Let me start off by saying I just love this time of year. I know, I know. There are so many things to love about this season- our sunny beaches, warm weather, fun entertainment, and more, but there’s something about these two, back-to-back months that get me every time. Yes, I’m referring to the first month, in May, when we recognize some amazing moms but then there’s also the time in June when we highlight the heroes in life, our dads. For me, my dad is just that, a hero. I’ve been blessed to have an amazing dad to look up to. He truly has been that person supporting me in every single thing I do while teaching me the importance of stepping outside of my comfort zone. Without my dad’s influence, I wouldn’t be the person I am today, not to mention a die-hard Florida Gator fan. We all know men like this, guys we admire and that are our role models and influencers in life. In fact, we’ve got an entire magazine on some gentlemen in our own community that are just that, so enjoy!

Being mindful of diet and exercise is something many of us take seriously. It takes discipline over time; it’s a lifestyle. Menopause was a game changer, forcing me to pay attention to how I eat. As I’ve said before, my first foray into integrative medicine help was with 17 vials of blood being drawn. But before the results ever came back, I started following the Paleo way of eating. My symptoms began to subside before I ever took any hormones or supplements. And anytime I veer from healthy eating habits, hot flashes, night sweats and fatigue return. I am a firm believer that most diseases, ailments and health issues can be resolved by a change in diet, particularly by eliminating foods that cause inflammation, which is the underlying cause of many chronic health issues. Refined sugar, alcoholic beverages and anything that metabolizes into sugar are significant contributors. Many cancers are fed by glucose. It doesn’t matter how much you work out if the food you’re putting in your body is bad. If you exercise regularly but your body doesn’t ever seem to change and your stamina isn’t what it should be, the answer most likely is in what you’re eating and/or drinking. The proportion of 80 percent what you eat and 20 percent exercise is spot on. Diets don’t work over time; ways of eating do. High protein foods, lean cuts, vegetables, fruits, low carbs, no dairy and no processed foods (this includes all pre-packaged meals), will yield positive results. Change your diet, change your health - for better or worse. Until next time, here’s to healthy living, and remember, you always have choices. ◆

The land of endless hummus and falafel Israel By Alyssa Anelli My boyfriend, Michael Lieberman and I recently flew in to Tel Aviv and had an hour drive to Jerusalem. My first thought when I arrived was, “Wow, this is not what I expected.” I was expecting only desert, and here I was looking at this beautiful land of green mountains! Our first night, we walked down to The First Station, a major downtown center of entertainment, culture and food. We passed many cats along the way; they have an abundance of cats on the streets because the British wanted to fix the city’s rat problem. We had dinner at Abu Shukri Hummus; a selection of traditional Israeli salads, hummus and falafel. It was a great way to start out the trip, and highly recommend it.

Alyssa Anelli at the Holy Fire ceremony in Jerusalem Orthodox tradition holds that the Holy Fire happens annually on the day preceding Orthodox Pascha (Orthodox Easter), in which a blue light emanates within Jesus Christ's tomb (usually rising from the marble slab covering the stone bed believed to be that upon which Jesus' body was placed for burial) now in the Holy Sepulchre, which eventually forms a column containing a form of fire, from which candles are lit, which are then used to light the candles of the clergy and pilgrims in attendance. The fire is also said to spontaneously light other lamps and candles around the church. While the Patriarch is inside the chapel kneeling in front of the stone, there is darkness but far from silence outside. One hears a rather loud mumbling, and the atmosphere is very tense. When the Patriarch comes out with the two candles lit and shining brightly in the darkness, a roar of jubilation resounds in the Church.

The next two days we toured the Old City, immersed in beauty and history. We went through the four quarters in the Old City: the Armenian Quarter, Christian Quarter, Jewish Quarter and the Muslim Quarter. After walking through the Old City and taking it all in, we walked to the Shuk, which is Jerusalem’s market. The streets were overflowing with fresh produce and local restaurants, and at night, our fun truly began. Each produce vendor shut down, the bars opened, and the streets suddenly filled with people mingling throughout the whole Shuk. But the fun wasn’t limited to restaurants and markets. We took a Jeep tour of the Judaean Desert and saw everything from endless mountains to local Bedouins riding donkeys and herding their goats. One of my favorite excursions was our stop at the Mar Saba Monastery, perfectly placed in the walls of the Judaean Hills, where to this day monks still reside. The next day, on our way to the Dead Sea, we took a tour of the Dead Sea Scrolls and then continued our
way to the Dead Sea where we floated effortlessly and coated ourselves in Dead Sea mud, soaking in all of the health benefits we could! It was a beautiful day we’d turn our heads and find ourselves looking at mountains of Jordan. Next, the wineries. I’ve never seen such varied agriculture in my life. From onions and dates to olives and native Israeli fruits, it was quite an experience. We ended up at a goat farm where we ate a platter of cheese and vegetables and, coincidentally, arrived for the birth of a baby goat. True story! On our last day, we took a trip to the Carmel Market in Tel Aviv. With an abundance of fashionable shops and people visiting with friends and family, it is just an all-around great spot.

