It will be an exciting season for dining at South Coast Plaza with the addition of nine vibrant new restaurants. You’ll find a high-energy food hall, unique coffee houses, exceptional udon, contemporary fine dining and other fresh concepts. The details are found in our roundup on page 6. I’m proud to share honors recently bestowed on two of our culinary stars. Master chef Helene An of AnQi by House of AN received the Pioneer Award in Culinary Arts from the Smithsonian Asian Pacific American Center. An was cited as the “mother of fusion cuisine” for introducing Vietnamese cooking to mainstream America. Chef Ross Pangilinan, proprietor of TERRACE by Mix Mix, was recognized as “Chef of the Year” by the Orange County Business Journal. TERRACE by Mix Mix was named in the top 10 of “Orange County’s Hottest Restaurants” by EaterLA as well as one of the top nine new restaurants in Orange Coast Magazine. Pangilinan was also honored by Michelin’s Bib Gourmand 2019. Exclusive boutiques continue to open at South Coast Plaza. New on the retail front in women’s ready-to-wear is Eve by Eve’s, Camilla, Zimmermann and soon Isabel Marant. Paris-based Moynat has debuted with beautiful handbags and leather goods, and we recently introduced Hammitt Los Angeles’ first retail boutique, featuring premium leather accessories. Chalk & Vermilion, a fine art gallery, has opened in the Penthouse. There’s much to discover this fall at South Coast Plaza.

Leave it to South Coast Plaza to launch exceptional restaurants this year. Knife Pleat and The Hall Global Eatery are groundbreaking efforts, but aside from flavors you won’t soon forget, the influential venues are emphatically unalike. Knife Pleat on the Penthouse level immerses diners in a refined atelier befitting its worldly couture neighbors. Here is where respected French chef Tony Esnault creates bespoke seasonal cuisine, with his gift for elevating classic dishes to uncharted heights.

Consider his sophisticated take on escargot. Each is carefully encased in translucent pasta, embedded with tiny parsley leaves, then served in a shallow bowl of steaming mushroom-celery broth. It’s a brilliant first course. Honey-spiced duck breast and legs confit from Long Island’s fabled Crescent Farms makes a lovely entrée, pairing the rich bird with celeriac, yams and tart-sweet pomegranate. For dessert, share the shimmering Caramel, an intriguing dome enclosing V.S.O.P. Cognac mousse, almond cake, crumble and caramel ice cream. Esnault’s brand of ingenuity is well matched with partner Yassmin Sarmadi, herself the visionary restaurateur behind the seminal L.A. bistro, Church & State. Expect to see her elegantly gliding about the ethereal space, greeting diners and quietly checking on every little thing. At Knife Pleat, tiny details matter. Calvados, a nod to Dior’s birthplace in Normandy. And if you can swing it, do peek into both restrooms and admire an artful contrast of design.

The Hall Global Eatery Located on level 1, The Hall Global Eatery will transport visitors to a bustling, vibrant setting reminiscent of a bazaar or lively souk. But instead of colorful spices on burlap bags, the sprawling 8,000-square-foot indoor/outdoor space will be dedicated to a dizzying inventory of foods. It will open early for coffee bar classics, boosted by Amar Santana’s worldly palate. Prefer to drink your breakfast? A customized fresh juice might have OJ, beets and ginger. Midday, make a casual meal of platters of tender kebobs— lemony chicken or spicy kafta—alongside fluffy rice, silky hummus, smoky baba ghanoush, herby tabbouleh and fluffy pita bread. This may be a fast meal, but hardly fast food. Fresh daily grab-and-go items will tempt diners in a hurry, and are easily dressed up with extras from a larder that includes wine, chocolate and other delicacies. For those desiring a full-service, leisurely experience, there will be Santana’s brilliant new Crudo concept. Savor a raw bar with creative dishes such as fresh red snapper with kaffir lime leaves, white peach purée, dots of smoked

rosemary oil and a lacy squid ink tuile, or perhaps luscious salmon belly ceviche in a pool of carrot ponzu. Not into raw? There’s a whole baked sea bream cloaked in chermoula and accented with fennel and carrots. Or ponder Santana’s gorgeous house-made charcuterie. And since you’re already at the bar, consider a cocktail by esteemed master Michael Rooney. It’s as if Santana and steadfast partner Ahmed Labbate, faced with inventing something wholly new, just couldn’t say no. “Rather than copy Vaca or Broadway, we opted for creativity and novelty.” Isn’t that more inspiring? “It is to me,” admits Santana.

