At a glance with the CEO

Welcome to the latest edition of Bite magazine. The club has been buzzing with activity and exciting new changes, which you will start to see take shape over the next few months – keep your eyes peeled for the Sharks rebrand and new website! Congratulations to our midfielder, Jordan Keras, who has won the 2017 NEAFL Most Valuable Player Award. His professionalism is second to none and this is a great reward for his efforts this season. It’s an exciting time on the Gold Coast, with so much energy and positivity driven by the countdown to the 2018 Commonwealth Games in April and growth of the construction industry. Plans are progressing for the Mantra at Sharks hotel to be completed in time for the Games. This is a significant milestone in the club’s history and we are proud to be partnering with another Gold Coast based organisation, reinforcing our commitment to the growth of the city. The Mantra Group is the largest Australian based hotel and resort marketer and operator, with a portfolio of 125+ properties and 20,000+ rooms across Australia, New Zealand and USA. We envision the inclusion of the hotel within the Gold Coast Health and Knowledge Precinct (see map on opposite page) will make Sharks a destination hub for new customers, member groups and visiting organisations. The introduction of the hotel to the Southport Sharks' brand will continue to drive new improvements to member experiences at the club, through new services and initiatives in the near future. Community HERE FOR THE

Southport Sharks proudly supported the Gold Coast Hospital Foundation by part-funding of their new Community Garden from the Sharks Community Benefits Fund. The project will provide a broad range of benefits for staff and patients, including growing herbs, vegetables and native garnishes that can be used by the hospital café, and highlights the importance of healthy food choices to staff and visitors.

The garden will also aim to become a form of horticultural therapy and relaxation for staff and inpatients requiring extended rehabilitation. The Queensland State Minister for Health, Cameron Dick MP opened the gardens with Southport Sharks COO, Chris Jones and the Gold Coast Hospital Foundation. The Gold Coast Hospital Foundation Community Gardens is a fantastic initiative for the Gold Coast Health & Knowledge Precinct.

PATRON PARTNERSHIP The annual Co-Captains photoshoot was an opportunity for old team mates to catch up and discuss how the Patron Partnership between Southport Sharks and Gold Coast SUNS can foster the growth of AFL on the Coast. Co-Captains Tom Lynch and Steven May from the Gold Coast SUNS took time out from their gruelling 2017 season, to drop by the Cabana Bar & Lounge to discuss all things footy with Southport Sharks Co-Captains Seb Tape and Andrew Boston. What made it special this year was the fact the four lads played together for the Gold Coast SUNS AFL team during 2013-2015, so enjoyed the opportunity to catch up over coffee and chat about the exciting changes emerging in the footy world, whilst overlooking Fankhauser Reserve. The shoot has taken place every year since the Gold Coast SUNS inaugural year of AFL in 2011, providing a visual representation for both teams, while highlighting an important football partnership within the Gold Coast community. The uniqueness of this year’s shoot is that

it demonstrates how players often transition between the two clubs, due to the strong nature of the patron partnership. After the catch-up, Lynch (currently having a stellar season for the GC SUNS at Full Forward) and May (one of the best Key Defenders in the AFL competition), joined the Sharks Midfielders, Seb and Andrew, on the oval for the official photoshoot. They were joined by club Juniors, Mya Harris (Southport Sharks U13 Girls) and Harrison Bell (Southport Sharks U10 Boys). This highlights the pathway available in Aussie rules from Southport Sharks Juniors, all the way to the professional level of the AFL.

Searching high and low to find the Gold Coast’s best photo booth, we found it! …an interactive mirror photo booth, being a spin on the traditional version, as you can share straight to your favourite social media platform. Guests can add a signature to the photo, a cheeky compliment or animation before sharing on social or printing.

The Jones family moved to the Gold Coast from Tasmania 21 years ago, where Chris was the General Manager of The Great Northern Hotel in Launceston, to pursue a new chapter in the hospitality industry. After applying for a position at Southport Sharks Chris said, “I was having lunch in the Club when I got the call to come in for an interview!” Chris Jones now the Chief Operating Officer of Southport Sharks, started on the floor as a Duty Manager back in 1996. His wife Cheryl, one of our lovely receptionists, joined him 4 years later - working at the club for 16 years now. It became a family affair as their four children (Rebecca, Andrew, Olivia and Megan) each came to work at the club as teenagers for work experience. Megan first began working at Sharks over 10-years ago, and recently returned to work here again on reception; in FINS; assisting Human Resources and the Fitness Centre. Megan explains “growing up around the industry certainly gave me an interest and passion for it!” What’s the best part about working with your family?

