To the Editor: Gray has been replaced with color. Trees are full and flowers are blooming once again. Spring is definitely in the air. Because everything seems a little brighter, it should be a reflection on new beginnings and hopeful futures. I wanted to write something special for Mother’s Day with all of its sentiment, but also to pay tribute to the many women who are breast cancer survivors, and especially to those who have sadly lost this battle. This crusade is very important to me for many reasons, mainly because I lost my mother to this disease when I was a very young girl. What was to become my legacy, thankfully did not become my fate. I am a breast cancer survivor, and I consider myself truly blessed. I am so grateful to have this opportunity to speak about this because it has not only affected me, but also family members and close friends. I would like to

Monday evening shooting claimed the life of Jamahal Miller of the 1300 block of South 29th Street. The 21-year-old had been outside of a residence on the 1300 block of South Fifth Street in the Dickinson Square West section when someone delivered 13 shots to his left arm and torso shortly before 11 p.m., Officer Jill Russell of the Public Affairs Unit said. He died at 11:12 p.m. at Thomas Jefferson University Hospital. As of press time, police had reported no arrests, motive or suspects. Cool reception Police are seeking assistance in solving the damaging of damaged air conditioning and refrigeration units in Whitman. A subcontractor took to the roof of Save-A-Lot, 48 Snyder Ave., at approximately 3:53 p.m. May 2 to assess previously reported damaged air conditioning units, Detective Danielle Tolliver of South Detective Division said. Another male, who claimed he also had authorization to perform repairs, approached the worker, whose inquiries led the unknown gure to ee on foot and leave behind hand tools. The complainant, who noted the mystery rooftop guest had no proof that he should be there, observed 11 compromised air conditioning units with missing copper parts, coils and wires, resulting in approximately $120,000 in damages, Tolliver said. Authorities are seeking the document-lacking man in conjunction with three April offenses in the surrounding area. The owner of New Super King Buffet, 40-44 Snyder Ave., reported missing copper pipes and coils from his property’s rooftop air conditioning unit 12:22 a.m. April 28, with estimated losses totaling $4,000. The proprietor of Global Seafood, 8 E. Oregon Ave., reported April 26 at 4:25 p.m. that an unknown person entered the rear of his establishment and took his refrigeration unit’s copper pipes and compressor worth a combined $25,000. Finally, a manager at Forman Mills, 22 Wolf St., noticed an air conditioner lter on the ground at 12:48 p.m. April 22, Tolliver said. He looked up to nd a hole in the ceiling where the full unit used to be and ventured to the roof, where he discovered the removal of three more air conditioners.

Authorities, including the 3rd District Crime Prevention Unit, have described the suspect as a white male approximately 40 years old; having a thin build and dark blonde hair; wearing a white T-shirt and black jeans; and possibly sporting a Superman tattoo on his neck. Cash and go Three incidents involving employees and a patron of Fishtown’s SugarHouse Casino have left area females seeking justice. At 5:20 a.m. Friday, a worker from the gaming hall returned to her Pennsport home on the 400 block of McKean Street only to have an unknown male grab her from behind, snatch her purse and push her to the ground, according to the 3rd District. The offender, of whom the complainant could provide no detailed description, ed north on Fifth Street. A Whitman woman coming from a shift at the casino at 3:33 a.m. April 26 likewise had a unknown man approach her from behind. Inserting her key into her home on the 2600 block of South Third Street, she saw him rushing toward her and suffered a punch to the face that knocked her to the ground. Her offender barked “Give me your bag,” which contained work identication, credit cards, $520 in cash and $40 in casino chips, then ed to a waiting vehicle described as green Pontiac or Hyundai after taking it, the 3rd District said. The offender was described as a black male; 25-30 years old; unshaven, with a stocky build; and wearing a black hoody. Returning from a stop at the facility at 2:06 a.m. April 19, a woman looking to use her back door to enter her Whitman residence on the 2700 block of South Fairhill Street noticed a male following her. She ran but fell, allowing the gure to come up to her directly and declare “I’ll take your bag,” which he subsequently relieved her of, the 3rd District said. The offender was described as a black male in his 30s; 5-foot-7 to 5-foot-9; and wearing a black shirt and similarly colored pants. A

