LAVISH GETAWAY Selected Enrich Platinum Plus members were treated to a luxurious getaway to Great Britain recently, after similar trips were organised to Paris and Sydney to thank Enrich members who have remained loyal to Malaysia Airlines and have travelled more than 150,000 miles annually. The guests this time were retail entrepreneur Datuk Alfred Cheng; Sherene Azli, Chief Executive Officer of Malaysia Healthcare Travel Council; and managing consultant Vijayaratnam Tharumartnam.The activities were curated around their profiles, keeping in mind that they were no strangers to Great Britain. London Calling After touching down at Heathrow, the guests checked in at the Mayfair Hotel and this was followed by shopping at Harrods. In the evening, they were joined at arguably England’s most haunted building, the Tower of London, by Texan supermodel Jerry Hall for a private tour of the Crown Jewels. Dinner was next, presented in the tower by Michelin-starred celebrity chef Gary Rhodes, who showcased the finest in British seasonal produce. The next day, the guests had champagne brunch with chocolates at nearly 500 feet high at the London Eye catered by the luxurious Hotel Chocolat. The quintessential English tea with scones was had at the Mayfair later, with the day ending at West End for Wicked, the musical. Soaking in Bath Next day after breakfast, the guests went on a shopping expedition to Bicester
Village in Oxford (with over 130 designer labels) on the way to Bath. Thereafter, the recently-launched Gainsborough Bath Spa hotel, developed by Malaysia’s YTL Hotels, welcomed the guests, who enjoyed ancient Roman rituals of well-being in the spa’s thermal pools. In the evening, dinner was hosted by the Gainsborough. The next day saw a tour of the original hot springs site at the Pump Room Restaurant – part of a structure housing an ancient temple as well as the Sacred Springs. Later, a guided tour by a gentleman dressed up in finery from the Regency period, when the author Jane Austen lived here, saw the group savouring a pub lunch and walking across centuries-old cobbled streets through the city’s market, with a stop at Bertie & Jack’s booth for some lovely customised picture frames as souvenirs. The afternoon was spent on a hot air balloon ride over the city, going up to 3,000 feet in the air, before the sojourn in Bath ended with an exclusive event at The Great Bath Feast with Masterchef UK
2014 winner, Malaysian Ping Coombes, who artfully interpreted classic Malaysian dishes for the international palate. The Cotswolds The final leg of the Great British experience was in Gloucestershire in the Cotswolds – famous for its cheese, and home of Charles, Prince of Wales. A brief rest at the charming Greenway Hotel and traditional pub grub at the Royal Oak was followed by a tour of Sudeley Castle and its gardens. On the final morning of the retreat, the guests took in the magnificent views of the countryside in style – in vintage Bentleys and Rolls-Royce – before adjourning to the Ellenborough Park hotel for a farewell lunch. Reflecting on their adventures, Datuk Alfred felt that meeting Jerry Hall was a bonus, and that Ellenborough Park was the kind of place he would return to. Meanwhile, Sherene loved the shopping, the ballooning, and the hard work in putting the itinerary together. This was echoed by Vijay, who appreciated the rewards received as an Enrich member, with his highlight being Gainsborough and the spa’s healing waters. enrich.malaysiaairlines.com

ONBOARD ACTION The crew of flight MH183 from Chennai to Kuala Lumpur late last year was privileged to host a superstar onboard in the form of legendary South Indian action star, Rajinikanth. The actor was in Malaysia to film scenes from his movie Kabaali, shooting in Kuala Lumpur, Sepang and Malacca. Rajinikanth was, of course, given a VIP welcome at the airport with hassle-free immigration and security clearance, and he, in turn, was game enough to pose for photos with the captain, second officer and the crew members.

SPECIAL CARGO MASkargo has once again come to the rescue of critically endangered wildlife by helping to repatriate two infant Sumatran orangutans (pongo abelii) back to their natural habitat in Medan after they were smuggled into Malaysia from Indonesia. The year-old orangutans, Citrawan, a male, and Bobina, a female, will first be quarantined at the Sumatran Orangutan Conservation Programme (SOCP) Centre before returning to the wild. The last repatriation sponsored by MASkargo was in 2013, involving three rescued adult orangutans. Malaysia Airlines is an active member of the IATA Live Animals and Perishables Board.

