“Købn initially launched with a range of poolside towels designed to complement Australian inter ior style,” says Sophie “We do indoor/outdoor living so well, and so many homes have the pool as the focal point of the enter taining area However, it pained me to see beautifully designed areas with br ightly coloured, gar ish beach towels hang ing over the pool fence in complete contrast to the stylised inter ior ” It was this realisation that allowed her to identify a gap in the market for elevated outdoor towels, but her products are actually suitable for indoor and outdoor use “The range is now sold with the end pur pose of the towels [being] up to the purchaser,” she says

G lobe trotting journalist Heidi Mortlock was living in Holland when she lear nt a Dutch word, gezellig “It has no direct English translation, but embraces ever ything from ‘ cosy ’ to ‘fr iendly’, to general together ness or time spent with loved ones, ” she says “I have evoked it in all my homes ever since and this house is no exception ever y time I walk in the door I get a relaxed, calm feeling ”

The generous 300 square metre lot, so close to the city, was another plus, able to cope with the demands of both an active husband and a baby boy on the way “We were drawn to the outdoor space and the wild garden that wraps around one side And we figured, if the new ar r ival was going to be as active as his dad, he would need it!”

“We’re big on enter taining fr iends and f amily,” says Heidi “While we are in the open plan living space most of the time, my f avour ite weekends are spent out in the garden, just the three of us, Vinnie and I cooking on the barbecue and sipping a wine while Sebastian r uns around ” And with a g rowing f amily, having a dedicated laundr y is a game changer.

So, I kept things simple and focused on natural colour s, textures and mater ials ” For visual accents and contrast, Heidi has played with texture, using a combination of matt and glazed, smooth and tactile mater ials, including leather, stone, timber, br ick, brass and chunky textured f abr ics “The natural light and shadows also add softness and movement,” she says While Heidi g rew up in Sydney, she spent most of her twenties in London, San Francisco and Amsterdam. “Throughout my travels, I collected fur niture, textiles and objects, so our home is a collection of meaningful pieces amassed over the year s, ” she says They are offset by contemporar y fur nishings with a mid centur y bent, including two South Afr ican dome pendants now a feature of the living room which are a nod to Vinnie’s bir thplace

The aspir ing designer and decorator under took the project her self , with a clear idea of what she wanted to achieve “A home should elevate your senses, so I was dr iven by both the goal of it being a functional f amily space, but also making us feel good,” she says “I wanted it to evoke a relaxed, contemplative way of living connected to nature We inher ited some beautiful old trees and connecting inside and outside was impor tant So was natural light I wanted to envelop the living areas in glass ”

Preser ving the per iod char m, which or ig inally seduced her, was vital for Heidi “I entered into a slow dance of g ive and take with the house,” she says, “wanting to make sure we maintained its character, but at the same time, maximising the space for our f amily and enhancing the look and feel, [which meant] we needed to make substantial changes ”

Heidi extended the house to the boundar y on one side and placed the kitchen in front of a sculptural dragon tree, which had previously been obscured “With a large sliding window and bifolds that look out over it, the tree has become a focal point,” she says Meanwhile, to open up the back, she removed a wall between the dining room and kitchen, and another between the living room and kitchen, and inser ted a laundr y behind the kitchen Or ig inal features, such as kaur i pine floor s, French door s, stained glass windows, fireplaces and exposed beam ceilings, were f aithfully preser ved The inter ior s take their cues from the lush natural world just beyond the windows “The dragon tree by our kitchen is this

F or Yvette, the owner of this house in War randyte, Victor ia, one of her f avour ite places is the laundr y Not on wash day, but for one br illiant feature: the tilt window “It opens up and changes the whole feel of the room, br ing ing the outdoor s in I will often sit and have my coffee or eat my breakf ast at the laundr y bench!” she says with a smile It must be tr uly special because, in this four bedroom home, she has many perfect perches to choose from, including a vast banquette in the upstair s f amily room looking directly into a canopy of eucalypts Br ing ing nature inside is what this eco fr iendly house and its recent extension, designed by Yvette her self , is all about both in physical presence and sustainable building solutions That g reen emphasis is not sur pr ising, as she and husband Jason own Smash Enter pr ises, which established Nude Food Day in Australian schools It aims to eliminate superfluous packag ing while promoting environmentally fr iendly lunchboxes and dr ink bottles And that’s why they chose builder Hamish White of Sanctum Homes to remodel their s “Hamish shares our passion for the environment,” says Yvette “As a result, the build is so well insulated and air tight that we hardly need any heating or cooling It’s kind to the environment and cost effective ” She and Jason bought the freshly built home in 2003, for them and the fir st ar r ival in a f amily that now compr ises two sons and a younger daughter “The house was ver y appealing,” Yvette explains “It was in a beautiful bush setting and presented as a mix of timber s, with lovely lines, split levels, large windows and rammed ear th constr uction. It was unassuming and blended with the landscape ”

