FROM THE DESK OF THE MAYOR
We’ve made it to June, thanks to all who have helped My fellow Riverview residents, we’ve finally made it to June. It has been a trying two and half months for everyone. Going to work, shopping, running errands and recreational activities are all different than they were in early March. The terms, “social distancing” and the “new normal” weren’t part of our vocabulary until now. andrew If we’ve learned swift anything over the past couple months, it is how deep the hearts of our fellow residents and local businesses can be. Carey Ann the Clown, Jeff Owens the Breadmeister, Ali Saad of Time Out Barbershop, Eddie and Sam of Parthenon and way too many residents to mention that have helped others get through the tough times this pandemic has brought. Riverview is blessed with so many caring small businesses that have suffered financially during the Covid-19 pandemic that it would be beneficial to them if we all frequented them this summer. With the restaurants opening back up with inside dining we can implement those “social distancing” and “new normal” routines. At the writing of this article our Recreation Department Director and the City Attorney are evaluating the latest executive orders from Governor Whitmer to determine how they apply to the opening of our parks and park equipment. What we do know is that our parks are scheduled to open on June 15. Riverview resident Jim Martina and his company, Southshore Power Wash will be disinfecting and cleaning all the park equipment at no cost to the city before our parks open. Thank you very much Mr. Martina. As you likely know by now, most of the Recreation Department programs have been cancelled for the month of June and part of July. Concerts in the Park are still scheduled to take place but the series may be delayed by one week. The Riverview Veterans Memorial Library will be opening in stages. Check their Facebook page and website
for more information. The city council recently adopted the budget for the 2020/2021 fiscal year. Excluding enterprise funds; it includes estimated revenues of $16,605,644 and appropriations of $16,704,535. The largest portion of the budget is the general fund with estimated revenues of $11,885,078 and appropriations of $11,878.025. The small surplus of $7,053 will be added back to the fund balance. Council also approved the operating millage rates for the 2020/2021 fiscal year. As promised there will be no tax increase for the coming year. The total millage rate is 20.48. To determine what this means to you, check the taxable value of your home. Multiply $20.48 for each $1,000 of taxable value. One major note is the shift from the Regional Sewer Debt to the Special Assessment for the Fire Department. As a reminder, the Special Assessment is only for one year. To complete the financing of the Fire Department, council will be putting a millage request on the November ballot. Although the proposal appears on this November’s ballot, the implementation of the millage would not take place until the expiration of the Special Assessment in July of 2021. We all know several of our roads are in dire need of repair. With that, our annual street sectioning project will start July 1. The amount appropriated for the repairs this year is $528,000. On a very positive note, the city council has started discussions on implementing a new city app for your Android or iOS device. The app will be able to notify you of snow emergencies, power outages, up-coming events, library and recreation programs, and much more. The Riverview Land Preserve’s Regional Resource Community Shred Day has been rescheduled for Saturday, Sept. 19 from noon to 4 p.m. at 20863 Grange Road in Riverview. This is a free drive-through event. Land Preserve tours are available on a limited basis to residents as well as community, civic and academic organizations. To request a tour, call Jeff Kugelman, 734-281-4263, x5928.

Get improved flexibility with morning stretches With a record amount of people around the globe having sleepless nights, waking up refreshed might not be an option these days. But we’ve got good news – adding a morning stretching routine to your day might help. Spending 10 to 15 minutes stretching each morning is effective at helping you wake up, loosening your muscles for the day ahead — and it’s considered a form of exercise. A daily morning routine can help energize you for the day and help reduce anxiety. That could mean you can skip that coffee until midmorning, or eliminate it all together. Morning stretching is also helpful for improving your posture. Are you one of the millions of people worldwide that sit behind a desk? Or are you binging on the

