PROFILE
CRAFTY COLOURS CHECKING IN
SPORTS EQUIPMENT A gentle reminder to our readers that as of November 2014, sports equipment, including golf bags, is considered part of the free checked-in baggage allowance of 30kg, 40kg, and 50kg on Economy, Business, and First Class, respectively. FLIGHT OPERATIONS
GOING PAPERLESS The flight deck of Malaysia Airlines’ entire A330 fleet is now equipped with Apple’s iPad Air facility installed with electronic navigation charts from Lufthansa Systems and integrated Airbus Flysmart application, which helps to increase operational efficiency and enhance safety of flight operations.
Flying in to Kuala Lumpur from London to promote her capsule collection with Karyaneka – the Malaysian company mandated to develop and promote the country’s handicraft industry – British fashion pioneer Dame Zandra Rhodes chats with Going Places about the collaboration and what she loves about Malaysians. You flew Business Class with Malaysia Airlines. How was the experience for you?
I loved it! I was very spoiled and looked after. The reclining seats were very comfortable, especially with the mattress pad and pillow provided, and I loved being seated in the upstairs cabin. After a whirlwind week of activities in Kuala Lumpur and Singapore, I can’t think of anything more wonderful than going back to that flight and enjoying its perks! They have a good choice of films, too, which I will always watch when awake on the flight. And how was your experience being in Malaysia, especially in the Malaysian fashion scene?
After coming here last year for the Fashion Is Great (Britain) event, I had always wanted to come back because I had a great experience then. Of course, there was a giant poster of me spanning several storeys inside the Petronas Twin Towers, so that’s always nice! I love working with Karyaneka, who promote arts and crafts that we don’t want to die out from this world. And what I love about Malaysia is how everyone is so colourful!
What’s the best part about collaborating with Karyaneka?
You’ve always stayed true to your colourful design aesthetics. Any particular reasons for that?
That I have access to people who can create beautiful designs for me to work with, particularly the beautiful batik. In Malaysia, there are more people who are still able to use their hands, thus they can think around the subject as they are creating it, as opposed to people who are so used to computers and not thinking for themselves as they are so used to set patterns. I can’t wait to go further with the Karyaneka collection
I like to think that I’ve got my own point of view, that I bring something different to the fashion table. With this collaboration with Karyaneka, the fact that we both come from different directions makes it really exciting. They get another approach through working with me.
Dame Zandra Rhodes’ collaboration with Karyaneka is currently ongoing. This year will see Zandra’s Karyaneka collection showing at London Fashion Week 2015 as Karyaneka opens its first store in central London, with a second store to follow located at Battersea Power Station.

IN-FLIGHT MOVIES
Throughout 2015, passengers aboard Malaysia Airlines will be able to enjoy a selection of six movies starring the late, great P. The movies are Anak-Ku Sazali, about a father’s unconditional love towards his spoiled son; Ali Baba Bujang Lapok, a comedic take on the popular tale of Ali Baba and the Forty Thieves; Ibu Mertua Ku, a drama on social class separation and its consequences; Madu Tiga, a hilarious account of a polygamous man and how his father-in-law helps him in his quest for a second wife; Nujum Pak Belalang, which takes a jab at society’s mentality through its funny storyline; and Pendekar Bujang Lapok, chronicling the lives of three funny friends as apprentices to a martial arts master.

TRIBAL MEET What started as a parade to honour the image of the Santo Niño (Spanish for ‘Holy Child’) in 1967 has become a full-blown festival over the years where spectators can watch various tribes compete against one another through costumes, dances, and drumming. The main draw is the Ati-Atihan Parade, but visitors can also immerse themselves in the local culture through other on-ground activities leading up to the event. 11-28 Jan in Iloilo City, Panay dinagyangsailoilo.com
The Wakakusa Yamayaki, roughly translated to ‘roasting of Mount Wakakusa-yama’, is a yearly event where the mountain is literally set on fire, but not before a parade, fun festival activities, an interfaith demonstration involving Japan’s major religions, and a magnificent display of fireworks. Steeped in history, the tradition is said to have started around 1760, brought about by a boundary dispute between two temples. 24 Jan at the foot of Mount Wakakusayama, Nara, Kansai region jnto.go.jp

EXHIBITION
CITIES UNDER THE KNIFE It’s your last chance to catch Damien Hirst’s Black Scalpel Cityscapes exhibition in Sao Paulo. It comprises a series of bird’s-eye cityscapes whose streets are composed of surgical equipment. But there’s much more to it. The composition represents a common modern warfare tactic called surgical strikes, which are designed to limit damage by precisely targeting a certain area. However, Hirst’s cityscapes show how the effects of war spread much further than the area directly hit. 8.30am
Begin your day at the de facto capital of the European Union by strolling through the city’s cobbled streets into the historical epicentre, the Grand Place, a UNESCO World Heritage Site that some have called Europe’s most beautiful square. Brussels’ essential landmark is fronted by magnificent guild buildings, the Gothicstyled Town Hall and the Maison du Roi edifice, which houses the main museum dedicated to local history and folklore.
10.30am Take a break at the northeast corner of the square, where Maison Dandoy (maisondandoy.com), a
family-owned biscuiterie, lures customers with some of the best Liège waffles in town. Savour it with a dusting of powdered sugar or add a variety of toppings.
11pm
Head to the Manneken Pis bronze fountain sculpture, a world-famous symbol of Brussel’s irreverent spirit. The playful statuette now has an entire wardrobe collection and is fitted in various costumes throughout the year; its line of clothing may be viewed at a permanent exhibition at the city’s museum. The Manneken Pis has also inspired the relatively less-known Jeanneke Pis, a modern, gender-equality counterpoint located nearby.
12pm Grab a public bus or tram to Flagey Square in the municipality of Ixelles, home to many bars and cafés. Step into Café Belga (cafebelga.be), a local favourite with a convivial ambience that’s unpretentious and down-to-earth. A simple but supremely satisfying ham and cheese sandwich with a bowl of soup can be had for about USD7. You can also try the golden-crunchy fries nearby at Frit-Flagey.
2pm
Visit The Royal Museums of Fine Arts of Belgium (finearts-museum.be), a collection of museums featuring both historical and modern art. The historical section showcases an impressive array of artwork
by Flemish masters such as Rubens, van Dyck and Jordaens. A circular building houses the modern art section on eight floors – all of which are below ground level. The collection includes van Gogh, Matisse, Dali, Tanguy and Ernst, as well as local names like Magritte, Delvaux, de Braekeleer and Permeke.
5pm In a city that’s synonymous with chocolate, it’s scarcely surprising to encounter a confectioner on almost every block. To pick up the finest handmade chocolates, head to the lair of chocolatiers, Place du Grand Sablon. Beloved and decadent brands such as Wittamer, Pierre Marcolini, Godiva, Neuhaus and Leonidas
are found here. Give in and indulge in the ultimate hot chocolate in any of the stores.
6.30pm Enjoy a pre-dinner drink at Delirium Café (deliriumcafe. be), a pub that stocks more than 2,000 beer varieties and has been recognised by The Guinness Book of Records. Try the citrusy La Rulles Blonde, a Belgian ale beer. Then venture into Rue des Bouchers-Beenhouwersstraat for dinner at one of the many fine restaurants, but beware of tourist traps with inflated prices. For a decent meal, Aux Armes de Bruxelles (auxarmesdebruxelles.com/en), serves basic and honest Belgian fare in a rustic setting, and is recommended for its mussels.

