After graduating from university, my first ‘proper’ job‘ was working in what was then referred to as ‘Corporate Health’. Today, we know it as Workplace Wellness. While the name may have changed, the need for it certainly hasn’t. In fact, the cost of employee disengagement, stress and burnout is well documented. Studies estimate the annual cost of work-related stress in Australia alone to be $3.9 billion. And that’s before you take into account other life-style related - and therefore preventable - illnesses that cause people to take time off work.

So, for many, when they are looking for places to travel, wellness is at the top of their wish list. As the pace of modern life increases, it fuels a desire (and a need) for people to escape all the madness and regain their health! People are using their annual leave to restore, explore and rejuvenate, leading to a steady rise in wellness tourism. A recent study by the Global Wellness Institute valued the wellness tourism industry at a whopping US$563 billion. While we continue to run the treadmill and neglect our health, this travel segment will continue to boom. This continued growth, and my long-held passion to spread wellness like confetti, has been the catalyst to create Wellness Leave. And not just for the stressed-out worker, but also for the exhausted parent, the anxious child or the executive team looking for new and better ways to have team meetings and conferences. Wellness Leave is a broad concept that focusses on the need to offer more options in experiential travel, workplace wellness and conferencing. THE HUSTLE AND BUSTLE OF THE BUSY STREETS (AND RIVER) OF HOI AN IS A S TA R K C O N T R A S T T O T H E T R A N Q U I L I T Y O F THE FOUR SEASONS NAM HAI. Most people travel to Vietnam to learn more about its incredible, wartorn history and fascinating culture, which changes drastically from the north to the south - from traditional Chinese influences in the north, such as water puppets, temples and the street markets of Hanoi, to the swinging Western buzz of Ho Chi Minh (still known locally as Saigon) with its designer stores and glitzy rooftop bars. Yet for mine, it’s in the middle of the country where Vietnam’s true essence 18 | spaandwellnessinternational.com

can be found - the UNESCO-protected villages of Hoi An and Hue - the former imperial capital of Vietnam. They still contain thousand-year-old pagodas, remnants of palaces once home to the ruling emperor, and beautiful citadels that are now preserved. Hoi An and Hue are also a rich melting pot of cultures, paying homage to all the countries who have influenced them, whether invited to or not! While the Chinese and Japanese have a long history with Vietnam, it


is the footprint left by the French that gives rise to the beautiful architecture and wonderful café scene. In Vietnam, fresh French bread and rich aromatic coffee can be enjoyed at sidewalk cafes surrounded by artisan boutiques. If I had to pick a favourite destination in Vietnam (and in the greater vicinity), hands down it is Hoi An. Quaint, colourful and cultural, Hoi An is Vietnam’s most atmospheric and delightful town. Once a major port, it boasts the grand architecture and beguiling riverside setting that befits its heritage. The 21st-century curses of traffic congestion and pollution are mostly absent. The Old Town of Hoi An has preserved its incredible legacy of tottering Japanese merchant houses, Chinese temples and ancient tea warehouses, while lounge bars,

boutique hotels and tailor shops are now very much part of the modern scene. Wander down by the river markets and over on Cam Nam Island you’ll find life has changed little. Travel a few kilometres further and you’ll find superb bicycle and boat trips, lush green rice paddies and some of central Vietnam’s most enticing beaches. Perched right on the long, white sands of China Beach is Four Seasons, Nam Hai - my top pick of places to stay. This super-luxe, all-villa resort is built in traditional Vietnamese style with a modern twist – lots of dark wooden furniture, clean lines and water sculptures. Tall, black candlesticks are everywhere, the candlelight adding a warm, welcoming, golden glow at dusk. As you walk up the stairs into the

open reception area, you look straight across infinity pools (three, in fact!) out to sea. Blue, blue and more blue. Only broken up by green swaying palms and flowering frangipani trees. One very lush, perfectly manicured, garden heaven. The entire resort is huge, yet totally private. The bikes that come with each villa are needed, making it easy for you to get around and make the most of all that’s on offer. Each of the large, airy villas has a lavish bathroom, sunken bathtub and outdoor shower. Then you have all the mod cons like coffee machine, iPod sound system, and indoor and outdoor lounge areas with plump cushioned seating and butler service. You’ll want to take up residence! There is a massive range of activities to choose from including state-of-the-art gym, Antigravity Yoga, cooking classes, morning bike rides through the rice paddies, and tennis and basketball courts. The concierge can help you make the most of the sites and surprises of the area,

from visiting ancient ruins and riding water buffalo bareback to mixing with the locals and finding the best places to have outfits made. It’s an easy (although slightly scary) bike ride into Hoi An, and the Four Seasons Nam Hai also has a regular shuttle bus that takes you into town. There is so much to see and do in this little village. As stunning as it is by day, make sure you also see it by night. As the sun sets, the Ancient Town’s lanterns are lit, veiling the town in a colourful glow. You can purchase a lotus leaf and candle from a vendor on the Cau An Hoi Bridge, then set your candle free as you make a wish – either from the river’s edge or take a ride on a riverboat. This beautiful ritual happens each night, turning the river into a sea of twinkling lights. You are spoilt for choice when it comes to eating. Vietnamese food is so good and so cheap! Mango Mango or Mango Rooms are two places I can recommend. You literally eat food that has been caught or picked that morning and the ambiance

is a colourful fusion of MexicanVietnamese. Who knew? And while I’m a long black, real coffee girl, it’s hard not to get a little addicted to the traditional Vietnamese coffee - a dark roast coffee that is drip-filtered onto a layer of stickysweet condensed milk. It takes a little moment to brew, but that is part of the Vietnamese way – take your time to enjoy the entire experience, not just the coffee! Back at the Four Seasons Nam Hai, the food is a true highlight. There are two main restaurants, both serving the best of local cuisine and a delicious a-la carte breakfast banquet. However, if you want to mix it up, executive chef Alex Stapfer delights diners with tandoori delicacies and heavenly curries. And definitely book in for Nha Trang Lobster Night - the local lobster

is prepared your way from an array of chef’s recommendations. And speaking of booking yourself in, make sure you take in a Spa treatment or two. The award-winning Heart of the Earth Spa is touted as one of the best in the world and it’s easy to see why. A tranquil lotus pond surrounds the Spa, with two spacious pavilions - one for yoga and the other creating a relaxed reception area looking over the pond. There are eight Spa villas, steam showers and change rooms. Each treatment room is an over-water villa with indoor and outdoor relaxation areas, deep baths and serene treatment rooms. Each treatment villa is cleverly positioned to make them totally private. You can have the doors open as you relax in the bath, bringing the outdoors in. The body treatments are a standout,

guided by the teachings of renowned Zen master Thich Nhat Hanh, fostering not only wellness but also compassion. I had the most unique treatment – the Nam Hai Earth Song signature treatment. This beautiful treatment connects you back to yourself and inspires a deeper connection to the Earth. It features the warm, spicy cleansing smoke of sustainable Hoi An agarwood, a Heart of the Earth sound and breath ritual, followed with an aromatherapy foot bath. Now the treatment begins and already I can feel my body surrender. This is followed by a nourishing Vietnamese salt scrub using seasonal herbs grown on the property. To dissolve the scrub, I soak in a tranquil bath strewn with rose petals, while enjoying fruit kebabs, small baked Vietnamese cookies and ginger tea. After this, back on the table to an expertly executed massage incorporating balancing gem-tipped tuning forks and a fully immersive sound bath. I can’t explain the lightness I now feel and, as intended, a deeper connection with the earth and myself. Before heading to your next destination, or back home, make sure you take in the nightly ritual of A Good Night Kiss to the Earth ritual at the Heart of the Earth Spa. The Spa reception is filled with the mellifluous tones of crystal singing bowls, while a soothing, moving chant is sung. As this happens, and in your own time, you write a love letter to the earth, or a wish to come true. You then float it on the lotus pond with a candle and watch as it drifts away – such a mesmerising complimentary activity for all ages and a lovely way to end the day, and indeed my stay. lemongrass and pear that you’ll be scribbling down the combinations so you can make them at home. Of course, if you’re scheduling in a cheat day, Con Dao’s Banh Bao burgers with crispy pork belly and cocktails are still as good - and high quality - as it gets. Classic cocktail ingredients are switched for local sticky rice wine liqueurs to celebrate the flavours of the region. I loved the whimsy of the compound where guests congregate, which is designed to conjure a Vietnamese fishing village - pitch perfect when you want company over sunset and the quiet hum of Con Dao’s social buzz. There are plenty of unique touches, such as Vietnamese cooking lessons and all-day free ice cream, while the eccentric Elephant Bar has the witty design element of swing seats on ropes and old books to read. At airy main restaurant By the Beach, walls disappear while guests dine by candle and starlight, enjoying the stunning silhouette of the hills against a molten gold sky slowly melting into nightfall. The idyllic setting of the Yoga and Meditation pavilion, hammam and several outdoor treatment ‘salas’ give your fitness routine an inspirational, insta-worthy backdrop. Just nesting at the spa, at the foothills of the beautiful Lo Voi Mountain, is a treat in itself. Treatments that tap into Vietnamese culture bestow a lovely sense of place. Traditional massage techniques are combined with the stimulating effect of pressure points and cupping. Each of the Balinese-style suites feature a voile-draped four-poster bed, a desk and day bed lounge areas, a sunken bathtub and shower with garden views, as well as outdoor dining facilities within either a private garden, private courtyard or private pool. That word again… Private. But you’re not really coming to REVĪVŌ for its accommodation. THE PROGRAM At the start and end of my program I meet with Wellness Coach Kathy Cook. Kathy is delightful, intuitive, knowledgeable… a warm embrace on a cold night. Her happy, positive nature is truly contagious. Instantly, there is rapport. Small talk dismissed make way for THE CANEtoFIELDS rich conversation. Since she already has

insight into my health and the areas I want to work on, we get straight into it. A program has been devised based on what we (a collaborative approach) feel I could focus on during my stay. I am lean, fit, eat clean foods and have spent my entire career in the health industry. According to the results of the Body Composition Analyser, my metabolic age is less than half my actual age. So physical health AOK! Because of this, I’m possibly a harder guest to please. However, health is not just physical. Hell, it’s not just physical and mental (which, thankfully, is also in good shape). It also includes – for lack of a better word – spiritual. Health comprises that elusive trio: Mind, Body and Soul. So how do you improve the health of your soul? Well for starters, it’s doing more of the things that make you happy. It requires having a passion, a purpose and a sense of contentment. And it’s this tricky little chestnut that the team at REVĪVŌ are experts at cracking...

