Change things up I absolutely love a home makeover. Whether it’s a full-scale renovation or a decorative revamp of a room, maximising the potential of a home is something that adds financial value and to the pleasure of living there. After an 18-month intermission I’m finally back on the renovation train, and with my DA approved am at the point of locking in lighting plans, flooring choices and fixtures. So many decisions to be made! But I’m relishing every minute. When you take on a makeover, how do you work through the design journey? I hope you find plenty of inspiration in Home Beautiful. I love to collect images, sketch rooms and stock up on swatches of every fabric, carpet, floorboard and tile I can get my hands on. There are so many companies that will send you samples and swatches so that you can make your own tactile moodboards. From benchtops to window treatments, just head to the various brands’ websites to see what takes your fancy and have them sent to you. This issue we have a before-and-after special (page 161), with room after room of beautiful makeovers – complete with budgets – to pore over. Some projects are structural, others purely decorative, but all of them show the power of a great transformation. One way to change the look of a room is to update the window furnishings, and from page 137 you’ll find our handbook to curtains, blinds and shutters. It can be tricky to know what style to put where, and whether to go for pattern or plain, sheer or opaque. This feature will guide you through the process. The homes this month are all deliciously cosy and inviting, the perfect places to curl up with a magazine and a pot of tea – or a glass of wine. They show that a home can be contemporary or classic and still envelop the people who live there with layers of texture in upholstery, bedding, cushions and throws. Speaking of which, flip to page 38 for our edit of the season’s most sumptuous blankets. I have my eye on the cherrycoloured blanket from Hard to Find… which one do you fancy?

How did you get your start in magazines? “I landed my very first ‘real’ magazine job a little over six years ago, when I started working as an editorial coordinator at Australian House and Garden. I did a bit of everything, from coffee runs and administrative tasks to writing features in the magazine.” What’s your favourite section of HB? “Creative Collection – I love reading about inspiring people, how they hone their craft, and discovering small businesses I haven’t seen before.” If walls could talk, what would they say about your decorating style? “My walls would say that white-washed interiors are lovely, but it’s okay to use a little colour sometimes! I love all-white everything, but on the rare occasion I opt for colour, it’s always for some shade of pink.” Where is your dream destination? “Right now, I would give anything to be taking in gorgeous green views of the Swiss countryside or walking the busy and chic streets of London.” What are your favourite HB stories to write? “I enjoy the designer profiles because I really love learning about different paths to success, signature styles and how they can be applied to any home.”

lizabeth Flekser and Melanie Parker were both making a career change when they met at a design college in Brisbane in 2007, and bonded over their shared passion for interior design. “We remained friends throughout college and both pursued separate junior design roles within the Brisbane interior design scene. Over a couple of flat whites, we discovered we shared more than a few similar ideas for a side business,” says Melanie. “We began developing a range of napery, cushions, lampshades and soft furnishings inspired by fashion but with an emphasis on pattern and colour. We were chasing homewares with roots in tradition but with a fun and modern twist. That is how Ivy and Piper began.” The pair inject a sense of fun into every project they work on, an approach they say has become their signature style. “Although our aesthetic is emblematic of our clients’ personalities and lifestyles, there is always a punchy mix of colours and patterns, and a juxtaposition between antique and contemporary pieces that punctuate our interiors,” says Elizabeth.

What do you love most about creating interiors? MP: “It would have to be a tie between being able to infuse wonderment into a room and the ability to transform the experience of those who are using or living in the space.” What is the key to a successful business partnership? EF: “Trust is the foundation of our successful partnership and has created a powerful space for each of us to grow and push the envelope professionally and creatively.” Where are your favourite places to dine? MP: “Mica, Newstead, because the interior has a swish European aesthetic. Entrecôte, Melbourne (7), – we’ve been fans since the early days, the elegant and sumptuous setting of this classic Melbourne restaurant is prime for either a casual lunch or fancy date night.”

Where do you like to go to relax? EF: “Aore Island Resort (5), we had the pleasure of discovering Vanuatu for the first time through our work redesigning the resort.” MP: “I have family in Tasmania (4), so it has a special place in my heart, however, I have always found the rugged scenery truly breathtaking.”

What is your go-to move for building character in an interior? EF: “Start in one space and pick your ‘hero’ piece that will form the basis of your scheme such as a piece of art, an antique or a fabric you love. Build up from there using your hero item as a reference to guide you when selecting your remaining decor.” What’s currently on your wish lists? EF & MP: “Pieces from Lorna Murray (2), Pentreath & Hall (3), Wicker Darling (6) and Jimena Alejandra (8).

W
hen Lisa Quinn-Schofield visited Milan’s Salone del Mobile in 2005, she saw a lot more than just fabulous furniture. She found a future for herself where her passion for both art and interior design could intersect and influence one another. “I’ve done art my whole life and completed a three-year diploma of fine arts at TAFE in 1998, followed by a BA Fine Art at Curtin University in 2004. I’ve always loved interiors and was lucky enough to go to the Milan Furniture Fair where I saw a fusion of art, design and interiors, which really sparked something in me. It was then that I knew I could do something different with my career,” says Lisa. After working in the fashion and furniture design industries, Lisa created Featherhorse Studio in 2012, a multi-disciplinary business producing original paintings and limited-edition art prints while providing style and design services for retail and residential interiors, based from her home in Perth. “My love of fashion, art and interiors all influence each other,” says Lisa. “I’m constantly evolving across all aspects of my work, but the common link for me is being inspired by the natural landscape.” Lisa’s artwork is uplifting and tactile, her brush strokes forming gentle expressions of natural environments that are rich and inviting. “When I paint, it’s a very intuitive and emotive process,” says Lisa. “I like to create lots of layers to bring the viewer in and out of the work.” Although her paintings are abstract, each has a sense of place and tranquility, a quality also present in her styling. “Being an artist is an introverted, quiet practice. I need to get in the zone, feel what I’m doing... interiors is social with lots of problemsolving, talking to clients and suppliers, it’s very active. I like the balance of both, it keeps me grounded and focused. Both energise and rejuvenate me,” says Lisa. “I get to do something I really love every day that makes an impact in someone else’s life. I know as artists and stylists we’re not saving lives, but I really think our homes are our sanctuaries and we need to immerse ourselves in environments that feel good for the soul. If I can offer a little piece of that through my interior work or my art, then that feels like I’m fulfilling my purpose.” 26

hen visitors first step into this grand country cottage in the NSW Southern Highlands, they’re bound to catch the sweet, floral scent of blooming hydrangeas. Clusters of the delicate flower are arranged in ceramic vases in every room of the two-storey home (of which there are numerous), plucked straight from the property’s sprawling gardens. “We never have a shortage of fresh flowers in the house in the warmer months when the hydrangeas are in bloom. It means I can have magnificent displays using all the different, gorgeous hues we have growing,” explains homeowner and interior designer Melinda Hartwright, whose green-thumb husband Tom can be credited with transforming the once-sparse backyard into a hydrangea haven over the course of nine years. “They also dry beautifully, so you can have dried arrangements during the winter months as well,” she adds. Home Beautiful readers might recall the original feature of this splendid house in our September 2016 issue, when the hands-on couple had completed their second upgrade of the property, or perhaps spotted their five-acre outdoor oasis in our recent May 2022 issue. It’s safe to say this isn’t their first Home Beautiful rodeo, but this time, we’re discovering the results of the third, and final, renovation of the magnificent cottage they call home. Relocating from Sydney’s Northern Beaches in 2013, the family of five – including children Charlie, Poppy and Amelia, and toy cavoodle Ruby – quickly settled into their new abode in the heart of Bowral. Built in 1990 with soaring ceilings and East Coast American architecture, the house “had all the right bones when we bought it, but just needed tweaking and a little redesign to make it ideal,” Melinda says. “The children were very little when we moved in and are now almost all teenagers, so our needs have changed, and the house has grown and evolved with us.” As part of this evolution, the last leg of the journey involved the addition of five new rooms, a substantial carport build, and redecoration of the sunroom, living room, master bedroom and ensuite. Each space reflects Melinda’s love for “classic, timeless American-inspired interiors”, a style that influences her own interior design consultancy, Melinda Hartwright Interiors (MHI). The large house now boasts multiple cosy living areas for the family to share and enjoy. “It has been the most wonderful family home. We have so many treasured memories of our time here,” Melinda shares. “It’s such a treat to look around at your home and garden and think ‘wow, I’m so lucky to live here’, I just love this place.” PRETTY IN PINK Perched on a wicker barstool from Wisteria Design (above left), Melinda enjoys a coffee beside home-grown hydrangeas. to the leafy outlook of ornamental pear trees. Framed by French doors and Barclay Butera ‘Bilateral’ curtains in ‘Oceana’, the serene sunroom is evidence of the interior aficionado’s decades-long devotion to collecting beautiful furniture and homewares. “The room is a mix of precious antiques, vintage finds, new and upcycled pieces, all custom upholstered with beautiful fabrics and finished with bespoke cushions,” says Melinda, who styled mismatching cream and blue sofas with a pair of custom spool armchairs upholstered by MHI in Penny Morrison ‘Nankeeng Blue’ fabric.

