unning a golf course in today’s economy isn’t just about catering to people searching for tee times – it’s something much bigger, according to Evergreen Country Club General Manager Bill Rogers. “I think what we’ve found out over the years, honestly, is we’re not in the golf business, we’re in the entertainment business,” he said. Rogers said golf is another form of entertainment, like going to the movies. The club has to perform and market itself accordingly. “We’re more than just golf,” he said. Rogers said the frequency of golfers coming to the course, which is just north of Elkkhorn on Highway 12, has gone down over the past few years. The said the average number of rounds per person has dropped. “People are getting older, they’re playing less, or they have younger kids and they’re busy with soccer, etc.,” he said. However, with the economy rebounding, Rogers said he thinks the sport as a means of entertainment is starting to bounce back. Expanding outside of just offering golf is something Rogers said just made sense from a business perspective. “We’ve built all these spaces, now how can we use it,” he said. Rogers said Evergreen is now focused on expanding further into the food business, offering a Friday night fish fry and a Monday night broasted chicken dinner beginning in June. He said they’ve included live music and appetizers on the patio on Friday nights, to draw more customers looking for different types of entertainment.

In addition, Rogers said, the club offers a Mother’s Day Brunch, two comedy nights a year and other special events, such as weddings. Rogers said having these types of events, specials and rental opportunities has a positive effect on business, noting people who have come to comedy shows at the club, for example, are re-booking for other events. “So, maybe we’re drawing a different cliental that’s into us more for entertainment than for golf,” he said. “We’re definitely seeing some of that.” Rogers said the public has responded well to the various events and specials they’ve been offering as expanded services outside of golfing. “We wouldn’t keep doing them if they weren’t successful,” he said. “We’ve hit on some things that work … people keep supporting what we’re doing so we keep expanding out.” Starting this summer, Rogers said, the club is introducing a new summer concert series, featuring local bands on four different nights between now and October. The series will

Shoreline fire destroys pier and lift Firefighters are able to prevent any damage to home

A fire destroyed a pier that was stacked along the shore and a lift at a Mill Lake home at W5489 Rocky Road. The home has been owned by the David Faller family since 2000. The fire call came in before 12 p.m. on Thursday, May 21, and the Lauderdale-LaGrange Fire Department contained the fire by 1:15 p.m. The home is at the base of a steep hill, which contributed to the difficulty of reaching the shoreline with fire fighting equipment. The LauderdaleLaGrange Fire Department managed to contain the fire before flames spread to the house. However, the wood stairs that access the shore were also significantly damaged along with several trees.

They can pick and choose whichever holes they wish to play on any given day,” said Bill Rogers, general manager at Evergreen. Evergreen is a public golf course but also has a membership for regular golfers looking to save money on green fees. Regular membership is available for a yearly $1,450, which also includes use of a golf cart. A less expensive option, a twilight membership, allows access to the course after 2 p.m. This membership is priced at $699. Daily rates Monday through Friday are $40 for 18 holes and $50 on weekends. This includes the use of a cart. Fees on Sundays after 1 p.m. are charged at a special rate of $20 for nine holes or $30 for 18 holes, which attracts many golfers ready for an afternoon round of golf either with a friend or a spouse. After 4 p.m. on Sundays children accompanied by an adult are allowed to play for free. Rogers also suggests that golfers check online for senior rates and random online specials. “We are the best value in Walworth County and very player friendly,” Rogers contends. The course is capable of handling golf outings up to 210 participants. Because it is a country club, many amenities are available for golfers. A pro shop carries golf shirts, shoes and other supplies. The Bunker serves lunch seven days a week. Hawk’s View 7377 Krueger Road Lake Geneva

