Teens off to Nepal

Editorial

Ribbon of truth

By LACHLAN MOORHEAD

“THE only thing necessary for the triumph of evil is that good men do nothing. That much-used quote - widely, yet apparently wrongly, attributed to Irish political philosopher Edmund Burke - sums up a movement that is gathering pace in communities across Australia as White Ribbon Day activities shine a light on the scourge of family violence. In the past, domestic violence has been largely palmed off by blokes as a women’s issue, or a police issue. Wrong! It’s an issue for men. Police can do their best to prevent the second, third or even fourth offences, but it needs a whole of community effort to prevent the first offence. Tackling this issue can’t be left to women’s groups or advocates, or palmed off as an issue for those on the lower socio-economic scale. Men from all walks of life have to put their hand up to take responsibility and deal with it among their peers. We can no longer foster gender inequality, we can no longer engage or support any behavior that demeans or devalues women. That can be as simple as not telling - or even laughing at - a joke that crosses the sexist line. Wolf whistling as a pretty woman passes is as outdated as flared jeans and platform shoes and must join those as unfortunate relics of a past era.

NEPAL is waiting for a group of globe-trotting high school students from Wodonga. Four Year 11 students from Victory Lutheran College - Georgia Boehringer, Shynae Kennedy, Victoria Bartlett and Jess Herrmann - will travel to Nepal on Monday with Lutheran students from across Australia on a learning tour through the country’s most poverty-stricken areas. Principal Cain McDonald said the Nepal tour was a once in a lifetime trip for the students. “This will be an opportunity that few people will ever get the chance to experience and our students are excited about the prospect of seeing service to those in need in Nepal, he said. “The college is committed to providing opportunities for the students to engage with communities, not just locally, but nationally and globally also. The college students will be accompanied by teacher Paul Kinning and will also travel with Australian Lutheran World Service (ALWS) staff. This week representatives from the ALWS office, based in Albury, spoke to the college students about what they could expect in Nepal. ALWS is an aid and development organisation that is known for long-term, sustainable development in many countries. The Nepal tour will allow students to witness first-hand the work of ALWS in Nepal, including within a refugee camp. The students will be exposed to local projects in the region which help organise access to clean water, affordable healthy foods, sanitation, disability and special needs care and education. The college students have been fund-raising throughout the year to help ALWS staff in Nepal continue their work in these crucial areas. A casual clothes day will also be held today at the school to help the cause.

Big Give, huge difference By LACHLAN MOORHEAD THE three-year-old boy, a refugee who had never seen a pool before, stood beside the water and finally had a chance to swim for the first time. This was just one of the true stories told at the Big Give last Thursday, an annual grant presentation ceremony held at the Albury Wodonga Community College and co-ordinated by Border Trust. Border Trust, the Albury Wodonga community foundation, has been running the Big Give grant program for over five years and presented six new organisations with grants for 2013-’14, while reflecting upon the influence the funding has had on past recipients. New grant recipients included Upper Murray Scout District 3rd Wodonga Scout Committee, Walwa Community Centre, Corryong Neighbourhood Centre, Albury Wodonga Regional Foodshare, Country Hope and Upper Murray Family Care. Border Trust’s granting partner, Albury Wodonga YMCA, also provided funding for Youth Albury Wodonga and Women’s Health Goulburn North East. Glenys Atkins, Border Trust’s Executive Officer, said the Big Give ceremony isn’t just about handing out new grants but listening previous recipients tell of the influence the funding had had for their organisations. “People’s stories are fantastic, the impact on families is enormous,” she said. “It shows the benefits of small grants.” The Border Trust grants never ex-

ceed $5000 but the foundation ensures they go a long way. Representatives from four previous recipients -The Murray Conservatorium, Uniting Care Wodonga, YES Youth and Family Services and Gateway Community Health - each gave a presentation detailing the programs which the money had gone towards, and the impact it had had on people and their families. The Gateway Community Health representative discussed the group’s Culturally and Linguistically Diverse (CALD) Swimming Program, created with the help of a recent Border Trust grant. The swimming program helped a refugee couple introduce their child to a pool and teach them to swim for the first time. “Being in a position to provide grants is obviously very rewarding, but hearing the stories of how these projects turned out and what it has meant to the lives of participants is what Border Trust is all about, and speaks volumes about the benefits of local giving,” Ms Atkins said. “It’s hard not to be moved when you hear the reaction of a young child from a refugee family when first faced with the prospect of getting into a pool to learn to swim, and how the program has helped him and his family develop community connections and confidence within a significantly different cultural landscape”. Ms Atkins said couldn’t wait to hear stories in the years to come from this year’s recipients.