I grew up in an Italian family where my mom did most of the cooking. She was an exceptional chef who introduced me to the art of cooking from the heart. Would I consider myself someone capable of whipping up a tasty masterpiece in little to no time? You better believe it. After all, my food has never sent anyone to the emergency room with a nasty gallbladder attack, which says a lot. One very important thing that I have learned over the years with cooking is that frozen food can be hazardous to your health. Let me elaborate. A crazy thing happened one night a year ago that changed my mind forever on never freezing anything in a container. After making spaghetti sauce and having some left over, I took a large plastic bowl and poured the sauce into it, placed it in the freezer on the lowest shelf and closed the door. 24 : s pac ec oa st li v i ng

Fast forward one week. Apparently, someone in my family decided to rearrange everything on the main shelf in the freezer, with their eyes closed no doubt, and my beautiful spaghetti sauce was the victim -- hanging by a thread on the top shelf. Of course, I would be the lucky person to open the door next. After all, it was lasagna night, and I was thrilled that my sauce was already made, my glass of Moscato wine was full and I had an easy but delicious meal ahead of me. I opened the freezer door to retrieve the sauce while I was holding my wine glass and suddenly stood still, unable to move. I was watching in disbelief as a large container proceeded to fall out of the freezer, in slow motion I might add, dropping to the ground directly onto my right, bare foot. Amazingly, I still held my glass of wine and never spilled a drop of it!
Long story short, I went to a doctor who took an x-ray and found out that my foot was broken. He asked me how I broke it and I told him spaghetti sauce fell on it. I don’t think he believed me. I had to wear a cast boot for 10 weeks. The silver lining with this was that my husband started cooking more. I think he felt sorry for me and told me that I might want to think up another story on how I broke my foot since he was convinced no one would believe the truth. That night, while I endured an evening of pain, my husband finished cooking and kudos to him for doing a spectacular job. This is a must-have recipe, but for you over-eager planners, just don’t freeze the sauce ahead of time. ◆
Stop Getting Overlooked!

[ Lasagna ]
Ingredients Lasagna noodles (non-boil) 2 jars of spaghetti sauce (your choice) 1 clove of garlic 1 cup of mushrooms 1 teaspoon of Italian seasoning 1 tablespoon of parsley 1 tablespoon of dried basil (preferably a handful of fresh basil) 5 links of mild Italian sausage 32 oz. of grated mozzarella cheese ½ container of grated Parmesan cheese 1 large container of Ricotta cheese
Directions Cook the Italian sausage in a pan making sure to remove the casing. Break the sausage apart into pieces to go into the sauce. In a different sauce pan, sauté mushrooms with a tablespoon of olive oil. Chop garlic clove and add to the mushrooms. Once these are sautéed, add the spaghetti sauce and simmer on low for 1 hour. When the Italian sausage is cooked, drain it and put it into the sauce. Take a clean pan and cook the ground meat, draining it when finished. Add it to the spaghetti sauce and simmer on low for 15 minutes. Coat a 9x11 baking dish with a teaspoon of olive oil. Follow the directions on the lasagna box and layer the noodles, sauce and meat mixture along with plenty of the three cheeses. You will have at least 3-4 layers. Bake in a 350°F oven for about 45 minutes, depending on your oven. When finished, take it out and let it settle for 5-10 minutes on the stove and then enjoy!

by Meaghan Branham Every afternoon is interrupted by a casual torrential downpour, the mosquitoes are unpacking their bags for their seasonal stay, and at last count I have already lost three lip balms and one lipstick to the “my car becomes an inferno around 3 pm and now everything is melting� dilemma that plagues me every year. It all adds up to one thing: we are in the trenches of a Florida summer (also that maybe I should stop leaving makeup in my cup holder). Luckily, this also means beach days, cuter clothes, iced coffee, and road trips, so hope prevails. As someone who has weathered 23 of these seasons, I have come to count on a few things, both for the home and otherwise, to get me through the next three months.

At Home Fabrics:
Around this time of year my survival instinct kicks in and most of my choices begin to be driven by one motivation: staying cool. In order to lessen the risk of spontaneous combustion, I make sure to switch to lighter fabrics. Linen sheets and curtains not only look breezy and effortless, they allow for more airflow and wick away moisture to keep you cool and dry. Bamboo sheets are also a viable option if you prefer a night’s sleep that doesn’t remind you of a sweat lodge.
Scents:
It’s no secret that your sense of smell is the one most closely associated with memory recall, and the scents of summer are especially transporting. Candles, room sprays and diffusers that evoke classic summer scents can conjure the best memories of days on the beach and nights on the front porch. My favorite is honeysuckle, but everything from sea salt and fresh linen, to citrus or coconut, to the smokier smell of a fire pit, might be just what you need to feel like you’re on a getaway.
Greenery:
A vase of pretty flowers is a given around this time of year, but the plants you choose can have an effect on your state of mind in more ways than one. Fresh eucalyptus leaves hung in the shower, where the steam can activate the oils, creates a relaxing and spa-like atmosphere. Planting herbs like basil, oregano and rosemary this time of year is a fragrant, decorative and practical way to add life to a garden or kitchen window.