INTERNATIONAL CUISINE TAKES CENTER STAGE

Marugame Udon Japan’s foremost maker of the noodle, Marugame Udon, has opened its first Orange County location at South Coast Plaza. The interactive experience draws in newbies while still pleasing udon veterans. Chefs hand-pull noodles at the front of the restaurant, to better draw in customers. Once in line, guests are handed a tray and begin the selection process. At different stations, cheerful workers prepare 11 types of udons (silky nikutama, savory kitsune, umami-rich bukkake, among others) and explain each. Grab some of the freshly fried tempura or musubi (rice wrapped in seaweed along with meat), top your udon with minced garlic or green onions, find a seat, and enjoy the J-pop blasting through the speakers along with your soup. It’s a fun, delicious experience, and a popular one: Marugame was getting so many O.C. fans at its Los Angeles locations that “we wanted to expand farther south to offer our food to the Orange County community,” according to Makoto Smith, spokesperson for Marugame in the United States. But Marugame doesn’t rest on its laurels. They create seasonal specials and import a unique flour from Japan for the right springiness of its noodles. So drop into Marugame, and slurp up what the rest of America will discover in a couple of years. Outpost Kitchen Fans will be delighted to know that Outpost Kitchen will open on the ground floor of the 3420 Building at the corner of Bristol and Sunflower, across from South Coast Plaza. The

cool, quick-service establishment will have a full bar and an outdoor patio to enjoy those libations. “We’re developing an incredible cocktail program that follows the same philosophy of our kitchen”, said owner Jay Lewis, “with an emphasis on locally sourced, seasonal, organic and GMO-free produce.” Loyal clientele will be happy to hear that many of the signature dishes will be available, such as the in-demand date mate salad, Aussie scramble, and “real” avocado toast. Executive chef David Osborn plans newer eats that will maintain the lively flavor profiles they’re known for—such as a biodynamic rice bowl and South Coast lemon pineapple chicken. Our favorite option is the decision to also serve dinner, giving diners access to fare morning, noon and night. A fan of pop culture, Lewis has scouted vintage markets for statement furnishings to complement the modern vibe of Outpost Kitchen’s laid-back Australian lifestyle.

A couple of years ago, José and Kay Gutierrez opened Eqeko in downtown Santa Ana to immediate acclaim. Their smart, approachable takes on Peruvian food won a loyal following. Now, the husband-and-wife team has brought their talents to COSTA—and have elevated their game with robust flavors and authentic made-to-order cuisine. The small-but-chic restaurant focuses on JapanesePeruvian cuisine, a fusion style first popularized in the southcoastplaza.com 9

United States by Nobu Matsuhisa and one based on Peru’s long tradition of Asian immigration. You taste the exciting possibilities throughout the menu. Tiraditos are a style of sashimi enlivened with lime and ají amarillo, a flavorful Peruvian pepper that lightly numbs your lips. A quinoa salad reimagines the paleo-diet favorite by including apricots and cucumbers. COSTA’s take on lomo saltado, a beefy Andean classic, gets classed up with filet mignon and a soy sauce marinade. It’s a restaurant that would play well in downtown L.A. or Lima—but is perfect on Anton Boulevard. For now, COSTA serves wine and beer, with an emphasis on South American vinos. Two signature non-alcoholic drinks, maracuya (passion fruit juice) and chicha morada (an earthy purple corn drink) are prepared daily. “Peruvian cuisine has been building its fan base over the last few years,” Kay Gutierrez says. “We are honored to be a part of the growing variety of eateries at South Coast Plaza.”

and an early competitor on Food Network’s The Great Food Truck Race, Seabirds Kitchen’s evolution to a brick and mortar has been warmly embraced by a loyal following and will soon open a coveted spot in South Coast Plaza’s home store wing. A pioneer in promoting vegan cuisine, founder and proprietor Stephanie Morgan’s focus


is on showing how a plant-based diet can be completely satisfying with vegan offerings full of seasonal freshness and flavor. The casual, full-service eatery will offer lunch, dinner and weekend brunch. Menu highlights include Seabirds’ flavor-packed purple potato taquitos with chipotle sour cream, fermented curtido and almond feta; longtime fans covet the signature beer-battered avo taco. Popular brunch offerings are fluffy flax pancakes and a savory rosemary cheddar biscuit. Fresh blueberry mint lemonade is slightly sweetened with organic agave. On the menu for South Coast Plaza: a list of low-proof cocktails. Flavored simple syrups, shrubs and cold pressed juices will be made in-house to pair with spirits, kefir sodas and kombucha. “Great for those who want a fun and refreshing drink that won’t inhibit their shopping skills,” said Morgan. Sounds like a smart plan to us.