Maiden member From page 1 Wodonga mechanic Rex McCartney will be on the McGowan express, ready to celebrate the historic moment with the Indi MP and fellow supporters. “I just wanted to continue the support and to be there to hear what she says,” he said. Mr McCartney, who joined the McGowan camp during the election campaign, said he had no idea what might be said during the maiden speech, but was willing to predict the mood in the public gallery. “I would think it is a joyous moment, rather than an emotional event,” he said. “It’s a once in a lifetime chance to hear someone that you know personally speak in Parliament House... I wouldn’t miss it.” As much recognition of Ms McGowan’s first big Parliamentary

moment, Mr McCartney said the Canberra trip would be a celebration of the team that helped support the Independent in her campaign against powerful Liberal incumbent Sophie Mirabella. “Of the people who I have met during this campaign, there’s not one I wouldn’t invite into my house,” he said. “The campaign was hard yakka, and when you go through something difficult and succeed you have a unity... a real camaraderie.” Having been in Parliament House for just a fortnight, Ms McGowan is still finding her feet, but has been impressed with the level of support she has received from all quarters. “I’ve had a very positive response from people,” she said. “It’s been a steep learning curve but people have been very warm in offering help.”

Companion on a journey By LACHLAN MOORHEAD WORRIED Wodonga residents no longer have to stress about taking public transport to appointments by themselves. Last Thursday the Wodonga companion service was launched, which offers trained volunteers to meet and accompany clients to medical or other appointments on public transport, in taxis or on foot. Travellers Aid co-ordinator Robyn Dean said the companion service would be available anywhere in the Wodonga central district, to and from the Wodonga bus interchange in High Street and Hovell Street, and also to Albury specifically for medical appointments. “It allows families to not take time off

work to take their mum and dad to appointments and knowing that they will still get here safely,” Ms Dean said. “It’s aimed at anybody over the age of 16. You don’t need a referral.” The companion service is a joint initiative between Travellers Aid Australia, a not-for-profit organisation, and the Victorian Government’s Getting There Network. While the companion service launched in Melbourne in 2010, Ms Dean said she saw a significant need for it in Wodonga as well. “While I was sitting at The Cube one day, I saw people waiting for public transport who had no one to talk to and no one to walk to High Street with. They had to walk alone,” she said.

“Companionship can make someone’s day so much better.” The service is available for a $2 contribution and volunteers need to be booked at least 48 hours in advance. People using the service are required to cover their own public transport travel ticket costs. While there haven’t been any clients using the service yet, Ms Dean said there had been many expressions of interest. “We’ve had a lot of phone inquiries,” she said. “It’s a pilot project, so any additional funding depends on how successful it is. We have six great volunteers ready to go.” Bookings are essential, contact 1300 Ruth Spurr and Annette Smith at the launch of the Wodonga 704 530. Travellers Aid service last week.

Shocking indictment By LACHLAN MOORHEAD FACTS don’t lie - one in three Australian women over the age of 15 report being victims of physical or sexual violence. In addition, 36 per cent of all homicides take place in a domestic setting and 73 per cent of those involve a woman being killed by their male partner. Sergeant John Huntington, a Victoria Police Family Violence advisor based in Wangaratta, spoke solemnly but purposefully when he listed these statistics following the White Ribbon Day forum, ‘Let’s start with 1’ at the Cube in Wodonga on Monday. Sgt Huntington, who attended the event, said family violence was a serious problem in Wodonga and that expectations had to continue to be broken down. “The Wodonga community has a significant issue with violence against women, but the rates of reported violence have gone up and we want to encourage more and more people to report these attacks when they happen,” Sgt Huntington said. “We have to use the data available on family violence to engage men and change their attitudes towards women.” Let’s start with 1, a forum targeted at men, was open to the Wodonga community and included several key note speakers. Wodonga Councillor Mark Byatt spoke to the audience about being the first White Rib-

The crowd was moved by Anj Barker’s story of how she has recovered after being brutally attacked by her boyfriend in Benalla more than 10 years ago. bon Ambassador in Wodonga, and Inspector Tony Davis discussed the “human element” of family violence. But the most moving presentation belonged to Anj Barker, a former Young Australian of the Year in 2011, who was brutally assaulted at the age of 16 by her ex-boyfriend and left with a severe brain injury. Anj tells her story in order to raise awareness of the indicators of destructive relationships and how violence can escalate within these. “We were all very happy with the community response to the event, with a predominantly male audience, and we hope they got something out of it,” Sgt Huntington said.

“We’ll pose that question to them.” The Albury White Ribbon forum also involved a short film which had children asking questions on family violence related issues. Sgt Huntington said this drove home the effect violence could have on children, who were often present when it took place but easily forgotten. “One in four children witness violence against their mother in homes, nationwide,” Sgt Huntington said. “The idea is to highlight the need for respectful relationships. We need to make men aware of what’s acceptable and we need fathers to lead the way.”

Police officers Sen-Sgt Shane Martin, Insp Tony Davis and Sgt John Huntington, with Anj Barker, her parents Helen and Ian, and Cr Mark Byatt.

