The festival of Eid, or Hari Raya Aidilfitri in Malaysia, is a nostalgic time for me. It reminds me of my childhood friends Nizam, Faizal and Atan back in my hometown of Segamat, Johor. The three boys come from a family of 11 children and they lived next door to us. goingplacesmagazine.com / 6 / July 2016

HARI RAYA was always a huge, boisterous affair at their home. With 11 children, you can imagine the age gap of the siblings. As Hari Raya approached, the older children would return to the kampung from the city or from overseas where they were working or studying and the atmosphere would turn lively.

Coming from a small family, I looked forward to visiting them and to be immersed in their revelry on the first day of Raya. One of the things I missed the most was the food. The ketupat (diamond-shaped rice cakes), beef rendang (curry), serunding (meat floss) and the cookies, while available throughout the year these days, somehow tasted much better when eaten during the festive season. This month, Muslims around the world will celebrate Hari Raya after a month of fasting. In the spirit of this important celebration, we invited Malaysian chef Marina Mustafa to introduce to us dishes that are traditionally eaten during this festive period. In her story, Marina explains about the dishes and gives us a little insight into how Hari Raya is celebrated

at her home. We are also fortunate to be able to tell the story of Noorshafry Abdul Malik, or more endearingly known as Atan, who makes lemang (glutinous rice) – another Raya musthave – using pitcher plants instead of bamboo stems. If you guessed London is the city illustrated on this month’s cover, you are absolutely right. The great city of London has something for everyone, from historical to modernday attractions. We also take a close look at Kyoto’s Zen gardens. While spring is a popular time to visit these gardens to see the blossoming cherry trees, autumn is equally ideal to soak in its beautiful fall foliage. This month, we caught up with Royal Selangor’s Chen Tien Yue. The executive director and fourth generation descendant of the founder of the world’s largest pewter maker shares the brand’s philosophy on staying relevant for the long term. We also met up with Edric Ong, the Sarawakian fashion designer who has worked tirelessly to promote pua kumbu, the multi-coloured ceremonial cotton cloth in traditional patterns

Dear Editor, I am an avid reader of Going Places. Over the years, the magazine has improved by leaps and bounds, with creative and innovative content and design. Your April 2016 edition featured a story ‘‘Generating Opportunities’’ that struck a particular nerve with me. Just the day before, my own son was diagnosed with Asperger syndrome, combined with attention deficit hyperactivity disorder (ADHD). Naturally, I was overwhelmed with worry and uncertainty for my child’s future, whether I would be able to fulfill all his special needs. It was as if Providence had lent me a hand to read about the wonderful work being done by Puan Juairiah and her team. I salute them as well as the supportive parents of GOLD (Generating Opportunities for Learning Disables) students. To know that there are such avenues provided for our beautifully-different children is inspiring and comforting. I hope Going Places will feature more of such stories in the future, as well as how we are able to lend our support towards these causes. Making a golden future together.

It was in a relaxed setting, and the questions were kept very simple. This young man was among the 12 trainees who were meeting representatives of various companies that day to determine their suitability for job placements. These trainees all have learning difficulties such as Down syndrome, autism, dyslexia or attention deficit hyperactivity disorder, lifelong conditions that make it very difficult for them to lead independent lives or hold jobs.

The interview was held at the GOLD (Generating Opportunities for Learning Disables) centre, a not-for-profit organisation, which offers support for people with learning disabilities who have completed secondary school. “It’s like a matchmaking session, job matchmaking,” said its founder Juairiah Johari with a laugh. An energetic school teacher by day, Juairiah plans and oversees the Economic Empowerment programme for GOLD on a volunteer basis.

GOLD takes in graduating students from the special needs class of Bandar Sunway secondary school where Juairiah teaches, along with several from other schools. Admission is based on their ability, as well as the commitment of their parents as this is instrumental to their children’s success. “The parents have been very supportive,’’ she said. GOLD, in fact, began in 2000 as a parental support group for the Bandar Sunway school’s special needs class. As the children grew into young adults, GOLD grew along with them to become a centre for those who have completed schooling. While they are not independent enough to find jobs, many can work in a sheltered environment where their needs are understood. GOLD, thus, began an Economic Empowerment programme in 2012 to create work opportunities in a supported workplace.

Around 12 trainees, aged 19 to 31, now come to the centre every weekday from 9 am to 5 pm. Supervised by two teachers, they bake cookies, make greeting cards and stick

“I LIKE TO COOK,” the young man answered tentatively when asked about his interests. Dressed neatly in a white shirt and black pants, he was attending a job interview, but it was no ordinary interview.

decals onto ceramic items, all for sale. They receive wages as well as state retirement and insurance benefits. But it’s not just about earning a wage. Their work there also helps them gain the skills for open employment, as it is GOLD’s ultimate aim to help them lead independent lives. And this is where the job matchmaking comes in. For those ready to leave its sheltered confines, GOLD tries to find them suitable positions, usually in the kitchen or housekeeping in a hotel.

It’s a time of celebration when trainees are able to leave the centre for the big world but it’s also such a great challenge that the risk of failure is high. Thus, they still come to the centre twice a week, while working outside for the other three days. In this way, the teachers can help reinforce their skills, as well as assist in paperwork like filling forms and taking them to the bank to cash their pay cheques. So far, GOLD has placed 120 trainees but many lasted only a few months because they couldn’t fit in. They returned to work full-time at the centre, and the process begins all over again.

Its journey hasn’t been easy but GOLD has been resilient and persistent. With seed funding from the Sunway Group, a large Malaysian property conglomerate, it experimented with many ways to find work that its trainees can do and which the public wants.

