July 4th, Declaration of Independence
While July 4th is synonymous with American independence, one of the United States’ founding fathers felt that July 2nd was a more appropriate date to celebrate the colonies’ declaration of independence from Great Britain. John Adams, who would serve as the second President of the United States, felt July 2nd was the correct date to celebrate the colonies’ independence and even protested July 4th by refusing invitations to appear at events on that day during
his lifetime. Adams’ contention dates back to June 7, 1776, when Richard Henry Lee, the Virginia delegate of the Continental Congress, first introduced a motion calling for the colonies to declare their independence. Voting on Lee’s motion was postponed, though a five-man committee consisting of Adams, Benjamin Franklin, Thomas Jefferson, Robert R. Livingston, and Roger Sherman was appointed to draft a statement
justifying independence from Great Britain. Lee’s motion was approved on July 2nd, and Adams even wrote his wife, Abigail, that the day would be celebrated as the anniversary of the colonies’ independence for many years to come. But that was not to be, as American independence is instead celebrated on July 4th, the day when the Continential Congress formally adopted the Declaration of Independence.

Charcoal grills can remain hot for hours, even long after the flames have extinguished. As a result, charcoal grill users should recognize that their jobs are not done once the burgers, hot dogs and other foods have been removed from the grill. To safeguard against fires resulting from still-hot charcoal grills, grillmasters should avoid moving the grill while the coals are still burning hot. In addition, avoid placing any flammable objects close to the grill while the coals are cooling down. Potentially combustible items should also be kept far away from charcoal grills, ideally in locations where gusts of wind cannot blow them toward the grill. Charcoal grill owners can also inspect the metal grates on their grills to make sure they are not rusted. Damaged or rusted grates can make it possible for items to fall down onto surfaces below the grate, increasing the risk of fire. Another way for charcoal grill users to make using their grills more safe is to avoid the use of starter fluid or other igniters once the coals have been ignited. Doing so only increases the risk of fire or accident and is unlikely to help the coals maintain a strong flame that lasts long enough to cook foods quickly.

According to the U.S. Food and Drug Administration, cooks should avoid reusing plates or utensils used to prepare raw meat, poultry or seafood for serving. Even if the plates only momentarily came into contact with uncooked food, they should be thoroughly washed in hot, soapy water after coming into contact with raw foods. Bacteria from the raw juices of food can easily spread to cooked or ready-to-eat foods, potentially contributing to illness. The FDA recommends cooks keep clean platters and utensils next to their grills that they can use to serve food. In addition, if using a bristle brush to clean cooking surfaces prior to firing up the grill, inspect the brush to make sure it’s clean and that the bristles do not still contain any specks of food or other foreign objects from a previous grilling session. Once the grill has been cleaned, make sure none of the bristles fell off and onto the grill.

In Starr County Only Two Snakes Are Dangerous I’ve occasionally been reminded that people generally fear snakes; since some snakes can inflict lethal bites that’s sensible. However, most snakes are beneficial and should be welcomed and protected. I’m going to tell you how to identify the few dangerous ones so you can be at ease with the many beneficial ones. Keep in mind that what I tell you is only for Starr County! The two dangerous snakes here are coral and rattlesnakes. First a few words about coral snakes. They’re little ones. In diameter they’re about the
thickness of a pencil while in length they’re only about 2 feet. That means that a coral snake has a tiny mouth. It can’t bite you unless it finds a thin bit of skin like that between your thumb and index finger. However, don’t mess with it if you encounter one. The venom injected by the tiny fangs is potent and immediate medical attention is required if you’re bitten. The coloration is essential in identifying a coral snake. Along
the body are rings of color: black, yellow, red, yellow, black, yellow, red, yellow, black, etc. NOTE THAT RED AND YELLOW BANDS ARE NEXT TO EACH OTHER. There are other snakes with similar colors but not with red and yellow touching each other. The other snakes are harmless. You aren’t likely to ever see a coral snake. In nearly twenty years here at Rancho Lomitas, I’ve seen only one. They’re usually under old logs or deep into leaf litter seeking a meal of tiny prey. Now, let’s consider rattlesnakes. They’re much bigger and more often encountered. In Starr County there are three species. The desert and western massasaugas may be seen but it’s

unlikely. They’re fangs are relatively small as is their venom supply. Bites are seldom lethal. Those two species and the western diamond-backed rattlesnake have an easily recognized common feature: they all have rattles at the tip of their tail. I should w a r n you that young, therefore small, rattlesnakes have potent venom and little rattles with few segments to see. So, if it’s not a coral snake and if it doesn’t have rattles, it’s a good guy! Let’s look at life from a venomous snake’s point of view. It’s takes time to produce venom and venom is useful in capturing prey. Along comes a human who’s too big for the snake to eat. It doesn’t want to w a s t e venom on something it can’t eat. So, if the human doesn’t threaten it, the snake will just leave or wait until the person does. What I’m trying to covey to you is that snakes are not aggressive. They just bite when they feel threatened. If you encounter a dangerous one just be quiet or slowly back away. While at Rancho Lomitas, I’ve enjoyed seeing patch-nosed, longnosed, blind, indigo, hog-nosed, night and bull snakes along with Ruthven’s whipsnake, checkered garter and a few other snakes. They’re a fascinating part of our wildlife diversity and an important part of a healthy ecosystem. Let’s project the good guy snakes who help to control the rodent population.