Sunsmart schools SCHOOL children in Victoria have the best sun protection in Australia, with a recent survey revealing the state’s schools have a high standard of sun protection in comparison to other states. “Some 90 per cent of Victorian primary schools now participate in the SunSmart program, which is higher than any of the other states,” SunSmart manager Jen Makin said. “The majority of primary schools surveyed (89 per cent) reported having a written sun protection policy and 85 per cent said that sun protection was incorporated into the curriculum at all year levels. “We are delighted with the incredible progress that has been made here in Victoria since the SunSmart schools program first began over 18 years ago, given that schools play such an integral role in the reduction of future skin cancer rates. “However, there is still room for improvement with Victorian schools less likely than other states to report having enough shade for both active and passive activities. This is worrying given that children attend schools during times of peak ultraviolet radiation (UV) levels. “We know that UV exposure during childhood is a significant determinant of lifetime risk of skin cancer but good quality shade (natural or made-made) offers up to 75 per cent protection from UV, making it an effective sun protection strategy.” Encouragingly, schools are aware of the importance of shade, with approximately three in four Victorian schools indicating they had increased their level of shade in the last three years, and approxi-

mately half reporting an intention to increase shade in the following three years. “We are pleased to see this commitment to increasing shade at school,” Ms Makin said. “Particularly as we know from Victorian research, that students will use - not avoid - shade if it is made available at their schools. “In fact, we know that potentially up to one third of students could be better protected from UV exposure over spring and summer months by a school installing shade.” SunSmart recommends that schools kick-start the new year by conducting a shade audit to assess the quantity and quality of shade within their own school environment. “Overall, findings suggest that Victorian schools have a high standard of both sun protection policy and practice,” Ms Makin said. “Victoria is a world leader in sun protection, largely due to the long-term commitment to the SunSmart program by Cancer Council Victoria and VicHealth. “But there is still work to do, particularly when it comes to creating a supportive environment. This includes creating effective shade but also the use of student assemblies and whole school activities to encourage sun protection.” Other facts and statistics: - A higher proportion of Victorian schools are registered SunSmart members compared to other states (82 per cent compared with 43 per cent in other states among schools that participated in the survey). - The majority of primary schools had a written sun protection policy (89 per cent), and of

Research has found Victorian schools have the best sun protection in the country. these schools, the majority continually enforced their policy (87 per cent) and found it easy to maintain (85 per cent). - The majority of Victorian primary schools recommended SunSmart hats only (broad-brimmed, legionnaire and/or bucket hats only) (99 per cent), required teachers to wear hats (87 per cent) and reported that more than 75 per cent of students would be wearing a hat when outdoors on a typical school day in March (99 per cent). - An increase in the proportion of Victorian primary schools including both shirts with collars (79 per cent in 2005, 87 per cent in 2011) and shirts with elbow length sleeves (25 per cent 2005, 41 per cent 2011) in their uniform compared with earlier years.

Victorian primary schools were also more likely to include sun protection education in all year levels (85 per cent, 78 per cent in other states), to provide parents with sun protection information (72 per cent, 62 per cent), to use the SunSmart UV Alert (15 per cent, 8 per cent) and include shirts with elbow length sleeves (41 per cent, 29 per cent) in their uniform than primary schools in other states. The SunSmart shade audit can be used to assist schools, childcare centres, preschools, community groups and local government to ensure adequate, quality shade is provided in their parks, playgrounds and public open spaces. ELDERLY Albury residents will no longer be living in the dark when it comes to queries about retirement village legislation. The Retirement Villages Residents Association (RVRA) held a regional rally in Albury last Thursday and Friday, at Murray Gardens Retirement Estate, to keep residents informed on key issues including village budgets, capital works and resident committees. Jan Pritchett, president of the RVRA, said Albury-based committee member Vass Mortimer had encouraged the association to hold a rally in the border town. “The idea was to get out to regions and meet people. We’re not spring chickens anymore but we spend our time supporting residents in villages and helping them as much as we can,” she said. “We assist them with legislation relevant to retirement villages; the legislation can be very complex.” The very first RVRA Albury rally was held over two days and included addresses from Barwon MP Kevin Humphries, Albury MP Greg Aplin and Hon Solicitor Peter Hill. The event also included business sessions, interactive workshops and formal meals, showcasing local produce for eager visitors. “It’s not quite as strong a response as we thought but with our age groups it not always easy to get out,” Ms Pritchett said, speaking at the event. “But we have managed to attract a wide range of village residents from around the country, like Canberra and Wagga.” In July this year the RVRA was given a grant by the New South Wales government in order to help support its 6000-strong membership base. Malcolm McKenzie, RVRA Secretary, said the Murray Gardens rally had been in the pipeline for a couple of months. “We were given a grant by NSW Fair Trading to support advocacy services in the state,” he said. “The grant helps us get out into the country to people that have questions they want to ask.”

Creating straight, strong spines for a healthy, happy life! THERE are many factors contributing to health. It’s about what we do with your bodies and minds – what we take out and what we put in, and it’s not always easily achieved. Enter Chiropractic Wellbeing. Chiropractic Wellbeing has moved from what was once a smaller but successful business to a modern, spacious, fully integrated centre offering hand chosen professionals to deliver individual needs – a vision owner Dr Scott Walters has harboured for many years. “I started at chiropractic like a lot of heath professionals where I came out of a very sporting background and just wanted to help people with sports injuries,” he said. “What I realised was we were getting the same people with the same sorts of injuries in the same way. Particularly with elite sportsmen – their health was secondary to their performance. “When you look at some of the statistics and research, we’re getting unhealthier by the year. Things that are lifestyle preventable diseases are getting worse and worse, not better and better.

