Veterans remembered in Upsala area memorial gem By DIANE LEUKAM Staff Writer

UPSALA – Oct. 12, 2019 was cold, windy and snowing but people showed up anyway. They came to honor the deceased members of the military with the dedication of a beautiful memorial in the tiny farm community of Upsala in Morrison County, also serving the Elmdale, Bowlus, Holdingford, St. Francis and Grey Eagle area. The area is rich in military history, with a large number residents who served their country in many wars. The memorial sits on approximately one acre and features the American, Minnesota and the POW-MIA flags, a grand

entrance into a space lined with benches for visitors to sit and reflect. On five large granite tablets, there are inscribed the names of area military personnel beginning with the Civil War, then WWI, WWII, Korea, Vietnam and the Gulf War. A gold star marks those killed in action. One gold star belongs to a young man named Oscar E. Benson, a name that was almost missed. “No one knew about him,” said Dave Brezinka, historian of the project. “We were all set; we had all the names approved when I found a newspaper, the Little Falls Daily Transcript. I was researching at the Morrison Country Historical Society and found an article that listed all the deceased from WWI – 53 from Morrison County. Oscar E. Benson was killed in action, and

his parents were from Upsala. We almost went through this whole thing. He has never had a flag on Memorial Day weekend.” Brezinka has been involved in the Upsala

American Legion for 42 years. He served in the U.S. Army from 1966-68 and was stationed in Germany. Don Marty and his wife, Delphine, have

lifelong ties to Upsala. Delphine grew up on the family farm nearby, and Don moved to Upsala in the ninth grade and was the best friend and classmate of Brezinka. After Don and Delphine retired from their work in Fargo in 2016, they decided to head back to rural Minnesota. Soon after Marty’s arrival, he joined the Legion. Brezinka and Marty are co-chairs the project, and they talked about the memorial on May 8. Members of the Upsala Legion post had entertained the idea of a memorial for a number of years, but on the 100th anniversary of Upsala in 2017, their plan was set in motion. They talked about many different options but felt strongly that it had to be a high-quality memorial. “If we were going to

do it, we wanted to do it up right, and I think we did,” Brezinka said. The two veterans, along with many committees and other volunteers, worked to create the memorial designed to keep the memories of the veterans from the entire area alive. The project was launched at the 2017 Veterans Day program, with an introduction to the community including sketches of the proposed memorial and fundraising discussed. Businesses and individuals were extremely generous, with less than $20,000 now remaining to be raised. Any donations above that amount will be dedicated to a perpetual care fund for the memorial. UPSALA from front were being considered, Marty thought perhaps the city would offer a corner of the park for the memorial site. “Don, my idea is much bigger than that,� Brezinka told him. Brezinka had his heart set on a larger space owned by Gethsemane Lutheran church, between the church and the cemetery they also owned. With their site choices narrowed down to three, there was a vote by the Legion members and the Gethsemane location was chosen. A lot of planning went into the project, with photos of 50-75 memorials from around the state brought into consideration. At post meetings, the pros and cons of each were discussed and a point system was given to add up the attributes of various features. Parts of the final design that most members liked included columns supporting a sign; tall tablets; a walk of

honor all the way around the site; many flags; and pavers that were not intended to be walked upon. “The entire membership contributed to what they liked,� Brezinka said. “This has been an entire post and auxiliary effort.� Marty is a Vietnam veteran and can appreciate what many of the veterans on the tablets have been through. He was drafted into the Army in 1968 and served in the infantry there for a year, from 1969-70. “It was 364 days to be precise,� he said. He and Delphine were already married and their son, Dean, was born while Don was in Vietnam. “When I got back, I told her I would never leave her and the kids again,� Marty said. “The Army had other ideas.� He was stationed in Fort Riley, Kansas, and still had six months to serve. A month after returning from Vietnam, he was in Germany for training. After his honorable