IT’S HARD NOT TO SMILE HERE

Each day of my 3-day program, I have three MOVEŌ classes, three highly delicious NŪTRIŌ meals, a REMISSIŌ Spa treatment and plenty of free time to enjoy the facilities. The day begins with a Morning Mindful Practice. The practice is provided in the journal you receive at your initial consultation. Each day this practice is different and simple to do, setting you up for an open-minded, gratitude-giving day ahead. At 7.30am my NŪTRIŌ Trio Shot is delivered to my room with a genuine smile and cheery ‘Good day Miss Kris’. Indeed it is! Each shot is designed to nurture your vital organs, like your mind, so they’re also set for the day: SHOT 1: Warm water with lemon juice and a pinch of salt SHOT 2: Kombucha SHOT 3: Jamu: ginger, turmeric and coconut oil After my shots, I’m off to do the first of my three MOVEŌ classes for the day. This can be anything from HIIT Cardio, Aqua Yoga on a FitMat in the pool, meditation, Pilates, TRX class, Muay Thai boxing or one of the many yoga classes from Aerial or Hammock Yoga (love) to Ashtanga or Yin Yoga. Some of the classes induce sweat, others serenity. All have a different purpose, but the common ingredient is fun! With an appetite well and truly primed, breakfast is served. The food is another thing that sets REVĪVŌ out from the crowd. It is so delicious! Nutritious, tasty food is so, so good

for the soul. Every cell of your body hums in perfect harmony when it is fed nutrient-dense, simply divine food. Do yourself a favour - if you’re in Bali and happen to be staying somewhere else, go to REVĪVŌ and do one of their half-day or full-day retreats. Apart from the health benefits, you’ll get to experience their food. I’ve eaten at some of the best wellness retreats in the world, and the cuisine at REVĪVŌ is definitely right up there with the best. With satisfied tastebuds, a full but calm tummy, and one MOVEŌ class done, the tone of my day couldn’t get any more Michael Bublé! Or could it?

REMISSIŌ, HOLISTIC SPA Before my treatment, I’m torn between spending time in the hot and chill plunge pools, the Jacuzzi, the infrared sauna and steam room, or having a float in the salt pool. I decide to do the pools for this treatment, and next time the steam and sauna. According to Kathy, the best way to do these pools is to start with the hot, move to the cold, then repeat. Try to fully submerge yourself in the cold, then ‘relax’ in it for two minutes. Relaxing in an ice-cold (or so it feels) bath seems contradictory. But I do as she says. Hot then cold. Cells tingle. Must be good. Counting to 120, but get to 30 and I’m out! Kathy did say it took her a while to build up to two minutes... The premise behind contrast therapy (hot and cold) is that muscles constrict

in cold water and blood vessels expand in hot water. By moving from hot to cold and back to hot, it increases blood flow, which stimulates circulation and your lymphatic system. The cold plunge pool is set at a therapeutic, but far from bamly, 10°C. Great for joint inflammation and to enhance muscle recovery. How athletes can sit in an ice bath for five minutes post-match has me beat! In my new-and-improved mindful state, I’m not giving this a second thought. Nor am I feeling less adequate for my heart-racing 30-second stint. I feel great. Alive. And ready for my treatment. As with MOVEŌ and NŪTRIŌ, REMISSIŌ Holistic Spa has an abundance of options. Most of the treatments are derived from authentic ancient Balinese healing traditions, although aroma, hydro and chromo therapies are also available. Like they say, ‘When in Rome…’ I enjoy a Balinese Massage at the hands of Ratih, a truly gifted therapist. I learn she has been practising massage since she was a child, taught by both her mother and grandmother, who are guru healers in the eyes of the Balinese. She has also been formally trained, but the innate art of intuitive touch handed down through generations can’t be fully taught from a book. It just is. Two more days like this and I feel like my flat tyres have been pumped up! While three days is too short, I’m grateful for my reviver. Leaving healthier and happy, I’m already planning my return visit.

It’s the week before I pack my bags for my eagerly anticipated (and needed) stay at COMO Shambhala Estate. It’s been seven years since my last visit, and knowing how amazing that was, my expectations are somewhat high! The pre-arrival questionnaire immerses me into retreat mode. The questions are not just related to my medical history and lifestyle, but also my emotional health and overarching goals I’d like to start working on during my stay at COMO. The preretreat euphoria hits. I know how great I’m going to feel this time in two weeks. No, it doesn’t just magically happen. I have to put in the work (or surrender), but I know that the team at COMO are going to guide and support me while I’m in their care.

ARRIVAL The way you are met on touch down in Bali sets the tone for the service you will experience during your time at COMO. I’m barely off the plane when I’m greeted by a Balinese man wielding a warm, gracious smile and a sign with

my name on it. He swiftly escorts me past the immigration queues, secures my visa, collects my baggage and takes me to the car for the trip up to Ubud. I’m given a wet towel and as I begin to unravel this cool, soft flannel, a gentle waft of the signature COMO Shambhala scent puts me in a place of peace. We weave through bustling traffic and chaotic streets that dissipate into rural roads with peaceful temples and lush rice paddies. We even pass a cremation ceremony. We turn onto the familiar cobbled driveway. I recognise the entrance, flanked by tall palms and perfectly manicured green grass. There is the understated and welcoming front gate with the stylish, but not overbearing, sign: COMO Shambhala Estate. I’ve arrived! The rock star welcome turns out to be an apt introduction to a place that anchors its service on absolute care, consideration and being one step ahead of its guests’ needs. COMO Shambhala Estate is the flagship property of COMO Shambhala, a holistic health retreat

concept developed by Singaporean entrepreneur and goddess of good taste, Christina Ong. Voted by the likes of Conde Nast Traveller and SpaFinder as one of the best Spas in the world, The Estate describes its offering as not just a Spa and indulgence, but “a retreat for change”. The offering is a luxurious, personalised, holistic escape with individualised programs for wellness, fitness and rejuvenation. I’m met with more infectious Balinese smiles and adorned with a lei of aromatic tuber-roses. The open-air reception provides a window to look out across the estate. My breath stops. While the design and décor of this place is best of breed, and wins design and architectural awards the world over, it is Mother Nature’s beauty that steals the show. Lush greenery, terraced gardens, age-old trees and tropical forests. It is green as far as the eye can see. This sea of all shades of green is perfectly balanced by residences discreetly cascading down the terraces, or villas shyly poking through the palms to indicate there is human habitation 35


here. There’s also bluer than blue pools and ponds carefully peppered throughout the estate. Tranquil. Picturesque. Calm. Breathtaking! As I wait for Widi, my personal assistant, to take me to my accommodation, I soak up the soothing distant sounds of the Ayung River, the trills of birds and the click of cicadas. Nature’s musical accompaniment. Widi arrives with her little buggy and we head off through the estate to my residence. As we drive down the path, I have this overwhelming burst of warmth in my heart - a genuine welcome home. While some things are new, the heart and soul of the Estate has only deepened. The accommodation is a combination of Five residences each comprising four to five suites, as well as Pool Villas of various sizes, and exclusive Private Villas. My suite is in the Umabona Residence. Each residence has its own front gate and large garden. There is also

a communal lounge area and large private pool. Some also come with Jacuzzi, pizza oven or fire pit. While there may be other guests in your residence, you rarely see them. The residences are vast, over split areas, and each suite is entirely private. My suite offers spacious elegance of white and natural timbers. There is everything I could possibly need - huge four-poster bed, comfortable furnishings in gentle natural tones, plasma TV, balcony and outdoor setting to soak up the view of the lush gardens and terraced fields in the distance. The bathroom is enormous, with a sneaky peek into the world outside. There is a large bowl of tropical fruit and orchid plants. And a big dose of serenity. By the time I finish looking about, Widi has unpacked my bags and pulled out my itinerary for the next few days. I start my program first up in the morning with a trek through the local village and rice fields with the wonderful Mudra. He has lived

in the local village all his life and worked at COMO even in its previous incarnation as Begawan Giri. His immense knowledge of the area derives from his curiosity, passion and experience. He is also a talented healer - the chosen one for the Ongs when they visit. He takes me through hidden valleys, sacred temples and local homes, including his own. I meet his cousins, who are up early getting all the rafts down to the river for the tourists who will be white-water rafting today. We walk past the famous Bali Swings, which are not yet open, but as Mudra’s friend works here, we sneak in and have a giant swing before the rest of Bali wakes up and the place is swarming with tourists. I see an honest, hard-working and humble side to Bali. Already I feel richer for my stay at COMO and it’s barely been 12 hours. After a nourishing, comforting and totally divine breakfast (more on the food shortly), I head over to the Wellness Centre for my consultation with Nancy Kim. She is Americanborn (California) with a Masters in Oriental Medicine. We chat for ages about nutrition, mindfulness, acupuncture and life as a Westerner in Bali. Kindred spirits, we immediately clicked. From our long chat and my pre-arrival questionnaire, she took the information and curated a 4-day wellness program for me - a combination of Spa Treatments, Yoga, Meditation, Personal Training and cultural experiences. The goal is to get me out of my head and back into my heart. While my physical health is really good, I have a lot going on in my head and needed to learn to stop thinking and just switch off. So for this reason I also had plenty of leisure time included in my days so I could just ‘be’ and immerse myself in the beautiful, earthy surroundings.

