t however successful and simply filled Alqueria with devout foul smelling drunkards who scratched themselves a lot. Lánguido was at a loss as what to do and seriously considered giving up religion and work for a living. Then it stuck him. Reintroduce the vows of chastity for the followers but not the priest or the indigenous devotees. The foreigners departed Alqueria with much haste in search of a new religion and a new guru.

Humanists of Murcia Walk Into the New Year And also celebrate their annual AGM On a beautifully clear and sunny morning, 24 intrepid Easy Ramblers assembled in the car park opposite the Bar Puente in La Majada, for the first two hour walk of 2017. Despite the brilliant sun, the bitter wind led the walkers to don almost as many fleeces, scarves, hats and gloves as they might have worn in UK. Ably led by Audrey we left from the eastern side of the village, causing great excitement for the many dogs in the gardens and orchards that bordered the road. Soon we were out in open fields with distant views of the surrounding hills and down to the sea in Mazarron bay. A steady pace brought us back via the rambla and then past more orchards and greenhouses to the Bar Puente in time for the AGM. Officer’s reports were presented and accepted, and those committee members who wished to continue were confirmed. The new Publicity Officer, Martine Smets was welcomed

Her Royal Highness Sayyida al Hurra, Somebody Else’s Cat, resides with us because she wishes it. She regards all other forms of life, including humans, to be inferior, and as such we should know our places. She is the most regal cat I have ever met, and also one of the most intelligent. She is capable of joinedup thinking and forward planning. She knows that ultimately a human is a lot bigger than a cat, even if the cat has superior armaments, so she organises her life to her own convenience without provoking confrontation. Between us there are unwritten but clearly understood rules of behaviour; She doesn’t back down, she simply circumnavigates any situations where a cat/human conflict could occur. However, the other day it all unravelled. It was hot and I needed a sit-down. Specifically in the breeze and the shade, on the recliner chair on the porch. ‘You can’t sit there,’ Pete said. ‘Si is on it.’ ‘I’ll ask her to move.’ ‘You can’t do that!’ ‘Watch me!’ I approached the chair with its incumbent cat with deference. ‘Si’ I said, ‘I want to sit there.’ The chair continued to be full of apparently sleeping cat. ‘I said, I want to sit there. Please get up.’ She raised her head. ‘You may stroke the top of my head.’ I stroked the top of her head. ‘Now please get up.’ She opened her citrus green eyes and stared at me. ‘There are other

It was clear to me that she had no intention of relinquishing ‘her’ chair, and that in a fist fight she would win, so I employed the advantage of greater body mass. I picked up a cushion and dropped it gently on top of her. ‘Move, or I’ll sit on you.’ I said, thinking that a hornet’s nest would be quite comfortable in comparison. She emerged from underneath the cushion and stalked off, waving her tail. Later I apologised to her and she came and sat on my lap. I was forgiven!

The chair was then taken by the new Chairperson, Anne Edwards, who proposed a vote of thanks to John and Rhian for their sterling work in leading the group from small beginnings to its present 60 paid up members. After the meeting was closed, Rhian offered some food for thought from the latest BHA bulletins. We then adjourned to the dining table for the usual excellent lunch of the Bar Puente. Pork miso & pear

Strips of pork belly, sold without the bone, work nicely here. Look for those with plenty of fat. I use white miso for the dressing. Use dark miso if that is what you have, but the flavour will be saltier and more intense. Serves 4 For the pears: white wine vinegar 4 tbsp black peppercorns 8 caster sugar 1 tbsp salt 1 tsp pears 2 pork belly 700g, strips, without bones liquid honey 2 tbsp white miso paste 3 tbsp grain mustard 2 tbsp salad leaves a handful Put the vinegar, black peppercorns, caster sugar and salt in a saucepan with 100ml of water and bring to the boil. Peel the pears, halve them then cut out the cores with a teaspoon. Lower the

pears into the pickling liquid, lower the heat and leave the pears to cook until tender to the point of a knife. Remove from the heat, cover with a lid and leave to rest. Set the oven at 200C/gas mark 6. Place the strips of pork on a shallow grill pan, season with salt and black pepper, and roast for 30 minutes until golden and sizzling. In a large shallow pan, warm the honey, white miso paste and mustard until you have thick paste. Tear the pork into short, finger-width strips, then toss with the hot dressing. Return the dressed meat to the oven for 7-10 minutes until sizzling and starting to caramelise. Wash and dry the salad leaves and place them on a serving plate, then pile the hot pork on top. Place half a pickled pear on each plate.

