TALK LIKE A LOCAL

During your time in Singapore, you might realise that while most Singaporeans are able to converse in English, there are quite a number of words that may be hard to interpret or understand. This uniquely Singaporean language is known as ‘Singlish’ and is an English-based creole that uses vocabulary from the other languages and dialects of the four main racial groups in Singapore. With its own colloquial slang and syntax, Singlish is used more often in an informal context. Gain further insight on how to speak like a local with this handy daily lexicon.

CHOPE (chohp) A handy term if you want to reserve seats in a hawker centre or food court. Derived from the word chop, which means to leave a mark. Singaporeans have a habit of leaving objects on seats to reserve places, such as tissue packets. “Don’t take this seat, I chope already.”

AGAK-AGAK (ah-ga’h, ah-ga’h)

Another very commonly heard term around town, it means, “to estimate”. “The taxi fare from your hotel to city centre is agak-agak 10 dollars.”

ALAMAK

(boh-jeev-oh) A Hokkien and Teochew word to mean ‘never invite’. “You guys hung out without me? Why you bo jio?” Removing ‘bo’ from the term changes it into a call of invitation. “Jio you for lunch you also reject.”

(ah-lah-mak) This is one of the most widely used term in Singapore. A malay expression for “Oh No”. “Alamak, why did he do that!?”

KIASU From the Hokkien dialect, kiasu is a term used to describe someone who is afraid to lose out to others. It also means someone who is afraid to lose his dignity or as per the local term, “to lose face”.

LAH The most frequent Singaporean expression. It is used at the end of sentences for emphasis, such as “Okay, lah!”

KOPITIAM (ko-pee-di-ahm) The word ‘kopi’ is a Malay term for coffee and ‘tiam’ is the Hokkien/Hakka term for shop. A kopitiam serves traditional Nanyang coffee, and may include other hawkers that sell local delights.

TAR-BAO (tah -pow) Derived from Cantonese. It is a term used when ordering take away food. “One nasi lemak. Tarbao.”

SHIOK A superlative expression of great satisfaction. ”Shiok” is commonly used when a person is enjoying. “This chili crab is shiok!”

PAI-SEH Derived from Hokkien, the term means “to feel embarrassed”.

LOCAL DRINKS Kopitiam, is a traditional term used by the older generation to describe a coffee shop. Derived from a mixture of Malay and Hokkien, this particular term originated from the word “kopi”, which is a Malay term for coffee, while “tiam” means shop in Hokkien dialect. These traditional coffee shops are well-known for their simple breakfast offerings of toast with kaya and half boiled eggs, accompanied by thick, aromatic brews of coffee, tea and Milo, a popular malt and chocolate drink. This signature originates from traditional Hainanese cuisine. The simple dish only has two humble components: fragrant rice cooked in chicken stock with ginger and pandan leaves, and blanched chicken dunked in ice-cold water to solidify fat under the skin into a gelatinous layer for added texture. Tangy red chilli sauce with minced garlic and ginger adds the final touch to this dish.

An authentic roti prata experience is not complete without a mesmerising performance by the prata-maker as he kneads and flips a ball of dough till it stretches into a tissue-thin sheet. The dough is then folded and fried until crisp, before it is served with fish or mutton curry. Classic versions come plain or with egg, but other creative fillings such as cheese, pork floss and even ice cream are beginning to pop up on local menus in recent years.

A popular breakfast staple that goes well with a cup of hot coffee or tea. Kaya toast is made up of toasted slices of bread with slices of butter or margarine and a spread of kaya, a traditional jam made from coconut and eggs. It is sometimes dipped into soft-boiled egg with dark soy sauce and white pepper.

2. CHILLI CRAB One of Singapore’s most iconic dishes, the Chilli Crab is popular with both locals and tourists alike. Do not be daunted by its name and striking red appearance. The mud crabs are stir-fried in a sweet and savoury tomato and chilli-based sauce, which means that it is not as spicy as you might expect. Often served with a side of deep fried buns, also known as mantou, it is best to dig in using your bare hands, using the mantou to scoop up any leftover thick gravy.