couch in front of the tube? Implementing morning stretching into your daily routine isn’t just effective for loosening tight muscles, but helps them to become more flexible. Over time, you’ll notice a positive change in your posture. And your energy. Nervous system facts Heighten your brainpower by learning a little more about your nervous system with some truly amazing facts! 1. The human spinal cord consists of nearly 13.5 million neurons. The most sensitive are found at the base of your spinal cord. 2. Nerves are made up of long
bundles of fiber called axons that also contain nerve cells. Bonus fact: The two types of nerve cells found within your body are called neurons and glial cells. 3. If all of the neurons in your brain were lined up, they would form a path about 600 miles long! 4. Think your car is fast? Signals travel between your brain and body at speeds up over 200 MPH (100 meters per second)! 5. Of the 43 pairs of nerves that connect your central nervous system, 31 are attached to your spinal cord — the primary focus of chiropractic care. Life is motion Have you ever heard the saying ‘sitting is the new smoking’? While some of us may find ourselves sitting more than usual as Covid-19 keeps us indoors, there are still ways we can incorporate movement — safely — into our day. In fact, fitting in the recommended 10,000 steps a day isn’t only doable, but can be fun as well by using a simple pedometer or fitness tracker to monitor your steps. Incorporating movement into your day can be as easy as walking during phone calls. Divide your day with a quick stroll during a morning and afternoon break. Have a pet at home? It’s the perfect excuse to get outside for fresh air and take a lap around the block. Not only will you please your furry friend — it’s good for you, too. It’s important to move. Now more than ever. Even simple walking can keep you alert, emotionally vibrant and overall healthier. Plus, it’s free. ~ Cousineau Chiropractic

Riverview had an original ‘Wall’ thanks to Gertrude and Richard Hage The Wall that Heals was supposed to be in Riverview weeks ago, but has been postponed to a later date, which has yet to be determined. This Corona virus has been changing everything in all of our lives. I’m sure the committee will keep you posted on any updates. The Wall that Heals GERALD is a tribute to the PERRY servicemen and women Riverview Register who died serving their country in Vietnam. It is a 375-foot scaled replica of the original Vietnam Memorial Wall located in Washington D.C. is said to be the best representation of “The Wall experience” across the United States. Long before the actual Vietnam Memorial Wall was built and dedicated in Washington DC, in November 1982, the little town of Riverview, Michigan, population of 6,700 in the early 1960s, built a wall made of plywood, painted it white and put it up in front of City Hall, which back then was located on Fort Street. It was dedicated to the service men from Riverview, who were or had served in the military during the Vietnam War. The Riverview Wall was the brainchild of Mrs. Gertrude L. Hage. She went to the Riverview days committee (now known as Summerfest) with the idea for the sign and her idea was accepted almost immediately. Gertrude then enlisted the help of her husband, Richard, and began to design and build the wall. It was approximately 4 feet by 8 feet with a half round piece on the top with the words, “Riverview Days salutes its servicemen” with an eagle design in the middle, painted by Gertrude. Below this were the words “City of Riverview, Michigan.” Each an every year for a couple of years, the sign would be taken down and completely painted over and new names were painted again on the sign. After a few years, Gertrude discovered that the sign (or wall) wasn’t big enough to list every servicemen for the duration of the war, so it was decided that each name would be printed on a small piece
of wood and placed on the sign and when the serviceman would return to Riverview, the name would be removed to make room for others who were going into the military. On November 10, 1969, in conjunction with Veterans Day, the Flame of Freedom was presented to the City of Riverview by the Riverview American Legion Post 389 Chairman Ted Goodyear, to be placed in front of the Wall. The Riverview Praesidium all girl Color Guard under the direction of Herman Fineburg, presented the Colors at the ceremony. After the March 1973 Paris Peace Accord provided a cease fire, U.S. troops were withdrawn from Vietnam and the Riverview Vietnam sign along with an eternal flame were decommissioned in 1976, removed from in front of City Hall and placed in storage. Also in January 1976, the Riverview Bicentennial commission honored Gertrude for her work on the servicemen’s Honor Roll Sign. In 2012, Mrs. and Mr. Hage were honored during the annual Memorial Day Ceremony, for their precious and thoughtful time working on the original Riverview Vietnam Wall. In 2015, the Riverview American Legion Post 389, built a replica of the original Riverview Vietnam Wall and also after an extensive search, placed the names of the 193 service men that were recorded to be on the original wall over a period from when the sign was built, to 1976 when the sign was decommissioned. Mrs Gertrude Louise Hage died in January of 2015. In March of 2016, Mr. Richard Hage made a donation of $100,000 to the St. Jude Children’s Research Hospital, in his dear wife’s name. In a letter from Marlo Thomas herself to Mr Hage, she stated “His generous and benevolent spirit will truly live on through the lives of the children that will be helped by this gift and we are so appreciated.” Rest in peace Gertrude, all of the servicemen who were remembered because of your tireless efforts owe you a huge debt of gratitude.