“I just wanted to make sure there was somewhere around this area where people could start to make some of those choices that could impact on their health, not just today and tomorrow and not just to feel a little bit better, but actually function better for life.” With Dr Walters’ shiny new premises that’s positively bursting at the seams with options, this mission is all but accomplished. “We know that if people eat well, move well, have happy relaxed thoughts and a good spinal nerve supply they get healthier,” he said. “We wanted a place where we could integrate all of that into care so people can start to make some genuine lifestyle choices that will make a long term difference. “So, we’ve got an exercise room where they can get some education on how to do their own rehab at home – we watch them and see what’s going on after the adjustment, which will give them a better response. “With a dedicated lecture room we’re going to have some bigger programs on how to eat, how to move and

how to think on a regular basis. There’s a spinal mobility and strength class every week, meditation classes every week, and we’re looking at getting yoga, pilates and personal training in. “There’s a once a month food night so we can have a look at how to integrate some really good food into your diet and make it easy, tasty and enjoyable. “There’s specic workshops each month on particular health topics – our rst one’s going to be about how to stay relaxed and happy over Christmas because it’s a pretty stressful time for people. “We also have some other professionals coming in – councillors, life coaches, massage therapists that allow us to

have a better picture of what you actually need.” And if that’s not enough, martial arts classes will be held twice a week. Aside from helping the Border to gain holistic health, Chiropractic Wellbeing are also giving back to the community, specically to Carevan. “Anyone that does come in over the next few months, the initial visit is $35 and all of that will be donated to the Carevan,” Dr Walters said. “To move into Wodonga they need a new van and they need some funds. I don’t have a lot of time but I can do this, and we will give 100 per cent. “If it works out well for both of us I’m going to continue that indenitely.”

GRAND REOPENING Chiropractic Wellbeing is proud to announce the opening of its new practice. We are very excited about continuing to help people improve the function of their spine and nerve system, as well as helping people improve their whole health with nutrition, mobility, exercise and relaxation programs. So come down and try our workshops on health and lifestyle, or get a full spine, nerve system or health exam for the cost of a donation to the Carevan. We would also like to welcome Katrina Crawford from Crawford Massage Therapies and Zoë Wundenberg from Impressability.

used to implement selection and retention practices. While these need to be somewhat flexible to cater to the needs of the generational gaps which make up an organisation’s workforce, they do provide some structure and guidance for employers. Those responsible for selection need to be appropriately trained in using valid selection tools and objectively assessing candidates. If a quality selection process is not feasible inhouse, outsource to a professional agency. Assess job-specific traits using a variety of objective selection tools to gain a broad perspective of the candidate (skills tests, psychometrics, behavioural interviews and reference checks). Ensure candidate expectations are aligned with organisational reality. Ensure you have capable and inspiring management and leadership in your business. Offer opportunities for development, professional growth and training. Make sure that realistic expectations are established during the recruitment phase and any change in expectation is discussed with the employees. THE term ‘candidate tight market’ is used frequently by employers and recruiters alike. With a strong demand in the Albury region for specialist boilermakers, forklift drivers, truck drivers and vehicle mechanics, this is an issue that is now hitting very close to home. What does an employer have to do to attract, select and retain top performers in this market? Unfortunately, the ‘one size fits all’ approach doesn’t work. What attracts a Gen Y employee will not necessarily appeal to an experienced Baby Boomer. In addition, the skills shortage means that there simply may not be any applicants with the required level of training for an advertised position. There are some general guidelines that can be

Charollais is a meaty meal HIGH saleable meat yield and carcass length of Charollais cross lambs impressed both domestic processors and prime lamb producers at Tallangatta Abattoir last month. The lambs, aged 17 to 23 weeks, were out of maiden border Leicestermerino cross ewes by a Charollais ram, and dressed at an average of 53.2-54.2 per cent. The lambs were consigned by Doug, Irene and Scott Mitchell of Culcairn to build chiller feedback data on the French terminal sheep breed. With just a handful of Charollais studs Australia wide, the breed is still relatively new to the Riverina but producer demand has been strong with

ram breeders selling out this season. Doug Mitchell of Rene Charollais Stud said prime lamb producers were using the easy-lambing breed over maiden merino and first-cross ewes to produce quick maturing, high yielding lambs for the supermarket trade. He said producers were hungry for chiller feedback on carcass weight, dressing percentage, eye muscle area and fat depth in the crossbred progeny. Doug and Scott drafted off 32 lambs from their maiden first-cross ewes, with a group of nine weighing an average of 42.3 kilograms liveweight. Grazed on ryegrass, clover and oats, they went on to average 22.5kg carcass weight and 53.2 per cent yield.

A second group of 23 averaged 45.5kg liveweight, 24.6 per cent carcass weight and yielded 54.2 per cent. The lambs lost 2.5kg liveweight during curfew. They returned $105/head or 400c/ kg including a skin value of $13.50. Prime lamb producers from throughout southern NSW and northern Victoria inspected the carcasses on the hooks at Tallangatta Abattoirs. Tallangatta Abattoir business services manager Reuben Smith said the Charollais-cross lambs had an impressive dressing percentage, bettering the 50 per cent achieved in top end sucker lambs. Mr Smith said the lambs would fit

in the premium end of Tallangatta’s weekly 5000 head lamb kill. Lamb finisher Tim Boyd, of Mangoplah, plans to join Charollais rams to first-cross ewe lambs at seven months of age. “I am impressed they have a small birthweight but will grow into 24kg lambs at 16 weeks of age,” Mr Boyd said. “I finish 2000-3000 trade lambs a year and if the breed attracts a premium, I would be looking to source Charollais cross lambs to finish to 22-24kg on grass or grain.” Mr Boyd was impressed by the butt shape and low subcutaneous fat of the carcasses.

