hough the City deemed May 12 to 19 “Love Your Park Week,” a dearth of monetary endearment for the Philadelphia Parks & Recreation Department prompted Lauren Bornfriend to announce May 16 that she and other residents have had their patience maxed out. hough he frequently receives it as a genial friar at the National Shrine of Saint Rita of Cascia, Rev. Michael Scuderi dislikes earning attention. The 45-year-old prefers to blend in with crowds when not preaching, yet his gregariousness and gusto pushed him to the forefront at

Saturday’s 2012 Arthritis Walk. Held adjacent to the American Swedish Historical Museum, 1900 Pattison Ave., the sixth local edition of the 64-year-old Arthritis Foundation’s signature event designated the third-year priest as its adult honoree, recognizing his 42-year mission to curb his rheumatoid arthritis and recent advocacy for additional research funding. Always eager to make acquaintances, the

Darby native had ample chances, as 600 participants formed 60 teams all aiming to topple the nation’s chief cause of disability. According to the foundation, 50 million adults and 300,000 children have received arthritis diagnoses, so Scuderi decided two years ago to form Hank’s Holy Hikers, his 20-member group that takes its title from See SCUDERI page 11

The health of wealth

To the Editor: Blackmail is an ugly word with many connotations — embezzlement, swindling and extortion, to name a few — but the Republican Party sees fit to call it politics and has taken it to a new, but still, very wicked and evil place that shows what lengths these people will go to achieve their selfish and self-serving agendas. Some have lost, or will lose, most, if not all, of once was theirs — jobs, food, homes, even in some instances their very will to go on living. Republicans continue with their pilferage and taking away from the elderly, poor and have-nots by eliminating entitlements that keep them alive. Where does the blackmail figure into all of this? According to the latest news reports, they will not act on in any way until the tax cuts for the wealthy are extended indefinitely, putting us deeper into debt. It’s blackmail at its worst. When you think about it, all of us would like to have more money, but, factually, how much do we really need? Why do some want more and more and keep packing it away until a point is reached where they have more than can ever be used in a entire lifetime? Is it an indication of some sort of depravity or corrupt act motivated by fear of some sort? Is it a lack in one’s own confidence and ability? One must wonder what drives this terrible quest for an incalculable and sick need for unending hoarding. I have the distinct and unwavering impression that instead of contributing and supporting our country, which gave them the opportunity to accumulate all the wealth they have been allowed to garner in the first place, they are, instead, trying to, for some unfathomable reason, deliberately trying to break and crush us by crippling all of our financial strengths. Otherwise, why do they object so forcefully and with such venom in paying their fair and indisputable share of the monies they still continue to amass and hoard like misers? Can it be that they are succeeding in forcing America into a country with two separate governments? And if so, to me it completely smacks of divide and conquer, because, they do not want to govern but rather to rule! Before it is too late to put an end to their inevitable piracy of our nation, our only solution appears to be a le-

gal national recall to remove, in certain states, Republicans in the House and Senate, so we have a fair playing field. America is supposedly the richest country in the world, but the fact is that the Republicans hold all of the wealth. Almost every member of the House and Senate are millionaires and there is no question that so much money holds all the power. Not you nor me and all of the private citizens in the entire nation have any kind of substantial say into who and how our country is governed because everything that matters to us is done in secret and when we finally hear about it, it is much too late. It is a step so blatant in the tearing apart of our cherished democracy. We had better see to it that millionaires are held in check and possibly removed from such power positions because America cannot stand what they are doing to the sanctity and the ideals on which our nation was built. How can we run our country productively and move back to where we once were? They are stealing America from us and we must stop them. 24-year-old became the third homicide victim in a span of 59 days within a 4-by-2 block stretch. The deceased, whose name was not released by press time, was on the 2700 block of Reed Street when the shots were fired at 9:15 p.m., Officer Christine O’Brien of the Police Public Affairs Unit said. He was wounded in the torso and took cover inside the Reed Food Market, 2701 Reed St., which was where police located him. He was rushed into surgery at the Hospital of the University of Pennsylvania and pronounced dead at 1:08 a.m. yesterday. The motive was unclear and there were no suspects at press time, O’Brien said. However, a dark-colored vehicle was seen fleeing the scene at a high rate of speed. Three other victims were transported to HUP in stable condition, O’Brien said. A 22-year-old man received a graze wound to his right shoulder as he was driving a motorcycle in the area. A 31-year-old man was wounded in his left foot while his 29-yearold female relative suffered a gunshot wound to her right thigh while in the area. The woman is reportedly pregnant. Theft trend Police have nabbed a Newbold man who allegedly targeted and burglarized Asianowned businesses in Whitman Plaza. Thanh Tran, 41, of the 1900 block of South 17th Street, has been charged with several counts of burglary and related offenses and may be responsible Thanh Tran for more. Detective Michael Furry of South Detective Division combed through photos of criminals recently released from prison who matched the suspect’s desciption when he spotted Tran, Detective Neal Aitken of South Detecives said. “It was very good detective work on his part,” he said. Tran allegedly sold the stolen cigarettes to a neighbor prior to his arrest outside his home at 11:30 p.m. May 18, Aitken said. A warrant helped police to retrieve ciga-