Owned and made by the two-person team of See Pin & Michael, Cocoraw produces small-batch Belgian chocolate ganaches in three primary flavours: dark, milk, and Salted Gula Melaka, with occasional specials Alcoholics Anonymous (chocolates made with rum) or Surprise (carbonated chocolate) having turned up on their Facebook page. Taka by Sushi Saito serves up arguably the best sushi in Asia outside of Japan. Located in St Regis Kuala Lumpur, the high-end Japanese restaurant is Malaysia’s first restaurant by Chef Saito, himself the youngest three Michelin-starred sushi chef in the world. And as you would expect, the sushi here is impeccable: All ingredients are personally chosen by Chef Saito from Tokyo’s Tsukiji market and shipped to Kuala Lumpur, with Taka by Sushi Saito’s offerings mirroring those served in his restaurant in Tokyo. What do you love most about this city? Food, and the space. I’m coming from Hong Kong and it can feel claustrophobic. Whenever I get to KL it feels like there’s space again. Plus the city has a million malls, and that makes me feel nostalgic for Canada.

One thing about the locals. I love the South African accent, of which there seems to be three. African, Afrikaans, and a British sort of South African accent. They’re all awesome.

Where would you take a first-timer to in this city? Eat. I would take them to eat, eat, eat! I love the food in KL. What is the one thing that the first-timer must do in this city? Eat bak kut teh. Or paper thosai. Or go to that mamak shop and get some Indian food. The best place to have dinner with: a. family - my mom is pretty conservative, so I'd probably bring her to one of the malls and eat at one of the trendy contemporary restaurants you can find all over the city. b. friends - I'd hit the street, and eat at a local place. Get some drinks, and keep the food coming. The best thing about the locals. They’re savvy and are ready to give you back any sass you give them. I talk a lot. I make a lot of jokes, and I like to think I’m pretty quick, but the locals in KL can give it back to me as quickly as I dish it out. I like that. Name one souvenir to bring home. A durian. Why not? Five words that sum up this city. Vibrant, delicious, multicultural, modern, and beautiful. Where might we find you at 1 am in this city? Probably at the hotel. I get tired early these days.

The one place that everyone must visit. Climb Table Mountain! Or at least hike up. I climbed it but that’s just me. The one local dish everyone must try. Sticky toffee pudding. I first had this here, and it’s meant to be a pretty local dish and it’s incredible. Also, you can try eating ostrich. They have a lot of ostrich there and it’s really, really good. The best thing you can do here for free. Climb Table Mountain! It costs nothing though if you don’t want to hike down after going all the way up there, you may have to pay to ride on the cable car. A lesson learnt from this city: I used to come here for the season when I was a model, and I learnt the sun shines too bright in South Africa. Seriously, we used to stop shooting between noon and 3 p.m. because the sun was just too much. What was the best piece of souvenir you took home from here? I bought some really cool native masks from here, and some great batiks, a sort of wax painting thing. Name something they have that you wished you had at home: Lots of ostrich meat and great wine for really cheap. Honestly, it’s more the scenery of Cape Town that I wish I had. When I lived here, I had an ocean view and would see dolphins and whales. I wish I could take that view with me.

We’re getting smarter every day, right? IT HAS BEEN TWO DAYS since something truly terrible happened to me. I left home without my mobile phone. Everything’s OK now, we’ve been reunited. I’ve recovered from the trauma, thanks for your concern. But for approximately one hour, I was out of contact with the entire world and it was a very frightening experience. goingplacesmagazine.com / 30 / July 2016

During that one hour I did speak to actual human beings but I couldn’t tap their faces to have them reveal pictures of kittens. I tried but it didn’t work. And I had a very profound thought: this is what it must have been like back in the Dark Ages when there were dragons and stuff; when warring families competed for control of a spiky metal throne; and when there were no WhatsApp groups with hundreds of messages that you can’t be bothered to read but you don’t want to leave the group because then they’ll think you’re arrogant. That’s right, it was just like being back in the 1990s. During that one hour without my smartphone I was a stupid person because I was unable to access Google. Google makes me smart, right? Just now a fragment of an old song came into my head but I couldn’t remember the name of the band so I turned to Google. The song was Making Plans for Nigel by the band XTC and it reached number 17 in the U.K. charts in 1979. I am now smarter. Right? Maybe or maybe not but it surely brings us all together because now we can be in contact with people and ideas from around the world at any time. Right? I was at a restaurant on Sunday night, which is when families eat together, because families that eat together stay together. There were four families at four tables and none of the family members were talking to each other. They were all on their phones “talking” to other

people. The restaurant was silent except for the sound of people asking for the Wi-Fi password. I was going to take a photo of them all and post it on Instagram but then I got a message on WhatsApp and I got distracted and forgot all about it. I can’t find any figures on smartphone usage around the world. There are figures on per capita smartphone ownership. According to a Pew Research Center survey in 2015, South Korea led the world with 88 percent owning a smartphone. Malaysia was at number eight with 65 percent, which was a leap from 34.5 percent just two years earlier. Ownership is one thing but actual usage is another matter. A couple of years ago I was in Istanbul (population 14 million) and I thought I’d take a look at my Waze app. In Kuala Lumpur (population six million), you’ll find 25,000 people using Waze to help them find a path through the terrible traffic. In Istanbul, there were 25 people using Waze. This is flimsy anecdotal evidence upon which to build an argument but perhaps there are cultural differences in the way smartphones are used and therefore, the different levels of smartphone addiction. Smartphone addiction is an epidemic taking over the planet (except perhaps for Turkish drivers) and I readily admit to being an addict. The addiction’s side-effects include being distracted, only ever having conversations

about re-posted stories you’ve seen on Facebook and saying things like, “I just want to watch this video about the Roman army and then I’ll do it, OK!?” The Internet is great and smartphones are great. I feel safer having one with me when I leave my home so I don’t want to turn the clock back to the Dark Ages or the 1990s when the only thing available on the early Internet was buffering … buffering. But it is a distraction that perhaps leads to an accumulation of trivia that we often mistake for knowledge. If only there was a way to take a holiday from the smartphone without feeling the panic that we might be missing out on something. You have to switch off your phone when you’re on a plane. You feel the anticipation for the destination but it’s still several hours away. You leaf through the in-flight magazine, check out the movies and then settle down to watch that Jennifer Aniston romantic comedy that didn’t get great reviews but still sounds like it might be fun. The darkness of the cabin and the sound of the engines give you a cloak of privacy and you’ll watch the movie. During the flight itself is one of the few places where one can take a holiday from the distractions of the smartphone.