LIVING ROOM Converted from a double garage in the third renovation, the spacious living room (above) is a refuge for the whole family. “As the kids got older, we needed a family room we could all fit into and pile on a big sofa together to watch movies,” Melinda says. Layers of pretty textiles (such as the Winton House rug, Freedom navy sofa and Peter Meyer Roman blinds) and a woodburning fireplace beat the winter chill, creating ambience and warmth. A trio of stacked artworks (above right) adds character to the room. DINING AREA Before the pandemic, barely a week went by without a flurry of guests gathering around this three-metre dining table (opposite page). Now, it’s mostly used for family dinners on the weekend. Melinda recently reupholstered the dining chairs in Schumacher ‘Brickell Blue’ fabric and created custom shades for the Arteriors pendant. >

For a personal touch, the framed watercolours were painted by Melinda’s father. NAME GOES HERE
F
or homeowner Amanda, days at her cottage, The Stone House, begin and end in much the same way: with a cup of tea in hand and a stroll through the paddocks, her three malamute x dogue de Bordeaux dogs gambolling beside her. Located in the NSW Southern Tablelands, the 12-hectare property she owns with husband Brad is extremely remote and entirely off-grid. “I like to say we’re in the middle of nowhere in the middle of everywhere,” she says happily. The pair purchased the property and its charming cottage in 2017. Built in 1851 by Irish potato farmer Michael Dowling, The Stone House had been sympathetically restored by the previous owners to serve as a comfortable weekender. “It just had soul and I felt that indefinable feeling you get when a place is right for you,” Amanda tells. “Much to Brad’s horror, I fall in love with potential, and it had potential in spades!” Along with the cottage, there was also an old slab timber hut on the property that could serve as extra accommodation, along with rich red soils, water and enough outdoor space for the couple to indulge their love of gardening (see the couple’s beautiful garden on p108). “It brought all of my passions together – interiors, gardens, sustainability, regeneration,” says Amanda. “Here, we can create something that will be a gift for whoever comes after us.” While the previous owners had resurrected the cottage from a state of ruins into the cosy and comfortable three-bedroom home before them, Amanda and Brad took it a step further to render it suitable for full-time living. First off, they enclosed the back verandah and outdoor toilet – “a must when it’s minus 10 degrees outside!” says Amanda – before repainting the mission brown and red-brick kitchen and dining areas white. Subsequent improvements included the removal of a wall between the dining room and third bedroom to create a second living space, rejigging the kitchen to make it more functional and spacious and updating the shower recess, tiles, shutters and paintwork in the bathroom. Given their remote location, additional water tanks and a bigger solar system were also essential. “It feels like any other home, we just don’t get as many bills,” says Amanda of the off-grid set-up. Having breathed new life into the cottage and upgraded its comforts, Amanda and Brad are now happy to share it with others. They’ve relocated to the property’s renovated barn so they can rent the cottage to guests on Airbnb. Amanda promises a restorative and relaxing stay. “It’s a cosy cottage and we’ve embraced that,” she says. “The thick stone walls insulate against noise and it feels very calming. And the smell, warmth and look of the woodfires in winter is also very comforting. Our kids sleep a lot when they visit.” >
KITCHEN ‘We’ve tried to stay sympathetic to the history of the cottage while making it more comfortable and liveable,” says Amanda. The Aga surround and cabinets were repainted Mezzie + Frank Coalmine and an undermount Chambord sink was set into the new Quantum Quartz ‘Luna White’ benchtop with appliances underneath. An artwork from Dirty Janes (artist unknown) seemed made for this space.

ENCLOSED VERANDAH One of the couple’s first priorities was to close off the verandah (above left) and outside toilet. Large second-hand windows from Gumtree help flood the area with light, while the original flagstone flooring is a comforting nod to the building’s history. An Ikea chair with a custom cover from Bemz provides the perfect spot for enjoying the winter sun with a book or cup of tea. DINING “The original leadlight windows were covered with curtains and the architraves painted green,” Amanda recalls of the windows (above right), which now enjoy star-of-the-show status. A soup pot and ladle from Haven & Space and jugs from Ikea and Robert Gordon sit atop cube bookshelves, also from Ikea. KITCHEN The kitchen (right) is well equipped with Ikea canisters, Freedom placemats and various dinnerware essentials. A framed piece of wrought iron on the wall adds rustic flair. LIVING (opposite) The interiors favour a cosy, country vibe with much of the furniture and decor from the couple’s previous home. A large original fireplace dominates the space. The couple installed a Masport ‘Westcott’ cast-iron wood heater. The original mantle above has been repainted Mezzie + Frank Docklands and holds vases of blooms from the garden, while a Haven & Space basket is topped up frequently with firewood. >

OUTDOORS You’ll find Amanda and Brad out amongst their expansive garden most
days. “I’m trying to capture that essence of a rambling country garden, but I think it will only come with age,” she says. In this lovely patch, a tall flowering weigela shrub grows alongside smaller shrubs of columbine and foxglove. Vases overflowing with flowers from the garden add colour and freshness to the cottage’s inviting interiors.

Neil’s new-build home, is an ode to farm life and the stunning West Gippsland outlook. A bespoke barn door painted in Dulux Red Back forms the front entry (opposite), with reclaimed brick paving leading into the home. “When you pull back the red barn door and step in, the amazing view of the hills envelops you,” says Kristy, pictured. >

he simple beauty of a weather-beaten farm shed set in rolling swathes of pasture land dotted with gum thickets and rocky outcrops captured Kristy and Neil’s hearts and minds in 2015. Energised by time spent at cattle stations while travelling the dusty road from Darwin to Broome, the Melbourne citydwellers began to think about what life would look like once their son and daughter, now 16 and 19, flew the coop. Kristy was working in marketing and PR, and her husband Neil in corporate strategy, but their vision for the future involved building an eco-friendly agri-business and a new home in the country. “We had zero farming background, and we didn’t know anyone in

the industry,” Kristy laughs. “Our friends thought we were mad when we bought the land, especially because it was 150 acres [60 hectares] and not just a four-acre hobby farm.” Their property, Green Hills Farm, is located in West Gippsland, a 90-minute drive from Melbourne. “It was the first property we really looked at, and we instantly fell in love. We got an immediate feeling of home and place,” Kristy shares. The small, asbestos-ridden farmhouse was still standing, but the couple were awestruck by the western views of the Strzelecki Ranges gained from a tumbledown shed. “Walking around the old stables, the view of the hills came into life. We immediately knew this is where the house needed to go,” says Kristy. “We wanted to create a new version of it, a modern barn, not just something off the plan.” The resulting home is >

a comfortable, contemporary farmhouse designed by Angus McKay and Len Chapman of Slap Architects and built by JW & WM Woodbridge. Celebrating the organic textures, simple forms and hardworking spirit of Australian rural outbuildings, the iron-roofed, timber-clad abode is in harmony with the pastoral landscape. The merging of the natural and built environment continues inside, where daylight and tactile finishes flow. “We worked extensively with Kristy to develop the interiors based on the inspiration of the existing dairy farm materials, such as the weathered timber used in the interior wall linings and the brick flooring,” says Angus. The low-maintenance retreat is minimally decorated with functionality at the fore. “There is a sense of simplicity when living in the country; it’s not about going out and buying lots of little things to fill up a room,” says Kristy. “We are living on a working farm. Surfaces and flooring need to handle things like muddy boots, hence the concrete floors and the recycled brick paving in the

entrance and mudroom.” Glazing features heavily on the western facade, capturing every inch of outlook and the spectacular sunsets. “It’s endless hours of golden glow here,” Kristy smiles. The house at Green Hills Farm is thoughtfully designed for years of happiness and restorative gazing out to the far reaches of the surrounds. And how has the couple faired as farmers? With the help of a handful of dedicated people, they now raise grass-fed cattle and produce organic garlic, and their kitchen garden and orchards supply local restaurants. They run boutique accommodation on the lot next door and host events to celebrate local producers. Kristy estimates she and Neil are about two years away from making Green Hills Farm their full-time residence and occupation, and they couldn’t be more excited. “Every time we walk in, we think how lucky we are to have found this place and built this home,” she shares. “It’s so calming and joyous and allows space for creativity with gardening and cooking. My cup is really filled by being here. >

