SOPHIE’S EASTER CAKE A celebratory cake for a wonderful family gathering. At the moment there are masses of edible flowers in season, so I’ll be using violets and primroses to decorate the cake, I just remove the stems and any teeny residents. If you are unsure what is edible just google first to be safe.
500g very soft butter plus extra for greasing the tin 500g golden caster sugar 10 eggs 2.5tsp vanilla extract 95g polenta zest of 2 oranges
2.5tsp baking powder 375g self-raising flour 750ml of double cream 1.5 tbsp of sugar
For the cream: 600ml double cream 1 small tbsp caster sugar 4 drops of vanilla for the icing fruit and edible flowers to decorate
Preheat the oven to 180°C / 160°C (fan) Grease 3, 18cm springform cake tins. In a large bowl, mix together the butter and sugar using an electric whisk until pale and creamy. Whisk in one of the eggs, the vanilla extract, polenta, orange zest and baking powder, followed by another egg and 50g of flour. Repeat with the remaining eggs and flour until everything is used up. Divide the majority of the cake batter into 2 cake tins and spread evenly, pour the remaining batter into the third cake tin, half as deep as the other 2 tins. Pop the first 2 cake tins into the middle rung of the oven and bake for 35 minutes. Remove the cakes from the oven and leave in the tin to cool. Put the last cake tin in the oven and cook for 15-20 minutes, remove and also allow to cool in the tin. Pour the cream into a large bowl. Whip the cream into light peaks, adding the sugar and vanilla towards the end. When the cakes have cooled, carefully cut the two deeper cakes in half creating 5 thin cakes in total. Build your cake on your cake plate or platter, placing one cake after the other with the cream spread between the layers, make sure there is enough left at the end for the top. Decorate the cake with lovely fruit and edible flowers

AUBERGINE, FETA AND FILO PIE A fabulous summer dish packed with wonderful flavours, it is both light and filling. They are easy to do making little delicious little parcels of flavour. I make it in a large baking tray when feeding a crowd & it goes down very well..
4tbsp olive oil 1 knob of butter 3 red onions - chopped finely 400g (14oz) one tin chopped plum tomatoes 2 tsp thyme leaves - finely chopped handful of mint leaves finely chopped
175g (6oz) good quality feta cheese crummbled (I use barrel-aged feta as it is creamier and not so salty) 2 sheets filo pastry extra olive oil to brush the pastry 2tsp rosemary leaves - finely chopped
1tsp ground cumin 2tsp golden caster sugar sea salt and greshly ground black pepper 3 cloves of garlic chopped 1 handful of currants (optional) 1 large auberhine - cubed into bitesized pieces
Preheat the oven to 200/180°C fan (375°F/Gas 5). Heat 2 tsp of the olive oil and the knob of butter in a large frying pan. Add the onions and cook them over gentle heat for 10 minutes until they are translucent. Add the garlic and cook for a further 2 minutes. Add the thyme, rosemary, cumin and sugar, and season well, stir for 2 minutes before adding the tomatoes and currants. Stew the mixture gently for 10 minutes then take the frying pan off the heat. Heat the remaining oil in a clean pan. Add the aubergines and fry them briskly, stirring them continuously until they are golden and thoroughly cooked. Then gently stir in the onion and tomato mixture, the mint and feta. Brush the sheets of filo pastry with olive oil on both sides. Cut the filo sheets to size and line 4 of the muffin cups, each with two generous layers of filo, so that it comes over the edge one well pressed into the cup. Bake for 20 minutes or until golden. Fill each cup with the filo mixture just before serving. Delicious warm or cold. Serve it with a crisp green salad and a yoghurt and cucumber salad.