If only there was a way to take a holiday ‘‘from the smartphone without feeling the panic that we might be missing out on something.„

Royal Selangor is a luxury giftware and home décor brand with a heritage of pewter craftsmanship dating back to 1885. We design, craft, market and retail a wide range of pewter product categories: from tableware, home décor and tea-sets to personal accessories and baby gifts. Designers such as Erik Magnussen of Denmark, Nick Munro of the U.K., Jamy Yang of Shanghai and Freeman Lau of Hong Kong have designed ranges for Royal Selangor. We have also worked with some of the best museums in the world for design inspiration, including the National Palace Museum in Taiwan and the V&A Museum in London. Today, Royal Selangor products can be found

in the best department stores around the world, from Wako in Tokyo and David Jones in Sydney, to Harrods and Selfridges in London and Hudson’s Bay in Toronto. What is your role as Executive Director of the company? I work with our sales and marketing offices in Asia to build the Royal Selangor brand. We have our own Royal Selangor teams in Singapore, China, Australia, Hong Kong and Japan, and we work with exclusive distributors in Indonesia, Vietnam, Taiwan and Saudi Arabia. Four of us from the fourth generation of the family are currently working in the Royal Selangor group of companies: Yoon Li heads our design, manufacturing and group marketing functions, Chris provides creative direction for the Royal Selangor brand, and May Foon is Creative Director for Selberan, our fine jewellery brand.

Royal Selangor has been in this business for more than 130 years; how have you kept the brand and the products relevant? All of us at Royal Selangor are very proud of our rich heritage of pewter craftsmanship. We believe this authenticity, this preservation of craft from 1885, really resonates with our discerning customers. When you combine this authentic heritage with our intense level of product development activities, we believe you have the right formula for longevity. We launch over a hundred new designs a year. Last year’s launches brought many new customers to Royal Selangor through new licenses such as Star Wars, or new product categories such as whiskey. Achieving greater relevance in the lives of our customers will come from getting them to use our products more often, rather than keeping them purely for decorative

purposes. Many will place photos in our frames, or keep their tea leaves fresh in our double-lid tea caddies, but I wish more customers would use their tankards and tumblers for cold drinks, and not save our wine goblets only for special occasions!

The business pretty much started off as a cottage industry but has now evolved to become a global luxury brand; when would you say was the defining moment for the business?

I do not believe there is one single defining moment for our journey, which has lasted over 130 years. Some companies have transformed their business with the introduction of a single new product or category. Our story is different; it is one of continuous evolution and it has been made possible by the passion and loyalty of our craftsmen. They have nurtured and preserved (our founder) Yong Koon’s legacy; they have moved with the times as we repositioned the brand. Half a million visitors to our Visitor Centre each year see these 250 craftsmen at work, and they make fantastic ambassadors for the brand.

As a fourth generation flag-bearer, where will you take the company in the next 20-30 years? Our leadership team at Royal Selangor consists not only of family members but also non-family managers with decades of Royal Selangor experience working closely with dynamic young department heads. Heads of Design, Group Marketing, Communications, Sales, E-commerce are all in their 30s. This is the team taking us forward for the next 20–30 years. They are already engaging our customers in more effective ways, for example through our Facebook and Instagram platforms, our recently-revamped website, royalselangor.com, our loyalty programme Privileges, as well as on-ground activities like our current series of Star Wars roadshows. These communication or engagement activities not only help us reach a new generation of

consumers, but also customers in new geographies. The world is clearly a smaller place today, which means huge growth opportunities outside of Malaysia. We are conscious of the need for our product offering to be relevant to the lifestyles of each market we enter, so we will need to focus on a few key markets. The U.S. and China alone could keep us very busy for the coming years.

How are you going to do that? Well, with this management team in place, I plan to take it easy!

Keeper of Tradition

1. Ong is one of Malaysia's pioneering defenders of heritage crafts 2. His unique fashionwear is mostly hand woven and hand painted with natural colours

THE CAFÉ IS FILLED WITH the mid-morning coffee crowd, but Edric Ong stands out easily. There’s a certain air of debonair about him, and besides, there is no missing his quirky rattan hat in grey, orange and crimson.

The hat was designed for the annual Santa Fe International Folk Art Market, which aims to celebrate and preserve living folk art traditions and create economic opportunities for artists worldwide.

The multi-pointed hat was designed by Ong as a quirky take on the topi tunjang, a traditional Iban warrior’s hat. To its basic round shape, he added a brim and dyed it in natural colours for subtle funkiness.

“It became a show-stopper as people stopped to ask where they could get the hat. It’s a good ice-breaker,” Ong says. “In every show, you are an ambassador for the country.”

The hat is one of Ong’s many innovative designs to update the traditional crafts of the native communities of his home state of Sarawak. It is a fitting symbol of his lifetime mission of reviving Malaysia’s indigenous arts.