The texture of the salad is much improved by tearing the roasted chicken from the bone by hand in thick, juicy pieces rather than chopping it with a knife. Lardons and frisée aside, little cubes of meat do nothing for the look of a salad. Serves 4 chicken thighs 1kg (about 6) olive oil 2 tbsp black garlic 4 cloves sesame seeds 4 tbsp lambs lettuce 25g watercress 50g mustard and cress or other micro-salad leaves grapefruit 1 orange 1, large clementine 1 Set the oven at 200C/gas mark 6. Put the chicken thighs into a roasting

tin, pour in the olive oil, season generously with salt and black pepper and toss gently to coat the chicken. Bake for 30 minutes until the skin of the chicken is deep gold and crisp. Remove the black cloves of garlic from their papery skins, then crush the flesh into a smooth, sticky paste with the back of a knife. Toast the sesame seeds in a dry pan until golden then remove from the heat. Wash the lamb’s lettuce and watercress and dry well. If the watercress stems are long, chop them into short pieces. Peel the grapefruit with a knife then slice thickly. If the grapefruit is large, cut the slices in half. Do the same with the orange, reserving as much juice

as you can. Remove the chicken from the pan then pull the meat from the bones in large, juicy pieces, place in a large bowl and set aside. Pour away all but a couple of tablespoons of the oil in the roasting tin, then place the tin over a moderate heat, and stir in the mashed black garlic, the juice of the clementine and any reserved citrus juice. Stir thoroughly to combine, then pour the dressing over the chicken and toss gently to evenly coat the meat. Add the prepared grapefruit and orange, the watercress, cress and lamb’s lettuce and toss gently to combine. Scatter sporadically with the toasted sesame and serve.

A warming, comforting soup

For the dumplings 1 tbsp olive oil 1 small onion, peeled and finely chopped 2½ tbsp plain flour 4 slices sourdough, crusts removed, lightly toasted and roughly blitzed in a food processor, ½ tsp freshly grated nutmeg 40g pine nuts, lightly toasted, 20g parsley, finely chopped, 1½ tsp thyme leaves, finely chopped. Finely grated zest of 2 lemons 2 eggs, beaten 140ml chicken stock (or good-quality vegetable stock – do not use bouillon) 125g feta, crumbled into 1-2cm pieces Salt and black pepper

For the broth 3 tbsp olive oil 2 garlic cloves, peeled and crushed with the flat of a knife 2 onions, peeled, quartered and layers peeled apart into individual ‘petals’ 1 tsp ground cumin ½ tsp paprika ¼ tsp cayenne pepper 2 cinnamon sticks, 8 cardamom pods, if you don’t want to pick them out of the soup, tie them up in muslin 2 tsp tomato paste 700g Swiss chard, stalks and leaves separated, stalks cut into 2cm-wide slices, leaves roughly torn 3 tomatoes, peeled and chopped into 1cm dice

Serves 4 80g unsalted butter, melted 20g caster sugar 2 large eggs 100g plain flour (I’ve made it with gluten-free flour for coeliac friends and it works fine) 80g ground almonds 1 tsp baking powder 170ml whole milk (or almond or coconut milk if you’d rather) 1 tsp vanilla essence 1 Preheat the waffle maker. Put all the ingredients in a jug and blitz with a hand-held

blender. Make the waffles as per the instructions for your machine. Be careful not to overfill, or you get a batter volcano. I find 2-3 minutes about right, or until they are golden and crisp. 2 Serve with maple syrup (or honey). In a sitcom, you’d offer a generous jugful, but I measure out a little dipping pot per child to stop them drenching half a bottle on a single waffle. We have fruit too: whatever’s in the fruit bowl, sliced.

1 litre chicken stock 80ml lemon juice First make the dumplings. Put the oil in a medium frying pan on a mediumhigh flame. Once hot, fry the onion, stirring a few times, for about four minutes, until soft and translucent. Transfer to a medium bowl, add all the other dumpling ingredients apart from the feta. Add three-quarters of a teaspoon of salt and mix to combine, then add the feta and mix again, taking care the cheese doesn’t break up too much. Using your hands, form the mixture into round 40g dumplings, tightly compressing them as you roll so they’ll stay

intact while cooking. You should end up with 18 dumplings. Set aside. For the broth. Heat the oil in an extra-large pot on a medium-high flame and, once hot, fry the garlic, onion, spices and tomato paste for five minutes, stirring often, until the onions and garlic are soft and fragrant. Add the chard stalks, sauté for 10 minutes, stirring frequently, then stir in the tomatoes, stock, lemon juice, a litre and a half of water and a teaspoon and a quarter of salt. Bring up to a simmer, cook for eight minutes, then add the chard leaves and cook for seven minutes more. Gently