In the fir st year, they added a sprawling deck for their g rowing f amily to play on But as the children entered their teens, the couple wanted more breakout spaces, hence the need for an extension in late 2020 “We wanted to create a space for ever yone in the f amily, somewhere self contained and pr ivate, where the kids could invite their fr iends, and also for the adults to enter tain,” says Yvette. “And we wanted to open up the living areas more to the deck and the outside, making them work as one continuous space ” That earlier revamp meant a separate laundr y had gone down the plughole, so she was keen to reinstate a dedicated laundr y and, of cour se, connect it to the outside.

“Lighting for example doesn’t have to be the best if it resembles the real thing and does the job, you can get away with a less expensive version As long as you have a hero piece (such as our pool table light) you can settle for less with the rest The lights I loved for the kitchenette were nearly $1000 each, but I settled for gold dipped bulbs at $25 each! In 2018 , a Sydney couple found a home in a sad state of disrepair and promptly put that old life behind them

A lthough it was located on a generous block in Sydney’s inner west, the house that Samantha Cur tis and David Freney purchased in 2018 was completely unsuitable for human habitation when they fir st encountered it

The couple engaged building designer s Nor r sken Ko to draft up plans for the rebuild, pr ior itising a functional layout and robust mater ials palette, with plenty of room for the f amily to g row They recommended inter ior designer Br ianna Sandstrom to over see the inter ior s “We had absolutely no building exper ience and didn’t realise what a big under taking this would be,” says Samantha. “Luckily, we star ted the process before we had children, so I was able to work through the more time consuming details with Br ianna while I was on mater nity leave ”

Additionally, David had one ver y specific request for Br ianna: a spor ts bar at the front of the house. “The spor ts bar was to be a standalone space with an old world feel,” she says, “and we weren’t afraid to use vastly different mater ials in that space, such as recycled br ick, dark blue walls and walnut joiner y ”

“We had been searching for a f amily home in the area, but were unable to find anything with a double garage and a small backyard, so I’d star ted looking at some ver y r undown houses with larger block sizes with the intention of renovating when we found this one, ” says Samantha “This place was completely unliveable and full of asbestos, with rotten floor ing and exposed wir ing ” Given the state of the proper ty, it required a full knockdown and rebuild, a process the local council ag reed to despite the proper ty being in a conser vation area However, her itage aspects still had to be incor porated into the f acade to ensure it was consistent with the suburb and street

Br ianna was tasked with creating a moder n inter ior aesthetic incor porating Samantha’s f avour ite colour g reen into the scheme “I made a few specific Pinterest boards that I shared with Br ianna,” says Samantha “For the kitchen, I had selected many elements from var ious sources, such as V g roove panels, the colour scheme, island design and brass hardware. The bathrooms were easier, with some statement vanity examples and designs that could br ing in my love for g reen marble ”

“While some par ts of the previous renovation were still working quite well, we wanted to improve the connection to the outdoor space and mitigate against the west f acing backyard with better ther mal efficiency and consideration of aspect,” says the owner “However, we were really just looking for a better flow of space between the f amily areas and pr ivate bedroom spaces without losing the propor tions and beauty behind the or ig inal features of the house ”

lthough renovated in the mid 1990s, this Edwardian house in Melbour ne was in dire need of a shake up when architect Imogen Pullar ar r ived on the scene It was March 2019, and though the home had beautiful bones with a weatherboard exter ior, metal clad roof , bay windows, timber floor s, detailed timber fretwork and stained glass, the owner s were feeling the pressure of one small bathroom being shared between five f amily member s. The desire for a more spacious home incentivised them to engage Imogen and her colleague, Emilie Br unel, for a full renovation and extension

Builder MVH Constr uctions reorganised the floor plan to incor porate an additional bathroom, relocating the laundr y behind the kitchen and integ rating more storage into the design Four bedrooms (the main bedroom fitting a walk in wardrobe and ensuite) and one bathroom now sit in the front, or ig inal par t of the house with a hallway down the centre. The new back half of the home has open plan living, dining and kitchen areas with a concealed butler’s pantr y “While the front par t of the home retains its or ig inal per iod features, the new and old par ts of the house are seamlessly integ rated and there is no clear line where one stops and the other beg ins,” says Imogen In ter ms of mater ials, the inter nal scheme of blackbutt timber and bold yet muted g reens was inspired by the home’s exter ior and sur rounding native garden the cladding, battens, decking and pergola are all Australian hardwoods chosen for their natural beauty, strength and longevity “The concept of the pergola was a direct response to the site or ientation,” says Imogen “The back of the house f aces west, which is not ideal for passive solar design, but the solution to this problem became

the hero of the project The pergola provides an ar mature for deciduous vines to shade the back f acade in summer. ”

Improving the passive perfor mance of the building with insulation and well sealed windows and door s was another pr ior ity for Imogen, along with incor porating energy and water efficient measures to reduce heating and cooling costs.

