ROOKINGS — Education is the primary function of the South Dakota State University Davis Dairy Plant. But the ice cream tastes pretty good, too. As June is National Dairy Month, SDSU is in a unique position. That’s because the university is the only one in the United States that offers both dairy manufacturing and dairy production majors, according to John Haberkorn, Davis Dairy Bar manager. It also offers “on the job training” to those students through the dairy plant, which has two full-time employees, including Haberkorn. The rest of the operation is run by students majoring in dairy production, dairy manufacturing or food science. These students are involved in all aspects of the dairy plant including research and manufacturing of the milk into products such as cheese, ice cream and butter. “The plant is here for education, research and manufacturing products,” Haberkorn said. “Education is the number-one thing.” There are two types of research conducted at the dairy plant, inside and outside research. Inside research is done by graduate students pursuing either a master’s degree or doctorate degree. While outside research is companies using the facility to conduct their own research. Students are asked to help with both inside and outside research. Students are also actively involved in the manufacturing of all the products produced at the dairy plant. “(They are) good at teaching you. I had no idea how to do any of it,” said Shelby Riddle, quality assurance manager at Davis Dairy Plant and senior dairy manufacturing major. “Here you are always learning.” Continued on page 6 JUNE 2017 SOUTH DAKOTA FARM & RANCH 5

One way is by creating specialty cheeses. During the school year, every time the dairy plant makes cheese, a student edition specialty cheese is created. The last one made at the dairy plant during the 2016-17 school year was called Mitch’s Maple Habenero cheese. According to Haberkorn, since adding the student edition cheeses, the cheese sales at the dairy plant have doubled. The same recipe has been used to make SDSU Ice Cream since the very beginning, according to Haberkorn. Even though South Dakota State University is known for its ice cream, the dairy plant also produces cheese, butter and fluid milk.
SDSU ICE CREAM Ice cream at the Davis Dairy Plant is created in a nine-step process. The milk is received from the SDSU Dairy Training and Research Facility, which is located 1 1/2 miles north of campus. Once the milk is received, it must be tested for quality before it can be put into silo tanks. The milk must pass through tests for antibiotics, temperature and acidity among others. “Even though (the milk) comes from our dairy farm it is still tested for quality,” Haberkorn
process. During homogenization fat globules within the milk are broken down by 2,500 pounds per square inch of force. Once the globules are broken down small enough they will stay in suspension within the milk. After the milk and other ingredients have been homogenized the mix will be put into a holding tank for 24 hours. The tank can hold up to 5,000 pounds of ice cream mix. Flavor can then be added to the mix as it goes into a freezing machine. The ice cream will exit the freezing machine at 26 degrees and is packed into containers. The ice cream then sits in a room which is kept at a temperature of 40-degrees below zero. It will stay in this room until it passes the positive release tests which can take 24 to 72 hours. “This way we know we have a safe and quality food,” Haberkorn said.
MAKING CHEESE After milk is received and passes the initial quality assurance tests. These are the same tests that the milk passed to make the ice cream. The milk will then be put into a pasteurizer to be pasteurized at 162 degrees for 15 seconds. It is then transferred into a cheese vat. The vat is set at a temperature of 88 to 90 degrees.

– JOHN HABERKORN said, “If it doesn’t meet our standard we won’t take it.” After the milk passes tests, it is put into a separator. The separator is a bowl that spins at 7,200 rotations per minute. This will separate the cream from the skim milk. Since the butter fat in milk is lighter, the rotation will force the fat or cream to the top of the bowl. A combination of skim and cream are taken to a liquefier to blend together the milk and dry ingredients such as sugar. The mixture will come looking like a slurry. Pasteurization is the next step in the process. “Pasteurization is basically a time and temperature relationships,” Haberkorn said. To be considered pasteurized, the milk must be heated up to 180 degrees Fahrenheit for 15 seconds. At the plant, milk is pumped through the pasteurizer at a rate of 6,000 pounds per hour. At this speed it takes the milk at least 15 seconds to go through the machine which passes the legal requirements. Homogenization is the sixth step in the 6 SOUTH DAKOTA FARM & RANCH JUNE 2017
Once in the cheese vat a starter culture is added to the milk. “The (starter) culture will make the milk look like Jell-O,” Haberkorn said. The milk is cut into cubes, making curds and whey and the mixture is cooked and stirred. It is put into a drain table and the whey is drained off. The leftover curds are salted to promote quality assurance, inhibit bacteria growth and add flavor. The cheese is then pressed and comes out a 10 to 23-pound block of cheese.