Legendary contemporary artist Yayoi Kusama brings her vibrant universe to Scandinavia with a comprehensive exhibition at Denmark’s Louisiana Museum of Modern Art. The Museum will host In Infinity, a chronological presentation of Kusama’s impressive oeuvre. The show revolves around her fascination with the concept of infinity, starting with early sketches and ending with pieces from her most recent body of work My Eternal Soul, on which Kusama is still working. Aside from modernist artwork, Kusama is also known for her eccentric fashion design, and a section of the exhibition is dedicated to her collaborative work with fashion houses like Louis Vuitton. TABLE MANNERS Designer Nacho Carbonell transforms tables and chairs from practical objects into fantastical sculptures. “I like to see objects as living organisms,” says Carbonell of the inspiration behind his unique style. “I want to create objects with a fictional or fantasy element that allow you to escape everyday life.” For the Netherlands’ Groninger Museum, Carbonell creates a series of weird and wonderful furnishings that wouldn’t look out of place at a Mad Hatter’s tea party. Sandro Botticelli was one of the most important painters of the Italian Renaissance, and to this day his images are constantly being reinterpreted and reproduced. The Staatliche Museum in Berlin has curated an exhibition that asks what sets Botticelli apart from his peers and what inspires contemporary artists to revisit his images. The Botticelli Renaissance gathers over 50 of the master’s originals and displays them alongside a multitude of interpretations from modern artists, such as Andy Warhol, Cindy Sherman and Bill Viola, thoroughly exploring the timeless quality of Botticelli’s oeuvre. UNDER THE SEA See the Great Barrier Reef without scuba gear or even getting wet at the Panometer in the German city of Leipzig. In 2003, artist Yadegar Asisi began creating the world’s largest panoramas inside the Panometer, a former gasholder, which has since become his studio. The panoramas themselves are created using a ‘modern painting’ method that digitally weaves together thousands of sketches drafted from photographs. Over the next few months, he is presenting the famous reef on a 1:1 ratio, 360 degrees around the curved walls of the Panometer. PAINTING A THOUSAND WORDS Art Stage Singapore has quickly become somewhat of a flagship art expo in Southeast Asia – last year’s fifth instalment drew a whopping 51,000 visitors. For Lorenzo Rudolf, the Founder and President of Art Stage Singapore, the key to creating a thriving arts market is “raising the awareness for contemporary arts and its role in our societies”. oasting a unique charm that never fails to captivate, Cambodia’s second largest city of Battambang is gaining traction with visitors, and it’s easy to see why. In an area that’s home to some of Cambodia’s best-preserved colonial architecture, hilltop temples, a sprawling countryside, and a rich artistic heritage, the compact city preserves authentic Cambodia with traces of modern life shining through. Sitting in northwest Cambodia, the province of Battambang borders Thailand. Dubbed the Rice Bowl of Cambodia with fertile soils and the perfect climate for paddies, Battambang has also earned itself a reputation as the country’s creative hub, with an abundance of artists both young and old setting up base there.

This has led to a flurry of independent galleries, quirky boutiques and historical haunts opening across the city to cater to the growing demand. Throw in a healthy helping of culture, a string of ancient sites, a meandering river, and the country’s only surviving bamboo train, and Battambang is the perfect place to while away the days.
CREATIVE CAPITAL
Historically, Battambang has been the birthplace of many of the country’s most famous artists, musicians and intellectuals, such as 1960s singer Ros Sereysothea and S-21 prison survivor and painter Vann Nath. Although many of Cambodia’s creatives were killed or fled under the Khmer Rouge rule decades ago, the city’s art scene is creeping back to the forefront. “Battambang has always had an artistic feel to it. It breeds and attracts artists, and I hope it will continue to encourage new artists to express themselves,” says Khchao Touch, who has played an instrumental part in the city’s creative movement. Spearheading the push is Phare Ponleu Selpak (PPS), a non-profit Cambodian association that works with vulnerable children, young adults and their families. The seeds for PPS were first sown in 1986 in a refugee camp on the Cambodia-Thai border, when nine children who met during art therapy workshops pledged to return to their homeland to create a group to help children cope with the psychological aftermath of war. In 1994, PPS was born; today it offers under-privileged children free education and training in the arts. It is most famous for its packed daily circus shows, which use spectacular acrobatic feats, juggling and other breath-taking performances to bring traditional Cambodian folktales to life. PPS has spawned a new generation

of artists and contemporary collectives, including Romcheik 5, a shining example of using art as a tool to deal with trauma. It opened in 2012 as four small wooden huts that acted as a studio and living space for young PPS art graduates with no roots or family. Last year, a contemporary space was constructed, housing a gallery featuring exhibitions from local artists and a permanent collection of the collective’s prized pieces. “For the last two or three years, Battambang has seen an increase in individual and cultural tourism primarily due to the growing reputation of the local artists, whose artworks have now reached a level of quality, originality and remarkable diversity,” says Romcheik 5 founder Alain Troulet. The bulk of the thriving art scene can be found in small galleries nestled on quaint Street 2.5, with Lotus, Sammaki and Make Meak being the main attractions.

Buildings to look out for include several on the eastern bank of the Sangkar River, which majestically slices through the town, and an ensemble of more than 800 heritage buildings from the French protectorate between Streets 1 and 3. Highlights include the Vice Governor of Battambang’s House, a pristine building that merges French colonial style with traditional Khmer elements. The Post Office is another example, having been built by the French administration between 1907 and 1926. The city is also home to a series of crumbling relics that hark back to a bygone era – think centuries-old villas, decrepit shop houses with arched windows and ornate balconies, and eerily dilapidated cinema houses. Walking maps can be downloaded at ka-tours.org. A short tuk tuk or motorbike ride out of town brings heaps of rewards. The Bamboo Train is a must, although it’s not for the faint-hearted, with the rickety ride hitting speeds of up to 40 kilometres per hour. Starting from O’Dambong village, the 12-kilometre round trip, which hurtles through the stunning countryside, is taken on a flatbed improvised rail vehicle, also known as a norry. It dates back to the late 1970s, when Cambodians were struggling to rebuild their lives and the country. With roads destroyed, the norry was the perfect way to transport goods and people. Phnom Sampeau, 12 kilometres from the city, is another historical site, with a giant golden Buddha, pristine wats and the notorious Killing Caves, an underground network where victims of
the Khmer Rouge regime were pushed to their deaths. Climb a little farther up the hill for sweeping 360-degree views of the surroundings and head to the base at dusk to watch an almost endless stream of bats leave the caves to hunt for the night.
RURAL ESCAPE
With rich emerald paddies studded with palm sugar trees, shimmering lakes and thick woodland, the province is a shining example of Cambodian countryside at its finest. The beauty of Battambang city lies in how visitors can escape the bustle of urban living by taking a mere five-minute trip out of town. Hiring a motorbike or bicycle is probably the best way to explore the pristine countryside and get a glimpse into authentic Cambodia. Bike tour companies, such as Soksabike, offer half and full-day tours of the province. Alternatively, you can take in the sights from the water by hiring a kayak from Green Orange Kayak. Just a few kilometres outside the city lies the cultural village of Watkor Sangkat with its charming traditional Khmer wooden houses. Here, visitors can discover the Cambodian way of life directly from villagers who are more than happy to take guests on a tour. Another great way to explore the surrounding area is by ox cart – a popular form of transport in rural Cambodia. “Battambang really does have it all,” says Touch, putting the finishing touches to a colourful painting of Buddha. “It is no wonder so many artists are based here.”