picky eater as a child, Tedoro “TJ” Torres has since enjoyed acquainting himself with the irresistible allure of food. The 36-year-old resident of the 2500 block of South Camac Street has made culinary curiosity and competence his career and earned acknowledgment for his constancy by winning the April 19 episode of The Food Network’s “Chef Wanted with Anne Burrell.” “Receiving the recognition was unbelievable and left me in shock,” Torres said last week from his Lower Moyamensing home. “It’s a big achievement that validates the hard work I’ve put in my entire adult life.” The native New Yorker, who has spent most of the last 15 years in South Philly, returned to his home state in February after responding to social networking correspondence from producers. The second-season show finds Burrell, herself a veteran of culinary competitions through the network’s “The Next Iron Chef,” assisting establishments in their hunts for executive chefs, with Torres eager to see if he could fry his three competitors and emerge victorious. “Despite my interest in winning, I didn’t necessarily participate to find a new job,” the fifth-year executive sous-chef at the Center City-situated Pyramid Club said. “I wanted to sample the experience and see what it could bring.” Along with helping him to test his talent, the program gave Sonia and Monica Zaldivar the chance to hire the first executive chef in the 50year history of their New York City-based Cuban restaurant Victor’s Cafe. Spending a week consulting for the proprietors, Torres gained a great feel for their ambition and sought to rely on his Latin cuisine expertise fostered through his Puerto Rican heritage and jobs with Stephen Starr and Jose Garces to impress them and Burrell. He endowed them with a rack of lamb rubbed with the Cuban marinade abodo, sweet plantains and shiitake mushrooms for his first presentation, which they deemed the most flavorful. For his second task, he honored Cuban tradition by plating top-

round steak with green beans, pigeon peas and rice, then prepared filet mignon with a spicy crab salad and grilled asparagus. With no major critiques of the contestant following the final round, Burrell left deliberation to the mother-daughter pair, who tabbed Torres as their hire. “I’ve always looked to provide quality food, and I’m grateful they believed in my skills,” he said. “The whole time I was com-

Searching for his niche, he went through a self-described cocky period, but he modified that streak through Starr and Garces, highly revered restaurateurs with multiple Philadelphia eateries. “I came to realize I had to turn a corner and be even more passionate about what I’m all about, which is learning to enjoy helping people to enjoy their time out,” Torres said. His present occupation marks his longest stint at any location and solidifies his quest for stability. Knowing someone could charge him with hypocrisy because he interrupted that post to appear on a show, Torres counters by contending he ventured to t the Empire State to devise options for hhis future, which he hopes will include his oown restaurant. “Exposure is always a plus,” he said. ““The chance to go on ‘Chef Wanted’ came out of nowhere, so maybe someone will look at the episode and consider backing me down the road. Who knows?” No matter where he wields his utensils, Torres plans to continue to appeal to taste buds courting a little diversity yet does not aim to reinvent the wheel when pondering his creations. “I had initially thought of cooking as a business because it involved something that would never go out of style, obviously,” he said. “As I’ve taken in all these experiences, especially the ones from the show, I know there is definitely an economic element, but it’s more so about having great products at fair prices. From my standpoint, I want to cook for everybody and take on all tastes.” SPR

