CULTIVATE THE GOOD LIFE
F
or six generations our family has lived on the
Texas landscape. Our forefathers and foremothers
planted cotton and corn. We grow grapes. In 1995 Larry and Jeanine Kuhlken planted their first vines in the Texas Hill Country. They picked the site specifically for its soils of caliche and rich red sandstone. We continue to farm these soils sustainably in order to pass them on as a legacy to the seventh generation.
In 2011, we founded our sister winery, Armadillo’s Leap, to experiment with New World style, fruit-forward wines perfect for everyday sipping. Both wineries have been recognized at International Wine Competitions with Gold and Double Gold medals. When you visit our wineries, our well-educated staff will lead you through a tasting designed to cultivate your appreciation for Texas wine. At our tasting rooms, you can sit back, relax and drink in the beauty of Texas culture and landscape.
“Join us for an afternoon of the good life at your home away from home in the Texas Hill Country!”
In 2006, Larry and Jeanine’s children, Julie and David, as well as their spouses, Fredrik and Heather, founded Pedernales Cellars. After a decade of Y EGION ER

rom the top of the Hill Country appellation in San Saba
to the iconic wildflower fields of Wildseed Farms in Fredericksburg, Wedding Oak Winery’s Texas roots do indeed run deep. Named for the historic, 400 year-old matrimonial oak tree near our winery in San Saba, we planted our first estate vineyards in 2000, focusing on varietals and blends that love the red clay loam and limestone pan terroir. After opening our 10,000 case San Saba production facility and tasting room in June 2012, Texas wine travelers began to discover the charm and hospitality of small-town Texas, while
expanding our vineyard plantings in the Hill Country, beginning in 2015 with the first acreage of wine grapes planted at Wildseed Farms. Additional plantings up to 35 acres will go into the ground in 2016-2018, pushing more deep roots into the incredible soils of the Pedernales River basin. In the spring of 2016, Wedding Oak Winery at Wildseed Farms opened its doors with wine experiences that are intertwined with the glory of bluebonnets, poppies, Mexican hat and other portrait-quality wildflowers. Fiesta wines have a fun variety of cleverly named wines like, Back Porch Sittin’ and Home Sweet Home as well as whimsical and picturesque labels. Our Wine Club Fiesta Family Members can tell you that Fiesta Winery’s tasting rooms (and vineyard) are relaxing, positive places to savor a bottle of wine and enjoy live music. You can truly appreciate southern hospitality, Texas style, at its finest.

THE SPIRITS OF TEXAS SERVED WITH A SMILE
Hill Country Distillers is fortunate to be nestled in the rolling hills of Central Texas. The inspiration for our spirits comes directly from the land and the people who welcomed us to start this most unique
venture and are our biggest supporters. Hill Country Distillers has not taken the path most followed as many new distilleries in Texas have, which is to make standard spirits from a corn and grain base. We use the native bounty of Texas to create our “Spirits,” thereby delivering a uniquely “Texas” product. Prickly Pear cactus is gathered at select
ranches near Comfort to make our Prickly Pear Spirits and seasonal Jalapeños come from Texas as well. Even our Texas Revenge gin has as its juniper origins the Texas “Cedar Tree.” Since we use no corn or grain in these products we can make spirits that are so smooth we only have to distill ONE TIME!
723 Front Street, Comfort, TX 78013 • 830-329-3976
We have a great tasting room and bar where you can sidle up and have a cool drink on those hot summer days, or you can lounge under our giant pecan trees out in the “Comfort Backyard.” Tables await as well as old fashioned backyard games to have some fun.