Spanish Tapas

This is a simple, but delicious appetizer or tapa that everyone enjoys. It involves very little or no cooking, and you can put it together at the last minute. Although you could simply set out a basket of bread and a platter of Manchego cheese, jamón Serrano and Spanish chorizo, you would probably see it disappear almost instantly. Serving the tapa prepared on individual baguette slices makes it last longer!

The perfect blue cheese dip

(Makes 1 bowl) 1 garlic clove, crushed 75g cream cheese 3 tbsp sour cream 110g strong blue cheese (I like gorgonzola picante), crumbled 1 tbsp cider vinegar 2 tbsp chives, finely chopped Put the garlic, cream cheese and sour cream in a bowl with two-thirds of the blue cheese and whiz

with a stick blender until fairly smooth. Stir in the vinegar and taste, adding a little more if necessary, and then fold in the remaining cheese and the chives, reserving a pinch for the top. If you don’t have a stick blender, put the garlic and vinegar in a bowl and add two-thirds of the blue cheese. Mash hard with a fork until it breaks down

into tiny pieces. Beat the cream cheese to loosen it, then fold in the sour cream and stir both into the cheese mixture. Fold in the vinegar and most of the chives, reserving a pinch for the top, then taste and add a little more vinegar, if necessary. Serve with lots of raw vegetables, to add lots of colour and variety to compliment this dish.

Fish poached in tomato & wine

Serves 4 1 x 700g or 2 x 350g bream or seabass, 6 tbsp extra virgin olive oil, 2 garlic cloves, peeled and chopped, 1 red chill or a pinch of red chilli flakes, 500g cherry/ medium-size tomatoes, or 2 tins of plum/cherry tomatoes. A small tied-up bunch of parsley, 200ml dry white wine, 200ml water. Salt and black pepper. To serve 400g spaghetti or some boiled potatoes

1 If your fishmonger hasn’t done so, gut the fish and scrape away any scales using the blunt edge of a knife. 2 In a large, deep frying or sauté pan with a lid, warm the olive oil over a medium-low heat and gently fry the garlic (chop for a strong flavour, crush for a milder flavour). Once the garlic is fragrant, add the chopped tomatoes, chilli and the bunch of parsley. Cook, stirring until the tomatoes are soft enough to mash

into the oil. 3 Add the wine and allow to sizzle for a minute, then add the water and a pinch of salt. Lay the fish on the sauce and cover, reducing the heat so the broth simmers. If you are planning pasta for the broth, bring a large pan of water to the boil, and time the pasta to be ready just after the fish. 4 A 350g fish will cook in about 13–15 minutes, a larger one in 20–25. I turn larger fish halfway through the cooking time. You will know when the fish is cooked as the eye will be cloudy, and if you use the point of a knife you will find flesh near the spine white, no longer translucent. Once it is cooked, lift the fish on to a warm serving plate. If the broth is looking thin, reduce it over a high heat, then either mix with the drained pasta, cooked potatoes or simply serve as a sauce with the fish.

Spiced lental soup

Bring a litre of vegetable stock to the boil in a large, deep saucepan, add 250g of small, red lentils, half a peeled onion, and 2 bay leaves and cook for 15-20 minutes until the lentils are soft enough to crush. Meanwhile make a spice paste in a food processor with 40g of peeled ginger, 1 medium-sized red chilli, 3 peeled cloves of garlic, 2 tsp each of ground turmeric, cumin and garam masala, and half a teaspoon of hot (or mild) red ground chilli. Add 2 tbsp of groundnut oil. Blitz to

a smooth paste. Place a frying pan over a moderate heat, then fry the spice paste for 2 or 3 minutes, stirring almost constantly, until fragrant and sizzling, then stir in 150ml of water and 100g of creamed coconut. Simmer for 5 minutes. When the lentils are soft, season with salt, discard the bay leaves and beat to a smooth, thick purée. You can use a food processor, stick blender or a whisk. Divide between deep soup bowls then stir in some of the spice paste. Serves 4.