“Ever y decision we make as architects has sustainability at its core, ” she says “Timber is used throughout the proper ty as it’s a natural product that sequester s carbon, and concrete is limited to the bike shed slab and footings. In addition, we reused existing fixtures and fittings that were in good repair, and sourced local products and non toxic mater ials We used high perfor mance, double glazed tilt and tur n windows and lift and slide door s, with timber frames and insect screens, which allow for cross ventilation and night purg ing of the house in summer We also specified inter nal mater ials that have low VOCs and are ethically sourced ”

Plumbing fixtures and fittings were selected based on their high WELs ratings, and a 5000 litre water tank was installed in the backyard to feed the toilets, laundr y and garden Imogen insists there is no difference in cost or difficulty when you choose ethical mater ials for building or renovating: “It’s just about doing the research, listening to the exper ts and making infor med decisions ” As a result, the owner s and their f amily can look forward to reduced energy bills, reuced water usage, and f ar less ir r itants in their environment “Using non toxic products and gas appliances in the build means there are f ar less volatile organic compounds in the air, and we have the ability to be carbon net zero, ” she stresses For the owner s, the end result is ever ything they hoped it would be “We chose to work with this building and design team because they were similarly dedicated to deliver ing sustainable options,” they say “We were lucky to be in a position to do this kind of renovation and achieve these ends Not only do we realise the longer ter m benefits for us as residents living in a more efficient and comfor table house, but if we should sell, we would consider the home’s environmental fr iendliness to be one of its defining features ” Imogen Pullar Arc hitecture is at imogenpullar com and @ip arc hitecture MVH Constructions is at mvhconstructions com

“Felicity was also ver y strong,” says Marc “She’s a real powerhouse. And we didn’t have much of a choice but to somehow soldier on ”

That oppor tunity finally came in August 2017 when they heard about a block via an email from a real estate agent Just 250 square metres, the site on the bluestone lane wasn’t exactly in demand “Actually, no one wanted it,” recalls a smiling Marc “But that was a g reat oppor tunity for us, as it meant it was within our budget, even though lots of people tr ied to talk us out of it! We had the advantage of being an architect and inter ior designer, so we could see the possibilities It was a long battle with council, and there were compromises that had to be made, but I was f airly confident we’d get a per mit in the end ”

The pair, who or ig inally hail from Ger many and moved to Australia in 2007, have always shared a passion for eco fr iendly design.“Sustainable architecture was not really a thing when we fir st came to Melbour ne, ” says Marc “But even at that time, we thought we would love to one day push the bar rel as much as we possibly could for our own f amily home ”

Their per sistence was rewarded, with works commencing on site in late 2019 “Marc and I always shared the same vision to create a sustainable house on a small footpr int,” says Felicity. “We wanted communal areas, as well as spaces for ‘ me time’ ” After all, says Felicity with a laugh, the f amily had already come to appreciate the tr ue meaning of together ness “We will always have fond memor ies of our time in the motor home, but it wasn’t easy, especially as we were living in it dur ing lockdown in Melbour ne, when we were home schooling as well ”

“The home was at a point where it was liveable,” says Marc, who was staying in a motor home with the f amily to save money throughout the design and build “Then the freak accident happened The most plausible theor y is that, as we were working with a flame torch in the rear garden, a leaf must have caught fire and blown into the open cavity of the wall A while later, we saw smoke coming out of the wall cavity at the other end of the house the fire had taken over without anyone noticing It was unbelievable we were all in tear s ”

Remarkably, however, the house weathered the blaze, largely because of the f act that its walls and roof had been built of an ingenious mater ial: pref abr icated, carbon stor ing cross laminated timber (CLT) And so the project was not entirely derailed

hen Felicity and Marc Ber nstein bought a small wedge shaped plot of land adjacent to a train line in Melbour ne ’ s inner nor th, they were under no illusions The inter ior designer and her architect husband realised that their plan for a sustainable 8 4 star, all electr ic home on the unlikely site would require equal par ts skill and stamina from ever yone involved But the couple, who jointly own and r un Melbour ne Design Studios, could not have foreseen the hurdles that lay ahead In par ticular, a setback of the most shocking kind that presented just weeks before the move in date, when ever ything the couple had worked towards over the previous three year s was literally in danger of going up in smoke