discharge from the Army, he went to school at Kansas State University. Does he think of his days in Vietnam? “Periodically, you think about that time,� he said. “But, I put the past behind me and look more forward to today and tomorrow. Back home, I took great joy in being with my family.� Being involved in the memorial project has been very rewarding for both Marty and Brezinka, both of whom have many veterans in their families. Part of the funds were raised through the sale of granite pavers, which were sold in honor of members of the military. Both have family members represented in the paver display. Some 200 pavers have been purchased, and Marty has been extremely pleased with the enthusiasm of the people from the entire area. “I can’t compliment the folks in our community and surrounding areas enough for their donations,� Marty said. “It seems like it has struck a chord with folks and they have done a terrific job.� With the timing of the Upsala centennial celebration, and because 2018 marked 100th anniversary of the end of WWI, it made sense to dedicate the memorial primarily to

veterans of that war. There was another reason as well: The memories of WWI veterans are fading. “It is for all veterans, but in a sense, it is dedicated to WWI,� Brezinka said. “When we went through names, no one remembered anything about them anymore. They deserve recognition.� In the future, a building will be erected on a pentagon-shaped concrete pad where a directory of information on the military personnel will be kept, along with posters, uniforms, local newspaper articles and the like. The project is ongoing, and there have been many, many people who have contributed to the cause. “We have had a lot of help; you called on someone and they were there,� Brezinka said. Keeping the memories of those who served their country and especially those who paid the ultimate price, is the most important aspect of the memorial. we have today,” Marty said. Brezinka agreed. “It’s been very humbling,” he said. “Walking the cemetery searching for their name plates on the ground – it was very, very rewarding.” At the memorial, on the first tablet are the names of veterans from WWI. The fifth name inscribed is Benson, Oscar E., his gold star nearby. Next to the beautiful Upsala Area Veterans

Memorial there is the cemetery of Gethsemane. Ironically, therein lies the remains of a young soldier who gave his life in WWI. He had been forgotten, but now there is a flag on his gravestone. He will be honored on Memorial Day and – along with many others at the new Upsala Area Veterans memorial – he will be honored with many flags, every day. God rest his soul.

Is your John Deere really green?

Have any of you ever heard little farm boys arguing about whose farm has the best tractors? Color often comes into the equation and most often it seems the reds and the greens are opposing one another. So, here is a profound thought I had the other day, prompted by a story that came to mind. Are any of you familiar with the blue dress/gold dress phenomenon that took the internet by storm a few years ago? There was a photo of a dress posted online and, within 24 hours, a worldwide debate took place over whether it was dark blue and black, or white and gold. There were up to a million people viewing it per minute and weighing in. In reality, according to the manufacturer, the dress was blue and black, but in the original photo, a huge number of people – including me – saw it as gold and white. Apparently, the dress even prompted new research in vision science. By 2015, everyone thought they knew it all. But, no one would have anticipated something like this to challenge our thoughts on color. Five years later, people are still arguing about it and there are even a number of fairly scholarly articles online if you wish to pursue. This brings me to a critical and even scary question: what color is your tractor, really? What if your

John Deere is not really green, or your Case IH not really red? Here we thought we were well established in tractor color thought, but who knows! Maybe you were right, or maybe you were wrong in the arguments of your youth. What are your favorite by Diane Leukam colors for spring? I love the colors of the land as it is tilled. Red barns look outstanding against their newly green surroundings as trees fill out and the fields come alive; there’s that red and green thing again. Soon, there will be yellow dandelions popping up everywhere. They might be the most popular flower ever, with children handing mom a “special” bouquet with their chubby little hands. I remember that well. They don’t last long, but they are difficult to throw out! Spring is also rock-picking time. When I was a kid, it was always so much fun – for the first few loads, anyway. My brother sent out a text to all of us