ith the amount of venture capital pouring into Indonesia’s economic dynamo – one startup fund is even named 500 Durians after Jakarta’s fruity sobriquet, the Big Durian – it’s no surprise to find resourceful Indonesians jumping on current trends, taking risks and bootstrapping their way into small business ventures. This buzz can all be overheard in Pasar Santa, a trendy market in South Jakarta, which has emerged as the hub of opportunity and innovation. Upon first glance, Pasar Santa may seem unassuming and ordinarily
Indonesian: a small building with limited parking space, street stalls and tall roadside greenery. Yet its three-tone, retro-coloured exterior gives you a hint of what’s brewing inside in this hub of communal creativity. A unique mixture of market antonyms, Pasar’s lower floors are occupied by wet vendors along with tailors, clothing stores, and stationery shops. However, in a new policy to attract business to an empty upper floor, the management has set aside space for young, imaginative entrepreneurs. In June, only a few kiosks were operating, but by September, a waiting list of businesses had emerged. Pasar’s cool factor is skyrocketing. Vintage clothing stores, antique and record shops, coffee kiosks and a Mexican cantina are just a few of the amenities offered up a la mode. Book launches, workshops and art exhibitions have also been organised to drum up support for this alternative shopping lifestyle. Most of the businesses are community and not profit-driven; owners regard their stalls as experimental side money away from their day jobs. There has been an increasing hipster clientele hungry for the new and fashionable. Potlucks, pantomime shows and cooking competitions have been a huge success in spreading the word, complementing Facebook, Twitter and Instagram. Bear & Co, a manual brew ‘pop-up coffee bike’, has parked its wheels to sell coffee served from the taps you’d get your beer from. There’s also ABCD, or

At USD255 per year, the risk of financial bust for startups is significantly minimised. Currently, there are about 350 stalls rented out. More and more vendors are setting up shop by the day, adding something unique to Pasar’s growing reputation as the meeting place for photographers, painters, designers and writers. “Pasar Santa is a raw experience of Jakarta’s creative energy,” says Ve. “It has become a hit with no plan at all. it that way. We hope people stop bringing cars here and take public transport.” While enjoying your piccolo at ABCD or chowing down on noodles from Mie Chino, you might just catch an impromptu performance of street musicians, a brass ensemble, a ballet dance, or even a spontaneous ‘secret gig’ by a local DJ playing eclectic tunes. Sameness and predictability, features which define shopping centres all over the city, is not what Pasar’s patrons look for. “What is unique about Pasar Santa is the passion of the people,” says Samson Pho, one of Pasar’s first vendors and the owner of Laidback Blues Records, a record shop which has seen much

Redefining the concept of public space is a key value, besides encouraging connections among visitors. The idea is also to get people interested in the lower floors, where you could find a mud-tinged carrot or that perfectly imperfect hot pepper (as opposed to produce that’s nicely packaged but overpriced in a mall). Cheaper in price but higher in quality, Pasar’s produce is harvested by hands, not a part of the corporate chain. GALAPAGOS, ECUADOR Daniel Allen
Admittedly they're not cheap to reach, but if you love wildlife, there truly is no more awe-inspiring place to visit on Earth than the Galapagos Islands. Made famous by Charles Darwin, this volcanic archipelago, situated 1,000 kilometres off the South American coast, is no less enthralling now than it was in 1835 when the father of evolution first arrived. Best visited on a local, multi-day cruise, the 19 islands of the Galapagos (and their surrounding waters) form a giant national park, with each island boasting its own character and ecology. Having existed for aeons in isolation and in an environment without predators, many of the animals and birds
here are both unique and astonishingly fearless. Nonchalant marine iguanas and giant tortoises bask in the sun a few feet from snap-happy tourists, while finches, firgatebirds, waved albatrosses and blue-footed boobies feed, preen, display and mate with scant regard for nearby humans. In and under the water, the natural wonders continue: scuba dive with inquisitive fur seals, sea lions and turtles, while feeding penguins, orcas, manta rays and a huge array of fish all patrol the cool, nutrient-rich waters. If you ever felt like starring in your own nature documentary, the Galapagos is the place to do it.

Istanbul was my first love; whenever I see her I grow weak in the knees again. I visited the city as a teenager when my sister lived there temporarily; I’ve returned many times and I still can’t say I’ve even scratched the surface of this intriguing metropolis. Perhaps its draw is the breathtaking location straddling Europe and Asia; or perhaps it’s the ancient skylines punctuated by minarets, with glass-and-steel skyscrapers hovering in the background. I love the 19th-century wooden homes of Arnavutköy, the bustling waterfront of Ortaköy, the irrepressible energy of emerging Kadiköy. The hipster hideouts of Karaköy are just a 10-minute walk from the dusty antique shops of Çukurcuma, where Orhan Pamuk’s Museum of Innocence, created in conjunction with his novel of the same name, invites you to experience Istanbul of yesteryear. Sophisticated Nişantaşı and the easygoing Princes’ Islands are two of the other musts. As crowded as they may be, you can’t skip the Old City’s historic treasures that span continents and millennia. And don’t even get me started on Turkey’s multi-coloured, multi-flavoured cuisine that would win over even the most cynical gourmands. I just returned last week; I can’t wait to go back.