E ven when you look closely, it’s hard to believe this contemporar y and spacious abode owned by Ker r ie and Joseph is a conver ted basement, hidden beneath their freestanding home in Sydney’s inner west In f act, this ver y space once housed a dark and dated r umpus room, living space and home office none of which were used effectively “The ‘garden suite’ is now a sanctuar y for the client’s daughter, Eloise, who is at univer sity It allows her to study, rest, enter tain and host fr iends away from the rest of the f amily,” says Benjamin Selke, co director of design fir m Studio Barbara (in conjunction with Felicity King) and the master mind behind the transfor mation The clients had heard of Ben’s practice and reached out to him via email in Apr il 2021 Thanks to their decisive approach, a design was confir med, Laycock Constr uctions was appointed the builder, and on site works had commenced by October of that year With an open plan kitchen, living and dining space, one bedroom, a bathroom and laundr y storage, the conver sion provides pr ivacy and independence while maintaining strong f amily connections essential for multi generational living “Joseph and I wanted to help Eloise, who is a full time student, so she could have the strength of the suppor t of her f amily as needed while completing her deg ree, ” explains Ker r ie “Providing our daughter with cost effective accommodation g ives her the oppor tunity to save money, so that when she completes her deg ree, she’ll be able to star t work in her chosen profession without too much debt ”

One of the biggest challenges of conver ting this basement into a dwelling was disguising the existing ser vice bulkheads in the ceiling “These initial challenges were reframed as oppor tunities, as by weaving joiner y in with the architecture we were able to conceal obstacles, instil continuity and punctuate the rooms with interesting moments and design details,” says Ben “By concealing, disguising and integ rating the bulkheads and awkward wall junctions, we were able to create a space that was much less cluttered and awkward ”

The fir st issue to tackle was the floor plan, which was lacking natural light, cross ventilation and a good flow “As the space has a small footpr int, the br ief was to incor porate smar t storage solutions throughout to avoid clutter and enable a sense of calm A limited constr uction cost was another element of the br ief , ” says Ben “We were able to produce and design the project with quite a reasonable budget specifying laminate as opposed to timber veneer for the joiner y, using man made instead of natural stone, and coming up with cost effective tile and floor ing solutions By sourcing and combining vintage fur niture with new, and using some local products and supplier s, we were able to complete the project within the client’s budget expectations ”

A minimal and neutral colour palette was chosen for the inter ior s, inspired by Eloise’s appreciation of Japanese minimalism, which she’d acquired on a recent tr ip Br ight white on the walls and ceiling enhances the feeling of openness, while blond oak floor ing and similarly toned joiner y, timber rod wall panelling and reeded glass door s provide subtle texture “She wanted a space that could for m a tonal backdrop for her fur niture and objects,” says Ben “The design of the fixed

The standout feature of this design, however, is the enhanced connection to the garden, f acilitated by an outward f acing breakf ast bench and double sided display niche between the living areas “By continuing the bench around and below the stacking/sliding windows in the kitchen, we were able to provide a moment for the client to enjoy the garden, blur r ing the boundar ies between the garden suite and the garden itself , ” says Ben “The niche provides a spot to perch, read a book, work on a puzzle, to display or store objects, or to frame glimpses of the garden ”

Growing movement “Getting a client to come along on the jour ney and enjoy the r ide with us, appreciating the impor tance and significance of sustainable pr inciples, was initially a bit of a challenge,” he admits “But over time, the implementation of the 5 and now 6 star energy rating and things like double glazing have become industr y standard, which has meant a much g reater awareness of sustainable design I’m highly hopeful that we ’ re well on the path to where things need to go ”

That’s been the case from day one for the multiple award winning practice “In our work,” says Jer r y, “passive design and the pr inciples of sustainable architecture are fundamental to the way we approach the design of a building ”

Living the dream Twelve year s ago, Jer r y and his par tner, fellow architect Chr istina Theodorou, built a stunning off g r id home using a mix of new and recycled mater ials for their own f amily Located near Victor ia’s Macedon Ranges, the compact Hill Plains House (shown on both pages) is highly insulated and powered by a 2kW solar/batter y system “Our kids are g rowing up here,” says Jer r y “It was a real mission to build it and a g reat lear ning exper ience ” That continues to be the case, which Jer r y clearly relishes “I say that living in an off g r id home is a bit like sailing, because ever y day we look at the weather conditions For example, we have an electr ic oven, so in the winter when the sun is out dur ing the day, that’s a good time to put the oven on and cook Our hot water is solar and our heating system is a hydronic woodfired boiler so it’s pretty hands on ”