CUTE COUNTRY Seeing the potential of a rundown home in NSW’s Southern Highlands, interior designer and photographer Nicki Dobrzynski and her husband Chris decided to renovate and sell it. The result is this cottage with its homely entrance (left). “I wanted an entrance that set the tone for what’s inside,” says Nicki of the space, brought to life with William Morris ‘Bird & Pomegranate’ wallpaper. “The greens and reds inspired the cottage’s colour palette.” >

isitors to this cottage in NSW’s Southern Highlands might wonder if they’d woken up in a quaint English village surrounded by pastures and pear trees. Its interiors are enchanting, with sink-into sofas, vintage treasures, hand-painted joinery and William Morris wallpaper. For serial renovators, interior designer Nicki and husband Chris and their children Eva, 9, and Jake, 5, this bijou, two-bedroom abode was meant to be a “renovate and sell” project, undertaken while they lived in a nearby rental and decided if they would make a dream move to New Zealand. “We bought the house in May 2019 and while we thought about moving at the end of the year, Chris got busy with the RFS [Rural Fire Service] and the bushfires,” says Nicki. “In January he was offered a job in NZ, so we aimed to leave at Easter time.” Then their plans met Covid. “Like everyone, we didn’t know what would happen … if work would dry up. We felt cautious and so moved into the cottage ourselves to finish the renovation, after all, we thought, it wouldn’t be for long.” The cottage underwent a mid-’90s reno “that didn’t fit the original cottage or its vintage,” says Nicki. “It was stripped of character, but there was plenty of natural light and decent enough bones to work with and since it was old, I felt I could push the English cottage look.” The restoration began with V-Groove panelling in the kitchen and bathroom and wainscoting in the entrance, while ho-hum architraves and trims were replaced with grander versions by Intrim Mouldings. The colour scheme evolved from the home’s natural environment and a roll of William Morris wallpaper found on Gumtree, its red and green hues carried through to the decor and the cabinetry in the kitchen and bathroom. Nicki had the red bathroom vanity matched to her favourite gumboots: “Finding something you love and matching it takes the anxiety out of finding the right shade,” she says sharing this top tip. The living room is the most comforting dusky pink, a perfect backdrop for a layering of vintage finds, pleated lampshades and charming upholstered pieces swathed in country-style prints. “During winter with the fire and candles lit, we’d sit with a glass of red. It was blissful.” The antiques and vintage treasures Nicki has collected over time bring a unique personality to the interiors. “I love inspiring people to look for something different,” remarks Nicki, “but the sustainability aspect is also important. Vintage or ‘less perfect’ things are great when you have young children, too. It’s more forgiving.” Having moved into the cottage, the couple did a more detailed renovation than planned, including building a small ‘barn’ in the garden. “We also painted the exterior and did a lot of landscaping,” Nicki explains. During a window of opportunity in 2021, the family finally did move to New Zealand. “While home schooling and working, and renovating in this tiny space got pretty crazy,” says Nicki, “I wouldn’t change a thing… well, except for having to wash the dishes in the shower.”

A medley of materials and textures – Carrara marble benchtop (RMS Marble), V-Groove panels, a gingham Roman blind – and pieces found at auctions, Vintage Art Emporium and Dirty Janes add to the charm. Tablecloths from Pigott’s Store and Décor Mantra make a colourful stack and a vintage lamp is refreshed with a Matilda Goad shade, bought online. KITCHEN Courtney loves spending time with her daughters Sierra and Baylee (pictured opposite) in the sun-soaked kitchen. W
ith its perfectly suited climate and laidback lifestyle, it’s little wonder the Hamptons style is flourishing in the Sunshine State. Blending seamlessly with traditional Queenslander architecture – both tend to feature gable rooflines, weatherboard cladding and deep verandahs with coastal-inspired interiors – the result is often a home reminiscent of long, lazy days spent at the beach. This is precisely what Courtney and Jayce envisioned when they embarked on a new build on Brisbane’s northside for their young family, which includes two girls, Sierra, eight, and Baylee, four. “I grew up in an old Queenslander on the Sunshine Coast and was nervous about the girls growing up in the city,” says Courtney, “so we decided to create a home with a relaxed holiday vibe and were lucky enough to find a property directly opposite expansive parklands and a brook!” After meeting with multiple builders, the couple settled on Lee Ambrose from Ambrose Design + Construct. “I wanted to be very involved in the design decisions, so needed someone who would respect my views. We’d worked with a builder previously who barely spoke to me and always deferred to Jayce. In this case, Jayce didn’t want to be involved in any of the design decisions, I was taking the lead, so finding a builder who respected that was imperative.” Fortuitously, the family rented the house next door throughout the 11-month build, “which meant trades could just pop over if there were any last-minute decisions.” While the overall vision was for a white coastal-style home, the couple included plenty

of personalised touches. “This is our forever home. We didn’t build to sell, we built to stay – so we could do a pink bathroom knowing it wouldn’t appeal to everyone, but it didn’t matter, it was just for us.” Courtney’s advice to those wanting to take the design lead on their own projects, is to allow time for planning. “I spent a year considering the layout and hours and hours researching products and finishes. It’s hard because you just want to get in, but it’s worth getting it right.” Courtney also credits the Three Birds Renovations’ Reno School. “It’s empowering to realise, as women, we do know
what we want – and with some knowledge can convey that on-site.” With good communication and planning, the build ran smoothly and was completed just after the pandemic hit. “Our main vision was for a house that encapsulated indoor-outdoor living – and we were doubly grateful for that during the lockdowns.” Today, the home’s connection to its alfresco spaces is still one of Courtney’s favourite aspects. “It means the girls can swim as I cook dinner or run around outside as I’m cleaning. It encourages them to spend more time outdoors and less time in front of screens.”

LIVING/DINING The light-filled living room is simply furnished with a ‘Westport’ slipcover sofa from Freedom and ‘Traditional’ occasional chairs
from Malawi Cane. An art print from Oz Design Furniture and cushions covered in Casamance ‘Giardini’ and ‘Larimar’ from Tahn Interiors add a pop of colour. In a nod to traditional Queenslander homes, a feature wall in the full height entry void is finished in Easycraft ‘Easypanel VJ’ panels. “I’ve always had my heart set on a banquette,” says Courtney of the dining nook. THIS MONTH, HAMPTONS DESIGN EXPERT NATALEE BOWEN TAKES US ON A REFRESHING TROPICAL ESCAPE f you want to feel like you are living a holiday all year round, then the Tropical twist on a Classic Hamptons home is for you. With the sound of swaying palm fronds on a balmy summer day, The Bahamas are front of mind. The Tropical Hamptons look is where the beach meets the tropics. A stunning mix of furniture featuring tobacco rattan, pops of black and kentia palms will create a casual sense of holiday bliss. The look is heavier and much more layered than the Classic style, but in a relaxed way. It is fun and full of character; this is where you can embrace your animal prints such as zebra and leopard, mixed with geometrics rather than floral fabrics. This look is calming – almost meditative – in its feel. With open-plan living and free-flowing breezes, this style can be created in almost all environments and it looks best when the flow of your home brings the outdoors in.
THE FEATURES From the external facade, you will note calming white weatherboards (try James Hardie Linea Weatherboard) hugging the home with beautiful plantation shutters balancing the windows. These are more ornamental than practical and can be either painted in white, a dark timber stain or, if you are willing to take the leap, they look incredible in a shade of blue. A tropical home’s standout exterior features are cross-style balustrades and a garden filled with palm trees and with fragrant frangipanis. Internal details can be mixed and eclectic but, noticeably, the classic coffered ceilings are now laced with VJ panels, such as Hardie Groove Lining inside the square, and with a smaller beading detail. Wall layers are created with a laid-back look of vertical linear boards and simplified mouldings. Plantation shutters adorn all the windows, layered with light cotton sheers, allowing for a beautiful afternoon glow. Woven raffia blade ceiling fans add subtle texture to an essential item in a home. It is a real mix of the Coastal meets Tropical. 106