By Mallorie Ann Ingram Listen up all you winos and foodies. Did you know that Cocoa Beach holds an annual food and wine festival? I didn’t, but immediately decided to give Uncorked Cocoa Beach a try. Little did I know it would certainly become my next inspirational encounter here on the Space Coast. For years, I’ve wanted to visit a unique food and wine festival, but never seemed to live in the right place at the right time. With luck on my side, I happened to stumble across this festival right in my own back yard. Picture this. You approach Alan Shepard Park, Cocoa Beach, and are immediately welcomed by not only the blue skies matching the gorgeous ocean before you, but a giant white tent filled with other food connoisseurs and the aroma of savory dishes, not to mention the sight of numerous wine and craft beer vendors with offerings to pair nicely with your choice of tastings. Let’s be honest. This entire ambiance puts similar events to shame. I’ve heard of other food and wine festivals, but to have your event smack-dab on the sandy beach with an ocean view sets it apart from the rest. For those of you who know me, it’s no secret that the beach is my all-time favorite place to be. Add some wine and killer cuisine and you may have just created the perfect inspirational spot for us like-minded beach-goers. With the festival’s wide selection, I was pleasantly surprised, and even inspired to try new dishes, and concluded that my wine rack at home would soon be housing some new labels I have to call attention to my favorite wine choice of the day. Fancy a glass? It’s a “clean” wine called FitVine, and after one sip of the chardonnay, you can truly taste a refreshing difference. Other fun favorites included tasty sangrias, hard ciders, local craft beers and more. The Big Shave St. Baldrick’s Foundation

Space Coast Conquers is proving to be more than a great name – through community service to support the St. Baldrick’s Foundation and fight childhood cancer.
T
he scene in March was almost historic. Certainly, it was moving, inspirational and effective – with impacts that will change lives and likely even save some of them.
The foundation, a national charity powered by volunteers and donors, has funded more than $234 million in childhood cancer research grants, more than any other organization except the U.S. government.
The event was called Space Coast Conquers @ The Avenue Viera. Most people in Brevard County, though, know it as the Big Shave. And it was a big deal, indeed. Established to raise money for the St. Baldrick’s Foundation, the event witnessed 353 givers – young and older – shaving their heads to support research for childhood cancers. Among the highlights was the presence of VIP children (current and former local cancer patients) and their families, with siblings shaving their heads to become “angels.”
COMMUNITY IMPACT Clearly, the local community is doing its part. In the past eight years, the foundation’s Brevard chapter – Space Coast Conquers – has raised nearly $1.8 million, including approximately $225,000 this spring.

So, while hundreds were losing their hair at lushly landscaped Central Park within The Avenue Viera, a popular open-air shopping destination, significant ground
was being gained in the struggle against a cancer that needs all the help it can get. Consider that across the nation more children are lost to cancer than any other disease. Sadly, before turning the age of 20, one in 285 U.S. children will have cancer, while a child is diagnosed with cancer every two minutes worldwide. That was the backdrop for the event, where ultimately hope reigned. “As always, the Big Shave thrives because of the generosity of our community,” said Michelle Bujold, marketing coordinator of The Avenue Viera, which for the first time served as chair of the foundation’s Brevard chapter. “I might be biased, but St. Baldrick’s Brevard has the best volunteers,

Without a doubt, we could not host this event in any capacity, let alone successfully, without the support of our community.” Notably, by late February a reported 6,500-plus people had registered to shave their heads at more than 700 events nationwide, which totaled nearly $2 million in support. Among all chapters, typically Space Coast Conquers is a top fundraiser. According to Bujold, while the majority of shaving events occur in March, an event can continue to raise money long after it is completed. Such is the case in Brevard, where “a dedicated Facebook page and an online community continues to donate year-round.” In addition, the week prior to the Big Shave saw the return of “Bow Ties & Blue Jeans” casino night, another fundraising event by the local chapter, held at Melbourne BMW. In the end, children are the winners, commented Ann Fairweather, a community relations specialist for Orlando Health, which is a local recipients of donor dollars. Arnold Palmer Hospital for Children, a part of Orlando Health, is especially well-regarded for cancer care on a global scale. “For the past two years, I have been able to see firsthand the impact our services provide to the Brevard community, and it is amazing the support the Brevard community shows for these VIP kids,” Fairweather said. “I look forward to working with St. Baldrick’s and spreading the word on the importance of children’s cancer research.” Marnie Supernaw, a registered pediatric hematology oncology nurse at Orlando Health, agrees. “I know that several of our patients have been treated with new therapies due to the research that was funded by St. Baldrick’s,” Supernaw said, adding that the Brevard community also donates food, water, snacks and toys for the VIP room “year after year.” The hospital room provides comfort as well as a bonding place for cancer patients and families. Much more remains to be done. At St. Baldrick’s alone, of the $34 million needed to fund every grant application that received an outstanding score in June 2017, only $23.5 million was available and granted. Every grant goes through a rigorous scientific review process, ensuring each dollar has the greatest possible impact for children with cancer. In turn, the Brevard community, including The Avenue Viera, has no plans of slowing their commitment, Bujold asserted. “The St. Baldrick’s slogan is ‘conquering childhood cancer,’” Bujold concluded, “and we will continue to aid in that fight as long as we’re able.” ◆

