The party at Magnolia Garden Center March 30 marked the end of an era as Magnolia Garden Center owners Chuck and Margaret Flaherty celebrated their retirement as well as the 25th anniversary of the business. The event also marked the changing of the guard as the community members who attended welcomed James Raebel as the new owner. The new ownership went into effect Thursday. For regular customers at the nursery and gift shop, Raebel is not a new face as he has been the manager for the past two years and, before that, served in a number of other roles — from buyer to landscape designer — for the Flahertys, who hired him in 2012. Raebel said he and the Flahertys have discussed the possibil-

After a successful soft opening last weekend, business owner Valerie Chan is looking forward to welcoming the community to Queen Càphê starting at 9 a.m. Saturday. Chan is the owner of Queen Càphê, a new restaurant in Queen Anne. “I just love what I do,” she said. “It makes me happy when people eat my food and enjoy it.” Chan took over the lease of 2231 Queen Ave. N., on the corner of McGraw and Queen Anne Avenue, and has spent the last four months transforming the place into a family hangout that will serve banh mi, egg rolls, bubble waffles and high-quality beverages.

And Chan wants the neighborhood to know that she plans to offer “the best bubble tea in town.” For those who haven’t tried it yet, boba tea is a beverage traditionally served cold that has a tea base, a milk or fruit flavor and edible tapioca or fruit-flavored pearls — known as boba. It originated in Taiwan in the early 1980s, and the popularity quickly spread to other parts of the world. In her quest for the best ingredients, Chan imports all of her boba pearls from Taiwan. These edible pearls are chewy little bubbles of tapioca found at the bottom of the cup. The cafe will

Because he is not, I soon discover, anywhere near amenable enough to consider the word “vegetarian.” I don’t let this bother me. To my family, food is tantamount to faith, and you don’t stray from its consecrated dictum. This might be my body, but it is their Holy Eucharist.

Isn’t there usually some food politics to contend with in the company of those of us who feel entitled to our likes and dislikes no matter what? No matter where? No matter how contradictory? Recently, at one of those B & B breakfast tables that make me cringe (I am not a morning person. I am especially not a morning person who likes to sit with strangers at 8 a.m. and make small talk), when the vegan sitting across from me spoke out in support of the Native American right to slaughter another magnificent whale, I had to challenge her convictions no matter how many times my husband kicked me under the table. Mentally, I compare this to my family’s food issues at hand: whether a pound of pasta per

How, as soon as lunch is over, conversation shifts to supper. I don’t even try to give my family a view of my city with which they can identify. A city whose people eagerly espouse cultures other than their own as if searching for an identity (think Tibetan prayer flags snapping over ScotchIrish foyers) and how this differs
from my family’s way of embracing only their own culture. I figure, when you get right down to it, is there any real difference between meditation crystals and rosary beads if peace of mind is all you’re after? To my great surprise, and as exhausted as it made me, I climbed back up the rungs of our family tree. And what did I learn? That I now have the tools to make whole my life and work. That I can turn a new leaf into one far more flexible; one that eases any rigid idea I might have had about my own autonomy. What are butterfly wings made of ? Butterfly wings may be quite thin, but they are also durable and strong. This strength comes from the material that makes up the wings: chitin (KITE-IN). Chitin is a kind of building material we find in nature. Chitin makes up not only the wings of butterflies but also the outer skeletons — or exoskeletons — of crabs, shrimp and lots of other insects. My friend David James, an entomologist at Washington State University, told me all about it. He said that chitin is a bit like the strong keratin material that makes up your hair and fingernails. Of course, butterfly wings are much thinner than a fingernail. These thin, light wings help the butterflies float and fly through the air. “They’re wafer thin, and there’s not much to them, but they allow the butterfly to migrate sometimes thousands of miles,” James said. A butterfly’s wings are also covered in lots of tiny scales. You read that right. Butterflies have scaly wings. “The scales are overlapping like the tiles on a roof,” James said. “They can come in many colors.” These scales are also made of chitin. In fact, the butterfly’s head and abdomen are made of chitin too. It’s one of the basic materials in the outer parts of most insect bodies. James added that one miscon-

Of course, butterflies are delicate and should be treated gently, but they can also be pretty tough. “Sometimes you see butterflies that are completely beat up, tattered and the colors have gone, but they’re still flying and able to move around,” James said. The colorful scales don’t really help with flight, but they can help the butterflies survive in the wild in other ways. Some wing colors can help butterflies blend into their en-
vironments and help them hide from predators. Bright colors on butterfly wings can send a signal to predators that the butterfly is poisonous and should not be eaten. The different colors and patterns may also help a butterfly attract a mate. When a butterfly is forming in a chrysalis, its wings are usually one of the last things to develop. As a butterfly comes out of a chrysalis, its wings are wrinkly and wet. James said this is the most vulnerable time for the butterfly because its wings are not hardened yet. Usually, butterflies will