“There is good muscle definition in the legs of these carcasses and not a lot of fat over the rib section,” he said. Daniel Hooper of Goorambat has put a Charollais ram over white Suffolk ewes after hearing of the breed’s lambing ease and high yielding carcasses. Mr Hooper, who runs Vortex White Suffolks with his father Robert, said clients with first-cross maiden ewes wanted easier lambing sires with clean points and good hindquarters. “The carcasses were very impressive in the back end,’’ he said. The Mitchell family have entered a pen of five Charollais-cross lambs in this month’s Rutherglen Lamb Expo.

By JASON BECK MOVIE: The Hunger Games: Catching Fire (M) STARRING: Jennifer Lawrence, Elizabeth Banks, Stanley Tucci KATNISS Everdeen is back, and setting the hearts of teenage girls aflutter. But for middle-aged men, it must be said, not so much. This Twilight for the 21st century presents a darker vision than the original, with the veterans of previous Hunger Games called back for an all-star tournament. This time, the older kids are killing older kids. But all is not well in the provinces, with the shadows hiding murmurs of rebellion. The theme of revolution against the Capitol is ever-present... it just takes a long time to get there. How long? Well, it takes about an hour and a half for the games to start. That’s some prelude, Katniss. Out in the jungle, things have a very Avatar feel, although no-one’s blue well, not physically, anyway.

Sounds of Countdown LOOKING for some entertainment and a trip down memory lane in the lead-up to Christmas? Look no further than the Albury Entertainment Centre as the Christmas Countdown show comes to town next month for the second year running. The Christmas Countdown returns to Albury on Friday 6 December with the ‘Hits and Memories of the Countdown Disco Era’, which features unforgettable music from some of the industry’s greats, including The Village People, ABBA, Bee Gees and the Jackson 5. Christmas Countdown coordinator Alec Alabakis said the show had been running since 2007 but had only reached Albury audiences as of last year. “For 12 years a business partner and I owned the Capital Centre In Wagga and we started hosting theatrical shows there, using Countdown era songs,” he said. “We decided to take the shows on the road around Australia, every year.” Guests at the Christmas Countdown will be treated to a three-course meal, with doors opening at 6.30pm and ‘show time’ kicking off at 8.45pm. “We are getting a great response to the tour. Last year’s show at Albury was so wellreceived,” Mr Alabakis said.

Judges, winners and members of Beechworth Theatre Company enjoy the awards night at Mayday Hills. From left: judge Susan Graham, judge Roxanne Bodsworth, runner-up Coral Hall, BTC secretary John Eldrid, BTC chairman David McKay, BTC committee member Vicki Connell and overall winner Richard Patterson.

Radio plays all the rage AN awards night dinner was held to celebrate the winners of the Beechworth Theatre Company’s recent Radio Play Competition, and to formally award the two winners their prizes, on Wednesday 13 November at George’s Restaurant, Mayday Hills, Beechworth. Overall winner Richard Patterson, from Beechworth, and runner-up

Coral Hall from Wangaratta were there to collect their prizes, and two of the three judges were present to speak about the competition and to talk about the two winning plays. Both plays will be rehearsed by Beechworth Theatre Company members and broadcast on Indigo FM community radio, which operates in Yackandandah, Beechworth and Rutherglen.

A short series of workshops on radio play presentation and skills will be run in conjunction led by Joseph Thomsen of ABC Goulburn Murray 106.5 who is certainly no stranger to radio production and presentation. The plays will be broadcast in Autumn of 2014. People interested in any aspect of the radio plays, from acting in them to

sound effects and also the radio play workshops, are asked to contact the theatre company by email beechworththeatrecompany@gmail.com The workshops and auditions will be advertised in the local media. Theatre company president David Mackay said that this had been a great new innovation by the theatre company. “We are very excited to be col-

laborating with Indigo FM - our local community radio station, and to give the theatre company a new shot in the arm. We certainly intend to look at running a radio play writing competition on an annual basis as we have received a great deal of interest in our inaugural one. We are all looking forward to hearing them produced on the radio and as staged productions.”

Festive Food Method: Preheat oven to 180°C. Place shelf in the lowest position. Combine the breadcrumbs, craisins, pistachio, parsley and lemon rind in a bowl. Add the eggs and stir until combined. Remove excess fat and giblets from the turkey. Wipe inside and out with paper towel. Fill cavity with the breadcrumb mixture. Tie legs together with unwaxed white kitchen string. Tuck wings under. Add a small amount of water to a large roasting pan. Place turkey, breastside up, on a wire rack in pan.