siblings a couple weeks ago, offering us the opportunity to walk their farm fields and look for agates, as long as we pick up the other rocks along the way. He’s always trying to be funny like that. Weirdly, no one took him up on the offer, though with a desk job by day, it sounded to me like a good way to spend an afternoon away from work. Spring is the time for the birds and the bees and we have some of both for you in this issue. We also have bison, as well as a couple of stories in honor of Memorial Day which is coming up already in a little over a week. I hope you are able to get outside and enjoy the warm weather and sunshine, and take in some of the healing of nature. I have a friend, Debbie Felling, who is always looking for fun things to do – she explores Minnesota like it’s her job. She has still been on the move during the stay-at-home order, only now she and her daughter have switched to finding the best hiking trails and state and county parks in Central Minnesota. For others, finding their place of peace might be inside the cab of their tractor – whatever color it is.

There are songs about bison, long-held stories about the species that are part of the country’s heritage, but Ulbricht wants to uplift their image even more. As people, especially millennials, trend towards buying local, they want to know where their food comes from. With bison being such a niche market, he said, consumers can build that relationship and have a true awareness of the animal. Oftentimes, people

refer to bison as buffalo, but there are not any buffalo native to the United States. There are Water and Cape Buffalo found in Africa and Asia, but in North America, there are bison. The variation on the name can cause some misnomers in labeling. Sometimes, he said, products – especially pet food products – say they contain bison, but the ingredient is actually Water Buffalo. There’s also a European ancestor to the North American Bison found between Germany and Poland. One thing bison have in common, no matter their descent, is they look into the wind when every other animal looks away from it. Wind pushes down a bison’s fur and helps insulate them. In the north, bison go into survival mode in the winter. Their metabolism slows, but the giant hump of muscle across their shoulders and their incredible sense of smell remain, as part of their natural ability to survive. Bison can smell foliage and grasses through three feet of snow in the winter and the hump on their shoulder is all muscle, a necessity when it comes to moving the snow for winter grazing. In the wild, bison feed on grasses below the snow line, drink snow water and birth on their own. “They’re a hardy animal,” Ulbricht said. Many farmers provide their bison with hay bales to supplement their feeding in the winter and they also provide them with various nutrients as well as heated water tanks for ease of drinking. As he became more and more connected and continued to research ranchers, the executive director position opened up and Ulbricht applied. Now, he’s poised to take the helm of the organization that has membership of about 150 farms and ranches across the country, but especially throughout the Midwest including Iowa, North Dakota, South Dakota, Wisconsin and Canada. It’s not uncommon for members to travel hundreds of miles with their animals for the association’s annual sale at the sale barn in Albany. The Legends of the Fall sale is held annually the Saturday after Thanksgiving. The auction features consigned animals with different classes that can be included in judged and unjudged categories. STARBUCK – The song of the Purple Martin reminds Greg Nelson of days growing up at home on the dairy farm in Pope County. His dad, Stanton Nelson, would grill in the evening and they’d watch the birds frolic on the

nearby aluminum house. “When you’re sitting outside in the evenings or in the morning, they’ve got a song to them that I think is just beautiful,� Nelson said. Now, he watches them on the 2.5-acre

sitting across the table from one another visiting,� he said. “Just to watch them when they fly around and go up in the air until you hardly see them and then they come right back down again, I just kind of fell in love

with them.� Nelson is so much in love that he’s constructed 44 Purple Martin houses. Each unit holds at least 16 pairs of Purple Martins. Each pole contains a set of plastic gourds and in a good year, each gourd is home to a pair of Purple Martins. “There are times when there are 50 to hundreds of them,� Nelson said. He watches as the birds, who like being around people, leave in the mid-morning to go visiting. The yard will empty out as the birds visit other nests and neighborhoods, returning at night to their home. “They just liven up the whole yard,� he said. Typically, he can set his calendar for the arrival of the birds, and on April 15, his houses begin to fill. This year however, the arrival has been very late. He and his Purple Martin-watching friends first begin to see scouts in the area, checking out the homes. Typically, the females arrive after the males have secured a location. If the birds come too early, Nelson said, he’ll see them sitting on his roof shingles to warm themselves. This year, NELSON continued on page 9