PRODUCING BUTTER After the milk has gone through the separator, the cream is taken out and pasteurized before being put into the butter turn. As the turn turns the cream, butter and buttermilk are created. The buttermilk is drained and salt is added to give the butter flavor. The SDSU butter is only sold and used on campus while cheese and ice cream are sold both on and off campus venues.

achines run from sun up to sundown during May and June at Agronomy Plus Seed in Mitchell. The company is working long hours to treat soybeans to fit each farmer’s specific seed orders as planting season hits full swing. “We are running long hours because the farmers do,” said Chuck Chernotik of Agronomy Plus Seeds, noting this is the “busiest time of the year.” The process begins in December, when soybeans are preordered by farmers indicating the type of soybean and treatment they would prefer. Each order is then kept in a logbook until the spring when the beans are treated and picked up by the farmer. Agronomy Plus Seeds supplies more than 24 types of soybeans to choose from or they can bring in their own seeds from other suppliers to Agronomy Plus for treatment. Since each order is specific to the farmer, different increments of water, oil and treatment are added to each of the soybeans. There are two different types of custom blend treatments at the company that the farmer can choose from: acceleron, which is a fungicide, and acceleron plus, a fungicide and an insecticide. The farmer can also chose to add a TagTeam inoculant to their seeds. The TagTeam inoculant has two purposes. The first is that it has an enzyme to help pull the phosphorus out of the soil. found in the soil. It can be very expensive to put into fields so using the inoculant decreases costs. Inoculant also helps the soybean plant understand when to start producing nitrogen. While choosing the right treatment is a priority for farmers, they also must consider costs. “(Farmers) are having a tough go. Profits are low, costs are high and anything we can do, like this TagTeam to help that,” Chuck Chernotik of Agronomy Plus Seeds said. There two different forms of the inoculant, standard that lasts up to 48 hours and extender which lasts up to 90 days.
THE TREATMENT PROCESS With a push of a few buttons Chernotik brings in 80 units — or 80 bags — of soybean seeds into the USC treatment machine. “It’s all automated to a point,” Chernotik said. “If I don’t tell it how many beans there are it won’t do it (treat them) properly.” At this point the seeds are still blonde in color and no treatment has been added. Once the seeds are in the machine, Chernotik starts the treatment process. During this process each bean is brought inside an 8-by-3foot drum that turns the beans at 1,000-pounds per minute until they are fully coated with treatment and inoculant. The seeds are dyed red in color from the treatment. After being dyed, the soybean seeds are brought into a conveyor and dumped into a box, which can then be loaded on to farmer’s trailers. The entire process only takes minutes to go through. Chernotik runs two machines at a time, allowing the company to be most efficient. This also allows for two orders to go at the same time, not being mixed together. And each machine has a different purpose, with one machine specific to roundup soybeans while the other treats Xtend soybeans. After the middle of June planting will be finished and all the seeds that have not been treated will be brought to the elevator.

FINISHING OUT THE YEAR After the busy spring season ends, the company will switch to chemicals for the summer months. This includes selling and distributing pour-on chemicals. These chemicals act like a fertilizer sticking to the leaves of plants. “It’s like giving plants Miracle-Gro,” Chernotik said. “It’s like pure nitrogen. There is no leaching or denitrification.” Once harvest begins, it will be time for Agronomy Plus Seeds to treat wheat. Wheat is treated starting the middle of September and ending in November. This season is less hectic for the Mitchell area since a smaller percentage of farmers are planting wheat. Then it will soon be time to start the “busiest time of year” all over again. “We are just like farmers. We run long hours. They are running their individual hours - some like mornings and some like nights,” Chernotik said. “Our job is to get them in and get them moving whatever time they prefer.”

UTCHINSON COUNTY — Planting season got off to a wet start in a southeastern South Dakota county and nearby region and left farmers in a hurry to finish planting. A mid-May downpour forced area farmers to take a break from planting, leaving them hoping for drier weather. One of these farmers included Derrick Preheim of Freeman. “It’s been a challenge,” Preheim said. But after Memorial Day, the weather changed for the better for farmers. In Hutchinson County, it was “pretty wet,” according to Darrell Hora, manager of Mettler Fertilizer in Menno. “We have had over 6 inches of rain. It’s frustrating for some but good progress can be made with one dry week.” Hora said before Memorial Day weekend. The dry week came shortly after Memorial Day weekend and Preheim was able to finish his planting by the second week in June. But it wasn’t without some challenges. Preheim started planting in April and finished his 500 acres of corn before the rain in May. But due to the high amount of rainfall, several acres of corn had to be replanted after the showers drowned the seeds. It also slowed progress on planting his 300 acres of soybeans, which were finished the middle of June. The planting season was very similar to last year for Preheim. He said the two seasons were identical, except this year he was ahead on planting soybeans. This is because he was able to plant more seeds before the rain came in May. In the Bridgewater area, farmers were “further along than last year,” according to Art Mueller, an agronomist at CHS Farmers Alliance Bridgewater — even with the rain before Memorial Day weekend. Rain was not the only factor playing a role in this year’s planting season. As crop insurance deadlines loomed in the near future for many, Mueller added many farmers knew it was time to finish planting. “They (farmers) know when to kick it into gear and get it done this time of year,” Mueller said. “They will get it planted.” According to Preheim, with the rainy days in May the crop insurance deadlines were a concern. This is because if crops are not planted by the deadline, the farmer would be unable to collect on the insurance. But as of the middle of June things were in “good shape” to finish before the deadlines. “Crop insurance is a federally subsidised program that helps minimize risk for the producers who take it out,” said Nancy Rumbolz of Statewide Ag Insurance. “It helps protect against revenue and production loss. It can help guarantee a bottom line.”