Prosciutto wrapped turkey Ingredients: 20g (2 cup) fresh breadcrumbs 1 x 170g pkt craisins (dried cranberries) 1 x 80g pkt pistachio kernels, coarsely chopped 1/2 cup chopped fresh continental parsley 1 tbs nely grated lemon rind 2 eggs 6kg (size 60) fresh or thawed turkey, neck removed 12 (about 120g) thick slices prosciutto 12 sprigs fresh thyme White wine gravy 50g (1/3 cup) plain our 500ml (2 cups) chicken stock 250ml (1 cup) white wine

Arrange the prosciutto, overlapping slightly, over the turkey. Tuck the thyme sprigs underneath the prosciutto. Cover the turkey with nonstick baking paper, then cover the pan with foil. Roast in oven for 2 1/2 hours. Remove paper and foil. Increase oven temperature to 200°C. Roast for 35-45 minutes or until prosciutto is crisp and the juices run clear when the turkey’s thigh is pierced with a skewer. Transfer turkey to a plate and cover with foil. Set aside for 15 minutes to rest. Meanwhile, to make the white wine gravy, discard the liquid from the roasting pan. Place pan over medium-high heat. Add the our and cook, stirring, for 1 minute or until the mixture bubbles. Add the stock and wine and cook, scraping the pan with a at-edged wooden spoon to dislodge any bits that have cooked onto the base, for 8-10 minutes or until the gravy thickens. Transfer the turkey to a serving platter and serve with white wine gravy.

Reindeer cupcakes

Summer Berry Pudding

Ingredients: 1 pkt Betty Crocker Mud cake mix 3 eggs 1/4 cup vegetable oil 3/4 cup water 1 tub of Betty Crocker chocolate icing 1pkt Jaffas Smarties or M&M’s candy coated choc chips or cachous 1 pkt pretzels

Ingredients: ½ loaf sliced white bread, crusts removed 750g mixed fruit, choosing from strawberries, raspberries, blueberries or other berry fruits, redcurrants, blackcurrants, stoned cherries, fresh or frozen ⅔ cup caster sugar Method: Reserve 3 slices of the bread, cut the remaining slices into wedges or oblongs and use to line the base and sides of a 4-cup pudding basin, soufé dish or charlotte mould. Cook the fruit and sugar in a heavy-based saucepan, covered, over a low heat for 5 minutes, stirring occasionally. This encourages the fruit juices to ow. Allow to cool. Spoon half the fruit into the pudding basin and lay one of the reserved slices of bread on top. This gives the dessert the body needed to turn out later. Spoon in the remaining fruit, top with the 2 remaining reserved slices of bread, then spoon the remaining fruit juice over, reserving 1–2 tablespoons for coating any patches once the pudding is turned out. Place a small plate on top of the pudding, making sure it sits inside the basin. Place weights or heavy tins on top (about 500 g is needed) to compress and place the basin on a large plate to catch juices. Refrigerate overnight. Turn out onto a plate and serve with whipped cream.

Motoring Gangsta at the Core Albury Wodonga

THE reasoning behind the Chrysler 300 SRT Core is as simple as the car itself. The thinking behind it goes back to the core of buyer preferences - value for money in a high powered machine. A neat $10,000 has been stripped from the price of the standard 300 SRT, dropping it to an affordable $56,000. As it has kept the core values of the car exactly as before, the new model is tagged Chrysler 300 SRT Core. That $56,000 recommended price puts the big Chrysler right down with the hot Ford Falcons and Holden Commodores. Tellingly the SRT Core is under the price of the lowest-cost HSV models. This special 300 model has been developed specifically for the Australian market as the guys in the States are well aware of our enthusiasm downunder. Indeed, the Americans are now to be offered the Aussie-specced car on their home market. Price trimming of the Chrysler SRT Core has been achieved by giving it cloth trim instead of leather; there’s no heating of the rear seats, though the fronts still get warmed (but not cooled); the drink holders are no longer connected to the air conditioning system so remain at the ambient temperature; and there’s no floor mat or cargo net in the boot. A basic audio system is used, with the number of speakers reduced from 19 to six - meaning you will have to spend more time listening to the exhaust note of the big Chrysler V8. Sounds good to us! Standard, not adaptive, cruise control is used; you miss out on the adaptive suspension damping system; there isn’t a blind spot monitor (though surely anyone who drives an SRT knows how to set door mirrors?). The rear cross-path detection system is a handy feature but sadly it’s

Model range 300 Limited 3.6-litre petrol four-door sedan: $43,000 (automatic); 300 Limited CRD 3.0-litre diesel fourdoor sedan: $48,000 (automatic); 300C 3.6-litre petrol four-door sedan: $46,500 (automatic); 300C CRD 3.0-litre diesel four-door sedan: $51,500 (automatic); 300S 3.6-litre petrol four-door sedan: $47,500 (automatic); 300C Luxury 3.6-litre petrol four-door sedan: $51,000 (automatic); 300C Luxury CRD 3.0-litre diesel four-door sedan: $56,000 (automatic); 300 SRT8 Core 6.4-litre four-door sedan: $56,000 (automatic); 300 SRT8 6.4-litre four-door sedan: $66,000 (automatic).