Tell us about some of the things you’ve done this year in FFA: I was an officer this year; I held the position of parliamentarian. I am the youngest officer ever selected in my chapter’s history. Besides my officer duties, I was on a Small Animal (Vet Sci) CDE team, and would have gone to state if it were not for the pandemic. I also did several chapter activities such as Teacher Appreciation and special events for FFA week. Lastly, I did an SAE on an interesting topic of mine, which is practically an easy version of playing animal doctor. I did examinations on numerous cats and dogs, and even one horse study which was not included in the final project. Name one current issue you believe will impact agriculture in the future. There would be impacts on certain aspects of agriculture, such as the rising popularity of vegan, vegetarian, and other non-meat diets affecting the cattle and meat market.

How would you encourage an inactive FFA member to become more involved? That is a hard question to answer, as usually it would be to entice them with all the benefits of FFA in an almost propaganda similarity, so I would attempt to figure out a different way, such as bargaining. What is the greatest benefit you have received from being involved in FFA? The knowledge, such as BIG and other CDEs. What do you enjoy most about FFA? I like social gatherings, I’m a fairly shy and antisocial person, but I haven’t met a rude person in FFA, which makes me always excited to get out and have fun. What does leadership mean to you? Leadership to me is not bossing around; it is playing fair with those who depend upon you, yet being in charge, and getting an objective done. What other hobbies and interests do you have outside of FFA? Photography, animals, and psychology.Â

NELSON from page 9 son said their bug-eating capability is unbelievable. Purple Martins are related to Barn Swallows, and while both species of birds feast on bugs, Purple Martins are typically bigger than Barn Swal-

lows. In Nelson’s case, from the time the birds arrive in April to the time they leave in the third or fourth week of August, there’s hardly a mosquito in his yard, but the minute the birds leave, he needs to break out the bug repellent.

When Nelson is not watching his Purple Martins, he is kept busy working, doing maintenance at Jennie-O Turkey in Swift Falls. Along with his son, he also farms, growing corn, soybeans and alfalfa and raising registered Red Angus cattle.

RICHMOND – Roger Bechtold was drafted into the U.S. Army at age 21, serving in Vietnam in 1966 and 1967. More than 50 years later, he returned to see the place where he worked and served. In April 2019, Bech-

told was accompanied by his adult son, Gary, and the two travelled 28 hours between flights, layovers and a bus trip in the dark once they hit the ground in Vietnam. The next morning Roger awoke, walked outside and was so delighted by his surroundings at 5:30 a.m. that he went and

knocked on Gary’s door, insisting he come outside. “I was very open-minded about what I was going to see, wondering what to expect,� he said. “I was blown away, the contrasting difference, it is just unbelievable.� Roger remembers the dirt and the grime and a sad people from his time

as a soldier there. He genuinely felt sorry for them as he worked making road construction materials in Cam Ranh Bay, a peninsula that jutted out into the South China Sea. He spent nine months in Cam Ranh Bay and conditions were difficult. When the company slept, they’d wake to one to two inches of sand covering their blankets. They’d have to use a scoop shovel to clear sand away from the front door so they could get into their tent. “It would just drift like snow,” Roger said. That’s the opposite of what he found upon his return. The morning after their arrival in Chap Lay Farmstay in North Central Vietnam, the rising sun revealed that the Bechtolds were surrounded by gigantic limestone hills jutting skyward, covered in vegetation. “It was the most beautiful, lush landscape and we didn’t see it until morning,” Roger said. The government protects it and maintains its secrecy to the point where Roger was unable to leave the tour vehicle to snap a picture outside the main gates, though his driver did find a smaller gate for him to take a photo and immediately get back on the bus. The Bechtolds travelled to Vietnam with 10 other people, including five Vietnam veterans,

on a trip organized by Clyde Lewandowski of St. Cloud. Lewandowski served during the war and now brings veterans back. “He has a love for the country and got involved in supporting an orphanage over there where he was stationed,” said Gary. The return trip bubbled up a lot of history and each one of the veterans had a very different experience overseas. “Visiting (gave us an opportunity) to reflect on it; I’d see a tear in their eyes and know deep down they were thinking, ‘Yeah, I was here, I survived,’” Roger said. “It was extremely emotion-

al.”