4. BAK CHOR MEE This minced meat noodle dish is a staple at most hawker centres. It comes in two variations: dry or soup. With dry, the thin, wheat noodles (mee kia) are tossed in chilli (replaced with ketchup for those who cannot handle spice), oil, vinegar and soy sauce and topped with minced pork, pork slices, stewed mushrooms, pork liver and meat balls. The soup version sees a rich, pork broth poured over the noodles instead.

6. NASI LEMAK The star of this dish is the aromatic rice that has been cooked with coconut milk and pandan leaves. It is served with side dishes like deep-fried fish or chicken wings, otah (grilled spicy fish paste), fried ikan bilis (anchovies) and peanuts, eggs, cucumber slices and sweet sambal chilli to combine all flavours together. Enjoy this dish at any time – breakfast, lunch or dinner.

A hawker favourite, the char kway teow found locally is a different iteration of its Penang counterpart. The Singapore version is characterised by its sweet dark soy sauce that coats each noodle, as well as the use of Chinese sausage, prawns, fishcakes, eggs and blood cockles to add oomph to the dish. Veteran char kway teow hawkers will fry the noodles in a wok heated by a strong charcoal fire to give the dish a smoky charred flavour known as ‘wok hei’ (breath of the wok).

Best enjoyed as a snack, popiah is essentially a Chinese-style fresh spring roll characterised by its soft, paper-thin skin. The skin is spread with some sweet or spicy sauce before adding a rich filling of cooked turnip, minced garlic, lettuce, bean sprouts, egg, prawn, parsley and chopped peanuts. Usually hand-wrapped on the spot, the end result is two thick rolls overflowing with ingredients.

Chunks of marinated meat (choose from chicken, pork, beef and mutton) are skewered, then grilled over hot charcoal. The sticks of satay are then served with chopped cucumber, onion, pressed rice cakes (ketupat) and a thick, sweet peanut dip. These are so addictive that you will find yourself reaching for stick after stick until the whole plate is cleared.

8. CARROT CAKE This is not the baked good covered in cream cheese frosting you’re probably expecting. This carrot cake is instead made of radish, (the Chinese word for radish literally translates to ‘white carrot’) fried with eggs, garlic and spring onions. Enjoy it ‘white’, as described, or ‘black’ with sweet dark soy sauce. The latter is a personal favourite of our Olympic gold medallist, Joseph Schooling.

10. LAKSA Though there are many varieties of laksa available in Singapore, none is more famous than our very own, home-grown Katong Laksa. The Peranakan-inspired dish consists of thick rice noodles or rice vermicelli cooked in a rich, spicy coconut-based soup stock, topped with ingredients such as fishcake, cockles, prawns and tau pok (fried beancurd). Add a spoonful of sambal chilli for that additional kick before slurping all that goodness up with a soup spoon.

BAK KUT TEH A popular Chinese dish in Singapore, Bak Kut Teh, also known as pork rib soup, is made up of pork ribs stewed with a variety of herbs and spices, giving rise to the full-bodied broth that packs a punch. In Singapore, there are two versions of Bak Kut Teh that you can enjoy; the Teochew style consists of a clear, peppery soup that is light in taste, whereas the Hokkien prefer the more robust flavour of a dark brown broth that is boiled with herbs, rock sugar and dark soy sauce.

A traditional dessert that usually consists of pandan-flavoured green starch jelly (shaped like a worm), gula melaka (palm sugar) and coconut milk, served with shaved ice. If you are one of those who prefers plenty of ingredients in your dessert, you can also choose to customise your chendol to taste by adding toppings like red beans, kidney beans, creamed corn and even durian paste!

The perfect remedy to combat the unrelenting summer heat of Singapore, ice kachang is an ingenious concoction of shaved ice, red beans, sweet corn, grass jelly, attap chee and cubes of jelly, topped with flavoured syrups and a drizzle of evaporated milk. It also comes in more contemporary versions that include various other fruits, flavourings and toppings, such as the more popular durian and chopped peanuts.

