From the President, Irv Geary

T

his year is a special year for the MGGA and our Cold Climate Conference. Our organization is turning 40 years old this year and we are having a big celebration to recognize all of the success and efforts of those that have made all of this possible. I was asked to come up with some names of those that I thought made a significant contribution to this success. As I sat there pondering my history with the organization I’ve come to realize that I’m relatively new to the whole industry. Yet in that time I’ve seen some pretty big changes to the industry, the numbers of wineries, the number of acres of grapes and changes within our organization. I would like to stop and reflect on what we’ve accomplished over the past 40 years. When the MGGA started I was 5 years old. That says something for the founders who are still in the organization today. Wow, what endurance! There were no wineries operating during that first year, but a couple that came shortly thereafter. The majority of vines grown then were French hybrids like Marechal Foch, Leon Millot and Seyval and needed winter protection. The new cutting edge varietals coming from the University of Minnesota were released jointly with Elmer Swenson in 1978. They were Edelwiess and Swenson Red. The first ‘Notes From The North” was printed in December of 1977 and mailed to MGGA members -- it was two pages. One of the first Annual Meetings was held on Dec 10, 1977 in David Macgregor’s living room. MGGA dues were $7.50.

Looking at where we have come today I think we have done quite well. Our membership is holding strong with many seasoned members as well as new, younger generations that are getting into the viticulture game. It gives me great hope for the future of our organization and our industry. We are still publishing the “Notes From The North”, now emailed and we have moved our annual meeting out of David’s living room. The state has listed 70 licensed wineries as of this year and I have heard of a couple more that I am aware of opening in 2016. Maquette and Frontenacs rule as the most commonly planted vines in the region with the U of MN set to release at least one new varietal in the very near future. Virtually nobody buries their vines anymore. We don’t have a complete count of acres grown in the state as not everyone is registered with the MN Department of Ag, or are MGGA members. However, there is strong evidence that we have surpassed the 1500 acre mark in Minnesota alone. Viticulture is becoming more commercialized in terms of technology, equipment and investment. This past year I toured two 40-acre vineyards in our region. The MGGA now has membership levels for individuals, commercial growers, commercial wineries and trade partners, and we hold the biggest conference on Cold Climate Viticulture in the country. Looking back 40 years makes me wonder in awe where we will be 40 years from now. Will the U have developed a fully hardy vinifera hybrid vine for us? Will we hit ten thousand acres of vines? Will Minnesota wine consumers make Minnesota wines a priority? Will the MGGA still be a force to advocate for the “education, promotion and extension of the art and science of viticulture in Minnesota”? I can only hope. Yes, we have come a long way and have seen a lot a growth and change. We strive to do the best we can and hope our organization and industry continues to grow. So thank you for joining us at the 12th annual CCC. Help us celebrate our history as well as our hopes and dreams of a successful future. Cheers, Irv

2016 Speakers John Baker John is the Attorney for the Iowa Concern Hotline, an information and referral service of Iowa State University Extension Service. In 1991, he created the Ag Link project, which links farmers and landowners with beginning farmers. He has helped to establish similar linking programs throughout the United States. He is the founder and current Chair of the Board of Directors of the International Farm Transition Network that assists in the development new linking programs. In 1995, he created the Farm Savvy manual, which contains material on the transition of a farm business to the next generation. Herdie E. Baisden Herdie E. Baisden has a distinguished track record of entrepreneurial endeavors. His current venture, Maiden Rock Winery & Cidery, is on-track to become one of the leading regional premium craft hard cider producers in Wisconsin and Minnesota. Herdie can often be found on the front lines of business startups and opportunities requiring pioneering leadership. Most recently, Herdie and his partner Carol Wiersma founded several businesses in Stockholm, Wisconsin, including The Good Apple in 2000, Maiden Rock Apples in 2003, and Maiden Rock Winery & Cidery in 2008. Herdie has served on the boards as a Director and Officer of the Wisconsin Apple Growers Association and the Wisconsin Winery Association. He is one of the founding members of the Badger State Winery Cooperative and the Great River Road Wine Trail. In addition to leading workshops and delivering presentations on the production and marketing of Wisconsin craft cider, Herdie is also establishing a nursery to produce specialized cider apple trees for sale to other growers. Steve Burch, Winemaker Born in Ohio, Steve traveled to California to study winemaking at UC Davis. After earning his degree in Viticulture and Enology in 1998, he worked with Robert Mondavi making small lot wines from special research vineyards to improve overall quality across multiple wine brands. Shortly thereafter, he was recruited by Flora Springs to oversee the cellar and wine production at this storied Napa Valley winery. After he and his wife built their own winery in the Sierra Foothills, and seeing the potential for custom crush and direct sales, he expanded into California Shiners, where he oversaw all production, marketing and sales. Here, Steve honed the skills needed to produce wines on a large scale without compromising quality. Currently Steve is US brand manager for Pronektar, Radoux Cooperage SAS’ brand of barrel alternatives. In this capacity, Steve works with Radoux sales managers