Please do not jeopardize your health by mixing alcohol and at home parties with facial injections. Often you are not saving as much as you think you are. The results will be more variable when you are under the influence. Additionally, safety is compromised. Avoid Groupon specials. If it’s too good to be true, it usually is. Fillers should only be done in a medical office. All offices should have Hylenex or Vitrase on hand in sufficient quantity. These help dissolve filler when needed in case of emergency or urgency.

hat does a firefighter with a military background look like? Cape Canaveral Air Force Station’s Don Whitman comes to mind. Whitman’s Air Force military background took him around the world with life experiences, journeys and endless stories; but at the end of 1999, his life changed. It was then he met the love of his life, Jeanne. They lived in Fort Lauderdale, where Whitman was a firefighter at Fort Lauderdale International Airport, but after the 9/11 attacks, he was faced with a major decision. His reserve unit called and told him to pack his bags for a two-year assignment. “I had never in my life said, ‘no’ to anything the military asked of me because that was the path I’d chosen,” Whitman says. As he watched what it was doing to Jeanne, and having suddenly the option to stand down because he was the last to deploy, he made a life-changing decision. “I looked over at her, there was a dead silence on the phone, and I said, ‘you know what, I’m going to stand down,’ I’m doing this because I’m looking at our future,” Whitman says. It was at this point he realized he was starting the next chapter of his life. Time passed and other doors opened on his career journey; training in aerospace physiology at the University of North Dakota, flying missions and aerial surveillance in Iraq, and so on. “Jeanne and I understood if I kept doing this, we would be apart too much,” Whitman says. So, he decided to take on a role at Cape Canaveral Air Force Station as a firefighter with primary support to space missions. “It never gets old watching rockets go up,” Whitman says. “When the first stage lands, there is a double sonic boom right before touch down that startles me every time.” For the first time in his life, he could be in one place with stability and most importantly, the love of his life. Whitman makes one thing clear when it comes to heroes and fighting for what you believe in. “There are a lot of people that answer the call when opportunities arise to help and be a hero,” Whitman says. “I know that firefighters, police, military, and like can put on a uniform and it’s great. But to me the heroes are the people that are doing it without getting the glory. Our teachers, for instance, are great examples. Even a homeless person can be a hero.” Whitman has the upmost respect for law enforcement, firefighters, nurses, and other leaders, especially when these individuals live their lives with humility and kindness. Whitman says he has so much to learn still and makes it a point to achieve this daily. “You have to believe that you’re going to put yourself in a position every day to help someone and then just go do it,” Whitman says. ◆ J U N E 2 018 : 39

O
ne of the area’s key influential leaders, Sheriff Wayne Ivey, lives by a simple yet impactful motto, “It takes a community to protect a community.” “It really comes down to this,” Ivey says. “When you realize you have been given the honor to serve as Sheriff of a community, you also get the opportunity to be involved with many other different aspects of helping the community.” Ivey expresses that it’s not his actions as the Sheriff that protect the community, but instead it’s the BCSO Team who are out there each and every day. “I am surrounded by an amazing team and I’m smart enough to stay out of their way,” Ivey says. “Take the crime ratewe’ve dropped it by almost 20 percent, that’s huge.” One of the biggest accomplishments highlighted in the community are the wellknown efforts made by Sheriff Ivey and his team with animal control. At the time the Sheriff ’s Office took over Animal Services, the live release rate was at 55 percent, an amount that Ivey says is depressing to even think about. “I love animals,” Ivey says. “I wanted to take over animal control because it was the right thing to do and I knew we could make a difference in the lives of animals.” Ivey’s task was to find the right team of individuals to create a no-kill facility within two years. “In order to be classified as “No Kill” you have to maintain a live release of 90% annually,” Ivey says. Many people told Ivey this couldn’t be done but once again, this didn’t stop him. He recognized the importance of this to people in the community and of course, the animals, so he did what he does best. “I picked the right team to get in there, and in 18 months, we achieved no kill status,” Ivey says. “It goes back to that mindset that it takes a community to protect a community.” Today, the team is asked to travel around the country to teach other shelters how to achieve no-kill status. Ivey isn’t just an average sheriff, he’s a leader practicing humility and recognizing what matters most to individuals in our community. ◆

