A how-to for charcuterie Charcuterie platters have been on trend for holiday parties and gatherings for a few years now and even though I consider myself quite able in the kitchen, I have always looked at the glorified meat and cheese trays as daunting. But, after a little research and my first stab at creating one, I’m here to tell you that charcuterie is much easier done than said. Charcuterie, pronounced shar-KOOta-REE, is a French word that dates back to the 15th century and translates to products of a fancy pork butcher. Although many of these meat and cheese trays feature pork products, Merriam-Webster now defines the word as a delicatessen specializing in dressed meats and meat dishes. Google

simply translates it to delicatessen – which may be better suited to its use today as these colorful and delicious food displays encompass so much more. I started my endeavor with a shopping trip to a local grocer. I was thrilled stores are in tune with this trend and literally stock a lot of what is needed together on their shelves. You can even buy charcuterie bundles of meat and cheeses, although I didn’t choose that option. Once home, I pulled out my wooden serving trays that I had used for a dessert bar this summer. I have three sizes, and I choose the largest – a 14-by-21-inch tray – for
my project. If you are without a wooden tray and do not want to purchase one, people can use a rimmed cookie sheet, charger plate or any other type of serving tray. Paddle boards are also popular and can be found in many stores as can tiny serving utensils. Then, a minor setback. I suddenly realized that nowhere in my cabinets are the tiny ramekins or dishes that culinary professionals have in their kitchens. I put my thinking cap on and remembered my great-aunt Margaret.

I added the small dishes of olives and artichokes, then placed the fruits in existing spaces. Had I purchased spreads or honey, I would have added these at the same time. Once the fruits were placed, I made room for the sweets, crackers and breads. I filled in the smallest holes with nuts and garnished the tray with a few white pretzel stars and sprigs of rose-

A charcuterie board features meats, cheeses, fruits, nuts, candies and crackers. Dried kiwi, sprigs of rosemary and white chocoloate-covered pretzel stars add a holiday touch.
Shopping list After shopping for my masterpiece, I realized that a charcuterie board contains all the elements of the nation’s long-forgotten food pyramid. Breads and grains, fruits, vegetables, cheeses, meat and nuts, and oils and sweets are all contained in this finger-food formation. But of note, there’s no need to get carried away in large purchases of each item you decide to add to your platter – a little goes a long way. My board was 14-by21 inches, and it didn’t take much to fill it. I purchased five cheeses, 12 ounces of meats, some fresh and dried fruits, marinated olives and artichoke, some sweet treats, crackers, and fresh rosemary for garnish. As I was building, I added nuts and pita chips from the pantry. So, don’t forget to think about what you have on hand. And most importantly, put items you enjoy on your platter. If you’re not a fan of goat cheese, there is no requirement to use it.
Meats
Coinciding with the word’s origin, meats – specifically pork products – are often found on charcuterie boards. These may include but are not limited to Genoa salami, soppressata, coppa, prosciutto, pepperoni, mortadella and Spanish chorizo. I used two types and sizes of salami (one peppered) prosciutto and capocolla (another name for coppa). In hind sight, I may have opted for a smaller diameter meat or a thicker cut of meat to add textual variety.
Cheese
Cheese is the centerpiece of a charcuterie board, so put the most thought into which flavors and textures you would like to display. Boards should contain a mixture of soft cheeses (brie, goat, cream, bleu, gorgonzola), semi-soft or semi-hard cheeses (fontina, Havarti, Monterey jack, muenster, pepper jack) and firm cheeses (aged cheddar or gouda, asiago, Parmigiano Reggiano). Having a mixture of buttery, nutty and tangy cheese flavors may be wise as well.
Fruits, vegetables
When you think of adding fruits and vegetables to your creation, think color. Most of your cheeses and meats will be similar colors, so fruits and vegetables can add contrast and add visual appeal. Sliced apples or pears (placed on the platter with the flesh side out), red and green grapes, and berries are popular charcuterie board pairings. Dried fruits such as figs, apricots or dates – or in my case kiwi – can be added as well. I was thrilled that the green of the dried kiwi turned up the “merry and bright” on my board. And, I had never asked the question, but turns out olives are a stone fruit (not a vegetable). With that in mind, the only vegetable I incorporated into my tray was artichoke. If you’re looking to add more veggies, sweet peppers, cherry tomatoes, small pickles, capers and cucumbers are certainly all options.
Spreads
Unfortunately for me, my cabinets were not hiding any cute and tiny containers to include things such as honey on my board, but now I have something to add to my Christmas list. A small honey pot or fig spread can add a touch of sweet and sticky to flavor combinations of breads and cheeses. In the future, I might also opt for a jalapeno jam or some hummus.
Crackers, breads
Carbohydrates take a back seat to everything else contained in a charcuterie board, but toasted baguette slices (or crostini); multigrain, water or rice crackers; bagel and pita chips, and pretzel crisps can all add the crunch to your dish. If you run out of room on your board, don’t be afraid to serve these from a separate bowl or platter.
Sweets
Dark chocolate can be a surprising complement to some cheeses. I opted to include a few wrapped truffles as well as a filo dessert that was topped with honey, seeds and cranberries. Chocolate can remain in the wrapper, or a large bar could be broken into bite size pieces or chunks.
Nuts, seeds
There probably is not a nut or seed that would not fit in on a platter, but my favorites are almonds, pistachios, candies pecans or walnuts and cashews. You’ll be using these to fill in the tiniest of holes on your platter, so if you’re not a fan, look to the grab-ngo bags at the store checkouts for small portions.
Finishing touches
Small details can set your platter off. A couple of sprigs of rosemary and some star-shaped white chocolate covered pretzels instantly gave my charcuterie board some holiday charm. Sage ironically looks like faux mistletoe, so that herb is a good choice too.