THE FOOD In a word, the highlight! If you’re visiting Bali, it’s worth stopping by the Estate for a meal. The ambiance of the open-air Glow restaurant, with views


across the jungle and sounds from the river, is surpassed only by the superb cuisine. Without wanting to take away from the taste and presentation, it’s worth knowing that each dish is created with specific nutritional purposes in mind, whether to boost concentration and energy, or maintain blood-sugar levels. Food is a large part of your program, and while it is designed to improve your health, you’ll be pleasantly surprised by the talent of these magical chefs. As Michael Gebicki beautifully concludes, and I wholeheartedly agree: “The regimen also involves food, and Como Shambhala takes spa cuisine to rare heights. Light, inventive and exciting, the food served in its two restaurants looks like it’s prepared by a food stylist for a magazine cover shot. It also takes the tastebuds out for a tango. This is not food as penance. There’s espresso coffee, sweet treats, wine if you want it, and this is part of the ethos. Throughout the treatments, the therapies and the food runs the idea that these are concepts to be applied within the real world. Putting guests on a monk’s diet is not likely to have lasting effects outside the sanctum.” Thankfully, their cookbook is available in the resort shop. I grab a copy!

THE SPA The Spa is also an open and airy space. Minimalist by design, yet loaded with soothing ambiance. I always say a Spa is only as good as the therapist delivering the treatment. Let’s just say…. the Spa is incredible. During my stay, I have two Spa treatments. The Como Shambhala Massage – how could you resist? This treatment is a no-brainer for me. It is designed to calm the mind, rejuvenate the body and bring you back to balance. My Goals. I float from the treatment room feeling taller, lighter and more aligned. I also just want to sit and relax – not something I often prefer to do. I surrender to this feeling and enjoy the sensation of just being. My second treatment was more about the body, as after a few yoga lessons, a training session and my hike with Mudra I needed some untangling and muscle soothing. I’m down for a Taksu Massage. The magical transference of energy between two people who connect is called ‘taksu’ in Balinese. This is a strong and invigorating treatment that increases blood circulation and helps relieve my tight muscles. It can also soothe headaches, so this is a great treatment if you’re affected by stress. Each of the therapists have been trained and are accredited by Wellness for Cancer to work with individuals with cancer. This speaks volumes about the talented Spa team and Wellness Centre and Programme Manager, Sally Halstead. Sally is a qualified nurse who has worked in acute care settings. She also has a background in complementary therapies including reiki, reflexology, crystal healing and aromatherapy. Her Western and Eastern healing modalities meld beautifully here, and while it is a Spa, each of the treatments is truly therapeautic.

a host of on-site leisure activities available, including daily guided walks, Qi Gong, Tai Chi, Pilates, mountain biking, hiking, white-water rafting, tennis, outdoor circuit training and cooking demonstrations. There’s also a rock climbing wall, outdoor gym, swimming pools, sauna and steam rooms and a comprehensive library of books to borrow during your stay. The Estate also offers guided cultural activities, including visits to local temples, ceremonies and markets, and cultural workshops including Balinese dance, photography and writing. Or you can just laze by the many pools on the estate and watch the world go by. One thing you must do is the Estate walk. It’s a beautiful, scenic walk that takes you along the entire perimeter of the estate. You are guided along a path furred with moss that zigzags down the hillside, past a massage pavilion swathed in white and The Source, a sacred spring used by the Balinese at festival times. I stop and cup my hands and drink some of the Holy Water. If I’d thought about it I wouldn’t have done this, but my natural instinct took over. As you get closer to the river, you hear squeals from the tourists white-water rafting. More pools and a series of ponds hidden by the allenveloping greenery with lounges beside them. It’s at this secret hideaway I stop and hear my heart. It says sit and soak up the mountain’s energy. What a connection. LOVE! 38 | spaandwellnessinternational.com

This place feels different. Very different. And little wonder - perched atop sand dunes on the north coast of Western Australia overlooking the Timor Sea, sitting right at the mouth of the Berkeley River, this is probably the most remote resort in Australia. There are no roads here from ‘the outside world’, so we arrive by light aircraft from Darwin, providing the opportunity to see the resort and its spectacular surrounds from the air before arrival. After landing we’re whisked by open-sided 4-wheel drive through the dunes up to the resort to enjoy a drink and a chat with other guests while soaking in the panoramic views from the poolside balcony. I’ve left freezing mid-winter Sydney to visit here in July, where the temperatures are hovering around a balmy 27 degrees, which I’m just loving. I’m pleased when we head off again in the 4WD for a scenic tour and walk along the beachfront.

Our guide is local legend Bruce Maycock, who has lived in this area for most of the last 20 years, including numerous lengthy stints camping and exploring by himself - no mean feat in such harsh country. Bruce has literally seen things that no other white man has ever seen, which in a world of information overload is not something many of us can claim. And there’s not much he doesn’t know about life in the Kimberley, so it’s fascinating to hear his detailed observations of what we see. It takes a while to work out what’s different about this place, then you realise it’s the stillness, the tranquillity, a feeling of timelessness. The light is also quite different, even more so as the sun sets and the sky becomes bathed in a surreal orange glow that has a dream-like quality to it. Am I dreaming? Is this real? I snap back to reality when Bruce suggests we have a snack and a cool beverage from the esky that

he thoughtfully packed in the Land Cruiser. Over the next few days, this magical, bottomless esky will have a habit of appearing at just the right time, luckily for us. When we return to the resort, we enjoy an excellent dinner comparable with any fine dining restaurant in Sydney, a bit surprising given the remoteness of this location. The dozen or so people who arrived on our flight are seated together at a long table, a formula which worked well for our 3-day stay as we became more familiar with each other. Then it’s a short stroll along a sandy path to our twin-share villa, one of only 20. Each villa comprises a large bedroom and balcony with water views. In another unusual twist, the ensuite bathroom is open-air, surrounded by a brush fence for privacy, which is ideal in such balmy weather and adds to the sense of being close to nature. There’s not much point coming all this way just to sit by the pool, 43

so over the next few days we have a full agenda of outdoor activities. Our first choice is a bush walk, again with an excellent and knowledgeable guide, taking in the sights - towering cliffs, amazing rock formations, Aboriginal rock paintings and topped off with a dip in one of nature’s most spectacular swimming pools. One of the most exciting aspects to this area is the prevalence of crocodiles, which are such fascinating and formidable creatures, but the flipside is that swimming is therefore mostly off-limits. However, there are numerous croc-free streams and water holes, even in the Dry Season, and for me these spectacular swimming holes were the highlight of our travels – beautiful beyond words! The second day was spent mostly on a river cruise, and the third day on a fishing trip – which were a lot of fun and hugely educational, especially about crocodiles, but the fresh water swimming holes and waterfalls still stole the show for me on both these days as well. Some of the other guests enjoyed the helicopter scenic tour and raved about the views, but hey I’ve got to leave something for my next visit. A stay at the Berkeley River Lodge is an indulgence price-wise, but when you consider it includes all meals, beverages, tours and transfers - all of which are high quality - it represents good value. So if you enjoy outdoor adventuring, but prefer doing it in style with first-class meals and accommodation, and you want to experience a truly unique part of this country, then you definitely need to put Berkeley River Lodge on your bucket list!

This place takes the term ‘unplug’ to the next level. Located halfway between Darwin and Kakadu National Park, it provides easy access to all the gems the Top End offers. We arrive at Darwin just after noon. We pick up our hire car, grab some lunch and buy our supplies for the next few days. Our adventure has officially begun. An easy one hour and 15 minute drive south (some Northern Territory roads have a 130 km/hr speed limit!), we arrive at Mary River Wilderness Retreat mid-afternoon. This is our home away from home for the next three days. As we turn into the entrance, we are greeted by a mob of kangaroos enjoying an afternoon drink from the river. As the name suggests, the Wilderness Retreat sits on the shores of the Mary River – fishing, croc spotting, bird watching, bush walking and river cruising are just

some of the exploits for which this location is famous. Hardly pausing to check us out, the kangaroos carry on quenching their thirst while we take photos as if it’s the first time we’ve seen these majestic creatures up in their personal space. It isn’t! They are so mesmerising, in their poised, dismissive way. It’s hard to believe these placidly posing Kangaroos have become a national pest! Mary River Wilderness Retreat is a great family-oriented eco-tourism property. It offers budget to deluxe accommodation, licensed restaurant, as well as caravan and camping sites, including campers’ kitchen. They even have a Happy Hour each afternoon, as well as organised activities for the kids in peak season. We stay in a poolside bungalow, which is basic but comfortable, with a pool (for ‘bungalow residents only’) just steps from our front verandah.