rettes, tools and clothing linking him to three burglaries. Tran is suspected of prying open the rear door of Viet French Café and Sandwiches, 320 W. Oregon Ave., and taking $3,050 in cash from the register and safe at 1:20 a.m. May 14, according to police. Two days later, he broke into the rear entrance of Pho Saigon Vietnamese Restaurant where he allegedly snatched $200 from the register, as well as several cigarette packs from the premises, but was unsuccessful at opening its safe. Tran was also charged with a third overnight burglary at 320 W. Oregon Ave. May 17, Officer Christine O’Brien of Police Public Affairs said. The owner of Vina Services Inc. discovered his business’ side door pried open, with $500, a Kodak camera, a portable hard drive, pair of Ray-Ban sunglasses and a carton of cigarettes missing at 7:45 a.m. May 18. Bail was set at $6,000 for each of the three sets of charges that included burglary, criminal trespassing, criminal mischief, theft, receiving stolen property and possession of an instrument of crime, according to court records. Tran was out on bail for two Jan. 16 burglaries that occurred on the 1700 block of South Broad Street, a drug possession for which he was arrested Feb. 15 in the 1st Police District and a retail theft charge for an incident on the 1600 block of South Columbus Boulevard March 23, according to court records. For the burglary charges, he was set to appear for his preliminary hearing yesterday after press time for one set and is scheduled for a pre-trial conference for the other June 11. The trial for the drug charge starts June 13 while the theft trial begins June 11. In addition to the first two Oregon Avenue burglaries, a South Detective Division crime pattern alert listed three other May burglaries targeting Asian commercial spots that Tran has not yet been charged with. An unknown perpetrator forced open the rear door of Pho & Café Viet Huong, 1100 Washington Ave., at 3 a.m. May 7 and took cash from the register, according to the alert. At 12:20 a.m. May 11, a burglar cut a hole into the back door of Wing Kee China Imports, 1122 Washington Ave., removed the lock, and stole undisclosed items. The culprit of a 2 a.m. May 12 break-in entered Omega Computers LLC, 714 W. Porter St., but was unable to access the store. The Germantown dweller’s organization began its campaign to acquire the money in March, the same month Nutter’s Fiscal Year ’13 plan proposed allotting $47.8 million to Parks & Recreation. As $2.1 million of that counts as outside resources, the true $45.7-million tag represents the same tally from ’10. “My colleagues and I are brainstorming to achieve resolution,” 1st District Councilman Mark Squilla said. The resident of Front Street and Snyder Avenue has worked to rejuvenate Burke Playground, Second and Jackson streets, using its proximity to him as a symbol for the convenience the higher appropriation could continue to provide for his constituents and others. “It is a blessing to live close to a walkable facility and enjoy it,” the Whitman resident said, “so let’s move from the past and focus on now.” Squilla suggested a $2 surcharge on parking violations, a move that could generate nearly $2.2 million. He mentioned conflicting legal takes on the proposal yet vowed to press on even if his plan proves futile. While she understands the recent recession’s hampering of many cities’ options, Bornfriend noted previous promises to offer help have bred ineffectual results. For Fiscal Year ’10, Philadelphia had a total park expenditure of about $99.6 million and a population of 1.5 million yielding a $64 per resident total that situated it 13th out of 14 metropolises, according to The Trust for Public Land’s Center for City Park Excellence. The city spent an average of $8,906 for 11,186 parkland acres, earning it 10th-place distinction, and has four employees for every 10,000 residents, a statistic that garnered it the 12th spot. The department’s received funding since ’08 totals $43 million fewer dollars than the Five-Year Strategic Plan Fiscal Year ’09-’13’s suggested apportionment, according to the alliance. “People are fed up and burned out,” Bornfriend said. THE DEPARTMENT OF Recreation and the Fairmount Park Commission merged in ’09. The 609-member workforce, a 30 percent dip since ’00, must address 465 basketball courts, 405 ball fields, 254 playgrounds, 220 miles of recreational trails, 197 neighborhood and recreational parks, 156 recreation centers and 70 pools,