he fabled Lake Titicaca is still making headlines. An exciting new excavation project has begun at a buried pyramid in Tiahuanaco on the Bolivian side of the lake, while recent discoveries of mysterious underwater ruins make Titicaca as tantalising as ever, after thousands of years of continuous human presence dating back far beyond the Incas. Keen to probe the lake’s secrets while they remain intact, I start my journey at Puno on the Peruvian side, about 300 kilometres east of Arequipa. Known as the folkloric capital of Peru, it’s an interesting town with grand colonial architecture and hilly vistas. My visit coincides with the Virgen de la Candelaria festival, which takes place in the first two weeks of February. Each evening I watch as dancers wearing traditional costumes and demonic masks proceed to the beat of thundering drums, panpipes and brass, until they reach the giant 18th-century cathedral in the main square. Although dedicated to the city’s patron saint, I
discover that this is far from a sober religious event. Music, dancing and heavy drinking go on until late, and I’m happy to join in. While the festival makes February a tempting time to visit, I do find it chilly (with the occasional torrential downpour to boot). In fact, the air in Puno is always a little fresh, thanks to the town’s lofty mountain location. When I hit Lake Titicaca, which is borne aloft by the mighty Andes, I’m staggered to learn from a local guide that it lies more than 4,000 metres above sea level, making it the highest large lake in the world. It’s also the biggest freshwater lake in South America, and at about three million years old, it’s one of the last ancient lakes in the world. Many settlements and cities have grown around Titicaca over millennia – and to this day there are people living on the lake itself. After a half-hour journey over deep-blue waters, a ferry brings me to one of the several dozen Uros islands. These tiny floating platforms are unique not just for the indigenous people who

greet us in clothes woven with dazzling colours, but for the fact that the islands are manmade. After I step onto the springy surface, one of the chieftains explains how the Uros people use the robust totora reeds found in the shallows of the lake to constantly replace rotten reeds and construct their huts. They also eat the reeds (they taste rather bland, but not unpleasant). The Uros people lead very simple lives; a large family shares a small, dark space, with little in the way of possessions. A simple life was the price to pay for the Uros’ ancestors, who first constructed the reed islands as a means of escaping the powerful clutches of the Colla and Inca peoples. For the Incas, who rose to prominence from the 15th century, Titicaca was bound up with the very creation of Earth. The god Viracocha was believed to have risen from its waters to found the world, directing the sun, moon and stars, before heading to Tiahuanaco to conjure two human beings – the Incas’ Adam and Eve. Local people – the Uros included – still view the lake as sacred, and although the Bolivian government has revealed plans to bring to the surface a 1,500-year-old submerged temple the size of two football pitches, those living in the area oppose any violation of the holy waters. Yet the lake faces a more existential threat. Climate change and population pressure mean that Titicaca is shrinking, said to be by a couple of centimetres every week; authorities have said that water levels are at their lowest in more than 60 years. As for the Uros, having survived the all-conquering Incas, they now face a modern challenge to their way of life: Tourism. Ferries arrive almost unceasingly during my brief visit. One young woman selling beautiful textile-art and hand-crafted ornaments tells me that income from visitors has meant that life is no longer just a struggle for survival, but it’s difficult to tell what the long-term effects will be. From Uros, I continue towards Amantaní, a small island of about nine square kilometres, whose few hundred families are responding to tourism in their own way. Waiting for my fellow passengers and me at the modest harbour – little more than a wooden dock and a couple of poles to tie the boats to – are several women wearing long, bright-red

skirts along with white shirts embroidered with intricate, colourful patterns. Each visitor is welcomed by a different lady, in whose family home they will stay for the evening for a small price. For the rest of the afternoon, which is cool but sunny, I wander the stone paths that vein the island’s undulating green landscape. Apart from a few shops selling essentials, I find it to be a well-preserved fragment of traditional life. From the simple stone temple at Amantaní’s highest point, I’m gifted a glorious view across the lake to the mainland in the distance. I also see that dark clouds are rolling in and beat a retreat back to my homestay before nightfall. Dinner is a basic but tasty quinoa soup with vegetables, eaten in a dirt-floor kitchen. The family is poor and their house beyond rustic, yet they are warm in spite of the difficulty in communicating. Spanish is a foreign language both to me and the islanders, who mainly speak Quechua. In the morning, I board a rickety motorboat steered by a smiley old man over choppy waters back to Puno, from where I then take a bus across the border. The main town on the Bolivian side of Titicaca is Copacabana, a pleasant bohemian spot with plenty of live music and restaurants. It’s not authentically Bolivian, and after a day, I’m desperate to revisit the magic of the lake. Not far from Copacabana is Isla del Sol, considered the home of the Inca sun god Inti. Beyond the two small towns on the north and south sides of the island,
it’s largely undeveloped, with just a few huts studding the rolling green fields, fringed by tall trees and dotted by the odd wayward llama. After following the 200 Inca steps to what’s believed to be a fountain of youth, I stumble upon a solitary house atop a hill. It turns out to be a kind of makeshift restaurant, and I’m welcomed by the kindly matron to one of only two tables amidst the sprawling garden. I dine on grilled fish – caught only that morning, assures the woman – and watch the sun set over nearby Isla de la Luna, home of the goddess Mama Quilla. As the water turns to gold, then pink, and the mountains darken to purple shadows around Lake Titicaca, I feel I’ve found true luxury. I can see why the locals call it sacred.

