SOFT-SHELL CRAB ROLL

THE MARGARITA AT PINE CREEK 7350 Pine Creek Road, 598-8667, margaritaatpinecreek.com Eric Viedt, co-owner and executive chef, is the mastermind behind this clever take on a lobster roll. Instead of using lobster, he dazzles the dish with a cornmeal-crusted, large soft-shell crab. The batter is seasoned with garlic powder, pepper, oregano, paprika, thyme, cayenne and salt. Once fried, the crustacean is cradled in a hot dog bun, drizzled with flavorful smoked bacon-corn remoulade and garnished with strips of red Fresno chilies, sliced radishes and scallions. House-made potato chips served on the side. Find the tasty treat on the lounge-patio menu for $16.

COWBOY STAR RESTAURANT AND BUTCHER SHOP 5198 N. Nevada Ave., 639-7440, cowboystarcs.com Yes, the steaks are the star here. But much like a little black dress, the addition of a string of pearls completes the picture of perfection. So side dishes at steakhouses elevate the protein from ordinary to extraordinary. The chefs at this eatery have that dialed in. That’s why they had a companywide contest to create the best mac and cheese recipe. The Colorado Springs chefs took the prize with a dish using sharp yellow cheddar and Gruyere cheeses, which they cold smoked for extra flavor. The topping is another tasty secret: barbecue bacon dust. Their house-made bacon is fried and crunched into dust, similar to breadcrumbs in texture. Then the bacon dust gets mixed with their butchers’ secret barbecue dry rub. The result is noodles covered in a blanket of creamy cheese goo and finished with a bacony, crunchy crust. $9 for small serving, $16 for large table-size serving.

Liver, referred to as variety meat or offal in Great Britain, is part of a collection of animal innards that some eschew. However, when in the hands of Carlos Echeandia, chef and owner of the eatery, the first bite of this delicate thin-sliced grilled veal liver will telegraph why this is a signature dish on the menu. Cooked just done with a pink center, each fork is complemented by the addition of caramelized white onions and mildly sweet balsamic jus. $29. 4 2016 DINING GUIDE

HORSESHOE DONUTS 2593 Airport Road, 985-8332, facebook.com/ HorseshoeDonuts Identical twins Liz Schulze and Erin Glenn, who grew up near Boston, brought us East Coast-style doughnuts when they settled in Colorado Springs. That’s because they both missed cake doughnuts like they could find on the East Coast. The secret was the type of doughnut mixes that are used there versus what doughnut shops here use. They spare no expense to get the mix that results in the fried doughnuts they love. And we love them too, especially the big, moist old-fashioned numbers. The outside is nice and crispy sweet with a light, fluffy interior. The exterior of the old-fashioned looks like it has a ruffle around its middle or a flower blossom. That’s created by the way the dough is dropped into the fryer. They come plain, glazed or chocolate frosted. $1.29 each.

With Supansa Banker, executive chef, tossing the crusts. you can expect to see some of her Thai homeland flavors punctuate the toppings. For the crispy belly pizza, she marinates the pig in a bath of soy sauce, sugar, white wine and garlic overnight. Next morning sees the pork baking for 3 1/2 hours. Then it’s chilled, cut into bite-size pieces and fried until crispy. The Sicilian-style pizza dough is smeared with garlic oil and sprinkled with fontina cheese, cabbage slaw, and the belly bites. Next comes a drizzle of tamarind-ginger bourbon sauce, spicy aioli, Marcona almonds and sliced scallions. $18.

LA CARRETA MEXICAN RESTAURANT 35 N. Iowa Ave., Colorado Springs, 477-1157 Most of the items on La Carreta’s menu can be found at any Mexican restaurant, but a few items are rarely available outside of Mexico, including the Alambre No. 1 ($9.95). The aroma of grilled onions, tomatoes, jalapenos, thin slices of beef and bacon arrives before the plate. This is an authentic Mexican dish. That is, it’s served south of the border and isn’t just a gringo fabrication, although in Mexico it’s often used as a filling for tacos. At La Carreta it’s a spin on fajitas, only better. Topped with cheese, the dish is served with a side of guacamole, rice, beans and a choice of corn or flour tortillas. By the way, that bacon doesn’t mean just a few random crumbles; the substantial pieces add smokiness and salt.

McGINTY’S WOOD OVEN PUB 11115 U.S. 24, Divide, 686-7703, mcgintyswoodovenpub. com The fish and chips ($12.95) are only served here on Fridays, but they’re worth an end-of-the-week trip up Ute Pass. Coated with an Irish ale batter, flaky, tender haddock is then fried to a golden, crispy texture, which isn’t at all oily. A choice of soup and a small dish of cole slaw are included in the deal. The latter is fresh and not swimming in mayo, which can often be the case. Neither was it super tart. I suggest the creamy New England clam chowder with chunks of potatoes and bits of clams, to start. Of course, the star of the of the meal is the entree; it’s easy to see why McGinty’s is even more popular on Fridays.