Volunteers often cover sites, amassing 220,000 park hours last year, which amounts to $4.8 million in sweat equity, according to the nonprofit Independent Sector. “In their present state, Philly’s parks and recreation generate more than $1 billion annually in income and savings for the City and its citizens,” Bornfriend said. “Imagine how much more that could be.” 2nd District Councilman Kenyatta Johnson, of the 1800 block of Manton Street, knows, as Bornfriend iterated, the sites facilitate neighborhood cohesion by encouraging exercise; enhancing safety; keeping air and water clean; and slowing erosion, flooding and runoff. “I had a childhood affinity for Franklin Delano Roosevelt Park,” the Point Breeze product said, recalling walks to the spacious realm, Broad Street and Pattison Avenue. “Today is about re-establishing a commitment to our future. A promise was made, and if a promise was made, we need to revisit it and start funding these parks.” Mark Berman, of the 300 block of Manton Street, is an alliance disciple who acts as president for the Friends of Manton Street Park and Community Garden, one

of the department’s 80 friends groups. He and his neighbors signed a Feb. 17 agreement with developer U.S. Construction to sustain 405-07 Manton St. as a pocket park, ending confusion over the identity of 405-11 Manton St., which the City included in a Nov. 23 sale of empty lots. The accord will see Berman and his friends yielding claim to 409-11 Manton St., which will go toward home construction, and continuing to tend to the garden lot and the park, formerly the Redevelopment Authority’s and the Office of Public Property’s possessions, respectively, which recently joined the department’s inventory. “Our goal is to continue to involve the community and keep this as a friendly, open green space and not let it fall into disrepair and neglect as it had in its previous life,” the Pennsport dweller said. U.S. Construction has vowed to provide a monetary contribution toward landscaping and fencing. That makes Berman covetous of an alliance victory, as more good news could result in much more than an $8 million supplement to the department. “Hopefully the alliance will win this battle and be able to provide more maintenance for our parks to keep them cleaner and protected,” he said. “With clean parks,