Megan, what do you usually do to celebrate Father’s Day?

Megan: I get to see them every day! Both Mum and Dad will pop by the area that I am working in to say hello or goodbye. It is always nice to see their faces. The other nice thing about working with them is they are always supportive of my progress and different roles I have had at the Club.

Every year we will either go out for lunch or dinner depending on what day of the week we can all get together. It’s usually Mum plus us three girls, as my brother lives in Canada. Dad is surrounded by women!

Cheryl: Family time is very special and important to me, so working with my husband and daughter, Megan gives me more time to support them in their roles. Sharks has been very good to our family, for which I will always be grateful. Chris: Whilst work is generally off the agenda for discussion at the dinner table, being able to assist in introducing our children to the work force in their mid-teenage years has been a very important part of their personal development and gave us an opportunity to see more of our children during this time in their lives. The club has been a great place for them to develop a work ethic, understand the importance of being committed to a job, improving their communication skills with people and the basic principles of working within a team.

Chris, is there a favourite Father’s Day moment you would like to share? Father's Day picnics at the Cataract Gorge in Launceston were always a highlight with my parents, my siblings, our children and all our nephews and nieces, of which there were many. Cheryl’s mother and her family often came as well. My best Father’s Day was 2014, we were in the Greek Islands with the whole family to celebrate Cheryl’s 60th birthday, and Father’s Day was a few days before. For Father's Day, I got to celebrate with sunset drinks in our villa pool overlooking Paradise Beach, Mykonos. We later had two chef’s come and prepare a traditional Greek banquet for the 10 of us.

Brisbane based singer-songwriter, Paris Lane has been in the music scene for over 20 years. He plays gigs and events throughout the Gold Coast and all the way up to Brisbane, engaging audiences with his fusion of acoustic and pop/rock tunes.

How did you discover your talent for music? I found music when I was given a guitar for my 10th birthday. I was determined to learn how to play and found my passion for artistic expression. It has given me the same passion and drive ever since. How would you describe your sound? A delicate and unique fusion of guitar and piano. A mix between Coldplay and John Mayer. What’s in your music collection and who are your musical inspirations? I'm a real metal head as much as I tend to write about flowers and fairy tales.  Ed Sheeran and Pearl Jam are my most favourable inspirations these days. Are you working on any personal projects at the moment, and where is the best place we can hear your music? I am working on my debut album after the release of an EP and two singles last year - I hope to have a release date soon. If you’re a lover of live music, The Keith Urban Experience is one tribute show not to be missed this November at Sharks. Celebrating the music icon’s huge catalogue of hits, the band is sure to wow audiences and provide a great night of entertainment.

The singer-songwriter, Keith Urban, has written and recorded some of the best songs in recent Nashville history, ranging from up-tempo songs to heartbreaking ballads. Keith is one of the best singers in country music and one of the greatest guitarists in the industry. The tribute show is loaded with all the hits including, Somebody Like You, You’ll Think of Me, Days Go By, and The Fighter. The Keith Urban Experience features a full live band including Farren Jones, a recording artist and X-Factor finalist, who delivers a striking resemblance and charismatic performance as Keith Urban. Joining Farren on stage is lead guitarist Cameron Inglis, with Lach Inglis, laying down the energetic grooves on drums. The line-up is completed with country music artists, Heather on banjo/guitar, and Olivia on bass/backing vocals. WITCH HAT CUPCAKES Gather your young ghouls in the kitchen & let them get stuck into this delicious cupcake recipe! INGREDIENTS

1 batch cream cheese frosting: 1/4 cup unsalted butter, room temp 225g icing cream cheese, room temp 2-3 cups icing sugar 1 tsp vanilla extract Beat butter and cream cheese together until light and fluffy. Add vanilla. Gradually add icing sugar and beat until you reach the desired frosting stiffness you want.

12 chocolate cupcakes (generic packet mix – follow instructions) 6 Oreo cookies 12 Hershey's chocolate kisses green and orange food colouring white and orange sprinkles (optional)

INSTRUCTIONS

1. After making the cupcakes and cream cheese frosting (above), separate 1/2 cup of the frosting into a separate bowl. Colour the larger amount of frosting green and colour the smaller amount of frosting orange with the food colouring.