AQUINAS CENTER continued from page 1 The West Philly dweller began her involvement with the ambitious initiative last year at the request of Monsignor Hugh Shields, pastor of St. Thomas Aquinas parish, 1719 Morris St. Having completed her dissertation thesis on the adaptive reuse of church properties, Welch accepted the task of determining how best to repurpose what had been a convent, using St. John Neumann Place, 2600 Moore St., an independent living community that formerly served as St. John Neumann High School, among her case studies. The duo helped to dedicate the space Jan. 27 and have plotted its progress through English classes, faith formation activities, legal seminars, prayer groups and workshops. “We’re here for everyone, especially immigrant families,” Welch said, citing steadily increasing Cambodian, Chinese, Indonesian, Mexican, Spanish and Vietnamese clans. “We want that solidarity and mutual support to be our hallmark.” SHE HAS BEGUN to burgeon unions with the City of Philadelphia Mural Arts Program and PhillyRising, the latter a City collaborative calling on exchanges with community figures to address crime and quality of life matters. The former agency has aligned Welch with artist Eliseo Silva, whose Northeast Philly-based creation “My Heart’s Sole Burning Fire: 100 Years of Filipinos in Greater Philadelphia” includes St. Thomas parishioners and who will likely venture to South Philly by July to create a mural for the center. For Saturday, though, the gathered inhabitants emphasized their spiritual home’s three-year friendship with the Ivy League institution. “We’re looking for a long-term partnership to reinforce that everyone has knowledge and literacy,” Mount Airy occupant Campano, who attends Mass at St. Thomas, said. “We did a family program two years ago and are really excited to continue to develop means to promote peace and social justice.” He made implementing the PennPal procedure one of his first choices and has delighted in each culminating experience through which his charges and their letter mates finally meet and engage in educational activities such as poetry recitals and crafts. “We Indonesians really appreciate what St. Thomas Aquinas and University of Pennsylvania workers do for us,” 13-year parishioner Daby Lie of Seventh Street and Snyder Avenue said over the infectious sound of the young ones’ laughter. With two children in the faith community, she also respects the emphasis on upping their civic awareness and overall exposure

to culture and the power of self-belief. “Everybody needs encouragement,” Lie said. “It’s just great to have it and be able to build on it with like-minded people.” Following a pizza lunch, the youngsters bid farewell to their visitors and accompanied Welch to the courtyard for their other endeavors. Reflecting the cultural cornucopia of her helpers, the director selected Filipino, Indonesian, Mexican and Vietnamese images to inspire the creation of three panels for the enclosure. “Let’s really show our pride in and acceptance of our nationalities and heritages,” Welch said as the Indonesian handlers gained valuable experience with understanding the depth of artistic depictions. While the younger group experimented with colors and inquired about each piece’s intent and ways to enhance vibrancy, a few eighth graders tended to the center’s threeweek-old garden. “I’ve been a part of every service day since September,” Bernard Convento said of the month that intensified the repurposing process. “I’ve liked that because I’ve been able to help people in need and expand my knowledge of my responsibilities to them.” Prior to Saturday, the resident of the 1700 block of South Bancroft Street had assisted with the installation of beds for retreats and prayerful weekends and spruced up the center’s walls and windows. Eagerly

grabbing his equipment, he addressed the green space, which will yield goodies such as mint, peppers and tomatoes. “For me as an eighth-grade student, it’s been really important to give my time and see to it that as many people as possible are happy,” the teenager, with teacher Joanne Gledhill looking on, said. “It’s great to be a part of so many things.” Hoping by the summer to do a much larger cleanup akin to their January interaction with PhillyRising, the locals conducted a mini tidying of the surrounding environs to further their leader’s appreciation for their willingness to balance levity and severity in maintaining their community. “I’ve accumulated a big network of resources through 10 years of similar work,” Welch said, “and I’m proud to be able to count today’s participants among my allies as we try to bring so much to fruition.” “The combined efforts have been rewarding,” Campano, who might start the next PennPal campaign in the fall, added. “Now comes the task of uniting as many seemingly diverse beliefs and opinions together to get to the core of what drives all communities, namely, education and hope for our children.” SPR For more information, visit staquinas.com. pon next month’s completion of his second year as principal at Girard Academic Music Program, 2136 Ritner St., Dr. Jack Carr will assume the head of school position for the soon-toopen, Center City-based String Theory High School for the Arts and Sciences. Doing so will align him with the same nonprot that oversees the Philadelphia Performing Arts Charter School campuses at 2407 and 2600 S. Broad St. “We are really, really happy to be able to welcome someone with as much energy and commitment as Dr. Carr,” Angela Corosanite, the sites’ founder and chief executive ofcer of String Theory, said Wednesday. Her new hire has helped to helm the Girard Estate school for its entire 39-year history. In his new position, he will come to welcome as many as 1,775 learners, according to Corosanite, by 2016-’17. lessed with a friendly disposition and a knack for composition, Roberto Pace deems music a godsend capable of cutting through discord and uplifting spirits. The 63-year-old has fostered a fourdecade career as a champion of notes and resolve and will continue his advocacy 7 p.m. May 21 when he and 120 children debut “Time Machine,” an exploration of testing one’s tolerance that will help the Children’s Hospital of Philadelphia to celebrate its spring festival. “I came of age in an era that had amazing pluses, including the fluidity of possibilities in music,” the composer recently said from his home on the 1500 block of East Passyunk Avenue. “Everything now seems so compartmentalized, but I’m hoping this piece captures a diverse sound and tells a compelling story.”