(262) 345-9900 Hawk’s View is a fivestar-rated course noted for its bent grass fairways. Opened in 2001, Hawk’s View is ranked in the top 25 new golf clubs by Golf Magazine. The complex consists of 36 holes and amenities including a pro shop, lessons and a bar and grill for before or after refreshments. Como Crossings, one of the two courses at Hawk’s View, is best known for its changes in elevation. Two of the par-3 holes drop 100 feet from the tee to the green. Greens fees Monday through Thursday for 18 holes with a cart are $75 while the regular rate for nine holes with a cart is $45. There are lower rates for early or late tee off times. Friday through Sunday, the 18-hole with cart fee is $85 while nine holes with a cart is $50. A season pass may be purchased for $1,990. Barn Hollow, the second course at Hawk’s View, is a par-3 course and is considered family friendly. Yardage ranges from 67 yards to 222 making it appropriate for beginners, juniors, and seniors. Green fees Monday through Thursday are $20 for 18 holes and $15 for nine holes. Even lower rates are available for early birds and twilight players. On weekends 18 holes cost $25 and nine holes $20. Threewheel walking carts may be rented for $6 forn18 holes and $3 for nine holes. Collared shirts are required at Hawk’s View and denim is not allowed.

He won the Open in 1896 when it was held at Shinnecock Hills Golf Club on Long Island. The course is filled with mature oak trees, sand traps and ponds. While the course was designed for the average golfer it also provides a challenge when played from the championship tees. This 18-hole course is listed as a par-71. Daily rates are $28 for 18 holes with a cart or $20 without the cart. Nine holes with a cart is $22 or $15 for those who prefer to walk. Weekend rates are $37 for 18 holes with cart and $25 without the cart. Rates for nine holes on the weekend are $25 with cart and $20 walking. Corporate and individual memberships may be purchased. The first of the series was held last Saturday. In addition to offering more entertainment options, the club is committed to working with youth to raise a new generation of golfers, Rogers said. Evergreen Country Club has been the home course for Elkhorn Area High School for as long as he can remember, noting the school’s golf team played there when he was in high school 30 years ago, and also plays home to Palmyra High School. Additionally, Rogers said, the club works with the school district’s summer golf programs. “We’ve always tried to be friendly with the junior golfers,” he said. He said the only downfall

is they don’t have the space for a driving range at their location. “We would for sure if we had the space, but we just don’t have the space for that,” he said. “We make do the best we can without driving ranges, but that makes it really tough to do golf camps and junior lessons, etc.,” he added, noting the program previously used the driving range at Two Seasons Bowl in Elkhorn before it closed about two years ago. Rogers said he thinks the most important thing to them is that they’re a part of the Elkhorn community and always have been, noting that though they get a lot of weekend and summer visitors, the locals are still the backbone of the business, thanks to their year-round support. DICK HENDERSON Dick Henderson passed away on February 26, 2015, in Arlington Heights, Ill. He owned his LL 505 Lauderdale Lake Home for many years. Dick really enjoyed entertaining friends and family at his special lake

home. He was also a very active member of LLIA, serving as a Director for over 20 years. One of the LLIA initiatives Dick championed was provided young replacement trees for Lauderdale Lake property owners to plant on their property. These new trees were initially planted at the Lauderdale Lake Golf Course, and then made available to lake property owners to replace trees around their homes that were dying from Dutch elm disease, Oak Wilt other causes. Dick was an active LLIA Director staying in contact with all the families in his District, and when health issues made it difficult to attend meetings, he

encouraged Debbie Ferrari to take his Director position. Dick was very pleased to introduce Debbie to the LLIA and even more proud when she was elected LLIA Vice President. Dick was born on June 11, 1928, in Chicago, and he and his family lived in Arlington Heights where he was the owner of an Educational Marketing Service Company. Dick is survived by five children and many grandchildren. He was preceded in death by his wife of 55 years, one son, one grandson, and his parents. The LLIA is honoring Dick with a Memorial Brick that will be placed in the Island Woods Overlook recognition patio.