you get healthier neighborhoods, less neglect, less crime.” Bornfriend lacks any idea how or by when funds might arrive yet believes resolution will come, as areas whose residents suffer from economic woes will be in further peril if resources dwindle and the department’s responsibilities increase. Etrulia Gay resides in one such community. The chairperson of the Friends of Wharton Square, 2300 Wharton St., hopes her Point Breeze land can continue to delight youngsters. “We’re not asking for a specific allotment,” the resident of the 2200 block of Gerritt Street said. “We need wrought-iron fencing and hope the finances are there.” Gay, whose site includes a tennis court, discussed opportunities with the U.S. Tennis Association’s Katherine Perrin, whose employer oversees action at local sites such as FDR Park. “Eight million is a big number,” Perrin said. “We’ll be lucky if we get half of that.” Bornfriend would not mind such luck. “The message is we need these funds back,” she said. “Enough is enough.” SPR Contact Staff Writer Joseph Myers at jmyers@ southphillyreview.com or ext. 124. thritis. The malady stunted his growth yet seemed to have the opposite effect on his spirit, as griping and feeling sorry for himself never figure into his daily schedule. Rather, he retains childhood lessons on perseverance to sustain his belief that his aspirations may prove difficult yet not impossible. “My parents [Sam and Carmel Scuderi] told me about athletes who battled through setbacks,” he said, citing Flyers’ great Bobby Clarke, who has fought diabetes mellitus type 1 since childhood, as his hero. “I wanted to finish school and live a relatively healthy life, making sure my goals never lost out to my status as an arthritis sufferer.” In the decades since his diagnosis, he confesses his struggle has intensified. Thirteen operations only begin to tell the tale of his required plethora of pluck. His tolerance for exercise fluctuates and, as with many arthritis patients, he finds rain troublesome. Last year’s event featured wet conditions, but Saturday’s clear skies acted as a metaphor for his endeavor’s clarity. Participants could choose either a oneor three-mile course. For his third year of covering the grounds of Franklin Delano Roosevelt Park, Scuderi had vowed to cover more territory than that of his first two jaunts yet abstained from choosing a specific length. “I will go as far as I can while feeling comfortable,” he said, as the impressive roundup of foot soldiers set out on their trek. Keeping a solid pace, Scuderi flashed smiles as team members voiced their pride in him. An avid sports fan, he discussed

the Phillies’ offensive woes and expressed his disappointment with the Flyers’ playoff loss to the New Jersey Devils. “I don’t want to become too frustrated now,” he said of shifting his focus to the task at hand. He observed the scenery with wonder, grateful that the weather had cooperated and that his joints also were in synergy. Fatigue eventually crept in, forcing Scuderi to tell his mates he would need to return to the starting point. As he paced back, he wore a wide grin, realizing he had indeed bested his previous years’ results. “I feel redeemed,” he joked as he entered the entrants’ gathering spot. He holds a special devotion to St. Therese of Lisieux yet through his assignment at the 105-year-old shrine, he now lauds St. Rita as a key component of his mental maturation in keeping a hopeful perspective on life. “I’ve learned a great deal from my time in South Philly and hope to be a voice for anyone who feels burdened,” Scuderi said. He can number his mother among those who find his example enriching. “Michael is such a blessing, and God has such a grand plan for him,” the Newtown Square dweller said. his college nickname. “No matter what you go through, God has something to do with it,” the religious leader said. “He gives me ways to get by.” His creator led Scuderi to Villanova University, staffed by many of the Augustinians he now calls colleagues. A secular career paid the bills, but he sought further communion with his savior’s flock and joined the Order of St. Augustine at 35. Shortly after earning a Masters in Divinity, he found himself stationed at the shrine, whose patron celebrated her feast day Tuesday and whose devotees laud as “The Saint of the Impossible.” “My whole life of dealing with pain led to a desire to bring people, especially those with ailments, closer to God,” Scuderi, whose juvenile rheumatoid arthritis diagnosis came when he was 3, said. Donning a straw hat and a bright orange shirt with his circle’s name on it, he admitted his commendation caused some embarrassment, yet he yearns to maximize whatever opportunities it and his affiliation with the foundation can bring. He became aware of the walk through a sibling and met Cheryl Pompeo, senior director of special events for the Northeast Region, Eastern Pennsylvania Chapter, through an uncle, who spoke of his nephew’s physical and spiritual journeys. She and her associates selected Exton’s Colin Drummond, who has battled juvenile idiopathic arthritis for two years, as their youth champion and Scuderi as the adult crusader in October, inciting the latter’s humility to kick into overdrive. “I know he is modest, but we saw him as a great choice,” Pompeo, whose employer holds more than 200 such walks annually, many during May’s National Arthritis Awareness Month, said. Tabbing her involvement “a labor of love” from having lost her grandmother to the affliction’s complications, she began to fraternize with Scuderi at the end of last year and learned of his commitment more fully through their attendance at April 16 to 18’s Advocacy Summit in Washington, D.C. “That was my chance to call for increased ways of fighting back against this unacceptable condition,” he said. Once back home, Scuderi finalized his fundraising efforts for the walk, raising $4,000, and prepared for his role as team captain. Friends and family enthusiastically clapped as their leader ascended the stage to receive Pompeo’s gratitude and to tout the “Let’s Move Together” theme. “Today is a wonderful day, and I thank everyone for being here,” he said. “Let’s take the course and fight back against arthritis.”

