Simply Mayonnaise Put simply, mayonnaise is a thick, creamy dressing made of oil, egg yolks and lemon juice or vinegar. Rumour has it that mayonnaise was invented in 1756 during a celebration feast for the Duke de Richelieu’s victory over the British at Port Mahon. Unable to find cream for his sauce, the French chef substituted it with a blend of olive oil. “Mahonnaise�. A new culinary masterpiece was thus born. Traditionally, mayonnaise is used as a base for dressings, to hold sandwich fillings together or to simply add flavour to certain foods. Chefs today, however, are more adventurous in their application of mayonnaise. In kitchens all over the world, they even experimented with mayonnaise to flavour and glaze hot dishes or even moisturise cakes! Mayonnaise is certainly no longer just mayonnaise.

Mayonnaise Mayonnaise makes a mean and moist chocolate cake. With oil as the main ingredient, mayonnaise serves well as a shortening for baking. It is comparable to butter or margarine and results in rich and moist baked goods. One point to note – do use recipes that are developed specially for mayonnaise as an ingredient.

Mayonnaise is an enticing emulsion. Mayonnaise is a mixture of two liquids – oil and vinegar that usually cannot be combined. It is the lecithin found in egg yolks that stabilises this emulsion. However, extreme temperatures will still cause separation, so proceed with caution if you intend to subject mayonnaise to freezing or boiling. A broken mayonnaise can be easily fixed. Mayonnaise often breaks down when stored in the refrigerator. Just beat the broken mixture into a fresh egg yolk. As the mixture thickens, the broken mayonnaise can be added more quickly. You’ll be amazed at the results! Do remember to use only the freshest eggs to avoid risks of salmonella. Left on the shelf, commercial mayonnaise will not go bad. Yes, commercial mayonnaise is shelf-stable and is perfectly safe to eat even when un-refrigerated. The recommendation to keep these products refrigerated after opening is to ensure the fresh flavour of the mayonnaise. It is quality, not safety, that is at stake. A healthy diet can include mayonnaise! Mayonnaise is made with heart-healthy oils such as soybean and canola. SPICY BUFFALO CHEESE DIP Prep Time: 5 minutes 250gm BEST FOODS Real Mayonnaise 100gm crumbled blue cheese 30ml milk 15ml hot pepper sauce

Directions: In a small bowl, combine all ingredients. Serve, if desired, with hot chicken nuggets, sandwiches, grilled meats, chips, pretzels or cut-up fresh vegetables.

MOJITO MAYO DIP Prep Time: 10 minutes 250gm BEST FOODS Real Mayonnaise 20gm chopped fresh coriander 2 cloves garlic, finely chopped 1 to 2 jalapeno peppers, finely chopped 15ml lime juice 15ml white vinegar Directions: In small bowl, combine all ingredients. Season to taste with salt and ground black pepper. Chill, if desired. Serve with fries, potato or tortilla chips.

CREAMY TOASTED CORN SALSA Prep Time: 10 minutes 50gm BEST FOODS Real Mayonnaise 15ml lime juice 2gm ground cumin 100gm corn kernel, toasted 30gm red onion chopped 1 medium jalapeno pepper, finely chopped (optional) 10gm fresh cilantro, chopped (optional) Directions: In medium bowl, blend BEST FOODS Real Mayonnaise, lime juice and cumin. Stir in remaining ingredients. Serve, if desired, with corn chips.

CREAMY BALSAMIC ITALIAN DRESSING Prep Time: 5 minutes 250gm BEST FOODS Real Mayonnaise 30ml balsamic reduction 15ml milk (optional) Your favourite salad greens

Directions: In small bowl, blend all ingredients. Serve over salad greens or, if desired, as a dipping sauce.

CREAMY ROASTED RED PEPPER DRESSING Prep Time: 5 minutes 250gm BEST FOOD Real Mayonnaise 150gm coarsely chopped roasted red peppers 20gm finely chopped chives Your favourite salad greens

Directions: In food processor or blender, blend all ingredients until smooth. Season to taste with salt and ground black pepper. Serve over salad greens.

CREAMY AVOCADO SALAD DRESSING Prep Time: 5 minutes 250gm BEST FOODS Real Mayonnaise 1 ripe avocado, mashed 15ml lime juice 15ml milk (optional) 1 clove garlic, chopped Your favourite salad greens Directions: In small bowl, combine all ingredients. Season to taste with salt and ground black pepper. Serve over salad greens or, if desired, as a dipping sauce.

SMOKED HAM, SWISS & CARAMELISED ONION SANDWICH Prep Time: 10 minutes 60ml BEST FOODS Real Mayonnaise 4 slices oatmeal roll 2 thin slices salami 2 slices pineapple ring, grilled 2 slices onions, grilled 2 slices tomato (optional) Baby spinach leaf (optional) Directions: Evenly spread BEST FOODS Real Mayonnaise on roll, then top with remaining ingredients.

LEMON CRAB TEATIME SANDWICHES Prep Time: 20 minutes 50gm BEST FOODS Real Mayonnaise 100gm flaked cooked or canned crabmeat 1 lemon, grated and peeled 10gm snipped fresh tarragon 10gm fish roe Whole wheat bread Directions: In small bowl, combine all ingredients except bread. Set aside. Trim crusts from bread, cut into circles, rectangles, squares or triangles. Spread crabmeat mixture on bread and garnish, if desired, with additional grated lemon peel.