Anastasia Stergiadis is
‘Pirate of the Year’ Shannon Rossi
\Riverview Register
Anastasia Stergiadis has been named “Pirate of the Year” at Riverview Community High School. Pirate of the Year is voted on by teachers and faculty,” Stergiadis said. “It’s basically a person who lives by ARRGH, the mission statement of Riverview schools – academics, responsibility, respect, growth and honor.” The acronym ARRGH is used for the mission statement because the mascot for Riverview Community Schools is a pirate. The “Pirate of the Year” also represents the school at all times,
donates their time and displays selflessness. “You’re what people think of when they think of Riverview. One of my teachers called it the Heisman Trophy of RCHS,” said Stergiadis. With her parents, Danny and Kim, and younger sister Olivia, Stergiadis has lived in Riverview her whole life. She went to Forest Elementary School. Going into her senior year in the fall of 2019, Stergiadis was both excited to spend the momentous year with friends and teachers and a little sad that her high school years would be coming to an end. “I was excited to enjoy and make the most of the year,” said Stergiadis. “I didn’t want to leave, but I knew I would
have to. She played varsity soccer since she was a freshman, as well as basketball, helping the team win two district championships. By her senior year, Stergiadis was president of the Spanish Club, secretary for the RCHS National Honor Society, helped plan Cuts for Kids, a fundraiser for Children with Hairloss, served on the student council and Connection Club, a mentorship program for freshmen. She described Riverview Community High School as her second home. “I loved going to school. I looked forward to it every single day.” She took advanced placement and SEE PIRATE, Page 9
Riverview’s Patel honored as U.S. Presidential Scholar Paula Neuman
\Riverview Register
Ansh Patel of Riverview is one of 10 valedictorians at Grosse Ile High School this year. He’s also one of only two students in Michigan and 161 across the country to be honored this year as a U.S. Presidential Scholar. “I was one of the 4,500 students nominated nationwide to apply for the program,” Ansh said. He was among those nominated based on their high SAT scores. Other ways students can be nominated is by a chief state school officer or by an organization. Students of the arts, career and technical education may get nominated in other ways. Once nominated to apply, candidates must submit essays, self-assessments and transcripts, as well as an application form for the Presidential Scholars Program. Ansh’s GIHS administrators and teachers joined efforts to write a letter about him, as well, to add to his submission. Judges choose the
winning scholars based on academic achievement, leadership qualities and community service. Once chosen, honored scholars then are asked to choose a “distinguished teacher” who impacted their education. Ansh chose GIHS math teacher Brian Matusik, who said he was surprised and thrilled. “I chose Mr. Matusik because he has always encouraged me to work hard and has tried his best to make learning an enjoyable experience,” Ansh said. “I have had Mr. Matusik as my teacher for longer than I have had any other teacher, and he has been a great inspiration to me over the years. He is always willing
to help with anything and is very enthusiastic about what he does.” The instructor praised the student in return. “Ansh is an amazing, kind person,” said Matusik, who has been at GIHS since 1994 and teaches precalculus and advanced placement calculus. “I’ve had a lot of really talented, smart students, but this guy — he was always helping his classmates. He’s very genuine and super smart, but not afraid to ask if he doesn’t understand something.” In a normal year, the winning scholars and distinguished teachers get a paid trip to Washington, D.C.,
in June. They attend a recognition ceremony and are presented with medallions at the White House, attend recitals and other ceremonies in their honor, and visit museums and monuments. But this year has been impacted by the Covid-19 pandemic, and the trip is off. “This year, they will be mailing me and the other scholars our medallions and are planning to host an online recognition event,” Ansh said. “It is a huge honor for me to have the nation be proud of my hard work, but being a U.S Presidential Scholar is also very special because it brings together the 160 students nationwide who are driven and ambitious, so it will be really helpful to have that kind of network in the future.” The son of Riverview residents Niketan and Pallavi Patel, Ansh plans to attend the University of Michigan School of Engineering in the fall. “I am interested in operations SEE HONORED, Page 9