Actor Paul Felder manages a professional martial arts career while performing on local stages. By Jess Fuerst Review Contributor

P

aul Felder won his first two mixed martial arts fights, both of which took place in the past six months. However, starting May 30, he’ll be outside of the cage and on stage as Kent in the Philadelphia Theatre Co.’s production of “Reasons to be Pretty.” “I don’t really remember what drew me to acting, but what keeps me doing it is that there are very few things as exciting to do than perform in front of a live audience,” Felder, of 11th Street and Snyder Avenue, said. “Anything can go wrong at any given time. You get to do things that others don’t get to; You get to play for a living. “You live these other lives that you don’t necessarily know about and then you get to hang up your stuff and go and live your real life at the end of the day and walk out.” “Reasons to be Pretty” is the third play in a trilogy by playwright Neil LaBute focusing on Americans’ superficiality. Felder happens to have performed already in “Fat Pig,” the second play behind “The Shape of Things.”


Lifestyles “LaBute is shockingly close to how we really interact as a culture today. It’s like listening to two people that don’t know you’re listening to them — that’s how it sounds,” Felder, who did “Fat Pig” with Norristown’s Theater Horizon, said. “There is overlap, people talk over each other and don’t wait for each other to finish. It’s real, authentic sounding conversation and circumstances.” As far as the play’s content, Felder identifies with the contemporary nature of LaBute’s work, and thinks audiences will do the same. “It’s all about image and beauty. … All of the plays are kind of sad. In the end, these guys can’t deal with it. Social restraints take over and they kind of fold,” the 28-year-old said. “Except this one: It’s not the happiest ending, but it’s different. You’ll have to come and see.” With previews beginning May 25 and opening night occurring May 30 at the Suzanne Roberts Theatre, 480 S. Broad St., Felder and the rest of the cast just moved from the rehearsal space to the theater earlier this week, and things are on track for opening night. “I’m definitely excited. I think we’re right where we need to be,” he said. “I think it’s a great story that people will

recognize and understand. The playwright writes in a way [audience members have] never experienced before. The play’s exciting and fresh. And it’s a great theater and great space, too. Philadelphia Theatre Co. is exciting theater and I don’t think this play is going to disappoint.” A GRAYS FERRY native, Felder lived across from St. Gabriel School, 2917 Dickinson St., where he attended grade school, before moving on to St. John Neumann High School, formerly 2600 Moore St. At age 16, his family moved to Ridley Township. “I started once I got [to Ridley] to try this stuff. I realized I kind of like this stuff and I started taking classes, doing plays,” Felder said. “But only when I was at Ridley. At Neumann, I played soccer.” While in South Philly, Felder also began his lifelong involvement with martial arts, studying, at the time, at Gold Medal Karate, 928 Christian St., which has since moved to 530 Bainbridge St., and been renamed Zhang Sah. “I just have always been into the competition. I did karate tournaments, even in classes as a kid, I loved doing stuff. When we’d do stuff, I’d go hard and wanted to