In his tireless mission as ambassador for these old arts, Ong says crafts don’t have to stay stagnant as the same techniques can be used to create new products to appeal to the contemporary market in Malaysia and the world. For instance, Iban woven items are now used to make bento boxes for Japan or storage baskets for Australia, and native rattan creations and beadings have been turned into buttons that have become a hit in the U.S. Innovation in craft is the ethos behind Ong’s dizzying range of projects. On some days, he is a fashion designer who pioneers new uses for old crafts, and uses fashion to promote them. On other days, he’s a hands-on researcher working with natural dyes to find new ways to update old techniques. Yet on other days, he is jetting around the globe to promote heritage crafts, the best of which can hold their own among the best in the world. Malaysian weaving and fine basketry are second to none, he said. Ong’s three decades of work have won him recognition as one of Malaysia’s pioneering defenders of heritage crafts. Along with roles such as president of Society Atelier Sarawak, he has picked up so many awards that even he might find it hard to remember all of them. The most recent was at the 2016 Mercedes-Benz Stylo Asia Fashion Festival, where he won the Stylo Global Fashion Influencer Asia 2016 award presented to fashion icons who have put Malaysia on the international map. Today, Ong’s days are filled with perusing the finest details of handicraft, but his career actually began with much bigger structures. He was an architect for three decades, working on landmarks such as the Sarawak Cultural Village.

But to him, architecture was never just about buildings. It’s about designing an entire experience, and hence, he did not stop at just designing the outward structure but also delved into the finest details of the finishings and furniture. “As an architect, I was interested in all aspects of the design, from outside to the inside. These should all be designed, including the furniture to accessories. Sometimes, people say, you are a control freak!” he says. “Otherwise, it will not look right.” Ong found Sarawak to be a treasure trove of traditional designs for his architectural works, and there began his journey to preserve these heritage arts. A soft-spoken man with an infectious grin, Ong’s big project this year is co-curating the exhibition and symposium entitled 'World Ikat Textiles, Ties that Bind' in the prestigious Brunei Gallery at the School of Oriental and African Studies in London. Ikat is a tie-dyeing technique that is still practised in five continents, with some of the most beautiful Ikat textiles made by Iban weavers in Sarawak using natural dyes obtained from the bounty of the rainforest. With so much on his plate, Ong has put his architectural practice on the backburner to focus on indigenous crafts, fully aware though that he’s fighting an uphill battle to keep this old heritage from disappearing.

“The education system has detached the younger generation from their home, so it’s a big challenge,” he says. Crafts traditionally done by women such as textile or basket-weaving have a better chance of survival while those done by men like wood-carving are much harder to revive, he says. Many of the younger men who used to make wood carvings have now gone to work in timber camps. Yet, he says it is imperative to preserve this precious heritage of the country. “Craft is culture, and culture is people. Without culture, you have lost your identity,” he says. “It’s important to preserve our culture and heritage because that defines our identity as a people.”

OUR VISIT TO KYOTO was during the beautiful sakura season in April so we could soak in the hanami (flower viewing) atmosphere, which is a tradition with the locals during this time of year.

The city is bustling with tourists and locals alike, socialising outdoors in the balmy springtime temperature. The bamboo groves are fortunately always open, and we are determined to enjoy the place in peace, so we arrive early at 7 am. Taking advantage of our Japan Rail Pass, we jump on the train from Kyoto station to Saga Arashiyama station and follow the white signs on the pavement leading us to the site of the bamboo groves and Tenryū-ji Temple (Heavenly Dragon Temple). There are fewer than a handful of other visitors, all nodding with acknowledgement that the early wake-up call was well worth it. goingplacesmagazine.com / 46 / July 2016

The morning breeze makes the foliage of the bamboo rustle, and a stronger wind makes the bamboo shoots collide and chime with hollow chords. When we arrive at the beginning of the path, the sight is pure green serenity. The sunlight moves through the elegant shoots, carving different patterns on the path and reminding us of the limited time we have to enjoy this tranquillity.

Reenergised and warmed up, we stroll back and visit Tenryū-ji Temple, a World Heritage site since 1994. Shinto shrines and Buddhist temples are often located next to bamboo groves for strength and to ward off evil spirits. Tenryū-ji Temple is no different. Established in 1339 in memory of Emperor Go-Daigo, the temple is set on a small hill and hosts one of the oldest landscape gardens in Japan.

The next afternoon, after exploring Gion, Kyoto’s entertainment district, we head to Kennin-ji Temple in the same area. Whilst navigating the maze of tatami mat rooms and old Japanese artwork, the humming background noise from other visitors suddenly stops at a small zen garden. Positioned in front of the priests’ living quarters sits the Circle, Triangle and Square Garden based on calligraphic work by Sengai Gibon, a former temple abbot. It is adopted in the most minimalist form with the tree of life at the centre, a set of bamboos lying on a square rock, and a

Good to know: • The first manual of Japanese gardens is called the Sakuteiki (Records of Garden Keeping), written at the end of the 11th century.

7 triangle form from the back wall when you are viewing the garden from a sitting position. The concept is that all things in this universe are represented by these three forms. At the back of the temple is a larger garden, where we lull away the rest of the afternoon. In the corner, a fivetier stupa and a beautifully carved doorway add to the grandeur. The early evening sun casts long shadows from the bordering trees to take centre stage in the carefully raked gravel. The reduced colours and modest vegetation of the gardens are designed to aid in meditation about the meaning of life. I can’t help but reflect and feel emotionally weightless. The crowds thin out at around 4.30 pm, leaving me comfortably gazing out. We are the last to leave the temple, reluctantly putting our shoes back on before enjoying the nightly drama of Kyoto’s nightlife.