A friend once quipped, "when in Japan, you know things just work". The trains arrive on the minute. A humble street snack is presented with a napkin. Shop decorations are works of art. The perfectionism that permeates every aspect of Japanese life shines through in their cuisine. From street-side grilled beef skewers to teppanyaki lobster, I loved every meal, but the one to beat was a kaiseki (traditional multi-course dinner) at Kamigamo Akiyama, a Michelin one-star ryotei (traditional exclusive restaurant) where three months advance booking is normal. In a ceremony that is part fine-dining, part theatre and part education, you sit at a long narrow counter and watch chef-owner Naohiro Akiyama and his battalion of chefs deftly and silently create haute cuisine from seasonal produce - from scratch. Each new course is served with a fresh cutlery set. The piéce de résistance arrives in a beautiful basket filled with freshly plucked autumn-hued leaves encircling a cluster of tiny ramekins capped with roof-shaped covers. After a stunned silence, it dawns on me: this is a miniature replica of a traditional Japanese house in autumn. Smitten? Japan, you've ruined me forever.

LADAKH, INDIA
Gustasp & Jeroo Irani Ladakh, the Land of High Passes, is our favourite destination, the one that we long to return to year after year. The country’s most isolated district geographically is barricaded by a double barrier of parallel mountain ranges, the Himalayas and the Karakoram. A high altitude desert, we relaxed in the district capital of Leh (3,200 metres) on the first day we arrived in order to acclimatise to the rarefied air. The next few days became a blur of enchanting, incense-wreathed monasteries (or gompas) where red-robed lamas bowed and prayed and even the littlest ones (as young as five years old) seemed to exude a spiritual aura. We drove down cliff-hugging roads where the landscape unfolded like a monochromatic
painting. Yet there were dollops of colour and textures embedded in the lunar-like landscape. We stumbled on the occasional lush green oasis of willows and poplars and the confluence of the rivers Indus and Zanskar. En route to the fertile Nubra Valley, we crossed the Khardung-la Pass (5,600 metres), reportedly the highest motorable pass in the world. Around us, mountains that resembled the bunched up fists of an ogre, sometimes crumbly and slashed with frozen rivers of snow, surrounded us. But it was at Pangong Tso where Ladakh’s fragile beauty was compressed in a compelling canvas of intense hues – a lake, the colour of spilt ink, is fringed by bald snow-crusted mountains that change hues almost every minute.

There is an ethereal light to this sleepy city, which lengthens into a glorious warm glow as evening comes. The nights are balmy, ideal for wandering the quiet, cobblestoned lanes that characterise Lisbon's streets. There are plenty of hills to climb up and down, but that means perfect vistas of the city from several vantage points. The sense of creativity and nostalgia is strong in Lisbon, with a burgeoning arts and design scene to supplement the old and historic. This is not a city to rush about. Instead take your time to explore the old quarters of Alfama, tuck into their traditional bacalhau (salted cod) or have a custard tart, and soak in the vibes of the melancholic fado while imbibing a glass of port.Â
MONGOLIA
Tatyana Leonov One of the most inspiring countries I have ever visited is Mongolia. In the summer, the country is a sea of undulating greens and yellows extending into the distance until they meet the deep blue sky. In the winter, it’s a bleak (yet dramatically beautiful) grey and white vastness that feels enchanted. I remember a local comparing Mongolia’s natural landscape to the Colosseum. “Italy has the Colosseum,” he said. “We have our whole country.” The land awes in every way, and driving, trekking or horse-riding through Mongolia feels otherworldly. With no homes in sight, sometimes for hours, being at one with nature is a way of life.
When you do pass a ger (a third of the population are still nomadic and live in movable circular dwellings that are easy to set up and dismantle), stop and knock on the door. The people of Mongolia are warm, hospitable and full of surprises. Some have never seen tourists before but will happily share their home with you, take you under their wing (not understanding a word you are saying), and still let you play with their children as if they are your own. And that’s what makes Mongolia even more magical. I’ve never spent time with strangers and yet felt so at home, yet so completely away from home.

MARCAHUASI, PERU Darren Loucaides
I’m not sure if I would call it my favourite place in the world, but Marcahuasi is one of the most memorable – and definitely the strangest place I’ve visited. Situated about 100 kilometres inland from Lima, this natural sculpture park of evocative rock formations is reached by a perilous mountain pass. I visited a year ago; halfway up the steep roads in an old school bus, the golden afternoon light gave way to thick mist, and I started to think I’d made a terrible mistake. We made it though – arriving at the nearest town, spooky San Pedro de Casta, by dusk. After a chilly night in the only hotel, I hiked through gorgeous hillscapes to Marcahuasi itself. The mountain is said to be full of ‘energy’, as various spiritually-minded folk informed me, and strange sightings have been made of giant beings and other weird phenomena. In fact, many visitors are UFO spotters, and a few believe the rock formations are in fact sculptures by an ancient, pre-human civilisation. At twilight, there is a magical feeling as the rocks seem to melt purple and orange into another realm.