eight weeks to train, so as long as I have eight weeks leading up to a fight to train, I’m ready.” Felder intends to maintain a balance of both for as long as he can manage, but hopes acting will take over full time. Within the year, he would like to try his hand in the Big Apple, as well as possibly moving to Los Angeles. Though he has primarily worked in theater, Felder is looking to broaden his current repertoire to commercial work, television and film. “The work is starting to slow a little bit because I am Equity now and there is less union work in Philly,” Felder said of his transition into the Actor’s Equity Association. He is ready to take the next step with his career now, as well. If he has his way, his name will be on a marquee 80 miles north of here. “I’d rather be in a straight show, not a musical, on Broadway, living in New York — that would be a dream come true,” Felder said. “I’d like to be taking the subway to a Broadway house while I’m living there and performing as a professional. fight,” he said. “And I grew up in a rough neighborhood. It’s not like I wasn’t in little streets fights with my friends.” By the time he graduated high school, Felder was sold on acting. He attended a Delaware community college for a few years before transferring to the University of the Arts to study and pursue acting professionally. “I originally wanted to graduate and would have loved to go to New York. But even before I graduated UArts, I was getting professional work as an actor,” Felder, who received a bachelor’s of arts in 2008, said. “Already the winter before graduating UArts, I was in my first professional show and I was the lead and I continued getting work. I was cast at The Walnut [Street Theatre] and regional theaters. The work was here.” Eventually, Felder added Mixed Martial Arts training to his regimen, and competed in his first fight, which he won by knockout, in December. On the eve of his second fight, he found out he was cast in “Reasons to be Pretty.” “If I’m in a show I just work out at the gym. I lift. I run. I don’t do anything sparring when I’m in a show,” he said. “When the show is over, I go right back into training. I squeeze in fights in between. I need

Same-sex marriage

P

resident Barack Obama’s recent support for same-sex marriage did not go far enough. The president is willing to let the states decide. If this were 1964, that would be like President Lyndon B. Johnson saying he supported civil rights, but the matter should be left up to the states. Of course, Johnson did no such thing, and the Civil Rights Act enforced equal rights across the nation. Leaving civil rights up to the states would not have done away with segregation in the south, and leaving the right of same-sex couples to marry up to the states will not change anything in states such as Pennsylvania. I am not downplaying the importance of the president reaching out to support the right of same-sex couples to marry. His emotional and moral support is especially important to the gay and lesbian community at a time when the number of states banning their right to marry has reached 31. The president’s words are important, but not historic. Actions are historic. I realize the political limitations a reelection campaign imposes. Same-sex marriage opponents say a lot of stuff that annoys me, but perhaps the most annoying is the view that Obama’s support is all about politics, as if that somehow taints his intentions. Great issues are moved by our political process. The Civil Rights Act was brought about through politics. The right to marry is a human right, but it is also a civil right, and civil rights should not be left up to the ballot box. There are some states today (and we know which ones they are) would not approve inter-racial marriage if it were put to a vote. So for those of us gay and straight who support the right of same-sex couples to marry, we can celebrate, but don’t break out the champagne yet. The president’s support has reignited the debate over not only whether to approve same-sex marriage, but about the institution of marriage itself. The national dialogue is a good thing, but like everything else in America, the issue has become politicized in an election year. Republicans like to pose the issue as a states’-rights issue. However, when it comes to banning same-sex marriage, conservatives have no problem with making it a federal issue. Republican presidential nominee Mitt Romney supports a constitutional ban on same-sex marriage. So let’s discard the states’ rights issue for what it is, a charade to pacify the base. Some interesting comments have come

from that segment of the media opposed to legalizing same-sex marriage. It was not surprising to read Daily News columnist Christine Flowers’ opposition is rooted in her religious beliefs. Whether you agree with Flowers or not (and I rarely do), she is consistent in her views. I was surprised when Stu Bykofsky wrote that while he sympathizes with gays and lesbians intellectually on the issue, in fact, he opposes their right to marry because he believes marriage is solely a religious institution. In fact, Bykofsky went further and proposed that government should get out of the business of marrying couples and leave it solely to churches. In other words, Bykovsky’s solution to the issue is to restrict the right to marry to members of an organized religion and the rest of us, straights and gays, should be happy with civil unions that would carry all the same rights as marriage. Let’s be clear about this. Marriage was a civil institution even for Christians for 800 years before the church made it a sacrament. You can’t abolish the civil element of marriage because it a right of citizenship not church membership. The state has the right to grant a divorce, even though the church does not recognize the divorce. Marriage is and should be under the aegis of the state because of the separation of church and state. The religious argument against same-sex marriage is one that should be left to each religion. A religion should be able to set its own rules of marriage. But if one wants to take the religious arguments into the civil arena, then let’s be candid, shall we? The Bible is notoriously inconsistent on social subjects. Not only does the good book exhort us to stone adulterers, but also that we should execute gays. While some use a biblical quote to brand homosexuality as an abomination, some see the same passage and believe the Bible is really telling us to keep kosher. At a time when the heterosexual community is abandoning the concept of marriage in increasing numbers, it seems strange we want to deny the one group that wants to embrace the institution. Dare I say it — isn’t the concept of marriage a conservative institution? Maybe gays and lesbians are growing more conservative. I would think there would be cheering from the right instead of whining. Conservatives argue marriage is designed to perpetuate the species. Do we really want to go there? Do we want to deny the impotent and sterile the right to marry too? How about folks past their child-bearing years? Why not civil unions? Aren’t civil unions separate but equal? So were segregated schools and lunch counters. Same-sex marriage is a generational issue, and time is not on the side of the opposition. SPR Comment at southphillyreview.com/opinion/ cardella.

