Keeping Christmas Bank staff, family caroling for 20 years

With some strong male vocalists and lots of others to help, the group doesn’t get together to practice.

They follow a book for the traditional songs and some fun ones too. They’ll even take requests from the crowd. One song is a favorite of the bank crew, and one many caroling groups probably don’t perform: “Silent Night” with a verse in German.

A favorite for Allan Ulbricht, senior business lender and senior vice president, is “Jingle Bell Rock.”

“Some songs sound wonderful in harmony and some, well, we laugh a lot about afterwards when we start on the wrong key or we don’t know the tune as well as we thought. Our audience is gracious and they simply appreciate that we spend time with them,” Ulbricht said.

For Ulbricht, Borgerding and Jennissen, it’s all about spreading some Christmas joy to those who don’t always have visitors and family around.

“Each time we carol, we bell ring, we go see someone that is lonely or down in spirit, we share the love that Jesus first gave us,” Ulbricht said. “We get to share, in a soft way, His story and we get to have great fellowship with those

around us.”

The caroling crew usually gets together at someone’s house or a local restaurant to enjoy time together after their work is done.

“This is a great tradition, and everyone that is a part of it looks forward to doing it again the next year,” Jennissen said.

“Seeing the faces of the residents makes it all worth it,” Borgerding added.

Ulbricht encourages everyone to get out, throw on a Santa hat, and spread some Christmas cheer.

“If you need some songbooks, let me know,” he said. “You don’t have to have a great voice to Christmas carol!”

The efforts don’t end there; in memory of Grandma Vern Finken, the girls create candies from melted chocolates.

Some of the delectables cool outside on the deck as the girls fend off the outdoor Christmas decorators and the dogs, protecting their makings. Each year they inevitably lose a few cookies during the process.

All the participants bring containers to carry their goodies home and an official cookie sorter makes sure everyone gets the right amount.

At the end of the day, Marge’s house is filled with Christmas décor, yummy calories and lots of laughter and stories.

I never get sick of eating cookies. And of course, the reindeer have to eat the hay and carrots.

What gifts are most children asking for this season?

A lot of electronics, like iPads and all those games. After Frozen II, a lot of little girls will want Elsa, and they still like Barbies after all these years. Little boys like tractors and trucks; that hasn’t really changed. It is amazing how many young children would like a puppy or a horse. When children are poor, I try to be extra kind to them, even more than the ones who have everything. I think a poor child is more happy with anything they get, where some kids who have more, I can’t please them no matter how hard I try.

What is the most unusual thing a child has asked you for?

Once a little boy told me their house burned down, and now they didn’t even have a Christmas tree. He wanted a Christmas tree. Other times children tell me they want a little brother or sister, and I tell them they really have to put their order in earlier than this, and I leave it at that.

What about adults wanting things from Santa?

Sometimes they will want a new pickup and I say “I can put that on the back end of the sleigh but if you don’t have one on Christmas morning, it must have fallen off because when Rudolph takes off with a jerk it flips off and someone else got your pickup.”

What is the best thing about being Santa Claus?

I know when I am done, the kids are happy, the parents are happy and that’s all that counts. One of my favorites was a family that always brought in two elderly ladies that had no family. One, who was 92, got to sit on Santa’s lap, and she said, “I never in my lifetime thought I would have a chance to sit on Santa’s lap!”

When you can do things like that it’s just so special. You can just see their faces, how lit up they are. Vegan appetizer that appeals to the masses Creamy Cashew Spread Makes about 1⁄2 cup • • • • • •

1 cup raw cashews 2 tablespoons lemon juice 1 tablespoon tahini 1⁄2 teaspoon salt 1⁄2 teaspoon black pepper 2 teaspoons minced fresh herbs, such as basil, parsley or oregano (optional) • Assorted bread toasts and/or crackers

Host a delicious holiday brunch Farfalle with Crabmeat, Asparagus, Scrambled Eggs, Garlic, and Herbs Makes 4 to 6 servings • 1 pound farfalle • 1⁄2 pound asparagus, trimmed and sliced diagonally, 1⁄4-inch thick • 10 extra-large eggs • 4 tablespoons unsalted butter • 1 garlic clove, minced • 1⁄4 cup freshly grated Parmesan cheese, plus more for serving • 2 tablespoons heavy cream • 1⁄2 pound cooked lump crabmeat, picked over to remove any bits of shell or cartilage • 1⁄4 cup finely chopped fresh chives • 2 tablespoons finely chopped fresh Italian parsley • Freshly ground black pepper

Rinse cashews and place in a medium bowl. Cover with water by at least 2 inches.

Soak 4 hours or overnight. Drain cashews, reserving soaking water.

Place cashews, 2 tablespoons reserved water, lemon juice, tahini, salt, and pepper in food processor or blender; process for several minutes or until smooth. Add additional water, 1 tablespoon at a time, until desired consistency is reached.

Cover and refrigerate until ready to serve. Stir in herbs, if desired, just before serving.

Serve with assorted bread toasts and/or crackers.

Tip: Use this dip as a spread for sandwiches or as a pasta topping. Thin it with additional liquid as needed. You can also use it in place of sour cream as a topping for tacos and chili.

Bring a large pot of water to a boil. Add the farfalle and cook until al dente, following the manufacturer’s suggested cooking time. About 2 minutes before the pasta is done, add the asparagus.

Meanwhile, in a mixing bowl, beat the eggs with a fork or whisk until slightly frothy.

Set aside.

When the pasta and asparagus are done, drain and set aside. Immediately melt the butter in a large skillet over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Add the pasta and asparagus and toss briefly to coat them with the butter mixture. Pour in the eggs, add 1⁄4 cup Parmesan and the cream, and stir and toss the mixture until the eggs just have begun to form moist curds, about 2 minutes. Add the crabmeat, chives and parsley and continue cooking and tossing until the eggs have formed more solid curds that cling to the farfalle, 1 to 2 minutes more.

Serve immediately, passing freshly grated Parmesan and black pepper for guests to add to taste.