Do you think being Malaysian helps you understand flavours better as a chef? Every country has its own cuisine and flavours and being a chef, you need to open your mind to that. s the first rays of the sun warm the snow-capped peak of Jebel Toubkal, a muezzin's early morning call to prayer echoes off the steep valley walls far below. Ribbons of wood smoke curl lazily upward through the chilly air as the Moroccan village of Imlil comes to life. Witnessed from the elevated, carpet-covered roof of the Kasbah du Toubkal hotel, with a glass of steaming sweet mint tea in hand, this has to be one of the African continent's most majestic dawn views. To most people, Morocco brings to mind images of bazaars, beaches and billowing Saharan dunes. But, as a growing number of visitors are now discovering, many of this North African kingdom's greatest treasures lie hidden in its mountains. A 2,500-kilometre crescent-shaped ridge dividing the sun-baked African hinterland from the Mediterranean, the Atlas range marches its way across Morocco and into Algeria and Tunisia. The highest peaks, crowned by the 4,167-metre Jebel Toubkal, are
within easy reach of Moroccan cities such as Marrakech, Casablanca and Agadir. "Today, the High Atlas offer visitors a very different holiday experience," says Mike McHugo, the English co-owner of the Kasbah du Toubkal (kasbahdutoubkal.com). "As a mighty barrier between the plains of northern Morocco and the Sahara, the valleys here are a stronghold of the Berber, the indigenous people of northern Africa. With their deeply traditional way of life, some of the villages here appear locked in time. It's not surprising that the area's authentic culture and awe-inspiring scenery are an increasingly popular draw." The Berber name for the High Atlas Mountains is Idraren Draren, or ‘mountains of mountains’ – particularly apt as most of Morocco's 4,000-metre peaks are found here. The Berbers who inhabit this wild land rely mostly on subsistence-level farming, and shepherds tending their flocks of sheep and goats are a regular sight. Houses are mostly constructed from mud and stone, with villages perched precariously on steep hillsides or between soaring peaks. While they are widely known as Berber by outsiders, many people here prefer to call themselves Imazighen, meaning ‘free people’.
Although Tamazight, the Berber language, was recognised as an official language of Morocco in 2011, many Berber children have long dropped out of school because they are taught in Arabic. In the High Atlas, where the nearest school is often many kilometres away, many Berber parents have no money to pay for their children's daily lodging. “The Berbers continue to encounter problems with the Moroccan schooling system,” explains McHugo. “For a number of reasons – social, financial and linguistic – very few children, especially girls, from High Atlas communities get the opportunity to continue their education after primary school. This has led to a female illiteracy rate of over 80 percent in some places.” Clinging to a rocky outcrop high above the village of Imlil, the Kasbah du Toubkal is like an imposing feudal fortress. Opened by Mike McHugo and his brother Chris as a luxury hotel in 1995, it now boasts a reputation as one of Morocco’s most authentic and spectacularly located mountain retreats. But it is not just this unique resort's picture postcard setting and long list of luxurious amenities that keep guests returning year after year. Thanks to a range of ongoing environmental and community projects, the Kasbah has become the beating heart of Imlil.

Local Berbers run the hotel, while a five percent levy on guests’ bills goes into a charitable fund. So far the McHugos have used the money to buy an ambulance, construct a free public bathhouse, start a waste recycling scheme and invest in local education projects. It is in the field of education that the Kasbah du Toubkal is making the biggest difference. Thanks to the work of Moroccan charity Education for All (EFA), set up by McHugo and a group of friends eight years ago, an ever-growing number of Berber girls in the High Atlas now have access to a life-changing secondary school education. Since the Dar Asni Secondary School for Girls was opened by EFA in 2007, three more schools in the Imlil area have been opened, while a fifth is under construction. Sleeping in purpose-built dormitories and returning to see their families on weekends, the teenage Berber girls attending these schools can enjoy classes in Arabic, English, maths and other subjects. There are no fees. "Three more Berber girls from our houses are university-bound this year, joining the five already there," explains EFA's communications officer Sonia Omar. "We are so proud of them. The impact of this is very profound, not only
because it will inspire other girls from the High Atlas, but also because it means that soon these young women's voices will be heard by Moroccan society, bringing more balance and diversity." Only a 90-minutes drive from Marrakech, Imlil is the gateway to the Toubkal National Park, renowned for superb hiking, biking, skiing and other outdoor pursuits. It is also home to some of Morocco’s rarest wildlife, such as the Barbary sheep, Barbary leopard and Barbary macaque. Moustafa Belkasse has been working as a mountain guide in the park for 11 years. The 40-year old Berber wants to see more visitors coming to Imlil and exploring the surrounding area. “If I wasn’t guiding I’d be farming,” says Belkasse. “Tourists bring a better life for myself and my family. The Kasbah du Toubkal has also helped a lot of local villages by investing money in water supplies, while the rubbish collection scheme means fewer people are burning or dumping refuse.” Situated a stone's throw from the Kasbah du Toubkal is another high-end property perfectly placed for those wishing to experience the Toubkal National Park. property owned by British tycoon Sir Richard Branson – is also doing its bit to improve Berber livelihoods. The resort, under the auspices of Sir Richard's mother, recently imported a herd of cashmere goats from England. Berber girls use the goat wool to produce embroidery and knitwear that is then sold for them at Tamadot and other Branson-owned properties. “The Berbers are a proud people,” says Eve Branson. “We want to teach the girls lifelong skills that remove the need to ask for charity in the future.” The growth in the number of High Atlas holidaymakers is also leading to a rise in philanthropic entrepreneurship amongst the Berber themselves. Brahim Barkouche, a Berber who opened a luxury guesthouse in
Ouirgane in 2005, believes sustainable tourism is all about promoting cultural exchange and environmental protection, while allowing villagers to work locally and keep their dignity. “Of course everybody wants higher living standards,” says Barkouche. “The trick is to achieve this in harmony with the local culture and surroundings." Barkouche and the tourists he offers hospitality to now support a range of local projects. "We’ve saved the only water mill and olive press left in Ouirgane by paying the owner some money every time our guests visit," explains the personable Berber. "We also have tree-planting schemes, sell locally made produce and handicrafts, employ local muleteers and are helping to improve the Ouirgane primary school.” Today, well-managed sustainable tourism is bringing the Berber people of the High Atlas a new kind of freedom. "These people didn't need or want charity," says McHugo. "All they needed was knowledge and the opportunity to help themselves. As visitors invariably agree, the High Atlas are richer for their presence."