Allison Miller honored with school’s ARRGH Award Paula Neuman \Riverview Register
Allison Miller has been awarded Riverview Community High School’s ARRGH Award. The honor goes to the graduating senior who “exemplifies the very best of our school motto,” Principal Joseph Hatzl said. ARRGH, the school motto, stands for academics, responsibility, respect, growth and honor. The school mascot is a Pirate, so the motto fits. School staff nominates students for the award and also chooses the winner. Allison, daughter of Brian and Sandra Miller of Riverview, said she isn’t sure why she was the one awarded, but added, “I think I tried my best to excel in academics and get involved in my school, and I’m
respectful and nice to my teachers.” She also has been awarded a Maroon and Gold Merit Recognition Scholarship from Central Michigan University, where she plans to study fashion merchandising in the fall. “I’ve always had an interest in fashion, and I’m not very good in art, so the business and merchandising end of it seemed like a better fit to me,” Allison said. “I’d like to work in sustainable fashion. I am passionate about the environment and I always try to shop sustainably.” She said her parents are her role models. “They’re always super supportive and give their all to whatever they do,” she said. Allison grew up in Riverview, and said she has

Continued from page 7 honors classes. She wanted to be as involved as possible in her senior year. When it came time to start applying for colleges, she had to make some difficult decisions. She’d originally planned on playing women’s soccer in college. But due to a torn ACL in her junior year and other considerations, she decided to focus her applications on academics, rather than sports. “I had to switch what I was looking for in a college and look at them from different angles,” she said. Stergiadis applied to and took campus tours at Michigan State University, the University of Michigan, Grand Valley State University, the University of Toledo, Wayne State, and Saginaw Valley State University. “My family are diehard U-of-M fans. Blue and gold is in my blood,” she said. “But at Michigan State, it felt like home. I loved it, the programs and opportunities.” As her senior year went on, Stergiadis looked forward to prom and graduation. Unfortunately for the class of 2020,
always enjoyed her time in the city’s schools and would like to thank all her teachers from kindergarten to graduation. She was very active in high school, where she served as a class representative and captain of the track team during her senior year. Allison also was president of Kuts for Kids (a group promoting hair donation) and vice president of Spanish Club; and was a member of National Honor Society, Connection Club (where upperclassmen mentor freshmen) and Project Awareness (a mental health focus group). She advises incoming freshmen to get involved in school groups, too. “It will be so much fun and you’ll meet so many people,” Allison said.
things got complicated in March. When the governor declared that all schools would close, Stergiadis and her friends felt some disappointment, but some hope that they’d still be able to finish the year at school. In addition, she had hoped to come back to play her last soccer season at RCHS. After tearing her ACL last spring, it took a lot of work and effort for her to be able to get back to playing. Sadly, Stergiadis and her classmates would not get to return to finish out the school year. “I didn’t get to play. It was heartbreaking,” she said. “We only had one practice before the school closed.” She was deemed captain of the team. “The initial news hit me hard.” said Stergiadis. “I was so sad for a long time that I wouldn’t get to experience what everyone else got to experience with their senior year.” With time, she has been able to move past the loss of the end of her senior year. She finished the year as a graduate with highest distinction, which required a GPA of 4.0 or higher, a score of at least 1240 on the SAT test, and at least six honors credits. plans to hold a graduation ceremony for seniors Aug. 4. “We don’t have any other details yet. I’m just excited that I get to walk across the stage in front of my friends and family who have been there to support me along the way,” she said. “A virtual ceremony would take away a little of the sense of accomplishment, I think. It wouldn’t be as special.” Stergiadis won several scholarships, including a Riverview Hall of Fame award, the Charles F. Mikesell Memorial Award, as well as from the Forest Elementary Parents Club,