Mark Elliot Swannack June 14, 1966 - March 24, 2022
Mark Elliot Swannack passed away peacefully on March 24, 2022. Mark was born June 14, 1966, in Carmichael, California. Mark grew up in Richland Washington attending Hanford high school and graduating in 1984. After graduation Mark became a chef working for various restaurants over many years and created happiness for people through food. He lived in the Seattle Washington area for a number of years, until moving back to the Tri-Cities. Mark was an avid reader, So much so that he would take the time to go to book signings and meet the authors, such as Patti Briggs. He also enjoyed interactions with others on the video game “Second life”. He lived an active life on Facebook with many friends that cared about him deeply. Mark was somebody that was always looking for the positive in life and enjoyed having long conversations with friends and siblings. He was preceded in death by his father Dan L Swannack. Mark will be truly missed by his surviving mother and siblings; his mother Tess J. Moore, his younger sister Carmen Swannack-Evans and her spouse Jeffrey Evans, his older brother Russell Swannack and his spouse Diane Swannack, as well as his oldest brother Cordell Swannack and his spouse Shannon Swannack. Those we love don’t ever go away, they walk beside us every day. Unseen, unheard, but always near; still loved, still missed and very dear in our hearts. CENTER, FROM PAGE 1 someday,” he said. “I feel this is the right fit for me.” Meanwhile, turning the business over to Raebel was an easy decision for the Flahertys. “James is ready to take over,” Chuck Flaherty said. “He’s been running the place for a while.” While the nursery has been open in Magnolia since the late 1960s, Flaherty and his wife bought it in 1997 and opened the gift shop later. Margaret Flaherty said she and Chuck had never owned a nursery before, and they learned everything through first-hand experience and the love of plants
and gardening they brought with them. She said they will miss their customers and staff but feel confident in turning things over to Raebel. “It’s getting to the point where we have old ideas, and it’s time for somebody with new ideas in here,” Margaret said. While the Flahertys are stepping away from the business, they will continue living in Magnolia. Chuck Flaherty said he will continue to be involved with the Magnolia Village beautification project. Raebel said he will also maintain the business’s participation and sponsorships in neighborhood events. Looking ahead, he

said he would like to offer some gardening classes, seminars or other educational opportunities when he gets a little more settled. Mostly, customers won’t notice a big difference in day-to-day operations when they visit, Raebel said. “We’re not going to reinvent the wheel when we’ve been doing so well through the years,” he said. also have a crystal bubble option that’s made with a natural vegetable gelatin counterpart called white agar powder, which is also from Taiwan. Queen Càphê will have green tea and black tea options, and the premium boba powders will include taro, ube purple yam and matcha, with a special brown sugar syrup to make the tiger drip tea. Chan is convinced that hers might just be the best boba in town because she has two of Seattle’s savviest taste testers: her daughters, Alexia and Ana. Their favorites are the classic tea and taro milk tea, respectively. The Queen Càphê has turned into a family affair. Chan’s husband, Hung Ngyuyen, loves food and agreed to come work with her if she promised to make his favorite Vietnamese sandwich: the banh mi. Each morning, Chan will be roasting the proteins for the sandwiches: chicken, pork, sirloin and a lemongrass tofu option. Her signature marinade includes onion, lemongrass, garlic, oyster sauce, sugar, honey and no MSG. After roasting the chickens, she will take the bones and add some water and a secret blend of ginger and spices to craft the house-
made pho broth that will be served alongside each sandwich. The other specialty will be the egg rolls that Chan makes herself. She has chosen pork and shrimp to create the perfect flavor profile and adds a mix of vegetables to round them out. She says it takes her about three hours to roll 100 egg rolls. Chan has incorporated personally significant details at her cafe, including the blue and gold stylized phoenix-like peacock logo that she designed and was painted by local artist Robert Williams. The blue colors found throughout the restaurant are meant to inspire peace, and the many butterflies symbolize freedom. Visitors will be welcomed by the maneki-neko — a Japanese beckoning cat that is known to welcome luck and is also popular in Vietnam and throughout Asia. Money trees and other significant plants are situated near the large front windows. Buddhist figures and a personal shrine designed by Chan’s husband near the register round out the décor. Queen Càphê will be staffed by Chan, her family, friends and local teens. A typical shift will require six people to work the front and back of house. Chan says it is the only way to ensure the quality and cleanliness of her food and the kitchen. There will be a coffee barista,
two or three people making the boba tea, a sandwich maker, and the cashier. To ensure fairness with the tips and scheduling, the tips will be recorded daily then added up and divided equally among the staff for the number of hours worked. Abby Harding, a neighborhood teen who attends Seattle Prep, said she is excited she will be working at Queen Càphê. “When I saw this cute place and that they were serving boba tea, I knew I should work here,” Harding said. She is learning how to make the different kinds of tea and has tasted almost all of them. “I love boba, and Valerie says, ‘If staff enjoys it, the customers will too.’ ” Chan was born in Vietnam and came to the United States at age 15. She graduated from Seattle’s Nathan Hale High School. This is her first time owning a restaurant but she owned a bar in Renton a few years ago and currently operates the Hava Nail Salon in Ballard. Queen Càphê will be Chan’s first go at a restaurant, and she hopes the community will love it as much as she does. “We really want to see happy people,” Chan said. “Please come by and give us a chance.” Queen Càphê will be open from 9:30 a.m. to 6 p.m. daily.