Bathrooms in these homes incorporate natural texture through timber vanities with brass hardware and a more monochrome palette replacing marble accents. Rattan pendants, or brass with glass, hanging above the island bench in a kitchen and dining room area will make your entertaining space feel ambient and inviting. Kitchens are pared back with a relaxed feel in either white or a soft blue hue. Here, you can add in some mesh or cane inserts as a cabinetry door feature to create that tropical look. Be bold with your splashback tile, either in a luxurious marble fan shape or incorporate a pop of colour.
THE FURNITURE Lighter timber floorboards are prominent in Tropical Hamptons homes with layers of jute rugs and sofas with square arms instead of a classic roll arm, dressed in loads of neutral linens. You will notice cane and rattan elements throughout; these pieces will ground the rooms and keep a common thread of a Bahamas holiday. For inspiration, look at the homes of designer Ralph Lauren, for their dark and moody themes. The master bedroom of a Tropical Hamptons home is the perfect space to incorporate a timber four-poster bed, draped in light breezy fabric, not to warn off mosquitoes, but to create a luxury escape. Blue and white ginger jars still have a place in the Tropical style however they should be filled to the brim with fresh fronds from a kentia palm. Art in these homes would showcase palm trees, or wild animals such as turtles or zebras. A full wall mural depicting a luscious foliage landscape would be divine in a formal dining or lounge space for a traditional plantation look. You start with layers of linen then add in your greens, duck egg and hints of caramel. Oaks are still a staple but black furniture pops in this space. The Tropical Hamptons style is bound to inspire your creativity and enhance the ‘holiday at home’ feeling at your place.

Hawthorn tree planted by the property’s original owner, with a ‘Renae’ climbing rose supported by obelisks on either side. A low hedge of Japanese box keeps purple-foliaged Berberis shrubs in check. “There’s lots of diversity, colour and texture in this part of the garden to attract birds and pollinators,” says owner Amanda (opposite, with husband Brad). Their stone cottage was built in the 1850s (find out more on page 56). The timber paling fence was added to keep the wildlife out – and their three malamute x dogue de Bordeaux dogs in. “It’s been really nice for Brad and I to have this common interest of developing our garden, and to see our different ideas come together,” says Amanda. >

You’d never guess the trials and tribulations that have plagued this idyllic patch of paradise outside of Nerriga in the NSW Southern Tablelands. In the five years that husband-and-wife duo Brad and Amanda have been here, the garden has faced countless frosts, hungry wildlife and several natural disasters. “In 2019, the drought was in full swing and we were watering every second day,” recalls Amanda. “In September we had snow… and then in December the fires came through.” The couple stayed to defend their 1850s stone cottage, which sits on nearly 13 hectares, but the damage was still significant. “We lost roughly 80 per cent of the gums on the property, along with so much habitat and wildlife,” says Amanda. Rains followed (and never really stopped) in 2020, and they’ve been flooded several times since. It’s a testament to Amanda and Brad’s passion, hard work and tenacity that the garden exists at all, and is in fact flourishing. “It’s a lot of work, but satisfying,” says Amanda. “I was brought up with an appreciation of art and I think the garden is a creative outlet for me.” The pair purchased the property in 2017, when their children Matt and Emily moved out of the family home at Shoalhaven on the South Coast. “The climate was a big adjustment,” says Amanda. “We’re in a valley, a real frost pocket. We did a lot of research into what would grow here – and even then, plants labelled as cold and hardy shrivelled up and died!” With some lovely mature trees already in situ, they planted a vegie patch and a mixed orchard of apples, pears, pistachio, stonefruit, pomegranate, mulberries, figs, quince and more – about 45 trees all up. An old timber barn was transformed into a covered gazebo area complete with outdoor setting, rustic candelabra and hammock, and a garden of shade-tolerant species built around it. To the east of the orchard, Amanda and Brad have created a magical woodland area, more than a hectare of which is planted with Quercus palustris (pin oaks), Ulmus parvifolia (Chinese elms), poplars, deodar cedars and silver birch – to name a few! “The woodland will keep developing, but it’s for the future,” says Amanda. For now, she and Brad get endless enjoyment from their garden at the front of the cottage. Recycled brick pathways lead to an arbour surrounded by Pyrus nivalis (snow pears) at one end and a 1970s-style copper fireplace at the other. Two central parterres of Buxus sempervirens (English box) hedge, and further hedging around the edges, set the perimeter, while the full-sun position allows clematis, dahlias, lilies, Camellia japonica, gaura (butterfly bush), iris, foxgloves and echinops to not only survive, but thrive. “I don’t want the gardens to feel stiff and formal – they’re designed to be lived in,” says Amanda. “In fine weather, we usually set up tables under the trees for a long lunch. The outdoor fireplace is cosy in winter, and a nice spot to enjoy a few drinks and a cheese platter.” On hot days, you’ll find her in the hammock, reading a gardening book, making plans and taking in the sights and sounds of her patch of paradise. “We often close our eyes and listen for as many sounds as we can make out,” says Amanda. “It’s very meditative.” VERDANT VIEW Amanda and Brad can enjoy an outlook of deep, curved garden beds

location. “I preserve these in oil and they’re delicious with a soft goat’s cheese!” says Amanda. Gardening in a cold climate in general was a challenge for Amanda and Brad, but they embraced it wholeheartedly. “I joined the local Braidwood and Nerriga garden clubs when we moved here, as it’s the best way to see local gardens and find out what grows well in an area,” explains Amanda. “It’s also a perfect way to meet people who share your passion.”

This parents’ retreat in Perth’s coastal suburbs (below) is just that – a sanctuary. It even has its own sitting area, with ‘Maxime’ armchairs from Coco Republic, ottomans and plenty of natural light thanks to crisp white walls and glazing – Luxaflex louvres protect against glare and shut in the warmth at night. A fireplace, table and floor lamps, and lush carpet further boost the cosiness factor. “Lighting makes such a difference in a bedroom,” says interior designer Kate Walker of KWD & Co. “Mood lighting that creates a soothing atmosphere is a must, as is task lighting for reading. Use lamps, pendants, wall sconces and downlights to achieve the desired effect.” Top tip: don’t overdo the downlights!
The striking outlook enjoyed by this home at Victoria’s Point Leo (opposite) warranted a guest bedroom to match – and KWD & Co delivered the goods. The spectacular bedhead, made by Sorrento Furniture and upholstered in Kravet ‘Moro’ linen in Blue (try Elliott Clarke), shares the stage with the view, which is framed by full-length curtains that provide insulation (try Wynstan). “The bedhead was designed for a 1980s-resort feel,” says Kate. It’s balanced by a custom ottoman in Kravet ‘Izora’ linen. “An ottoman provides a comfy seat where you can put on your shoes or lay out your clothes,” says Kate. ith a little bit of drama and a whole lot of luxe, there’s something altogether mesmerising about this apartment overlooking Sydney’s glittering harbour. Set against the timeless elegance of a monochromatic palette, the abode’s exquisite detailing and opulent materials have brought it back to show-stopping life. While the two-bedroom, circa 1960s apartment always boasted a sublime view of the city’s iconic Harbour Bridge, it was calling for a full-scale overhaul when interior designer and property renovator Juanita Baldwin of The Good Space purchased it in late 2020. “It definitely ticked all the boxes. It’s a really solid brick building and the view is just fantastic,” she says. “I walked in and immediately had a sense of what I wanted to do.” Presented in liveable but original condition, the apartment also appeared to pay homage to just one hue. Over a four-month period, with Harbourside Joinery undertaking the works, Juanita’s vision came to fruition. “I brought the apartment back to its bare bones and addressed every aspect – from the floors to the ceiling, the walls to windows and the furnishings,” she says. “Nothing remained except the view.” For Juanita, being both designer and client proved anything but a trial. “Actually, it was just fabulous because I made all of the decisions!” she exclaims, adding, “And I’m thrilled with how it’s turned out.”
LIGHT UP YOUR WORLD The key to a spectacular space can be to include a focal piece. In the chill-out zone, an antique pendant (right) from Lawsons Auctioneers was the decorating starting point. Juanita’s designer nous is also on display in her eclectic yet cohesive mix of furnishings, including the Malawi armchairs from Orient House, Ikea jute rug layered with a cowhide rug, and an upcycled cabinet repainted in Porter’s Paints chalk emulsion in Snow White. “I loved putting this living room together with lots of layers and details,” she says. >