or nearly 22 years, Desmond Blackburn has dedicated his career to the school system and since the summer of 2015, he has been the Superintendent of Brevard County Schools. Blackburn’s journey began as a young child when his parents chose to take advantage of the economic boom and put him and a sister in a moving truck heading south with nothing but a prayer. “My father always said that it was the best decision he could have done for our family,” Blackburn says. This opportunity not only opened the door for Blackburn’s future of success, but it also taught him to recognize the importance of growth, family, and practicing humility along the way. “The people in this community truly value what public education can do,” Blackburn says. “Of course, this creates a high expectation for those of us that work for the school system, but there’s no way we could perform as well as we do without that belief across this region.” Blackburn gives credit to his team and support of individuals in the community. He describes his role as
someone who must understand the wants of this community, where this region wants to go and succeed. “Having my ears wide open and hearing the passions of these people is what I live by,” Blackburn says. With the strong presence of various corporations, a thriving school system, nearby cities, and phenomenal communities for individuals to live in, it’s no surprise this area is booming. “Brevard County has been one of the best-known secrets in the south,” Blackburn says. “I would say though that it is becoming more well known as a place to live, learn, work, and play.” As SpaceCoast Living went to press, we learned that Superintendent of Brevard Public Schools, Desmond Blackburn is resigning after three years to become chief executive officer of a California-based nonprofit education organization, New Teacher Center. Founded in 1998, the organization is "dedicated to improving student learning by guiding a new generation of educators." familiar face and long-time resident of our Space Coast region is that of Paul Joyal, owner of Joyal Homes. For many years, he has not only been serving the community but he has spent time building a successful, large family, with three grown children, five grandchildren and two great-grandchildren. “My two brothers and I started in probably the worst recession of this area, back in 1974, but we still made it,” Joyal says. Thanks to their giant support system, this family business stayed strong and persevered. For the past 44 years, they have been building custom homes for people to enjoy in the area. How did his journey begin? He started out in the aerospace industry, much like others in the community, but then felt it was time for a change. “I knew the space program here in Brevard would be changing so I decided to go into business with my two brothers,” Joyal says. “They were both carpenters and builders so we put our talents together for good use.” What does Joyal attribute his success to over the years, especially with this ever-changing community? It’s simple. “We never get over-extended,” Joyal says. “We were strong enough to overcome challenges along the way but we always lived by this mindset and maintaining a strong organization with qualified contributing employees.” Joyal comes from a long line of hard workers. He says it’s also critical to make time for family, friends, and most importantly, Florida Gator football. ◆ Currently, Joyal Homes is building in the luxury community of Valencia of Addison Village in Viera (prices starting in the mid $600’s) and in the southern living home style community of Aurora Woods in Melbourne (prices starting in the high $400’s). When you and your wife found out you were pregnant, what was the very first thought that went through your head? “Honestly, I didn't believe those pregnancy test + or - symbols so I had her go get one of those digital "pregnant/not pregnant" tests instead.” Do you have a gut feeling if it’s a boy or a girl? “We both think it's a boy. Not sure why but we will be surprised if we have a girl. We've got two names for if the baby is a girl and two for a boy, but Tasha keeps adding more boy names to the list.”
It’s always fun to hear from fathers about their experiences and memories throughout life with their kids, but what about the expecting dads that haven’t quite yet kicked off this life-changing adventure? Expecting parents Nevin and Tasha Flinchbaugh (Nevin is our SpaceCoast Business Magazine Art Director) are about to find out and are bursting at the seams with joy and excitement. Are you already planning the baby’s future with sports, school, and the like? “With us being huge Disney fans, I'm sure that will play into it. The poor thing will grow up liking the Detroit Lions (Tasha's team), but they will also be an Eagles fan too so there is hope.” Let’s talk about research. Are you a fan of reading books about this, asking others, or just winging it? “We've asked some friends who have just recently had kids of their own but really, aside from the doctor's recommendations we have been winging it. People have been doing this since the dawn of time so I'm sure we'll figure it out. Besides, you'll get 1,000 different bits of advice and half the time they will contradict each other so..."
How did both sides of the family react to the news? A few days before we found out we were having a baby, Tasha's dad had a massive stroke and a heart attack so we told him early on and it seemed to encourage him to push through and turn the corner for recovery. My entire family lives in Pennsylvania, so on Easter while they were all together we had my cousin hide a bun in the oven and sent my mom and dad to go into the kitchen and look in the oven while we called on Facetime with them. They were definitely excited.
What’s it been like so far having a pregnant wife? “The first trimester Tasha was nauseous a lot so that was hard. It stunk for her for obvious reasons but it was hard for me not being able to do anything to help her feel better. She has started feeling better so that has been a blessing.” What are a couple of must-haves that you can’t wait to experience with your baby? “We definitely want to take our child to zoos and aquariums so they can learn all about the amazing animals out there. That’s something we are looking forward to. Aside from that probably watching Back to the Future with my child for the first time like I did growing up with my dad.” ◆ J U N E 2 018 : 45