COFFEE CULTURE & CAFES

Philz Coffee

“Mission Made” is the phrase of choice at Philz Coffee. Its commitment to fostering community is apparent the moment you step foot inside the welcoming shop. Going against the grain, this “phamily” of coffee spots specializes in customized pour overs. Grinding your beans to order, each blend is created by founder Phil Jaber and comes with names such as Tantalizing Turkish featuring cardamom notes and Philtered Soul with nuances of hazelnut. The signature drink is a caffeinated, iced Mint Mojito that’s sweet, creamy and herbaceous. Practicing a non-traditional ordering method, each customer is assigned a barista. They will walk you through the menu, answering inquiries and guiding you to your ideal beverage. Take a seat while your barista works his magic, then return when your name is called to sample the finished product. Sugar and cream condiment bars are a

thing of the past at Philz; if you’re not fully pleased, they will craft another to your liking. Payment is the honor system: you are rung up after receiving the drink in a different line. The San Francisco brand believes in carved-out nooks for enjoying your coffee. Walls featuring floor-to-ceiling windows beckon the sun to shine inside. And while the cozy atmosphere is inviting, most patrons look forward to the level of service for which Philz is famous.

When Dripp began eight years ago, Sater quickly recognized a love for coffee and conversation shared by both customers and the community. As a result, the motto “Coffee Together” is a unifying mantra. Besides coffee, Dripp offers an extensive selection of cold and hot loose leaf teas, sweet and savory bites, and locally supplied ice cream cookie sandwiches.

Heartier appetites will linger over the large format plates such as beef Bourguignon and grilled branzino. Yellow Vase’s signature calling card isn’t just food. Patrons can purchase charming floral arrangements for spontaneous gifting. The petite frosted cakes, sure to sweeten any celebration, are an equally worthy alternative. In a hurry? Shoppers line up at the popular bakery for a quick sweet or savory pastry, baguette sandwich and beverage.

B

eloved British chef Jamie Oliver deserves a medal for popularizing the chef trick known as the sheet pan dinner. The technique introduced the home cook to the chefs’ trick of using high heat to cook food with tons of flavor quickly. All you need is a half or quarter sheet pan with a rim. Yes, you can make dinner in a toaster oven. I do it all the time. And no rimless cookie sheets need apply. The food tends to roll off when you’re not looking and meats especially can be juicy and that rim keeps your oven clean and gives a finished dish the benefit of flavorful juicy extras. I like lining my pans with parchment. You still get the benefit of the heat but cleanup is easier. Because I’m using the paper I tend to keep the heat a bit higher at 425 degrees. If you don’t care what your sheet pans look like or you’re willing to keep one for this purpose, then by all means use the sheet naked. The transfer of heat will caramelize vegetables and reduce the time of making a whole spatchcocked chicken. You’ll like both the lack of pots and pans for cleanup and everything for dinner ready at the same time.

SHEET PAN RATATOUILLE WITH FETA, ALMONDS AND BREADCRUMBS Think of this as a mixed grill of late-summer veggies but in the oven. So you have more opportunity to create tenderness and not just char on the grill. There are a lot of vegetables here so you’ll need to use an 18 by 13 inch half sheet pan. INGREDIENTS 1 medium eggplant, peeled and cut into ½ inch dice 2 light green Mexican zucchini, stem and blossom end trimmed 1 large red onion, peeled and cut in half vertically 1 firm large red bell pepper 1 basket of larger red cherry tomatoes, stems removed and cut in half 1 cup extra virgin olive oil Salt and pepper to taste GARNISH 5 large basil leaves, torn 3 ounces chunk French or Bulgarian feta, crumbled ½ cup roasted almonds, coarsely chopped Handful of croutons, smashed DIRECTIONS Preheat the oven to 425 degrees F. The eggplant will take the longest to cook so cut it small. I like it in a ½ inch dice here. Pre-salting the eggplant will help the finished texture. Toss it with salt and let it stand in a colander while you prep the remaining ingredients. 18 southcoastplaza.com

Then rinse eggplant and pat dry. Trim both ends of the zucchini then cut the zucchini in half lengthwise, then into crosswise half-moons about ¼ inch thick. Put the cut zucchini into a bowl large enough to accommodate all the vegetables. Lay the halved onion cut side down on your cutting surface and cut vertical thin slices. Add them to the zucchini. Cut the sides off the red bell pepper then thinly slice them. Slice the bottom piece too. Add it all to the onion and zucchini. Add the tomatoes to the bowl. Drizzle the vegetables with olive oil and season with salt and pepper to taste. Toss well so that everything has a slick of oil. Line the sheet pan with parchment paper. Lay the vegetables onto the baking sheet as evenly as you can. Roast the vegetables until they begin to brown, about 20 minutes. Remove from oven and mix and turn them with a metal spatula. Return pan to the oven and continue roasting until they are tender and have deep flecks of brown, about 15 minutes more. Remove from the pan and toss with the torn basil. Taste again for salt and pepper and give another glug of olive oil if you want. Serve on a platter topped with the crumbled feta, almonds and smashed croutons. Yield: 3–4 portions as a side dish.