THE POWER OF CONTRAST Opting for a deliciously moody palette in the cooking zone was an easy decision to make for Juanita. “People do think that if you go for all white, it will make an area feel bigger, but I don’t think that’s necessarily so,” says the designer. “Sometimes a bit of drama can be even better in a smaller space. And I always love to layer colour and texture.” Tactile Navurban ‘Ashgrove’ by New Age Veneers was a smart pick for the kitchen joinery, contrasting against the crispness of the panelled door fronts in two-pack polyurethane Dulux Antique White.
MAKE A WALL WONDERFUL Juanita has promoted this charming built-in seating nook (left) in the dining zone to the style forefront with a ‘Eucalyptus Trees’ wallpaper mural from Olive et Oriel. “I put the peel-andstick wallpaper on myself as it’s super-easy to use,” she says. “The wallpaper creates depth and interest. I wanted to make this nook a spot where you are drawn to sit.” Adding to the ambience are the gleaming ‘Antica’ wall lights from Home Design. The replica Bentwood Hoffmann chairs were a Temple & Webster buy. A touch of greenery enlivens the space. Juanita also opted for built-in storage in the seating nook.

It’s easy being green – even in a second-floor apartment. Introduce indoor plants and botanical-inspired decor in the form of artwork and soft furnishings as a way of bringing verdant colour and life to a home. “Having some element of greenery softens a room,” says Juanita. “It’s crucial to the interiors.” In the living area, an eye-catching framed pair of posters – Weekend Getaway and Get Away – from Postery.com create interest, while clever choices such as the wallpaper in the dining zone bring a little slice of country to the city.
In a compact apartment, a view and access to the outdoors makes the space feel open, light and airy. “The doors completely open up to the outside, so the balcony almost becomes part of the living space,” says Juanita. a professional on which timber is best for the space you’re designing. “There will always be a place for white timber shutters as they’re great for letting in light and still creating privacy,” says Amy. “A white timber shutter in a very small blade is classic, although these are proving harder to source as it seems the old way of making shutters has been lost,” says Amy. “For larger windows, around a 60mm blade also looks great. I also like installing my shutters into the window frame to still highlight the architrave. PVC shutters are also a great option for wet areas where moisture is an issue.” >

Design refers to the style, such as s-wave, reverse-box or doublepinch pleat. “S-wave provides a softened look around windows, while reverse box and double-pinch are polished, more structured styles” says Amelia. Opacity refers to the fabric, such as sheers or blackout, and is dependent on light-control needs, while track is how your curtain is installed. “This ranges from a standard, thin style to a designer track, which can make a statement above your curtains with its double thickness,” says Amelia. “Control is the option to have handdrawn, wand or a motorised control system.”
House Interiors, says you can choose between trendy or classic aesthetics. “There’s a return to curtains with fullness, sweeping the ground, giving spaces a warm, intimate feeling,” says Amy. “But, a beautiful 100 per cent wide-width linen curtain (to avoid any joins) on either a lovely thick timber rod or classic metal rod on rings is a timeless style,” says Amy. “Curtains add an air of luxury and elegance to a room. Their height and flowing design elevates a space in a way blinds are yet to achieve. While shutters elevate a space with bold lines and a regal feel, curtains achieve this with a softer, more textured approach,” adds Amelia.

FIT FOR PURPOSE How to pick the right curtains, fabrics and blinds for the job. Making a statement: “The best statement I’ve witnessed was a six-metre curtain in a double-storey home. The curtain lined the windows across the back wall of the whole home, wall to wall, filtering light and introducing softness,” says Amelia.

to make when replacing your window furnishings is whether you want curtains, blinds or shutters – and there is no one-sizefits-all answer to that. “I don’t think there’s any secret formula to choosing the right type of window furnishing,” says Amy. “Much of the choice does come down to budget, but I do recommend curtains in bedrooms to all my clients as I love the way they make a space feel cosy and intimate.” Based on the average window – measuring around 1000mm x 1200mm – the cost of curtains can start from $645 for an s-wave sheer, or from $820 for a specialised fabric. Roller blinds start from just $215, Roman blinds from $500 and shutters made-tomeasure start from between $530-$890.
which is why the professionals always recommend custom window treatments. “Don’t get trapped by the idea of DIY. Window treatments are always best done by a professional. They need to fit perfectly and hang level. Curtains and shutters are a high investment item which is why it’s best to leave it to the professionals to measure your space and explain the options to tailor the operation method and materials to your needs,” says Amelia. “While blinds are a more cost-effective option – and there are many ready-made options on the market – if you measure the blind incorrectly or happen to hang it wrong, your blind will fray and hang out of alignment, and you’ll soon need to replace it.

ROASTED SCALLOPS WITH POUNDED RED CHILLI DRESSING Serves 4 (See right) 8 medium live scallops Red chilli dressing 1 long red chilli, seeded and chopped 2 red bird’s eye chillies, chopped 1 tbsp chopped coriander root or coriander stem
1 tbsp chopped garlic ½ tsp salt 5 tbsp lime juice 3 tbsp fish sauce 2 tbsp palm or brown sugar
1. To make the red chilli dressing, pound the chillies, coriander root, garlic and salt together in a mortar and pestle to form a smooth paste. Add the lime juice, fish sauce and sugar and mix everything together until the sugar has dissolved. Set aside for 15 minutes, allowing the flavours to mellow and marry together. It will taste spicy, sour and salty, with a background sweetness. 2. Clean the scallops. The best way to do this is to slide a table knife against the inside of the top (flat lid) shell, separating the scallop meat from the top shell. This will allow you to fully open the shell. Scoop the scallop out from the bottom (round bowl) shell using a tablespoon to separate the scallop meat from the bowl shell. Wash the scallop in a bowl of cold water, removing and discarding the black digestive tract. Set the white scallop meat and orange coral (roe) meat aside. 3. Clean the round bowl shell for presentation and repeat the process until all the scallops are cleaned. 4. Preheat the grill to a high heat. Cut the white scallop meat in half, leaving the orange coral whole. Return the scallops to their round bowl shells and arrange on a grill tray. Spoon 1 tablespoon of red chilli dressing over each scallop, then grill for 1–2 minutes until just cooked through. 5. Remove the scallop shells from the grill and spoon another 1 tablespoon of the red chilli dressing over each scallop. Serve immediately. Be careful of the hot shells! > 152

“THIS SIMPLE RECIPE packs a punch WITH THE BOLD FLAVOURS OF RED CHILLI, FISH SAUCE AND LIME JUICE” JOHN CHANTARASAK
PAD THAI Serves 1 (See below) 100g dried rice noodles (rice sticks) 2 tbsp palm or brown sugar 2 tbsp tamarind water 1 tsp white wine vinegar 2 tbsp fish sauce 3 tbsp chopped round shallot 1½ tbsp chopped garlic 1 tsp salt 2–3 tbsp rendered pork or vegetable oil 1 large egg 2 tbsp firm tofu, cut into 1cm dice 2 tbsp dried shrimp, soaked for 5 minutes until tender, then drained well
1 tbsp shredded salted radish (otherwise called preserved turnip; look for a Thai brand) 1 tbsp roasted peanuts, coarsely crushed in a mortar and pestle, save extra to serve 4 tbsp (50g) bean sprouts, plus extra for sprinkling 2 tbsp spring onions, cut into 3cm lengths Lime wedges, to serve Toasted chilli powder, to serve
1. Soak the noodles in a large bowl of cold water for 20 minutes until they become soft and pliable, then rinse them of any starch under cold running water and drain well. 2. In a bowl, stir together the sugar, tamarind water, vinegar and fish sauce until the sugar has completely dissolved. This is your pad Thai seasoning sauce. Set aside. 3. In a mortar and pestle, pound the shallot, garlic and salt together to a coarse paste. Heat the pork fat or vegetable oil in a large wok over a medium heat, then add the paste and fry for 1 minute until fragrant and beginning to brown. 4. Crack the egg into the hot fat and stir so that the yolk breaks. Cook for 20–30 seconds until the egg resembles a soft omelette. 5. Add the drained noodles and stir to break up the egg, distributing it among the noodles. Add the seasoning sauce, along with the diced tofu, dried shrimp, shredded salted radish and crushed peanuts. Stir and toss all the ingredients well, then leave to simmer for 1 minute until almost all the sauce is absorbed and the noodles are tender. 6. Add the bean sprouts and spring onions, then toss and stir one final time so that all the ingredients are well combined and distributed. Transfer to a serving plate and sprinkle with some more bean sprouts. Serve with lime wedges, roasted crushed peanuts and toasted chilli powder.

