To revive that great tradition of the neighbourhood restaurant. SPECIALITY DRINKS We’ve added a trio of speciality drinks to the bar menu this summer that should please on all fronts – at all times of the day. So keep your eyes and ears peeled for the tell-tale signs and we’ll do the rest. That whirring sound? That’ll be a fruit smoothie on the make. That dinky barrel behind the bar? SUMMER FOOD SPECIALS The Cavendish Summer Menu is here, which means your taste buds can finally bask in the sunshine flavours of the Mediterranean and sample the fruits (and meats) of the great British countryside. Along with a new signature Caesar Salad – prepared tableside with trimmings fit for an emperor – we’ve introduced an array of impeccably sourced, fresh seafood dishes to the A La Carte Menu. Whether you need a post-run pick-me-up or a post-work refresher, ask one of our bar staff to throw a selection of fresh fruits – and whatever else takes your fancy – into the blender. Sweet.

MEET JOSPER THE OVEN He lives with us. Originally from Barcelona, he’s known to his friends as the hottest indoor barbecue available. Our head chef tends to call him hot stuff and only feeds him the finest cuts from our Royal Warranted butcher and Carabineros prawns the size of, well, massive prawns. London’s premier open air theatre returns to the ever-atmospheric auditorium in the heart of Regent’s Park. Highlights of the mid-summer season include Torben Betts’ new adaptation of Anton Chekhov’s The Seagull and a breathless staging of William Golding’s Lord of the Flies.

Marylebone’s traffic-stopping food, drink and music extravaganza promises to be bigger and better than ever this year, with Paddington Gardens hosting a pre-Fayre shindig for the first time on Saturday night. As ever the main event kicks off in earnest on Sunday with food and craft stalls, bands and more.

Join us for pre-theatre drinks and bites from our delicious Snacks Menu. Why not try our Jumbo Shrimp Cocktail, Cinco Jotas Ibérico Ham or a Melton Mobray pork pie to whet the appetite.

HENLEY ROYAL REGATTA Founded in 1839, the Henley Royal Regatta is undoubtedly the best known regatta in the world. With more than 250 races, featuring Olympians and emerging stars from around the world, this year’s event is set to be the best yet. If you can’t join the cream of British society riverside, watch the first live broadcast of the event since 1976 with us.

We’ll be hosting The Cavendish Regatta during Henley’s climatic weekend and offering special deals on Caviar from our Raw Bar with a bottle of our house Champagne.

TOUR DE FRANCE

BANK HOLIDAY WEEKEND

In cricket terms, it doesn’t get bigger or better than England and Australia facing off for The Ashes. And while the build up to the encounter might have been far from smooth sailing – the Pietersen saga and a tumultuous test with the Kiwis – new head coach Trevor Bayliss seems more than capable of steadying the ship before the series gets underway at Cardiff’s Swalec Stadium – and potentially playing the Aussies at their own game. He’s one of them after all...

Le Tour returns to put the world’s elite road racers through their paces over 21 stages this July – 30% of which can be officially classified as gruelling. The honour of hosting the famous Grand Départ falls to Utrecht this year whose mayor has already compared the prospect to the excitement he used to feel before visiting his grandma. We can only hope the Tour lives up to that lofty billing.

We’ll be firing up our indoor barbecue (anything the Aussies can do, our Josper Oven can do better) and throwing some prime cuts on the charcoal grill throughout The Ashes. Find out what else we’ll be grilling on Josper throughout summer in Food & Drink on p.10

Wine expert and director of Berkmann Wine Cellars Jacquie Kay selects some standout French wines and Champagnes from The Cavendish cellar which we’ll be offering exclusively by the glass until the tour reaches its climax. Expect our full A La Carte Menu to be up and running all weekend and our lavish Sunday Roasts to be extended through Bank Holiday Monday. There’ll also be a number of exclusive promotions on our Cocktail and Wine lists and live music.

FROM THE JOSPER OVEN

Smoked Salmon Platter

Burning premium charcoal and reaching temperatures of up to 500 degrees centigrade, our Josper Oven is undoubtedly the hottest indoor barbecue in the world. Out of respect for this powerful and beautiful beast, we’ll be feeding it only the finest Carabineros Prawns, served on their own or in our Carabineros Risotto, as well as ribeye and fillet steaks from the Queen’s very own butcher, Aubrey Allen. The Cavendish Burger will also receive the chargrilled treatment. Lucky thing.

Our Scottish smoked salmon comes from the last of the original London smokeries, H. Forman & Son. We serve it with toasted soda bread or tunnbröd (a thin Swedish flatbread) and a chopped caper, shallot, gherkin and parsley garnish.