the Spanish Club, a soccer camp scholarship and a Michigan Scholar Award from Michigan State University. “I just want to say thank you to my parents and family, the teachers and staff at RCHS, and my Spanish teacher Mrs. Kristen Weber for helping me find a passion for Spanish,” she said. Stergiadis will start her classes at Michigan State University in the fall with a goal of majoring in humanities concentrating on pre-law, and Spanish. She hopes to be an attorney or work in public policy.

I was the captain of our school’s robotics team this year, and after four years of FIRST Robotics, I can confidently say that it has been the most enriching experience of my life.” Ansh attended a Montessori School in Southgate through fifth grade, then switched to Grosse Ile schools. “During high school, I participated in varsity cross country and track and I enjoy running on my own, as well,” said Ansh, who also loves reading and music. “I want to thank my parents for always pushing me to be the best that I can be and my teachers for helping me achieve this great honor. They all have inspired me to work hard toward my goals over the years.”

Jordan Wieneke wins Outstanding Service Award Tom Tigani
\Riverview Register
Throughout her academic life, Jordan Wieneke has been carrying on a family tradition of helping others, and her school has officially recognized her for it. The daughter of a Downriver police officer and a University of Michigan flight nurse who spends her days working aboard a helicopter, she recently capped off her senior year with an Outstanding Service Award from Riverview Community High School. “Service has been around me my whole life,” Wieneke said. “Throughout the years, I’ve always taken any chance I got to help teachers and staff with underclassmen. I wanted to use my abilities to help out younger students with the classroom experience.”
She also served as a captain on the RCHS volleyball team, and used the opportunity to help her teammates academically. “Any chance I got to help those in need, I was ready to step in and do that for them,” Wieneke said. Along with some of her volleyball teammates, she also helped run a weekend camp for middle schoolers. “I like to take middle schoolers and teach them the things I do best,” she said. She’s also sold raffle tickets at a golf outing and volunteered through her school, where she’s done service projects as a member of the National Honor Society and sold raffle tickets at a high school basketball game. She readily admits the latter was kind of fun, as the tickets she sold were mostly to her
classmates. Before high school, Wieneke and her sister, Maddie, a freshman at RCHS, attended school at Christ the King Lutheran in Southgate. There they worked in the church nursery, did Christmas decorating and cleaned up pews after services. “We’ve been volunteering as long as we can remember in and outside the church,” Wieneke said. “Seeing what other people have to go through makes you realize that sometimes things aren’t as bad for you as you’re making them out to be.” Along the way, she’s managed to earn a 4.2 high school grade-point average. “I’m very proud of that,” Wieneke said. While she credits both parents with setting fine examples of service, her
mom has influenced her post graduation plans. “The way she reaches out to people and helps them intrigues me and makes me want to help, and make even their worst day a little bit better,” she said. So this fall, Wieneke will enter Concordia University’s nursing program, where she will put $500 scholarships from a local law office and the RCHS Social Studies Department to good use. Like seniors across the country, Wieneke has had to deal with a final year cut short by a worldwide health crisis. While she’s accepted most of the changes resulting from that, she wishes she could do at least one “normal” thing. “I would want to walk across the stage and accept that diploma I’ve been working on for almost 13 years,” she said.

