Init ipsuscin hendreet BASIC BISCUIT DOUGH 5 cups all-purpose flour, plus more for sprinkling 2 tablespoons plus 2 teaspoons baking powder 2 tablespoons sugar 1 tablespoon salt 1/2 cup plus 2 tablespoons vegetable shortening 8 tablespoons unsalted butter, cut into small pieces 2 cups buttermilk Preheat oven to 350 degrees F. To the bowl of a food processor, add the flour, sugar, baking powder, salt, and baking soda. Pulse until combined. Add the butter pieces and process until mixture resembles fine meal. With the machine running, add buttermilk and process just until dough comes together. Turn dough out onto a board and knead briefly; do not overwork dough, or biscuits will be tough. With a rolling pin, roll dough out to a 1-inch thickness. Flour a 1-inch round cutter, and then cut out biscuits and transfer to a sheet pan. Refrigerate for 1 hour, or up to 24 hours. Brush tops of biscuits with milk. Bake for about 30 minutes, or until lightly golden on top.

BRATWURST MEDALLION SAUTテ右 6 to 9 bratwurst links 3 large onions, quartered 2 (12-ounce) bottles beer (recommended: Miller High Life) Butter, for sauteing In a large pot, bring water to a rolling boil. Add the bratwurst links, onions and 2 cans of beer to the pot. Boil the bratwurst until they are white in color, approximately 30 to 45 minutes. Slice the brats on the diagonal, into medallions, and saute in butter in a large saute pan over medium-high heat. Cook the brats until the skin is evenly browned.
DIJON VINEGARETTE 4 teaspoons red-wine vinegar 1 tablespoon Dijon mustard 2 tablespoons olive oil Coarse salt and fresh ground pepper In a large bowl, whisk together the vinegar, mustard, slowly adding olive oil until mixture is completely combined and thickened. Rinse field greens and lightly spin dry. Rinse cilantro, pat dry and chiffonade. Plate field greens, follow with cilantro and top with bratwurst medallions. Drizzle dijon vinegarette.

GRILLED CAESAR SALAD Rinse Romaine lettuce bunch and pat dry. Place lettuce on grill and lightly char for 1 minute per side. Plate greens, season with coarse sea salt and fresh ground pepper to taste, top with caesar dressing.
CAESAR DRESSING 4 teaspoon salt 3 eggs 1 1/2 teaspoon sugar 3/4 teaspoon lemon juice 1 teaspoon Parmesan cheese 4 - 6 cloves crushed garlic 6 teaspoons wine vinegar 1 cup plus 2 tablespoons oil 6 drops Tabasco sauce, 6 drops Worcestershire sauce 3 tablespoons olive oil Slowly mix all ingredients in a standing mixer on low or food processor, until fuly mixed and thickened. Refrigerate until ready to serve