The duplex is the new k id on the block of the proper t y scene a nd prov ing that t wo is bet ter tha n one for some The term ‘duplex’ isn’t something you often hear when discussing the real estate landscape in Australia but it should be A duplex refer s to two residential buildings that share a common wall, and these str uctures can allow you to buy a home and land in your ideal location for half the pr ice or generate healthy rental yields for a much lower cost than your traditional standalone house “Duplexes make a lot of sense for the Australian proper ty market With our g rowing population and ever increasing cost of living, a duplex is a no brainer as you can create a decent sized home with ever ything you need for a lower cost than a house,” says Neil Hipwell, director of Sydney design and constr uction company Futureflip “People don’t have the time to maintain large proper ties, and if you ’ ve got an existing home on a large block, splitting your block in two and being able to create two homes can be a ver y appealing option ” Neil star ted his constr uction company in 2008 when he was just 18 year s old, dr iven by an obsession with residential design and constr uction Futureflip now specialises in the design of detached and duplex housing, the latter of which has recently exper ienced g reatly increased popular ity “The high levels of demand for duplexes in the Sydney proper ty market meant that many of our clients were able to profit from developing a duplex

on their block Clients were able to pay for the build of their new home by selling one side, and they still came out ahead,” explains Neil “We’re also seeing an increasing number of multigenerational f amilies developing their proper ty so they can live side by side and maximise the value of their land we ’ ve built for parents and their children, sister s and brother s, and even two f amily fr iends ” Some parents are even helping their children enter the proper ty market by redeveloping the f amily home Neil explains that duplexes are g reat if you ’ re looking to access a more affordable housing option that won’t negatively impact your lifestyle with upkeep The design oppor tunities of a duplex are the same as that of a home, limited only by your vision and budget, with g reen and eco fr iendly measures easily incor porated into the dual occupancy “On average, duplexes are a g reat investment option as you can build your dream new home in a location that you already know and love and rent or sell the other side,” says Neil “If you complete a feasibility cost assessment before beg inning your duplex project, you ’ re bound to do well It’s also impor tant to be strateg ic about where you spend and where you save in the build We always recommend spending a bit more on the f acade and things that are easily visible from the street, then choosing more cost effective mater ials for the sides of the duplex ”

However, just like any investment, there are downf alls and r isks associated with a duplex build but both can be mitigated with thoughtful design and thorough research The nature of a duplex means you’ll be shar ing one block of land and one full side of your home with your neighbour, and if you ’ re used to living in more pr ivate conditions, this can require an adjustment per iod You’ll also need to carefully design the home to f acilitate natural light, as you’ll be sacr ificing an entire wall of windows to your neighbour ing proper ty “There can be a lot of paperwork when it comes to subdividing your duplex at the end,” points out Neil “There’s significant additional documentation that is required and additional fees to complete this There are also additional insurance fees and other preliminar y site costs that need to be accounted for when you are building a duplex, not just the cost of the building itself ” Ultimately, a duplex is a smar t investment for almost any stage of life if approached with care It can provide an entr y point for fir st homeowner s, a solution for expanding and multigenerational f amilies, and be a lucrative investment for those looking to sell one of the proper ties or become a landlord simply choose your own adventure Futureflip is at futureflip com au and @futureflip

S imone Mathews has a beautiful house in Cronulla, NSW At the rear of the proper ty is a stunning studio that the inter ior designer and SOUL Home founder alter nately uses an office, r umpus room and guest accommodation However, the multi pur pose space wasn’t always so useful Up until recently it was a ramshackle asbestos r idden str ucture of little more than a slab, framework and roof tr usses “We wanted to make good use of the space, rather than just using it as a storeroom,” Simone explains “And because we ’ re a f amily of six, we knew our four boys could enjoy some space away from the main home We also wanted a place for guests to stay Additionally, with the cost of housing being so

The studio’s batten and board f acade showcases Cemintel cladding and batten tr ims from Design Pine, complemented by French door s and blackbutt timber decking from Big River Group Inside, Simone chose a whitewashed palette of Dulux Natural White to make the studio feel larger than it is “The raw eng ineered oak floor ing added texture to the space, and painting it white created a fresh coastal vibe,” says Simone “We used Gyprock Plus on the inter ior walls and ceilings as we know it’s a resilient and affordable plasterboard that will ensure the longevity of the build for year s to come Aesthetically, it was the perfect mater ial to suppor t the roof tr usses and exposed beams without competing with them they’re a huge feature of the space and draw the eye up, so this was impor tant ”

“By being par ticular about choosing mater ials that function well without sacr ificing quality, we were able to achieve an amazing result,” says Simone “This star ted off as a pur ple str ucture that was pretty much unusable, so to now step into the space and feel instantly relaxed and uplifted is rewarding.”