Pace crafted most of the nearly 20-minute work last year following the receipt of a commission from Bob Augur, a benefactor of CHOP and the Settlement Music School family, including the Mary Louise Curtis Branch, 416 Queen St. Having enjoyed a 16-year tenure as a music theory and piano instructor at the Queen Village site, the Passyunk Square resident set out to produce something that would address the participants’ and the audience members’ needs to analyze uncertainty. Scoring the creation for acoustic bass, children’s choir, percussion, piano and synthesizer, he will present the tale of youngsters who happen upon a time machine while on a class trip to a science museum. Their curiosity leads them to enter the device through which they gain insight on the Lenape culture courtesy of a chant and encounter a stegosaurus. Aside from the Native-American homage, Pace penned the entire project and designed it as a tribute to the hospital’s patients. “The work is really a metaphor for coming out on the other side after having shown enough bravery to face the unknown,” the tunesmith, who will play the piano, said. “Because of what those kids are going through, I hope to build their hope and let them know how proud they should be of themselves.” His singers will represent Settlement’s

combined choir and thus far have impressed their overseer through their handling of his output, which he said has urban elements to reflect their diverse backgrounds and social intelligence. Theatrical and situational, their participation is furthering his fondness for honing an artistic voice that shuns complacency. “I think of my style as lyrical, rhythmically vibrant, intense and pursuing a dictum of maximum variety,” Pace said. “There’s always a kinship between the past and present, and I’m excited to explore that and plot for the future.” THE NEW YORK City native and 13-year South Philly dweller began his infatuation with progression as a youth, with the thumping soldiers’ chorus from French composer Charles Gounod’s opera “Faust” enthralling his ears and soul. Using the trumpet as his first tool, he noticed an innate ability to play and gained enough confidence in his competence to shift his focus from valves to keys. “I started composing immediately upon taking piano lessons,” Pace, who tabbed heavyweights such as Johann Sebastian Bach, Ludwig van Beethoven, Arnold Schoenberg and Béla Bartók as inspirations, said. “My instructors told me I had my own voice and, again, I benefited from maturing

during a period that welcomed exploration.” His curiosity and acumen led him to Boston’s New England Conservatory for Music, with Pulitzer Prize-winning composer Donald Martino guiding his gumption, and to the Milan Conservatory and Manhattan School of Music. Crediting his Italian and Scottish ancestry for his diligence, Pace possesses a penchant for polishing pieces until they contain a viable vibe and identity. He has prospered from having that trait through positions with and commissions from notables such as the Dance Theater of Harlem, the Alvin Ailey American Dance Theater, the New York Philharmonic, the Viola Society of Philadelphia, the American Composers Forum of Philadelphia and Rowan University, his four-year employer. “I love engaging myself in my endeavors because there’s such a thrill in creating, refining and presenting,” Pace, whose 1981 production of “Man of La Mancha” scored the Kennedy Award for Best Musical, said. In addition to stops across the country, the spry figure has reveled in performing in Canada, Europe and Japan. Further distinction includes claiming the first Anthony Newman Prize for artistic and academic excellence upon his ’97 receipt of a master of fine arts degree in composition from Purchase College, State University

He and his spouse, a flutist for Bella Vista’s Tempesta di Mare, 1034 Carpenter St., have a 4-year-old son who is strengthening his musical appreciation, a joy for the patriarch to behold especially since children will dominate “Time Machine.” He finds himself beholden to Augur for his artistic sensitivities and considers his collaborators on the free performance a collection of future originators who have likewise committed themselves to promoting music’s healing qualities. “Spreading happiness will be our mission,” Pace, currently preparing his works for publication by the Association for the Promotion of New Music, which added him to its advocates two years ago, said. “We’re serious about being silly.” SPR