Tested in fire Moy’s has risen twice to remain a go-to spot for Chinese food By Janet

T

here are quite a few restaurants in Walworth County. Most are chains or small local shops where travelers and harried 9-to5’ers can grab a quick meal. A few, however, have collected reputations for serving consistently good food in a congenial atmosphere for more than a dozen years, and these belong to an elite cadre. In this group, the best Chinese cuisine is synonymous with Moy’s. The restaurant bearing Paul Moy’s name is in a historic red brick building on the northeast corner of the intersection of Wisconsin and East Walworth streets in Elkhorn, within view of the government center. This building was originally the Elkhorn House Hotel, built in 1893, and later renamed the Loraine Hotel. A four-story clock tower with time-ravaged features glares westward, its broken mechanism showing hands fixed on the same minute and hour for many years. It’s often difficult to get a parking place here except on Monday, when the restaurant is closed. This food destination has become a local hangout, as well as a “let’s do something different for lunch or dinner” and a “we’re celebrating!” goal. With its extensive menu of Mandarin,

Cantonese, and American cuisine featuring Paul’s own blend of exotic spices, it’s no wonder patrons come repeatedly from Milwaukee, Racine, Kenosha, Beloit, Janesville, and Chicago. Great recipes There are several reasons for the restaurant’s exceptional reputation. “Everything is made fresh right here, except for the spring rolls,” Paul Moy explained. This lets him keep a very high standard of quality regarding the food served to his customers. He has extensive experience in the restaurant business – he started when he was 16 years old. Moy reconstructed the restaurant’s menu in 1996, incorporating new dishes. There are six Chinese cooks at Moy’s dedicated to making Paul Moy’s recipes. The portions are always generous. Twenty-nine people are on staff, and the majority love it there. Several have been a part of the business for more than 25 years. Moy works hard at bringing good food to his customers. “I have to be here,” he said. “Even on Monday, my day off, I’m here working, most times alone. I’m often the first one here in the morning, and the last to leave at night, after I check that all the stoves and everything is turned off.” He has two sons, but he steered them away from the food business. “I wanted

Wisconsin fishing licenses needed for all anglers over age 16 Wisconsin residents who are 16 years old and older need a fishing license to fish in any waters of the state. Residents need a fishing license to take rough fish by hand, hook and line or to spear fish where allowed. Residents do not need a fishing license to take smelt, rough fish, or minnows with nets, traps, and seines of legal size. (Obtain the Wisconsin Department of Natural Resource’s Guide to Wisconsin Spearing, Netting, and Bait Harvest Regulations for additional regulations). Nonresidents who are 16 years old or older need a nonresident fishing license to fish in Wisconsin waters with hook and line. T

he Staller Estate Vineyard and Winery is a family affair that combines Wisconsin summer sun and soil with the right grapes and a passion that only a husband and wife can apply to the process. Joe Staller is the garrulous voice of welcome, the historykeeper, the main planter of vines, and the maker and repairer of the thousands of yards of heavy wire trellises on which the grapes grow. Wendy Staller is the quiet power behind the family who keeps everything and everyone working together. She is also the head winemaker. Things happen around her with little hint of the complexity of the operation. Although both contribute their knowledge and expertise to the taste and look of their European-style wines, Joe claims that Wendy’s palate and nose are superior to his. Their final product has only so much science guiding the

growing, the pressing, and the aging – the bottled result is due partially to that, but also to the magic of Mother Nature. This seems an incredible statement from two people with scientific backgrounds. Wendy grew up in East Troy, specializing in science and math during school. She decided on biology and chemistry as a career, and entered the University of Wisconsin-Whitewater in 1997 to pursue her double major. Joe grew up on a dairy farm in Whitewater. His early fascination with chemistry and biology led him to a job at the former Randy’s Restaurant and brewpub in Whitewater. Beginning as a brewer’s assistant, Joe’s attention to detail and his fascination for beer making eventually secured him the job of primary brewer. He served four years in that capacity while attending the UW-Whitewater from 1998-2002. It was there he met Wendy, and the two fell in love. They were married in 2003 and settled in a Whitewater