Why Texas Wine Is A Big Deal Texas wineries are expanding acreage under vine to meet rising demand.
Aerial photo of Grape Creek Vineyards by Miguel Lecuona
by Daniel Kelada The story of Texas wine being told today is one about how a budding industry, with a rich wine making history, is grabbing attention, notoriety and momentum against some pretty big odds. The Texas spirit is unyielding. Marry that, along with the multi-generational grape growing and wine making cultures being built, the 28-million-person strong population (2nd largest only after California) that consumes roughly 37 million gallons of wine annually, and the mood in the market for local and new being expansive and growing. These ‘X’ factors put Texas in a unique position – it is shaping up to be a region that has a lot to gain even though it is not the largest consuming or producing state, yet. The truth is, the stage is set for great things to happen. What’s your guess as to how long Texas has been making wine? 2017 marks 385 years of wine making history in the territory we now define as Texas. In this expanse of time, Texas has pioneered to achieve international significance through aiding the world in solving the preeminent threat that is phylloxera, succumbed to prohibition and its lingering effects, and re-emerged over a half-century post-prohibition to be this diverse region that is part old world and part new. We are cultivating wines with an individuality and an energy that push us towards more wines
and better wines, to increased awareness and market expansion. Now more than any time in recent history, Texas wines are putting their best foot forward, and they’re doing it with better, more consistent quality, increased volume, industry support and recognition in multiple media outlets, that amounts to greater exposure and appreciation. Even at the wineries, the experiences are becoming more refined because of competition and the evergrowing interest in Texas wines.
How to Navigate Texas Wine The source of grapes sets the framework for what the resulting wine will be. You can only make great wine from great grapes, and not all growers are created equal. Therefore, it is important to know not only where the grapes come from, but how they are grown, how they were managed, and what processes were used after harvest and in the winery. Texas is a wine making region with significant vintage-to-vintage variance, which requires substantial grape growing and wine making experience to learn how to deal with vintage extremes. These extremes all relate back to climate. Texas growers and producers are confronted with a myriad of possibly devastating challenges like frost, hail, disease and drought. Therefore, paying attention to
producer experience and background is a clear indicator of what wines they are the most comfortable producing and what you can expect in good and difficult vintage years.
Emerging Grapes and Wine Styles Here’s a quick guide to a few of the key grapes and styles defining the current and future Texas wine industry - courtesy of the Texas Wine Journal. Blanc du Bois - The workhorse white grape of Texas, and by far the most versatile variety being produced in the state. This grape often flies under the radar, but its uniqueness is that it can be cultivated to produce a range of styles from dry to sweet and from sparkling to fortified. Mourvédre - The textbook example of a varietal that has small berries and thick skins, which can produce wines with intense color and high tannins (astringency). Mourvédre tends to have fruit aromas of blackberries and black cherries, along with herbal notes of sage, fennel and lavender and meaty or earthy notes of sweet tobacco and cocoa. This is a late-budding and late-ripening varietal that utilizes the full growing season, which contributes to the depth, focus and concentration of fruit and tannins.
Tannat – Famous for having the highest antioxidant levels of any other varietal because of its thick skins and because it has 2-3 more seeds than other varietals. These two characteristics contribute to its elevated tannin levels and overall body. Typically, Tannat is a wine with significant aging potential in good vintage years. Roussanne – Indigenous to the Rhone Valley in Southern France, but may in fact be more suitable to Texas than Viognier. Texas is consistently hit by late season frost in late April and early May that can destroy early budding varieties and severely depress total yields. Roussanne, however, is late ripening, making it a contender for top vinifera white. It is a grape that produces wine with distinct russet or canary hues and gives flavors of ripe peaches and other orchard fruits along with honeyed citrus, yellow florals and at times herbal tea notes. Dry Rosé– There are over 1600 commercially available rosés in the market each vintage cycle, and the category continues to trend upwards nationally and internationally. Texas is well suited to be a domestic leader of dry rosé that can compete for the 32% increase in market value the category experienced in 2015 alone. Dry Rosé is a category that Texas can produce with consistent quality each year and has the means to scale production as needed to meet a larger state and national demand, thanks to the availability of affordable land. Sparkling Wine – Lets not forget that sparkling wine was first made in a warm region (Limoux appellation of the Languedoc) several hundred years before it was made purposefully in Champagne. Sparkling wine is a category we haven’t seen much of in Texas, but this is poised to change; you can expect Blanc du Bois to play a significant role in this category.
The Take Away Ultimately, here’s what you need to know about Texas wine as it stands today. In our 385 year history of making wine in Texas, the wines have never been better. They’re more expressive, more rooted to their place, and

the sophistication they’ve reached is more appreciated and sought after than ever before. The Texas wine industry is advancing at every level. Growers both big and small are not just farming grape vines, they are wine growing with a focus on site specific plantings, and meticulous vineyard and crop management. Producers are simply crafting better wines, with access to better quality fruit, better understanding through experience and continued learning and better tools and resources in the form of equipment, academic and research support, and maturing industry services. You’ll see it even when you visit tasting rooms - that experience is being elevated, with less gift shop and more focus on the wine. Today, you can find an affordable bottle of Texas wine at the grocery store that competes with any same-priced, same-style world wine. The real gems, though, are out at the wineries. Guides like CRUSH Magazine and the Texas Wine Journal can help you navigate the now more than 50 wineries scattered across the Texas Hill Country. My hope is that reading this article gets you excited about trying more Texas wine. Get out to a local winery and start your sipping adventure, or ask about Texas wines at your favorite grocery store or restaurant. With so many varietals and styles being produced, you’re sure to find one that fits your preference. And you won’t be alone out there
- you’ll join all the other Texas wine fans, and thousands more each year. So, step up to take part in the story and history unfolding in front of our eyes - out in the vineyards, in the cellars and tasting rooms across the great state of Texas.