Colour, texture and war mth has been included through carefully styled layer s of fur niture, ar tworks and homewares Metallic fixtures contrast br ightly against the walls, and g reener y has been used to elevate the inter ior “I wanted the kitchen to have a r ustic and uncomplicated design, which is why I chose the open cube style plus it was good for the budget!” points out Simone “The benchtop in Fir tina stone from Stone Ambassador s completed the kitchen and was the one splurge in mater ials, while organic looking tiles in the kitchen and bathroom were left over from one of our previous projects ”

nce the knockdown and rebuild of this home in Sydney’s east was complete, the owner s, Paul and Lyn Say, were keen to star t on their bare and uninviting front cour tyard They wanted a garden with street appeal that complemented the new home’s moder n architecture “My husband was convinced I could do the job, but I knew better,” says Lyn “Although I love gardening, coming up with a design was beyond me ” After seeing his work in a previous issue of Inside Out, Lyn enlisted the help of landscape designer Adam Robinson to reimag ine the 50 square metre space and settle the new house into its sur roundings In her br ief , Lyn requested a tough but dynamic planting palette and “something to soften the big white wall” While she loves potter ing and maintaining a garden, she wanted the plants to be f airly low maintenance, allowing the couple to travel without fretting about the garden Apar t from that, the design direction was mostly left to Adam, who set about creating a space with maximum impact within the limitations of the 10 7 x 4 7 metre nor th west f acing area Due to its proximity to the beach, the site is made up of sandy soil and is exposed to har sh coastal winds Adam thought a palette of highly textured plants would suit the tough conditions and work with the mater iality of the house “The plants soften the front and g round the robust architecture while creating a str iking display,” he explains. Key plantings include a loose olive hedge, a white bird of paradise (Strelitzia nicolai), and silver blue hued agaves But the cloud pr uned juniper s, under planted with a sea of foxtail fer ns, are the hero of the design. “They’re sculptural, theatr ical, and create a playful feel,” says Adam Lyn also loves them “They are a real feature of the front garden like a living painting!” she adds Though the planting is not overly complex, it was impor tant to create textural contrast. As such, bold, sculptural agaves and g iant bromeliads are juxtaposed with the finer, softer for ms of Carex comans ‘Frosted Curls’, lomandra, walking ir is (Neomar ica gracilis) and cushion bush (Leucophyta brownii) Employing different shades of g reen plays on tonality and maintains visual interest while providing the perfect backdrop for punctuations of burgundy and silver

The relaxed nature of the plant palette is echoed in the crazy paving at the front entrance, which extends into the garden as casual stepping stones “The crazy pave is ideal because even though it’s a hard mater ial, by nature it’s softer and more organic,” says Adam Around the stepping stones, Dic hondra repens hugs the g round, densely cover ing the areas between the stepper s “Having plantings r unning through it allows the stepping stone path to read like par t of the garden rather than

The space was previously a bar with a shar p, moder nist, concrete cool vibe that Brett’s wife, stylist Anna Hewett, was invited to transfor m “The question I asked myself was, ‘How do I make this concrete bunker feel in any way Greek?’” she says “What we realised was, in the initial architecture by George Livissianis, there was this beautiful concrete key step detail, which just happened to be what I saw as a Greek key, a tiered concrete element. So, we took that and worked with it in the dining room side and in the window frames The br ief ended up being ‘moder n Greek’ ”

The space ’ s other pieces fell into place organically “When I was doing Shell House [bar/restaurant in the CBD], I lear ned that it felt g reat when we mixed up the fur niture, but while the styles are all different, they do talk to each other ” The result is a war m and welcoming space that feels like a f abulous holiday home in the Greek Islands the ultimate mid centur y Mediter ranean mix ’ n ’ match Delicious!

Topikos means ‘local’ in Greek, and for Brett Robinson, the owner of Topikós bar/restaurant in Bondi, the community he lives in and loves was the inspiration for his newest project “We love the name it reflects how we live here,” he explains “Most year s, we travel to Greece for their summer, so dur ing Covid we really missed that island culture and cuisine And there are no other Greek restaurants like this in Bondi ”

The bar and restaurant are divided by a wall of encased windows that encourage people watching between the two zones and manage noise transference “We realised one room would feel too big, that it needed some delineation of space, ” says Anna “I was really ner vous about those windows because I didn’t want it to feel like you ’ re in a fishbowl either.” The next step was injecting softness into the space “We went with a soft, pale blue render, although I didn’t want to do anything obviously ‘Greek blue’ We eventually chose Dulux Antarctica Lake, which looks like the colour of an iceberg with the r ight amount of dir ty and the r ight amount of happy blue, too The render means that if it chips it won’t chip white under neath, so as it wear s it should still look pretty cool ”