Alicia Cotter win RCHS Excellence in Leadership Award Tom Tigani
\Riverview Register
Dolly Parton once said the actions of an excellent leader create a legacy that inspires others to dream more, learn more, do more and become more. Alicia Cotter has tried to do just that in her time at Riverview Community High School, which recently recognized her with an Excellence in Leadership award. “During my high school career, I’ve tried to stay really involved with clubs and making new friends,” she said. “With my clubs I took leadership positions and was the Student Council president as a senior. “I felt like my peers trusted me, and I always had that leadership quality about me growing up. I would always be the one to say something first and help with planning out group projects and things like that.” Cotter said she got pretty good grades growing up, and that her father and grandmother both pushed her to excel in academics and always get her homework done. At RCHS, her coach selected her to be a captain of the junior varsity girls’ soccer team in both her sophomore and junior years. “I also had the honor of being the 2019 homecoming queen, a member of the National Honor Society, ensemble captain of my choir and vice
president of the Class of 2020,” she said. Of her shortened senior year, Cotter said, “It’s definitely been crazy, but we all know it’s something no other class has gone through. On the one hand we’ve been robbed of some things, but on the other

LIGHTHOUSE OF TRENTON
hand, we’ve gotten a lot of support from leaders, celebrities and other people with encouraging messages on their live streams.” While she and her classmates have adjusted pretty well to a strange set of circumstances, she’s disappointed she won’t get the chance to perform in “Newsies,” the school’s spring musical. She had two parts, playing one of the newsboys and showing up later in a cameo role. Rehearsals began in January for the dance-heavy production, and though they only lasted a couple of months, she really misses them. “I made a lot of friends and was really looking forward to it,” Cotter said. “I’ve been in choirs since first grade, and me and a couple friends auditioned as dancers. Last year I was a lead in ‘White Christmas,’ and this would have been a new experience.” Future new experiences include learning to be an aesthetician at the Douglas J Aveda Institute in Ann Arbor. And lest one think all those leadership skills might go to waste while she’s helping others look better, she plans to attend college after she gets her license, and is considering studying nursing at Wayne State University — and learning how to help them feel better as well.

Summer 2020 Curbside Book Pickup Starting June 22, 2020 patrons can order books online or over the phone & pick them up curbside near our front entrance. Service Hours: Monday & Tuesday: 12 p.m. – 5 p.m. Wednesday & Thursday: 12 p.m. – 7 p.m. Why Curbside? Keeping our services curbside in the beginning stages of reopening allows us to get the most materials to patrons while having to adhere to restrictions on daily operations during the COVID-19 pandemic. It also gives our staff the opportunity to acclimate to new (and regularly changing) state-mandated requirements for PPE, social distancing, sanitation and 48-96 hour quarantining of circulating materials. We will also be working to catch up on the return of thousands of items currently checked out since March and restart delivery of materials from other libraries. Thank you for your understanding and patience during this phase of our reopening.
To use our new curbside service: 1)
Place items on hold online (preferred method) at catalog.tln.lib.mi.us or by calling 734-283-1250. Each order will have a limit of 10 books and 5 DVDs. If an item is missing/lost/damaged we will contact you ASAP to discuss alternatives. Items from other libraries may not be available due to delivery schedules.
2) Within 24 hours, you will receive a phone call with the update on your book order and we will schedule a time for pickup. Materials will be checked out to you over the phone, so please have your library card number handy. 3) When you arrive at the library during your pickup time, please give us a call. We will place your materials in a bag and leave them on a cart near our front entrance. If you do not have a cellular phone, please let us know at the time of pickup scheduling. Please do not retrieve your items until the staff member has reentered the building. If you are physically unable to leave your vehicle, we will deliver materials into an open trunk. 4) In an effort to ensure the safe handling of library materials, staff members will not accept returns during pickup service. Please return all items to the dropbox located on the side of the building. (kiddie corner from the bike rack) 5) Patrons should expect a slight delay in returned items being removed from their accounts as incoming materials will be held in quarantine for 48-96 hours before being processed by library staff. The library is following guidelines for the safe handling of materials as outlined by the City of Riverview, the CDC, Wayne County Health Department and the State of Michigan Governor’s Office. We are using best practices in an effort to keep our staff and patrons safe.