In one instance, after my wife was told to call the sanitation department directly, the guy answering the call chastised for calling his office directly and then abruptly hung up ... I agree with those who believe that the greatest threat posed to us today is from Islamic radicalism with the emphasis on radicalism. However, we shouldn’t tar every member of that religion with the same brush. Remember it was the local Muslim community that helped foil a plot to blow up the rail line between the U.S. and Canada ... The six most frightening words in the English language — “Anthony Weiner is back on Twitter.”... The plump, self-important Dennis Rodman-loving dictator of North Korea has paused in his diatribe against the U.S. apparently to watch NBA games on the DISH. His missiles remained on the launching pad after all his bluster. It is likely if they had left the launching pad, they would have landed in the ocean like all the others he tested. Maybe he blinked because of Chinese persuasion. Maybe it’s just that it’s NBA playoff time. ... I was all in agreement with the politicians who complained that the Automated Value Initiative known as AVI needs some tweaking and then one of them went and claimed that the current system is better. ... It is being reported that the Dutch may be planning a reality show that would actually consist of the contestants having to live on Mars (not Bruno Mars, the planet Mars). Now if they could only get Ryan Seacrest to host it, I’d pay to send him there. ... Tom Corbett is the most anti-poor, antimiddle class governor that we’ve ever had in this state. His most notable failure has been in creating new jobs in Pennsylvania. Corbett claims too many of the state’s residents can’t pass a drug test. Funny, neighboring states don’t have the same problem. Corbett must go. ... After the Cleveland Indians defeated the Phillies last week, the Daily News used the word “Injuns” in its back page headline. And I thought “Redskins” was politically incorrect. Incidentally, there is a move afoot in Washington to change the racist nickname to “Redtails” to honor the Tuskegee Airmen, a much celebrated group of African-Americans who flew in World War II. I appreciate the sentiment, but not many folks would associate the name “Redtails” with the Tuskegee Airmen. It is easy to imagine the slew of bad taste jokes that would circulate. Still packing ‘Iron’ ■ By R. Kurt Osenlund Movie Reviewer

M

ore than anything else, “Iron Man 3” succeeds in proving the skeptic wrong. In our superhero-saturated cine-universe, it’s only natural for one to question why on earth we need another Iron Man film, beyond the obvious reason of it being a mega cash cow for Marvel Studios. With so many comic-book legends packing our movie screens lately (Superman, Wolverine, and Thor also will be back soon), it’s hard to think of their ongoing tales as anything but flashy extensions of bankable brands. But the third outing of Tony Stark (Robert Downey Jr.) does a killer job of suggesting otherwise, standing far outside the generic crowd of capewearers and weapon-wielders. Directed and co-written by Shane Black, whose directorial debut, “Kiss Kiss Bang Bang,” also starred Downey Jr., “Iron Man 3” is as much a comedy as it is an actioner, and it’s a riotous comedy at that. Stark’s playboy snark worked to establish his persona in “Iron Man,” grew gratingly tiresome in “Iron Man 2,” and now does nimble double duty, emerging as a vital levity tool and Stark’s lifelong shield against insecurity, for beneath all that metal, he’s still a breakable geek, prone to human plights like panic attacks. The film’s combo of self-aware zingers and unpretentious humanization is, very graciously, Black’s first priority, trumping CG set pieces and briskly edited combat sequences (which, make no mistake, are still very present — the destruction of Stark’s home and a complex, free-fall rescue are both virtuoso action sequences). With the help of tough squeeze Pepper Potts (Gwyneth Paltrow), Stark takes on the terroristic Mandarin (Ben Kingsley) and an army

of biochemically modified ex-soldiers. The best bit though? Stark’s banter-y bonding with Harley (Ty Simpkins), a preteen kindred spirit primed to inherit Stark’s knowledge and sharp tongue. A major flaw of “The Dark Knight Rises” was its demand that the viewer take it as both gritty reality and fanciful comic book fare. Without sacrificing depth, “Iron Man 3” proudly owns its identity as a stylized comic-fantasy, ultimately presenting the notion that — gasp! — this trilogy may best Christopher Nolan’s Batman saga.