apartment. Wendy became an analytical chemist at a local laboratory. Joe found work as a polymer chemist concocting adhesives and sealants at Epic Resins in Palmyra, a job he still holds. “It’s a real job that keeps me out of Wendy’s hair,” he said. The two shared an enthusiasm for home brewing, and always had some concoction going at home. It was a natural step for them to move from beer into Wendy’s major interest, wine. Wendy decided to get more education to continue their quest professionally. With Joe’s encouragement, she enrolled at the University of California at Davis and earned a degree in Winemaking. Then she and Joe began looking for property where they could realize their dream of owning a winery. In 2006, a three-acre hobby farm near the intersection of Highway 89 and Highway A west of Delavan came on the market. It featured several buildings and an older house. The Stallers bought it, and

Southeast Wisconsin natives Doug and Kathy Jackson will celebrate three years in the winery business in Lake Geneva this month. East Troy native Doug Jackson, a retired wine distributor, and Burlington native, Kathy Jackson, an artist, opened the Studio

Winery in Lake Geneva three years ago May 21. The couple began their new venture upon retirement and named the winery “Studio” in recognition of Kathy Jackson’s accomplishments as an artist for McDonald’s, Bed, Bath and Beyond and the NFL throughout her career. The business at 401 Sheridan Springs Road, is an “urban winery” that produces about 25,000 cases of wine a year, said Doug Jackson. Its one-site vineyard grows about 1 percent of the grapes used in its annual production

of wine, he said. Four farmers in McHenry County, Ill., produce grapes for the winery, and the Jacksons buy grapes from California, Washington and Oregon “because they can grow things there that we cannot grow in the upper Midwest,” Jackson said. In the temperate climates of California, Washington and Oregon, vinifera grapes are grown, Jackson said. Vinifera are the grapes used in wines “that everybody’s heard of” – like merlot, pinot

started the tremendous work of converting the farm into a vineyard-winery, and also finding other local grape growers to provide fruit for the wines they planned to make while their own plants matured. “We wanted to share our passion for farming and our love of family and people,” Joe said. “Also our passion for the wine aesthetic.” People who knew them were incredulous regarding their efforts. “You grow grapes in Wisconsin?” Joe quotes and laughs, then gestures with both hands. “Yes, we do. All of our grapes are winter-hardy varieties.” The Stallers had to research the best fruit for this region. They eventually planted Maréchal Foch, Frontenac, and La Crescent grapes. They now produce 13 varietals, including two porttype wines and a rare ice wine made from grapes naturally

frozen on the vine. This is the most complex wine the Stallers make because so little water remains in the liquid pressed from the grapes. Everything at the winery is geared to hands-on, smallbatch production. Another important part of the Staller experience is how they choose to close their bottles. The Stallers used real corks when they began the winery, but have had to switch to synthetic ones except for their high-end wines. “Corks are natural and have natural variations,” explains Joe. “There is also a certain percentage of oxidation that occurs to the wine through natural corks, which is good. But there is always a certain amount of failure.” In these days when even expensive wines are protected by the more secure screw tops, Staller does not use them. Pulling a cork from a bottle, according to Joe, is