After all, who needs a TV or WiFi with the best reality show on the planet right on our doorstep? First up a swim. Although it’s July and mid-winter, it’s close to 30 degrees here, a pleasant change from our cold Sydney days. We meet another couple at the pool who have come all the way from Michigan, USA. They’ve been here for a week, so give us the lay of the land and share some of their travel stories. There are two distinct seasons in the north of Australia (affectionately known as the Top End) – the Wet season and the Dry season. The Wet season is roughly November to April and the Dry season is May to October, so we’re here in the Dry season. While that means a lot of the waterfalls are less spectacular as less water is flowing, you have access to all the parks and treks that might otherwise be cut off during the Wet season. 47


At the top of our To Do list is Gunlom Falls. Once we left the highway, this was a bumpy 2-hour drive as the dirt road was heavily corrugated and in need of grading, but don’t be tempted to give it a miss. Gunlom Falls is one of the most amazing places you’ll ever visit in Australia. We felt like Dorothy arriving in the land of Oz. WOW! Located on Waterfall Creek in World Heritage-listed Kakadu National Park, Gunlom is a magical combination of seasonal waterfalls and serene plunge pools at the top of the mountain, with a large billabong and picnic areas peppered beneath the shade of the tall gum trees at the base of the mountain. The insta-famous natural infinity pool is a short, but very steep, one-kilometre trek up the gorge. While there are carvedout steps taking you to the top, it is still a bit of a challenge. The cool, crystal clear, natural plunge pools at the summit make it more than worth the effort - so refreshing and tranquil. From the top of Gunlom Falls, there are sweeping vistas of three habitats of the southern hills and ridges of Kakadu - stone country, woodland and riparian (riverine) areas. It’s a visual feast for the eyes and a truly memorable experience. As I stood there, a white cockatoo took off from the top of the waterfall and gracefully glided out into open space, enjoying the view from an even better perspective! If the climb to the top of Gunlom seems a bit too daunting, take the flat, easy walk to Murrill Billabong for some great birdwatching, or follow the short walking track to the main pool below the waterfall. Signs here saying: ‘Beware of crocodiles - swim at your own risk’ were enough to keep me sidelined, but plenty of others were enjoying a splash, oblivious to what could be lurking below. We enjoyed a packed lunch on the grassed, shady picnic area before psyching up for the journey back. Australian Traveller voted the Gunlom Plunge Pools in Australia’s Top 100 best views, and without doubt it is one of Australia’s best ‘secret spots’. The next day, we caught up with an old friend, Brett, who has spent most of his

life in the Northern Territory working with wildlife, primarily crocodiles. He offered to take us out in his boat to see some of these prehistoric creatures in their natural habitat. We meet him at the local drinking hole - the famous Humpty Doo Pub - and from there head off to Corroboree Billabong, part of the Mary River Wetlands and home to the largest concentration of saltwater crocodiles in the world. It’s also a paradise for birds, fish and other wildlife. The eeriness of having crocodiles swimming incognito beneath us was brightened by the whistles and chirping of the many different birds. The bird life was incredible, and while I live in Sea Eagle territory in Sydney, it took a trip to Darwin for me to spot an actual Sea Eagle perched on a tree stump casing its prey. I learn that this bird is revered by indigenous Australians and is the subject of much folklore. I feel a sense of pride seeing this bird, the mascot of our local football club, launch into flight and snatch a fish straight out of the river. Brett decides to make things interesting and sets a challenge: who can spot the most crocodiles?At first we show our inexperience, mistaking floating logs for crocs, but soon get our eye in. They are everywhere – sunning themselves on the river bank, floating on the water, or submerged with only their snout and beady eyes visible. They look docile and lethargic, but Brett reminds us of their quick reflexes. And they’re patient - they can wait beneath the surface watching their prey for hours or even days. The ultimate stalker. And when they’re ready, they pounce! They are extremely powerful and highly explosive, covering short distances in no time, so don’t be fooled by their large stature and lazy look! It’s quite exhilarating to see such a formidable beast out in the wild. To learn so much about our indigenous wildlife, while being immersed in its beauty, is the charm of the Top End. Sharing our day with our American neighbours back at the Mary River Wilderness Retreat meant the experience lasted that little bit longer. A luxury resort would feel out of place in these parts, whereas our eco-friendly retreat surrounded by walks and wildlife

is perfect. Switching off and getting back to nature in its most raw and unedited form is the perfect elixir when you’ve overdosed on city life.

TIPS: If driving at night, keep your eye out for kangaroos, especially at dusk when they’re in search of food and water. They can bound onto the road and if you hit one, they will cause serious damage to your vehicle. Remember to get your National Park Pass for access to Kakadu. Your pass includes free ranger-guided walks, talks and cultural activities. You’ll also be supporting Kakadu’s traditional owners and helping preserve the park for future generations. However, as we flew over the island about to land, I could see the hilly walking trails, jagged cliff edges and rolling surf. My sense of adventure was beginning to kick into gear! Pristine waters for snorkelling, surfing, SUPing and kayaking surround the tiny 8km by 5km island. It’s also covered with lush bushland and expansive national parks, providing ample walking or mountain biking trails of varying distance and difficulty. since most of the older tourists opt for the organised bus tours, you’ll enjoy a lot of space to yourself. While Norfolk isn’t well known for its surf or scenery, it is truly breathtaking - a unique combination of tropical island and fertile farmland. There are qualities and quirks of the island that make it a unique place to visit, such as the friendly locals who speak their own language (known as Pitkern, a mix of colonial English and Tahitian), a mutinous history and road rules that give cows right of way.


ISLAND As soon as I land, I grab my luggage, pick up a hire car and give in to the urge to explore. The island is very easy to navigate around, but if you do make a wrong turn, a local is sure to point you in the right direction. With a population of only 1,748, approximately 20% with Pitcairn ancestry, the locals know each other well, and a tourist stands out like the proverbial. As a girl who grew up in the country, I feel at home here. I even get to do the one finger wave from the steering wheel as I pass locals coming from the opposite direction. I head towards historic Kingston and my journey begins…. A LITTLE BIT OF HISTORY

Captain Cook had discovered Norfolk Island, a remote location in the South Pacific Ocean to the east of the Australian mainland, before the First Fleet arrived in Botany Bay. He reported that the island was abundant

with flax and great pines. Cook’s superior, Lieutenant Philip Gidley King, had selected 23 of the 759 people travelling in the First Fleet to colonise the land as quickly as possible before another European power, especially the French! The chosen group comprised 9 male convicts, 6 female convicts and 8 free men. Actively involved in the American War of Independence, King saw reasons to take advantage of the flax and pines discovered on the island, intending to use these resources to build ships and sails. Shortly after they had settled on the island, King took a mistress – an ex-dressmaker named Ann Inett – who gave birth to the settlement’s first child, which the Lieutenant proudly named Norfolk. The convicts began to build a road from Sydney Bay (Kingston) to Anson Bay through Mount Pitt. Limestone was soon discovered in Emily Bay, and with abundant food, the colony they

had created was promising. But shortly after, the population on the island swelled. Two companies of marines carrying 183 convicts arrived and the island soon became unbearable for everyone. Starvation was rife and their lifestyles quickly deteriorated. When all hope of survival was lost, petrel birds started appearing in the sky, and hundreds were slaughtered every night for food. Of course, this was only a temporary solution, and the English inhabitants were left with no other option than to terminate colonisation and abandon the island, seeking refuge in Van Diemen in 1814. To help deter settlement by another European country, sadly all the infrastructure on Norfolk Island was destroyed. His Majesty’s Government in 1825 decided to re-colonise Norfolk Island. This time, the motives deviated from the original purpose. It was now to be 51

used as a penal colony, a place of incarceration for ‘the worst of the worst’ felons. The conditions in the new penal colony were so harsh that convicts sentenced to death were often thankful they didn’t have to live out the rest of their days on the island! The population of the island was over 2,000 and life on the island for the convicts was hellish. After the atrocity of Commandant John Price, the British saw fit to disband the colony and began shipping convicts to Port Arthur in Van Diemen. Restoration, however, came in 1856 when Queen Victoria gifted the island to the descendants of the Bounty mutineers who had sailed to Norfolk from Pitcairn due to the overpopulation of Pitcairn. The new settlers had initially lived in the abandoned penal colony, before dividing the island into 12-acre lots. They had brought a unique culture from Pitcairn and their language was a wonderful blend of Old English and the endangered Tahitian. The settlers engaged in domestic farming and whaling, which became a good income-earner for the island. By the time of WWII, an airstrip had been built, which significantly changed the island’s economy, allowing easier transportation of goods and opening the door to tourism. The island used to be independent until the Australian parliament passed a bipartisan decree to end their autonomous rule and making it part of Australia. Nearly three years on, the locals are still divided as to whether this was a good thing or bad. I will say this: the purity of the island and its ‘Bountiful’ history is still very much intact. And it’s impossible not to be fascinated by the mutiny on the Bounty and how the people on this island came to be.

STAY There are numerous accommodation options on Norfolk, all very affordable. Depending on what you’re after and how far you want to be from the town centre (only about a 7-minute drive from the furtherest point), there is sure to be something that fits the bill.

COAST At the end of Longridge Road, an inconspicuous driveway leads to a large green garden with little timber buildings framing the grounds. ‘Coast’ offers a variety of fully self-contained accommodation options, ranging from private beach houses to one- and twobedroom units, all with magical views out to sea. There is complimentary use of pushbikes, snorkelling gear, fishing rods, golf clubs and tennis racquets, and yoga can be arranged on request. In the middle of the garden is a saltwater swimming pool and BBQ area. In the Boat House by the pool is an honesty system bar and picnic baskets can be arranged on request. There is also a beautiful Spa Pavilion offering a variety of Spa treatments. Definitely book in for a session in the Spa during your stay. You’ll enjoy your muscles being soothed by the moos of cows and the crashing of the waves. Or if you choose a facial, soak up the view while your skin is renewed. http://www.coastnorfolkisland.com/

DO HIKE TO EMILY BAY Emily Bay is a couple of kilometres away from the town centre (known as Burnt Pine). There are several different roads you can take, depending on

your preference. They’re all windy and bursting with scenery. You’ll walk past Slaughter Bay, and the ruins of New Gaol and the prisoners’ barracks. These barracks were once home to over 1,000 convicts; today’s residents are grazing cows. A couple of the beautiful colonial homesteads are open to the public, so drop in for a visit to get an idea of what life was like 200 years ago. From the barracks you walk past the golf course and on to the island’s cemetery. White headstones pepper the grassy area, mostly announcing young deaths by drowning or execution! The great author Colleen McCullough, a Norfolk resident, also now rests here. When you get to Emily Bay, the topaz blue water will invite you in. Depending on the time of year, you may see a variety of sea life and giant turtles. Refreshing is an understatement! If you’re up for some paddling, this is a wonderful spot to kayak or SUP. At the other end of the bay, back towards Kingston Jetty, there are stairs. About 300. But if you take them all the way to the top, the view outweighs the effort by about 300%!