In many towns, the hierarchy goes like this; mayor, revered pastor or priest, police chief, football coach. And it isn’t always in that order. Viera is a little different; we don’t have our own mayor (we’re considered unincorporated Brevard), we have many awesome pastors and priests, and our police chief belongs to the county. But we do have our own football coach. So, what is a community to do when that popular coach and community icon takes a new position a couple of counties away? Viera High chose to turn to his best friend, who just happened to be coaching right alongside him. To say Coach Derek Smith has stepped into Coach Kevin Mays’ shoes isn’t really accurate -- Smith was the other shoe in that pair all along.
football coach at Bayside, it was a no brainer; Mays was Smith’s first call. “We took a struggling Bayside football program and turned it into a state contender. We even raised the team GPA by a half point.”
So, Viera football faithful, rest easy; Smith has this down. “It really wasn't much of a change to be honest with you, because the fact is, I grew up with Kevin,” Smith explains. “We have been buddies since the 5th grade, playing basketball together. That's how we met through youth sports.”
Smith says, “Coming here, I realized that we have a great administration, athletics, and remarkable parental and community involvement. The student body here supports athletics tremendously. The student culture is very positive, as is the educational culture. The players here expect to be student athletes, not athletes who go to school.”
Appropriately, their roles have flipped from time to time. Smith says, “Mays worked for me at one point, but it was the same relationship as me working for him. As a head coach, I knew there was a whole part of the team I didn't have to worry about because I completely trusted everything he was going to do.” Smith continued, “We had always talked about how we were going to take over a team one day. It was never me or him. We knew the other was going to go with whoever got the first call.” When Smith had the opportunity to be the athletic director and head
Faced with a health crisis in his family, Smith decided to take a year away from coaching. “I needed to focus on my family. We focus so much on our extended football family, that we sometimes neglect our immediate family.” Toward the end of that year, Mays became head coach at Viera High and reached out to Smith to be his right hand. “At the time, my son was in elementary school and my daughter was in 8th grade. From an educational standpoint, Viera offered us great potential, and education is the best investment we could ever make in our children.”
Smith moved to Viera a few weeks ago. “To be able to walk out my door and be five minutes from The Avenue and know that my kids are driving a golf cart to their friends’ homes and not getting on I-95, it's awesome. One of my coaches said he was stopped at Walmart by an older gentleman who showed him his Hawks shirt and said, ‘We love having you in the community.’ It makes you feel that small town atmosphere, even though we're a large school. It's great to be part of all of this.” ◆

Meet FRANK DECOSTA Frank Decosta served in the Marine Corps for 5 years. One of the greatest lessons he learned as a Marine is to always do it right the first time. Frank spent time in the Far East, Kuwait, Saudi Arabia, and went over the Equator a few times. He was a part of the Liberation of Kuwait. Frank was a sniper and is very private about his military accomplishments, but what we do know is he is a big teddy bear with a sparkling personality and a contagious sense of humor. He has worked for Toyota of Melbourne for 5 years and is our Used Car Technician. He has a tough job and is a hard worker. His favorite part of working at Toyota of Melbourne is the teamwork, which totally makes us blush.

any people around the United States envy Floridians, and with good reason. Florida is a beautiful place with a climate that attracts multitudes of visitors during winter months. No matter where you are in this state, the ocean is never far away. But as most of us here know, there’s also a downside: hurricanes and tropical storms. These immense, whirling masses of storm clouds can wreak devastation on homes across a wide swath. When they do, floors can take a particularly severe beating. There are several forms of this devastation. A storm might blow out a window and pepper your floor with a driving rain. Worse still, wind can enter the home through broken windows and blow off the roof from the inside out – leaving your floor and belongings completely exposed to the elements. Another grim scenario is the flooding that can easily swamp a home in a storm’s wake and cause tremendous damage. 60 : s pac ec oa st li v i ng
Water: the enemy
“Water is the mortal enemy of most floors, especially carpeting and natural wood,” said Nelson Green, owner of Great Southeast Flooring America in Melbourne. “After a hurricane passes through our area, it takes a long time before everything is back to normal. We work a lot of hours during those times dealing with all the damage to people’s floors.” Of course, there are precautions a homeowner, tenant or business can take to prevent or minimize the damage. The first is to cover all windows. A lot of people use plywood nailed onto the house’s exterior over the windows, but aluminum hurricane shutters are easy to install and provide maximum resistance against the wind. By keeping the storm’s powerful gusts out of the home’s interior, there’s a better chance that the windows and roof will remain in place. But sometimes there’s little a person can do. Especially when water begins entering the home in earnest.
Flood preparation is key. “It’s important to prepare well ahead of time for emergencies like flooding,” Green said. “June marks the beginning of hurricane season in Florida, and it runs all the way through November. This is a good time to remind people to be aware of the danger and to get ready – not wait until the storm makes landfall and the water starts coming inside.” When flooding is imminent, residents should have electrical appliances unplugged. Valuable family items – such as old photos – should be stashed in waterproof bags and elevated before the water flows indoors. If the flooding is minimal and you’re staying, be sure to stockpile food, drinking water and batteries. Evacuation may be necessary in many cases, and evacuees should be aware of such hazards as downed electrical lines and unnerving creatures swimming in the floodwater – particularly alligators and snakes.