2. Gently split the Oreo in half. Place a very small

spoonful of orange frosting in the centre of the Oreo cookie. Place a Hershey's kiss on top and press down. Add some sprinkles. Set aside.

3. Pipe the green frosting into the centre of the cupcake and wind it gently up into a few layers. Place an Oreo witch’s hat on top.

SSH+F has many inspirational stories of members who decide to transform their life through starting a journey of health and fitness. Our personal trainer Stacey Williams has been working with member, Alexander Roe since September 2016 and we would like to share the story with you. Alexander trains with PT Stacey twice a week; Tuesday has a focus on strength and cardio and Friday is boxing. Alex trains a further two times a week by himself in the gym focussing on cardio. Alexander said "having a PT keeps me accountable and provides support/friendship." Speaking with Alexander recently, he was super positive about his dedication and achieving his initial goals, including making fitness a part of his life routine. Alexander also recently competed in the 2017 Gold Coast Airport Marathon 5km event for the first time and has set a new goal to compete in the 10km event in 2018. Alexander said "I feel like a new person, with friends and family commenting on the positive changes they have seen, with a massive drop in my weight from 150kg to 125kg! My next goal is to drop under 100kg, which I'm currently working on with PT Stacey."

Did you go to support him running Gold Coast Marathon 5km event? I would never miss an event a client of mine was competing in! Having autism, this was a huge step for Alexander, there were so many people in the event so it was extremely intimidating for him. The best part was to see him running across the finish line and he even cracked a cheeky smile. How have you adjusted the training as Alexander achieves his goals? Training sessions are modified to suit his goals, slowly increasing the intensity and the exercises as his fitness and strength improves. He has his own training program to follow, which is monitored and we regularly check his measurements to make sure he is staying on track.

AN INTERVIEW WITH PT STACEY ON WORKING WITH MEMBER ALEXANDER. What change have you seen in Alexander? When I first met Alexander, he was shy and looking to lose weight. After less than one year, his confidence has really improved - he is willing to try new exercises and he never ever gives up! Do you assist in setting the goals? Absolutely, I'm big on goals and why you want to achieve your goal. During the initial consultation, we spent time talking about his goals and we continue to revisit these. A big achievement was completing his first 5km event at the 2017 Gold Coast Airport Marathon. Why did you suggest the GC Marathon? As a trainer, I believe it’s so important to have a goal but more importantly to have something that pushes you out of your comfort zone. One reason I suggested this event was to improve Alexander’s confidence. I wanted to show him that he can achieve anything if he puts his mind to it and some hard work!

AUSSIE CULTURE EXPERIENCE FOR STUDY GOLD COAST AMBASSADOR PROGRAM

The 2017 Mayor’s Student Ambassador Program is a collaboration between the City of Gold Coast and Study Gold Coast to build and strengthen relationships between the local community and students through cultural and social inclusion. The 2017 program will focussed on student experience, employability and the Commonwealth Games.

Southport Sharks Health + Fitness

This year, 21 domestic and international students from diverse backgrounds were selected to experience a host of adventures and engage with local government. Throughout the program, students were encouraged to share their personal and educational journey first-hand through social media platforms #studygoldcoast. Following on from last year, Southport Sharks jumped on board with the initiative, inviting the students to experience some “Aussie” culture and tour the Southport Sharks AFL club. Hosted by Southport Sharks CEO, Dean Bowtell, the students were given a tour of the club’s facilities including the Southport Shark Health + Fitness centre where they participated in a short cycle class with instructor Karen Capper. The students then had a tour of NEAFL team’s locker room situated under the main club. The highlight was the football clinic on Fankhauser Reserve where the students joined Southport Sharks’ official mascot Mr Sharky for a warm-up session, handballing and kicking drills.

Having worked up an appetite, the students sampled a traditional Aussie lunch, enjoying a BBQ in Mackenzie’s Sports Bar beer garden, where they could build their own burger, whilst watching an AFL game. This program is a fantastic way to highlight the unique and varied learning opportunities on the Gold Coast and encourage domestic and international students to integrate into the local community, and Sharks were proud to be a part of the experience.