With misguided casting (Tom Hanks?) and a glut of ideas it can’t quite realize, “Cloud Atlas” is surely no masterpiece. But it’s nevertheless a sweeping braid of engaging plot threads, whose overall interweaving is a consistent joy to watch. With fine supporting turns from Ben Whishaw and Jim Broadbent, and segments directed by Tom Tykwer and Andy and Lana Wachowski, the century-spanning epic of supposed reincarnation is so dazzling and dense, even its failures are worth exploring. here was an American influence on the Boston Marathon terrorists. They didn’t blow themselves up. Americans gave up dreaming of virgins waiting for them in the afterlife a long time ago ... After all of that posturing about whether to treat the bomber as an enemy combatant or even to Mirandize him, he confessed before being advised of his rights and will be handled in the criminal justice system. Incidentally, I’m not sure why the fuss when the United States has a 100 percent conviction rate when such suspects are handled the same way ... Tell me again how you’re supporting Boston’s victims by wearing a Red Sox jersey?... Italy has a lot of problems. For instance their Parliament is so polarized that they can’t settle on a prime minister. They’re on their fifth vote. Maybe they can’t find a leader who hasn’t pinched a meter maid (ah Silvio Berlusconi, how we miss you)... There’s a report out of Beijing that pollution is so bad, the residents can’t breathe. Funny, when my wife and I were in Beijing 16 years ago we saw the residents wearing masks. I asked our Chinese tour guide why the masks, and she replied that it was to protect the population from getting colds. We tourists weren’t given masks to wear while we were in the city. Not that it’s ever affected us all these years later (cough...cough) ... Now that even a weak Pat Toomey-supported bill couldn’t get through the Senate, even though 54 senators voted for it and only 46 against, some liberals are clamoring to not only change the filibuster rule but get rid of the Second Amendment to the Constitution. Proceed with caution, I say. There’s going to come a day when the crazies gain control of the Senate and you may wish that they needed to get 60 votes to pass a bill. As far as changing the Constitution, talk about opening up the proverbial can of worms. States would not only get to vote on eliminating the Second Amendment, they would get to propose changes to the rest of the Constitution as well. Uh, do we really want that scenario to take place in today’s political climate? ... It’s that time of year when all of us get to feel good about recycling. While the City fines us if we fail to recycle properly, it apparently isn’t all that interested in its own recycling failure. I’m talking about the sanitation truck that was in my neighborhood recently that threw all of the re-

hen one enjoys a plate of pasta, many shapes require the old spoon-and-fork-twirl routine that firmly secures the food in place for a safe delivery north. Droppage, especially with a little gravy on top, may create a messy situation in which a trip to the dry cleaner may be required. Rita Kormarnicki is sharing her Pasta With a Twist in which the dining twirl isn’t needed thanks to the use of the smaller shaped shells. A little creativity is required here, as the resident of the 1400 block of Castle Avenue is leaving the noodle selection up to the chef. SPR