A light, refreshing dessert drink that can be consumed either warm or chilled, it is full of ingredients such as longans, barley, malva nut, winter melon, white fungus, dried persimmons, lotus seeds and glutinous rice balls. This nourishing sweet soup is known for its cooling properties, and goes well with many local delicacies, making it a well-loved dessert among Singaporeans.

14. TAU SUAN This is a simple Chinese dessert that is sweet and sticky in texture. Made using split mung beans, the sweet soup is naturally flavoured using pandan leaves and thickened by adding sweet potato flour starch. Best served with a side of fried dough fritters (or you tiao in local terms), it is sure to be a favourite among young and old.

16. KUEH Kueh are bite-sized snacks that can be sweet or savoury. Originally a Malay and Indonesian cuisine, it was popularised in Singapore by the Peranakans, with their version of “Nyonya Kueh�. Most Kueh are steamed, while some are boiled, baked and deep-fried.

18. PULUT HITAM An Asian sweet dessert that is both simple and fuss-free to prepare, Pulut Hitam is a black glutinous rice porridge with coconut milk and Gula Melaka (palm sugar). Not only does black glutinous rice have a distinctive nutty flavour that is perfect for desserts, it is also a rich source of antioxidants and minerals, and contains a high amount of fibre.

Built in 1827, the Sultan Mosque, or Masjid Sultan, is undoubtedly the most prominent landmark in the Kampong Gelam Malay Heritage District. PUBLIC TRANSPORT

TAXIS AND OTHER CHAUFFEURED CARS

Singapore has an extensive public transport network. There are Mass Rapid Transit (MRT) tracks that cover the whole island, and bus services that supplement the suburban heartlands. The MRT system brings tourists direct from Changi Airport to the heart of the city in about 40 minutes. It is one of the easiest ways to get around the city as a majority of the stations bring travellers direct to various attractions and shopping districts. Many MRT stations are also connected to bus interchanges or have bus stops right outside them. Singapore is well served by an efficient fleet of fully air-conditioned buses that runs throughout the island.

For a more convenient mode of transport, just head to any taxi stand to flag down a taxi. Singapore has an extensive network of conventional taxi companies which charges by the meter. There are multiple surcharges throughout the day such as peak hour surcharge, airport surcharge and ERP (Electronic Road Pricing) gantry. All these charges will be reflected on the meter screen.

TERMS & CONDITIONS Singapore Airlines / SilkAir Holidays is available from 01 April 2018 to 31 March 2019. SELLING PRICES, TERMS AND CONDITIONS Selling prices and sales conditions vary from country to country. Please refer to your local Singapore Airlines or SilkAir office, travel agent or email tw_res@ singaporeair.com.sg for details. PROCEDURES Upon arrival into Singapore (after immigration and custom procedures), please proceed to the Singapore Airlines Holiday Counter to collect the QR code and relevant documents, located at: a) Arrival Hall of Changi Airport Terminal 2, counter number 13 (After belt 36) b) Arrival Hall of Changi Airport Terminal 3, counter number 01-K14 (After Belt 44) Please refer page 71 for the SIA Singapore Airlines Holiday counter locations. Private Transfers Private transfer can be pre-arranged at a charge. The chauffeur will meet you at the exit of your baggage belt in the Arrival Hall with a signage of your name. The chauffeur will wait up to one (1) hour from the time of your flight arrival. Separate arrangement must be made for wheelchair-friendly (either motorized or non-motorized wheelchairs) transfers at a charge. Advance reservations are required and information can be obtained through the nearest SQ or MI office or with your local travel agent. TOURS Each passenger will be issued with a Quick Respond (“QR”) code of the pre-purchased tour or attraction. A group QR code may be issued for 2 or more passengers travelling together, if required. The QR code will either be issued upon purchase or upon arrival at Singapore Airlines Holiday counter. Passenger must present the QR code at the designated redemption counter at the attraction to redeem for the service.