an important part of the wine aesthetic that shouldn’t be lost. Their proudest accomplishment in business is the customer following they’ve built, mainly by word of mouth. noir, chardonnay, cabernet sauvignon, he said. Those grapes can’t tolerate temperatures that dip below 0, he said. All of the grapes grown locally are hybrids, Jackson said. They contain riparia or labrusca grapes, he said. Riparia is a cold-hearty species of grape that grows wild in Wisconsin and all over the upper Midwest, Jackson said. “It’s basically the grapes you see along the roadside,” he said. Labrusca is a species that is cultivated in colder climates, Jackson said. The Concord grape falls under that variety, although Studio Winery does not produce a wine from concord grapes, he said. On the Studio Winery property, the Jacksons grow Frontenac Gris, a red, hybrid grape used in its wines. They produce two series of wines – the Musicians series made from locally grown grapes and the Premier series made from vineyards farther away, Doug Jackson said. The wines are sold by the bottle only in the tasting room at the Studio Winery. The wines are not distributed to other retailers. “We can barely keep our regular customers happy with our inventory,” Jackson said. “There’s times when we run out. We’re more about making quality wines than quantity.” About 90 percent of the business’s wines are sold at the studio. The remainder is purchased by local restaurants. Jackson said Studio Winery wines are served at white-table restaurants in the Lake Geneva area and at the Colony House in Trevor. The Jacksons marked three years in business this spring with several special events to celebrate the anniversary. Studio Winery offers regular wine tastings Sunday, Monday, Wednesday, Thursday and Friday from 11 a.m. to 5:30 p.m., and Saturdays from 11 a.m. to 3 p.m. Each Saturday from 4 to 8 p.m. the winery offers live music.

Brokers offer an optimistic view Market for high-end, lake properties is improving, they say

The real estate market in Southern Lakes area appears poised to continue steady but modest growth this spring and beyond, according to a pair of local brokers. “Everything is pointing toward the market getting better,” said Joe Busch, president of Bear Realty’s Burlington office. Tom Martin, an agent with Keefe Real Estate’s Elkhorn office, offered a similar forecast. “I think it’s been a lot busier (this time of year) than normal,” Martin said. “Overall the market is pretty steady. There was still quite a bit of activity during what is traditionally our slowest time.” Steady, sustainable growth is what both brokers expect for the rest of the year – which, for them, is a nice change from boom-then-bust market of the last decade. “For the Realtors who lived through it (the bust of 2008), this is the new normal,” Martin said. Busch said the stable market has been a godsend for the professionals who work in real estate. “It’s an unbelievable change from 24 months ago,” he said. “People are making a living again. “Honestly, I would prefer it steady. It feels real – and that’s a healthy market, a

good market.” Time to deal? So what does that mean for people looking to buy or sell homes? In general, good things, according to the brokers. Statewide, the median price of homes has been growing for 36 of the past 37 months. That’s been good for sellers who are anxious to recover some of the property value lost to the market crash in 2008. While prices have grown steadily, they haven’t outstripped the ability of buyers, according to Busch. That fact, combined with continued low interest rates on home loans, makes the market relatively attractive to buyers. Aggressive financing packages for first-time homebuyers – some with little or no down payment required – have kept the market busy for modestly priced homes, Busch said. The bottom line, Martin said, is the economy continues its slow improvement, which injects confidence into buyers and sellers. “In general, the economy has been better and there are a lot more people out there looking,” Martin said. “Our offices have been busy compared to other years at this time.”

Moy uses a high grade of Black Angus beef, rubbed with his own special blend of tasty spices that heightens the meat’s exceptional juiciness and flavor. The American meals are served with salad, potatoes, rolls, and butter. Vegetarian selections are also listed on the menu. Moy has put together a section of family dinners that provide plenty of good food for up to six people to share, including appetizers. These selections have been carefully chosen to compliment each other, as well as give diners a variety of flavors and textures.

A special luncheon menu is available Tuesday through Friday from 11:30 a.m. to 2 p.m. featuring smaller portions than on the dinner menu. There is a page of delicious choices from beef, chicken, or shrimp kow rice to egg foo young combined with several other selections like chop suey, lo mein and chow fun, Mandarin choices, hamburgers, and French fried shrimp or chicken. Call the restaurant and the staff will prepare the lunch order for pick up in a short time.