Tuna Tartare Cooking tuna that is as beautifully fresh as ours is the act of a mad person, so we prefer to keep things quick and simple. Prepared tableside by one of our team, our Tuna Tartare is a sight to behold and once finished off with avocado and a subtle Asian-inspired dressing it is a taste to remember.

Sicilian Prawns This is another dish served tableside for the pure and simple theatrics of it all. Just picture the scene: a handful of Italian prawns plucked from the Mediterranean show their true colours flambéed in fine French Calvados. Comes served on a bed of rocket salad and finished with a drizzle of balsamic.

DESSERT Crêpes Suzette And finally, putting a flaming full stop on our summer menu of simple pleasures, our take on the legendary lip-smacker Crêpes Suzette comes served flambé tableside and cream. Et voilà!

P A S TA Linguine Vongole e Bottarga Building on the Italian classic of lightly sautéed clams, garlic and pasta, we’re adding a little kick of chilli and grated bottarga, a delicacy of cured fish roe from Sardinia. A rich and flavoursome pasta dish. 01

Linguine with Lobster We’re keeping it simple with this rock star of the sea, preparing the whole lobster tableside with chilli, garlic, olive oil and cherry tomatoes all tossed together into perfectly al dente linguine.

Caesar Salad Our Caesar Salad is prepared tableside for good reason – so you can acquaint yourself with the ingredients of the best Caesar Salad you’ll ever taste. Blink and you’ll miss the quail egg, lemon juice, olive oil, garlic oil, grated eggs, parsley, croutons, lettuce, Worcestershire sauce, anchovies and Parmigiano. Salt and pepper is to your taste and so is the addition of chicken or prawns.

AGED TO PERFECTION Barrel-aging wines and whiskies is as old as the hills, but barrel-ageing cocktails is a more modern phenomenon. Our bar manager is a fan... “At the moment we are barrel ageing a Manhattan in a small cask behind the bar, which should be ready in about two weeks. Over the next few weeks we’ll also have a limited amount of aged Negroni ready to serve. The Negroni (a classic Italian cocktail comprising sweet vermouth, Campari and gin, to the uninitiated) is already a crowdpleaser, but once it’s undergone the barrel-ageing process it takes on a completely different character. The aged Negroni we’ll be serving over summer is smoother, mellower, with deeper notes of flavour. In other words, it’s the perfect sundowner.” If that’s not enough to convert you, ask for one at the bar. But be quick, there’s only a limited number of drinks per cask.

The Negroni is already a crowdpleaser, but once it’s undergone the barrel-ageing process it takes on a completely different character.”

mitate Modern began as an exhibition space for one family’s growing art collection and a platform to encourage and promote emerging artists.

We continue to host exhibitions, but have branched out into numerous other areas – from art investment to curating commercial and private properties – as well as achieving publicity for the young artists we represent. It can be incredibly difficult not to mention expensive for young artists to exhibit in a gallery. So we provide the opportunity for talented artists to exhibit their work in a prominent space in London by investing the time and resources required to organise a successful show. We strive to champion emerging artists across all mediums. We’re drawn to art that is edgy and perhaps even controversial, art that is striking and creates conversation. Sometimes there is a message behind the work, sometimes it’s a personal expression of the artist, but it always inspires a reaction and it’s fascinating to see how different people respond. We have been collaborating with the Cavendish since it opened and the response from customers has been fantastic. Our aim is to keep the collection fresh, so we circulate the artworks every few months and choose recently debuted pieces or a selection that complement each other well. The interior design of The Cavendish also provides the perfect backdrop for various styles of artwork. The exposed brick wall calls for a powerful piece of art, while the satin wallpaper of the dining room suits a piece to reflect the sleek and luxurious setting. We have exhibited a number of different styles and mediums to date, but the current selection was chosen to bring a pop of colour for the summer.

While it didn’t taint my enjoyment of the steak or the spuds, it did push my suit’s debut back a month or two and struck me how unnecessarily rigid a place could be. It also confirmed my preference for places that don’t see tradition as a straightjacket, but can bend and flex with the times and circumstance. Places that possess at their core equal parts quality and character. I think that’s why I like Marylebone Village. Even after considerable changes to the residential and commercial landscape over the years, it continues to exhibit the same core characteristics. Moreover, the area continues to attract people and businesses from all over that share the same qualities. Needless to say, it was a bit of a heart stopper when we lost Odin’s, the late, great Peter Langan’s iconic Devonshire Street restaurant, a few years back. Because, like oak trees, places like that don’t spring up overnight. So I’m overjoyed to see The Cavendish reviving and, more importantly, evolving a worthy tradition on New Cavendish Street – that of the great neighbourhood restaurant.