PEANUT-ENRICHED CURRY OF BEEF CHEEK & THAI BASIL Serves 4 (See right) Panang curry paste 8 dried long red chillies, seeded and soaked in cold water for 15 minutes until soft 1 tsp salt 2 tbsp thinly sliced lemongrass, root and outer husks removed and set aside 1½ tbsp chopped galangal 1 tsp makrut lime zest 1 tbsp chopped coriander root or coriander stem 4 tbsp chopped banana shallot 2 tbsp chopped garlic 1 tsp shrimp paste, dry-roasted in banana leaf or foil (see note) 1½ tbsp coriander seeds, toasted and ground to a fine powder 1½ tbsp cumin seeds, toasted and ground to a fine powder 1 tsp nutmeg, toasted and ground to a fine powder NOTE: Dry-roast in a pan over a low heat for 2 minutes, or until fragrant, flipping once.
6 tbsp raw skinless peanuts 800ml coconut milk 400g beef cheek, sinew and silver skin removed, cut into 6cm chunks Offcuts of lemongrass from curry paste, roughly chopped 3 tbsp coriander root or coriander stem 6 makrut lime leaves (fresh or frozen), 4 left whole and 2 torn 2.5cm piece of cassia bark, toasted ½ tbsp salt 300ml coconut cream (the richer, heavier solids that rise to the top of the thinner milk), plus extra to finish 2 tbsp coconut oil 1½ tbsp palm sugar 2 tbsp fish sauce 2 long red or green chillies, sliced lengths 6 tbsp Thai basil leaves 2 tbsp roasted peanuts, lightly crushed
1. To make the curry paste, pound all the ingredients together with a stone mortar and pestle until very smooth. 2. Put the peanuts and coconut milk into a large saucepan and bring to the boil. Boil for about 30 minutes, or until the nuts are very soft. Drain and leave to cool completely, keeping the coconut milk aside for the main curry. Alternatively, preheat the oven to 170°C and roast the peanuts in the oven for 10 minutes, or until golden brown. Add the cooked peanuts to the curry paste and pound until very smooth and completely incorporated. Set aside. Alternatively, use a good-quality shop-bought panang paste or add roasted peanuts to a good-quality shop-bought red curry paste. 3. Put the beef cheek into a large saucepan with the lemongrass offcuts, coriander root, whole makrut lime leaves, cassia bark, reserved coconut milk and salt. Bring to a quick boil, then reduce to a simmer. Cover the pan and cook for 2 hours, or until the beef cheeks are tender but retain their shape. Strain the beef cheeks, retaining the meat and braising liquor, but discarding the aromatic ingredients. 4. Combine the thick coconut cream with the coconut oil in a heavy-based saucepan and warm over a medium heat for about 3 minutes, or until the cream separates, the thinner liquid evaporates, and the surface develops an oily sheen. Add

Fry for another 8 minutes, or until the mixture darkens and becomes fragrant. Season with the sugar and fish sauce, allowing these to cook into the paste before adding the reserved braising liquor and the torn makrut lime leaves. The braising liquor makes the curry very beefy in flavour, so, if you prefer, you can use fresh coconut milk for a lighter final dish, or a combination of the two: use your judgement after tasting the braising liquor. 5. Add the sliced chillies and reserved beef cheek to the curry, warming the meat through for 1–2 minutes and cooking the chillies so they lose their bite. Finish the curry by folding through the Thai basil, then transfer to a serving dish and top with a splash of thick coconut cream before sprinkling over the crushed roasted peanuts. The final curry should be quite thick and oily and should taste rich and salty, sweet and complex. Serve with steamed jasmine rice and garnish with fresh herbs. >

4. Heat the oil in a large wok over a high heat until the oil is shimmering and approaching smoking point. Upturn the bowl of greens into the wok so that the paste, chillies and harder greens make direct contact with the hot surface of the wok. Leave them to char for 1 minute before stirring, flipping and mixing the vegetables so they wilt with the heat of the wok. 5. Add the stock and seasoning sauce and bring the stock to a fast boil, then toss together one final time. Taste the liquid: it should be well-seasoned and umami-rich with a background sweetness. Serve immediately, allowing the liquid to pool in the serving dish.

‘RED FIRE’ GREENS WITH YELLOW SOYBEAN SAUCE Serves 2 (See above) 2 tbsp yellow soybean sauce 1½ tbsp oyster sauce (omit for a vegetarian/vegan version) ½ tbsp fish sauce (or use light soy sauce for a vegetarian/ vegan version) ½ tbsp caster sugar 2 tbsp chopped garlic ½ tsp salt 260g mixed leafy greens, such as spinach, wild garlic leaves, mustard greens, watercress,
turnip tops (cime di rapa), cabbage leaves and Brussels sprout tops 80g green asparagus, sliced at an angle into 1cm pieces 2 red bird’s eye chillies, bruised 2 tbsp vegetable oil 100ml recently boiled chicken stock, or use vegetable stock for a vegetarian/vegan version
1. In a small bowl, combine the yellow soybean sauce, oyster sauce, fish sauce and sugar. This is your seasoning sauce. Set aside. 2. In a mortar and pestle, pound the garlic and salt together to a coarse paste. Set aside. 3. In a large bowl, layer the vegetables from softest to hardest (i.e., start with spinach, wild garlic leaves, mustard greens or watercress, then turnip tops, cabbage leaves or Brussels sprout tops and then asparagus). Top with the garlic paste and bruised bird’s eye chillies.

2 large eggs 220g minced beef 3 tbsp fine green beans, cut into 3cm pieces 3 tbsp beef stock or water 40g holy or Thai basil, leaves picked
1. In a small bowl, combine the oyster sauce, soy sauce, fish sauce and sugar. This will be your seasoning sauce. It should taste savoury and salty, with a background sweetness. Set aside. 2. In a mortar and pestle, pound the chillies, garlic and salt together to a coarse paste. This will be your stir-fry paste. Set aside. 3. Heat the oil in a large wok over the highest possible heat until smoking hot. One at a time, crack the eggs into the hot oil and fry for 45 seconds until crispy on the bottom and edges. Spoon the hot oil over the eggs to cook the yolk, turning it opaque but keeping it runny. Set aside to drain on a plate lined with paper towels and keep warm while you cook the stir-fry. 4. Pour off and discard all but 2 tablespoons of the oil, then heat over a medium heat. Add the stir-fry paste and stir vigorously for about 30 seconds, or until the paste becomes fragrant. Increase the heat to high, then add the beef and stir-fry for 3 minutes, or until the beef is almost cooked through. Add the green beans and seasoning sauce. Continue to move the ingredients around in the wok for a further 1 minute so that the vegetables are tender but retain a bite and the beef is cooked through. 5. Add the stock and bring to the boil over a high heat. Check the seasoning; it should taste spicy and salty, with a slight background sweetness. If it tastes too intense, add a splash more stock. Add the basil leaves and toss everything together so the basil wilts. This is a holy basil stir-fry, after all, so be sure not to scrimp on the basil leaves. Serve immediately with the crispy fried eggs. Serve with steamed jasmine rice and chillies soaked in fish sauce (see page 159). >