as well as directly with clients in order to provide the best oak choices based on the clients desires as well as what works best with the wine. Aaron DeBeers A native of San Francisco, Aaron has held top management and production positions at a number of vineyards and wineries in California. Under his consulting company Vinoptic, he has consulted for companies on both the east and west coasts. At Gallo Vineyards, Aaron helped the company gain the world’s first-ever vineyard ISO certification (which includes sustainability practices) for their Monte Rosso Vineyard. He has been the director of vineyard operations at Keller Estate; director of vineyard operations and winemaking at D’Ambrosio Vineyards and Verismo Wines; and head winemaker at Glimpse, Stretto, Stella, and Argo Navis. He also teaches a course on “Practical Vineyard Management” in Sonoma State University’s Wine Business department and for VESTA online. In short, Aaron really knows his way around a vineyard and a winery. Aaron is actively involved in all aspects of the wine industry: vineyard operations, winemaking, brand development, marketing, sales, and staff training. But in keeping with his start in the industry, Aaron still looks to the vineyard first: “I feel that most of winemaking begins in the vineyard—and when a particular vineyard is producing premium fruit, then stellar wines will follow.” Currently Aaron is the Grower Relations Representative for Treasury Wine Estates in Napa and maintains a small consulting cliental. Melvin Danzinger Melvin Danzinger is a part owner of Danzinger Vineyards at Alma, Wisconsin . Melvin Danzinger is a graduate of UW-River Falls with a BS in Agronomy. After College he returned to the family farm and farmed for 30 years with his brother David. The farm has grown to 550 dairy cows and 1400 crop acres. In 2003 Melvin and David turned the control of the dairy to David’s sons and started a vineyard. To learn how to grow grapes and produce wine Melvin has attended over 30 conferences in 8 states. They have also hosted field days at their vineyard and given many tours to people interested in starting a vineyard. The vineyard now has 10,000 vines covering over 18 acres. The vineyard has all cold climate grapes with 10 varieties including 5 Minnesota varieties and 5 Elmer Swenson varieties. Since 2009 most of the grapes grown are used to produce wine at Danzinger Vineyards. Extra grapes are sold to other local wineries.


Paul Domoto Emeritus Professor, Iowa State University Dr. Domoto grew up on a vineyard near Sanger, California. He obtained his BS and MS degrees at California State University at Fresno, and PhD from the University of Maryland. He was a member of the Iowa State University Horticulture Department faculty from 1974 through 2013, with assignments evolving from teaching and research-to-research and extension. His research emphasis was in pomology and viticulture. He was the state extension specialist for all fruit crops, and developed the ISU Viticulture Home Page to provide prospective and established grape growers in Iowa and the surrounding region with computer accessible information on grape culture. Recently, he has been revising the Tenth Edition of the MGGA publication Growing Grapes in Minnesota to include Best Management Practices. Dennis Emslie Drummond Dennis grew up in England but came the US to earn several degrees in Farm Management and Wine Chemistry, before working in vineyards and wineries around the globe: Australia, New Zealand, Sonoma and Napa Counties in California, as well as Michigan, Wisconsin and Minnesota. Currently a VESTA Instructor at Central Lakes College, Dennis established an experimental, teaching vineyard and wine lab at the Staples Ag Center in northern Minnesota. He started a Wine Chemistry and Sensory Testing lab for the Minnesota Wine Quality Alliance, and also instructs on various farming, financial, viticulture and wine making best practices. Stephen Gamet Steve is a western Nebraska native growing up and graduating High School in Ogallala. He received his BS in Agronomy/Horticulture from UNL and has more than 30 years experience in the field of horticulture, working both in the retail sector and the educational/ research fields. In 2000 Steve along with his father, plus their collective family members planted their first grapes along the South Platte River outside of Roscoe in western Nebraska. In 2002 Steve joined Dr. Paul Read as Field Technologist working for the University of Nebraska Viticulture Program. In 2009 a group of western Nebraska grape growers with the assistants of a Grant from the State of Nebraska Department of Economic Development Agricultural Opportunities and Value-Added Partnerships Act purchased the first commercial grape harvester in Nebraska. We currently harvest 60 to 75 acres of grapes at 6 different vineyards averaging over 115 tons of fruit per year. Steve has extensive knowledge of growing grapes in both eastern and western Nebraska. He has experience working with 80 plus cold hardy cultivars that could be grown in the Midwest along with many Vinifera cultivars on a trial bases.