TREKS AND TRAILS There are so many beautiful walks on the island, through bushland and national parks. While I loved the long walks through the national park shrouded in palms and pines and the odd peek at the ocean, my favourite was out by Fig Grove. You park your car near the storybook-like old fig trees and cut through an open field. This joins a beautiful walking trek along the coastline out to Rocky Point. The view left to right is ever-changing and goes as far as the eye can see. Savour the postcard picture with the dancing sparkles from the sun on the deep blue water. The perfect spot to take time out and breathe in the clean, pristine air.

VISIT THE BOTANIC GARDEN The Botanic Garden exhibits plants that are native to Norfolk and has five different walking trails. According to the locals, the garden was gifted to the island by a past resident who wanted everyone to explore. The trails are all short and the natural serenity of this garden oasis will engulf you. If you take a walk around the entrance, you arrive at a deck on top of the information centre. There’s a seating area with wonderful views - the ideal place to enjoy some peaceful solitude. I suggest you take a drink with you to this lovely spot.

SEE FLETCHER’S MUTINY CYCLORAMA If you’re fascinated by 3D art forms, a visit to the Fletcher’s Mutiny Cyclorama is a must. Two local artists, Tracey Yager and Sue Draper, created the cyclorama which depicts island history back to the 19th century, maainly the mutiny on the Bounty story and the descendants settling on the island in 1856. It is an edgy continuous mural painted on a cylindrical surface. The project took them two years to complete, with realistic effects, soundtrack and information boards.

PLAY A ROUND OF GOLF Located in an old convict building at the seaside near Kingston is the pro golf course - probably the only golf course located in a UNESCO World Heritage protected site. There are spectacular views from the greens and fairways. Even if you’re not into golf, this is a great location to take photographs, plus a lovely meal can be had at the Golf Club.

BIRD WATCH Adventurers interested in ecology, nature and wildlife will enjoy the GreenEyes Birding Tour. The tour guide takes you up Mount Pitt for an overview before taking a walk

through the National Park. The island’s Green Parrots are likely to be the first species you spot - currently part of a conservation project on the island.

DISCOVER THE COCKPIT WATERFALL A trip to the north coast to visit the Cockpit Waterfall is an adventurer’s delight. You can drive up the dirt road, then pull over at the paddock and park your car. On foot you step over the rocks to cross the creek, then follow the narrow hillside trail leading to some fabulous views. You’ll hear the waterfall before you spot it. During the dry season, the waterfall doesn’t flow, but the view from here is still a delight to behold.


VISIT ST BARNABAS CHAPEL At the end of Headstone Road sits St Barnabas Chapel. It was constructed in 1880 by the Melanesian mission using stones from New Gaol ruins. While the roof is modelled on a ship’s hull, the stained windows represent the four evangelists. This well-preserved little chapel is still used today for island weddings and the odd nondenominational service.

BREAKFAST AT THE OLIVE CAFÉ Right in the heart of town, the Olive Café became my go-to breakfast spot. The Green Breakfast Bowl was the perfect start to a day exploring the island. Open for breakfast and lunch, they offer heaps of healthy options, as well as gluten-free and vegan. Everything is made fresh using local produce where possible. The eggs are a highlight and come with the Green Breakfast Bowl.

LUNCH AT THE GOLDEN ORB CAFÉ The Golden Orb Café is located down a tunnel formed by shrubs and trees, deep in the town. It’s a cosy spot to relax while sitting on the deck outside. Book-lovers will immediately fall in love with the place because there’s a bookstore attached to the café with a good range of books to browse while you enjoy your homemade lunch. The coffee here is amazing and teams perfectly with any of the freshly baked slices or muffins.

VISIT THE HILLI GOAT A visit to the Hilli Goat Farm on the north coast of the island is another must do. Not only will you learn a lot about goats, goat’s milk and the wonderful benefits of this milk, you will leave inspired by Emily Ryves’s tenacity to build a business against the odds. After receiving a Churchill Fellowship research grant in 2011,

(which is given to one of the island’s residents each year), she went to Australia to work on a few properties and learn the art of goat farming, milking and cheese-making. After more setbacks than you could imagine, including a ban on importing livestock to the island, her business finally came to fruition. Set on the most stunning backdrop of pine trees and deep blue seas, her goat farm tours include learning all about the challenges of goat farming, as well as milking and the cheese-making process. You walk through the edible gardens, meet her cheeky goats and sample some of her handmade goat’s milk skincare, developed as a solution and treatment for her son’s psoriasis. The tour concludes with a very tasty and comprehensive cheese and wine tasting. A long table is set up in the garden where you and your fellow tour-goers can sample all the various goats cheeses paired with house made fig jam, lavosh, frittata and olives. Everything is sustainable and organic where possible, and sourced from their own garden. Sublime! Tip: Go on an empty tummy!

WINE TASTE AT TWO CHIMNEY’S WINERY Two Chimney’s Winery is the first and only winery on the island, offering wine tasting and cellar door sales. Located at Steel’s Point with a wonderful vineyard set against a backdrop of tropical rainforest, this was a highlight for me. Husband and wife team Roderick and Noelene McAlpine retired to the island and created Two Chimney’s. Roderick, an ex-banker with a love of wine, and Noelene, a gifted foodie who grew up on the island, turned out to be the perfect blend. The exquisite wine is perfectly matched with Noelene’s tasty morsels. Take your appetite with you as the wine tasting is accompanied by the most mouth-

DINO’S RESTAURANT Located at Bumboras Road, one kilometre west of Kingston, is the infamous Dino’s Restaurant, where great food and conversation is enjoyed with owner and chef, Dino. I learn that Norfolk Island is a very close community and they love having visitors. The organic and biodynamic produce shines, from simple pleasures such as bread, honey, sheeps and goats cheeses to delicious, light dishes like ragout of wild mushrooms or roulade of local trout rolled in summer herbs and poached, with soft duck egg dressing. But ultimately Lake House celebrates ambitious, gourmet fare: hares, pheasant and rare breed pigs and exquisite desserts (well, you may have been hiking!) like peach melba dusted with berry sherbet, elderflower and champagne jelly. The sommelier delights in delving into the impressive 10,000-bottle cellar to wine match with your selection, so try kicking back over a Mount Macedon red while you unwind by the lake. Owner Alla’s daughter Larissa, who grew up on the property and now helps run it, has noticed a trend shift in their clientele. “The wellness revolution has not been ignored at Lake House. Our guests previously came to indulge on Alla’s delicious food and the extensive cellar. Step off the busy corner on Wickham Terrace and into the lobby of Ovolo Inchcolm and you’ll be transported to a place in time - when movie sirens wore fur and made smoking look elegant! And men were clean-shaven with Brylcreem shiny hair. A long, polished wooden bench with mirrored bar behind and coffee machine in front - serves as a welcome reception. Neo-Georgian sculptures and decorative archway steer you towards a comfy lounge area complete with open fireplace and plush chesterfields. Dry martini please! Once a private residence and medical practice, the building was originally constructed in the 1930s and is the foundation of the artistic concept behind the hotel. Think Gertrude Stein’s Paris salon, where Hemingway, Fitzgerald, Picasso and Matisse would comfortably rub shoulders while sharing trailblazing ideas and indulging in gourmet food and wine. The interiors are breathtakingly eclectic. The moodily-lit corridors feature an amazing collection of contemporary artworks, including photos by world-renowned filmmaker and photographer Enrique Guttenberg. The design is replete with geometric shapes and intricate

features, regrettably now lost to minimalism in other establishments. Retro, Metro and oh so chic. The larger-than-usual rooms feature handmade wallpaper and are the opposite of the usual cookiecutter, personality-lacking style of most city hotels. Each room is a different size and all have unique design themes, yet with the same 20th century appeal. For a moment, you glimpse the world of Greta Gabo. The king-size bed is comfortable, making that journey to dreamland smooth; the bedside Negroni Kit may have helped. Each suite is equipped with a workstation, docking station and Nespresso machine. All the boxes ticked. The AppleTV and iPad allows guests to send a direct request to the concierge, while the free and fast WiFi allows you to surf the net or binge on Netflix. There is also a personalised Spotify playlist ready to bless. It’s these small details that leave a big impact. There is a free mini bar filled with quality beverages and snacks, and there is a yoga mat for your use while a guest at Inchcolm. At the press of a bedside button, the curtains open and close, with the double-glazed windows keeping the street noise from entering the room. The bathrooms are also oversized

with both a bathtub and large walk-in shower. The bath salts were enough to coerce me into the tub and sink further into the glamorous world of yesteryear. The intimate restaurant, Salon de Co bar, is located at the back of the building. It’s a cosy art deco space to enjoy breakfast or dinner seven days a week. The new menu has just been unveiled, spearheaded by newcomer head chef Andy Ashby and Ovolo’s creative culinary partner, Ian Curley. The a la carte menu features mouthwatering dishes: turnip puree, orange beuree Blanc, salted shrimp, barramundi with broccolini and many more. A snack menu that features an array of charcuterie, cheese and chickpea crackers sprinkled with celeriac and coriander is also available on demand. You can opt for the continental and exotic dishes or go simple with bacon and eggs. There

are delicious vegetarian and nonvegetarian friendly dishes. Wooden parquetry flooring, brass archways and heritage wall panelling featuring vibrant experimental and aspirational artwork continue the hotel’s artiste theme. The staff are all friendly and enthusiastic, willing to help guide your choice when there are too many good options to choose from. Like the hotel, the food is 5-star. While the city is in close proximity, I feel a world away!