• Gravel is usually used in zen gardens, rather than sand, because it is less disturbed by rain and wind. • Legend has it that evil spirits can only travel in a straight line, so a zigzag bridge in a Japanese garden traps the spirits, allowing one to escape to safety. • The Japan Rail Pass has limited use in Kyoto as there are only a few JR lines on Kyoto’s transport system. The Arashiyama Bamboo Groves is one destination for which visitors can use it. • Arashiyama Bamboo Grove is free to enter

and always open, so head there early to avoid the crowds. • Tenryū-ji Temple is at the same site as the bamboo groves. Tenryūji Temple opens at 8.30 am until 5.30 pm. Entry fee is ¥500 for adults (USD4.60/RM18) and ¥300 (USD2.70/RM11) for children. • Kennin-ji Temple, the oldest temple in Kyoto, opens at 10 am until 5 pm (last entry at 4.30 pm) near Gion. Eid marks the end of the fasting month of Ramadan, the holy month that espouses restraint. It is about self-control and understanding the difficulties and sufferings of others. During this month, Muslims around the world not only abstain from food and drink from sunrise to sunset but they practise restraint in all aspects of their behaviour. Ramadan is a month of cleansing. Ramadan, for me, is an intensely spiritual month. I see it as a time when I strive to better myself as a Muslim and a person. Therefore, when Eid arrives, we eat, celebrate and seek forgiveness so we can start anew. It is an exciting time to catch up with family and friends. AFTER A WHOLE MONTH OF FASTING, itâ&#x20AC;&#x2122;s only natural to assume that the Muslim festival of Eid is all about food. In truth though, the spirit of this meaningful time of the year rests in the reasons why it is celebrated.

Lemang This is an all-time Eid favourite in Malaysia. Glutinous rice is cooked with coconut milk in a banana leaf-lined bamboo, making for a delicious treat. The filled bamboo tube is placed slightly slanted on a small fire with the opening facing upwards. It takes about four to five hours to cook lemang, while requiring regular turning to enable even cooking. Cooking on an open flame is what gives lemang its distinct smoky flavour with the hint of a grilled effect â&#x20AC;&#x201C; tender and creamy on the inside and slightly crispy and crusted on the outside, with the aroma of the banana leavesâ&#x20AC;&#x2122; natural essence permeating the rice.

Directly translated, nasi impit is compressed rice. Basically, it is rice cooked till very soft and pressed onto a baking pan. Another way to cook nasi impit is to place some rice in a bag that is sealed and boiled for several hours until the rice swells and the bag becomes compact. Due to the starch from the rice, the rice becomes firm yet tender when cooled. Nasi impit is normally cut into cubes and served with savoury fare.

Steamed glutinous rice is folded into palm leaves that are weaved into triangle casings and boiled in thick coconut milk for a rich taste. The more unique version is the ketupat palas filled with glutinous rice and red kidney beans.

Serunding Serunding (meat pan-fried with grated coconut and spices till the texture becomes light and flaky) is a â&#x20AC;&#x2DC;mustâ&#x20AC;&#x2122; dish during Eid. Like the rendang family, serunding comes in many forms â&#x20AC;&#x201C; beef, chicken, fish, prawns or coconut serunding. The intense effort and long hours put into making this dish is worth it as the result is an intensely flavourful condiment, perfect for eating with nasi impit, ketupat palas or lemang.

6 Rendang Rendang is a well-loved dish throughout Malaysia. The basic rendang is made using lots of coconut milk, spices, galangal, lemongrass, shallots, ginger and kerisik (toasted grated coconut). Meats such as beef, chicken, lungs or liver can be used to make rendang. The tastiest rendang is cooked for long hours on a low flame, allowing all the ingredients to intertwine. Each state in Malaysia proudly boasts its own version of the rendang. The most wellknown is the Rendang Tok Perak, in which every possible spice is used, followed by Rendang Negori, where coconut milk and cili padi play a major role in the rendangâ&#x20AC;&#x2122;s unique flavor.

Quite a contrast to the typical Eid dishes, it is soothing and light. Ideal to be consumed with serunding or sambal over a heap of nasi impit cubes!

Pineapple tarts Pineapple tarts are a favourite Malaysian cookie with many variations. They are enjoyed during many festivities in Malaysia, including Eid. These are small, buttery and crumbly pastries filled with or topped with pineapple jam. My family makes our own pineapple jam from grated pineapples cooked on a low flame with sugar, pandan leaves, cloves and cardamom. Pastry made from a well-kept family recipe surrounds the thickened jam balls, and the tarts are shaped and baked till golden brown. The explosion of a lightly spiced jam when biting into the outer pastry makes it the perfect cookie for celebrating Eid.

“CHEFS ARE THE NEW ROCK STARS. CAN YOU BELIEVE IT?”

From the mouth of just about any other celebrity chef, such a statement might be met with a sideways glance. But coming from Filipina chef Margarita Forés, Asia’s Best Female Chef for 2016 according to the Asia’s 50 Best Restaurant awards, it’s hard not to share in her awe. There’s the gleam of a groupie in her eye when Joan Roca, legendary chef of El Celler de Can Roca, often ranked the best restaurant in the world, appears onstage at Madrid Fusión Manila, an event she played an instrumental part in bringing to her home country. She can barely contain her excitement. Forés may have the culinary equivalent of a schoolgirl crush on her fellow chefs, but the rock star label could just as easily fit her, too. More often than not she is the one onstage, not in the mosh pit. Fans rush up to her asking for selfies. She’s a regular in glossy magazines and on TV talk show sets that feature the lives of sosyal personalities – shorthand in Filipino for the rich and famous – when she’s not jetting off to Madrid, Bangkok, Berlin or Turin in her role as unofficial ambassador of her country’s cuisine. Being a passionate defender of Filipino food is a cause close to Forés’ heart. One minute she is demonstrating how to eat balut or fertilised duck eggs, the next she is waxing lyrical about upcountry heirloom rice or spicy food in Bicol. She is a firm believer in supporting local growers and was one of the first chefs in the Philippines to see the value of organic produce, long before others jumped on the bandwagon. She embraces the multi-cultural influences in Filipino cuisine. “Malay, Chinese, Spanish and American all left something that forms a national identity and a national cuisine that is uniquely Filipino. We’re Asian and Latin. That’s the history of our country and of our food.” Margarita Forés didn’t set out to be a chef. The family left the martial law of Marcos’ Philippines for a comfortable exile on New York’s Park Avenue when she was just 11.