Back to the SOURCE Journey to find out why Peruvian cuisine has taken the gastronomic world by storm

While there has always been a culinary verve here, Peruvian food experienced a revolution around the turn of the millennium, when a generation of chefs returned from abroad with new skills and ideas. They realised Peruvian cuisine had the potential to rival any in the world. Now famous in Peru and increasingly beyond is Rafael Osterling, whose eponymous restaurant, Rafael (rafaelosterling. pe), is today a Lima institution. “When we first opened in 1999, you could count the number of (quality Peruvian) restaurants on one hand. Now there’s a real explosion. I’m of the first generation, almost. We went to work outside our country and came back with new concepts. Now it’s organic, with one generation teaching the next,” explains Osterling, sitting at the bar of his flagship restaurant. Despite being favoured by a wellheeled Lima clientele, Rafael is a fairly relaxed dining spot. Osterling describes it as “classic contemporary, neither old

a stemmed wine glass, and we also had quality snacks. We weren’t trying to be anything we’re not, just honest about what we liked.” After closing the bar, Gordon opened Cicciolina (cicciolinacuzco.com) more than 10 years ago – a stylish restaurant celebrating Peruvian food. “When we started, there was nowhere like this,” she says. “People from here love us, and keep coming back. And they aren’t pedestrian customers – they encourage us to cook exciting food.” Located on the first floor of a hacienda overlooking Calle Herrajes, Cicciolina is a handsome restaurant with large, colourful portraits adorning the sexy redpainted walls, and a stylish bar offering an impressive wine list, including many Argentinean and Chilean bottles. The food is varied, centred on Peruvian ingredients. I try the quinoacoated prawns, which are crispy and served with maracuyá sauce, as well as baked wild mushrooms from the Sacred Valley with fleshy Andean cheese. Then there’s a lightly seared, peppery alpaca fillet on a bed of olluco – a Peruvian root vegetable that tastes like a cross between beetroot and parsnip. For dessert, there’s a taster of two mousses: Quillabamba chocolate (smooth and creamy, with a dash of salt), and lacuma (a native fruit with a syrupy flavour). I also visit Cicciolina’s sister restaurant, Baco, a bistro with dim lighting, black
leather sofas and dark-wood tables. Sprigs of coca hang behind the bar, while the interior is dotted with Peruvian urns and smaller ceramics. As for the food, the mixed grill is essential: tender chicken, spicy sausages, beef with mustard sauce, and anticuchos (beef heart, usually found on skewers at stalls). My main course is a Peruvian delicacy: cuy, or guinea pig. Roasted and served on a layer of potatoes and Andean cheese, it has a tough exterior but is soft inside, falling off the bone. The taste is gamey and pungent; no amount of delicate preparation and thoughtful garnishing can distance it from the flame-grilled cuy in Cusco’s Mercado de San Pedro. While Lima, Cusco and other cities are growing a stock of world-class restaurants, it all began with ordinary people cooking at home and in the markets.

East Feast On the East Coast, nasi dagang is a ubiquitous dish of rice cooked with coconut milk and spices, eaten with local tuna curry Text Tan Lee Kuen Photo Iskandar Sadon Props and Styling Mimi Ezura Esa
CAPITAL NASI DAGANG
A Kelantan original, the proprietors of Capital Nasi Dagang uprooted their operations to Petaling Jaya in 2013, bringing with them the secrets of their popular nasi dagang. The Kelantanese version uses beras nasi dagang that’s twice steamed with coconut milk and spices, resulting in wonderfully fragrant and slightly sweet rice, typical of the style. It’s accompanied by a winning gulai ikan tongkol, a fish curry made with local tuna. For the whole package, go for the Ultimate Nasi Dagang, which incorporates a bit of all their side dishes, including a fork-tender beef rendang.
WARUNG TERENGGANU
This bare-basics stall serves an excellent Terengganustyle nasi dagang. It differs from its Kelantanese counterpart in its use of white glutinous rice, here perfectly cooked to a pearly shine. The fish curry is laden with spices; you’ll be awed by the amount of bird’s eye chillies swimming in it, and the fish fillets are sweet and chunky. Open only on weekend mornings, the stall attracts a sizeable but manageable crowd to this hawker centre. You’ll know the stall by its signage advertising Terengganu fare and large metal pots of curries.
NASI DAGANG ANAK EAST COAST
New kid on the dining block Anak East Coast, which means Child of the East Coast, offers exceptional tastes from Kelantan and Terengganu. The restaurant, housed in a converted bungalow, is comfortable and homely. The nasi dagang, which comes with sides of kerabu salad and a salted egg, uses the glutinous beras nasi dagang, typical of the Kelantanese style, perfumed with fenugreek seeds and coconut milk, and a winsome fish curry, simmered to a rich concoction of coconut milk and spices.

Nasi dagang is Malay for trader’s rice and is commonly eaten for breakfast in eastern peninsular Malaysia
BELANGA RESTAURANT
Belanga Restaurant puts its own mark on Malay cuisine, complemented by a stylish interior decked out with traditional handicrafts. There is a wide variety of well-loved dishes on the menu, which has recently incorporated Western-inspired food such as grilled lamb and beef tenderloin. Here, you can have your nasi dagang with a choice of accompaniments – the signature ikan tongkol (recommended), ayam kerutuk, a dry chicken curry, or beef rendang. Belanga has outlets in various shopping centres around the Klang Valley.
THE MAKING OF NASI DAGANG 1 Rice: In Kelantan, the recipe calls for red Kelantanese rice, which is often mixed with fragrant rice and/or glutinous rice. The rice is soaked in water before it is steamed with a mixture of coconut milk, sliced shallots, lemongrass and fenugreek seeds. In Terengganu, normal white glutinous rice is used. 2 Gulai ikan tongkol : A Malay-style curry made with local tuna. The gravy is made of coconut milk and a variety of herbs and spices, among them tamarind, lemongrass, galangal and chilli paste. 3 Side dishes: The dish is sometimes accompanied by an acar salad of cucumber and carrots, boiled egg and fried grated coconut flesh, known locally as kerisik.
HAYAKI CAFÉ
Good Kelantanese eateries in the Klang Valley always induce excitement. Hayaki Café serves an array of irresistible East Malaysian fare, such as nasi kerabu, nasi ulam and nasi dagang. Its nasi dagang scores well with fragrant rice served with a good portion of fish curry, pickled vegetables and salted egg. It’s open 24 hours every day to scratch any around-the-clock itch for Kelantanese fare.
KEDAI KAK SOM, KAMPUNG BARU
When it comes to Malay food, Kampung Baru is usually a good bet for where to go. Here, you can find a highly rated nasi dagang at Kedai Kak Som, which homesick Kelantanese friends have vouched for. The food is on the sweet side, common to the state’s cuisine, but also very rich. There is a lot of local flavour to this modest eatery, both in the ambience and the food.