s a below-the-radar holiday destination, Labuan has everything going for it: Historical sites, pristine sun-kissed beaches, and abundant fresh seafood. These combine into a winning formula for turning the island territory into a paradise for pleasure-seekers in Borneo. With a total area covering 92 square kilometres, Labuan comprises the main island of Labuan and several smaller islands, such as Burung, Daat, Papan, Rusukan Besar and Rusukan Kecil. Located six kilometres off the coast of Malaysia’s eastern Sabah state, it was established as an offshore financial centre in 1990, but money, oil and gas aren’t the only things that make Labuan tick.

First-time visitors can delve into the Federal Territory’s rich history and culture at the Labuan Museum, which details the island’s different transition periods, from the prehistoric era up to the formation of the Labuan Corporation. It also highlights the cultural and economic contributions of the Brunei Malay, Kedayan, KadazanDusun, Chinese and Indian communities in Labuan We were fortunate to meet local historian Willie Teoh. A font of knowledge, Teoh’s deep-seated passion and keen interest in Labuan’s early days and community affairs really help to bring the place’s historical past alive for us through his story-telling and anecdotes. In November each year, High Commission representatives from Commonwealth countries, families of fallen soldiers, and public citizens gather at the Labuan War Memorial Park for Remembrance Day to pay tribute to 3,908 soldiers from Australia, Britain, India, New Zealand and Malaya who died during World War II. Officiated by the Australian government in 1953, the serene memorial park is set with orderly rows of white headstones. Engraved with the name, military rank and age of each soldier, the headstones serve as

a poignant reminder of the heroes’ bravery and sacrifice. From there, head to the Surrender Point Memorial, where in September 1945, the ceremonial end of World War II in Labuan took place when Lieutenant General Masao Baba of the 37th Japanese Army officially surrendered his sword to Australian Major General George Wootten. Just a stone’s throw away stands Peace Park, which features a monument built by the Japanese in the 1970s in memory of those who perished during the war. It also stands as a symbol of peace and hope that the island would never witness such atrocities ever again.

Standing high in Tanjung Kubong is The Chimney, a sturdy 32-metre high rectangular structure that is wholly built from raw red bricks. Well over a century old, it is believed by some local historians to be tied to coal mining activities in Labuan between 1847 and 1911. Others speculate it was meant to be a lighthouse or bell tower. Rent a bicycle and enjoy a leisurely cycling tour through some of Labuan’s tourist attractions, like the International Sea Sports Complex, An’Nur Jamek Mosque and Botanical Garden. n South Korea, finding a vegetarian restaurant can be like searching for a needle in a haystack, even though the country has a long tradition of Buddhist temple cuisine. Grilled meat restaurants, on the other hand, are as widespread as convenience stores and coffee shops. Koreans love to eat out, and although there is a wealth of dining options in major cities, the scene is dominated by grilled meat joints in every neighbourhood, in every village, and on every inhabited island. Foreign visitors can often find one right across the street from their hotel. And yet this type of dining is relatively new in South Korea. As historian Andrei Lankov points out, “In old Korea, meat was a luxury. Middle-aged Koreans still
remember how their parents, born in the early 20th century, were surprised by the sudden proliferation of barbecue restaurants in the 1970s. The idea that an ordinary person could eat meat at a restaurant on a normal weekday was a startling novelty for this generation.” Grilled meat restaurants have become much more than just places to satisfy one’s carnivorous cravings. They’re also important cultural spaces, where people can let go of their inhibitions and forget their worries. Generally, a meal of grilled

