Paddy & Brennan’s “Creamy Honey Ale” 6 lbs Extra Light LME 1 lb Rice Syrup 10 oz Honey Malt 2 oz Victory Malt 1 oz Cluster Hop Pellets 1 Pack SafAle US-05 Yeast 1 Whirlfloc Tablet 1 Muslin Bag 5 oz Priming Sugar 3 lbs Local Wild Flower Honey Pat McKasy and Brennan Malanaphy — January 2015

Our process: Get three or four friends together and each brew a batch. Bring some home brew. Get three or four more disciples who just like to drink beer and watch. We brew on the deck with lots of room and it’s no problem if a little boil-over happens. (Warm up liquid extracts for easier pouring.) Keep track of times and ingredients being added as you go through the process. Bring 5 gallons of water to boil in brew pot. Once at boil, turn off heat and add malt extract, solids, priming sugar & rice syrup to pot stir in, and bring to boil. Reduce heat, and add hops then return to boil. Watch and reduce heat if foaming. Boil for 35-40 minutes. Add whirlfloc tablet, honey and boil for 10 more minutes. Chill down with wort chiller to 90 degrees. Add 3 gallons of cold water to Primary buckets. Add the wort evenly to the three Primary buckets. Pour each of the wort/water mixtures into the brew pot and back into Primary bucket a few times to mix and air the wort. Add yeast packet to each bucket, gently stir in after about ten minutes and seal with lids. might need to shake it a bit after a couple days to make sure all yeast is busy. I keep my buckets in an upstairs bedroom closet for the primary where its a constant 70 degrees. After two weeks siphon beer to

glass carboys and add airlocks. I put the glass carboys the sides covered with a blanket (to keep light out) in the basement where its about 68 degrees for two to three weeks depending on how low my stash is getting. Then I transfer the beer to 3 - five gallon kegs charge, chill, have a few friends over and plan the next brew party.

Equipment we use: 8 - Gallon Brew Pot ( We usually do a triple batch) 3 Primary Fermenter Buckets with Stoppers & Airlocks, Hydrometer, Thermometer, Siphon, Strainer, Long Handled Metal Spoon, Wort Chiller, 3 - Sanitized Glass Car Boys For Secondary, 3 - Sanitized 5 Gallon Kegs & CO2 Tank. One fine Keggerator built by CR that holds two 5 gallon kegs, CO2 tank with two pulls on top.

Brewing Tips: Relax and have a home brew with good friends. Good munchies. Home made beef jerky is always a hit. Give yourself plenty of time and make sure everyone gets home safely. Call CR’s cell if any issues.

Consider Joining A Club We encourage you not to attempt this alone. Whether you’re brewing, wine making or growing with hydroponics or organic practices, you will be in a better position to learn faster and have a more complete experience if you get connected with like minded people who share your interest. The club meetings can be a great educational and development opportunity. Many clubs will bring in speakers to address and educate the members about a variety of topics. It is also a great time to ask questions and learn from the more seasoned members in your local area. For the experienced member this is a good time for you to share your knowledge and experience with newer members. It is also a great social time and a place to share and taste homebrew, wine or garden product. Get out of town for a quick day-trip with other club members. Most clubs have brewery, winery, distillery or commercial growing operation nearby and the club members can take advantage of that proximity by connecting with the staff. Active clubs often take road trips focused on tours and learn from the people working in these larger operations.

With the rise of home brewing and craft beer, there are many beer tasting events around the country. Local clubs participate by having booths at the events, talking to people about home brewing, bringing home brew to taste and showing people that you can make just as good as beer as the big boys that are at these types of events. Many local club holds a picnic or other “all are invited” type of gathering annually. This is a great time to socialize outside of club meetings, meet other family members of your club friends and again, share your home brew, wine or vegetables with other club members and friends. As you can see, joining a club is a great opportunity to learn, share knowledge, take fun road trips, meet great people and enjoy the fruits of your labor. Q&A with Steve Mikutowski How did you first get involved with home brewing?

