We are kicking off the year with a theme that when I picked it, I didn't realize would be for the reasons it is. When I heard the Lord tell me that the theme was to be Honor, I knew it would be good and an amazing way to start the year. What I didn't know, is that the theme would be for ME. It's for many more people than me, I'm sure. God has mysterious ways of working and I know that this issue isn't going to just bless me but has the potential to bless anyone that the Lord wants it to. But the main heartbeat behind this issue is to slow down, take a breath as we start the new year, and to allow us to change things up for our editing and writing team. To make it better and to HONOR our process so we aren't getting burnt out. We pour a lot into this, and encouraging others is something that can take a lot of work. So if the Lord is asking us to slow our pace and review our process
for a month, I am more than happy to honor Him in that instead of pushing everyone forward and causing exhaustion. Even if just for myself. So this month is simple, very short, and created to honor our team, our leaders, the Lord AND honor YOU by filling you in that we are taking care of us too. Stellar Day really is such an amazing place and something we cherish enough to take care of. We value the people who help put this together and we are careful to make sure that we are doing all the things that the Lord asks of us and this movement. And if He asks us to pull back and take a breath, He knows best for this is His magazine after all. So we step back, honor everyone who is near and dear to this and regroup for February. 2018 will be a year that we continue to honor one another and we are so thrilled for that.

The holidays are over. What a bummer. It went too fast and we are left grappling at the festivities that just happened, longing for treats and goodies and yumminess to look forward to. And we don't want to wait until next year. SO, we've found this amazing White Chocolate Latte for you to sip on, comforting your soul until the next holiday leaps into our lives or even better, until Christmas comes again. Because you know it's going to be here again before you know it, so why not just keep the treats going?
INGREDIENTS: 2 c. low fat milk 1 c. half and half 2/3 c. white chocolate chips 2 Tbsp instant coffee 1 tsp vanilla 1/4 tsp almond extract Reddi-Wip DIRECTIONS: 1. In a medium size saucepan heat milk, half and half, white chocolate chips and instant coffee until chips are melted, stirring occasionally. 2. Stir in vanilla and almond extract. 3. Pour into coffee mugs and top with Reddi-Wip and a dusting of cocoa if desired. Happy New Year!

Honor. When I think of honor, I think of privilege. And for me, working for Stellar Day is an honor. A privilege. When I started more than two years ago, I wasn’t quite sure what was in store. I’ve been friends with Jess – the editor and founder – for 15 years, so I knew it would be fun. But I wasn’t expecting to be blessed like this. The women who share their words each month have become sisters. Some I’ve known for years – some I’ve never even met. Every month I’m blessed by their kind emails sending in articles. Every month I’m blessed by their words. Words by women who have given up their careers to

raise babies. Words by women who gracefully balance the professional world and motherhood – simultaneously juggling conference calls and sippy cups. Words by women just starting their journey into marriage. Words by women who are faithfully waiting for His perfect timing. And words from women with wisdom far beyond their years. I look up to these women. Their grace, humility, and kindness is more powerful than I even imagined. To the women who pour their hearts and souls into Stellar Day Magazine, thank you. It has been, and continues to be, an honor working with you.

I am always on the lookout for easy dinners that are guaranteed to be good. Mama doesn't have a lot of time to cook, and I definitely don't have time for it to not turn out! I found this recipe on Coco & Ash while I was surfing Pinterest, and it has become a regular in our home. Good, warm, soul food that's good for the spirit. Try it, you can't go wrong with a good ol' pot roast this winter! INGREDIENTS 1 in bottom round roast Salt & Pepper 28 oz bag of gold potatoes 1 lb of baby carrots 32 oz beef broth 2 cans cream of mushroom soup 4 cloves of garlic 1 yellow onion, chopped 1/2 tsp dried oregano NOMADIC

INSTRUCTIONS
A Few Notes:
1. Rub your roast with 1 Tbsp of salt and 1 tsp of pepper
Prepping everything the night before makes this recipe a breeze to plug in, in the morning!
2. Place your roast in your slow cooker with the fat side up.
4. Toss in your chopped carrots, onion and garlic.
To thicken the gravy, mix a 1/4 cup of cornstarch and 1/2 cup of water in a small bowl until it dissolves. Add it to the gravy and stir. Allow to thicken for about 5 minutes before serving.
5. In a separate bowl, whisk together your mushroom soup and beef broth.
The remainder makes for GREAT biscuits and gravy the next morning!! Enjoy!!

EDITOR'S NOTE We are in the process of changing a few things. Tidying up, streamlining, getting ready for the new year and trying our best to keep a healthy pace with Stellar Day. Sometimes things that are this important, tend to grow very quickly and therefore cause all kinds of growing pains that could have been prevented. So we are doing our due dilligence, and making sure that our processes are up to speed and mostly, that our cherished leadership team doesn't get burnt out. We are trying to honor our team and what we have here at Stellar Day. It is pretty special, and so when we saw a need to give everyone a break and to clean up a few things, we did that. I don't even care or mind that this issue is small. It was on purpose, with heart and FOR the women that I cherish deeply. Also, it was for me. It was to honor me too, and my team was so gracious to go with me and allow me to enjoy December, finish up a few personal things, and be intentional with my family this season. I really needed it. Sometimes the best thing we could ever do is to honor what we need, and what each other needs. So what may seem like a setback to you by slowing Stellar Day down, I view as a way to leap ahead in a healthy way.