meat is a leisurely, drawn-out affair. It takes place not during lunch breaks but after work, while unwinding with friends or colleagues. Dining on grilled meat is a social experience; hungry individuals who turn up alone at a restaurant may be politely turned away! After you’ve gotten settled, you’ll need to consult a menu board on the table or placard on the wall that lists different cuts of meat, accompanying dishes, and drinks. Prices are for a single serving, and a pair of diners must order at least one serving each. Popular options are galbisal (ribs), galmaegisal (skirt steak), chadolbagi (thin-sliced beef brisket), bulgogi (marinated beef or pork), hangjeongsal (pork neck), and, most common of all, samgyeopsal (pork belly). Often, the wisest course of action is to opt for the modeum (sampler) set. The options don’t end here. It’s also easy to find restaurants serving dakgalbi (spicy stirfried chicken) or grilled tripe, chicken feet, duck, or eel. Fringe eateries even offer grilled pheasant or wild boar. All these places are cook-it-yourself establishments, though diners receive a great deal of attention and assistance from the staff. Ravenous patrons sit around a gas range or, in the more old-fashioned places, a stove fuelled by a red-hot charcoal briquette. Side dishes are brought to the table, bottles of beer and soju (distilled rice alcohol) are popped open, and the grilling of meat begins. Soon, the group is using chopsticks to snatch up tender morsels, wrapping them in leafy vegetables along with garlic slices, fermented soybean paste, and other flavourenhancers. With everyone free to choose their own taste combinations, the group ends up happy and satisfied. With thousands of grilled meat restaurants in Seoul alone, diners are spoilt for choice. Atmosphere and mood play a large role, and locals are also extremely discerning about the quality and taste of the meat. The Saemaeul chain is a reliable choice and offers a nostalgic, vintage-style experience. Its name means New Village Movement, a nod to the rural modernisation campaign of the 1970s that changed the complexion of the country. Another stalwart in the scene is Jingogae, which has locations in the heart of Old Seoul and in the shopping area of Dongdaemun. In fast-paced South Korea, restaurants that stand the test of time are often the best, and Jingogae (which means ‘great old treasure’) has been open since 1963. Stepping inside is like entering a different era, a time when going out to eat was like attending a banquet,
and when tasteful decor consisted of calligraphy and ink paintings. The beef served here includes bulgogi and roasted short ribs as well as yukhoe, Korea’s version of steak tartare. Simmered in abundant marinade, the bulgogi is tender, marbled, and deliciously seasoned. The side dishes include artfully wrapped balls of kimchi, filled with chestnut slices, pine nuts, jujube, ginseng, and pollack. “Over the years, our guests have included famous actors and politicians – even Park Geun-hye (the current president),” remarked Park Jeongseop, a waitress who has worked at Jingogae for about 10 years. In recent years, venerable establishments like Jingogae have been joined by a trendy new breed of restaurants that includes Maple Tree House, which serves lamb chops and jumbo-size prawns as well as beef and pork. Another, Sariwon Grilled Beef, has recently opened its ninth location, in the ultramodern D-Tower, in Gwanghwamun, central Seoul. Hostess Yoon Jeong-geum lauded its “fresh, special bulgogi” and deungshim (sirloin), explaining how the founder, originally from North Korea, created the unique accompanying sauce. “Because her husband had diabetes, the founder used an assortment of fruits to make a special sugar-free meatdipping sauce for him,” she said. Another upscale option is Chadoljib, perched along the bend in the road between the multicultural districts of Itaewon and Haebangchon. It offers a sophisticated version of the grilled meat experience, pairing premium cuts of sirloin and thin-sliced brisket with wine. The brick interior is considerably more refined than typical grilled-meat restaurants. Waiter Um Ju-an drew attention to the grilling arrangements – a bowl of red-hot charcoals is brought to each table. The crunchy yet succulent brisket is so tasty that it’s hard to put down your chopsticks. For a more working-class experience, Eunjujeong, in Seoul’s Bangsan Market, is hard to beat. The owner, Kim Jin-suk, is a former ssireum wrestler and insisted on armwrestling us before treating us to a huge feast. Koreans eat grilled meat for strength, he said,
adding that “if you eat meat three times a week, you’ll be strong.” In business for about 30 years, the venue attracts patrons from all over the peninsula. There’s no need for a menu since they only serve grilled pork belly and kimchi jjigae (pork and kimchi stew). He attributes Eunjujeong’s success to the delicious flavour of the food and “the large portions we serve, with unlimited refills of side dishes.” They also offer a cornucopia of fresh, leafy vegetables for meat wraps, and can serve kimchi jjigae minus the pork. For a taste of the Korean countryside, head to Matda Ori, a short walk from Seoul’s most gorgeous palace, Changdeokgung. This grilled duck restaurant has a homely feel, thanks to the fact that the building is a renovated hanok (Korean traditional house), constructed over half a century ago. Run by a mother and daughter who make everything from scratch, including the fermented soybean paste, the restaurant uses oak charcoal for roasting the meat. Aside from grilled duck, they offer smoked duck and whole barbecued duck. “Duck is the healthiest meat, and it helps improve blood circulation,” says Jo Sun-ho, the daughter. “And we offer a wide range of flavours through our side dishes and sujebi soup, which is very refreshing.” Customers from all walks of life are won over by Matda Ori’s warm-hearted service and fresh, hearty fare.

S
etting up a successful Chinese restaurant in a foreign country is tricky, especially in a serious food city like Kuala Lumpur. When Hong Kong-based Chef Alex Au started Pak Loh Chiu Chow Restaurant in Starhill Gallery in 2004, there was no restaurant specialising in Chiu Chow food. The city’s ersatz experience of this cuisine was largely limited to Chiu Chow porridge. While there are overlaps among various Chinese cuisines, there are marked distinctions that can only be discerned by visiting a specialist restaurant. And to understand Chiu Chow cooking, it’s necessary to delve into its history and geography. A prefecture-level city in China’s gastronomy capital of Guangdong province, Chiu Chow lies on a coastline, so seafood is naturally abundant. In earlier times, the locals were not well off, so they had to be innovative to get more mileage out of their food and minimise wastage. “Through methods like poaching, slow-braising and steaming, or pickling, Chiu Chow people were able to extract the natural flavours of ingredients,” Chef Alex explains. I get what he means when our steamed fish arrives wrapped in a ‘wallet’ fashioned out of tai choy (pickled cabbage). The saltiness of the pickled vegetable subtly plays up the savoury notes of the condiments of minced meat and ginger. At the same time, it acts as a layer of protection to seal the moistness and sweetness of the fish. Under Chef Alex’s guidance and curation, Pak Loh Chiu Chow has
cultivated a fan base that appreciates the hallmarks of classical Chiu Chow cooking, including an exquisite balance of delicate flavours without relying on heavy seasonings, as well as a focus on fresh quality ingredients with minimal use of oil. A Hong Kong-born-and-bred Cantonese, Chef Alex discovered his knack for Chiu Chow cooking when a series of unfulfilling jobs led him to apply impulsively for a commis chef position at a restaurant specialising in the cuisine. One day, the head chef, thinking of giving the newbie a hard time, demanded to know why a porcelain spoon is inserted under the steaming plate in preparing Chiu Chow fish. Alex, 16 years old then, said the first thing that popped into his head: “The elevated plate helps conduct heat and gets the fish evenly steamed.” Chuckling, Alex