T

he adventures of a restaurant critic can sometimes be quite humorous. Last week, I had a craving for fish and chips because I watched the premiere of “Around the World in 80 Plates,” on Bravo. The participants were in London where they had to cook pub fare in famous pubs. “I want fish and chips,” I said to Sandy. A few days later, Edward and I headed to South Philly to review a pub that offers fish and chips. “This is not for me,” I said as I entered a dark womb-like room filled with noise and loud music. The place looked — well — dirty. I glanced at a platter of food, which I would not serve to animals or humans. So we went to plan B. We rode around South Philly and happened upon a longstanding restaurant that I had not reviewed. I believe it was closed for quite some time, but new owners have arrived. Edward found a parking spot, and owners and staff met me at the door to tell me their hot-water tank blew. Back in the car, after an hour on the road, we chatted about other choices. By this time, I was so hungry, my stomach was talking. We decided to review The Wishing Well in Bella Vista. “Maybe they have fish and chips,” I said with a tired sigh. We slid onto a high-top table for four and perused a menu, which was all over the map. There is a strong accent on barbecue along with the usual wing, French onion soup, hummus, chili, sandwiches and quesadillas. Alas, no fish and chips. M a rc o n i / Pa c ke r Pa r k

The barkeep mixed perfect martinis ($10) and turned the televisions to the Phillies, who were playing the Cubs at Wrigley Field. Calamari ($9) and spinach salad ($8) calmed us as we were quite ravenous. Whole baby squid, totally free of grease, were seasoned and dusted with cornmeal and flash fried to a golden brown. A slightly sweet chili dipping sauce came with the order although the cherry peppers and cilantro, which were listed on the menu, did not. The spinach salad was slightly overdressed but included bits of bacon, sweet red onion, sliced cremini mushrooms, a hard-cooked egg sliced in half and candied nuts. It lacked eye appeal but was ordinary. I have loved Cuban sandwiches ever since I sampled my first bite in Miami’s Little Havana when I was a teenager. This inventive culinary marvel is the Cuban version of a panino. Ingredients can vary but pork is a necessity as are pickles and mustard. The Wishing Well’s Castro ($13) was a poor imitation. It consisted of roast pork, tasso — a once hard-to-find ham from New Orleans — and Swiss cheese served on a long roll. The bread was too doughy and the sandwich was not hotpressed. Someone in the kitchen melted the cheese on the bread rather than on the pork and ham, thus I could barely taste the cheese, which was not hot and gooey as it should’ve been. One gets a choice of sides with sandwiches. Fried onion rings were piping hot, lacked flavor and were

so greasy I tried blotting them with paper napkins, to no avail. “The calamari was not greasy at all,” I said. “I wonder how this happened.” The pulled pork ($11) was a bit better although it was topped with very hot and spicy barbecue sauce. It was served on a Sarcone’s brioche bun. We liked the homemade chopped coleslaw, which was slightly sweet and retained some crunch. Edward ordered French fries that required a sprinkling of salt but could have crisper. They were a bit greasy, but not as greasy as the onion rings. Service was friendly and attentive. Bar