I catch up with Michelle to find out what her secret is to keeping it all together… with a smile! Tell me about your Business (es) plural? OSMEN is an outdoor furniture business my husband Michael started in China. It was a business created out of fate, not choice. He was working in a wooden furniture factory in Beijing. It was at the time of the Tiananmen Square protests and the fall of the Chinese government as we knew it. My husband had a promising career one day, and the next there was a lot of uncertainty with all the changes happening in China. He was offered compensation by the government, which he took. It was with that compensation that he began Osmen, an outdoor furniture company. We met in 1998 before migrating to Australia in 2001. Initially, the furniture was a lower end

product, but once we came to Australia, we improved the quality and became a supplier for Harvey Norman. We started with one outdoor umbrella and evolved to supplying some of Australia’s biggest department stores including Harvey Norman, Domayne, Freedom & BBQs Galore. Today we focus on our own stores. We currently have eight retail stores, and as you know, this is a lucky number in China (said with a laugh)! What about your magazine, NewLand? NewLand was a dream. It was always a dream of mine to have a magazine. In China, you are given a lot of respect if you have good literacy skills. A magazine, a bilingual magazine, earns a lot of respect. When we arrived in Australia, I found it hard to get reliable information on schools, dentists, where to live, simple things that Englishspeaking people may not think are difficult. I felt a responsibility to my

community, as well as my country, to provide information to help Chinese immigrants settle in their new land. And that’s how the magazine came to be. The magazine aims to bridge the Chinese and Australian cultures and provide a gateway for the Asian community into the Australian lifestyle, culture and customs. We’ve been publishing for 14 years now and the magazine is in 2,000 newsagents across Australia. I like to believe we have helped a lot of people transition into a new culture with our content. And now we are moving into social media and online. It’s bigger than I ever dreamt! You are probably one of the most energetic entrepreneurs I have met. What’s your secret to staying energised? I’m lucky enough to be surrounded by a great team. They are reliable and take a lot of the pressure off my plate.


This allows me to do things that really make me happy. I try to do Falun Gong every day, even if only for 10 minutes in the morning. I find it helps give me clarity and definitely helps with my energy levels. If I miss a morning, I really notice how my productivity and decision-making is affected later in the day. I’ve been practicing Falun Gong since I was at uni in 1998. I’ve been doing it for over 20 years now and it has helped define me as the person I am today. Falun Gong is a Chinese spiritual practice that combines meditation and qigong exercises with a moral philosophy centered around the pillars of truthfulness, compassion and forbearance. It also incorporates elements drawn from Taoist and Budhist traditions. Through moral rectitude and the practice of meditation, practitioners of Falun Gong aspire to eliminate attachments and ultimately achieve spiritual enlightenment. I hold myself to these beliefs every day. So even in times of chaos and stress, I am able to stay calm and centred. It reminds me of what is truly important, and that is our family and those we love. And it teaches us to always have hope. That has been what has driven us. We all practice Falun Gong, even the children. We try to do it as a family, but that doesn’t always happen. Particularly now that our daughter is at school in New York, USA. I feel it is really important for our children to understand compassion and the importance of giving back. What drives you? Success doesn’t necessarily drive me for more success. Kindness drives me. Even though we are busy, everyone is busy, I try to make time to do good things. Success has allowed us to give back and support charities and do lots of little things that help. I’m on the board of Lions Club and one of the fundraisers we did was to buy a new walker for a young girl. To see her smile when we gave her that walker… it touched me. I tear up now

just thinking about it. I love that, and that drives me. Everyone can give, you can give up a holiday or a night out to dinner, but to have true meaning, it has to come from the heart. If we all connected a little more from our heart, less from our head, we’d be in a better place.

What has been one of your biggest lessons? I think when you come to a new country, you have to learn change. And accept that there will be challenges. When Michael and I came to Australia, with our one umbrella, we worked really hard to break into the Australian market. We were lucky we could compete on price, because we had our supplier in China, yet we also had to ensure the quality was up to Australian standards. We knocked on doors and stuck to our plan. It was literally about survival. Then - and I still remember the order coming through on the fax machine Harvey Norman wanted us to be their key supplier of outdoor umbrellas. We worked hard on that account and made sure our standards were high. We spent a lot of time understanding the Australian market and what is important - quality and style. We have literally just spent three years getting a cushion right. We started out supplying umbrellas, then in the second year we added a few more products to our catalogue.

By the third year, we were supplying 20-30 items and became one of Harvey Norman’s key accounts. We had also picked up Domayne. We were lucky to have local intel from both countries - Australia and China. We were both manufacturer and supplier, which meant we had a good grip on quality control and delivery deadlines. Then we found out that Harvey Norman were going direct to China and didn’t need us. Overnight, we all but lost our business. Thankfully we had our Osmen brand, so we quickly opened our own retail store. That was tough. We went from having to fill orders to now having to open stores, understand retail, create a brand, learn to market to consumers. It was a lot. Jump to today, eight Osmen retail stores later and now Harvey Norman, Domayne and Freedom all stock our products again. I think we all learnt lessons from that experience. And for the Harvey Normans, it was easier and more reliable to deal with us than go direct. We have the local knowledge in China and can speak the language. That helps! 71


Moving to Australia, what was the biggest challenge as a nonEnglish speaking migrant? Everything was different, nothing was as we knew it. I only knew one person, my husband. I found the language really tough. Even though we could speak some English, it was still really hard. We didn’t know the nuances and felt everything we were saying lacked emotion. So we couldn’t really say what we meant with feeling. To talk to anyone outside of work was hard. We would use the wrong expression, and there would be miscommunications, and that made it hard to form friendships. Plus, we didn’t play or watch much sport, and that is a big part of Australian culture. The majority of the people we met or had to deal with for business were really nice and very helpful, but the culture is so different. And the way Australians think is different. It was a real challenge. However, we persevered and today Sydney is home. Tomorrow... I don’t know? My mum and my sister live in Macau. Maybe, if communism was no more, then maybe we would move back to China. With my daughter in New York and my mum and sister in China (my dad passed away), I have learnt to have quality time with family. It may not be quantity, but when we are together I make the most of it. I recently (and suddenly) lost my dad and that was a shock. It really made me determined to make an effort to have that valuable time with my family back in China. I treasure what I have. Losing my dad has taught me this… we only have TODAY. Everything that has passed has passed. Let it go. Tomorrow, I ignore. I do what I can to make the most of today. You have a daughter and a son. What is one piece of advice you have given them both? Cinderella is one of our favourite movies. And I tell them to be like Cinderella - be kind and have courage. Have the courage and conviction to stand up for your beliefs and do what

you know is right in your heart. Many people don’t have the courage to say no! What new skill are you mastering? I’m always learning and taking courses. I’m currently learning Instagram to help grow the NewLand brand online, as well as SEO for our website. I really want to learn photography. I want to master that, but more for fun than work. I’m also taking golf lessons with a pro for exercise and for relaxation, although I find it quite frustrating! (laughs) What has been the hardest lesson you’ve learnt? When Harvey Norman and Domayne decided to go direct to importers. We had all our eggs in one basket and weren’t prepared to lose those accounts. And we did. We got too proud and complacent. They constantly told us and our team how excellent we were. We were hitting all of our KPIs. They said we were the best and we got over-confident. But when they decided to go direct, they took a large chunk of our business. We hadn’t given enough focus to our smaller retailers. Luckily we survived, but it was hard. But as they say, hard lessons are tough... or something like that (laughs again).

Your biological age is an entirely different matter. You have the power to peel away months, even years, from your body so that your appearance matches the particular age you decide to adopt. When you do tell all (that you’re prepared to admit), even those who know you well won’t think to question your veracity. The most important factors involved in holding back biological ageing are keeping your arteries young and building a strong immune system. The following dietary and lifestyle changes will help achieve both objectives, while also taking into account the range of factors outside our bodies that have an equally powerful influence on physical and emotional health: •

Smoking kills. Even if it doesn’t kill you, it ages every part of your body. So quit. The biological age of a heavy smoker is up to 12 years greater than someone who has never smoked. Go easy on alcohol. A glass or two of red wine each day can be beneficial, but any more can set the stage for hypertension, strokes and damage to the heart muscle, leading to congestive heart failure. The biological age of a 55-year-old who has 3-6 alcoholic drinks per day is up to 5 years greater than someone who only drinks one per day. Exercise regularly. Keep your weight within the correct range for your height Fresh fruit and vegetables contain hundreds of disease-preventing phytochemicals and are rich sources of vitamins, minerals and fibre. Make them the main part of your diet to reduce your biological age by one year. Eat 9 half-cup servings per day, chosen from across the colour spectrum. Whether it’s bread, pasta, rice or other grains, use wholegrain. Limit your intake of red meat, salt, sugar and caffeine. Go with the good oils like olive and safflower. Limit your intake of saturated fat (ie. any fat of

animal origin). Skip margarine completely because of the dangerous trans fats that are formed when unsaturated fats are hydrogenated to make them solid at room temperature. Studies show that the more trans fats a person consumes, the faster the cardiovascular system ages. Take nutritional supplements. Antioxidant and free radical fighting vitamin C and the heart healthy vitamin E are the most important. Take 1,000 mg of vitamin C and 400 mg of vitamin E. These vitamins work synergistically, empowering the other to do a more effective job. Taking these vitamins regularly can reduce your biological age by up to 3 years. Use natural vitamin E with mixed tocopherols and vitamin C combined with flavonoids for optimum results. Another important supplement is folic acid, or folate. 400 micrograms of this B vitamin every day helps reduce the level of homocysteine in your blood. A clear link exists between high homocysteine levels and arterial ageing. A similar link exists between high folate levels and arterial health. By supplementing with folate every day for 3 months, you can reduce your biological age by up to 3 years. Keep your bones young by getting plenty of calcium. Low fat dairy products are an excellent source, as is broccoli. In China, women

use bone soups. Slowly simmer a whole (preferably organic) chicken in water for 3 hours with one tablespoon of lemon juice to help extract the calcium. Strain, skim and use as a base for soups. Also take a daily 1,000 mg calcium supplement. Reduce your exposure to environmental toxins. Install water filters on taps, buy organic produce, use environmentally friendly laundry products and cleaners, and use natural pest control methods. Learn to deal with the greatest ager of all – stress, including financial and job stress. Become a life-long learner. Going to school actually makes you younger, and it certainly keeps the brain younger. Regular sex with a caring partner takes years off your biological age. Get a good night’s sleep every night. Your body needs time to rest and regenerate. Develop a supportive circle of friends - people who nourish your soul and are a pleasure to be with.