Stout

Love a good beer but also have a sweet tooth for chocolate? Here is the answer. Like Barry White’s voice, this rich chocolate mousse is lush, dark and velvety smooth. INGREDIENTS 250ml (1 cup) dark Irish stout

Pinch of salt

1 cup dark chocolate (at least 35% cocoa) chopped, plus extra for shavings

4 large egg yolks

30g unsalted butter

2 tablespoons caster sugar (superfine) 375ml thickened (whipped) cream (35% fat)

METHOD •• Heat 125ml of the stout in the saucepan over a medium heat and reduce it by half, about 5 minutes. Remove from heat and set aside. •• Melt the chocolate and butter in a heatproof bowl over a saucepan of simmering water (do not let water touch the base of the bowl). Stir occasionally until the chocolate and butter have melted. Add the salt and reduced stout, stir to mix well and set aside. •• Place the egg yolks and sugar in a clean mixing bowl over the same saucepan of simmering water. Whisk until the sugar has dissolved and the temperature reaches around 70 degrees.

•• Pour the warm egg mixture into the chocolate and stir with a spatula until well combined. Add the remaining stout and stir that in as well, before cooling to room temperature. •• Pour the cream into a large mixing bowl and whisk with a balloon whisk until medium peaks form. Gently fold a third of the whipped cream into the chocolate mixture, then repeat with the remaining cream in two more batches until everything is well incorporated. •• Spoon the mousse into four serving glasses, then shave extra chocolate over the top. Transfer to the refrigerator and let them chill for at least 2 hours, or preferably overnight.

Joining the Sharks family in 2002, Ryan worked in all areas of the kitchen while completing his apprenticeship, becoming a fully qualified chef in August, 2007. In recognition of his skills, dedication to the club and his ability to work in high-pressure team environments, Ryan was awarded the Silver Shark, Employee of the Year award for the Catering department in 2011. The following year Ryan undertook and completed a Diploma of Management, which “assigned more responsibilities within my position”... and “I also gained more confidence in myself and further respect from my team at Carmody’s Restaurant.” Ryan is extremely proud of Carmody’s winning “Restaurant of the Year” four years in a row during his time working in that kitchen. This year he plans to undertake studies to allow him to teach commercial cookery.

Socky Soares Anyone who has been a guest in Carmody’s Restaurant will know the manager, Socky Soares. He has delivered exceptional service for over 10 years to guests, recommending wines to complement the sensational food, and initiating specialty events such as Cuisine & Couture, and Wine Degustation Dinners. Using his attention to detail and 30 plus years of fine dining experience, Socky has guided Carmody’s to be the signature restaurant it is today. It is truly a restaurant worthy of carrying the name of Gerry Carmody, one of the founders of this club. Born in Goa, India, Socky followed in the footsteps of his father, grandfather and great grandfather, working for P&O Cruises after completing his studies in the early 1980's. During his time at sea, he travelled around the world on various ships, such as the Canberra, the Oriana and the Love Boat, in Alaska, the Caribbean, Scandinavia, the Mediterranean and the South Pacific. While based in Sydney, Socky met his wife, Kathryn, later making the Gold Coast their home, where they have been for the last 30 years, raising two sons, Kane and Deon. Socky has always had a great appreciation for wines and foods from different countries and cultures. As a huge fan of red wines, he has visited wine regions throughout Australia, honing his knowledge and passion for this industry. A great boutique winery to visit is Langmeil Winery in the Barossa Valley. It has the oldest surviving shiraz grapevine in the world. Another fabulous experience that comes recommended; Socky has recently returned from the ultimate trip through the Champagne region of France, learning the art of traditional champagne culture from the cellars of Moet Chandon, Mumm and Pol Roger. In October, Socky will be hosting another incredible Wine Dinner in Carmody’s Restaurant. The featured wines will be from the iconic Penfold Winery. One of his personal favourites is Penfolds Bin 138, which is a blend of Grenache, Shiraz and Mataro grapes. This wine is easy drinking due to the softness of the blended

grapes. It is fermented in stainless steel tanks, and left to mature for 12-15 months in seasoned oak barrels giving it a smooth, rounded finish. These dinners are a personal favourite of his, so Socky’s suggestion is to book early! What is the most popular dish in Carmody’s Restaurant? The Filet Mignon Steak is a personal favourite of mine. What is Cuisine & Couture? Cuisine and Couture is held the last Friday of every month. It is a lunchtime event, combining a set menu luncheon with a designer fashion parade.