Beautiful FOOD FISH CAKES WITH CUCUMBER PICKLE Serves 6 (See opposite) 2 tbsp salt 2 tbsp caster sugar 300g white fish, filleted with pin bones and skin removed 1 tsp palm sugar 2 tbsp fish sauce 1 large egg, beaten 3 tbsp finely sliced fine green beans 1 tbsp finely sliced fingerroot (optional) 8 makrut lime leaves (fresh or frozen), finely shredded 4 tbsp large Thai basil leaves Vegetable oil, for deep-frying Dried vermicelli noodles, cooked according to packet instructions and cooled to room temperature Thai basil or coriander Cucumber pickle 4 tbsp white wine vinegar 2 tbsp water 3 tbsp caster sugar ½ tbsp salt
¼ cucumber, quartered lengthways and sliced ½ small red onion, sliced with the grain of the onion 1 long red chilli, sliced into rounds 1 tbsp thinly shredded ginger root 1 tbsp coriander leaves
covered. Pour the oil for deep-frying into a large wok to a depth of 10cm and heat until the oil reaches 180°C on a cooking thermometer. Alternatively, drop a small cube of bread into the hot oil; if it turns golden brown in about 15 seconds, the oil is ready. Deep-fry the fish cakes, in batches, for 2 minutes until they float to the surface and are golden and slightly puffed. Remove and drain on a plate lined with paper towels, then repeat with the remaining fish cakes. Serve immediately with the rice vermicelli noodles, coiled and scattered with Thai basil or coriander sprigs, and with sweet chilli sauce and the cucumber pickle on the side.
CHILLIES SOAKED IN FISH SAUCE Red curry paste 6 dried long red chillies, seeded and soaked in cold water until soft 4 dried bird’s eye chillies, soaked in cold water until soft 1 tsp salt 2 tbsp thinly sliced lemongrass, root and outer husks removed 1 tbsp chopped galangal 1 tbsp chopped banana shallot 2 tbsp chopped garlic 1 tbsp chopped fingerroot (or use ginger root) 1 tsp makrut lime zest 1 tsp shrimp paste
1. For the pickle, gently warm the vinegar, water, caster sugar and salt together in a small saucepan until the salt and sugar dissolve. Remove from the heat and leave until completely cold. In a small bowl, combine the cucumber, onion, chilli, ginger and coriander, then pour over the cold pickle liquid. Do this no more than 3 minutes before you plan to serve, as the vegetables will lose their crunch and texture as they sit in the pickle liquor. 2. For the curry paste, pound all the ingredients together in a stone mortar and pestle until very smooth. In a small bowl, mix together the salt and sugar. This is your cure mix. Sprinkle it over the fish and leave for 1 hour in the refrigerator to draw the moisture from the fish. Wipe the cure mix from the fish and wash under cold running water, then pat dry with paper towels. 3. Traditionally, Thai fish cakes are made using a mortar and pestle, but for the modern cook, a food processor saves time. Cut the fish into bite-size pieces and add to the food processor, along with 4 tablespoons of the red curry paste, the palm sugar and fish sauce. Blend together well. Transfer to a large bowl and gradually incorporate the beaten egg so the fish mixture turns glossy and firm, yet sticky to the touch. Stir through the green beans, fingerroot and makrut lime leaves. Check the seasoning by frying a little of the mixture to taste: it should be aromatic and salty. 4. Using wet hands, shape the mixture into 4cm rustic discs, then place a Thai basil leaf around each fish cake so they are partially

hen the owner of this third-floor Art Deco apartment in Sydney decided her 1930s kitchen with an ’80s benchtop renovation was ready to replaced, she hired Lauren Mahoney, founder and creative director of design firm Studio Trio, to oversee the project in 2019. Although tired and falling apart, the kitchen was east-facing and enjoyed beautiful natural lighting. “I thought a coloured kitchen would make this space luxurious and inviting,” says Lauren of the redesign, which involved a full demolition of the space. “We had to be mindful of the original Art Deco features and colours, which is why I chose this particular palette. I also carefully took the original Art Deco leadlight panels from the previous kitchen and placed them into a new cupboard as a design feature which can be seen from the main hallway.” The kitchen needed to be highly functional with storage for every appliance and tool, so the custom cabinetry – designed and executed by Studio Trio – was the key to fulfilling this need. And the finishing touch to the update? “The Art Deco leadlight, which was original to the 1930s kitchen, is the hero of the space,” says Lauren. GOOD AS NEW The original kauri (pine) floorboards were sanded back and restored, adding beautiful texture, warmth and tonality to the kitchen. Studio Trio designed and produced the cabinetry, using Tesrol doors in a shaker profile, with polyurethane finish in Spanish Eyes by Dulux and engineered stone benchtops from Caesarstone. The tiles are from Olde English Tiles, tapware from Brodware and lighting from Hudson Valley Lighting. Resene paints were used for the kitchen scheme, Barely There for the walls, Alabaster on the ceiling, and Sonyx Alabaster on the woodwork. The appliances are from Harvey Norman and Winning Appliances, the fridge is integrated into the cabinetry. The pendant light is from Hudson Valley Lighting and the table and chairs are all Thonet.

ocated on Phillip Island in Victoria, this living room overlooking the Western Port bay was created by Melissa Balzan of Melissa Balzan Design for an existing client who wanted this holiday home to be just as beautiful as their primary residence in Melbourne. “They wanted to create the same warmth and comfort for their Phillip Island home, which was to feel more like a second home for them,” says Melissa. “Fortunately, the house was in wonderful condition and recently renovated by the previous owners, so I was asked to make the house feel more like a home for my clients by working with the existing bones.” Tasked with sourcing the furniture and decorative items, repainting the interior and managing the electrical work, Melissa prioritised natural materials and texture within the scheme. To reconnect the space to the beautiful surrounding landscape, Melissa chose a palette of blues with lots of earthy colours and accents of white. “I wanted to create a relaxed and inviting environment,” says Melissa, who has done just that with little more than a few coats of paint (Dulux Natural White), new furniture and careful planning. “The window seat is by far my favourite feature – I’m drawn to it every time I visit.”

hen the owners of this beachside home in Sydney’s south decided to renovate their kitchen, they asked their daughter, interior designer Sarah Yarrow, to guide them through the process, which was completed in just 12 weeks in 2020. “They had inherited an early-2000s kitchen and were keen to modernise it, but in a tailored and classy way reflective of their existing style and furnishings throughout the rest of the home,” says Sarah. “Functionally, the space lacked storage which was a big consideration in the tiny footprint as the kitchen couldn’t be extended.” Naturally, a white-on-white palette that gives the illusion of space was chosen, as were integrated appliances. The farmhouse sink and tapware from The English Tapware Company were chosen as the hero pieces of the space, and the rest of the design was built around these pieces. “Given the very small space, we kept colours and material variation very simple to avoid visual clutter,” says Sarah. “The cabinets and walls are the same shade of white, but we added interest with the shaker-style profile on the cabinetry doors.” Finally, loose sheer Roman blinds were added to provide subtle pattern and colour.
MODERN TIMES The existing hardwood floors were sanded and repolished in a clear matte seal, and the cabinetry was custom-designed for the space by Sarah, then constructed by Yarrow Build. The benchtops are Frosty Carrina from Caesarstone, paired with tapware and sink from The English Tapware Company. The lighting is by Light Co, blinds and curtains are from Northside Window Coverings and the handles are by Hepburn Hardware. In the connecting laundry (see next page), the existing floor tiles were kept and Yarrow Build constructed the new custom cabinetry. Caesarstone benchtops were paired with tiles from Tile Bazaar, with tapware from Winning Appliances. The once-dated kitchen and laundry has become both stylish and efficient. >

omeowners Janyne and Andrew met interior designer Penny Middlemiss, founder of Anju Designs, on a cruise in Fiji almost 20 years ago. Naturally, Penny was their first choice to oversee the renovation of their Sydney home in 2020. “The renovation started a week before the first lockdown, and took four months,” says Penny. “It was a little nerve-wracking as we weren’t sure if the builder would have to down tools, but thankfully he was able to continue the work.” Janyne and Andrew had lived in the home for 11 years but were frustrated with the layout and dated interiors. “There was no butler’s pantry or island bench in the original kitchen, and anyone cooking in the kitchen wasn’t able to talk with those in the dining room,” says Penny. “When visitors dropped in to say hello, there was nowhere to sit in the kitchen, so they would sit in the lounge room which made it tricky for the host to chat with them when making a coffee.” The layout was redesigned, and the kitchen moved to facilitate an open-plan connection between it, the dining zone, living area and alfresco entertaining space. A classic white-andblue palette was chosen for the walls and cabinetry, the latter of which has been fitted with handsome stone benchtops that lend an element of luxury to the entire scheme.
ON THE MOVE The kitchen was repositioned and walls removed to create flow through the kitchen, living and entertaining spaces. The Embelton oak flooring has been paired with Dulux Natural White walls and custom cabinetry in 2-pac polyurethane Dulux Blue Balm and Polytec Prime Oak Woodmatt, built by Scribe Constructions. The benchtops are Silestone Calacatta Gold. All the appliances plus the sink were sourced from Winning Appliances. The Tapware is by Meir and the cabinetry handles are from Lo & Co. The table, rug, chairs and artwork are all from Boyd Blue. Lighting from Surrounding is the finishing touch.