Be sure to have a detailed plan in place with an evacuation route, especially if you live in a flood zone. Strongly consider buying flood insurance – it’s better to have the insurance and not need it than the reverse situation.
After the storm passes…
After the flood subsides, the arduous process of restoration begins. The drying-out process can take many days, even with fans. The destruction wrought by flooding often runs deeper than just visible damage. “Even when flooring dries out and looks okay, it still might give you some problems later on,” Green said. “Mold can develop everywhere after a flood. In many floors, it gets into the joints between planks and causes a huge problem for the homeowner.” Some floors do offer exceptional resistance to moisture, Green added. It’s not hurricane-proof – nothing is – but it provides the homeowner with a distinct advantage in the event of spills or rain entering a window.” Severe Florida storms are nothing to take lightly. bout ten years ago, Jeremy Dragon and his family, like many others here, planned a vacation cruise to Jamaica with another family. “When we were booking the cruise, the woman booking us said, ‘I have a cousin who lives in Ocho Rios where you're going. She has a bed and breakfast and runs a ministry called Bread Basket Ministries.’ We all agreed to go meet her instead of doing the normal touristy stuff.”
In preparation for what was now to be a mission trip, Dragon overpacked with supplies. “Our suitcases weighed 80 pounds each. There is no weight limit on baggage on a cruise ship. We got stopped at customs, and for a moment thought we might get detained. But we were finally released, and drove to meet this little woman, born and raised in Jamaica, named Elise. Half of us jumped in one car and half of us jumped up in the other car and I remember thinking, ‘God, what are we doing?’” On that first trip, they painted a house and handed out supplies. Since then, every trip has been a mission trip. When Dragon returned excited, he shared the experience with the staff at Five Star Claims Adjusting, who said, “Jeremy, we want you to start a foundation.” Dragon says, “I didn't know a thing about starting a foundation -- I was still working at The Melting Pot, but we’d just made this amazing mission trip and it was all I wanted to do. printed off a packet about an inch thick, said to fill it out and bring it back to her. She took care of the rest for free, and ‘Live 2 Give’ was created.” Since then, Five Star has supported every mission trip. In ten years, Dragon says that is about twelve trips during which they have either built or assisted in building eight houses. “This last trip, we built two houses. We take families from this area -- mothers, husbands and children --because I think it is important for the family to go together. At most churches, adults can go on mission trips and kids can go on mission trips, but there was nothing for the whole family. Our missions are meant for the entire family to stay together. I want to teach my children these lessons. My daughters get to see dad working and serving, it is not, ‘do as I say,’ it is ‘do as I do.’” Dragon shared stories of getting tools and supplies through customs, and then described a trip. “Once we get through customs, we rent two 12-passenger buses; Lexus of Melbourne sometimes sponsors the buses for us, which is great. We take the buses to The Blue House, which Elise owns. It is her bed and breakfast, and she uses that money to support her ministry, Bread Basket Ministries. Just like that, we start building houses. Some of the men build the houses, while the women and kids hold a Vacation Bible School-like session with crafts for the children in the area. We hire local workers, because we ▶

Volunteers read with the children and become mentors for them. L2G also works locally with the Salvation Army, offering a homeless ministry at Easter to hand out Easter baskets to the homeless with hygiene items and socks. don't want to just come in and build a house and leave, we want the community involved. We buy all our supplies locally in Jamaica, so the economy in the area we're in also benefits. We even buy all of our lunches from different restaurants in the area just to support that local area any way we can. “Elise is our boots on the ground in Jamaica. She already has the houses picked out. We send down money in the beginning to get the foundation done, then we get the bathrooms and the kitchens done and the block structure. Each house is built with a concrete block safe spot to go to if there's a hurricane. Usually by mid-week, we have a community gathering. We bring a projector, put up a screen and show a movie while we feed the whole area. I think this last trip, we fed 120-130 people.” A majority of the funding does come directly from Five Star Claims Adjusting, but there are fundraisers. Dragon says, “We have a network, since we've been doing this for ten years. We have our own foundation; a lot of people donate on a regular basis. He continued: “It would be nice to have funding be more consistent, so we can plan better, but it all falls into place. There are no coincidences with Christ. It is all in His timing. “God calls different people to different areas,” Dragon says. “He sent me to Jamaica, and ever since then, every trip has just been better and better. Even this last trip, we built two houses in eight days. It brings you back to the important things of life. That is learning the meaning of the name, Live 2 Give. I wondered if that by going there I was somehow instantly going to be more local. So, we went, my family and I, and we agree. This is one of the places you must know, and you must go to realize the full potential of your life here in Central Brevard.
It all started in Sebastian.
Underill tells the story: “We started in Sebastian in 1998. I own a marina down there and I was in the process of developing the marina and putting in some restaurants, and found myself a partner in a seafood restaurant. I learned a lot, saw things I liked, saw things I didn't and saw things I wanted to change. That restaurant didn’t make it, and in 2002 I became the owner of an empty restaurant. I was trying to figure out what to do and I felt God telling me one night, ‘Open a restaurant.’ I thought, ‘works for me.’” Squid Lips in Sebastian was born. “We opened the Squid Lips on Pineapple in 2009. We're water-oriented, and guests here can come by boat or car -- it's the perfect location. You can go onto the bar side and there's a stage and a band. You can bring a party of 20 here and sit out over the water. You can come here for a quiet dinner for two and sit in our smaller, romantic dining room. You can do anything here. “We’ve also finished renovations on our location in Cocoa Beach. I’m proud of all three and their place in the communities they serve. Then there is the food…
Underill says, “I grew up here. I spent all my time fishing and surfing and eating lots of seafood. I worked down in that same marina I eventually owned as a kid at a commercial fish house.” There are a lot of ways to cook seafood, and Underill’s recipes are those he’s discovered along the way. “I'd eat something and I'd say, ‘Wow, that's good. I think I can do it a little better.’ Then I'd go back to my house and cook it until my family got sick of it and said they never wanted to see it again. The tough part is to then come in to our restaurant kitchen and break the recipe down so our chefs can prepare it in quantity without losing the quality. “ The results of his efforts are amazing appetizers like blue cheese and balsamic tater chips, bacon-wrapped plantains (in a spicy orange chipotle glaze), crunchy fish fingers and Joe’s conchy chowder. Perfect salads feature seafood toppings like shrimp, mahi-mahi and grouper, and signature entrees include an oakgrilled grouper basted in honey-lime sauce, Cajun seasoning or jerked if you prefer. I’m partial to the lobster-n-crab cake, sautéed. Get two. Try the excellent Caribbean-spiced catch with toasted coconut over a coconut pan sauce. Squid Lips also features a well-stocked raw bar. Takin’ It To the Streets Event Date: Saturday, June 9, 2018 Location: Rockledge Country Club It’s time to start your engines! On Saturday, June 9 at 3 p.m., BAC will wave in drivers from across Brevard to begin a road rally-style scavenger hunt throughout the Space Coast. Participating vehicles will start at the Rockledge Country Club (RCC) then follow the course to Stop One. From that point forward, you’ll be given directions to get to the next stop and beyond. At the end of the hunt, vehicles will return to the RCC for a Checkered Flag Finish and Celebration that begins at 6 p.m. Oh, and did we mention there will be prizes too? Bottoms Up Beer Run Event Date: Saturday, June 9, 2018 Location: Wickham Park The Bottoms Up Beer Run on June 9, from 6 - 9 PM is a fun 4K that combines running (or walking) with homebrew along the way. Brewers from SAAZ (Spacecoast Associates for the Advancement of Zymurgy) will be providing 5 different homebrews for runners to enjoy along the course. Participants (21y/o and up) can consume 4 - 4oz beer shots along the race course and finish with a full beer to celebrate their accomplishment. Those under 21 cannot consume the beer but can still join in the fun. And if running and drinking is not your thing, we will have water along the course as well. The race is professionally timed by the Running Zone so you can race your way through quickly to a personal best or take your time sipping along the way and laugh at how long it took you to do a 4K.