Silverfish Books' popular New Writing Series

t’s the end of the road for the book industry, claim naysayers, but independent publishers may yet save the day. Indie publishing, usually supported by passionate individuals or a small group of printedword lovers, has taken on a carefully selected number of literary talents that lie outside the mainstream circles. These DIY publishers spot, encourage and promote young and emerging talent, and so far, their efforts have resonated with a growing legion of literature fans. One such is Rabak Lit (facebook. com/rabaklit), the literary arm of Projek Rabak, an arts collective from Malaysia’s northern Ipoh city that has its roots in rock music. Rabak Lit was conceived in 2012 to sustain the collective and to supply its members with employment and an income. “Books outsell CDs now, so I’m making more books. The purpose of starting up Rabak Lit was so we can dedicate ourselves to the arts and not have to work full-time at other jobs,” explains one of its founders, Mohd Jayzuan. The project was initially set up to publish work from a network of friends in Ipoh. However, it was the publication of poet and singer-songwriter Fynn Jamal’s Puisi Tepi Jalan that made things take a turn. The collection of poems sold more than 16,000 copies in two years, alerting the collective of the high potential of this venture. “Fynn Jamal brings poetry to a different level. She’s a cult artist and a prolific writer, and her readings are like a
sold-out rock gig,” says editor and writer Syafiq Faliq, who goes by the pen name Sefa. His debut effort Melankolia Bisu sold over a thousand copies in a month. Rabak Lit has strict selection criteria for its authors and poets, publishing only eight books in the last four years. They are picking up the pace considerably this year with the expected publication of six books. Among them are works by Takahara Suiko from The Venopian Solitude fame, blogger Anwar Hadi, Fathullah Luqman from Infectious Maggots and Jayzuan’s travelogue. “The kind of literature alternative publishers offer is different from the normal love stories. Young people really relate to the stories by counter culture and alternative writers that centre around themes such as depression, loneliness and alienation. They tell everything to the audience, who in turn embrace their honesty,” says Jayzuan. As the Malaysian-Malay literary scene

“As alternative publishers, maybe we have a hand in glamourising literature” is growing increasingly vibrant, the Malaysian English-language market has long been amply sustained by Silverfish Books. To this day, Silverfish Books remains a dominant and influential publisher. Raman Krishnan, the man behind Silverfish Books (silverfishbooks.com), turned his passion for books into a livelihood. An engineer by trade, he opened the Silverfish bookshop in 1999 to offer Malaysian readers a selection of carefully curated titles. It was a query on available Malaysian-written books in his shop, and his realisation of its dearth, that prompted a venture into publishing in 2002. It is a one-man show at Silverfish, with Raman wearing several caps. He sources, edits, mentors, markets, sells and even
occasionally designs, the books that he publishes. The process is often drawn-out, the selection of writers stringent. “It’s a question of attitude. Do you want volume or quality? We’ve always gone for quality, to hit the high notes,” says Raman. “As an aspiring writer, you have to be confident that your work is good enough. You have to aim high. As a publisher, what I need is a good story. I can help you polish it up with good language. Language skills tend to be overemphasised, and people tend to get the two confused.” Silverfish is particularly well-known for its Silverfish New Writing series, an anthology of short stories mostly from Malaysia and Singapore, but his bestselling book yet is Dina Zaman’s I am Muslim, which sold 15,000 copies. Last year, Silverfish Books published five books, including Shih-Li Kow’s The Sum of Our Follies. Kow is a triumphant story for the publisher. A Silverfish Writing Programme alumnus, her book Ripples and Other Short Stories was shortlisted for the Frank O’Connor International Short Story Award in 2009.

The successful writing programme has produced literary sparks whom Raman works closely with, among them Chua Kok Yee and Rumaizah Abu Bakar. Rumaizah’s third book with Silverfish Books, a collection of travel stories to Turkey, Saudi Arabia and Indonesia entitled A Call to Travel: Muslim Odysseys, was four years in the making. It is scheduled for release this month. Meanwhile in Singapore, Kenny Leck runs the successful boutique bookstore BooksActually (booksactually.com), located in the Tiong Bahru estate just on the outskirts of the city centre. He started Math Paper Press in 2011 to publish, promote and support young Singaporean writers and poets, many of whom are superstars of the growing literary scene. “It’s challenging but good, especially when a print runs out. Even though they say Singaporean titles are hard to sell, and Singaporean poetry an even harder sell, we’ve been doing quite well in terms of sales,” says Leck. Several titles such as playwright Alfian Sa’at’s The Invisible Manuscript, Pooja Nansi’s Love is an Empty Barstool and Krishna Udayasankar’s Objects of Affection have sold out, with a couple on their second edition. A thousand copies are produced per print run. “It’s a happy thing to know that Singaporean literature does sell,” says Leck, who has published over 90 works with Math Paper Press, including
Verena Tay’s In the Company of Heroes and Malaysian writer Bernice Chauly’s book of poems Onkalo. He works closely with design duo Sarah and Schooling on the design aspects of the slim, attractive volumes. This is a good time for fans of literature as indie publishers continue to experiment, discover and publish interesting and often unknown talents in fiction, non-fiction, poetry and more. They are making reading cool. “As alternative publishers, maybe we have a hand in glamourising literature,” says Jayzuan.

RODA KEHIDUPAN Bagaimana kehadiran seorang tukang basikal merupakan tunjang utama kehidupan harian sebahagian penduduk Kampung Sungei Penchala Teks Alexandra Wong Foto SooPhye Terjemahan Yeo Li Shian
B