everal weeks ago, I had a chat with a friend who has been a long-standing chef in the city. We discussed the annoying trend of eating in the dark and the difficulty of reading menus, the majority of which are printed in tiny pale type. “Right now, it has become all about pork and beer,” he said with a grin. Pork belly has been the darling of American chefs for a number of years. The barbecue craze took center stage when Percy Street opened on South Street a few years ago. The Texas-style fare was uncommonly good. I’ve eaten barbecue throughout most of the South. When I read Stephen Starr opened Fette Sau (German for “fat pig”), I had to pay a visit. The restaurant does not take reservations. Located on Frankford Avenue in Fishtown, Fette Sau is a casual spot well-suited for families. Berkshire pigs and steer are raised without hormones, antibiotics and steroids. Craft beer and whiskies are the libations of choice. The menu is written on a blackboard, so if you are nearsighted, don’t forget your glasses. The friendly staff was eager to please and explained all of the meats are ordered by the pound. Edward and I slid onto bar stools and looked over the drink selection. He ordered a pint of Teuton ($6), a rich, dark beer, while I decided it was time to try a Bourbon Rob Roy ($17). The barkeep showed us a bottle of McCarthy’s produced in Oregon. He said it had the flavor and aroma similar to single malt Scotch. It Coffee/Café/Sweets Caffe Chicco: 2532 S. did, indeed. He mixed it straight up and it imparted the flavor of good Scotch whiskey, but I was shocked at the price. We stepped up to order and knew we had to try the brisket ($18 a pound). It was, hands down, the finest I’ve tasted anywhere. This is not Jewish deli brisket or your mother’s variety served during Rosh Hashana. It was smoky, succulent, tender and sliced thick. There was a choice of sweet, spicy or vinegar sauce. I did not care for any of them, but it didn’t matter. The brisket spoke for itself. Martin’s dinner rolls are 35 cents each, so you can build a small sandwich. Berkshire pulled pork ($16) was too bland for my taste. It was properly shredded, but I’ve enjoyed more flavorful versions in South Philly. Short ribs are another restaurant mainstay. Fette Sau’s version ($23 a pound) was smoked on the bone and virtually fell off it with one cut of the knife. I am used to short ribs braised in liquid such as beer or wine, but since these were simply smoked, it imparted a tasty but different mouth feel. St. Louis-style spare ribs ($22 a pound) were a disappointment. Not much pork on the bone, and I found them underseasoned. The star of the side dishes was the German-style potato salad ($5) tossed with a bit of oil and whole-grain mustard that added a piquant flavor. I like mayonnaise-free potato salad, as it is a welcome change from the run-of-the-mill variety. It did need a bit of salt. Half-sour pickles ($2.50) took me Restaurant Review:

straight back to my grandmother’s homemade crunchy pickles. They had a briny taste that married well with the assortment of meats we sampled. Broccoli salad ($5.50) was inedible. It was bursting with too much vinegar and hot pepper flakes. I don’t know where it fits in with barbecue. Baked beans are another barbecue mainstay ($7.50). The right balance of slightly sweet and tart is sometimes difficult to achieve. Bits of burnt ends of pork are added as the beans simmer. magine taking a trip to France without leaving South Philadelphia — food included. Well, Bistrot La Minette chef/ owner Peter Woolsey is the ideal person to serve as the tour guide for this culinary journey. He studied pastry at the world-renowned Le Cordon Bleu in Paris. It also happens to be where he met Peggy, his wife of nine years. The combination made opening his Bistrot La Minette in 2008 an easy decision. “I spent two-and-half years in France, and I speak fluent French, so it seemed like a no-brainer at the time,” Woolsey, who also earned a culinary degree from Rhode Island’s Johnson & Wales University, said. Prior to venturing out on his own, Woolsey gained valuable experience at the now-shuttered Striped Bass before moving on to serve as the executive pastry chef at Washington Square, which has since become Talula’s Garden.

Speaking fluent French isn’t a prerequisite for dining at the Queen Village-based eatery. Woolsey simply tries to offer his patrons an enjoyable sampling of bistro cuisine including his recently added Navarin Printanier (Spring Lamb Stew in English). He described it as lamb shoulder braised with white wine. “It’s a very, very common springtime French bistro dish,” Woolsey said. “I put it on the menu about three weeks ago when spring finally showed up, and it will come off in the summer.”

INGREDIENTS: 1 lamb shoulder Salt and pepper, to taste Enough vegetable oil to coat the bottom of a pan 1 bottle of white wine 1 pint of demi-glace 1 large onion 1 large carrot 1 leek

2 stalks of celery 4 cloves of garlic 1 sprig of thyme 1 bay leaf

For Garnish: Baby carrots Peas French green beans Baby turnips Baby beets Pearl onions Ramps Snow peas