The highlight of the Bechtolds’ trip was a visit to the Vinh Son Orphanage in Kontum, a city in the Central Highlands with a large population of indigenous people known as the “Montagnards,” which means, “people of the mountains.” The Montagnards have historically been persecuted, especially since they supported the United States during the war. in the wars. “The country needs to be a little more proactive,” he said. “The people need to at least acknowledge the people who served over there, who survived and are still living. They did what their country asked them to do and they served…they did a job for their country.” As Roger’s time of service in Vietnam went on, he knew very little of what was going on around him, outside of the job he was asked to do. He and Gary know more now, as both Bechtolds have spent a great deal of time poring over books about Vietnam, learning about the battles and the history. For Gary, the oldest of four and the only boy, the journey was a glimpse into the life-changing experience of the draft, something he said he can’t fathom as a parent. He said, “I think it’s helped me understand a lot more about who my dad is and how it shaped him.”

tored by the government throughout their trip. Though they travelled to most of the sites where the veterans in their group were stationed, they also experienced city life. They found a society teeming with commerce. Streets were filled with people, mile after mile, setting up shops outside their homes and selling everything from tractors to motor scooter parts. Gary said the market is a central hub of daily life as many families don’t own refrigeration equipment and head to the market for their daily food. Additionally, many people begin the day by eating breakfast out and socializing with friends in the morning. They equate it to retirees in America heading out to coffee and playing cards in the morning. In Vietnam, the main market opens as early as 4 a.m. for wholesalers and by 5 a.m., they’re open to the public.

The two-week trip with his father was Gary’s first time visiting Asia and for him, it was a bit of a culture shock. “It took me a long time to understand how much destruction there was during the war and now, 50 years later, there are these beautiful, modern, vibrant cities that have grown from the rubble,” he said. The trip also helped Gary understand more about his father who returned home after the war, having worked with heavy machinery in Vietnam and then starting his own excavating company in the states. In 1972, Roger and his brother, Leonard, went into the garage door business, opening St. Cloud Overhead Door, which eventually became American Door Works, now owned by Gary. The business is located in Waite Park with branches in Willmar, Alexandria and Brainerd. As Memorial Day approaches, Roger said he thinks about all the people who fought and died

Today, he’s retired from his work in IT services at the College of St. Benedict and St. John’s University, and now watches over 200 hives, each home to 6070,000 bees in his bee yard. “I’ve always had an interest in protecting the environment,” he said. Theis’s business now focuses on propagating bees. At the end of March or first part of April, he splits the hives and creates a nucleus hive known as a nuc, or split. This spring he’s already sold 180 nucs to other beekeepers and hobbyists. Most of his customers are repeats from last year, when he sold nearly that many nucs as well as an additional 100 to a vegetable farm that needed them for pollination. This year, he’s already sold out of nucs and has customer requests on a waiting list. The winter trip to Texas is essential to the health of Theis’s hives. In

