here’s something about celebrating spring with brunch. Catching up with family and friends over a leisurely mid-day repast is a wonderful way to spend a Sunday. On these pages, read about three unique brunches found at South Coast Plaza. It’s also the perfect time of the year to dine al fresco or pack up a picnic. Chef Evan Kleiman shares tips and recipes for an easy but memorable spread. The performing arts offerings are impressive this season. Everyone wants to see Hamilton, which has a three-week run in May at Segerstrom Center for the Arts. As part of South Coast Plaza’s arts legacy, it gives us pleasure to share that Pacific Symphony Orchestra, led by music director Carl St.Clair, will make its Carnegie Hall debut April 21 during Carnegie’s yearlong celebration of composer Philip Glass’ 80th birthday. The landmark concert, Glass & Shankar, will preview at Renée and Henry Segerstrom Concert Hall April 12–14 before its New York premiere. Two exceptional additions to our luxury collection of boutiques will open by summer. South Coast Plaza welcomes London-based Alexander McQueen, an Orange County exclusive, and Givenchy, which will debut its first location in Southern California here. eekends are made for brunch. Food lovers of any generation enjoy the social aspects of leisurely dining with family and friends. For chefs, it becomes an opportunity to showcase creative spins on classic dishes or introduce new tastes at the breakfast-lunch hybrid. South Coast Plaza offers three perfect examples. At Water Grill brunch is served Saturday as well as Sunday. The gorgeous restaurant takes inspiration from a refurbished ship, replete with nautical components, reclaimed woods and iron finishes. Settle in and order a perfectly picante bloody Mary—thick bacon perched on its rim of Old Bay Seasoning and elaborately garnished. A fine starter is poached salmon rillettes, made with crème fraîche, mustard and fragrant dill. We asked for extra house-made crostini to savor every last bit of the addictive seafood pâté. A decadent but delicate crab Benedict finds jumbo lump blue crab atop poached organic eggs with grilled asparagus. Favor sweet over savory? Vanilla-blueberry compote and a cloud of lemon cream elevate a substantial trio of pancakes—or finish with a duo of fresh-baked cinnamon rolls, served warm in a cast-iron pan. Clean lines, rich wood paneling and stacked stone soothe even when Seasons 52 is liveliest—and its new brunch bustles. Flatbread is a Seasons 52 signature; at brunch, it’s a canvas for cold-smoked Kendall Brook

salmon, a subtle horseradish crema, capers and lemon zest. The Arabic dish shakshuka does a star turn: Pasture-raised hen eggs are baked in a sunset-hued sauce of sweet peppers, chorizo, crumbled feta and Calabrian pepper, and served with ciabatta toast. The brick-oven brioche “French toast” is memorable: a single custard-drenched bun is crisped then topped with blackberries and warm blackberry maple syrup. A pleasing crunch comes from whiskey-smoked brown sugar pecans. The two-dozen-item feast at Royal Khyber Fine Indian Cuisine predates the trend: Sunday brunch has been served for 18 of the restaurant’s 35 years. The antique Indian door at the entry and refined interior set the mood. A fun start: papri chaat, do-it-yourself Indian nachos full of sweet, spicy and tart flavors. Toppings include garbanzos, tamarind chutney, serrano chiles and spices. Vegetarian dishes shine. Eggplant stars in both a warm salad and the curry aloo baingan; arbi Indochine finds tender potatoes in a chile-garlic soy sauce. Best of all is clay-pot-style sabzi handi with taro root, paneer cheese and chiles. Another tasty offering is basa Malabar, a light Vietnamese catfish in pungent tomato sauce. The don’tmiss finish: gulab jamun, like milky Indian doughnut holes, in a sweet, hot rose-scented syrup. nsiders know morning is the best time of day to visit South Coast Plaza. Parking is plentiful, lines are minimal and crowds are light until lunchtime. Early birds will benefit from a satisfying bite to get their shopping agenda off on the right foot. With spots that are both family-friendly and convenient, South Coast Plaza knows breakfast. “The Purist” avocado toast at Boudin/SF is a winner. Signature sourdough is topped with fresh, mashed avocado and a cage-free, hardboiled egg. It satisfies without being heavy (added bonus—great social media shot). Another favorite is Boudin’s sourdough French toast, soaked in cinnamonvanilla cream and garnished with assorted berries. W
hen I was a young woman traveling in Italy I fell in love with the food—especially antipasti. The idea of room temperature dishes of different tastes, textures and colors was genius to me. I felt instinctively that it was a way of eating that suited the California al fresco lifestyle. I fell so hard that I co-wrote a cookbook that was based on the grazing feasts we loved. As the farmers’ market ethos has become firmly embedded in Southern California home kitchens, this idea of simple recipes made with premium quality ingredients is our default culinary lifestyle. The dishes are suitable to pack up and take anywhere. They don’t require refrigeration and are better without it. You can make everything ahead so you’re less stressed. Just remember that the better the ingredients the less work is needed to transform them. I’ve shared a few of the updated recipes that fueled countless take-out baskets for picnics of every sort and easy grazing buffets in the years I had Angeli restaurants. To round out the menu, add a leafy salad if you like. Dress it simply with extra virgin olive oil, that salt you’ve been hoarding, a squeeze of lemon and a tiny bit of soy sauce. Pick up some great sturdy bread from those young bakers you’ve been hearing about. Don’t forget to pack a knife. While you’re at it splurge on some Beurre de Baratte, a French cultured butter you have to taste at least once in your life, or more locally a salted cultured butter from

