ALTURA — A heart as warm as her fresh baked ke ked bread beats inside Mary Speltz of Altura. Speltz is a retired dairy farmer, mom, grandma and a d great-grandma who has been bringing her baking and d cann ccanned ned goods to farmers markets for about 25 years. “It gives me a purpose, a good feeling to have this to t do,” d Speltz said. “(It) keeps me busy, keeps me out of mischief.” Speltz said the smiles on customers’ faces as they see ee the homemade baked goods gives her a sense of pride. The magic happens inside Speltz’s well-organized kitchen. c chen. Spacious counters provide ample space to work, and plenty of cupboards open o to reveal neatly stacks pans and cooking supplies. “You really have to be organized,” Speltz said. “(It is) kind ki of the secret of it.” Speltz moves about her pristine kitchen with ease as she bakes b bread, taking pans off rising dough from underneath cheese cloth towels and popping ng them into the oven. Over the sink, Speltz bastes oil onto the light golden crustss of her freshly baked thre threeecheese bread using a small paint brush. Then she tucks them under n nder cheese clothes again to perfect the crust. When the timer for the oven rings, it takes just a quick look in the oven for Speltz to o know if the bread is ready or not. She looks for inspiration at restaurants and other places she eats. “I always like to try the breads,” Speltz said. “When I would find one ... that I liked, I thought, ‘I wonder if I could make that.’” Like her mother before her, Speltz’s recipes have evolved into
Minnesota’s oldest farm mutual serving all of southeast Minnesota
paragons of touch and feel style recipes. “I always wanted to learn to make bread,” Speltz said. When Speltz asked her mom when she could learn, her mom told her when she was old enough to join 4-H, because then, they would provide a recipe. “Mom’s bread was a little bit of this, little bit of that,” Speltz said. Speltz learned a basic bread recipe in 4-H and went on to master breadmaking, even winning a competition in 4-H for her bread. After high school, she went to the College of St. Teresa’s in Winona for home economics. During that time, she met her late husband, Cyril. After college, they were married and spent the next decades dairy farming together in the Altura area before retiring around 2010. They had four sons, and much of Speltz’s culinary skills went into keeping her family well fed. During the early years of farmers markets, Speltz decided to participate. “That was something new, and so I thought I’d enjoy doing that because the kids were gone from home and there wasn’t as

much needed then,” Speltz said. Today, she goes to two farmers markets a week during the season, one in Plainview and one in Winona. A visitor at her stand can find loaves of yeast bread, fruit pies, cookies, quick bread, Bavarian sweet bread, cinnamon rolls, seasoned pretzels, 18-20 types of jams and jellies, pickles and even canned vegetable soup. Speltz said customers are taken aback when they see the amount of jams and jellies she has. She even makes wine jelly out
of Moscato. The jelly is full of small stars hanging in suspension throughout the jam. The stars are naturally occurring, and Speltz has yet to figure out what they are or why they happen in her wine jelly. Speltz’s tremendous level of output is supported by the fact that most days Speltz can be found in the kitchen. If she is not baking or making something ahead like pie crust or pie filling, she is whipping up a batch of jam.

“I don’t think people realize the time that it takes to do all these things,” Speltz said. Over time, she has developed regular customers. Speltz said she enjoys baking. “I’ll wake up in the morning and think through what I have to do and how I’m going to do it,” Speltz said. “I know I’ve got my supplies, so I’m not worried about it. It’s kind of like anticipating doing it.” Speltz has a standard amount of baked goods she brings with to each farmers market and then regular customers also sometimes make requests. Speltz sources many of her supplies in bulk from an Amish grocery store
between Utica and St. Charles. She has grown friendships within the Amish community. One of her favorite baked items to make is Bavarian sweet bread. This treat features braided dough with a raspberry or blueberry filling. Speltz likes the challenge of carefully trying to get a beautiful braid and also making sure the filling does not ooze out. Speltz works to make sure her products are of good quality, from taking the extra step to let her yeast bread rise twice, to trying to roll her pie crusts as thinly as possible. “I take pride in having a good product and something that people can afford and enjoy,” Speltz said.

Turkey farmers face reappearance of highly pathogenic avian influenza BY AMY KYLLO | STAFF WRITER
Raising healthy turkeys is a top priority for turkey farmers across the state of Minnesota. To help ensure these healthy flocks, biosecurity is paramount. Since the winter of 2022, turkey growers in Minnesota have faced an outbreak of highly pathogenic avian influenza which was last seen in 2015. The disease is a global one and is spread through the droppings and nasal discharge of infected birds. Contaminated dirt can be brought in on clothing, shoes, equipment and vehicles. Waterfowl are also reservoirs of the disease. Ashley Kohls, the executive director of the Minnesota Turkey Growers Association, said the virus was first detected in February 2022. On the meat bird side of the operation, from February to September, they finish two batches of turkeys. They raise the turkeys for about 12 to 18 weeks depending on the size and weight of market demand. Turkeys come to the farm as day-old poults and start out in small rings in the barn with a stove in each. At 10 days old, the rings are removed, and the turkeys have full reign of the entire barn. Amdahl said it is fun to watch them run and explore. The meat flocks are certified organic so they eat organic feed and have outdoor access. Biosecurity is important on their farm to protect the birds from disease. No one outside the farm is allowed on their farm unless absolutely necessary. To avoid any problems, especially the recurring outbreaks of avian influenza in the U.S., they wear coveralls and change their shoes upon entry. With multiple

Each year ear from the weekend before Thanksgiving until Christmas, they sell approximately 500 cut-your-own wn trees. “It’s very intense,” Clint said. “They’re very long days. We are busy from usually from 9:30 in the morning until you can’t see at night anymore. There’s really not a break.” Amy said she wants people to create memories that last a lifetime at their Christmas tree farm. “Seeing happy people with their trees is awe-
some,” Amy said. “Kids get so excited they can’t wait.” Besides the Christmas trees, they also supply wreaths to the charter school in Nerstrand, which sells them as part of a fundraiser. This year, they will be supplying over 78 wreaths and swags. The Wittliefs make the wreaths out of less desirably shaped trees or trees that have gotten too large.

Clint continues around the tree, making smooth chops to trim and manicure.
