MASTERING THE ART OF THE PERFECT STEAMBOAT SUMMER BBQ
Coloradoans live for summertime, those 3-4 short months from June to September when fresh local produce is in abundance. But good news for meat lovers - several local working ranches that sell product direct to market allow the year-round opportunity to prepare some of the best quality meats available anywhere in the world. The best way to celebrate the bounty of seasonal produce and to let local ingredients shine is with a backyard BBQ. We met up with local private chef and caterer Lulu Cox, owner of Amuse Bouche, for some advice on how to create the perfect Steamboat summer BBQ. “Plan your menu around what’s seasonal,” advises Cox. “When it comes to working with fresh local ingredients, I always say less is best in terms of adding things in or seasoning. Sometimes salt and pepper, maybe a little olive oil, is all you need to let the flavors shine.”

Here are some of Lulu’s easy professional tips on how to prepare the perfect summer BBQ, Steamboat-style 1 ) START AT THE FARMERS MARKET “You can easily put together a full BBQ menu at the Steamboat Farmers Market,” says Cox. The market runs Saturdays from early-June to mid-September in downtown Steamboat. “Walk around and explore all the booths and don’t be afraid to taste. You can get everything from fresh produce and meats from local ranches to cheese and fresh bread. Find what you like and plan your meal from there.”
2 ) USE LOCAL VENDORS “I use Yampa Valley Farms for my Heritage Pork Ribs (see recipe). Davis Family Farms out of Palisade has great produce and Sweet Pea Market, downtown on Yampa Street, also curates fresh produce from all over the region. Moon Hill Dairy is producing some really good cheeses right now and they also offer meat and ice cream. All of these vendors are at the Farmers Market, but if you can’t make it there, Elk Stone Farm is open to the public on Tuesdays and Thursdays. They make their own bread and have a huge assortment of produce.”

5) MAKE SIDES AND SALADS THAT WILL HOLD UP TO WARM TEMPERATURES “One of the biggest mistakes people make with their BBQ meal plan is to serve dressed salads that wilt or get soggy when they’re sitting outside in warmer temperatures (warmed over potato salad, anyone?). It’s best to avoid things like mayo and salad dressings with vinegar that will wilt your greens, and instead go for fresh ingredients that can be the highlight of the dish. I love to make Grilled Squash Salad (see recipe) with tomatoes, basil and shaved Pecorino cheese, dressed with nothing but a little garlic, salt, pepper and olive oil. Or I’ll do a Quinoa Salad (see recipe) with black beans, cherry tomatoes, grilled corn and a chili lime vinaigrette.”

Directions Quarter and grill 3 peaches with olive oil on a very hot grill for about 30 seconds each side to make grill marks. Remove from grill. Once the peaches are cool, cut into thinner pieces Heat grill to 500’F and put your cast iron skillet on grill until it is super hot (technical term) Roll out your premade pizza dough Add 2 Tbs olive oil to cast iron pan and place dough in pan on grill—let sit for 5 minutes
2-4 Eight-Ball Squash/Zucchini 1-2 Heirloom Tomatoes Garlic
Olive Oil Basil (cut into slender ribbons) Peccorino Cheese (shaved) Salt & Pepper
Directions Cut squash into eighths, marinate in garlic, oil, salt, and pepper Sear squash on a very hot grill to create grill marks, don’t over cook Cut heirloom tomatoes into same size as squash Mix squash, tomatoes, chiffonade basil and shaved cheese all in a bowl with good olive oil, salt and pepper to taste. Add a few more ribbons of basil and shaved pecorino to finish

Ingredients

Ingredients 2 C Quinoa 1 Can Drained Black Beans 2 Pints Cherry Tomatoes 2 Ears Grilled Corn (off the cob) ½ C Olive Oil
1/8 C Fresh lime juice 1 Garlic Cloved (minced) 1 Tsp Honey 2 Tsp Salt, Divided 1 Avocado (sliced) 1 Bunch Cilantro
Rack of Ribs 1 whole onion, sliced 6 garlic cloves, smashed 1/2 C ketchup 1/4 C molasses
1/4 C brown sugar 1 Tbs chili powder 1 Tbs cumin 1/2 C beef stock 1/8 C apple cider vinegar 1 Tbs smoked chipotle hot sauce
Directions SAUCE
Combine all ingredients (except the ribs) in a large pot, bring to a boil, simmer for 20 minutes, stirring frequently to keep from burning Let cool and blend in a blender

Buchanan also points out that the Yampa boasts one of the best play waves in Colorado for a month or so each year, located in downtown Steamboat, with two features built by the City. Applying for a Recreational In-Channel Diversion (RICD) water right, the City used its popular Charlie’s Hole (C-Hole) feature to gain a guaranteed and precedent-setting water right. “It’s an example of how recreation is as important as agriculture, municipal and other uses when it comes to water rights,” Buchanan says. “And the nice thing is, recreational use is nonconsumptive so it still satisfies downstream users.” Conservation is a big part of Steamboat’s river culture, since Colorado’s rivers and its fish are under constant threat. Local nonprofit, Friends of the Yampa works hard to protect and enhance the environmental integrity of the river. “It does great work with bank stabilization, river clean-ups, and other projects, as well as building awareness with policy makers and the public,” says Buchanan. Steamboat also boasts a strong river community with a bustling industry revolving around kayaking, stand-up paddle boarding, rafting and fishing. It’s home to two