1 Combine the pork, light soy sauce, white pepper and salt and allow to stand for 30 minutes to marinate

6 Mix ever y thing together; transfer to a plate and ser ve immediately

3 Add the ya cai chilli powder and dark soy sauce Fr y gently for 1 2 minutes, then turn the heat off but leave the wok on the stove for now

250g dried thin wheat noodles 2 cups ( 500ml) good quality store bought stock, plus extra to ser ve 1 teaspoon ground Sichuan peppercorns, to ser ve SAU C E 1 tablespoon white tahini 1 tablespoon light soy sauce 1 teaspoon Chinkiang black vinegar 1 tablespoon grated garlic 1 teaspoon sesame oil 1 tablespoon chilli oil (or use Lao Gan Ma chilli oil) 1 teaspoon caster (super fine) sugar

3 Heat the lard or oil in a wok or fr ying pan over high heat until smoking Add the garlic and fr y until fragrant , 10 15 seconds, then add the rice noodles and egg noodles Stir fr y over high heat for about 30 seconds then add the Chinese sausage fish cake and prawns Continue to stir fr y over high heat until the sausage fat begins to render and the noodles are lightly charred, 2 3 minutes

This is one of the recipes I’m proudest of My sister and I spent years tr ying to find a version of dan dan mian that resembled the one from our childhood It was always too saucy and meaty, and too similar to another Chinese noodle dish called zhajiangmian For me, the perfect dan dan mian is a small bowl of sesame paste slicked noodles with a sprinkling of crispy pork Fragrant with Sichuan pepper dried chillies and ya cai (Sichuan pickled vegetable), the noodles are slurpy crispy spicy perfection Sesame paste has a habit of becoming claggy so hot stock is added sparingly to loosen the sauce Making this in small portions is absolutely essential to maintain the perfect texture, but no one said you can t have more than one bowl

5 Push the noodles to the side of the pan and add the beaten egg bean sprouts and garlic chives Fr y for 30 40 seconds over high heat , until the chives begin to wilt

1 To make the chilli paste blitz all of the ingredients together in a food processor to form a fine paste and set aside You will need 1 tablespoon of this chilli paste (or sambal oelek, if using) for each portion of noodles Store the remaining chilli paste in an airtight container in the fridge for up to a week

4 Add the sauce and 1 tablespoon of the chilli paste or sambal oelek (use more if you want more heat) and toss to coat

2 To make the sauce, whisk all the ingredients together in a small bowl and set aside

1 Place the congee in a large saucepan and bring to the boil Add the sliced fish, cover and turn off the heat Allow to stand for 10 minutes

Source the freshest fish you can find for this dish With a recipe as simple as this one, the quality of your fish will be glaringly obvious I also recommend avoiding freshwater fish as the sometimes muddy flavour can often be detected Ling cod or grouper with their clean oceanic flavour, make lovely choices My sister used to order this dish from a C antonese restaurant we’d visit in Melbourne’s Glen Waverley after Saturday morning Chinese school I would watch her stir in big helpings of chilli oil and soy sauce transforming the milky white surface into a ver y appetising golden brown, dotted with pools of chilli oil Her congee ended up being the most perfect combination of silky rice perfectly cooked white fish zingy fresh ginger and chilli oil Not one for the purists maybe but very delicious 500g plain congee (see below) 500g white fish fillets such as ling, cod or grouper, thinly sliced 1 teaspoon salt 1 spring onion (scallion), sliced 1 teaspoon julienned ginger Soy sauce, to ser ve Chilli oil (see recipe or use Lao Gan Ma chilli oil), to ser ve

The common Chinese name for chilli oil hong you or red oil is a reference to its astonishingly vibrant colour In its purest form, chilli oil is made by pouring hot oil over crushed dried chillies and leaving them to infuse I like mine with heaps of salty sediment and this recipe ensures the maximum amount of bits at the bottom of the jar I’ve divided the recipe into parts for clarity Tr y to track down dried Sichuan chillies If you can’t that’s fine but remember the heat will var y There are a few varieties available ranging from moderate to ver y spicy, and your local Asian grocer will most likely stock at least one of them PA RT 1 40g dried Sichuan chillies or other dried chillies 2 tablespoons vegetable oil 1 teaspoon Sichuan peppercorns PA RT 2 10 fresh red chillies, topped 3 cloves garlic , peeled 3cm piece ginger, peeled ¼ cup (60ml) vegetable oil 2 teaspoons salt 2 teaspoons caster (super fine) sugar PA RT 3 1 spring onion (scallion), white part only 1½ cups ( 375ml) vegetable oil 3cm piece ginger, skin on, sliced 2 star anise 1 black cardamom pod