Tanpa orang seperti Razib, kehidupan benar-benar terhenti seketika. Kedai Basikal Abil Lot 3031-D, Kampung Sungei Penchala Jalan Damansara, Kuala Lumpur Tel +6012 336 2692
For the folks of Kampung Sungei Penchala, the bicycle repairman is more than a fixer-upper. Without him, their lives would literally come to a standstill In the half hour I’ve spent at Kedai Basikal Abil, the cramped shed of tools, bicycle hardware and wooden panels that makes up Kampung Sungei Penchala’s sole bicycle repair shop, I feel like I’ve met half the village. There’s the schoolboy who needs his tyre tube changed. The migrant worker who wants his brake fixed before commuting to neighbouring Taman Tun Dr Ismail. Then there are the assorted teenagers hanging around with Aiman Syabil - Abil for short - the 12-year-boy whom the shop is named after. Abil’s father, who is the shop’s owner, 46-year-old Mohd Razib bin Buang, counts himself lucky to have grown up in the 1980s, a time when “there were more bicycles than cars in the kampung”. To a teenager, the bicycle represented freedom. “My BMX was my ticket to the green lungs and clean air of Ampang and Gombak, which were then mostly jungle,” he recalls. When the increasing standard of living made car ownership possible for more families, the appeal of the bicycle began to fade. However, cycling is experiencing a resurgence thanks to the rise of a global movement to combat environmental pollution and reduce oil dependency. One of Malaysia’s earliest adopters is cycling enthusiast Jeffrey Lim, who
conducts workshops to repair and rebuild old bicycles out of his studio in Sri Hartamas. A graphic designer by profession, he designed Cycling Kuala Lumpur (facebook.com/villagebicycles), a ground-breaking project that maps out viable cycling routes to encourage more urban dwellers to ditch their cars for two-wheelers. About 40,000 copies of the physical map are available for free at bicycle shops and selected cafés; he hopes to eventually offer it at bookshops. A labour of love that spanned two years of referencing Google Maps, interviewing locals and making site visits, a key part of the project involved enlisting fellow cycling enthusiasts to track and document traditional bicycle repair shops like Abil’s. Part of the reason is practical. “If we’re going to encourage people to cycle long haul, knowing where to go for a fix is a life saver if you need to make an emergency stop!” he points out. The other reason is to reconnect cyclists with their roots and learn about their country. Lim, who cycles between 30 to 40 kilometres per day, says that cycling has enabled him to discover hidden gems in old places, like the nasi campur stall he takes us to for lunch below the Penchala Link highway. Moreover, he says, “in
traditional villages like Kampung Sungei Penchala, bicycle repair shops play a bigger role than fixing bikes. They also serve as community and learning centres.” The teenage loiterers I met earlier are not just friends of Abil but potential talents for the kampung’s football team. The old tyre tubes hanging from the ceiling are not garbage, as I thought, but potential fodder for wire holders. “City dwellers can learn a thing or two from villagers, who are very adept at recycling and reusing anything, from bicycle tubes to compost!” Lim enthuses. But like any business, Kedai Basikal Abil has to move with the times. From doing primarily repair work in the ‘90s, Razib has diversified to resale of new and second-hand bicycles as well as restoration work, which tests his creativity and improvisational ability to the limit. “I get some weird requests to ‘soup up’ old bikes, which can be challenging because many parts are no longer in production. So I turn to motorcycle or even car parts and modify them to fit the bicycle!” In Kampung Seri Penchala, I can see why the traditional bicycle repairman ranks high in the hierarchy of beloved village icons. Without people like Razib, life for many would literally grind to a halt.

talented twosome Irish-Norwegian duo Secret Garden recently played to a packed out audience in Kuala Lumpur where they performed some of their greatest hits. We caught up with the pair for a chat...
99
What’s your favorite Secret Garden song? Fionnuala Sherry Actually there’s a song we haven’t performed for a long time called Hymn To Hope. We’re doing a new version of that and it’s really lovely to play. Rolf Løvland I’m not going to answer that question just because it will be very sad for all the songs I don’t pick.
The funny thing was we’d already recorded our first album, so the day after we won we started on the promotional tour for that album. We’ve always said we never actually sat down and had a glass of champagne to celebrate. There was no time. We promoted it in Europe then, unexpectedly, it took off in Australia, America and Asia so we didn’t stop travelling between 1995 and 1999.
How do you prepare for a concert? FS Practise a lot, go on diets and exercise! RL It’s a lot of work and preparation. The rehearsing is a part of it but also it’s important to have a feeling about the concert that you want to communicate.
Do you get recognised in the street? FS Some places in China, Korea, Norway. If we’re together it’s more common. RL What happened today is more like what happens to us now. We flew from Singapore to Kuala Lumpur, get through the gate and on the intercom they’re playing our music. It’s a huge recognition: they don’t know we’re here but they still play our music. That’s more important to us than being recognised on the street.
Are there any group rituals? FS No. We’re a very close-knit band, we’ve been together since we started, so we know each other’s rhythms. We’ll soundcheck, then it’s always nice to sit and eat together. RL At the dinner before we don’t talk about the music or the show, although that doesn’t mean we’re not thinking about it. You won the Eurovision Song Contest in 1995. What can you remember about that night? FS To get that vote when you know there’s around 180 million people watching and to get out there and perform with a full orchestra was amazing.
You Raise Me Up is one of the most played songs in the world. Tell us about it. RL It’s a great story. We recorded it as part of our album in 2001, we released it and it was picked up by other artists very quickly. It was a song a lot of singers felt they could use for their own projects, maybe because it’s a ‘singer’s song’. It’s a song that challenges good singers. Josh Groban’s recording went to number one in America and from there it’s history. Today it’s been recorded by about 100 artists and has sold about 100 million units. You’ve described your new album, Just The Two Of Us, as being different from the rest. In what way? FS For our previous albums we’ve recorded with our band, full orchestras and choirs. This album we brought it down to piano and violin. We wanted to do an intimate album. We revisited a lot of previous material and re-recorded it, starting with a clean slate. We wanted to bring out the beauty of the melody and challenge ourselves. What can fans expect from Secret Garden in 2015? FS We’re looking forward to celebrating 20 years together, so we’re planning a few activities around that.