VISA REQUIREMENTS It is the passenger’s responsibility to ensure that passports, visas and all other travel documents are valid for entry into Singapore and other destinations. CANCELLATIONS AND NO SHOWS For cancellations within 72 working hours prior to hotel check-in date and ‘no-shows’, please check with nearest local agent or Singapore Airlines or SilkAir office for cancellation policy. A different cancellation policy applies for stays from 13 to 16 September 2018 (both dates inclusive). Stay overlapping 31 December will require a 7 days cancellation in advance. REFUNDS There is no refund for unused or partially used items in the packages. Inclusive benefits are not transferable and cannot be exchanged for cash or any other forms of claims if not utilized. However, for cancellations with valid reasons, refunds are allowed if services are not utilized at all. Refunds must be applied for within three months of cancellation and the original document must be presented. ITEMS NOT INCLUDED Airport taxes, surcharges, visa fees, sales taxes, exit charges levied by local authorities, custom duties, excess baggage charges, porter charge, personal and baggage insurance, laundry, meals and all other expenses not specifically listed in this publication are not included in the price/ package. Usage of facilities at some hotels such as the health centres, business centre, spa, etc, may be subject to a fee. Guests are advised to check with hotels, prior to use. Optional attractions and tours are charged separately.

Some tours require a minimum group size to operate. Please check with your nearest Singapore Airlines or SilkAir office or travel agent accordingly. Pick-up service will be at your hotel 15 minutes before the tour departure time.

RESPONSIBILITY All arrangements for the provision of ground transportation, accommodation, sightseeing and other services are made by Tradewinds Tours & Travel through appointed suppliers only. All exchange vouchers issued for, are provided upon the terms and conditions of the supplier of the services. By acceptance of such exchange vouchers or attraction card, the passenger is deemed to have agreed to the terms and conditions. Any limitations applicable in respect of air transport as a result of the Warsaw Convention (in amended or unamended form) whichever shall be applicable, will also apply for the benefit of the organiser and supplier of the services.

ACCOMMODATION Hotel rooms are based on lead-in unless otherwise stated (refer brochure for room size guideline). Allocation of room category is at the discretion of the hotel.

Tradewinds Tours & Travel (TTT), SQ, MI, any participating partner airlines their employees and/or agents will not be liable for any loss, damage, delays, expense, injury, accident, or death that occurs as result of the provision of the Services.

HOTEL CHECK-IN AND CHECK-OUT TIMES Hotel check-in time varies between 12 noon and 3pm. The usual hotel checkout time is before 12 noon. Hotels reserve the right to charge for periods when the room is occupied before or after official check-in/checkout times. While making your reservation, please consider whether your booking requires early check-in and/or late check-out.

TTT, SQ MI any participating partner airline, their employees and/or agents will not be liable for any loss, damage, delay, expense, injury, accident, or death that occurs from causes outside their reasonable control or from any act or omission of a party other than themselves. In no event will the liability of TTT, SQ, MI, any participating partner airline, their employees and/or agents for any loss, damage, delay, or expense exceed as an absolute maximum the price of the Services obtained.

ROOMING REQUESTS You may request for services such as double bed, inter-connecting room, smoking/non-smoking room, low/high floor at time of booking. However, these requests are not guaranteed and are subject to room availability on the day of arrival. ALTERATION OF BOOKING Should you decide to change your travel plan, please inform your nearest local agent or Singapore Airlines or SilkAir office prior to travel. Otherwise, we cannot guarantee the availability of your accommodation and transfers.

GOVERNING LAW The terms and conditions herein constitute the entire government amongst TTT, SQ, MI and their participating partner airlines with you for the Singapore Airlines Holiday Programs. This agreement is governed by and will be construed in accordance with the laws of Singapore. You will have to irrevocably submit to the exclusive jurisdiction of the courts of Singapore in the interpretation of these conditions, no rules of construction will apply to the disadvantage of any party on the basis that that party drafted that condition.