YOUR SKIN’S AGE Test your skin’s age by pinching the back of your hand. If it springs back quickly, it’s in great condition. The longer it takes to return, the poorer its condition. Sun is the greatest cause of skin ageing. Slather sunscreen on whenever you are outdoors. But remember, 81


shrink. Avoid pulling or tugging your hair, which aggravates the loss. The herb horsetail is wonderful for the hair and the skin. There’s some wonderful hair products available now to strengthen hair too!

sunlight is not completely evil. It is essential for producing vitamin D, which helps the absorption of calcium, and is also necessary for eye health. So make a point of spending 10-15 minutes in the sun each morning, without sunscreen. Free radicals damage the skin by destroying the membranes encasing skin cells and by accelerating the breakdown of the skin’s underlying support structures - the collagen and elastin fibres. When this support weakens, the skin starts to slacken and sag. Vitamin C taken internally stimulates the production of collagen. Vitamin E fights free radicals on the skin’s surface, as well as internally. (Test first on your inner elbow for reactions).

TEETHING TROUBLES

Adults are more vulnerable to root cavities. From around the age of 35, receding gums expose a portion of the tooth not coated with protective enamel. In time, teeth become loose, which can lead to extraction. Here’s what to do to keep your teeth: • Visit the dentist twice a year for a checkup and clean • Brush your teeth 2-3 times a day for about 3 minutes • Floss daily and carry a supply of toothpicks to use after meals • Use anti-plaque toothpaste • Avoid whiteners containing peroxide, which is bad for the enamel • •Receding gums cause sensitivity to hot and cold by exposing dentine - the layer under tooth enamel, so periodically use toothpaste for sensitive gums, which takes about 2 weeks to coat or desensitise the dentine

YOUR CROWNING GLORY Gum disease affects 95% of adults. It is caused by the build-up of plaque around the gum line. Inflammation of the gums can lead to loosened teeth and bone loss.

Hair loss in women usually starts around menopause. It tends to gradual, starting above the temples, or else thinning all over as hair follicles

Diseases such as cataracts, macular degeneration and glaucoma can strike as you get older. Have your eyes tested annually by an optometrist, who will check for disease. Don’t smoke and stay away from second hand cigarette smoke. Eat plenty of fruits and vegetables for their antioxidants and carotenes (the substances responsible for their colour). Lutein, found in corn, has been found to guard against macular degeneration. Supplements of vitamins C and E will offer additional support in preventing eye disease. The herb bilberry strengthens the vessels around the eyes. For those who spend their days working on a computer, standardised liquid bilberry extract relieves eyestrain and also protects against glaucoma and macular degeneration. With age, you may find that your arms suddenly get shorter and you just can’t seem to hold your book far enough away to read it!

WAIST-TO-HIP RATIO The apple-shaped body, where fat settles around the middle rather than on the hips, is dangerous for both men and women. Belly fat in both sexes has been linked with cardiovascular disease, hypertension, elevated cholesterol and triglycerides, diabetes and, in women, endometrial and ovarian cancers. This simple test helps assess the risks in your shape. Measure your waist and your hips at their widest point, then divide the waist measurement by the hip measurement. Say your waist is 64 cm and your hips are 92 cm. 64 divided by 92 gives a ratio of 0.7. Because women’s hips are usually wider than men’s, their ratios will be lower. Men should have a ratio of 0.9 or less, while women should have a ratio of 0.8 or less.

This focus on scent’s powerful connection to our brains and its potential to heal, soothe and delight is “making consumers hungry to learn more about how it can be leveraged for health and wellbeing,” says Matthias Tabert of International Flavors & Fragrances (IFF), a leading innovator of scent. Of course, the concept of aromatherapy, or using scent to treat disease, is a centuries-old practice. However, what’s old is new again thanks to huge leaps in technology, fragrance development and neuroscience studies, including new formulations; cleaner and greener ingredients; and more sciencebased research encouraging medical professionals, health insurers and skeptical consumers to take another look at this age-old treatment. Companies like Aeroscena, based in Cleveland Clinic’s Innovations Lab, are literally redefining and relabeling aromatherapy. The company has trademarked the term “phyto-inhalants™” to describe its line of plant-based aromatherapeutics formulated to specifically treat health symptoms, such as pain, nausea and anxiety. The company, which boasts a medical advisory board that includes the likes of Dr. Michael F. Roizen, chief wellness officer of the Cleveland Clinic, is pioneering the concept of clinical aromatherapy in the US (other countries have been more open to aromatherapy’s use). Founder Mark Kohoot says they are bringing legitimacy to aromatherapy’s folklore through large-scale medical studies that provide evidence-based proof that scent can stifle pain (a study is currently happening with patients receiving knee replacements), improve sleep, alleviate morning sickness, and relieve anxiety. In the US, insurance companies won’t cover natural remedies without FDA approval; a hurdle Aeroscena is working to overcome in its quest to bring clinical aromatherapy to market. Aromatherapy 2.0 ticks all the boxes today’s consumers care about, including 100 percent

natural ingredients, transparency, sustainability and evidence-based results. And the natural essential oil market is expected to grow at a rapid pace, reaching $13 billion in 2024 thanks, in part, to an aging population looking for natural solutions to combat what ails them as well as a growing demand for natural essential oils in beauty products.

MENTAL WELLNESS Because the brain hatches memories in conjunction with smell, it’s been discovered that scent can play a healing role for people suffering from neurological disorders, such as dementia or Alzheimer’s disease. Interestingly, scent is featured both in the diagnosis of Alzheimer’s— losing the sense of smell is often an early symptom of the disease—and in its treatment: Scent therapy can help ground and comfort people with short-term memory loss by triggering positive memories from their past. For example, a New York nursing home partnered with scent innovators at IFF to create a “memory” kiosk called “Scents of the Game,” featuring six distinct scents that can be found at a baseball game with the goal of triggering long-forgotten memories for residents with Alzheimer’s disease or dementia. Smelling a hot dog, baseball mitt or popcorn not only connects them to the joy they felt

visiting Yankee Stadium in their youth, but this sensory therapy also serves to stimulate their minds and gives them a reprieve from the disorientation they feel in their daily lives.

SCENT AS FLAVOR “Eighty percent of what we taste is what we smell,” says Karen Stanton, Director of Global Marketing & Branding for Taste, IFF. It makes you imagine a world where scent can create no-calorie eating and drinking experiences. One real-world example of this comes from SZENT, a company that has developed water bottles featuring collars infused with natural oils that, as you smell them, turn plain, zero calorie drinking water into something else entirely. “Flavors” include tangerine, tropical, pineapple, mint and passionfruit and are available on Amazon right now. In Singapore, an innovative bar and restaurant called the Tippling Club has patrons choose their drink by scent instead of reading menus. Taking SZENT’s concept to the next level, imagine alcohol-free cocktails based purely on the smell…no hangover, no guilt—all wellness.

SCENT IN BRANDING Using scent commercially clearly isn’t necessarily a new phenomenon— hotels, spas and retailers have 85


as a differentiator, and new properties, such as Anantara Quy Nhon Villas in Vietnam and the just-opened Fendi hotel in Rome (Fondazione Alda Fendi Esperimenti), are taking the luxury of scent to another level by letting guests personalise their room’s aroma from a scent menu. Just as intriguing is a new deeper focus on the “bottling” of the scent of a place, allowing you to take home that “holiday” feeling or the relaxation from your last spa visit in the form of a candle or skin-care product. With the scent of your recent vacation wafting through your home or office, your mind and body are transported back to a state of relaxation. Scent’s ability to transport us to other places is used to great effect in multisensory experiences in spas that are designed to chill us out and calm us down. From experience showers to multisensory pods to float tanks, spas are deploying scent to trigger subtle changes in our bodies, such as lowering heart rate and blood pressure, improving breath, and triggering positive memories for stress reduction. been aware of its ability to tap into consumers’ brains for years. What is different is a growing acceptance that “olfactory logos” are a must to complete a brand’s identity. Fun olfactory logo fact: In 2018, Hasbro (US) patented the “scent of childhood” by winning a trademark for its iconic scent of Play-Doh (one of only 13 scent trademarks ever issued by the US Patent and Trademark Office). There is an exploding industry of scent specialists vying for a brand’s marketing dollars to create signature scents as businesses big and small recognise that smell registers in our brains first—before sight, sound or touch. The goal is to either get you to buy more, stay longer, or come back. It appears to be money well spent: Studies show that consumers have a much better experience and are likely to stay somewhere longer and spend more money if the experience includes scent. In fact, shoppers tend to stay 15 minutes longer in locations that are pleasantly scented, and that translates into spending.