1 One of her first jobs was in fashion, a glorified gofer for the designer Valentino, a position she landed thanks to the connections of her socialite mother. It was during Forés’ time in New York that she developed a taste for Italian food and began to throw dinner parties where she’d cook pasta and other Italian dishes. When her grandfather passed away in 1985, the family returned to give him a proper burial in his homeland. By that time, the political winds had changed and the dictatorship was coming to a close. But young Gaita, as Forés is known to her friends, was still restless and decided to explore food in Italy to see if there was something in it for her. Though her time there was brief – all of four months – she threw herself into learning everything she could about Italian food, culture and language. When she returned to Manila, she began working as a private chef and then moved into catering. She likes to recall that things were very different back when she was

1. In a sauce pan over medium heat, add butter and heavy cream and cook till slightly thickened. Season and set aside.

I was a woman, and given my background, no one expected me to work, not hard work, not physical work in a kitchen.” She proved them wrong. Forés started a catering business in 1987 but it took her a few years to get grounded and find her way. She recalls bungled orders and the indulgent customers who gave her a second chance with equal parts amusement and embarrassment. The birth of her son Amado in 1990 was the turning point that gave her life more focus. In 1997 she opened her first Cibo restaurant, the hugely successful Italian-dining chain that now counts 10 outlets. The concept updated people’s vision of stodgy Italian food and transformed it into something light and modern. “It’s affordable, but we don’t scrimp on quality. We use the best products we can find, both from Italy and locally. That’s the key to my approach to cooking. The cuisine at Cibo is classic Italian, so our pasta, olive oil, cheeses, coffee come from the best purveyors in Italy, but we

have local squash flowers to put on our pasta and pizza, or beautiful mangoes to enhance our panna cotta. This is (my) philosophy in all that I do: never compromise the authenticity of the cuisine and showcase the best of my own country with the best of the world.” Other restaurants followed. Lusso is a high-end wine bar serving luxurious dishes like white truffle cream omelettes and foie gras on burgers. And Grace Park is Forés’ fine dining restaurant where the accent is firmly placed on organic farm-to-table produce in both Filipino and international recipes. Over the years, Forés has expanded her empire to include everything from floral arrangements to prepared foods. She is also behind Casa Artusi Philippines, the only outpost of the Italian cooking school in Asia. What’s next for dynamic Chef Forés? “(I’ll) just continue what I’m doing, but of course this will always involve sharing the food from our country with more and more people. Maybe a Filipino restaurant in New York or in my favourite European cities? Who knows? Dreams are free!”

AS THE TRUCK HURTLED DOWN the dirt road between the forests, those of us who sat on its open back clung tightly to our seats as the wind rushed up forcefully against us. Someone joked about how frightening it would be if an elephant suddenly came out of the forest to chase us â&#x20AC;&#x201C; calling to mind the scene in Jurassic Park when the T-Rex looms menacingly over Jeff Goldblum's character at the back of the speeding jeep â&#x20AC;&#x201C; and we all broke into laughter, feeling in good spirits.

We may not have been in an artificial theme park populated by cloned prehistoric creatures, but our environment was still exciting; we were in Taman Negara, Malaysia's largest national park, which encompasses an ancient tropical rainforest that is home to its own colourful cast of characters. Unfortunately, many of them are in danger of suffering the same fate as the dinosaurs of the Jurassic age. If the Tyrannosaurus Rex is the poster child for the species of that era, then its contemporary equivalent in Malaysia is the Malayan Tiger, which is facing the threat of extinction.

Earlier this year, the loss of six tigers from the wild, with five dead, in the span of a single month cast a pall on wildlife conservation efforts. The race to save Malayan Tigers is already an uphill battle as their numbers have rapidly declined over the years. With only about 250 to 340 of them left in the wild according to wildlife experts, these creatures are teetering on the tightrope of survival. The Malaysian Conservation Alliance for Tigers (MYCAT), a coalition of conservation organisations, is working hard to ensure that a future without tigers does not come to pass. Given the magnitude of the problem, an all-hands-on-deck approach is warranted. MYCAT believes everyone can play a role in ensuring the survival of the Malayan Tiger, and they have sounded the clarion call through their Citizen Action for Tigers (CAT) programme. Through this programme, volunteers participate in guided hikes known as CAT Walks at the Sungai Yu Tiger Corridor. Located just beyond the western border of Taman Negara, the corridor connects the large tiger habitats of Taman Negara and the Main Range. These excursions into tiger territory are aimed at discouraging poaching activities, which are a huge threat to tigers and other wildlife. CAT Walkers also help protect wildlife by dismantling snares and traps that they come across. “In the early days of 2010-2011, we did not have the resources to conduct CAT Walks regularly, and the programme was kept alive by the efforts of a few dedicated volunteers. Now, there are CAT Walks at least two weekends a month and we have seen the impact of the programme as poaching has decreased in the area,” says Wong Pui May, MYCAT coordinator. Since the first group of CAT Walkers set foot in the forest, cumulatively 1,133 volunteers have joined the programme, resulting in the detection and dismantling of 136 snares. Last year, its managing director, Datin Mina Cheah-Foong not only took part in a CAT Walk with her colleagues, the company also donated more than USD46,000 (RM190,000) to MYCAT’s conservation efforts. One of the highlights of the CAT Walk is the opportunity to set up camera traps that record and monitor wildlife and retrieve the images from them. “While it is difficult to actually see wildlife in Malaysia’s dense tropical rainforest, images captured on our camera traps show the diverse wildlife that calls the forest home, and that is benefitting from the protection provided by CAT Walkers,” says Dr. Kae Kawanishi, MYCAT’s General Manager.