been stripped out. Styling, ah, styling! That’s what the Chrysler 300C is all about. Though the importer doesn’t like it to be called the ‘Gangsta’ car I’ve got some bad news - everyone who chatted to us about the new Core product used exactly that term! The Chrysler 300 SRT8 Core has 20-inch alloy wheels in a twin-fivespoke design. There are ‘Hemi 6.4L’ badges in red and chrome on the front guards and a red ‘Core’ badge on the bootlid. Core is offered in eight paint colours: Gloss Black, Ivory tri-coat pearl, Billet Silver metallic, Jazz Blue pearl, Granite crystal metallic pearl, Deep Cherry Red crystal pearl, Phantom Black tri-coat pearl, and Bright White. The Core’s cabin has black seat trim with white stitching and ‘SRT’ is embroidered into material. There are piano black bezels and matte carbon accents on the instrument panel and centre console. All the important powertrain parts remain as in the standard Chrysler SRT8. The 6.4-litre Hemi V8 engine produces 465 horsepower (347 kW in Australian terms) and a great 631 Nm

Chrysler 300 Core is a remarkably affordable American high-performance sedan. of torque. The active exhaust system remains as does the excellent launch control system that really gets the big beast moving with just the right amount of wheelspin. It’s only to be used in the correct locations, of course. The really interesting thing is that the 300C SRT8 Core is lighter than its full-house big brother so presumably has better performance in a straight line. You would need timing gear to test this and it’s likely to only show hundreds of a second improvements. Still, hundredths are important in high-performance cars... This American muscle machine sounds great, though a little more volume would be appreciated at low to moderate throttle openings. It’s a bit sad when AMG Mercs and Bentley

Continental Speeds provide bigger sounds than a Chrysler Hemi. A five-speed automatic transmission is used instead of the more modern eight-speed unit now on the rest of the 300 range. But if you’ve got 631 Newton metres of torque at your disposal you really don’t need that much more assistance from a bunch of extra ratios. Awesome stopping power is provided by the big Brembo disc brakes. Throttle response is all-but instantaneous and the automatic reacts quickly to the driver’s demands. Trundling up and down the M1 motorway between the Gold Coast and Brisbane at 115 km/h we saw fuel consumption average a hard-to-believe eight litres per 100 kilometres. That’s partly due to the COD (Cylinder On Demand) feature that cuts

four cylinders under light load. That’s right, our Chrysler 300 SRT Core was a four-cylinder car! Consumption leapt in urban driving, being in the mid teens most of the time. In the country and having a go it was getting towards the 20s. Road grip is high but this is a big heavy car so you don’t get the same cornering enjoyment as you do from the best of the small hot hatches. Ride comfort isn’t too bad, but rough roads certainly let you know the low-profile tyres aren’t able to cushion the car all that well. An excellent concept in affordable performance motoring, the big Chrysler 300 SRT8 Core is a permanent addition to the Chrysler 300 range. Incidentally, that range has just been expanded to include yet another model, the 300S.

Seats clothed in chic sheepskin By LACHLAN MOORHEAD WENDI Strauss is somewhat of an expert when it comes to sheepskin. Some 13 years of working with the material at Big Chiefs Trading Post in Wodonga will have that effect. Wendi is the store owner at Big Chiefs, which specialises in custom-made seat covers, as well as Australian-made footwear, souvenirs and statues. Sheepskin is the fabric of choice at Big Chiefs, no matter the season,

and seat covers are the hot seller. “This time of the year, we’re very busy with seat covers. With the heat, people want to have something on their seats,” Wendi said. “Sheepskin is the perfect fabric because it’s cool in summer and warm in winter.” The seat covers are made from three-quarter inch clip sheepskin and are made to fit a variety of vehicles depending on the customer’s request, including cars, trucks, trac-

tors, forklifts, motorbikes, pushbikes, planes, golf buggies and more. Wendi said the inclusion of airbags in cars and their changing designs over the last decade meant each seat cover had to be specifically designed according to the car’s, and its driver’s, specifications. “Basically, we make to order because of airbags coming in and changing the design of car seats,” Wendi said.

Wendi Strauss, store manager at Big Chiefs Trading Post, offers practical advice on all types of items, especially her custom-made seat covers.

Safe and enjoyable motorbike riding should be encouraged throughout the Albury region.

Cycle of fun, skills ONE of the things I get a big amount of pleasure out of my job is seeing the joy and excitement in children’s faces when they come into the shop with their parents looking at fun bikes. As Christmas closes in on us at what seems like an increasingly rapid rate, it’s a great time to look at the benefits your child gets from learning to ride a motorcycle. Children’s fun bikes come in a variety of sizes and power ratings to suit the physical size, riding ability and type of use your child and yourself want from the bike. The modern Fun Bike is well engineered, low maintenance, quiet and most have an electric start for convenience. Above all else, they are very safe

when used correctly and when the children are properly supervised and wearing the appropriate safety clothing. Bikes for beginners at entry level even come with a throttle restrictor screw, so you can limit how fast the bike goes while your child is learning to ride. Riding motorcycles is a fun activity that can involve the whole family, in a safe and enjoyable environment. I also strongly believe in the benefits and skills children develop when learning to ride a motorcycle, skills that they will carry through to their teenage years when they are getting their licences. These include developing motor skills, the ability to read changes in road surfaces and adjust a vehicle’s speed to

suit those conditions. They also develop the ability to judge speed and an awareness of their surroundings, while understanding the consequences that come from too much speed in the wrong conditions. I also can’t stress enough the importance of properly fitted safety gear, especially the helmet. Teaching children right from the start the importance and benefits of always wearing their safety gear gets them into a lifetime of good habits. These are but a few of the benefits a child gets from learning to ride, not to mention how much fun it is. I hope everyone has an enjoyable and safe lead-up to Christmas.