recalls, “You should have seen the look on his face. But at that moment, something clicked inside. I thought to myself, ‘Chiu Chow cooking has so many fascinating layers. I want to know more.’” Fuelled by his newfound passion, Alex apprenticed under several famous chefs through his early 20s. When he joined Hong Kong’s Pak Loh Chiu Chow restaurant in 1997, he refined his knowledge and skills under Master Chef Chan Tung. At the same time, he learned the ropes of what it takes to run a restaurant and worked his way up the ranks. Still, he largely played bridesmaid to his larger-than-life sifu (teacher), until prominent Malaysian businessman Tan Sri Francis Yeoh walked in and changed his life. An avid fan of Chiu Chow cuisine, Tan Sri Francis talked to Edmund Bui, Pak Loh Chiu Chow’s founder, about setting up a branch in Starhill Gallery’s Feast Village. It would be the institution’s – and Chef Alex’s – first excursion outside Hong Kong. Then barely 30, Chef Alex faced a big challenge on his hands: how could he strike a balance between staying true to a rich culinary tradition with centuries of history, and infusing inventive touches that could distinguish him as a chef befitting his new stature? One way is through new uses for traditional ingredients. Case in point: Chef Alex mixes pumpkin, an ingredient favoured by the Chiu Chow people, into traditionally soy-based tofu, so that its texture is crumbly yet melts in the mouth. For porridge, whose umami relies heavily on the richness of the stock, he uses fish instead of chicken bones, which results in a more delicate flavour. More than a decade on, Pak Loh Chiu Chow has built up a menu – and reputation – that matches up with the original in Hong Kong. Chef Alex’s culinary talents were recognised in 2011 when he and his team won the prestigious Hospitality Asia Platinum Awards for Most Authentic Asian Cuisine Restaurant. This was followed by another hat-trick in the 2013-2015 series when Chef Alex was also awarded Masterchef of Authenticity for Asian Cuisine. The best endorsement of all, though, must be the fact that Tan Sri Francis makes it a weekly ritual to come here for his fix of Chiu Chow porridge. Looking preternaturally youthful for his 40 years, Chef Alex maintains his joie de vivre by drawing his inspiration from everywhere. When he’s not cooking up a

storm, he travels around the country. From dibs on the best Hainanese tea in town (Pudu Market) to how long it takes to drive from Kuala Lumpur to Penang (four hours), he has assimilated so well that his colleagues jokingly call him “half a Malaysian”. His weekend foraging for local specialities isn’t just to feed his stomach; it’s also fodder for his creative soul. “Malaysia has a distinct Chinese culinary culture that’s quite different from China or Hong Kong. For example, the practice of Yee Sang (raw fish salad tossed during Chinese New Year) originated in Southeast Asia (Malaysia and Singapore). Bak kut teh (a meat dish cooked in a claypot of herbal broth) is also unique to this part of the world. Learning new things everyday keeps me excited about my work. I love being a student, whether of life or in cooking.”