During my time on the CAT Walk, the images from a camera trap provided a glimpse of the motley population inhabiting Malaysia's rainforests. These images inspire a visceral reaction that drives home our connection to wildlife and the larger environment. They remind us that the denizens of the forest and their ecosystem are our natural heritage; their protection should be a collective responsibility and their loss should be felt by all, not just wildlife conservationists.

Aside from CAT Walks, other opportunities to contribute include participating in MYCAT's outreach programmes, which take place in schools, night markets, and shopping centres, as well as supporting their conservation campaigns. One of their ongoing campaigns is to collect signatures for a petition demanding 'No More Dead Tigers'. Among other demands, the petition calls for maximum sentences to be handed out to criminals convicted of killing tigers and other endangered animals, and priority for maintaining tiger habitats under forest cover. “The petition aims to raise awareness among the public and provide an avenue to take action. It highlights the plight of our Malayan tigers and the threats they face such as poaching and habitat loss,” says Wong. “In 2007, MYCAT launched a petition to call for the then Wildlife Protection Act 1972 to be updated. Over 56,000 people signed the

5 petition and in 2010, the Wildlife Conservation Act was passed. We now have one of the strongest laws in the region and we need the people’s support to ensure that this Act is used to its full potential.” In the long run, MYCAT's goal is to halt and reverse the decline of the tiger population in Malaysia. As apex predators, it was not long ago that tigers ruled Malaysian forests, their numbers 10 times the current population. Now we are on the precipice of a future where they may no longer even appear on camera trap footage. The writing may be on the wall but it is not yet carved in stone. There is still time to prevent a future where tigers are the leading characters in a movie about the revival of an extinct species and its disastrous consequences. The real catastrophe we should try to avoid is the extermination of tigers in our forests.

“If it were not for the targeted conservation efforts by many parties in Malaysia, we would have already lost our tigers by now due to the high demand for tiger parts in other countries. The work we do does make a difference, and the contributions of our 1,596 volunteers are equally important,” says Wong. “Giving up is not an option as long as (tigers) still roam the rainforest of Peninsular Malaysia.”

Bertubuh sasa dan tinggi, Noorshafry Abdul Malik sebenarnya lebih menyerupai seorang askar berbanding chef yang berbakat besar. Berasal daripada keluarga yang gemar memasak; datuknya merupakan pengendali majlis kenduri manakala ibunya pula penjual nasi lemak. Ayah Noorshafry pula sering menjual lemang pada musimmusim perayaan seperti Hari Raya. Sebagai pencinta alam semula jadi, Noorshafry juga gemar bersiar-siar di Taman Negara Endau Rompin yang terletak berdekatan kampungnya, Muadzam Shah. Dalam salah satu ekspedisi di Borneo, seorang doktor tentera berkongsi cara dia memasak nasi di dalam periuk kera. Tertarik dengan konsep tersebut, Noorshafry yang lebih mesra disapa â&#x20AC;&#x2DC;Atanâ&#x20AC;&#x2122;, mula bereksperimen dengan periuk

3 kera yang banyak tumbuh meliar di kampung halamannya. Setelah tiga bulan bereksperimen dengan gigihnya, akhirnya beliau berjaya mendapat hasil yang memuaskan. Berpindah ke Puchong bagi memulakan perniagaan katering, formula lemang periuk kera Atan bakal diuji jika ia mampu diterima pelanggan. Rupa-rupanya juadah istimewa itu terus menjadi popular di Lembah Klang. Pada tahun 2010, Atan telah dijemput untuk menyertai pameran â&#x20AC;&#x153;1001 Makanan Unik Malaysiaâ&#x20AC;?, sementara juadah tersebut turut disebut

6 Setiap sesi pengutipan periuk kera boleh memakan masa sehingga separuh hari. Oleh itu, Atan lazimnya hanya akan menerima tempahan lemang sekurang-kurangnya 10 kg pada hari-hari biasa. Walaupun terdapat lebih 100 jenis spesis periuk kera liar di Malaysia, hanya spesis Nepenthes Ampullaria yang digunakan untuk membuat lemang. Spesis ini telah disahkan selamat untuk dimakan oleh Kementerian Kesihatan Malaysia. Periuk kera ini mudah membiak di kawasan hutan berpaya dan dingin di sekitar tasik. Setelah dipetik, periuk kera ini perlu digunakan dalam tempoh empat hingga lima hari sebelum ia melayu dan menjadi hitam.

Batang buluh mungkin mudah diperoleh dari pasar-pasar tani. Bekalan periuk kera bagaimanapun perlu dipetik sendiri dari hutan setiap kali Atan kembali ke kampung halaman.