PA RT 1 Use a pair of sharp kitchen scissors to cut the dried chillies into small pieces Heat the oil in a wok or fr ying pan and fr y the chillies and peppercorns over low heat until they are fragrant and the chillies have turned a deep red Keep moving the chillies and be extremely careful not to burn them Allow to cool then crush using a mortar and pestle Transfer to a bowl PA RT 2 Place the fresh chillies, garlic and ginger in a food processor and blitz to combine Warm the oil in a small saucepan and add the chilli mixture Fry over low heat until the moisture evaporates, 5 6 minutes Allow to cool, then stir through the salt and sugar Combine this mixture with the dried chilli mixture in a heatproof bowl and set aside PA RT 3 Cut the white spring onion into large pieces Don’t cut the pieces too small, or they will cook too quickly and burn Pour the oil into a large saucepan that can hold double its volume (as the oil will bubble up) and place over medium heat Add the spring onion and ginger and fr y until golden then remove from the oil and discard Add the star anise and cardamom to the oil and fr y over low heat until fragrant At this point , the oil should be ver y hot Pour half the oil over the chilli mixture and stir Wait 5 6 minutes for the oil to cool slightly then pour the remaining oil over the chilli mixture Once the chilli oil is completely cooled, remove the star anise and cardamom and discard Cover the oil and leave overnight at room temperature

The next day the oil should have turned a dark red colour Pour into a sterilised airtight container or jar and store in a cool dark place for up to three months Tr y this chilli oil on avocado and feta toast , on pasta, or mixed with Chinkiang black vinegar and soy sauce for a classic dumpling dipping sauce

2 Bring 8 cups (2 litres) water to the boil in a large saucepan, then add the rice Stir and reduce the heat to a simmer Continue cooking for 45 minutes until the rice grains burst open and melt into the water Stir the congee during the last few minutes of cooking to further break up the grains Allow to stand for 10 minutes

I had never heard the term congee until we moved to Australia In Singapore, we called it porridge and ate it for breakfast , lunch, dinner or as a snack Ever y family has their own version of this two ingredient dish Some like it soft and silky others prefer it more like a wet rice Some eat it plain, others pile it high with toppings of their choice This is one of those dishes where you can do no wrong 250g white short grain or medium grain rice Sprinkle each of salt , ground white pepper and julienned ginger, to ser ve (optional)

1 Place the pork mince in the freezer for 30 minutes before using 2 To make the spice mix, place all of the ingredients in a small fr ying pan and toast over low heat until ver y fragrant taking care not to burn the chilli flakes If they turn too dark start again Set aside to cool, then blitz into a fine powder using a food processor

3 Add the chilled pork mince guanciale ginger fish sauce light soy sauce Dijon mustard sugar cornflour and iced water to the spice mix and pulse until combined The mixture should bounce back when pressed Refrigerate the sausage mixture for two hours

5 Heat a fr ying pan over medium heat and add enough vegetable oil to evenly coat the base of the pan Cook the sausages until they are a deep golden brown rolling them around continuously for about 10 minutes

I love a sausage sizzle as we call them in Australia where you can grab a barbecued, slightly singed snag (sausage) wrapped in soft white bread, in exchange for a gold coin This recipe keeps the sizzle, the sausage and the white bread but the similarities end there Instead a flavourful juicy Sichuan peppercorn spiced pork sausage is studded with guanciale, smeared with Japanese mayonnaise and refreshed with lime juice Definitely not your average sausage sanga 450g pork mince (ground pork) 50g guanciale or pancetta, finely chopped 2 teaspoons grated ginger 2 tablespoons fish sauce 1 tablespoon light soy sauce 1 tablespoon Dijon mustard 2 teaspoons caster (super fine) sugar 1 tablespoon cornflour (cornstarch) 1 teaspoon iced water Vegetable oil, for shallow fr ying S P I C E M I X 3 teaspoons Sichuan or Korean chilli flakes 2 teaspoons Sichuan peppercorns 1 teaspoon ground white pepper ½ teaspoon cumin seeds ½ teaspoon coriander seeds ½ teaspoon ground turmeric TO A S S E M B L E 4 slices white bread Coriander (cilantro) leaves Mint leaves Kewpie mayonnaise Lime wedges

4 Using wet hands roll the sausage mixture into four 2cm x 10cm logs and refrigerate for at least one hour to set