DIRECTIONS: Remove the bones, fat and any tendons from the lamb, and cut into bite-sized cubes. In a hot, shallow braising pan, sear the lamb seasoned with the salt and pepper until well-colored on all sides in the oil. Remove excess oil from the pan, and deglaze with the white wine. Add the

vegetables (all chopped into large pieces), herbs and demi-glace. Cook on a low heat, covered, for approximately 90 minutes. Strain the meat and vegetables from the liquid, and reduce the liquid by half. Add the meat back into the sauce, and season with the salt and pepper. Garnish with the blanched springtime vegetables. Finally facing an inviting pitch, the senior first baseman crushed a triple to give the Edward Bok Technical High School Wildcats, 1901 S. Ninth St., a 13-12 walkoff win against the Samuel S. Fels High School Panthers in their secondary institution’s final home game. “We just rallied at the plate,” the cleanup hitter and Germantown resident said of his East Passyunk Crossing squad’s overcoming a four-run final-inning deficit. “Batter by batter, we just came back and gained confidence over time.” The School Reform Commission decided March 7 to back School District of Philadelphia Superintendent William R. Hite Jr.’s suggestion to shutter EdmondsCarty’s 75-year-old institution and send students to South Philadelphia High School, 2101 S. Broad St., so coach Frank Natale’s

charges took to their diamond hoping somehow to salvage an 0-9 campaign that had seen them score only 15 runs. Also entering winless, the guests desired to vanquish Bok’s positive vibes and grabbed a 1-0 lead via their first swings. The Wildcats countered with two runs in the second, but sloppy fielding, somewhat erratic pitching from senior right-hander Lorenzo Taveras and an inside-the-park grand slam in the next inning put them behind 7-2. “I don’t care about the score right now,” Natale, the 2012 Readers’ Choice top high school coach winner based on his football unit’s success, said. “You have a chance to do something special today, so relax and make contact.” THREE RUNS REDUCED the margin in the home third, but the teams waged a youscore-we-will-score-right-back battle that kept the Bok representatives sensing they might fall again. “After so many losses, we started to think we wouldn’t get a win,” shortstop Larry Pelzer, who aided a three-run fourth inning after taking a fastball in the ribs, said. The resident of the 2500 block of Wolf Street rushed for 1,458 yards during the

fall and joined the baseball club for his senior season to realize his dream of becoming a two-sport contributor. As Fels recovered the lost runs and tacked on a few more, it looked as if Pelzer would have to settle for that durable distinction. Mindful that his elders would not have another occasion to don their home uniforms, sophomore second baseman David Destouet wanted them to go home hearty and not heartbroken. “When we went up in the seventh, I knew if we got some guys on that we could do it,” the resident of the 2200 block of Morris Street said. “We had to get a win because nobody wanted to waste our best offensive day.” Senior left fielder Shaquille Blackwell singled to start the final frame, with Destouet duplicating the feat. A flyout and a strikeout led Natale to pace along the third-base line, but Pelzer loaded the bases after another hit-by-pitch effort to give junior center fielder Naasir Granberry a chance to make up for a quartet of fruitless at-bats, including three strikeouts. Depositing a high fastball just beyond the infield, he plated Blackwell and Destouet and crossed after Pelzer following a single by Taveras, his third hit of the day. The hurler, a Northeast Philly dweller, then swiped his third bag to put himself into scoring

With no official at-bats to his name, Edmonds-Carty wanted to bring the Wildcats glory with one cut. “I told him, ‘Dylan, if you get something to hit, hit it,’ and that is what he did,” Natale, of the 1600 block of South Juniper Street, said of the hero, who also caught five passes for last year’s Class AAA gridiron titlists. Edmonds-Carty had essentially seen nothing appetizing the whole day and pounced on the decent offering to start Taveras on a rapid run to home. As he reached third, the slugger wore a look of shock and relief as his mates mobbed him. “I would say it was my best hit of the season,” he said of his most memorable batting contribution to the hard-knock year. Along with the 25 runs, the game featured 28 hits, 10 errors and 32 strikeouts, with Taveras, who pitched the entire contest, registering 18 whiffs. “I didn’t know,” he said of the staggering amount. “... The first win was nice and we did it after hard work at practice.” “He made his mistakes but he fixed them,” Natale added, “and it was a great experience for him.” Used to victories on the gridiron, the coach admitted he felt relieved to place a game in the win column. “It’s been a long season for us, and this team deserves it,” Natale said. “They deserve every second of it.” In Tuesday’s season finale, the Wildcats fell 15-3 to Kensington.