We also run clinical trials in Malaysia and do patient screenings together with hospitals to identify patients needing treatment. In developing talent, we have a new programme called B.SMart (Best Sales & Marketing Apprenticeship Training) – a collaboration between Novartis Malaysia, the Ministry of Higher Education and the Malaysian Biotechnology Corporation (BioTechCorp). I have a passion for teaching and really enjoy doing it. And it is really about educating about the industry, where there is a lot of myth about what we do. I find it important that we educate about the reality while at the same time allowing students to ascertain if they want a career in the pharmaceutical industry based on an informed decision. It is a really interactive programme where they can ask any questions to me and my management team from different departments during the lectures at Universiti Kebangsaan Malaysia (UKM), Bangi. At the same time 6:21 PM it is good access to talent for us.
We have internal trainings and crossdivisional rotations for Novartis employees for skills in their departments, and also across departments, providing a broader experience. uluhan keping otak-otak disusun di atas pemanggang. Sambil mengamati kesungguhan Uncle Boon itu, satu persoalan masih bermain di kotak fikiran saya sejak perjalanan dua jam dari Kuala Lumpur ke Muar tadi. Asal-usul otak-otak sering menjadi punca perdebatan di kalangan penduduk di rantau ini, padahal makanan ini bukan sekadar unik di pekan Muar sahaja. Negara-negara jiran seperti Kemboja, Thailand dan Indonesia juga bangga dengan keenakan versi otak-otak masing-masing. Begitu juga di Melaka dan Pulau Pinang. Namun, tiada yang lebih mengagungagungkan snek ini berbanding penduduk Muar. Industri perusahaan otak-otak telah sekian lama menjadi punca pendapatan bagi ratusan pengusaha otak-otak yang memproses makanan ini dari rumah. Salah satu daripada pengusaha ini adalah Tan Boon Suck yang lebih mesra disapa ‘Ah Boon’. Sejak lebih tiga dekad lalu, Ah Boon dan isterinya, Lim Hwee mula mengusahakan perniagaan mereka, Ah Boon Otak Enterprise.
Populariti otak-otak di Muar sesungguhnya tidak dapat disangkal lagi. Muar mendapat nama sempena kedudukan lokasinya di muara sungai. Ini bererti golongan pengusaha otak-otak akan sentiasa diberkati dengan bekalan ikan yang mencukupi. Menurut anak perempuan mereka, Yuen Ling, ikan tenggiri adalah spesis ikan terbaik untuk menghasilkan otakotak disebabkan isinya yang tebal. “Sebaik-baiknya pilih ikan seberat sekilo hingga dua kilo,” ujarnya sambil memberitahu kini sesetengah peniaga juga menambah isi udang bagi mempelbagaikan selera pelanggan. Pokok nipah, untuk membalut otakotak, dengan daunnya yang mampu mencecah panjang sembilan meter, juga biasa ditemui di rantau ini. Kepelbagaian etnik di Muar turut menjadi punca kewujudan aneka sumber rempah-ratus segar berkualiti tinggi. Lazimnya, pembuat otak-otak masing-masing punyai resipi tersendiri. Namun, ramuan wajib yang biasa digunakan dalam kebanyakan resipi otak-otak termasuk cili, serai, halia dan bawang merah. Biarpun kesemua bahan ini mudah diperolehi, keenakan otak-otak banyak bergantung kepada kaedah penyediaannya. Keluarga Tan merupakan sebahagian kecil daripada pengusaha otak-otak masa kini yang masih mengekalkan cara tradisional pembuatan makanan terkemuka itu. Cili-cili kering akan dibasuh dengan air panas terlebih dahulu sebelum dikisar atau dimasak. “Pedih satu badan bila buat proses ini,” ujar Yuen Ling sambil tergelak besar. Cukup cerewet dengan aspek kebersihan, mereka juga memastikan setiap daun nipah dibasuh sebersihbersihnya meskipun daun yang telah dibersihkan dan sedia pakai mudah diperoleh hari ini. Murah dan popular, snek ini biasanya boleh dibeli pada harga kurang daripada USD0.30. Otak-otak tradisional yang dibalut dengan daun nipah seelok-eloknya dijamah dalam tempoh beberapa jam ekoran kandungan santannya yang tidak tahan lama. Seolah-olah membuka hadiah, keseronokan menikmati otak-otak terletak pada cara menanggalkan balutannya. Mula-mula, kokot yang disemat pada kedua-dua hujung pembalutnya ditanggalkan. Seterusnya, lipatan pembalut dibuka dengan cermat dan terus dijamah isinya yang padat dan empuk. Kombinasi aroma, tekstur dan rasanya membangkitkan seluruh deria rasa saya. The spicy fish-based otak-otak has a sentimental spot in Malaysia's culinary culture
W
atching Uncle Boon cook a row of otak-otak sticks over the fire-grill, I contemplate a mystery that nagged me throughout the two-hour drive from Kuala Lumpur to Muar, a town in Malaysia’s southernmost Johor state. The ancestry of otak-otak is a source of regional debate. Cambodia, Thailand and Indonesia boast their own variations, and the dish is also available in other Malaysian states like Malacca and Penang. But no one embraces otak-otak with the fervour of Muarians. The otak-otak industry has spawned hundreds, if not thousands, of home-based manufacturers, such as Tan Boon Suck –better known as Ah Boon –and his wife Lim Hwee, the couple who founded Ah Boon Otak Enterprise more than 30 years ago. There’s no shortage of theories about the otak-otak’s popularity. Muar’s geographical location at the estuary of a river, after which it’s named, means producers can be assured of a steady supply of fish. “The Spanish mackerel, weighing between 1-2 kilogrammes, is deemed the best as the flesh has more bite,” says the couple’s daughter Yuen Ling. In recent times, enterprising locals have added prawns for variation. The attap tree, an unusual palm whose leaves can extend up to nine metres in height, is native to this region as well. Muar’s multi-ethnic population means that quality spices are fresh and easily available. Though recipes vary from chef to chef, chillies, lemongrass, ginger, chilli, onions and shallots are essential in any otak-otak recipe. Much of the otak-otak’s flavour hinges on the methods of preparation. The Tans belong to a diminishing minority who make otak-otak the old-school way, which means preparing every component from scratch, with minimum reliance on machinery. The process begins with the manual filleting of the fish, a job that requires skill, dexterity and practice. The fish is then ground or diced before being mixed with spices. Instead of commercially prepared options, the Tans make the chilli paste themselves so that they can control the freshness. The dried chillies are washed in hot water before they are ground and cooked, a process that leaves “your body stinging from head to toe,” Yuen Ling says with a rueful laugh. Fastidious about hygiene, the Tans clean the attap leaves themselves, even though buying pre-washed ones would be far easier. At less than USD0.30 per stick, otak-otak is an inexpensive and fast-moving snack. Because of the coconut milk content, however, traditional otak-otak wrapped in attap leaves could not keep longer than several hours. In the early 1980s, the Tans experimented with packaging the otak-otak paste in frozen box packs so it could be enjoyed several days after being prepared. It can also be purchased as a food souvenir. Otak-otak can be steamed, baked, or mixed with egg to make a savoury custard or omelette; it’s nothing if not versatile. Chasing the best otak-otak in Muar is a subjective affair, but it says something that the Tans have represented Muar in numerous national events. Ah Boon’s production ramps up
during festive seasons like Chinese New Year. Vendors from Kuala Lumpur, Malacca and Singapore regularly order otak-otak by the thousands of sticks to sell as snacks in night markets and retail outlets. A big part of the fun in eating otak-otak is in the unwrapping; think of the anticipation of opening a present. First, you remove the staples securing the wrapper at both ends. Then pull the enfolding leaves apart gently to avoid a crumbly mess, and bite into the firm, creamy contents. As an interplay of flavours, aromas and textures blankets your senses, you’ll understand why eating otak-otak is much more than ticking off a list of must-do activities in Muar: it is to engage in a national treasure.