Sebelum digunakan, sisa-sisa cecair penghadam dan makanan dalam periuk kera perlu disingkirkan dengan membilasnya beberapa kali di bawah aliran air bersih. Atan juga perlu membuang kelopak penutup, bulu halus dan sulur paut pada periuk kera. Setelah dibersihkan sepenuhnya, bekas periuk kera akan diisi dengan beras pulut mentah. Akhir sekali, Atan akan menyuntik santan ke dalam setiap periuk kera demi mengawal amaunnya sebelum disusun untuk dikukus. Cukup cerewet dengan hasilnya, dia juga memastikan hanya air mineral yang digunakan untuk mengukus. Menurut Atan, air paip biasa boleh menjejaskan keenakan lemang ekoran kandungan klorinnya. Cradling the purple-skinned vessel in my palm, I grip the tiny flap of skin at the rim and start pulling. Lo and behold, the skin unravels to reveal a mound of glistening glutinous rice, warm and yielding to the touch. Inhaling the aroma of coconut milk infused into the grains, I take a tentative bite out of my very first lemang periuk kera (glutinous rice in pitcher plants). Using pitcher plants instead of bamboo stems as casings for lemang, a traditional Eid staple food enjoyed with sweet-spicy serunding or rendang, may sound like a novelty. But in some jungle-rich states of Malaysia such as Pahang, Johor and Sarawak, this method of preparation has been practised for centuries. For the last 15 years or so, residents in the Klang Valley have been fortunate to savour this unique delicacy, thanks to a resettled Pahang native who makes it to order. Tall, buff and strapping, Noorshafry Abdul Malik – who looks closer to soldier than chef extraordinaire – comes from a family of cooks: Grandpa was a kenduri (a feast) king, his mum was a nasi lemak (coconut milk rice) vendor, while his dad would sell lemang during festive occasions like Eid. An avid nature-lover, he enjoys the occasional trek into Endau Rompin National Park, a stone’s throw from his village. During one such expedition, a military doctor shared how he ate wild rice cooked in pitcher plants in Borneo. Intrigued by the idea, Atan, as he prefers to be called, decided to experiment with cooking lemang in pitcher plants, since they grew in abundance at his hometown. He achieved a satisfactory formula after three months, which he put to the test when he moved to Selangor state to start a catering business. In 2010, he was invited to take part in a 1001 Unique Foods Of Malaysia exhibition. The dish even garnered a mention on popular local children’s animated programme Upin & Ipin in 2013. The ingredients for lemang periuk kera are fairly standard – glutinous rice and freshly squeezed coconut milk (santan).

The real challenge is the procurement and preparation of the pitcher plant. Unlike bamboo stems that can be easily bought in markets, pitcher plants have to be manually collected from the jungle.

Each collection trip can easily take half a day, so Atan only accepts a minimum order of 10 kilogrammes on non-festival days. While there are over 100 wild species of pitcher plants in Malaysia, only Nepenthes Ampullaria – which has been certified safe for consumption by the Health Ministry - is used for cooking the lemang. The plant flourishes in swampy forests and cool areas around lakes. Once they’re collected, the plants must be used in 4-5 days or they will start to wilt and blacken. Before cooking, the pitchers have to be rinsed with clean running water several times. Atan also snips off the lid, bristles and the tendrils that link the cups with the plant’s leaves. Once they’re thoroughly cleaned, the cups are filled with raw glutinous rice. As a final step, Atan injects each pitcher of rice individually with santan so that he can control the amount, before arranging them in a steamer to be cooked. He is so fastidious about taste that he uses mineral water for steaming because regular tap water has chlorine, which affects the taste. I notice that the skin of the pitcher has thinned considerably after cooking. Atan explains, “During the cooking process, the nutrients from the pitcher cup will seep into the rice, making it even tastier and aromatic than your gardenvariety lemang.” Scientific theory or salesman talk? I’ve no idea. But having eaten the lemang periuk kera I’ve heard so much about, I must agree on the taste: soft, decadently creamy and incredibly aromatic. It’s good enough to eat on its own! Note: Best enjoyed within three days if stored at room temperature. Do not keep in lidded containers as the coconut milk will turn rancid.

CAPTAIN IZHAM ISMAIL has been appointed Chief Executive Officer of MASwings effective this month, tasked to develop a comprehensive and sustainable plan to improve the regional community airline’s operations, financial performance and customer service experience. Captain Izham has been in the aviation industry for close to 36 years, a homegrown talent who started with the airline as a trained pilot. He achieved a world record for the fastest round-the-world flight by a commercial airliner when he piloted Malaysia Airlines’ first B777-200 eastward from Seattle to Kuala Lumpur and back. He was appointed to a management position just 10 years after joining the airline, with his highest accomplishment being the director of the airline’s emergency operations committee from 2012-2015.

The new structure will ensure profit and loss accountability, reduce complexity and speed up decision-making, and allow for flexibility to explore collaboration and capital raising opportunities, amongst others.

Tell us about your job? I am the Duty Supervisor overseeing the daily operations of the check-in counters. What are the differences between checking-in passengers for the economy class and for the business class? All our passengers go through the same check-in procedures. Whether Economy or Business Class, all our passengers are equally important and we try to deliver our best service to them. What are some of the challenges faced by check-in staff? The biggest challenge is in turning down some of the passengers’ requests. There are times when we have to turn them down because either they are late or sometimes they don’t realise that their passports have expired, and there were some instances where we could not board them due to certain restrictions – this obviously makes our passengers very angry and frustrated. When this happens, we try to put ourselves in their shoes. You empathise with the situation. You hear them out, then try to solve it the best you can; and then work on another solution.

Another challenge is when we are faced with the immediate implementation of a new process, which is quite common with any airline. In situations like this, our passengers will be caught off-guard. We have to be quick in our service recovery to manage passengers’ expectations. What advice would you give to passengers checking in? Always check your passport before travelling! Make sure there is sufficient validity on your passport and that you have adhered to the visa requirement of the country you are visiting. This is very important! Were there any special moments when a passenger has been thoughtful or nice? Yes, there was one occasion. I was handling a passenger who had been denied boarding. I was seven months pregnant and the passenger was really angry. I tried to calm him down but he was still unhappy. I listened to him and I tried explaining the situation. He did not get to board the plane but before he left, he told me that he had the utmost respect for me because I am a pregnant, working mom and I had a very demanding job. I remember his compliment till this day.

CABIN LUGGAGE HANDLING POLICY Passenger and crew safety on board our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.

PORTABLE ELECTRONIC DEVICES (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.

LITHIUM BATTERIES Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.

ELECTRONIC CIGARETTES Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device is not permitted.

1. The greatest moment in my life was when I had my first child, Ineza. She was born in Kobe, Japan, and I had to have an emergency Caesarean in a hospital run by Japanese nuns.