CULINARY CAPERS
Almost burnin’ down the house with Evelyn I’ve had more than my share of kitchen catastrophes — you may remember when I wrote about the Grosse Ile Fire Department coming to my aid when my oven caught fire. Well, my latest calamity was a real doozy. I had just baked an awesome loaf of bread in my 40-year-old cast-aluminum Magnalite Dutch oven, and left the pot on the top of my electric stove while I was EVELYN making dinner. CAIRNS Riverview Unfortunately, I Register accidently turned on the wrong burner, and minutes later, I was horrified to see that the bottom of the pot had melted and left a pool of melted aluminum in the drip pan. I have since purchased a cast-iron Dutch oven — hoping that cast iron doesn’t melt —and a new heating element and drip pan. But the bread is another story, and a good one. I can’t thank my neighbor Melva Bonis for introducing me to Jenny Jones’ Jennycancook.com website and Jenny’s recipe for the most delicious, easiest, crustiest artisan noknead yeast bread I have ever baked or eaten! No bread flour or dried milk necessary, and the recipe calls for only ¼ teaspoon yeast — and one package is enough to make five loaves! Yeast, like bread flour, may be hard to find in grocery stores, but there is plenty on Amazon.com as I write this. And don’t worry if you don’t have a Dutch oven to bake the bread, because Jenny also provides a no-Dutch-oven method, which I also have tried. The

latter is baked on a parchment- covered cookie sheet, and I really couldn’t tell the difference between the two loaves. Jenny provides a step-by step video to show exactly how to make and bake her no-knead bread. She strongly suggests using thermometers to check the temperature of the oven and the water required in the recipe. If the water is too cold the bread won’t rise, and if it’s too hot it will kill the yeast. (I have always used both. Types.) The temperature of the oven has to be 450 degrees, Jenny says, so if you don’t trust your oven control, use an oven thermometer, not only to ensure the best bread, but all baked goods. Both types of thermometers are sold at most large supermarkets and Amazon as well. Do read the comments of Jenny’s readers; they are inspirational, interesting and very helpful.
JENNY’S NO-KNEAD BREAD 3 cups all- purpose or bread flour, aerated before measuring (see Note) ¼ teaspoon active dry or instant yeast 1 teaspoon salt 1½ cups hot water, not boiling (Jenny uses hot tap water about 125-130 degrees) About 2 tablespoons extra flour for shaping dough Combine flour, yeast and salt in a large bowl. Stir in water until it’s well combined. Cover with plastic wrap and let stand at room temperature for 3 hours. After 3 hours, dough will become puffy and dotted with bubbles. Transfer it onto a well-floured surface and sprinkle dough with a little flour. Using a scraper, fold dough over 10-12 times and shape into a rough ball. Place in a parchment-paper-lined bowl (not
waxed-paper-lined) and cover with a towel. Let stand on counter top for about 35 minutes. Meanwhile, place a Dutch oven with lid in a cold oven and preheat to 450 degrees (it should take about 35 minutes to reach 450 degrees). When oven reaches 450 degrees, using oven gloves or heavy pot holders, lift the parchment paper and dough from the bowl and gently place into the hot Dutch oven (the parchment paper goes in the pot, too). Cover the pot and bake 30 minutes. After 30 minutes, remove lid and parchment paper. Return, uncovered, to oven and bake 10 to 15 minutes. Let cool at least 15 minutes before slicing. (Note: To aerate flour, stir the a few times with a spoon; don’t sift). (For recipe requests or contributions, questions or comments, email Evycairns@aol.com.)