Advancement in scent technology will start impacting product development in interesting ways. For example, studies show that the longer women can smell their hair-care products, the more likely they are to stay loyal to them. Don’t be surprised if scent scientists develop some way to layer time-released beads of scent into personal care products so that users can get a whiff of that “just washed” smell all day long. Another hair-care innovation comes from HAI Beauty Concepts, which launched a new line of blow dryers that infuses every blow out with the sweet scent of jasmine (with more scents to come).

SCENT OF A PLACE Unsurprisingly, the hospitality industry was among the first to register the impact scent can make on brand loyalty. If you’re a frequent traveler, signature scents are likely the reason you feel more at home at a Westin versus a Marriot hotel. Boutique hotels have smartly gravitated toward scent

SCENT EXPLORED IN ART Ambitious multisensory art exhibits that focus on the sense of smell are helping us come to a greater understanding about the role aromas have in shaping our perceptions. Polymorf, a Dutch design collective, created an award-winning art installation entitled Famous Deaths, which seeks to recreate the last breaths of famous people, such as JFK and Whitney Houston. And a recent New York exhibition entitled Avant-Garde explored how scent can create richer experiences. One installation, Dialect for a New Era, partnered a perfumer and a linguist to explore the notion of expanding language beyond words by associating signature scents with them. For example, push a button for the “collective moment of déjà vu,” and you’ll get a whiff of birthday cake. Valeur Absolue’s Harmonie line is infused with ingredients designed to soothe, nurture or inspire passion, including the scent of Areaumat


perpetua, a natural extract linked to the release of feel-good endorphins.

FUNCTIONAL FRAGRANCES “The future of fragrance will be using scent to ‘biohack’ our brains and bodies to perform better,” says Sputnik’s DeLuca. For example, researchers at Stevens Institute of Technology revealed that the scent of coffee alone might help people perform analytical tasks better, suggesting a placebo-like effect of caffeine. Don’t be surprised if the pleasant aroma of coffee brewing permeates your workspace in the near future! The Nue Co, a UK natural supplement company, has created the first anti-stress supplement that can be worn as a fragrance. Dubbed “Functional Fragrance,” the new scent is unisex and was developed using data insight and research into the connection between cognitive function and the olfactory system. The research of scent’s impact on learning and cognition will flourish over the next few years. Already, studies of rosemary’s effect on cognition indicate that being exposed to the aroma helps people perform mental tasks faster and more accurately. And, a positive side effect is the feel-good factor of aromatherapy: The subjects’ moods improved with exposure to the rosemary aroma.

SCENT IN THE WORKPLACE Using aroma in workplaces as an invisible mood enhancer—both for employee satisfaction and productivity—is on the rise. A Japanese company found that while lavender and jasmine soothed employees, diffusing a lemon scent was able to increase their productivity by 54 percent. Rachel S. Herz, assistant professor of psychology at Brown University, writes that people who work in the presence of pleasantsmelling air set higher goals and are more likely to employ efficient work strategies. People are more creative in problem-solving when exposed to a pleasant scent.

Swiss perfumer Valeur Absolue has added a new wellness dimension to its fragrances, infusing them with ingredients designed to soothe, nurture or inspire passion. They are using what could be called the “stealth” scent of Areaumat perpetua, a natural extract of the flower that is linked to the release in the body of feel-good endorphins. You can’t consciously smell it, but it stays at work in the background. In addition, Valeur Abosolue’s Harmonie line fuses ingredients, such as neroli and Earl Grey tea, vanilla and woody notes, to soothe and calm and adds another touch of wellness in the form of semiprecious stones resting at the base of the bottle to shake in before you spray. Feel-good fragrances abound in this new world of scent. Simple pleasures in the form of the scent of crackling fires, flannel shirts, and unfiltered smells of the forest bring us back to “real” life wherever we are. Though comforting, they are complex—such as D.S. & Durga (US) Amber Kiso, which co-founder David Moltz described in a New York Times article as “an oldworld base of vanilla and myrrh and holy Japanese woods, like hinoki and maple, the kind that ritual samurai would rub on their blades.” Another upstart brand, Heretic, has created a liquid version of the traditional sage smudge stick, designed to “combat stale or negative energy.” The perfume leads with white sage combined with juniper and violet leaf to create a heady blend that calms and soothes.

Swedish brand Byredo’s understated scented candles and perfumes are inspired by founder and artist Ben Gorham’s recreations of people and places. “Black Saffron” recalls the smells, tastes and colors of his

A study by Scotland’s University of Stirling found that people choose fragrances that complement their natural scents, indicating that we instinctively choose a scent to work in tandem with our individual body odor and pheromones. An example of this comes in the form of Glossier You, a “skin smell enhancer” that is billed as the ultimate personal fragrance in that the major ingredient is the smell of your own skin, which is enhanced with subtle base notes. “One of the clearest signs of wellness and attractiveness is having a really great personal scent. When we’re at our healthiest, our bodies emit a certain scent—one that attracts a mate at an instinctual level—and, when you’re sick or unwell, you’ll smell completely different,” said DeLuca of Sputnik. “Bottling the ‘scent of self’ will be the luxury fragrance of the future.” The vast array of androgynous and disruptive scents hitting the market is also part of the personalisation craze. We are seeing a massive cultural shift that is being mirrored by scent. Not only did Abercrombie & Fitch do away with the manly smell of Fierce in their stores, but they also replaced it with one of their new gender-neutral scents. This craze toward olfactory experiences that aren’t either “pretty and pink” or “musky and male” is everywhere. Unisex scents are flooding perfume counters everywhere as subtle, intriguing olfactory experiences disrupt not only gender norms but also our expectations of personal fragrance. This new “smart” diffuser by Scentee is controlled by a smartphone so users can change the scent according to their mood—or schedule a bedside diffuser to activate in the morning with an energising aroma.

A long time ago, we bred staunch men - heroes, adventurers, engineers, scientists, rationalists and mathematicians. These men were ‘doers’ not ‘be-ers’. Apart from the few enlightened souls who looked inwards for adventure and conquest, the do-ers looked outwards for lands, wealth and seas to travel. It was a time when men were logical, stern and grounded by material possessions. They provided. Emotions? Forget about emotions. Emotions were for the women, or for those men who were weak. Of course, a few poets and philosophers were granted the right to have emotions, along with the fools of the day, but mostly we wanted men to make things. And to break things. They get up in the morning, slave away all day and return home in silence and internal decay. Waxing lyrical about our feelings has no time or place. For thousands of years, we men have been trained to be stoic. Stiff upper lip. Numb the pain. Don the mask. Hide the emotion. Don’t present on the outside what is felt on the inside. And how has this worked out for us? Well, from my personal experience, and for a lot of men, not great. Yet to give meaning to our lives, or to give quality time to our partner, family or friend, we need to explore our emotions and learn to carefully maneuver the sharp turns, climb the highs and traverse the lows. I spent the majority of my twenties hiding my emotions, my fears, my demons, my angels and anything else that was ’un-manly’. I locked them away in a vault where nobody (especially me) could see or feel. Instead I focused on the hero’s journey, toiling away for the gold at the end of the rainbow. If I could just get this or that, it would be alright. So I accumulated things, built businesses and worked like a galley slave so there were bigger houses, more money in the bank and larger companies. And when I achieved at 30 what I thought I wouldn’t achieve until 65, life came crashing down. And I did what

Layer yogurt, granola, and fruit. Then, sprinkle with flax seed meal or chia seeds. Top with raw honey or stevia.

1 tablespoon coconut oil 2 large eggs 1 cup kale, chopped 1 teaspoon turmeric powder 1 teaspoon garlic powder Sea salt and pepper to taste Heat the coconut oil in a skillet. In a separate bowl, whisk the eggs. Add chopped kale and spices to the skillet. Cook until slightly wilted. Then, add whisked eggs. Sauté until the eggs are firm.

3 tablespoons chia seeds 1 tablespoon shredded coconut 1/2 cup berries 1 cup unsweetened coconut milk Combine all ingredients in a bowl and chill in refrigerator until the chia turns into a pudding consistency, about 20 minutes. Add a scoop of protein powder for an extra boost of energy if you need.

GLUTEN-FREE BANANA FLAX PANCAKES

serves 2 HEALTHY MAPLE NUT GRANOLA

2 cups raw, whole rolled oats 1 cup sliced raw almonds ½ Shredded coconut ¼ cup raw sunflower seeds ¼ cup raw sesame seeds 2 tbsp maple syrup (100% maple syrup, preferably grade-b) 1 tbsp cinnamon 1 tsp coconut oil (aka coconut butter) ¼ tsp vanilla extract 1 large pinch fine sea salt Combine all ingredients in a mixing bowl and mix well with your hands so everything is coated. Don’t worry if the coconut oil is solid, the heat from your hands will met it down. Spread the mixture onto a baking sheet and bake in a moderate oven for 10 minutes, until very lightly toasted. Let it cool and then can be stored in a jar in the fridge (or somewhere cool) for up to 2 weeks. Eat plain, with some berries, a dollop of greek yohurt or a splash of almondmilk - whatever makes your taste buds sing.

Coat a pan with coconut oil or vegan butter. Pour ¼ cup of batter into the pan. Wait until bubbles form before flipping the pancake with a spatula (about 3 minutes). If bubbles don’t form, the pan isn’t hot enough. Flip the pancake and cook until brown