In the early 90’s, one Christmas my sister Susan bought me a starter home brewing kit. The kit included a couple of 5 gallon buckets, a bottle capper, bottle caps, bottle brush etc. I picked up a red ale beer kit and I think I also picked up Charlie Papazian’s “The New Complete Joy of Home Brewing - I read up on how to brew. Was brewing the first batch an exciting or nerve wracking experience? I think I was nervous; I didn’t want to forget any steps. I followed the instructions and I am sure I made a few calls to the home brew store to settle my nerves. Then I remembered a quote from Charlie’s book, “Don’t Worry, Have A Home Brew”! I am pretty sure it turned out fine, but it may have had some flaws. Did you initially brew alone? Yes, I brewed by myself for quite some time. I know a few of my friends brewed down at Vine Park Brewing. I don’t think I brewed with anyone else until I joined the

St. Paul Home Brew Club. There we did a big brew on a 55 gallon system the club owns. I got to meet a lot of other home brewers and learned a lot. When did you find the brew club close to home? Like I said earlier, I first joined the St. Paul Home Brew Club and was a member until CR Stephens started Still-H2O and the St. Croix River Valley Homebrewers Association. I was thrilled that Stillwater had its own store and club. How did the camaraderie of the brew club influence your brewing? I brewed alone until I joined my first club. I got to meet many other home brewers of all skill levels. I picked up a lot of valuable information from my fellow brewers. It is nice to get together at least once a month to find out latest local brewing news, contests or other happenings in the home brewing world. We are fortunate enough to hold some of out meetings at Lift Bridge Brewery and try their latest craft brews and ask questions about brewing.

Did you find yourself trying a great many recipes? Or did you stay with one basic type of beer?

Now that you have some experience, do you take chances or do you tend to be more conservative?

I brew beer I like to drink. I am a big fan of IPA’s, Red Ales, Stouts, Porters, Hefe Weizen, Barley Wine etc... I am not a big fan of Lager style beers. Lagers are harder to brew and take more time. Besides, in my youth that’s all you could get unless you were daring enough to try imported beer. I really became a fan of Ales when Summit Brewery opened. I fell in love with their EPA and Great Northern Porter. No more Schmindt or Special Export!

I really haven’t taken too many chances, there are a plethora of recipes out there. I tend to try them from time to time and occasionally I will tweak them. I need to start experimenting with my own recipes and different ingredients. There are a lot of new hop varieties out there along with new yeast.

How about equipment - did you add a ton at once or did you add bits and pieces as time passed?

Don’t be afraid of failing. Start out small and work your way up to more advanced methods. You don’t have to make a big investment. Join a home brew club. I guess I would like to add that I really enjoy the fruits of my labor. I enjoy sharing with friends and relatives especially around Christmas. I also enjoy entering contests. I like getting feedback from the judges and even a medal or ribbon once in a while. Lastly, I am grateful to CR and Lisa for opening Still-H2O and forming St. Croix River Valley Homebrew Association. I really enjoy shopping there and getting together with the homebrew club. They go out of their way to help me out with my questions and having the ingredients I need to brew great beer!

I added bits and pieces. After initially just trying kits, I wanted to try a partial mash recipe. Then I wanted to try all grain brewing. Early on my wife and daughters hated the smell of brewing so I was kicked out to the garage. I needed a propane burner. I needed bigger pots, so I commandeered some salvage kegs and made them into a Hot Liquor Tank, a Mash Tun and a Brew Kettle. Along the way a purchase 6 glass carboys, some kegging equipment, pumps and I fashioned a brewing stand. It took me a while to collect but I am able to brew 12 gallon batches. My wife bought me an old copper washing machine that I hope to turn into a Mash Tun soon. I also plan on adding more.

Traditional Bock $32.99 A dark, strong, malty beer that originated in Northern Germany. Although the hop character is little to none, this Bock has the perfect amount of hop bitterness to support the malt flavors, allowing a bit of sweetness to linger in the finish. Baltic Porter Coming Soon A Baltic porter often has the malt flavors reminiscent of an English brown porter and the restrained roast of a schwarzbier, but with a higher OG and alcohol content than either. Very complex with multi-layered flavors. IBUs: 36.5 OG: 1.078 FG: 1.019 ABV: 7.7%

Belgian Beauty Blonde

Belgian Blonde Ale $35.99 A moderate strength golden ale that has a subtle Belgian complexity, slightly sweet flavor and dry finish. Relatively recent development to further appeal European Pils drinkers.