The scent of holiday plans By Phyllis Stein-Novack Food Columnist

T

he Memorial Day weekend unofficially kicks off today for those of you who like to get an early start. Many head for the Shore while others stay home and pray the temperature don’t climb to 90 degrees. I assume your grill is ready for hot dogs, hamburgers, steaks, chicken, pork, vegetables and whole heads of romaine lettuce, which are great on the grill. The smokiness imparts a marvelous heady taste and aroma. I like to nosh on holiday weekends. My cookbooks are my guide for cool foods, unusual side dishes and fresh fruit desserts. Edward makes the best fruit salad this side of a fruit salad truck. My Sub-Zero is filled to capacity with cheeses, charcuterie, jars of roasted peppers, marinated artichoke hearts and anything in the market and in season that catches my eye. I plant my summer flowers and herb garden after Memorial Day and rely on store-bought fresh herbs to add flavor to my recipes. I grow Italian parsley, basil, Thai basil, chives, lavender, rosemary and chervil. If I am lucky, my rosemary and lavender from the fall will return just as it did last year. One of the best things about holiday cookouts is the kids eat the same foods as the adults. I never say no to a good, all-beef hot dog with spicy brown mustard and sauerkraut or burger topped with melted cheese and bacon. Here are recipes for cool dishes to enjoy

■ Shrimp Salad ■ with Capers and Dill Ingredients:

2 pounds of large cooked shrimp, diced 1 heaping tablespoon of capers, rinsed and dried Kosher salt and freshly ground black pepper, to taste 1/4 cup of extra-virgin olive oil Juice of 1 lemon Fresh dill, snipped

Directions: Place the shrimp and capers in a serving bowl. Season with the salt and pepper. Whisk the oil and lemon juice in a small bowl. Pour the dressing over the shrimp. Using scissors, snip the dill onto the shrimp. Toss well. Cover and chill for at least four hours. Serves six to eight at a buffet.

■ Heirloom Tomato Salad ■ with Feta and Basil Ingredients:

3 12-ounce packages of mixed heirloom tomatoes, larger ones cut in half

8 ounces of feta cheese, crumbled Kosher salt and freshly ground black pepper, to taste 1/4 cup of extra-virgin olive oil Juice of 1 lemon Sprinkling of dry oregano Fresh basil leaves, snipped

Directions: Place the tomatoes in a serving bowl and toss well. Add the feta, salt and pepper. Whisk together the oil and vinegar in a small bowl. Pour the dressing over the salad. Add all of the remaining ingredients and toss well. Cover and chill for a few hours. Remove the salad from the refrigerator one hour before serving. Serves six to eight.

■ Broiled Salmon ■ with Spice Rub Ingredients:

1 side of fresh wild caught salmon, about 3 pounds Olive oil, for brushing the fish 1 tablespoon of kosher salt 1 tablespoon of freshly ground black pepper 1 tablespoon of smoked paprika 1 tablespoon of cayenne pepper 1 tablespoon of garlic powder

1 tablespoon of onion powder 1 tablespoon of ground coriander Fresh Italian parsley leaves, chopped

Directions: Bring the salmon to room temperature. Search for any bits of bone and pluck them out with a pair of tweezers. Line a baking sheet with parchment or non-stick aluminum foil. Lay the fish on the prepared baking sheet. Brush generously with the oil. Make your spice rub by blending 1 tablespoon of each of the remaining ingredients in a bowl. Taste and correct for seasoning. Some people prefer a hotter rub. Just make sure you have enough to cover the entire side of salmon. You may not want to add more salt. A bit more paprika, garlic powder and onion powder cannot hurt. Preheat the broiler. Broil the salmon for 15 minutes. Check for doneness by flaking the center with a fork. It should be a bit translucent. A sure bet test is using an instant read thermometer. Place it in the thickest part of the salmon. It should read 130 degrees. This salmon is good at room temperature or a little on the cool side. Serves six. Note from Phyllis: You can make creative use of any leftover salmon by tossing flakes of it into a green salad, adding it to pasta with a little olive oil, butter, cream and peas or mashing it with mayonnaise for a salmon salad sandwich.