The idea of this modern and progressive club is that people who speak ENGLISH and live in Almoradi or the surrounding area can meet one another on a regular but informal basis to talk together and enjoy life in this Spanish community. The club activities will include social events, club lunches and evening meals in and around the local area, with guest speakers at meetings and entertainment when possible. We will also try to associate ourselves with other local clubs that hold other events including coach trips and anything that may be of interest to members. Tiger Woods To Play At Genesis Open Tiger Woods has committed to his first event of 2017 by agreeing to play in the Genesis Open in February at the Riviera Country Club in Los Angeles. “This is where it all started for me in 1992. It was my first PGA Tour event. I was 16; it was life changing,” said the 14-time major winner. Woods, who will also host the event, has not played in it since 2006. The 40-year-old finished 15th at the Hero World Challenge earlier this month after 15 months out through injury.

Rojales Netball Rojales Netball Club finished 2016 by taking part in a Charity Pink Weekend at La Manga Sports Club. Fifteen teams entered this charity event and Rojales came runnersup. A great effort by all the team and the champagne flowed freely that evening. Golf’s most prolific major winner, Jack Nicklaus, says Rory McIlroy must improve if he is to dominate the sport.

The 2017 Audi A5 Sportback has made its world debut at the Paris motor show

Cabin space The new four-door model offers more cabin space than its coupé equivalent while sharing the same line-up of engines. The cabin space of the new A5 Sportback is 17mm longer than the old car’s. The more practical body shape offers passengers 11mm of extra shoulder space and rear knee room has grown by 24mm. Engines and gearbox Like the coupé, the Sportback gets 2.0-litre TFSI petrol and 2.0-litre TDI diesel turbocharged four-cylinder units in various states of tune and the range is topped by a 282bhp 3.0-litre sixcylinder TDI diesel.

The A5 Sportback is offered with the choice of a six-speed manual or eight-speed S tronic dualclutch automatic gearbox. As with the coupé, a performance-focused S5 model is available with a 3.0-litre TFSI petrol unit that produces 349bhp. A g-tron model that can run on natural gas is offered on the European continent, but not in the UK due to a lack of refuelling infrastructure. Pricing and on-sale date Audi is yet to confirm the car’s pricing, but a small increase is expected over the outgoing model, which starts at £30,035. Order books will open this autumn.

Audi A5 Sportback is THE TECHNOLOGY boasting a much needed update to exterior styling As with the coupé, the A5 Sportback gives buyers the choice of an optional Virtual Cockpit system, which includes a 12.3in high-definition digital instrument panel, as well as the latest evolution of Audi’s MMI (Multi Media Interface) Plus infotainment system. This uses an 8.3in monitor, touchsensitive rotary controller and LTE connectivity for up to three years free of charge via a SIM card permanently installed in the car. There’s also optional Apple CarPlay and Android Auto compatibility, a

wireless smartphone charging pad and a Bang & Olufsen sound system. The hood now wraps around the nose a little more which, in combination with the dramatic hood lines, gives the front end a more menacing and commanding appearance. Compared to the previous model, the new, second-gen model does have a sportier rear end, but the overall styling and characteristics of the car really go on unchanged. Not that it’s necessarily a bad thing, you won’t be disappointed.

Depending on which trim you choose there are three suspension options. We’ve only tried the adaptive set-up, but this is supple enough to take the sting out of smaller ripples and bigger bumps alike. Just bear in mind that the A5 Sportback doesn’t ride potholes quite as well as the A4. Audi says that it has intentionally made the A5 ‘sportier’ than the A4 because that’s what buyers will expect from a four-door coupé. But the truth is if you were looking for driving thrills you’d be better off with a BMW 4 Series Gran Coupe. The A5’s steering is precise, but it never really involves you in the process of going round corners. Mind you, the A5 feels impressively stable at speed. Audi predicts that the entry-level 187bhp 2.0-litre TDI engine will be

the most popular choice. We have yet to try it in the Sportback, but we have experienced the same engine in the A4, where it is a strong performer. Also available is a 3.0-litre V6 diesel with 281bhp, and a 2.0-litre petrol with 249bhp. The 2.0-litre TDI is the only engine available with a manual gearbox, whereas the 2.0-litre petrol and 2.0 TDI (optionally) receive a sevenspeed twin clutch auto. However, opt for either the 3.0-litre V6 diesel or 3.0-litre V6 S5 and you’ll receive an eight-speed automatic. The 3.0-litre TDI’s outright power is impressive enough, but it’s the engine’s low-down pulling power that really takes your breath away. The 2.0-litre TFSI is very quick too, but it sounds rather gruff and unrefined.