Equal measures Action thriller The Equalizer sees Denzel Washington reunite with Training Day director Antoine Fuqua. To get in shape for his role as a mild-mannered man with a secret, Washington trained for six months with Navy SEALS. ‘They know all the dirty, good stuff!’ he says. The actor and director now plan to buddy up for a third time. ‘We’ll have a film out probably in two years, riding horses,’ says Washington. ‘A western.’
ramlee’s world

An icon of Malaysian cinema, P. Ramlee is remembered on board this month in six classic roles…
Anak-ku Sazali (1956) A family drama from early in Ramlee’s career. He plays two characters and composed the movie’s songs, including one that forms the central bond between a father and son. Nujum Pak Belalang (1959) Ramlee takes centre stage as an idle opportunist who pretends to have psychic powers. Another multi-talented performance drives this comedy adapted from Malay folklore.
Pendekar Bujang Lapok (1959) An award-winning Singaporean comedy, this is a loose sequel in the popular Bujang Lapok series. Ramlee stars, directs and scores this story about three hapless bachelors.
Ibu Mertua Ku (1962) An ambitious hybrid of romantic comedy and tragedy, Ibu Mertua Ku is another of Ramlee’s movies that attacks 1960s Singapore’s richpoor divide. He directs, co-writes and stars as a small-time musician.
Ali Baba Bujang Lapok (1960) This quirky retelling of Ali Baba & The Forty Thieves futher proved Ramlee’s pedigree as an entertainer. At the heart of this unusual comedy is a satire about Malaysian life.
Madu Tiga (1964) One of the most popular Malay comedies of all time, Madu Tiga tells the tale of Ramlee’s Jamil, a bigamist on borrowed time. Unlike Ramlee’s other comedies, physical gags are secondary to a sharp script.

World Travellers Based on real events, The Good Lie follows four refugees from the Sudan civil war to America. Reese Witherspoon stars alongside several Sudanese actors who made a similar journey: • Emmanuel Jal, a rapper and activist who plays Paul, was forced to become a child soldier before escaping to London. • Ger Duany, a model and actor who plays Jeremiah, was one of the real life ‘Lost Boys’ who moved from Sudan to America that the movie documents. Deep sea mysteries Covering about 1,000,000km2 in the Atlantic Ocean between Bermuda, Puerto Rico and Miami, the Bermuda Triangle is a mysterious area of ocean and sky in which more than 5,000 people, 1,000 ships and numerous aircraft have disappeared. The documentary Bermuda Triangle Exposed looks at some of its strangest cases, such as: • In 1918, navy ship the USS Cyclops vanished on its journey from Barbados to the US, with no debris or any of the 309 fatalities ever discovered. • None of the ships or aircraft that have disappeared in the Triangle have sounded an automatic alarm indicating that they are sinking or have crashed.
Grace under fire Debra Messing returns in cop comedy-drama The Mysteries Of Laura A police procedural with a twist, The Mysteries Of Laura follows a single mother who must cope with the strain of raising a family and the stress of her day job. Debra Messing, previously star of hit sitcom Will & Grace, plays the titular heroine, a homicide detective in the New York Police Department. ‘I love the character because she’s real, she’s flawed, but a great mom and a passionate worker,’ says Messing of what attracted her to the role. ‘When I read the script I felt like I had never seen anything like it before,’ she adds. ‘It’s fast-paced, funny and dramatic.’ The Mysteries Of Laura is actually adapted from a Spanish TV series, Los Misterios De Laura, currently in its sixth year.
To undertake her own research for the role, native New Yorker Messing went on a ride along with a real-life female NYPD detective. ‘I peppered her with questions,’ says Messing. ‘The most surprising thing I learnt was how important humor was for homicide detectives to get through what they have to see and deal with every single day.’ So, the show’s quirky mix of laughs, drama and mystery is closer to reality than it may seem at first glance. Showing on board this month are the series’ first three episodes, in which Laura must catch three killers, control her mischievous five-year-old twin boys and deal with her soon-to-be ex-husband, who also just so happens to be a fellow cop.

• Pilot Cary Trantham was flying over the area in 1995 when her plane’s control panel lights began to flicker and she lost all radio contact. She said it was like a blanket had been thrown over her plane, but somehow she survived. • The lighthouse on a small island inside the triangle was discovered abandoned in 1969, and the two lighthouse keepers were never found. All aboard Asked to explain the title of his band’s latest studio effort, Train frontman Pat Monahan admits that Bulletproof Picasso resonates on a couple of levels. ‘It’s the title of a song on the album,’ he says. ‘It’s also a way to describe Train – having dodged bullets all these years and still existing as artists.’ The latest hurdle the San Francisco roots rockers have overcome is the departure of long-time drummer and founding member Scott Underwood. ‘We miss Scott,’ he says. ‘He’s a great guy and a great drummer, but we have a great new drummer who brings a whole new fire and energy to what we’re doing. So it’s fun for us, too. Fittingly, the songs on Bulletproof Picasso reflect this. Asked what people can expect, Monahan says: ‘Life experiences… without the bad, you don’t have the good. I think there’s a combination of heartbreak and also joy.’ Bulletproof Picasso is playing on board this month. See page 120 for details
Swiftly does it Taking its name from the year she was born, 1989 is prolific pop star Taylor Swift’s fifth album. Here are five more facts about the 25-year-old American’s multimillion-selling new record: • While her first three albums were full of country music, Swift says 1989 is her ‘first official pop album’. • Its musical influences mostly come from the 1980s, such as Madonna, Phil Collins, Bruce Springsteen and Annie Lennox. • Most of the songs are about being in or out of love, mainly with people –such as the single Blank Space –but also Swift’s move from Nashville to her new home, on Welcome To New York. • While promoting 1989, Swift invited fans to secret listening sessions at her houses in New York, Nashville, Los Angeles and Rhode Island. • Swift’s ex-boyfriend, Harry Styles from British boy band One Direction, allegedly sent her 1,989 roses to mark the album’s release, in an attempt to get back together with her.

Pandas 1,600 papier maché pandas arrive in Malaysia with conservation message
Text Justin Chee
On their journey around the world to promote the message of panda conservation and sustainable development, 1,600 papier maché pandas will visit more than 15 iconic landmarks across the country for the 1,600 Pandas Malaysia Tour. With the theme of Initiating the Culture of Creative Conservation, the tour is being held for the first and only time in Malaysia until 25 January. Fresh from a social media frenzy and strong local participation across the globe, the 1,600 pandas arrived on Malaysian soil after more than five years since their first appearance in France. The 1,600 Pandas World Tour, which started in 2008 as a collaboration between World Wildlife Fund (WWF) and acclaimed French artist Paulo Grangeon, has since appeared in more than 100 exhibitions across countries such as the Netherlands, Italy, Germany and Switzerland. Malaysia is the pandas’ third stop after Hong Kong in Asia. facebook.com/1600PandasMY