t’s hard to believe this office space is actually a commercial property in Mount Martha, Victoria, that belongs to Danckert Real Estate. Created by Amy Spargo, design director at Maine House Interiors, between July and September in 2019, this office is a tactile, layered and homely space intended to welcome clients and staff alike. “Prior to renovation, this was a concrete shell with no flooring or ceiling, just one large open space,” says Amy. “Maine House Interiors were engaged to design an office space that felt like a home for all clients.” Amy chose a deep blue shade for the walls to create an air of sophistication and intimacy, while panelling, sisal flooring and the wall lighting were strategic choices to reinforce the appearance of a residential concept. “For furniture, we selected classic pieces with high-end finishes that could be configured in different ways for various meetings,” says Amy. “Blue-and-white fabrics on upholstery along with maritime artwork and potted palms completed the timeless design.” DETAIL ORIENTATED Ribbed sisal flooring from Floorspace provides a tactile base, which the Dulux Sapphire Stone and Natural White paint colours complement. The wall panels were designed by Maine House Interiors for the project, the desk is from Xavier Furniture as are all the chairs, which have been reupholstered to suit the theme. The lamps are from Maine House Interiors and the shutters are from Abundant Home. A Beacon Lighting pendant hangs above a Pottery Barn table, and the wall lights and artwork are from Maine House Interiors.

AN ‘INDOOR’ APPROACH TO A DECK MADE THIS A FAMILY GATHERING PLACE

his deck was already a beautiful, spacious area with a leafy outlook when interior designer Tahn Scoon first saw it in 2021, but it was poorly furnished and underused. The clients hired Tahn to transform the space into an outdoor room suitable for entertaining, but comfortable enough to relax in. “As the living room opens out onto the deck, we carried a similar colour palette through with lovely warm tones of olive, mustard and honeyhued stone,” says Tahn. “We decided to place the sofa next to the fireplace, and the dining table further down the deck, as this arrangement allows the family to sink into the most comfortable seating when enjoying the fire.” It was the client’s idea to integrate a fireplace into the deck, and Tahn drew up a plan for it, selected the finishes, then their builder, Keith Hunter, navigated the finer details and constructed it. “The fireplace is the focal point and is flanked by cabinetry that conceals messy things such as the barbecue equipment and dog food,” says Tahn. “The plantation shutters help keep out the strong western sun.” For Tahn, the best part of this project is her clients’ reaction. “They tell me they not only entertain more, but they also don’t go away as much as they prefer to holiday at home!” she says.
ALFRESCO LIVING To create a space the family would enjoy relaxing in, Tahn selected finishes that amped up the comfort levels. The luxe rug, ‘Mauritius’ barrel coffee table and ‘Aruba Platform’ sofa in Sooty are all from Globe West. Cushions bring colour and pattern to the space – ‘Palm Trees Natural’ covers from Escape To Paradise while the striped cushions are custom-made in Zepel Geologic fabric in Eclipse, Tahn Interiors. The Custom-made ironbark side table, painted charcoal, is also from Tahn Interiors. The existing tallowwood decking was retained and the new bricks are Country Ledgestone White Oak from PGH Bricks & Pavers. The bench is Palm Shade by Caesarstone, the fireplace by Jetmaster, and the existing fan was kept. The barbecue is from the Weber Q range.

“W
hen I walked into this space it had been totally gutted, including exposed brick walls and ceiling rafters, and the remnants of where a small bathroom had been,” says interior designer, Noni Edmunds, of this walk-in robe and ensuite in Ivanhoe, Victoria. “My client wanted to create a ‘luxury marble bathroom’ combined with a walk-in robe that was stylish and functional, with an adjoining main bedroom that incorporated a crystal chandelier she purchased overseas,” says Noni. “The desired style was to be elegant with light, neutral tones, natural stone and classic timeless design.” The footprint of this space originally housed two bedrooms and a small bathroom connected by a hallway, all of which were unified to create this main suite. Noni added two new windows and a skylight to the walk-in robe and bathroom, and designed cabinetry with open shelves and lighting to create a display area for special items. The French doors add an element of opulence to the ensuite while providing unobstructed light. “The look is uplifting with a contemporary edge,” says Noni. >

or those born in the dying embers of the last century and beyond, it’s hard to describe how obsessed Australians were with the concept of having ‘a lovely home’ – with its attendant handmaiden, the Villeroy to its Boch, of ‘niceness’. Much of this staid (and stale) atmosphere could be traced to the mores of England to whom we turned for guidance in everything from doilies to duvets. One did things a certain way at home. Such as using the word “one” when we meant “you” or “we” and sticking with dainty, brittle, floral-etched bone china when mugs were easier to pick up. Having lived through the deprivations of a depression and a world war (or two) we clung to these Silvo-polished talismans of the class system silently petrified that a transgression might have friends and family thinking of us in that most horrific of terms: ‘common’. Then, as if by magic, a slew of household items went from de classe to de rigueur. The first item to present to the jury? The mason jar. Named after one John Landis Mason, these vessels with a screw thread on the outer perimeter and wide mouths are ideal for pickling. Long before it became a hobby for bougie linen-wearers it was one of the only ways to make the vegetables you harvested in season last. They were also of a fairly hefty size because if you’re going to go to the trouble of pickling, you’d want to take care of a whack of produce. Mason jars also made excellent brush holders for kids’ painting activities or a rustic vase. So we kept them around. Then, enterprising restaurateurs found they could save a bunch on glassware by simply thoroughly cleaning these transparent wonders, filling them with green juice and charging us $8.99 for the privilege of drinking out of something our nannas wouldn’t be seen dead with their lips to. Environmentally, it was a no-brainer. Aesthetically, it ticked boxes too: grasping the tail end of shabby chic in an era where sitting on milk crates at a cafe oozed boho chic. Even today, if you head to your local Kmart, you’ll see Mason jar sets designed for drinking from.
The next piece to receive what the kids call a ‘glow up’ was the breadboard. Don’t get us wrong: we love timber at HB. Fewer materials are more organic to start with and age so wonderfully. But just as the mason jar found its way from cupboards to cafes, we decided en masse that breadboards made excellent plates. In one sense they do. A length of varnished plank makes any food artfully arranged across its knots and grain look properly inviting. Until, of course, you carry it and discover that – unlike a plate or bowl – it has no lip so your protein balls start absconding and you need the coordination required of those old-school games where you tilted ball bearings into tiny holes. We pause here to tip our bucket hat to the millenials and Gen-Zers. For it is they who have spearheaded a rearguard action against fast fashion and its decor equivalent. Hit up a share house – or a cafe that

We’re talking mismatched china. The fact that it’s a floral Royal Doulton cup on a striped Wedgwood saucer with a souvenir silver-plated teaspoon from the Great Ocean Road adds up a tableau far greater than the sum of its parts. The fact that the trend extends to all manner of flatware and crockery only makes for more quirky tables – equal parts boho and pomo (which if you didn’t grow up with the lingo stands for postmodern). And just when you think it couldn’t get any more charming, we will raise a pinkie to the fact that teapots are just as frequently used for cocktails. Dunno about you, but we are firmly behind the pivot from pekoe to Pimm’s. Cheers to that – and the items that deserve their second coming.