Q&Awith Pat Cleary How did you first get involved with wine making? My start, began with one piece of equipment. My mother grew up on a farm and told me stories of her family making root beer and wine when growing up. One day in the early 1970’s, my Mom came home and gifted me with an old beer bottle capper after visiting family at the farm. I found basic information on beer and wine making in library books. My first brewing was making German types of stouts. However, disaster struck when I developed an allergy to beer. My first wines were brewed in the late 1970’s. Much to my surprise, making wine was much easier to make than beer. Was making the first batch an exciting or nerve wracking experience? I recall stories from my mom and others on homemade wine making. Basically all the stories of people making Balloon Wine ended in some kind of disaster and massive mess someone’s kitchen or living room. Since I started with actual brew equipment, my early experiences ended much more successfully. My first homemade wine was dandelion. It was bad when I first

bottled it, and it was still bad when my wife and I drank a bottle with guests at our wedding reception in 1980. Over the past 30 years I have made dandelion wine a number of times. Each and every batch until 2014 was outstanding examples of homemade wine failure. However, it just may be with all practice and recorded failures; my 2014 dandelion wine recipe is finally worth the time and effort to make. Did you initially make wine alone? Over the years, I have had lots of help from my wife, friends, and neighbors harvesting fruit, flowers, or whatever I’m thinking about making. However, once the fruit or flowers are collected my help seems to disappear. Perhaps they know it takes a truly insane person to play with magic of mixing fruit, water, sugar, yeasts, and other wine ingredients to make the “good” stuff. How does the camaraderie of knowing other wine makers influence your wine making? Over the years, I have enjoyed talking to family, friends, coworkers, even strangers about homemade wine making. I can say with absolute certainty that a vast majority of people would rather drink to your success then to step up and take a stab at making the next good

wine. For those few I know who did step up, they know I stand with them. I’m always willing to taste of their success or failure. I have found that successful wine making, like all worthwhile activities takes a little money to start, a bit of personal time, and effort (variable amounts of effort if using a kit, or from scratch recipe) to see it though to completion. Did you find yourself trying many recipes? Or did you stay within one basic type of wine? The best advice I can give anyone is what my wife pounded into me – WRITE IT DOWN! Over the years I have made some wonderful wines which I just knew I would never forget... But then, I did. Now I keep a wine journal, also type my “good” recipes on my computer and make sure they are backed up. Here is 40 years of experience and my advice to those wanting to start making wine. If you keep your equipment clean, and can follow directions you will ALWAYS have a good wine made from a kit. I strongly encourage that if you don’t start with a kit, you make at least half your wines from kits for the first couple of years. The vineyards making kits, especially those that are medal winners use the best quality fruits and products to ensure your wine is a success each and every time. Now that being said... A majority of my wine is not from kits. I have to spend much more TIME and EFFORT to produce a good wine from scratch. Unless I am making one of my “good” recipes, I know it is likely 50-50 it will turn out to be good. I have to be prepared to dump the whole batch down the sewer when it does not turn out. If your ego can handle it, you have a bunch of free time on your hands, and you want to gamble with a little money, you can jump into making wine from... Fill in the blank ____________. I have made all kinds of wines, kits and homemade. On homemade wines, I started with recipes found in books or found online. Many recipes I have modified over time to create wines to my liking and taste. Over these 40 years of trial and error, I have found that my homemade wines that include the following ingredients are most frequently successful. Campden Tablets; Acid Blend; Yeast Nutrient; Wine Tannin; Pectic Enyme, Lavin K1V1116; Starting SG=1.00 or higher. How about equipment - did you add a ton at once or did you add bits and pieces as time passed? Basic equipment includes: Hydrometer; Primary fermentation bucket with water locks; Secondary fermentation vessel (Carboys); a couple of nylon straining bags; plastic siphon and hose for racking,

