Chef Profile

Q. What was your vision for Blackboard Bar B Q, and why did you choose your location? A. Our vision is to make the best Bar B Q we can in a family friendly, fun environment. Jake likes to pick n’ sing out in Luckenbach, so live music will always be a huge part of our scene. The location chose us!

“We Love our customers and in turn they Love our food!”

Jake and Jo cook for the love of the food! She is a classically trained Le Cordon Bleu grad and has been a private chef for Dallas Cowboy players and Austin socialites. He is a career chef who was a top finalist on Gordon Ramsay’s MasterChef and has competed on Beat Bobby Flay. Jake loves competitive cooking and Grand Championed his very first Bar B Q cook off and The Great Bacon Take Down in Denver. Jo handles all of the baking duties at Black Board and Jake is the Pitmaster. Together they make a well balanced team and it really shines through in the food.

“Cook from the heart and sprinkle in a lil’ magic chef’s dust!” Q. What do you love most about calling the Texas Hill Country home? A. The people! Folks round these parts are genuine and that really speaks to the fabric they are cut from. And the landscape...it is so beautiful! We think those two things really embody the spirit and the true romance of the West.

“Do a few things and do them well!”

Q. How did you and Jake decide to work together to co-create one of the best Bar B Q venues in our TX Hill Country? A. We had a lot of help and a lot of support from our friends and the community. We definitely had to Q. We know why WE think you’re the best, break a few eggs to make maybe tell us why you think YOU are. What this omelet! makes you different? A. We feel like we are prolly the second best... because there will always be someone better! We make everything in house from scratch daily and show the ingredients the respect and love they deserve! We pay homage to traditional low n’ slow Bar B Q and serve upscale southern sides with a twist. Folks really get to enjoy some epic Bar B Q and maybe get their eyes opened to some more creative spins on classic sides.

Q. What is your favorite dish? A. Luckenbach Lollipops, our buttermilk brined deep fried quail knots served with Sriracha Aioli. They exist in exactly one place in the universe... Sisterdale, TX.! Ribs are outta this world and we would challenge anyone to a duel who says otherwise!

The Elephant Story The Elephant Story (TES) was formed by Ed and Joey Story to support elephant conservation in Asian elephant countries, most notably Thailand, where they have had a relationship for fifty years. In July 2012, TES, located at 723 High Street in Comfort, Texas was opened under the management of their longtime friend, Bobby Dent. Comfort was chosen as Ed purchased the first portion of their nearby ranch property while living in Southeast Asia. The objective of TES is to create an awareness of the need for elephant conservation and to improve the lifestyle of the owners of domesticated elephants, thereby enhancing the sustainability of their elephants.

Whereas elephant conservationists do what they can to support elephant life in the wild, sadly, there is little remaining wild in Southeast Asia. Accordingly, TES, together with the Golden Triangle Asian Elephant Foundation, founded a native speaking English language program in the small, remote village of Baan Ta Klang, Surin, Thailand. It is home to some 300 elephants representing the largest accumulation of domesticated elephants anywhere. Over the past four years, there has been a remarkable improvement in the level of English spoken by the students so they have optionality to pursue higher education, as well as to provide a base of spoken English in the small community to support tourism. Moreover, TES efforts also underwrite a portion of the costs of a veterinary clinic for the elephants. Over the past four years, TES has sponsored an elephant polo tournament in the village whereby the expenses of the tournament remain to improve their meager agrarian economy. Further, TES has assisted in the construction of a pavilion at the village secondary school, bathroom facilities for the school, and the purchase of a school bus to safely transport students to the school.

Lastly, the majority of the store’s products are sourced from indigenous groups in Asian elephant countries to support local artisans and crafts people. Therefore, visitors to the store and website are exposed to a wide variety of products, with the proceeds from their purchase funding a wonderful cause of which the owners are passionate.
