The Reach Gallery Museum - A 20,000 square foot facility offering visitors an opportunity to expand their minds through rotating exhibits, community archives and events. The best part? Access to this cultural adventure is free. Discovery Trail - While I didn’t have enough time to explore the trail during this trip, it is definitely worth putting on your list. Connecting Abbotsford from east to west, the trail has multiple access points and can be enjoyed by bike or on foot. With several lookout points, you’ll be able to enjoy a little country air on your journey. 12

PESTO
At last, Spring is here! Along with a classic, try some of these bright, fresh spring vegetables in a new and unexpected way. Photo & text by Linda Horn

Spinach, Avocado + Pumpkin Seed
Roasted Beet + Walnut Spinach, Avocado + Pumpkin Seed Pesto Makes about 1 cup
Roasted Beet + Walnut Pesto
Ingredients 3 cups spinach, packed 1 avocado, diced 2 cloves garlic 2 tbsp fresh lemon juice 2 tbsp pumpkin seeds, toasted 2 tbsp extra virgin olive oil
Makes about 1 cup
Method Mix all ingredients except oil in a food processor or blender until chopped into very small pieces. While processor is running, slowly add olive oil until mixture is smooth.

Ingredients 1 medium beet 3 cloves garlic 1/2 cup walnuts, toasted 1/2 cup Parmesan, grated 1/2 cup extra virgin olive oil 2 tbsp fresh lemon juice Method Preheat oven to 375째F. Peel & chop beets into 1-inch cubes; wrap in aluminum foil and place on a baking sheet. Roast for 1 hour. Completely cool.

Beet Pesto, Spinach, and Ricotta Pizza Makes about 3 appetizer-size pizzas Make this even easier by using pre-made pizza shells. Pizza Dough 3 cups all-purpose flour 2 tsp instant yeast 2 teaspoon sea salt 1 cup water 3 tbsp extra virgin olive oil
Toppings Roasted Beet + Walnut Pesto Spinach leaves Ricotta Mozzarella Parsley, chopped

Method
Ingredients 3 cups basil leaves, packed 1/3 cup pine nuts 1/2 cup Parmesan, grated 1/2 cup extra virgin olive oil
In a food processor, mix all pizza dough ingredients except olive oil, until blended. Slowly add olive oil until a soft dough ball forms. Dough should form a ball and be slightly sticky.
Method Place all ingredients except oil into a food processor. Mix until chopped into very small pieces. While processor is running, slowly add olive oil until mixture is smooth.

Turn dough out onto a floured board and knead a few times until a smooth ball is formed. Place in an olive oil coated bowl, covered, in a warm place for about 1-2 hours, or until doubled in size. Preheat oven to 450째F. Divide dough into 3 pieces. Shape each piece into a rough circle, and place on a parchment paper-lined baking sheet. Depending on the size of your pizzas, you may need more than one sheet. Turn up edges of pizza to form a crusty edge. Once pizzas are shaped, spread about 3 tbsp of beet pesto on pizza, right to the edges. Add one layer of spinach leaves, dollop on ricotta 1 teaspoon at a time, and cover the entire pizza with mozzarella. Bake for about 10 minutes, or until crust is beginning to turn golden, and cheese is melted and bubbling. Top finished pizzas with chopped parsley and serve. 17

Terrariums and mini-gardens are fun and quite simple to create. If low maintenance is the name of your garden game, try creating an air plant terrarium. THE SUPPLIES Find all the supplies you need at a local garden centre. We found everything used here at Art’s Nursery: • Adorable glass container • Sand • Coloured moss • A Tillandsia (air plant)
THE HOW-TO 1. Add sand or pebbles in the colour of your choice to your terrarium vessel. 2. If the opening is narrow, use a bamboo skewer to arrange the moss. 3. Have fun adding a few accessories such as seashells, starfish or colourful marbles. 4. Simply place your air plant inside once you have all your ingredients together.
THE MAINTENANCE Once a week, pull your air plant out of the terrarium and soak in a room temperature bowl of water for 30 minutes. Increase to 2 times per week in hot weather. Gently shake the water off the plant and return it to the terrarium.

Look for a functional piece that has good lines, is in good shape, and has no musty odour: your own garage, a thrift shop, or vintage markets are great places to hunt.

When shopping for a specific piece, always have your measurements with you. Carrying a photo of the space you need it for ensures you won’t have buyers remorse.
Carry swatches of your wall colour and fabric choices with you – but don’t let the perfect piece in the wrong colour deter you … everything can be painted. You must love it…if it’s not perfect, don’t settle, there are other treasures to find!
Don’t pass up a road side find…stop the car! It could be just what you are looking for and at the perfect price.