“Business depends on many things,” Moy said. “Location is very important. In winter, snow and football slow things down. Summer is our busiest season.” When snow flies, though, a bowl of chicken rice soup followed by spicy Hunan shrimp might be just the thing to chase away a winter chill. Customers may have to wait a few minutes longer to get a table during warm months. It’s always good to call ahead for reservations. Moy follows a fundamental philosophy of life: “I keep my restaurant under control. Don’t be greedy, and live in moderation.” When asked about retiring, he laughed. “I hope to retire, I’m waiting for a sign. One day, he showed it to me. ‘This place is always full,’ my uncle said. I needed a job. So I opened my own restaurant in the mid1970s.” Moy understood American tastes, and had a fundamental appreciation of good home cooking. He knew that classical oriental food required some modification to tempt southern Wisconsin palates. “I developed my own sauces based on Cantonese, Mandarin, and European traditions,” he said. He also brought in influences from Thai, Vietnamese, and Korean cuisine.

Moy bought the red brick structure with the insurance money he received after the Delavan House Hotel fire, and started renovating it into a restaurant with three dining areas, private party rooms, and a bar with a separate entrance. Moy’s has been in that location ever since. On Jan. 8, 2007, Moy received an early-morning call. It was one of his cooks, who lived in an apartment next to Moy’s, telling him there was smoke coming from the restaurant. Moy dismissed the information at first – he knew he’d turned off the stoves. I’ve been coming here for years, and the food is always great.” Moy’s has built enough of a clientele to make it through the cold months, unlike some other businesses that flounder and die during lean times.

Local home sales continued upward climb during April By Bethe Croy STAFF WRITER

Walworth County led the three-county area, including Racine and Kenosha counties, in the increase of home sales in April with a 32.5 percent increase from April 2014, according to a report from the Wisconsin Realtors Association. A closer look at the three counties reflects the state pattern in growth of both the cost of homes and the number of sales in April of this year compared to April 2014. Walworth County reached 155 home sales in April compared to 117 in the same month in 2014. The county also had the lowest median price increase of 5 percent, $8,000 more than the $160,000 the year before. Racine County saw a similar rise as Walworth County in the number of home sales for April, increasing by 31.8 percent from 176 in April 2014 to 232 this year. The increase in the median price of homes, however, was the largest of the three counties, reaching $144,000 compared to $117,200 for an increase of 22.9 percent. Kenosha County showed the lowest increase in home sales of the three counties of 2.8 percent, up only 5 in April from 180 the previous year. The median price grew from $122,500 to $137,000 using the April 2014-vs.-April 2015 comparison for an increase of

11.8 percent. “I’d say this is the most fair market we’ve seen in probably 20 years,” Joe Busch, real estate agent and office manager of the Burlington branch of Bear Realty, said. Statewide, the median price appreciation in April was the strongest it has been since June 2013, which had median price growth of 12 percent, according to the WRA. The median price of homes statewide was $154,900 in April, up from $139,900 in April 2014 for an increase of 10.7 percent. The number of home sales in the state also showed growth with a 17.9 percent increase from 5,439 in April 2014 to 6,415 this April. “After a slow start to the year, the spring housing market has really come to life,” Dan Kruse, WRA board chairman, said. The Wisconsin Housing Affordability Index, which is based on 20 percent down payment on a 30-year mortgage financed at current mortgage rates, was at 238 in April. This number is not too different from what it was in April 2014, but is lower than January’s 264 figure. Income increases and low mortgage rates help keep costs low, but threats of potential higher interest rates in the future could affect affordability, according to the WRA. If interest rates increased,

Busch said he believes it would still be a “slow and steady change rather than a complete halt, like in 2009.” In the short term, rates will stay stable and a steady growth will continue as the market has seen over the past 24 months, Busch said. “There are several factors that contribute to these trends, but one of the most important is the tightening of available inventory in the state,” WRA President and CEO Michael Theo said. The state has 8.5 months of available home inventory, but it will be “much tighter in the urban counties,” Theo said. While rural counties have 13.4 months of available supply, metropolitan counties have only 6.7 months of supply, according to the WRA.