THEIS from page 17 Minnesota, he was losing half his bees each winter and in Texas, he loses only 5-10%. When it is time to head south, he nets them, loads the hives onto pallets and straps them down to be transported on a truck. When they arrive back in Minnesota in spring, Theis checks each hive to make sure the queen is healthy and laying well before releasing them to customers. When the nucs leave his property, he’s releasing a fully-functioning hive with a couple thousand bees, larvae and eggs already inside. Theis acquires his hive boxes from Mann Lake, a bee supply company out of Hackensack. He purchases them unassembled and assembles and paints them himself. The boxes are painted different colors to help the foragers recognize their home hive. Theis feels if all the boxes are white, the bees seem to drift more between the hives. Theis’s customers come from across the Midwest including Minnesota, Wisconsin and the eastern part of North Dakota and South Dakota. In addition to the nucs, the Theises sell honey, pollen and bees-

wax straight out of their garage. The honey is a family endeavor with many of Paul Theis and Marilyn Stanley’s 29 grandkids (30 in June), helping out with the bees somewhere along the way. When the kids come to visit, Theis takes the willing ones out onto the farm. He dresses them in child-size bee suits for safety and they work sideby-side checking on the health of the hives and, eventually, they all participate in harvesting honey. Theis and Stanley lead the harvest around Labor Day each year and some of their adult children, including Mitch Theis and Holly Morehouse, help as well, spending time each year helping with the harvest. Outside of the harvest, Marilyn does all the bookwork for the business and keeps Paul on track. He’s also taken classes at the University of Minnesota’s Bee Lab. When it comes to the grandkids who are interested, it has served as a way for Theis to teach them about the life cycle of bees and how their habitat is impacted by the environment around them. “They know where their food sources come from,� he said.

Additionally, Theis said, he has seen firsthand the difference the bees make. “You can sure see the difference with the bees doing the pollination,� he said. Prior to having the hives, his apple trees would produce a few apples each a year and now, with the hives, the apple trees are so loaded with apples the branches break.

bit of pollen. In an average year, the farm produces 4,000 pounds, or close to 400 gallons of honey. Theis not only sells it out of his garage, but he also sells it to other beekeepers who bottle it and sell it under their own name. The bee farm is a way of life and a way for Theis,

who grew up on a farm, to return to agriculture. Theis’s parents Raymond and Gertrude Theis, had a dairy farm north of Sauk Centre. “I just like the outdoors and I like being my own boss,� Theis said. Much of what he’s learned has been through research and his mentors at the Tri-County Beekeepers Association, where he’s a member.

East of the moon An early morning walk on April 8 called to mind a poem. The moon hung full in the western sky Lighting the ground for the human eye The east turned rosy, day had begun Lit east of the moon, and west of the sun. It was great sight to see the sun, unclouded, rising in the east and the full moon setting in the west. One had the feeling it would be a good day. It was just before Easter and a reminder that Easter is always the first Sunday after the first full moon of spring. The moon has been a fascination for people for as long as people have observed it. It has a cycle and, barring an eclipse, is predictable. It is a glorious globe in the sky when in full phase, but is all but unseen in the new moon phases. Over the years, people have formed a number of practices and beliefs based on moon phases. Weather, according to tradition, can be predicted by the moon’s color: A pale moon equals moisture, a red moon predicts wind, and a white moon, neither snow nor rain. One rhyme says “A circle around the moon means rain real soon.”

Advice for planting by the moon can be found in various almanacs and on websites. Among those guides are: Waning moon (the time between a full moon to new moon): When the moon grows dark, to root and perennial planting hark. Waxing moon (as it approaches a full moon): When the moon grows light; planting for leaves, seed, flower or fruit is right. New moon: When a new moon the sky is showing, it is best for leaves and stem food to start growing. Full moon: As the whole moon lights the sky, root crops, apples, asparagus and rhubarb to the ground apply. First quarter: (half-

way between new and full): Pumpkins, tomatoes, beans and broccoli grow best, when between new and full the moon takes a rest. Last quarter: (half way between full and new): No seed should be sowing, when the moon dark is growing. There is advice handed down through generations, such as when to cut rails for fences (a dry waning moon); when to set fences (new moon); digging horseradish (full moon brings out the best flavor); hatching eggs (as moon moves from new to full unless there is a south wind); meat from an animal butchered in a waxing moon is juicier; and people fall in love sooner during a new moon. Of course, the moon has also given us the word “lunacy.” That comes from the Latin word for moon (luna) and the belief that the full moon causes people to act like lunatics (another word inspired by Latin and the moon). For some people, these guides are gospel and to others they are superstition. One thing I do know, is that the walk west of the sun and east of moon was among the most vivid, brightest and enjoyable I’ve ever taken.