THE PUBLIC HOUSE 445 E. Cheyenne Mountain Blvd., 465-3079 The breads used at The Public House are baked at the Old School Bakery at Ivywild School, so they’re practically homemade (like most of the menu items). This adds yet another layer of taste to the sandwichs, such as the BLTM — bacon, lettuce, tomato and mozzarella ($11.75). Fresh sourdough, which holds all the elements together, is slathered with basil aioli. The result is like a caprese salad between two hearty slices of bread with applewood bacon. All sandwiches are served with a choice of side salad, cole slaw or pub chips. The latter are fried quartered, fingerling potatoes that aren’t greasy. I liked the blend of crunchy exterior with the creamy inside.

Garden of the Gods Road, #A, 445-0997, landofthepyramids.com There’s no reason to bypass the slightly exotic flavors of the entrees at Land of the Pyramids, but if you’re pressed for time or only want a snack, you can’t go wrong with a cup ($1.49) of Egyptian tea and a few pieces of house-made baklava (.99) The tea is made with cloves, cardamom, mint and sage. The aroma alone is worth the visit, but the taste seals the effort. The baklava is made of multiple layers of paper-thin phyllo filled with a honey-soaked blend of crushed almonds, walnuts and pistachios. When paired with the aromatic tea, it’s a delightful midafternoon or evening treat.

The bread is the perfect vehicle for sopping up the juices from the hearty beef stew. The bourguignon is served over pasta with meat so tender that it seems to fall apart before it’s even touched by a fork. The carrots yield at the slightest pressure while maintaining their earthy sweetness, yet the mushrooms aren’t at all soggy. The red wine-based gravy is thick and rich, another indication of flavors melding for a long period of time. The only need for a knife with this entree is to butter the roll. At Adam’s Mountain Café, the sesame seeds are patted into thin slices of tofu before being sautéed in rice bran oil — a zero trans-fat oil with a nutty flavor. The result is a delicate crunch with a chewy texture. Served atop the Senegalese vegetables ($14; add $4 for the tofu) — cauliflower, potatoes and onions simmered in coconut milk with fresh ginger — the result is a warm, tangy broth, which makes for succulent and fragrant fare. Ginger is warming in the winter and cooling in the summer. At The Blue Star Cocktail Lounge, the crispy tofu ($13.95) is breaded and served atop a creamy risotto prepared with shiitake mushrooms and a sweet sesame seed sauce with a nod to Asian influences.

For Chinese, Silverpond offers seven vegetable entrees and 20 tofu dishes; I go for the vegetarian chicken and duck ($11.25). Yes, vegetarian meat. The vegetarian duck, served over crispy steamed broccoli and sautéed with bamboo shoots, water chestnuts, carrots and peppers, is succulent and a filling, familiar option for new or transitioning vegans (or omnivore dining companions). From China to Japan, you can almost always find vegetable sushi rolls. Tomo Sushi’s cucumber avocado roll ($4.75), with added tofu, is fresh and particularly light. The sweet potato roll with eel sauce ($6.95) — yes, the eel sauce is vegan — is richer and makes for a filling meal.

The Acai bowl ($7.95), pronounced ah-sah-ee), is massive. Beginning with the namesake palm fruit blended with bananas, strawberries and coconut milk, the purple berry base is topped with granola, hemp seeds, Gogi berries and banana slices; it’s delightfully reminiscent of an ice cream sundae. At Ola Juice Bar, Nissa’s Rice Bowl ($7.50), named after the owner, is everything perfect and right about eating healthy and plant-based: beans, greens and grains are the star. Peanut sauce, arugula, avocado, pickled carrots and daikon, cashews, black beans smother freshly cooked brown rice for a nutrient dense bowl delivers layers of flavor.

Yep, they’re vegan. McCabe’s offers up crispy, tempura-battered fried avocado tacos as bites ($3 each) or as a meal ($12), which includes spicy black beans. The creamy cilantro lime aioli is vegan as is. And for proof that veganism isn’t a diet, get the vegan corndogs ($10) at Trinity Brewing. The lightly breaded tofu version of a hot dog is reminiscent of fair food: nice and greasy. The two corn dogs, nested in a cone of Belgian fries, are served with your choice of a dipping sauce. The stinging Flo beer mustard and savory curry ketchup make the playful treat tastily adult.