Elliot Ginsburg Elliot Ginsburg has been practicing law since 2010. While representing franchisees and distributors in litigation, Elliot’s practice required him to help clients manage a variety of business matters. Interested in broadening his practice to include his love of craft beer, craft spirits, cider, wine, and related industries, he started learning about beer distribution laws and working with two breweries in Minneapolis, Minnesota. Happily discovering his love of beer and the law could be complementary, Hop Law was launched in 2013. Along with his colleagues, Elliot wants to work with businesses to find creative solutions to complex business problems, provide clients with guidance and assistance in starting and operating their businesses successfully, and most importantly, help bring great products to a growing (and thirsty) market. Tyler Golberg & Kelly Falk Tyler started developing websites in 2005 and opened CYBERsprout in 2015 along with his wife, Rachel. His proudest accomplishment is the web application HomeSpot HQ, which has been featured on Real Simple magazine, Bob Vila’s blog, and HomeAdvisor. He is currently a contributor to Flywheel and a speaker for WordCamp conferences. In his spare time, he reads Game of Thrones (waiting on Winds of Winter) and tours the lakes on a paddleboard. Kelly Falk is a social media marketer and entrepreneur in Alexandria, MN. She focuses on finding smart ways to provide helpful and valuable social media content that connects brands to their customers. When she’s not three browsers deep in her favorite expert blogs, you’ll find her adventuring through the beginnings of opening a boutique clothing store called Kindred People. Randy Gutzmann Minnesota Farm Winery Association Randy has worked with producer/grower promotion and tourism, specializing in advertising and event production for over 30 years. He is an Emeritus member of the Advisory Councils for Explore Minnesota Tourism and the University of Minnesota Tourism Center and currently serves on the Citizens Advisory Committee for University of Minnesota Extension. He works on the production of Savor Minnesota and FEAST and last year initiated the creation of “MN Wine Escapes” a promotional partnership of MNFWA, Explore Minnesota Tourism and Minnesota Grown. His goal and passion has been to create and finance a state wide promotion for Minnesota’s wine industry, from the grower to the tasting room, capitalizing on the broad-based consumer interest in all things locally sourced and produced. This year, with a USDA grant, that work will begin.

Anna Katharine Mansfield Anna Katharine Mansfield is an associate professor of enology at Cornell University, where she serves as Food Science Program Leader at the New York State Agricultural Extension Station in Geneva, NY. She received a BA in English from Salem College, and first worked in the wine industry in North Carolina’s Yadkin Valley. Driven by a passion for regional wine, she received graduate degrees at Virginia Tech and the University of Minnesota, where her research focused on wine flavor chemistry and sensory evaluation. Mansfield served as Enology Project Leader at the University of Minnesota from 2001-2008, where she developed a new enology extension program to serve the rapidlydeveloping cold-climate wine industry in the Upper Midwest. In 2007, she completed a 5-month sabbatical at l’Institut Universitaire de la Vigne et du Vin Jules Guyot at the University of Burgundy, investigating flavor absorption of natural cork closures. She returned to the east coast in 2009, and currently focuses her efforts in aiding regional wineries through enology extension, wine sensory evaluation, and research on hybrid wine phenolics, fermentation nutrition, and regional typicity. Ben Miller Dr. Miller is the Division Director for the Food and Feed Safety Division at the Minnesota Department of Agriculture. His division includes retail and manufactured food as well as commercial animal feed

