NUTRITION SCIENCE
Are you interested in how nutrition impacts the body’s overall health and well-being?
Do you want to help people live healthier lives?
Are you passionate about economic and environmental issues related to nutrition?
The Nutrition Science program develops scientifically literate professionals who can confidently articulate the integration of food, nutrition, health, and related social issues. Advocate for justice and serve with compassion in the nutrition community, or naturally transition to medical, dental, occupational therapy, public health, and physician assistant programs. Nutrition
Science can also be used as a stepping stone to advanced studies in fields like health communication or business and sales.
YOU WILL LEARN TO:
• Understand how food is converted to energy that the body can use
• Identify nutritional needs unique to different stages of life
• Revise a recipe to accommodate special dietary needs
• Debate both sides of a controversial nutrition issue

“My project advisor taught me how to design and execute a research study, then evaluate the data for learnings and present them. It’s helped me in my job because that’s what I do now. I work for Puris as a food scientist in the Research and Development department. I spend my days developing new plant-based, innovative foods.”

Starting in 2024, you will need a master of science degree to earn an RD credential. St. Catherine University is currently seeking accreditation of a new Master of Science in Nutrition and Dietetics program. The program is not accepting applications at this time, but will do so upon successful completion of the eligibility application process if the program receives candidacy for accreditation status from the Accreditation Council for Education in Nutrition and Dietetics (ACEND).