COUNTRY COOKING Herb-stuffed Chicken Breasts

• 6 boneless, skinless chicken breasts • 6 slices cheese • 1 can cream of chicken soup

• 1/4 cup milk or sour cream • 1 cup Stovetop chicken stuffing mix • 1/4 cup butter, melted

Place chicken in a 9x13 inch pan. Place one piece of cheese on each breast. Mix soup and milk; pour over chicken. Mix together stuffing mix and butter; sprinkle over chicken. Bake uncovered at 350 degrees for 1 hour and 15 minutes. Note: I usually use a whole box of stuffing mix, and sometimes use the herb-flavored stuffing mix.

Frozen Blueberry Rhubarb Jam • 8 cups rhubarb • 4 cups sugar • 1 large box strawberry Jell-O • 1 can blueberry pie filling Mix raw rhubarb and sugar; let set until it pulls juice. Cook until soft, then add Jell-O. When partly cooled, add pie filling. Put into pint jars and freeze.

Cabbage Salad • 8 cups shredded cabbage (one head) • 1 cup fried, crumbled bacon

Sauce:

• 1/2 cup frozen peas • 4 cups shredded Cheddar cheese • 2 cups nacho chips, crushed

• 2 cups mayonnaise • 2 tsp. salt • 1 cup sugar (or 1/2 cup) • 1 tsp. garlic salt • 1 1/2 cups sour cream Layer first four ingredients in a 9x13 inch pan. Stir sauce ingredients together. Just before serving, mix the sauce in and top with crushed nacho chips.

Rhubarb Bars • 2 cups flour • 4 eggs • 1 cup cold butter, cubed • 1/2 tsp. salt • 2 cups sugar • 4 cups rhubarb, finely chopped • 1/2 cup flour Combine 2 cups flour and butter and press into a 9x13 inch baking pan. Bake at 350 degrees for 20 minutes. Combine remaining ingredients and pour over hot crust. Bake at 350 degrees for 35 minutes or until set.

Mexican Casserole • 1 (10.1 ounce) package crescent • 1 cup crushed Cheddar and sour rolls cream chips • 1 pound ground beef • Shredded lettuce • 1 cup salsa • Tomatoes, chopped (optional) • 8 ounces sour cream • Western bacon dressing • 2 cups shredded Colby Jack cheese Press crescent rolls into a 9x13 inch greased cake pan and bake at 350 degrees for 10 minutes while browning the ground beef. Add the salsa to the beef and simmer 10 minutes, then put on the crescent roll crust. Drop spoonfuls of sour cream on top of the hamburger and salsa mixture and spread. Sprinkle with cheese, then top with crushed chips. Bake at 350 degrees for 15-18 minutes. When serving, top with lettuce and dressing at the table. Note: You can substitute French dressing for the Western bacon dressing if desired.

Apple Coffee Cake • 1 cup sugar • 1 tsp. baking powder • 1/2 cup brown sugar • 1 can apple pie filling OR 1 quart • 1 cup oil home-canned apple pie filling • 1 tsp. vanilla • 1 Tbsp. sugar • 4 eggs • 1/2 tsp. cinnamon • 2 cups flour Mix first five ingredients together. Mix flour and baking powder together, stir into first mixture. Pour half of batter into greased 9x13 inch pan. Pour on apple pie filling. Add rest of batter. Mix 1 Tbsp. sugar and cinnamon and sprinkle on top. Bake at 350 degrees for 50 minutes.