safety programs which are responsible for inspection and outreach activities throughout the state of Minnesota. Currently, Dr. Miller serves as the North Central Association of Food and Drug Officials board representative to the FDA’s Manufactured Foods Regulatory Program Alliance. Dr. Miller also co-teaches a course on food safety, regulation and policy at the University of Minnesota’s School of Public Health Summer Institute. Brian Nordschow With15 years experience in agricultural sales, Brian now works for Case-IH Ag dealership in northeastern Iowa, carrying all types of traditional ag equipment and specialized equipment for use in Vineyards, Orchards and Vegetable production. He and his wife own a three-acre vineyard and grow mostly La Crescent and table grapes, all on VSP. The vineyard was planted in 2005. He cares for the vineyard himself and has used a tractor mounted vineyard trimmer for summer trimming for the past 4 years. Larry Shafer After working in education for fourteen years, Larry joined Agro-K Corporation in Minnesota in 1981. He has been working with small fruit growers for more than thirty years, concentrating on helping wine grape growers across the United States the past fifteen years. Ryan Schildkraut Ryan Schildkraut is a shareholder at Winthrop & Weinstine and advises companies of all sizes on a wide range of business matters, including entity formation, fundraising, corporate finance, mergers and acquisitions, licensing, real estate, and tax. Ryan regularly counsels start-up winery and vineyards on selecting the appropriate type of entity for their businesses, drafting organizational documents (including shareholder agreements, LLC agreements, and member control agreements), raising money from investors, hiring employees and independent contractors, negotiating commercial leases, and developing customized business contracts. He is a strong advocate for Minnesota entrepreneurs and small business owners and co-authored the MNvest legislation, which legalized securities crowdfunding in Minnesota. Jeanette Smith Jeanette began working in Virginia vineyards in 1981, while studying Horticulture at Virginia Tech. Since receiving her bachelor’s degree in 1983, she has been involved in the planning, management and maintenance of wine grape vineyards in New York, North Carolina, Pennsylvania, Maryland and Virginia. Jeanette has


worked as a vineyard laborer, manager, agricultural extension agent and consultant. She founded VineSmith Vineyard Services in 1998. She operates her own vineyard on her farm in Shenandoah County, Virginia.

Sociable Cider Werks opened to the public in 2013. As the Managing Director of Development, Jim’s principal responsibilities at the brewery are focused on recipe development, marketing, sales and distribution.

Nate Smith After a decade of entrepreneurship in real estate development and construction, Nate Smith had a desire to return to his family roots in the beer business. He sliced out his niche in 2012 as a mobile bottler by founding Lagersmith. In 2014 he expanded his services by adding a couple of canning lines. His services are available throughout the upper Midwest. In his “free time”, Nate enjoys goofing around with his wife and daughter at their home in Stillwater. He loves dangerous adventures.

Paul Wagner Today’s Wine Professional After several positions in Public Relations and Marketing in the wine industry in Napa Valley, Paul Wagner formed Balzac Communications & Marketing in 1991. Chad Stoltenberg Chad Stoltenberg is co-owner of Locust Lane Vineyards. Locust Lane makes food products from grapes instead of wine -- available for professional chefs, home chefs and anyone who eats. Chad holds Executive Level Sommelier Certification with Advanced Food and Wine Pairing training through the International Wine Guild. He is also a member of the Research Chefs Association.

He has been an instructor for Napa Valley College’s Viticulture and Enology department for the past twenty years. In addition he teaches at the Culinary Institute of America at Greystone, and is a guest lecturer at universities and conferences throughout the world on wine business, communications, public affairs, wine, wine tourism, and wine marketing. He has been a columnist for Vineyard & Winery Management Magazine for the last ten years, contributes to Allexperts.com in the field of wine and food, and served on the board of directors of the Society of Wine Educators for many years.