WE ARE coming up to the summer season and the days are getting longer, a perfect opportunity to get out and hit the road for some tourist trips and explore the local region. It is also a perfect time for motorcycle riders to be out enjoying the twisty roads that we have in our region, so remember to always look twice before you pull out from a kerb, a driveway or a side street. And please remember the other twowheel users - the bicycle riders. They are a little harder to see than their bigger counterparts, so have a good look before you open driver side doors, particularly if parked on the street. It is also a great time to get the learners out to gain that all-important experience they need to be safe and responsible drivers.

The more time learners get behind the wheel the better. When I hear of people falsifying the learner’s logbook I cannot

help but wonder who they are trying to cheat - the RMS/VicRoads, the learner or the rest of the drivers on the road. Let’s face it the more time we get on the road, in all conditions, better drivers we are. It’s no different for learners, in fact it’s probably more important for them. It is also the responsibility of the licenced supervising driver to pay attention to what the learner is doing while they are driving. Remember to not be looking at your phone, sleeping or reading the paper and stay sober. This summer could be fun time for all, with everybody sharing the road safely. Thanks and remember, keep it tyre side down.

Ruth Little and President Chris Little have made the Lavington Panthers Cycling Club a big part of their lives.

Panthers’ eye on talent EXPERIENCE is well-respected at Lavington Panthers Cycling Club but it doesn’t mean the group ignores newcomers with fresh talent. With competitions continuing into the end of the year, the Panthers completed an impressive week of club racing earlier this month which saw not only the regular standouts but also some new riders come to the fore. President Chris Little said club racing was extremely common among competitive cycling clubs in Australia. “We do real races at the club, not just practice. The way it works in Australia is that we start with club racing, then state competitions and then nationals, Mr Little said. “Club racing is the heart of racing in Australia. The riders

are not just learning but competing. The Lavington Panthers Cycling Club was officially created in 1990 but existed in several other forms since 1970. The town is also the birthplace of the Lavington Gift, one of the biggest track carnivals in New South Wales and Victoria, attracting numerous entries from all over the country. Mr Little said there were several new riders at the club that had really impressed this month. “The notable thing is the new racers this year, the novices, he said. “A lot of them are racing for the first time and they have all these new skills they need to learn. They have been going really well and if the experienced riders get up, the novices still

take in a lot from that. Mr Little was brought into the world of cycling through his children, who quickly became immersed in it and the Lavington Panthers club. “I don’t race myself, my kids got into it and accepted it from the word go, Mr Little said. “They won races and were also able see how good other racers were, and how good they could be themselves. Mr Little is now a vital cog in the inner workings of the club, ensuring that his children and all the other riders at the Lavington Panthers “have fun, stay competitive and learn to compete in the club environment. For more information on the Lavington Panthers contact Chris on 0407 410 894.

From left, Charlie Thompson, Ray Price, Peter Hamilton, Des Royal and Glen O’Connell enjoyed two days of fantastic weather and friendly golf.

Tee-off for 250 By LACHLAN MOORHEAD TEE-OFF was at midday last Monday for more than 250 eager veteran golfers in Thurgoona. The annual Murray Grey Veteran Golfers (MGVG) Seniors Classic went off without a hitch last week at the Thurgoona Country Club Resort, with 275 seniors competing in the two-day classic. Murray Grey Vets vice-president Peter Hamilton said he couldn’t have hoped for better weather, with the sun shining on both Monday and Tuesday. “The competition is going from strength to strength,” he said. “Everyone wants to come back and we’ve had lots of people already asking about next year!” Players from a mix of 12 different clubs competed in the event, sponsored by 50 different organisations this year, including Alatalo Brothers, Horizons Narroma, Ibis Styles Albury and Lake Hume Resort, as well as many more.

The top prize for the 2013 seniors classic was seven nights’ accommodation at Horizons Golf Resort while other prizes included two packages at Lake Hume for two nights worth $400, membership to the Accor Group worth $300, golf bags, Peards Garden World vouchers, landscaping worth $400 and raffles on the day. There were 46 event winners for the day and 16 nearest the pin winners, with Trisha Stout taking out the prize for the overall winner for 36 holes, in a mixed competition. Mr Hamilton said the sponsors’ involvement was first rate and unparalleled anywhere else in the district. He also applauded the efforts of the veteran golfers and their impact on the community, with the money raised from last week’s competition going towards sponsoring young golfers in the area, as well as running the MGVG for the next year. “The group is for seniors but we do a lot of work for junior golf around here too,” he said.