Vermont. Go with a wine that can handle some chill like a Rosé or Beaujolais. Or explore Lambrusco—not the sugary kind you guzzled in your youth, but real Lambrusco, a light, dry yet fruity red wine. For dessert, indulge in your favorite big cookies. Outdoor eating calls for something simple and finger friendly. When making these dishes it’s important you don’t skimp on the quality or quantity of olive oil since it lends texture and flavor. Use an extra virgin you like—lately I’ve been favoring California oils. Buy the best produce and dairy. Most importantly, adjust seasoning to your own palate. Add salt to your taste and an acidic lift from vinegar or lemon juice if needed. And please don’t fuss! Cooking should be as fun as the eating. CASA BARILLA A Fresh New Restaurant from a Famous 140-Year-Old Pasta Maker by Eddie Lin

ou’ve heard of Barilla. It’s a household name synonymous with quality pasta in all varieties that you can find in supermarkets. What you may not know is Barilla also owns restaurants. The new Casa Barilla made its delicious debut recently at South Coast Plaza, its first West Coast location. New Yorkers have been experiencing Barilla’s brand of healthful Italian cooking for the past few years thanks to three fast-casual restaurants in Manhattan. However, the rich gastronomy province of Parma, Italy, is where the 140-year-old pasta maker originates. Further south from Parma is the island of Sardegna, home of Barilla’s chef Alfonso Sanna, who learned to cook in the kitchen of his nonna. Now Sanna takes the lead at Casa Barilla, cooking for families hungry from a day of shopping. Stately glass cabinetry brimming with semolina products, from farfalle to fusilli, welcome pasta aficionados as they enter, while polished bronze extrusion dies used to form different pasta styles are on display. By spotlighting fresh, local ingredients, Sanna lovingly recreates flavors from his island childhood. Linguine Vesuvio—a plate of flat noodles, sautéed shrimp and calamari—is tossed with a piquant tomato sauce with olives and capers. Vibrant tomato also permeates the penne al salmone, a colorful dish of toothsome short- tubed pasta scattered with salmon, lemon zest and generously infused roasted garlic. In contrast, the rigatoni Montanara showcases earthy flavors. Mushrooms and Parmigiano Reggiano cream sauce are gently tossed with roasted chicken and pasta. Even Casa Barilla’s classic Bolognese-style lasagna is heavenly. Each noodle layer, lined with velvety Béchamel, slow-cooked meat sauce and Parmesan, is fluffy and light. like zucchini, eggplant, bell peppers and onions. Focaccia, lightly spread with olive tapenade, provides the perfect bread-to-filling ratio, crucial to fine sandwiches. The entrée-sized Mediterranea salad is mixed greens overflowing with cannellini, pinto and garbanzo beans, along with artichokes, tomatoes and onions complemented by a light lemon-olive oil dressing. If Barilla’s objective is to keep a 140-year-old business feeling fresh, certainly the new Casa Barilla’s seasonal ingredients and wholesome creations will help achieve that delectable goal.

t will be an extraordinary May at Segerstrom Center for the Arts with the Orange County debut of Hamilton. There will be 24 performances at Segerstrom Hall beginning May 8. The highly lauded musical about the life of American Founding Father Alexander Hamilton, with music and lyrics by Lin-Manuel Miranda, was inspired by the 2004 biography Alexander Hamilton by Ron Chernow. The Broadway phenomenon features a score that blends hip-hop, jazz, blues, rap, R&B and show tunes. Hamilton received a record-setting 16 Tony nominations, winning 11, including Best Musical. It was also the recipient of the 2016 Grammy Award for Best Musical Theater Album and the
2016 Pulitzer Prize for Drama. Hamilton has broken box office records on Broadway and its two national tours.