John Thull John and his wife, Jenny, manage over 10 acres of research vineyards for the Grape Breeding Program at the University of Minnesota’s Horticultural Research Center (HRC). The vineyards contain approximately 10,000 novel seedling vines of varying age, which are continually evaluated for cold hardiness, disease tolerance, growth habit, productivity, and fruit quality for wine production or fresh eating. Growing so many different vines is quite challenging and extremely interesting. After earning his degree in Biology in 2002 at the U of M in Duluth, John apprenticed on the Mosel River in Germany at Weingut Heinrichshof from 2003 to 2004. He was hired to help tend the HRC research vineyards in 2005. While working over the past 10 years at the HRC, and in his own two-acre vineyard, John has shared his experience with many growers through talks, presentations, and in-field clinics in MN, WI, IA, IL, ND, CO, NH, PA, and VT. Jim Watkins Jim graduated Magna Cum Laude from Carleton College, with a Bachelor of Arts degree in Economics, and launched his career with Citibank’s Sales and Trading division in New York City, Latin-American Equity Group. With a very diverse skill set, Jim taught mathematics in the Miami-Dade School system, and then moved back to Minneapolis, where he learned to make craft cider with business partner Wade Thompson.

Paul has judged many international wine competitions, is a founding member of the Academy of Wine Communications and a member of the nominations committee of the Culinary Institute of America’s Vintner’s Hall of Fame. Mike White Mike White is a Viticulture Specialist for Iowa State University Extension & Outreach and is a team member of the ISU Midwest Grape & Wine Industry Institute. He provides technical assistance and educational training to vineyards and wineries in Iowa and neighboring states and has been working with the cold climate wine grape industry since 2000. He is also part of the Northern Grapes Project, dealing primarily with educational extension and communications. Mike received an A.S. degree from Iowa Western Community College in Council Bluffs, IA and holds a B.S. and M.A. from Iowa State University. He is a Certified Crop Advisor and Certified Professional Agronomist through the Agronomy Society of America and a Certified Specialist of Wine through the Society of Wine Education.

SIZE DOES COUNT It is always interesting to see alternative sizes to the usual wine bottle. How many of us know what is out there? The classic wine bottle holds 750 ml. of wine, though you can find some sparklers in bottles as small as 187.5 ml., and some stills and sparklers in gigantic bottles holding up to 27 liters. Only infrequently will you find a person that has actually memorized the sizes and names of available bottles, as well as the amount of wine each holds, and it isn’t an important skill. However, there are mnemonics (memory enhancers) that do allow people to spout out some of the classifications in order, and hearing some of these (which are not always in the best of taste) can make for a fun time. Fairly innocuous, for example, is the mnemonic enabling one to recall the Magnum through the Nebuchadnezzar. “ My Judy Really Makes Splendid Belching Noises.” As you read on, you will see how that lovely concept works. For some reason now obscured by time, the titles given to bottles are largely Biblical. There seems to be no rhyme or reason as to why each has the name it does, but the nomenclature has survived, and for the most part is globally used today. There are slight differences as to how some regions refer to the same sizes of sparkling vs. still wine, so when you see two names for the same size bottle on the sidebar, as a rule the first is the Bordeaux (still wine) name, and the second is from the Champagne region [this does not hold true for the “split”]. If there is only one name, the two regions agree. Bottle size is important for reasons other than just the amount of wine someone wants to keep around. Actually, it influences the speed of aging, with the smaller bottles aging faster than the larger. This does not mean that there is a perfect ratio of aging as a bottle increases in size, but there is some increase in time. In other words, a Magnum will age slower than a bottle, but it does not take exactly twice as long to get to the same point. Is there an optimum size for a bottle of wine? Most literature reports that taste tests do not in fact distinguish a wine as it relates to its aging time, but many enophiles insist the Magnum is the perfect size because of the ratio of wine exposed, or not exposed, to the air. Note that many, if not most, retail shops and wineries charge more than double the price of one bottle when you buy a Magnum, even though you receive exactly the same amount of wine in the Magnum as you do in two bottles. The reason for the extra charge is that it is more labor intensive to create the larger format bottle. However, the good news is that the price differential is diminishing as Magnums become more popular. We enjoy both half bottles and large format bottles for perhaps more pedestrian reasons than aging time and cost. Ordering half bottles at restaurants allows us to partake of a number of different wines for a reasonable sum. As wine consumption rises in the United States, more and more wineries are putting their wines in this size bottle to accommodate the public’s desire to experience many wines. We like the large formats for the simple reason that they are kind of cool to have on your table. Magnums don’t cause much of a stir, but walk into a crowd with a 9 Liter and you become the center of attention. —Monty and Sara Preiser