Last Question
In honor of a month dedicated to fathers, we decided to switch things up a bit. Instead of asking one of our most beloved fathers what it’s like being a great dad, we interviewed his son behind the scenes. What has it been like having Eric Wright as a father? Let’s find out!
SCL: Describe your favorite childhood memory with your dad. John William Wright: When I was about 13, my mom suggested I go outside and offer to help my dad, who was mowing the yard. So, I went out and waved him down and he smiled at me warmly and said, okay. He showed me how to operate the mower and illustrated how to turn it at the end of the line, then he gave me the reigns. He watched me push the mower for a couple of passes up and down the line. Satisfied, he left me to it. I beamed with pride. But I’d been set up! The imperative of pushing a heavy box up and down the yard every Saturday morning in the blistering Florida heat was now mine. SCL: What is one of the funniest things about your dad? JWW: His laugh. He has this full, loud laugh that just bursts out of him. I once went to the movies and didn’t know dad was in the same theater as me. But something funny happened in the film and boom, this one distinctive laugh cracked out. So, I asked myself, “Is my Dad in here?” He was. SCL: Go into details about one of your biggest life lessons or decisions that your dad helped you with along the way. JWW: I’ve been married for ten years now. Relationships that long either take a lot of fight or a lot of complacency. I remember meeting with dad once when my wife and I were going through a particularly rough patch. We had breakfast. I’m pretty good at making dad laugh so I danced around the issues for a while, but eventually we got around to it. “You’ll never be sorry for fighting for your marriage,” he said. It doesn’t mean the marriage will work out and it doesn’t mean there will be no heartbreak. It didn’t mean 96 : s pac ec oa st l ivi ng
I was going to prevail. Failure happens all the time. But if I didn’t fight, if I just let it slip or gave up, I’d always be sorry.
SCL: What’s one of the major aspects you learned that you want to carry to your own kids as a dad? JWW: When you’re a kid, your parents are the judge and jury. Dad was always a wise, thoughtful judge. For as long as I can remember, when I asked Dad a question, if he didn’t know the answer, he’d pull out the encyclopedia or dictionary and look it up. Sometimes it’s important to be able to say, “I don’t know.” Too many people can’t admit they don’t know or that they are wrong. Now, if somebody asks a question I don’t know the answer to, I look it up. SCL: Describe a funny story or secret between you and your dad that nobody else knows. JWW: I’m good at making dad laugh. I don’t know if I simply am that funny or if dad is just a good audience but he is always listening. He always wants to hear from me. There’s something about it that gets right back to that feeling of accomplishment and pride you got from your parents when you were a kid. ◆