ROAMING THE RED PLANET Matt Damon embarks on his latest epic adventure in The Martian
S
ince sharing an Oscar win with Ben Affleck in 1997 for the script of acclaimed drama Good Will Hunting, Matt Damon has consistently held a spot among Hollywood’s elite. Having worked with a who’s who of the industry’s top directors, from Francis Ford Coppola and Martin Scorsese, to Steven Soderbergh and Christopher Nolan, Damon’s latest project, sci-fi adventure The Martian, offered the opportunity to collaborate with yet another legendary filmmaker for the first time: Ridley Scott. An ambitiously scientific space drama, The Martian is an adaptation of the 2011 novel of the same name. Set in 2035, the film opens with a manned mission to Mars, in which the crew of the Ares III spacecraft are due to stay for 31 Martian days, or Sols, before returning to Earth. However, just over half way through their mission,

while evacuating Mars due to a severe storm, astronaut and botanist Mark Watney is lost and presumed dead. The film then charts the actions of the stranded astronaut and with only a meagre amount of supplies, Watney must utilise all his wits and expertise to survive long enough to be rescued. The film boasts plenty of spectacular vistas of Mars’ vast, mountainous landscape – all rendered in stunning 3D. Its tense scenes depicting the seemingly insurmountable challenges of Watney’s survival are a thrill to behold, but it is the charisma, humour and scientific approach of the movie’s protagonist that really made it a hit among audiences and critics alike. “It’s not this existential movie about desolation,” says its star. “The character is this incredibly resourceful, optimistic person who just
doesn’t bother winging about things. He just tries to figure out what his next problem is, and has to keep knocking them down in order to stay alive.” As the director of Alien, Blade Runner, and Prometheus, Scott has taken audiences through some of cinema’s most iconic and ambitious sci-fi voyages over the years, but with The Martian, it was the script’s humour that really drew him in: “The most important thing is the power of the humour, and how it connects to Watney’s control of his fear,” says the director. “Therefore, that control of fear is the ultimate
sign of courage, really. That’s the right stuff, isn’t it?” With supporting roles from the likes of Jessica Chastain, Jeff Daniels, Sean Bean and Chiwetel Ejiofor, The Martian is a blockbuster with brains, and has star quality to match. One not to be missed.

Everyone’s favourite sporting story. Written by and starring Sylvester Stallone, as underdog boxer Rocky Balboa, the film shocked the industry to win three Oscars at the 1977 awards: Best Picture, Best Director and Best Film Editing.
Telling the story of a 1920s silent movie star whose career is threatened by the introduction of talking pictures, The Artist ran away with five major awards in 2012, including Best Picture, Best Director and Best Actor in a lead role.
Last year’s major winner. Directed by Alejandro Iñárritu, Birdman’s story about a former star actor and his struggles to stay relevant won four Oscar honours, including Best Director, Best Picture and Best Original Screenplay.

After escaping the maze in the first film, Thomas must now outwit evil organisation WCKD as he and his friends are cast into a deserted wasteland called The Scorch.

STALKING TALK Maggie Q swaps weapons for the dark web in TV drama, Stalker
H
aving appeared in Rush Hour 2, Mission: Impossible III, Live Free Or Die Hard, and starred as Nikita’s titular female rogue assassin, AsianAmerican model and actress Maggie Q has become somewhat synonymous with her action roles since breaking into Hollywood ten years ago. But with her latest role in new psychological thriller TV series, Stalker, the Hawaii-native takes the action from the streets to behind the computer as she digs deep into the unsavoury world of cyber stalking. “We did long hours on Nikita. There was a lot of action, and it was big action,” Q says of her time on her previous show. “But in Stalker, there’s also so much to do in each episode, so much dialogue. Nikita was mental and physical fatigue, and this is pure mental fatigue.” Co-starring Dylan McDermott as Q’s onscreen partner at LAPD’s Threat Assessment Unit, Stalker deals with murky, dark themes of obsessive behaviour, romantic fixation and cyber harassment – territory that her

character Detective Beth Davis knows all too well. “Beth’s background is so bad. The slow reveal of what she went through is fascinating to me and I hope it will be to audiences because her ordeal is not really over,” says the actress of her complex character. “She has a stalker radar because she’s experienced it before, but the problem is she won’t open up to people, which is funny because it’s the same thing she spots in the victims she helps.” More than just a throwaway thriller, Stalker hopes to send the correct message to its young fans about the dangers of the internet and the risks of social media. “I hope the show makes young women think twice about what they’re putting on social media,” states Q. “Stalkings have increased 30 percent in the past decade, so we need to protect ourselves – be careful what you put out there.”

How do you like Malaysia so far? It’s my first time in Malaysia, the people here feel very peaceful and calm, and there’s a nice energy here. And, I love the food – I’m hooked on chicken rice! What was it like shooting your recent video for Nobody Knows in Singapore? It was really cool. We had our team from Sweden there, as well as a team from Singapore, so we had a lot of fun. We shot from 6pm to 9am everyday, so it was pretty intense. Your music videos tend to be very cinematic, why is that? And have you ever considered swapping music for acting? It’s because I love movies, and I like videos that have stories and a meaning that leave you thinking. I’ve had acting offers and I’ve been very tempted, but music is where my passion lies for now. Why did you choose to sing your latest album, Fjärilar i magen, entirely in Swedish? The reason was, I did a show back home with six other Swedish artists, during which we reinterpreted each other’s songs. That was the first time I had sung publicly in Swedish, and it felt really good. So I started writing some songs in Swedish and it grew into a whole album. Luckily, it’s been very successful back home.

Accessing your handset
Accessing your screen in Business Class
Laptop power point
1.
Press to release the handset.
2.
Press to stow the handset.
Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.
A power point is available on all seats in First and Business Class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.
3. Reset button –for use if the cord is over-extended.