bottles, corks and corker, or caps using ½ and 1 gallon jugs. I am still using carboys I purchased over 30 years ago. A vast majority of your equipment will be used over and over, and will last decades if not generations providing you don’t abuse or drop it. Advanced equipment: Build a fermentation chamber for fermenting your wine. Put a temperature controlled heater in it and keep your fermentation temperature between 60-75 degrees. Do not ferment your wines when your temperature is 80 or above. Basic understanding of fermentation process: Wild yeast is everywhere. Bread yeast is not wine yeast. If you want consistently good wine you need to start by killing off all wild yeast in your fruit must and then add – WINE Yeast. (You can make wine from yeast between your toes, yeast in your shorts, or smelly gym socks. But good luck with that.) When fermenting starts, your must foams and stinks like rotting fruit. Yes, it is suppose to be that way. If you don’t want your house to stink, then make your wine in small batches in the basement, your garage, or at a friends house. If you see your water lock bubble within 15 to 20 seconds there is a good chance your yeast is still to active to transfer to the secondary. Plan on a minimum of 7 to 14 days for your primary fermentation to complete before transferring to your secondary. Checking your wine with your Hydrometer before racking to your secondary is recommended. I always leave my wine in the secondary for a minimum of 2 to 3 months. Zero bubbles seen in the water lock for days. My favorite and most consistent yeast for homemade wine is Lalvin K1-V1116. Now that you have some experience, do you take chances or do you tend to be more conservative? Watermelon does not make good wine. Period. It took over 30 years for me make a “good” dandelion wine. Keep trying and don’t fear failure. I have made a totally awesome MN Concord wine. But the neighbors vines were attacked and killed by Asian Beetles. I also did not write it down, so this one is likely lost forever. Many people like my strawberry rhubarb and my German rhubarb wines. I have made many apple wines over the years. Crabapple and tart green apple trees make the best “apple” wines. I have some good crabapple wines. Homemade pear wine is great... But what a hassle to get juice from the fruit. Buy the juice in cans from Still-H20. My 80 plus year old neighbor “remembers” a good potato wine. Made it twice, not good! Many like my Chokecherry wine. But have you tried infusing chokecherries in vodka? Why wine when the vodka is faster and better. Plum wine was good. I will be making more of this. Elderberry. Strawberry and Raspberry wines have turned out in the past.

Q&A with Don Edison

How did you first get involved with growing? When I was little I had a garden up at my Grandmother’s house and every Sunday we would go over there to work in the gardens. Was your first effort in growing an exciting or nerve wracking experience? Well years later I read an article about hydroponics in a local magazine and I began to imagine creating my own growing system. I went and bought some tubing and liquid nutrient solution. As fortune would have it, the company I work for began replacing a bunch of small steam pipes at one of the plants. I got permission to use them and took all of this steam piping home and started to build a rack under the eave of my garage. It worked really well. I then went out and bought 200 plastic buckets for the rack I had built. I filled the buckets with perlite (a volcanic glass) and hooked up a timer and pump to my tubing system. That sounds great. What did you grow? I planted lots of peas, beans, lettuce and Swiss chard,

and within a few weeks I had a lot of plants and in another two weeks I had more than I could eat. This system worked so well and was so easy I expanded. How did you expand? I brought home a bunch of electrical conduit that was being discarded. I then proceeded to bend up a green house frame off the Eve of my garage roof. It became a Lean to greenhouse which the north side of the greenhouse was the garage. Then came tables which I built in the greenhouse. The tables allowed me to grow taller plants like tomatoes and cucumbers. They were all planted in buckets with a tube for water and a drain hole in the buckets. Three times a day they were watered by the timer. This whole system worked great and the second year started out great too until my pump broke in July while we were away for a few days. When we returned all of the plants had shriveled up and died‌ I was a bit crushed when this happened - it kind of took the wind out of my sails for a while.

How did you handle that? For other reasons we moved shortly afterward, I took down the green house and packed up the growing equipment. For the next several years after moving we worked on remodeling our house and I didn’t want to take on more projects. What brought you back to growing? It was more or less a happy accident, I was out at Menards one day buying material and happened to drive past Still-H20. Being curious I decided to stop in and look around, that’s when I met this short little guy named CR. We immediately hit it off and I have been bothering him ever since. It’s good to find someone that you can trust and ask questions - what did you and CR decide to do? Well I got talking to him and thinking about that hydroponic thing again, because most of the projects around our new home were getting completed. So I unearthed this hydroponic wheel that I had packed away and we set it up in his store for a display. It worked pretty well - we grew lettuce in this wheel. A few years later a friend of mine who works in the led lighting business asked me if I knew anything about hydroponics. Turns out he was looking for a partner to grow what he called “fodder.”

What is fodder and how did that partnership work out? This is the same principal as hydroponics – it’s water based growing of grasses mostly used for feeding animals. He and I went to a fodder seminar in Iowa, upon returning from the seminar I built the unit you see here in the photograph. I have enjoyed experimenting with hydroponics and find it very satisfying, one should just start small and it will grow in size all on it s own. CR has been a great help and is very knowledgeable. Some day when time permits I may build another greenhouse.
